Boho bridal fashion gains momentum The free-spirited motif of Boho fashion finally made its debut at New York City’s highly anticipated Bridal Fashion Week this past spring.

The bohemian-influenced bridal trends for 2016 range from two-piece wedding gowns with featured crop tops to airy layers of chiffon with watercolour floral printed dresses, and pastel hue-coloured dresses. Reflections Wedding and Events lead designer, Teal Minisofer, who is based in Calgary, anticipates the future of bridal fashion will become Boho chic in the Columbia Valley over the course of the next two years, with trademark embroidery and glamour gradually being phased out of the outdoor wedding scene. “Bohemian chic is still huge,” said Ms. Minisofer. “I predict it will be for some time, and you’ll definitely be seeing more people opting out of veils and going more towards flower pieces in their hair or floral crowns. “Whether it’s a really simple piece of greenery with baby’s breath or big, bohemian blooms on the head — that kind of timeless, earthy, organic bride is being seen in the trend-setting world.” She explained the traditional white wedding with a veil has become dated for millennials who do not relate to the same belief system that brides and grooms once valued. “I think the tradition of the veil itself is actually going out because it comes from a time when getting married was the groom seeing the bride for the first time, so there were a lot of reasons for this, but one was so the groom couldn’t say, ‘no’,” added Ms. Minosofer with a chuckle. “I know that sounds terrible, but it’s true.” She noted that society has shifted from a focus on purity and the bride being presented for the first time to one where couples live together for several years before tying the knot, which ultimately has set the tone for the landscape of weddings to come. “I don’t think people really connect to that idea as much anymore, which is why you’re seeing more people opt for that earthy vibe,” she explained. “It’s not that you won’t see (veils) anymore, it’s just that people are getting more creative about it, I think it’s definitely a personality thing.” The concept of creating an atmosphere that is customized to a couple’s unique and individually eclectic tastes has continued to grow, from the bridal party’s outfits to the decor. “It’s not about having linens that match your bridesmaids, which match your napkins, which match your candles,” added Ms. Minosofer, who noted the textures and colours of bridesmaid’s dresses are often different, but tied together in some way. “It’s about having lots of colours within the same hue. You’re going to see a lot of that as well as the idea of having an all-wooden table rather than having a table covered in linen.” As another option, people will put a lace runner down the table with lots of greenery and floral garlands hanging from the table instead of individual centerpieces. “We’re in the day and the age where everybody tries to customize everything, whereas before, weddings were all the same. The same traditions, the same dress colours, everybody’s colours matching everything — so I think people are trying to customize the experience and have it look a little bit more natural and undone.” Ms. Minosofer added the best way for a Columbia Valley bride to take advantage of the best bridal fashion that Calgary has to offer is to attend the day-long Bridal Expo in Calgary in September. “If you’re going to be in Calgary for only one day, the Bridal Expo has 80 per cent of the vendors in the city all in one spot to showcase the packages that they have for 2016,” she concluded. Getting married on the greens In the Columbia Valley, golf courses are a key aspect of many special events, including weddings. Boasting some of the most spectacular views imaginable, courses combine delicious food, expansive ceremony facilities and elite guest services to make each wedding unforgettable.

