A Big Welcome Back to Denver’s Museum of Tiny Treasures

After a two-year closure, Denver Museum of Miniatures, Dolls and Toys (DMMDT) is in a phased reopening of its new 13,000-square-foot Lakewood location. Visiting families will see more objects of fun on display, new classroom and community spaces, better parking, and improved ADA accommodations. Curious kids can also view behind-thescenes YouTube videos online introducing various pieces from the museum’s 20,000-piece collection. Or, beginning this month, send Mom or Dad to nab one of the monthly workshop kits, available with curbside pick-up. Watch for upcoming homeschool programming. DMMDT is currently open three days a week (reserve tickets online). dmmdt.org Look closely at the Somewhere in Time miniature village (shown), on display at the Denver Museum of Miniatures, Dolls and Toys. While everything seems normal, the keen-eyed kid viewing the whole scene will find all sorts of mishaps and misdeeds like paint spilling, a cat knocking over a vase, or a kite dangerously close to a power line.

The Science of Tiny Studies have been conducted exploring why we are drawn to miniatures and “cute” things. They have shown that, in addition to being non-threatening and taking us back to childhood, the detail of tiny items actually stimulates the sensory-seeking part of our brain. According to MentalFloss.com, miniature scenarios also give people a sense of control and escape from reality. Dr. Ruth Westheimer, the famous sex therapist, media personality, and Holocaust survivor, used dollhouse therapy to help children (and herself) work through serious issues.

Everything does not have to stop because you become a parent." GROUNDED BY COVID "Carson and I haven’t been on a plane since February, but we have done a number of road trips this year. Carson loves to travel. He rolls his suitcase around the house. He set up his own little TSA checkpoint in the living room and plays." MAKING TRAVEL MEANINGFUL "Travel definitely humbles you. We always try to find a place to volunteer in the country where we travel. In Bali we volunteered in an orphanage, in Cuba we handed out toys. I do this to teach Carson to give back."

Travel with Carson Carson Taylor has traveled to 11 countries and 18 states. His passport is full of stamps from Cuba, Colombia, and Indonesia, and he would have added four more from Africa this year if the pandemic hadn’t halted his travel plans. He is the perfect traveler, yet he’s only three years old. His mom TeAndra, who lived in Denver as a child and

YMCA of the Rockies Offers Free Homeschool Science Curriculum One thing’s for certain: DPS parents will be spending a lot more time with their kids this fall. To help families make the most of their time together, YMCA of the Rockies Estes Park Center transformed its expert-crafted outdoor curriculum into grab-and-go kits. Parents can use them onsite to teach elementary and middle school children hands-on science and ecology lessons tied to current state standards. there was something missing. “There are plenty of books out there with African American characters, but none that talk about travel,” she says. That inspired her to self-publish her own children’s travel book, Captain Carson Goes to Bali, with Carson as the main character. TeAndra, who also offers family travel tips on her blog Traveling with the Taylors, chatted with us about adventuring with kids.

Video Games Mom and Dad Can Play The kids want more Minecraft or Fortnite, but as parents, we want them to engage with the rest of the family. There’s another solution: find games that everyone can play... even Mom and Dad. I took the newly released game, Clubhouse Games: 51 Worldwide Classics for the Nintendo Switch, for a test drive with my family. As the name implies, you get 51 games with this single purchase. That seems like a great deal, and it is, but these are what I would call “mini games.” You definitely get a lot of bang for your buck at less than $1 per game, but don’t be surprised if there are some games that you don’t play at all. You’ll find a handful of classic card games, including President, Texas Hold ’Em, and Blackjack. Some of the others are pickup-and-play games like Four-In-A-Row (remember Connect 4?), Dots and Boxes, and Air Hockey. My favorite games in the collection reminded me of the good ol’ days of the Nintendo Wii— especially Bowling and Toy Baseball.

They aren’t quite as good as they were on the Wii (Bowling only allowed two players instead of four), but they come close, and my kids loved playing them as a family. Bottom line, this is an awesome deal and I guarantee out of the 51 games you’ll find a few that you'll enjoy playing together as a family—a majority of the games are multiplayer. Best of all, most of them will take a matter of minutes to figure out and can be played by people of all ages. As a parent, I felt good about what my kids were playing. No blood, no gore. The only things they were shooting were balloons, and they actually played with each other instead of sitting in front of the screen by themselves. Autumn Leaf Strolls It’s easy to see why Summit County is a family favorite for peeping fall leaves. By Jamie Siebrase VIBE: Lazy Saturday Feels DRIVE TIME: About 1.5 to 2 hours from the metro area. TIP: Fall comes quickly in the Centennial State, and it doesn’t last long. Leaf-peep season usually begins in mid-September. Don’t put off your fall hiking too long or all that vivid foliage will be covering the ground.

