COFFEE LINGO FOR THE BEGINNER In the beginning, coffee was just hot and black, but America’s unquenchable thirst for the perfect cup of coffee has inspired endless varieties of coffee offerings such as the ones listed below. Here are a few definitions that will help you to find your way around a Colorado coffee shop. EXPRESSO Expresso is made with special machines that force hot pressurized water through finely ground coffee, resulting in a sharp, dark heavy bodied brew. MACCHIATO Expresso “marked” with two Tablespoons of frothed milk. EXPRESSO CON PANNA Expresso topped with a dollop of whipped cream. PUMPKIN PRALINE CHEESECAKE Crust 1 1/3 cups Ginger Snaps (pulverized) 1/4 cup Sugar 1/4 cup Unsalted Butter (melted)
Mix together. Pat into a crust in a 9” pie plate at least 2” deep.
Filling 3 Eggs 3/4 cup Sugar
Beat until fluffy.
Add 1 tsp. Vanilla 9 oz. Softened Cream Cheese
Beat until smooth.
Stir In 1 1/2 cups Pumpkin Puree 1/2 tsp. Nutmeg 1/4 tsp. Ground Cloves 1/4 tsp. Allspice 1/4 tsp. Cinnamon

heavy whipping cream until stiff peaks form. Do not over beat. Fold into sour cream mixture.
Pralines 1/2 cup Sugar 1 tbls. Water 1/2 cup Pecans
Combine sugar and water in heavy sauce pan over medium heat until amber colored, stirring constantly. Mix in 1/2 cup pecans. Turn into lightly oiled cookie sheet. Cool for 1 hour. Crush into small pieces. Frost cooled cheese cake with sour cream frosting. Garnish with crushed Pralines.
Pour into Ginger Snap Crust. Bake at 350 degrees for 35 40 minutes. Chill for at least 1 hour before frosting.
Topping (Chantilly Crème) 3/4 lb. Sour Cream 1/2 cup Sugar 1 tsp. Vanilla Beat until smooth and creamy. Set aside. Beat1 cup

SPICES OF INDIA The use of spices in Indian cookery dates back to ancient times. It was the lure of spices the brought many foreign traders to the shores of India. Indian cuisine is not necessarily acid and searing. The art of Indian cooking lies not in the excessive use of spices but in the delicate mix of a variety of spices to enhance the taste and flavor. BUFFALO SHANKS 6 Buffalo Shanks 1/2 cup Flour 1/4 cup Olive Oil 1/2 cup chopped bacon 1 Julienne Onion (large)
2 Red Peppers (small & diced) 2 tsp Garlic (minced) 1/2 cup Celery/ (small & diced) 1/2 tsp Dried Basil 1 1/2 tsp Fresh Rosemary (minced) 1 tsp Thyme 3 cups Tomato's (canned or dried)
aside. In same pan add bacon, onions, red peppers, garlic, celery, basil, rosemary and thyme. Sauté for two minutes. Add shanks back to pan and add enough stock to cover the shanks. Bring to a boil, cover and cook for 2 to 2 1/2 hours in a 350 degree oven. Recommended to be served with long grain and wild rice, Risotto or linguine noodles.
ALFREDO LOVERS DELIGHT 4 oz Garlic Basil Fettuccine
1 cup White wine
1 oz of Clarified Butter
3 cups Buffalo/Beef Stock
24 oz Heavy Whipping Cream
2 tsp Parsley

Place potato halves around sides of 11 3/4” x 7 1/2” microwave safe baking dish.
1 tsp Dry Oregano 1/4 cup Chicken Base Sauté mushrooms and green onions in butter for 1 minute. Add chicken base and whipping cream and cook until slightly thick. Add parmesan cheese, basil, oregano, salt & Pepper and garlic. Stir and cook for two minutes (low heat.) Serve over Garlic Basil Fettuccine.
ROASTED BEEF, GARLIC & LEMON KABOBS 1 Boneless Beef Sirloin Steak (cut 1 1/4” thick) 9 New Potatoes (small halved)
Cover and microwave on high 6 to 8 minutes or until almost tender. Meanwhile cut lemon into 6 wedges, cut wedge in half. Trim excess fat from steak. Cut steak into twenty-four 1 1/4” pieces . Combine all and oregano in small bowl. Add lemon pieces, garlic cloves and bell peppers to cooked potatoes. Pour oil mixture over vegetables, tossing to coat. Alternatively thread beef pieces , vegetables and lemon on six 12” metal skewers. Place Kabobs on grill over medium coals. Grill 10 to 15 minutes for rare to medium. Turn occasionally. Season with salt & pepper.

TANDOOR- E-AZAM The “Tandoor” is used for tandoori meat preparation and baking tandoori breads. It is an earthenware pot, which is about four feet deep.