The area’s golf resorts offer weddings in a variety of sizes, from quaint for just close friends and family, to grandiose for all the second and third cousins imaginable. Fairmont Hot Springs Resort offers an incredible location at the Fairmont Mountainside Golf Course clubhouse for parties of less than 100 people. “The best way to describe weddings at Mountainside is that they are intimate and cozy,” Fairmont wedding co-ordinator Laura Jenkins said. “It is a way to be with your close immediate family.” Overlooking manicured fairways and rugged mountains in the distance, the clubhouse offers a massive window to connect the ceremony with the powerful surrounding natural scenery. “If you are in our Mountainside clubhouse and you look straight out the main window, you can see right down the straightaway of the course, which is really quite beautiful,” said Laura. For guests attending a marriage at Mountainside, convenience is a huge asset. “Guests will typically stay at the Fairmont’s main lodge, but we provide a stress-free shuttle service to get them over to Mountainside,” said Laura. As for dining during the reception, couples can choose between plated or buffet-style meals, both options sure to satisfy guests. Eagle Ranch Golf Resort offers weddings for up to 130 guests. Perched above the Columbia River, the resort offers a variety of indoor and outdoor wedding options. “We specialize in really finding a wedding that suits the bride and groom’s eye,” said Eric Thorsteinson, the resort’s general manager. “What sets us apart from other wedding venues is not only our views and our expansive deck, but our beautiful clubhouse.” For couples who decide to say their vows indoors, the clubhouse offers the rustic charm of exposed timber frame construction and a massive rundle stone fireplace. Alternatively, ceremo-

nies at the resort’s gazebo, separated from the clubhouse by a well-kept lawn, are extremely popular for couples who want to look out over the Purcell Mountains, the Rockies and Lake Windermere as they tie the knot. “Our third amazing option is the clubhouse patio, which offers similar views to the gazebo and similar amenities to the indoor spot,” Eric said. Eagle Ranch also offers small ceremonies in the Pioneer Room, which comfortably seats 30 people. The elegant dining room is perfect for very intimate weddings. Similar to the ceremony options, meals at Eagle Ranch are all about customization based on what each happy couple is looking for. “Whether it is white glove service or dressed down, plated or buffet-style, we can certainly cater to the elite of the elite, or more of a small-scale wedding,” Eric said. The Radium Golf Group offers weddings for up to 180 people. Couples can say their vows at either the Springs Course or the Radium Course, which each offer different amenities and attractions. At the Radium Course, a brand new wedding site was built last year to host brilliant outdoor ceremonies. The site is located beside the second teebox, overlooking the Purcell Mountains. At the Springs, ceremonies occur on the bluffs, where guests can admire a breathtaking view of the Columbia Valley Wetlands as they share in the wedding magic. “The most popular thing to do is to have the ceremony at the Springs and the reception afterwards at the Radium Course just three kilometres away, which has more space for a large wedding party,” said Radium Golf Group hospitality manager Steve Kuffler. Last year, the Radium Course hired Executive Chef Bruce Edmondson to liven up the menu and take the dining experience to a whole new level. “The sky is the limit with our menu now,” said Steve. “Bruce can prepare just about anything to make each wedding extra special.” To learn more about each of the featured wedding locations, visit www.fairmonthotsprings.com/weddings-at-fairmonthot-springs-resort, www.eagleranchresort.com/ weddings and www.radiumgolf.ca/meetings-andevents/weddings-and-ceremonies. beauty 

Beauty tips for wedded bliss The most difficult decision a bride can make after agreeing to marry the groom will be about the rite of passage that comes with selecting bridal fashion and beauty options for the wedding.

Nothing compares to a bride’s excitement when envisioning softly blushed cheeks, dramatically rimmed eyes and a brightly coloured lipstick for the wedding, which marks the start of matrimonial bliss for some. “It’s a once in a lifetime experience,” said Barbara Mullen, the owner of Fusion Wellness Spa in Invermere, “so enjoy the experience as a whole.” Here are four tips and tricks from the salon experts at Fusion to ensure a stress-free wedding day with a customized style for the bride and groom. Perfectly primped hair There is no shortage of choices to make when it comes to hairdos that range from subtle and sweet to statement styles that are bold and beautiful. “It’s really evolved from tight updos to flowing curls, bohemian styles, braids and twists,” said Leigha Kehr, Fusion’s lead esthetician. “There are lots of floral crowns with looser and lighter hairstyles.” But the glam classics for black-tie affairs haven’t completely gone out of style. “Some brides are still getting French rolls (for formal weddings), but the trend has definitely moved into an airier look,” said Ms. Kehr, adding weddings are becoming more earthy and natural, so couples are relaxed. “I think it’s just how weddings have evolved. People are focused on the events of the day and they aren’t so formal.” Ms. Mullen added the Columbia Valley provides the perfect landscape for outdoor weddings, which helps newlyweds feel at ease on the big day.