What’s the best way to get an up-close view of their electrifying autumn leaves? Hike one of these trails. LILY PAD LAKE TRAIL, FRISCO In the Eagles Nest Wilderness, Lily Pad Lake Trail

stretches from Buffalo Mountain Trailhead toward the Meadow Creek Trailhead. Halfway between the two, families find this hike’s main attraction, a sparkling alpine lake. I like accessing the lake via Meadow Creek Trailhead, where C.R. 1231 deadends. Look for a large trail map at the corner of the dirt parking lot, and follow Meadow Creek Trail for a half-mile. When you get to a trail junction, turn right onto Lily Pad Hiking Trail to begin a gentle ascent past an open meadow, several beaver ponds, and vivid foliage. In 1.5 miles, you’ll see a small lake covered in pond lilies. Don’t stop here. Lily Pad Lake is a tad further.

LOWER CATARACT LOOP, HEENEY A looped trail rings Lower Cataract Lake, delivering a 2.3-mile trek through a dreamlike setting where you might catch a butterfly floating past incredible displays of fall leaves. Halfway through the hike, when you reach the spruce forest flanking the lake’s west shore, look for a large beaver dam. To reach the trail, drive to the end of Cataract Creek Road. The trailhead is on the other side of a Forest Service gate, near a series of interpretive signs. Don’t block the gate with your car. Go left or right at the gate to walk around the lake in either direction. If you take the middle path, you’re headed to a small beach with a few picnic tables and fishing access (license required). Pack mosquito repellent. B&B TRAIL, BRECKENRIDGE Colorado was built on mining, and the French Gulch was once an important gold boom area. Today it’s a popular hiking destination containing an extensive trail system weaving through endless strands of aspens. Park at the B&B Mine Trailhead off French Gulch Road, and hike through the trees to reach a decaying dredge stuck in a small pond on French Creek. It’s something to see! Learn more about the site by walking around the water and reading a series of interpretive signs. Then continue on through an incredible rock quarry to reach Reiling Dredge Trailhead. I Suspect My Child’s Friend Has Autism THE PROBLEM: I think one of my child’s friends might have autism based on our interactions with him. The boy has not been diagnosed and I don’t think autism is on the family’s radar. His behavior can be challenging and my child doesn’t want to play with him anymore, but I think there’s a deeper issue. How do I address my concerns with the boy’s parents? THE EXPERT: ​​​Lea Anne Paskvalich, executive director, Autism Society of Colorado. THE SOLUTION: Parents know their children best. Autism may not be on their radar, but their child’s behavior is. The parent likely has concerns or has noticed the boy’s behavior is challenging in certain situations and around other children. What they may not know is that other parents are noticing, too. Parenting a child with social communication challenges when you don’t know the cause can be overwhelming. It can be painful and your gut instinct is to try to protect your child. Parents sometimes do this by explaining away the behavior: “My child is tired, hungry, or really prefers to play that game exactly the way we do at home.” However, bringing up the topic of autism can be done with love and compassion. Here’s how to initiate the conversation. 1. When you’re thinking about what to say to the parent, note the child’s strengths. Mention his vast knowledge of dinosaurs, unconditional love for your rambunctious puppy, amazing drawing or math skills. You want the parent to know you notice the child’s strengths. 2. If you suspect the child has autism but aren’t sure, tread lightly. Identify the concerning behavior and explain to the parent that you

know this behavior can be present in some children with autism. Whether you have indirect experience (like through the media), or direct experience (through a family member’s or friend’s diagnosis), it’s important to share the source of your knowledge with the parent. 3. Open the door to more information or resources for that parent. If you have a family member or friend who has a child on the spectrum, offer to connect the two parents. For parents who are questioning a possible diagnosis, it can be incredibly reassuring to talk to another parent who has a child with autism. Reliable information about autism spectrum disorder can be found on the Centers for Disease Control and Prevention website. 4. Be prepared that the parent may be shocked at what you are suggesting. They may flat out reject your thinking/questioning or even be angry with you. If that’s the case, leave it at that. On the other hand, it may also elicit an overwhelming sense of relief or emotion that another parent has taken the time to think about their child and help them. You can also help your own child understand that some children may have big feelings and reactions that they may not be able to manage in certain situations. Modeling empathy and kindness for the child that is struggling can go a long way with your own child. Involve your child in brainstorming outings on which you could invite the mom and her child to accompany you. Find and use your own knowledge, love, and compassion to support this child and parent, and the world will be a better place for it. —Edited by Courtney Drake-McDonough

