Honey Cinnamon Roasted Pumpkin Seeds INGREDIENTS • • • • • •
2 cups raw fresh pumpkin seeds, washed 1 tablespoons butter 1 tablespoons olive oil or coconut oil 3 tablespoons honey 1 teaspoon cinnamon
INSTRUCTIONS 1. Preheat the oven to 350 degrees. Place dry pumpkin seeds in a medium bowl and set aside. 2. In a small microwave safe bowl, add the butter, oil or coconut oil, and honey. Microwave until the butter melts. Pour the honey mixture over the pumpkin seeds and stir. Add the cinnamon and stir again. 3. Line a baking sheet with parchment paper. Pour the pumpkin seeds on the paper and place in the oven. Bake for 30 to 40 minutes until the seeds and honey are a deep golden brown, stirring every 10 minutes. 4. When the seeds are roasted, remove from the oven and stir again. Stir a few times as they cool to keep them from sticking in one big lump. Store uncovered for up to one week.

If you’re reading this, you may be like so many other parents who are struggling with the anxiety of facing the fact that their teenager is now “ready” to drive. I find that there are seemingly two levels of enthusiasm when it comes to would be teen drivers. Those who drag their parents in to sign up for lessons, and those who are being dragged in by their parents who are tired of playing chauffeur. Regardless of how we cross paths, the question always come up about why drivers ed isn’t being taught in school? What is the process? When can my teen start a driving course? This list goes on and on. While there is a ton of information available on TDLR and DPS websites, I find that the same questions seem to come up time and time again. The purpose of this article is to share with parents a simple time line to driving that may help ease some of the anxiety about the process. This timeline is merely a suggestion, parents should use their best judgment when it comes to their student driver. 12 -13 year old – Begin to ask your child simple driving questions on the way home from your daily commute, or whenever you take a drive. (ex: Why are there yellow lines on this road? What’s the name of the street your school is on?) This gets them observing the road early, which can ultimately pay off. 14 year old – At 14 year’s old it’s time for parents to start considering a driver education course. A parent taught course requires the parents to work hands on with their teen to provide the class room coursework. A driver education school provides the same instruction only the teen sits in class with a licensed instructor to learn the material. I highly recommend teens download the Texas Drivers Handbook from the DPS website and begin answering the questions in the back of the book. This prepares them for the permit test. 15 year old – The student may legally obtain a learner’s license at this point. Parents should begin gathering the documentation needed for the permit whether the student has started driver education or not. Verification of Enrollment from school can be tricky during the summer months, so it’s important not to wait until the tail end of the semester to get it. The Proof of Residency is another document that some parents struggled with. There are two forms required and Cell phone bills are not accepted. 16 year old – After maintaining a learner’s license for six months the student can now apply for a driver’s license at 16. The student is required to complete a 30-hour driving log in addition to completing the entire parent taught course. The key is if your student is in the parent taught course be sure that they are doing the modules daily. Once licensed, remember to remind your student about the Graduated Licensing rules which has several notable restrictions including a curfew from 12:00-5:00 a.m. With a plan in place, parents can enjoy the journey with your new chauffer . . . ahem . . . Bright Season Forecast For Texas Deer Hunters Hunting in Texas always seems to fall into two categories – great and not so great. But if you are already cleaning out your deer stand and stocking up corn for the feeder, then you should know that this year is on average to be a good year for deer hunters.

Of course, as with each year, it depends on which part of Texas you are hunting in. In South Texas and the Hill Country, you have pockets of green and parts that are dry and parched. Same in East Texas where the southern part is greener and the northern sections are dryer this year. Old ranchers will tell you that dryer weather brings larger racks, but that isn't a scientific answer. Beautifying Our Neighborhoods With Quality Craftsmanship At An Affordable Price Dunn Fence is a family owned and operated business based out of Tomball, Texas. The owners, Patrick and Erik Dunn are a father and son duo that started the company nearly a decade ago. Since then, they have taken the fencing industry by storm, competing with the largest and longest standing fence companies in the greater Houston area. Dunn Fence considers it’s quality, integrity and customer service the center of their success. Patrick and his wife Jeannine, have been married for 30 years and are native Houstonians. Patrick served as a Klein Volunteer firefighter for five years. Of those five years, two of which he also served as the Treasurer. Jeannine taught Preschool in Catholic schools for 15 years. They have two children, Erik and Lauren. Lauren is a graduate of Sam Houston State University and is currently working as a teacher in Tomball. Erik and his wife Emilie are high school sweethearts and have been married for five years. They graduated from Sam Houston State University with a degree in General Business, and minors in Entrepreneurship and Marketing. They have four beautiful children. The Fight Between Two Wolves Tips from Master Josh Arcemont One of the first stories my instructor ever told me was about the fight between two wolves. It goes like this. “There is a terrible fight and it is between two wolves. One is evil – he is anger, envy, sorrow, regret, greed, arrogance, self-pity, guilt, resentment, inferiority, lies, false pride, superiority and ego.” “The other is good – he is joy, peace, love, hope, serenity, humility, kindness, benevolence, empathy, generosity, truth, compassion and faith. The same fight is going on inside you – and inside every other person, too.” You may ask: “Which wolf will win?” The answer is: “The one you feed.” The first part of the story is telling us that we can never get rid of the first wolf, the first wolf will always be there. The fight between two wolves is eternal. We sometimes fall into the trap of trying hard to banish the negative side of ourselves. You may force yourself to eat 100% healthy all the time, beat yourself up for relaxing even for just a minute, and try to get rid of those negative thoughts in your head. The truth is that none of us are living perfectly. What we can do is to act in spite of those negative feelings or hard times. We can take those fears, those worries, those doubts and move forward anyway. That’s how you feed the second wolf.