“We’re in a resort location and people are having a lot more outdoor weddings that are relaxed with a lot less structure,” said Ms. Mullen. Fusion highly recommends booking a trial hair and make-up appointment roughly three months in advance so there is time to experiment with how to find the best look. “It gives the bride some time to think and feel comfortable with what they’re trying to achieve,” said Ms. Kehr. To have and to hold: bridal makeup Tying the knot is a big concept that stands the test of time, and the bride’s makeup needs to last for the festivities. Ms. Kehr recommends Jane Iredale mineral cosmetics for a long-lasting look that is waterproof. “Bridal makeup for the last couple of years has been really focused on accentuating the eyes,” she said. “We do a lot of smoky eyes with neutral lips and neutral faces — no heavy blushes or bronzers.” She added the key to success with makeup included finding colours that enhance a bride’s natural beauty. “Smoky eyes with a lot of golds and browns,” said Ms. Kehr. “I like to use a lot of purples and dusky colours. Lashes are huge, ranging from clusters to full extreme lash extensions with volume — and that adds a dramatic flare for the pictures, especially.”

Dibble Photography

Nifty nails The best time for a manicure and pedicure is about two days before saying, “I do.” “There aren’t many rules for nails anymore,” said Ms. Kehr, noting that nails finished with a gelish polish are the most durable choice for bridal parties that aren’t having a French manicure. “A lot of girls tend to go with soft petal pinks, taupes and beiges. However, we do have some that want bright, hot pink because it goes with their colours.” Bride and groom basics Bridal parties can book wedding packages for the bride, groom and wedding party before the big day or newlyweds after the wedding to start their honeymoon early.

The Copper Point Resort location of Fusion Wellness Spa comes equipped with a hair salon, two makeup stations, four treatment rooms, four pedicure stations and two manicure stations, which can service the bridal party before or after the celebration. “Make it fun,” concluded Ms. Kehr. “Bring your girls, or your guys, and make an event out of it.” In fact, wedding parties are encouraged to bring food and refreshments to the spa to add to the fun pre-festivities. However, spa treatments for newlyweds should be focused on relaxing side by side with a massage and mud bath package. “It’s a nice way to unwind from the big day’s event,” said Ms. Kehr. Nothing like nuptials at Nipika Nestled in the heart of the Rockies, Nipika Mountain Resort combines the comfort of beautiful cabins and facilities with the rustic, natural feeling of the great outdoors.

Nipika is the ideal wedding spot for couples looking to go away with their loved ones to a unique, picturesque destination without having to travel too far. “We cater specifically to what each bride or groom would like and we try to make our weddings unique to each party,” said Marni Kreutzer, daughter of owners Lyle and Dianne Wilson. “We offer a really unique location to groups up to 100 people.” At Nipika, weddings involve more than just a day trip with guests. The resort requires parties to book accommodations for two nights, making the experience an unforgettable weekend getaway. Typically, guests will arrive on Friday afternoon, enjoy a spectacular wedding on Saturday and partake in one of the several amazing recreational activities available on Sunday before heading home. “Guests can go for bike rides and hikes in the summer on our trails, or they can go for a paddle down the Kootenay River for an extra thrill,” Marni said. “In the winter, we also offer guided cross country ski lessons and tours.” The resort features cabins lovingly built by Lyle and his son, Steven. Marni said the cabins showcase the spirit of Nipika in that

they are eco-friendly and made to connect guests with the natural scenery around them. There are 71 available beds at the resort and the cabins can be fully or partially booked. If a couple books the whole resort, their guests can also bring RVs and tents. For guests who don't fancy camping, Radium Hot Springs village and resort are always a hop, skip and jump away. When it comes to the ceremony itself, guests can have it their way. Nipika offers a variety of beautiful spots for couples to exchange their “I dos.” “Our main location is on the meadow and there is a lovely arch there,” Marni said. “The other really popular spot is out at our natural bridge, which is on the trail system, just a short two-minute hike off the main road. There are also four or five spots on the trail system that people have used in the past.”