Powerful Puberty Midwife and educator Julie Hughes teaches moms and their tween and teen daughters about puberty, body image, and why we should celebrate—not squirm about—their changing bodies. By Hilary Masell Oswald

ne August morning, I’m sitting in the living room of a friend’s family cabin in the mountains with my then 10-year-old, Hadley, and a half-dozen other mom-daughter pairs. I’ve been friends with a few of the women longer than I’ve been a parent, which means that I’ve also known some of these girls since they were round-faced, wide-eyed babies. On this day, they’re all rising fifth-graders (except one little sister, a rising fourth-grader), and I’m watching them lounge on the floor—their long, gangly legs stretched out in front of them—as they chat amongst them-

selves about a friend’s new puppy, their favorite music lyrics, and why they need a snack an hour after breakfast. Then Julie Hughes, our guest and instructor for the day, gently summons our attention. We’re gathered for our fourth-annual mother-daughter weekend, but this getaway is different: Hughes, a midwife, is here to lead us through her five-hour workshop dubbed “Powerful Puberty.” (Earlier, my daughter asked, “Mom, five hours talking about puberty? Is there that much to talk about?”) Turns out, we both learn that day, the answer is “yes.”

“THE TALK” Hughes, a mother of four children who range in age from five to 16 years old, feels like a kind, free-spirited aunt in whom you can confide. She’s a certified midwife who launched her business, the Life Cycle Lady, after searching for a class on puberty for her own daughter and finding nothing. “My goal is to normalize the process of puberty,” she says. “Every single human on the face of the planet goes through it, and it’s nothing to be ashamed of. It’s something [preadolescent and adolescent] kids should be talking about and cele-

brating with the people they’re closest with.” Her other goal, she adds, is to equip girls with knowledge about their bodies and help them understand why these changes are happening. And sometimes, moms of today’s prepubescent daughters don’t quite know how to launch a conversation with their girls, or how to cover all the details. “Maybe you talk about physical changes, but there are emotional and social changes, too, and girls need to know about them all,” Hughes says. The summer morning Hadley and I and our friends meet Hughes, she leads us through three “big” topics with an irresistible mixture of candor and warmth. She talks about the brain changes and the body changes that come with puberty and gives a specific and—there’s no other word for it—marvelous description of menstruation. I confess feeling a sense of relief as Hughes breaks down the details of female bodies; not only is she nailing the biology, but she’s also infusing the conversation with a sense of wonder. The message is clear: How amazing is your body?! ACTIVITIES FOR GROWING AND CHANGING These three talks are broken up by activities that teach without being overly didactic. At one point, Hughes gives us stretches and breathing exercises to teach our bodies to relax when we feel worked up. We’re lying on the floor with our hands on our own stomachs and Hughes tells us to “notice the moment between the rise and fall of your hand with your breath.” She calls that space “your still, quiet place,” and she reminds us all we can visit that space just by putting our hands on our bellies. (A mom whispers, “I need this for my own life!”) Later, the girls make “emotional storm jars” (water, glue, and glitter in mason jars). Hughes explains that the jars represent how our feelings can get whipped up when hormones are pumping wildly through bodies. By shaking the jars and watching the glitter settle, she tells the girls, they can give themselves an opportunity to “slow down.” There are art projects, time for mom-daughter pairs to talk privately, and opportunities for group sharing. Moms even tell stories about our 10- or 11-year-old selves, and I catch a glimpse of the girls my friends once were. When we’re done, Hadley sidles up beside me and wraps her arm around my waist. “Mom? That was …”—she pauses and grins up at me—“pretty awesome.” I completely agree. CONTINUING THE CONVERSATION Hadley and I took this class more than a year ago, and now we’re gearing up for the second round of Hughes’ workshops, called “Powerful Puberty 2.” A much shorter curriculum, it’s designed for

middle-school girls (between the ages of 12 and 14). “I teach about body image, emotional health,” Hughes says. “It’s about how to be a good, strong peer to your group of friends without falling for some of the unhealthy pressures kids in this age group are facing.” Of course, we might be taking the class online, given state and local restrictions on gatherings—and that’s OK. Though she still offers private classes for small groups, Hughes has created videos, framed as “mother-daughter date nights,” for both of her workshops. They include her “big talks” about puberty as well as shorter tutorials for the art projects, discussions, and tools she helps girls and moms develop to navigate puberty together, equipped with knowledge and even, yes, delight at the ways our bodies are built to grow and change. he intricate knots and weaves of macramé projects might look challenging, but with a little bit of practice and some patience, your little crafter (and even most grownups) can tie into this trendy craft of Middle-Eastern origin. To gather some macramé inspiration, we tapped Delanie Holton-Fessler, an arts and craft educator and the owner of The Craftsman and Apprentice, a Denver-based craft studio. Holton-Fessler believes macramé is the perfect craft for kids, giving them practice with knot tying and pattern following. Her best tip for beginners: “Go slow and don’t worry if it’s not perfect. You can always untie and try again.” That certainly rang true when we made these projects, and the challenge and opportunity to get creative made these crafts loads of fun.

4. Pull the same left cord up through the loop on the right. Pull the far left and far right strands tight while keeping the middle two strands flat and parallel. (Your completed knots will start to twist, which is the desired look of a Half Square Knot).

