In January 2014, we will be opening a state of the art facility with temperature controlled rooms that are designed to mimic European ripening cave conditions. It is here where all imported soft ripened and washed rind cheeses will be received. These products will then be sent to the shops at your local Wegmans. From there the Cheese Shop team will wash and age the cheeses in the store, for your eating pleasure.