If weather is not kind, ceremonies can also happen in the resort's barn or, if the wedding party is smaller than 30 people, in the resort's lodge. As for dining, Marni said Nipika has close relationships with a few well-loved caterers from the area. Winderberry, From Scratch and Anne Riches Catering have all been used many times in the past, though guests are welcome to contract their own. “We like those three because they know what to expect when they get out here,” Marni said. “We are limited power-wise, so they do all the food prep in their own restaurants and just finish it off at the resort.” Like the ceremonies, eating outside under the sun or the stars is encouraged. As with all things Nipika, the surrounding nature takes the festivities to new heights. To learn more about weddings at Nipika Mountain Resort, contact 250-342-6516 or visit www.nipika.com.

When a wedding photographer weds… After 15 years as a wedding photographer, Kimberley Rae Sanderson knew exactly how to make her own wedding to Joshua Estabrooks stand out as the most memorable.

“The ones that are most memorable to me are the bride, the groom, two witnesses and a photographer, they’re in the woods saying their vows,” she confided. “When you pare it right down to the very basics of why two people are standing in front of each other on that day, that’s what’s important.” But despite wanting to capture the intimacy of the moment, she also wanted to throw a fun party their guests would enjoy — so they chose to celebrate the occasion in two parts, in two different locations. “We couldn’t have a summer wedding because I was already booked out a year and a half in advance so we decided to have a winter wedding, and there was only one way to do it, and that was by dog sled,” said Kimberley. Their small, simple ceremony took place in March in Small River, one hour west of Jasper National Park, at Cold Fire Creek Dogsledding with only themselves, two photographers, a guide, the minister

and their two friends (“who are like family”) as witnesses whose daughter was the flower girl. “It was incredibly meaningful,” Kimberley said. Three days later, they were back in Invermere to host a reception at Eagle Ranch Resort, which began with a stop motion video of the ceremony put together by their wedding photographer Tracy Connery as a surprise for Kim and Josh’s friends and family. “They showed it to everyone on the big screen and then we made our entrance,” said Kimberley. “We dogsledded out of the movie and walked into Eagle Ranch.” And in the spirit of continuity, she walked in wearing her wedding dress, which she had worn dog sledding with mukluks and a big red jacket just days before. “It’s a great excuse to wear your dress twice,” Kimberley noted with a wide smile. “I just loved how we split it up and gave ourselves the time and space to enjoy our moment and then we shared that moment with everyone else.” Professional connections forged from years of living and working in the Columbia Valley added to the special flavour of their reception. “It was so humbling and sweet to be so supported and loved by all our friends and family — and spoiled by our vendors — that night,” said Kimberley. “It was just so wonderful to see all of it come together like it did.”

A classic Invermere coupling Edmonton couple Jessi Heidt and Josh DeSerres knew as soon as they became engaged that they wanted their wedding in the Columbia Valley.

Jessi’s family has a second home here and the couple has been vacationing in Invermere since the beginning of their nine-year relationship. “It’s just a real special place for us,” Jessi said. They weren’t looking for a traditional wedding, but it was vital to get all their important people together and have a really good party. Regarding their choice of service providers, they did their research. It was important to Jessi to support local businesses and they used local vendors almost exclusively. A golf course as their venue was the last thing on their mind but as soon as they saw the facilities at Eagle Ranch, they knew where they wanted their wedding to be. Staying with the local theme, she thought it would be neat to have the Gerry’s Gelati truck waiting at the end of the ceremony to offer ice cream to the guests. “We’re just really into the classic Invermere setting and used to seeing the truck driving around,” Jessi said. The