5. Repeat steps 2 through 4 about six times, then add a bead to the center two cords. Continue with six more Half Square Knots, then add another bead. Complete six more Half Square Knots before adding your final bead. Add six more Half Square Knots underneath your last bead.

• Two, 6-foot lengths of 3mm macramé cord • One key ring • Scissors • Three beads, with holes big enough to feed the cord through TIME COMMITMENT 15 to 20 minutes SKILL LEVEL A little tricky. If you can tie your shoes, you can get it down!

DIRECTIONS: 1. Fold both of your cords in half. Following the Lark’s Head Knot, place the loop of the first cord in front of your key ring. Pull the two ends through the loop from behind the ring and tighten. Repeat with the second cord.

2. Lay the key ring and four strands on a flat surface. Following the Half Square Knot style, take the far right strand and lay it over the middle two strands, creating a loop on the far right. (The center two cords will always stay in the middle. You’re only using the far right and far left cords to create this knot).

3. Take the far left strand over the right strand and under the middle two strands.

6. Finish by pinching the four strands together close to the bottom knot. Then, tie the four strands together in an overhand knot. Cut the remaining ends to desired length. Unravel to create fringe. (Tip: Wrap the ends of your cords with embroidery thread for a finishing touch. See photo top left.)

y now, you’ve probably heard that there are benefits to eating dinner with your family, yet there’s so much about mealtime that feels stressful. Perhaps the book, Eat, Laugh Talk! The Family Dinner Playbook says it best: “Dinner often feels like another mountain to climb in a work week filled with mountains.” That’s where meal planning serves up some relief. Spending just a couple minutes to organize family meals for the week, or even the month, may actually reduce meal-time stress. Not only that, you may also cut down your grocery bill and restaurant take-out expenses. While there’s no fool-proof plan that works for everyone, there are tips and tricks that make meal planning more approachable. To source some solutions, we reached out to experts who have vast experience in the kitchen and whipped up this beginner’s guide to all things dinner prep. With some planning and optimism, meal prep really can become a task to savor.

THE PROS OF PLANNING

Before exploring how to approach meal planning, let’s talk about why you should spend the time on it. These three perks aren’t the only benefits to meal planning, but they’re reason enough to start. It reduces stress in the kitchen. How many times do you hear the dreaded “Moooomm, what’s for dinner tonight?” When you have your meals mapped out for the week, this question becomes less triggering after a long, busy day. Having a plan in place creates a sense of control and a feeling of accomplishment. If you go a step further and incorporate some advance meal prepping (prewashing and chopping ingredients), you’ll relieve yourself from being tied to the stovetop all evening, and save some time on daily dishes and kitchen cleanup. It’s a money saver. Trashing unused or spoiled food is like throwing away money. And it’s usually a symptom of shopping without a clear plan for the groceries you put in your cart. With a meal plan (and a shopping list), you will pay attention to what food your family is really eating and what’s going to waste. You’ll also learn what food items you use most frequently and could buy in bulk like chicken, fish, or grass-fed beef, which is generally more cost-effective than buying small amounts. Elana Amsterdam, a cookbook author, the blogger behind Elana’s Pantry, and a mom of two from Boulder, is a big fan of batch cooking. “Batch cooking saves money because it prevents food from going to waste. My husband and I will grill chicken breasts and have a chicken Caesar salad one night, then I’ll shred the leftovers and make a one-pot meal of fried cauliflower rice with chicken the next night for dinner,” she says. Karin Russell, a volunteer at Metro Caring, a nonprofit anti-hunger organization in Denver, believes the key to saving money is to think about all the different ways you can use your produce.

“You can buy a bunch of carrots with the fronds still on and use them one night in a stir fry. Then the next night, the fronds can be used to make a pesto,” Russell says. It limits your grocery store runs. Keeping shelf-stable items, like pasta sauce, frozen pizza dough, taco shells, frozen veggies, and rice in your pantry or freezer ensures you’re always stocked up on the essentials. While you’ll still need to make trips to the store for fresh produce, having some staples on hand will help limit your grocery store runs—which is especially nice during the colder months.

MAKE IT HAPPEN

How to put a meal plan in place—without the stress. Start small. There are many different ways to plan your meals, and finding a starting point may be one of the most intimidating parts of the process. Erin Chase, the blogger behind $5 Dinners and a mom of four, suggests starting small by writing down five recipes that you’ll make at some point that week. Once you know what meals you’re going to make, check your pantry and fridge for ingredients that you may already have, then add any other needed items to a grocery list. When you shop with a grocery list, it’s less likely that you’ll forget items or have to run back to get ingredients for last minute meals. With five meals planned and the groceries needed for each, you won’t feel the urge to fall back on delivery or the drive-through. Make it your own. Tailor the way you keep track of meal plans to fit your schedule and organizational style. Amsterdam keeps tabs on her meals by writing her plans down in a computer document she created. Chase, on the other hand, uses a combination of a binder

and a tear pad. “I’ve changed my strategy over the years. It’s an ongoing journey, but as long as you’re planning in some way, that’s what’s important,” says Chase. “Eventually, you’ll settle in and find the right cadence for your family.” Give yourself some grace. To take some of the pressure off of following through, Chase believes it’s important to allow yourself to be flexible. “I think a lot of people don’t account for two things—their schedule and their mood—which are both really important when it comes to deciding what to make on which day,” she says. Cut yourself some slack and remember that it’s OK if you want to switch up your plan a bit. When writing out your plan for the week, use a pencil instead of a pen so you can easily make adjustments. “Sometimes, the corn you purchased for tacos next Tuesday is going bad and needs to get used on Sunday instead. Or you might have a bad day and need to use your leftovers day on Thursday instead of Saturday. Having a plan is a great way to stay on track, but understand that it can have some wiggle room in case something happens,” says Russell.

CRAFT A MENU

Take note of your family’s favorite foods, put them in rotation, and get cooking! If you’re ready to go all in, simplify meal planning by creating a consistent weekly menu. The idea is that you’ll always be making at least five tried-and-tested meals and, bonus!, you can keep the staples on hand. You’ll only need to shop for the fresh ingredients each week. To begin, think about the meals your family loves like pizza or tacos, (choose five) then brainstorm all the different ways you can prepare those dishes. To keep things from getting boring, make sure your dishes have toppings, sauces, or bases that can be swapped out weekly for something different. For example, you could make chicken tacos one week and shrimp tacos the next, or a veggie pizza during week one and barbecue chicken pizza on week two. Chase says that the average family already rotates between the same nine to 10 meals over and over, so this menu approach isn’t far from most people’s realities. “I hear a lot of people complain that they get tired of eating the same thing. I think that this menu concept helps with that because, while you’re sticking to the same type of meal, there are several ways to make it feel new each week.”

Consider your family’s schedule before committing. Does it matter which day of the week you plan to make each dish on your menu? Not really, but you should consider your family’s schedule. Have a particularly packed day on Tuesdays? Don’t schedule your most involved meal for that night. PTA meetings on Thursdays? Even if the meeting ends up being virtual, plan to roast a one-pot chicken in the slow cooker that day so it’s ready to go when the meeting is over. As Chase mentioned, many parents don’t think about their schedules and what’s realistically going to work for them before they come up with a meal plan. This will only leave you frustrated when you can’t follow through, and no one wants that. While everyone’s schedule is different, plan to make your most challenging recipe on Monday, when you’re still excited about the week ahead (and not exhausted yet). Then, use the evenings that you have the most chauffeuring to do to get takeout, serve up leftovers, or make one of the faster recipes like pasta or pizza.

How we come up with the Top Dentists list. This list is pulled from the 2020 topDentists database, which is created using peer evaluations and includes listings for more than 900 dentists and specialists in Colorado. To create its list, topDentists asked dentists and specialists a personal question: “If you had a patient in need of a dentist, which dentist would you refer him or her to?” The nomination pool comprised all active dentists listed online with the American Dental Association as well as with dental academies and societies. (Dentists could also nominate others who may not be on those lists.) Respondents were asked to consider experience, continuing education, manner with patients, use of new techniques and technologies, and physical results. After the responses were compiled, dentists were checked against state dental boards for disciplinary actions to make sure they have active licenses and are in good standing. YOUR FAMILY'S DENTAL HEALTH IN PANDEMIC TIMES Don’t keep your distance from dental care. By Courtney Drake-McDonough

S

ure, we’ve attended Zoom meetings with a dress shirt on top and PJs on the bottom. Or, let the kids wear the same shorts one day longer than we normally would. Maybe even skipped showers here and there. But dental care and hygiene is one of those things that should not be neglected or compromised. The consequences of letting good habits decay can be negative and long term for both adults and kids. We checked in with a Colorado dentist and an orthodontist to make sure we’re doing the right things for our family’s oral care during the pandemic.

BRUSH AND FLOSS DAILY— NO MATTER WHAT Devote two minutes to brushing and flossing, plus 30 seconds of a fluoride rinse in the morning and at night, advises Dr. Preet Clair of Clair Family Dentistry. She says this morning routine is especially important if you eat before brushing and flossing because breakfast “feeds the bacteria in the mouth that occur in a dry mouth at night.”

KEEP UP WITH REGULAR APPOINTMENTS Dental and orthodontic professionals understand that patients may feel hesitant to go to their offices for appointments during the pandemic.