couple was delighted to have the iconic ice cream truck a part of their celebration, which took place on August 15th. Regarding her choice of colours, Jessi said: “I find that the bride often stands out and the groom doesn’t. It was our day and I wanted us both to stand out.” The cobalt blue suit Josh wore was striking against the light grey of his groomsmen and the dusty pink of the bridesmaid’s dresses. “The setting is just so beautiful and with the entire wedding we just wanted to complement and not stand out too much.” But they also wanted contrast so used touches of bronze and gold. Floral arrangements were done by Canterbury Flowers in Invermere, who Jessi found very flexible and nice to work with. The couple is delighted with how their special day was captured in their wedding photographs. Jessi had seen Kimberley Rae Sanderson’s work and understood she was incredibly talented. It was Kim’s idea to use the Arrowhead Brewing Company’s wall mural as one of the backdrops, which Jessi said was, “really cool and I love that it’s an edgy picture, something different.” The bridal party was very “go-with-the-flow” and went wherever Kim wanted to take them. “It was a very relaxing day.”

Two trends in one Angela and Josh Miller decided to surprise roughly 30 guests who had gathered at Kinsmen Beach for a summer potluck on June 7th with their wedding ceremony.

When friend and professional event organizer, Theresa Wood, suddenly announced to guests that the soon-to-be Miller couple would be tying the knot, everyone was caught off guard. “Angela and Josh’s wedding was certainly a surprise to all of the guests,” Theresa said. “The surprise added a relaxed and fun atmosphere to the occasion. It was a lot to pull off, but everybody involved did such a great job.” The surprise wedding concept was suggested by Theresa to Angela, who was trying to find ways to alleviate the stress of planning a traditional ceremony to celebrate with close friends and family members. Angela broached the idea to Josh and soon the decision was made to host a potluck

and transform it into a wedding. “Nobody knew about the wedding so all I had to plan was the cake, and everybody brought their own food,” said Angela. “It was a great way to have a stressfree, fun wedding with my family and let our hair down.” The Millers were amused to discover that some of their guests had barely arrived before the happy couple broke the news to everybody. The disoriented guests were directed to the garden space outside the Pynelogs Cultural Centre where a marriage commissioner was waiting to oversee the exchange of vows. Their children — Connor, Callie, Courtenay and Emma — got to be in on the surprise, which made the spontaneous family affair even more memorable. “If it wasn’t for the kids, we would have eloped in Vegas,” laughed Angela, “but we wanted them to be part of it because that’s much more special.” Instead of obsessing over what to do after the ceremony, Angela and Josh jumped into the lake in their wedding clothes, along with their kids, to create a unique photo opportunity. The chance to gleefully destroy the conventions of bridal femininity held a lot of allure for the bride, who happily participated in the post-wedding ritual. “I trashed my dress,” Angela said with a smile. “It was hot out and we thought that it would make for some really good pictures, and we wanted some really fun photos from the big day.”

Withstanding the test of time Suzanne and Brent Olson of Airdrie, Alberta were married at Eagle Ranch Resort on April 25th, a location that was “pretty much perfect,” said Suzanne.

“When you get married in April, the weather is better in the valley than in Calgary.” They had family travelling from Canada and the United States, so to have their wedding in Invermere was also central for their guests. The couple wanted a traditional wedding: “something old, something new, something borrowed, something blue.” The “old” item was Suzanne’s grandmother’s watch — originally belonging to her Swedish great-great grandmother. “Grandma is no longer with us and that was my way of having her with me,” Suzanne said. The watch also symbolized something shared by the couple— when Brent went to pick out an engagement ring, he changed his mind at the last minute. Knowing Suzanne was particular, he decided she should pick out her own ring and opted to buy her an engagement watch instead. “He wanted something I’d be able to wear all the time,” Suzanne explained. “He’s very