Some people have scheduled appointments but others say they aren’t ready to return. Clair says the problem with not maintaining regular dental visits is that issues may be developing even if you aren’t feeling pain. For adults especially, she says, extra tartar buildup can lead to things that leave the body open to infection, including bleeding gums, gingivitis, cavities, and, potentially root canals and even removal of the tooth. “Small areas of decay can get bigger and start to cause sensitivity and pain, especially in children, since the enamel of baby teeth isn’t as strong as permanent adult teeth,” says Jazmin Rivera, a dental hygienist at Clair Family dentistry. “Lack of cavity control for kids can lead to swollen lymph nodes which can lead to septicemia (a blood stream infection) and hospitalization.” Dr. Hillary Baskin of Colorado Orthodontics agrees. “Often things going on in your body are first shown through your mouth,” she says. “So, there are things we can identify and make sure that the whole person, not just your oral health, is under control.” In orthodontics, not maintaining a treatment schedule can have different consequences than in dentistry. “Braces are like mini-machines in your mouth and they need regular care and attention to make sure treatment is progressing in a positive and forward direction,” says Baskin.

Clair and Baskin have noticed an increase in issues that could be related to the pandemic. “In the past few months, we’ve seen many cracked teeth due to grinding and clenching which occurs during stress,” says Clair. Baskin has noticed more patients complaining of jaw joint pain which, she agrees, can be related to clenching and stress during this time of COVID. Both have also had to remind returning patients to practice good oral hygiene and cut back on junk food. “We discuss strict oral hygiene practices and proper eating habits, especially limiting of sugar intake, with all our patients regardless of a pandemic. But we stress it even more now,” says Clair.

FOLLOW UPDATED OFFICE PROCEDURES According to both Clair and Baskin, most dental and orthodontic offices are routinely considered very safe because of the strict hygiene protocols that are standard when working in the mouth. However, they added that they’ve increased precautions due to COVID-19 to include how appointments, waiting, and treatment rooms are handled. Call your dental or orthodontic office before your appointment, or check their websites, to see what they are doing and what you should be prepared for when you arrive. At Clair Family Dentistry, for instance, patients are asked to call the front office when they get there and wait in their car or outside in the fresh air until they are called in. Once inside, they are asked to use hand sanitizer or wash their hands for 20 seconds. Patient temperatures are taken and they are asked a series of questions about potential exposure. Masks are required until staff needs to access patients’ mouths. “For medically compromised individuals, we will try to schedule those patients first thing in the morning or end of day,” says Clair. At Colorado Orthodontics, among other measures, they are decreasing the number of patients seen and the number of people in the reception area; and are socially distancing patients and staff in the treatment rooms. Families are also asked about potential COVID-19 exposure, and patients rinse with a diluted iodine/water mixture recommended by the University of Connecticut before being treated. Keeping up with appointments for oral health maintenance and treatment can be handled safely with proper precautions in place. And a shower before you go wouldn’t hurt.

Passport to Family Dinner Expand your child’s palate by introducing them to tasty and diverse dishes from around the world. Try these kid-approved recipes from Colorado chefs and cooks. By Lydia Rueger

If I’m being honest,

the words, “Look, mac and cheese!” and “Oh! Mini corn dogs!” have come out of my mouth just a few too many times over the years, as I spotted my kids’ favorites on international restaurant menus. I have a love-hate relationship with these kidmenu staples; while I want to try new restaurants and diverse dishes myself, I want my kids to feel comfortable and actually love what they are eating alongside me. But what if they could be comfortable and love what they are eating regardless of the type of restaurant we try? It starts by getting them involved with cooking at home, experts say. “They’ll be more interested in eating if they’ve had a hand in the making,” says Deanna F. Cook, author of the multicultural kids cookbook Cooking Class Global Feast. “Taste is acquired. You have to educate their palates and constantly reintroduce foods.” To help do so, here are five recipes from Colorado chefs representing dishes from different cultures. You’ll nurture adventurous eating, challenge their independent skills, and teach respect for other cultures without leaving your home kitchen. Bon appétit!

JAPANESE SUSHI - 寿司

SUSHI RICE

Ingredients 2 cups sushi rice, rinsed several times to remove excess starch 4 cups water ½ cup rice wine vinegar ¹�3 cup sugar ½ teaspoon salt

Directions 1. Combine the rinsed rice and water in a covered saucepan and cook according to package directions. 2. While the rice is cooking, combine the vinegar, sugar, and salt in a small saucepan and heat just to dissolve the sugar, and salt; set aside to cool. 3. Fold the seasoned rice vinegar into the warm rice with a paddle or wide spoon, mixing and fanning until the rice is cool enough to handle. Yields enough for four to eight sushi rolls. MAKI SUSHI

Ingredients 8 nori (seaweed) sheets 4 cups cooked sushi rice 1 cucumber, seeded and julienned in 4-inch long strips 1 carrot, grated 2 avocados, pitted and sliced Scallions, cut into 4-inch pieces Wasabi, optional Other fillings of choice (sushi-grade fish, cooked chicken, cooked shrimp, etc.)