thoughtful that way.” Wanting a “timeless and classic dress — more of a vintage style” yet with a look her grandmother would have liked, something “a bit more modest,” Suzanne added a lace jacket. And the groomsmen wore striped socks to match Suzanne’s blue suede shoes, which she chose “just because they were my ‘something blue’ and so awesome!” The couple’s special day was very much a family affair. Brent’s two brothers were his groomsmen and Suzanne’s sisters were her bridesmaids. “I never even considered having anyone other than my sisters as my bridesmaids,” she said. The flower girl and ring bearer were an older niece and cousin, joined by three little nieces who walked down the aisle together. “They thought they were part of the wedding, but they weren’t really. They were little princesses who got to go to the royal ball,” Suzanne laughed. When asked about one special moment from their wedding day, Suzanne said, “We were both very traditional, and didn’t see each other before the ceremony. I wanted to tell my nieces how cute they were, but when I saw Brent, it all went out of my head and I thought, ‘I can’t wait to hold his hand and tell him I love him.’ He took my hand, helped me up the stairs and whispered in my ear.”

The art of capturing the moment Couples can ensure the best results in wedding photography will be captured with help from the Columbia Valley’s entrusted professionals.

Here are some recommendations to mark the big day with snapshots from a unique point of view and guarantee the best bang for a couple’s buck. “Every couple is different,” said Kimberley Rae Sanderson, owner of Kimberley Rae Photography. “For me, it’s about trying to capture the little moments as well as the big ones. Some of the moments slip by so quickly that people don’t even remember them.” But the way a groom’s hand feels on the small of his bride’s back is a memorable sensation that doesn’t get lost for the couple. “Little things like the way he’s got his hand on her back, maybe it’s an interesting shot with his ring underneath her veil on the back of her dress,” said Kimberley, noting these are critical moments for wedding photographers to capture. “She remembers the way his hand felt on her back that day, but nobody else catches those moments and I think it’s the little moments that slip by that are the most important ones to capture, and then there are some big ones. Mom doing up the back of the dress — that to me, is a big moment for every mother, putting her baby into the dress.” While there are some longstanding traditions in wedding photography, the trends of engagement photos, wedding themes and bridal portraits are also becoming part of every millennial couple’s vision of tying the knot in style. Kyla Brown of Kyla Brown Photography has focused on combining

candid and posed images to shoot the milestone event from every imaginable perspective. “Over the years, I have developed a personal style that includes a balance between capturing candid moments and setting up shots where something natural can unfold,” Kyla said. “I like capturing candids throughout the day, as most people really enjoy seeing those natural, genuine moments. This is complemented by the portraits that I do of the bride and groom. This is a really fun part of the day where I do a lot more directing and setting up scenarios where natural connections unfold.” And there’s one tried and true method that both photographers agree upon: it’s essential to have a good relationship with the couple, which also helps secure some of the strongest shots of the celebration. “In finding a photographer you can trust, it’s easy to work together to create stunning images that not only reflect who you are, but also showcase the day, the celebration and everything in between,” Kyla said. “When my clients trust me, I can do Vanessa Jeakins Photography my best work because they know that what I am suggesting or where I am placing them is perfect.” “I totally let their personalities dictate,” explained Kimberley, noting the relationship a couple shares with their photographer has changed, becoming more central to the process. “Some couples are spending more time with their wedding photographer than they do with their own families on the big day. I’m the one who is helping the bride go to the washroom, I’m the one who is there with a Tide To Go stain remover stick when wine gets spilled on the dress… we’re there right beside them.”

music 

By Kevin Nimmock

Setting the tone for your synergy At some point in the planning process for every wedding, a couple must decide what sort of music service they want as the soundtrack for their special day.