Directions 1. Lay a nori sheet shiny side down on a sushi mat. (Rice will adhere better to the rougher side of the nori sheet.) 2. Press about ¹�3 to ½ cup of sushi rice onto the nori, leaving a ½-inch gap at the top. (Continued on page 51)

Ingredients 2 cups flour 1 teaspoon salt ½ teaspoon baking powder 1 tablespoon sugar 1 teaspoon vanilla extract 6 eggs 2 cups milk 4 tablespoons oil

“I was four years old when my family emigrated to America in 1991, but my parents did a phenomenal job of exposing the kids to the Russian culture, food, and people. Blinchiki, which are very similar to French crepes, is a childhood favorite that every Russian can relate to, and is a constant staple in casual home atmospheres, as well as for parties and celebrations. My mom taught me how to make them when I was 14, cooking for a family of 10, without a written recipe. There is a Russian saying, ‘The first Blinchiki will be a disaster.’ Oftentimes that was the result of a pan that may not have been heated enough, but no matter, it was the official license to do a taste test!” —Victoria Ovcharenko, chef/food blogger, Welcome 2 Our Table

Directions 1. Whisk together the eggs in a medium bowl. 2. Combine the flour, salt, baking powder, and sugar. Add mixture to the eggs. Batter should be thick. 3. Gradually pour in the milk, whisking the batter into a smooth consistency. 4. Add vanilla extract. Cover and place in the refrigerator for 30 minutes. 5. Stir the batter and add oil. 6. Preheat a crepe pan or a nonstick skillet on high heat. 7. Using a ladle, pour the batter onto the pan while simultaneously swirling the pan with the other hand to spread the batter evenly to cover the skillet. 8. Once the edges of the crepe begin to look dry and start to color, flip it over and cook for another 30 seconds. Repeat until all the batter is used up.

Tips and Notes Add more milk to the batter if the Blinchiki come out too thick. Encourage your kids to help with every step of the process, including cooking them, advises Ovcharenko. “[Cooking] Blinchiki takes a little practice, but my boys love a challenge,” she says. Blinchiki can be basted with melted butter as soon as they come off the skillet if eating them right away. Top or fill with jam or a sauce. A favorite among Russian families and kids is a sweetened cream cheese filling; a common savory Russian choice is a minced meat filling with caramelized onions.

Tips and Notes The corn, beans, and squash can be substituted with similar ingredients throughout the year, depending on what you might have in your home garden. In the summer months, try sunburst or patty pan squash. In the fall and winter, switch to cooked acorn or butternut squash. Pinto, Great Northern, or tepary beans can be substituted for black beans. Roasting the corn is optional; canned corn could be substituted to simplify the recipe process.

Directions 1. Add potatoes, water, and salt to a stock pot. Bring to a boil. When potatoes are fork tender, strain in colander and mash, draining them of most of their liquid. 2. Heat one tablespoon oil in a pan on medium heat. Once oil is hot, add mustard seeds, garlic, ginger, and green onions. Sauté for two to four minutes. Once aromatic, place in a small storage container and store in the refrigerator. (Continued on page 51)

“Vada Pav is a classic Mumbai street food, brought to Jamaica through the Indian workers who came to the island in the late 1800s to early 1900s. Growing up in Jamaica, my grandmother would make this for us, and I didn’t know what it was. All I knew was that I wanted at least three, it is so good! I was raised in the Rastafarian culture, and eating meat was not in our diet. Honestly, that helped to shape my culinary career. 1. Wash all produce and set aside; shuck and wash corn. 2. Heat an outdoor grill or oven broiler to high. Roast corn on all sides, being careful not to burn it; set aside. When corn cools, cut kernels from the cobs. 3. Cut zucchini and squash into small cubes, slightly larger than the size of corn kernels. 4. Chiffonade scallions (cut into long, very thin strips). 5. Dice yellow bell pepper into very small pieces. 6. Rinse beans well with cold water. 7. To make vinaigrette, combine sunflower oil, apple cider vinegar, mustard, maple syrup, salt, and pepper in a mixing bowl and whisk to combine, or use a food processor. 8. Combine all ingredients in a large mixing bowl and toss. 9. Slowly add vinaigrette, saving some for later. (Adding all the dressing will overwhelm the flavor of the salad.)

Tips and Notes Ethiopian food is not served with utensils, but instead with gluten-free injera—a spongy bread. Purchase injera from a local Ethiopian restaurant prior to making this dish, and show your kids how to scoop up bites of the stew inside small pieces of the bread, as it would traditionally be served. When making Kik Alicha, “Stay patient,” says Yohannes. “It is a trial and error type of recipe, and takes some repetition.”