Though live bands can set a dance floor on fire with ripping guitar solos and powerful voices, there is a lot to be said for the versatility and customizability that DJs offer. “When you have a band, maybe they can’t play top 40 music and they only know classic rock,” said Bill Yorke, general manager of Wild Bill’s DJ Services. “When I DJ a wedding dance, I start with classic rock, go to top 40, then I do some country and I might finish with some dance music to keep people going.” Though he has a particularly popular set of tunes he typically uses to keep dancers excited, Bill said the magic of a DJ is all in taking suggestions and personally catering each experience to the happy couple. “I usually have a meeting a few months before the wedding with the bride and groom to get to know their likes and dislikes in terms of music,” Bill said. “I love people giving me requests during the dance because they keep the dance floor full. I play what the clients want.” Will Comrie, owner of Wil C Productions, has two main methods to make sure his clients get to rock out to the best possible songs during their dance. “First, I like to send out a rudimentary music template,” Will said. “Usually couples book about a year in advance, so I encourage them to print it off, stick it on the fridge and, every time they hear a song they like, they can write it down on the sheet. Before they know it, they have a song list for their wedding.” His second technique involves figuring out what guests want to listen to before the big day. “I encourage couples to add a question to the RSVPs they send out asking each guest for their favourite party song,” said Will. “That way, they feel like they are part of the wedding, too.” Though music is their main course, DJs also offer a variety of other services to take a dance to the next level. According to Bill, photo booths are the hottest trend in weddings right now. Beyond booths, he can provide many quirky features to make the day memorable. “We can offer just about anything, from ice sculptures to GOBOs, which are initialled lights that go in the centre of the dance floor,” he said. Basic DJ services typically include speakers, lights, projectors and screens. Will said DJs can often go above and beyond to accommodate special requests with their equipment.

“In the past, we have done production for newlyweds, like if their uncle is in a band and he wants to play something on a guitar,” he said. Like for most wedding services, Will said it is important couples do their research about different DJs and make their expectations clear. “Ask your DJ what kind of equipment they use,” he said. “Don’t be shy about that. You need to make sure you are getting everything you need so that the dance portion of your wedding can be stress-free and fun.” To learn about Wild Bill’s DJ Services, contact 250-409-4448. desserts 

Frida Viklund Photography

By Lizzie Midyette

Tips that take the cake Wedding cakes have come a long way since their introduction in Roman times, when a wheat or barley cake would be broken over the bride’s head ceremoniously for good luck.

While it’s customary now to not throw the cake at the bride, as in a medieval wedding ceremony, a sweet dessert to enjoy is the perfect finish to a meal to remember. Trending for 2016 is an array of handmade desserts, such as pies in selected flavours, lovingly created by the bride in advance for guests to enjoy. While the personalized touch is universally appreciated and enjoyed by all, this approach is labour-intensive, and the Columbia Valley has numerous bakers and caterers who can create a variety of cakes, cupcakes and other desserts to suit your palate and blend in with the mood of the occasion. Consider the following when planning a cake or other sweet treat for your wedding meal festivities: • Colour. Go bold and make a statement with bright colours in icing and cake decorations to really showcase your individuality. While white is

• •

• • •

a classic colour for a wedding, it can have a greater impact with a splash of colour reflecting the wedding couple’s personalities. Flavour. Provide a variety of cake flavours so guests can enjoy their favourites. Explore with fruity or chocolate fillings to add unexpected flair. Variety. Consider delivering dessert platters to each table — such as dark chocolate truffles, mini vanilla cupcakes, cheesecake squares adorned with assorted fresh fruit, maybe the bride and groom’s favourite dessert — in bite-sized servings for guests to enjoy at their leisure throughout the evening. Theme. Trending is having a cake personalized to the setting of the wedding to reflect the beauty of our surroundings. Consider a beautiful birch effect, for example! Character. Having a cake that reflects the personalities or interests of the wedding couple brings a sense of individuality and infuses the event with a healthy and impromptu dose of humour. Timing. Consider cutting and serving a cake or dessert platter into the evening rather than at the conclusion of the meal so that it’s an event in itself to be enjoyed by all.