Have a Picky Eater? Try This! In addition to cooking with your kids at home, Deanna F. Cook, author of Cooking Class Global Feast, offers these suggestions for getting picky eaters to try new foods. • When visiting restaurants from other cultures, don’t look at the kids menu first. Instead, encourage your kids to choose a soup or a

couple of side dishes. These often will be even less expensive than the kids menu options. • Many kids love bread, so let them order the traditional bread from that culture, such as naan (Indian), injera (Ethiopian), bao buns (Chinese), or pita (Middle Eastern) as their meal. It’s a start! • When ordering from restaurants, order several menu items or appetizers and eat family style, allowing everyone to sample a small portion of all the dishes.

• Invite a friend to dine with you. “Peer pressure works,” Cook says. “My own daughter would always try new things with a friend.” • Garden together. “[Kids] might say they don’t like tomatoes, but when they pick a cherry tomato off the vine and eat it, it’s different,” Cook says. • Say yes to dessert. Many restaurants from other cultures will offer desserts that vary in color, texture, and taste; including special ice cream flavors.

1 pound (about 2 cups) dried yellow split peas 1 yellow onion, chopped ½ teaspoon garlic, minced ½ tablespoon turmeric ¼ cup vegetable oil Salt, to taste Pepper, to taste

until caramelized (golden brown in color). 4. Boil 3 cups of water in a large pan. 5. Add peas, caramelized onions, and vegetable oil, on medium heat. Simmer until peas are al dente, about 1 hour. 6. When peas have softened, add garlic, turmeric, salt, and pepper. Cook for five to 10 minutes longer.


Recipes Continued TOMATO CHUTNEY (SANDWICH SPREAD) Ingredients 1 cup diced tomato ¼ cup diced poblanos 1 tablespoon allspice ¼ cup lemon juice ½ cup grated ginger ¼ cup diced red onions ½ teaspoon tomato paste ¼ cup white distilled vinegar ½ cup ketchup (use a spicy ketchup to counteract the sweetness) ¾ cup sugar

Directions 1. Heat two teaspoons of oil in a pan on medium heat. Then add the onions and sauté for two to four minutes or until translucent. 2. Add poblanos, allspice, ginger, and lemon juice. Sauté for two to four minutes. 3. Add tomato, tomato paste, vinegar, ketchup, and sugar; allow the chutney to cook on low-medium heat for 20 to 30 minutes. 4. Place in a storage container in the refrigerator. 5. Puree to create a smooth sauce.

(Continued from page 47) 3. If using, spread a small line of wasabi across the rice, then layer with about ½ inch of fillings of your choice in the center next to the wasabi. Don’t overfill, or the roll will be difficult to seal and slice. 4. Roll the nori from the edge closest to you, up and away from you, using the sushi mat to press it into shape. 5. Place seam side down to cut into eight pieces with a clean, sharp knife. To create even pieces, cut each roll in half, then each half in half, then each quarter in half. Wipe the blade between each cut with a wet towel to remove any rice, which will interfere with making a clean cut. “Saw” back and forth with the knife instead of pressing the knife down. (This will avoid pushing the filling out of the ends.)

Tips and Notes “Don’t worry if kids’ rolls are messy or if they combine what might seem like a strange choice of ingredients into their rolls—it’s all about experimenting and tasting,” advises Morris. Sushi is traditionally eaten with your fingers, so no need for kids to struggle with chopsticks if they find them difficult to use. When rolling the sushi, to make sure your child’s rice ends up on the nori and not all over their hands, have them dip their fingers in water frequently when spreading the rice (shake off excess so they don’t drench the nori). Use fingertips only to spread the rice, or wear plastic gloves.

Mix well and form lemon-sized balls out of the potato mixture (should make about 10 balls). 4. To make the batter in which you fry the Vada, combine ½ cup chickpea flour in a large mixing bowl with turmeric, salt, and baking soda. Start adding water, little by little. If the batter is too thin, gradually add the remaining ¼ cup chickpea flour. 5. Whisk to form a smooth batter. Add extra tablespoons of water to reach a desired consistency. The batter should be a medium consistency to cover the potato balls fully; neither too thick nor too thin. 6. Heat peanut oil to 375 degrees. 7. Dip potato balls into the batter. 8. Gently submerge potato balls in the oil and cook for 6 minutes, or until golden brown. 9. Remove from oil and serve on a slider bun; spread with curry mayo and tomato chutney.

CURRY MAYO (SANDWICH SPREAD) ½ cup vegan mayonnaise (Veganaise) 1½ cup yellow curry powder ¼ cup lemon juice 2 tablespoons salt Combine all ingredients.

Tips and Notes It’s recommended that Vada Pav be served with both the curry mayo and tomato chutney at the same time. “The combination of the tomato and curry creates a bite with the fried Vada like no other,” says Cooke. Have your kids try a taste of each before spreading them on the sandwich.
