On a sparkling mid-May afternoon, Ewing High baseball coach Dave Angebranndt was preparing for practice and needed two players to put the batting practice mat at home plate. One that was quick to volunteer was junior Dominic Yarson, who was the Blue Devils’ leading hitter and pitcher through their 4-9 start. According to Angebranndt, that little moment said as much about Yarson as any of his statistics. “As a junior he doesn’t have to go do that but, he’s that lead-by-example type kid,” the coach said. “The kids look up to him, he’s supportive, he’s energetic, he’s positive, he always wants to get kids better and he’s a great kid to have on the team.” He’s also darn good. As of May 19, Yarson led the Blue Devils in hits (14), average (.387) and RBIs (7), and also had four doubles and nine runs scored. On the mound he had two wins and led in innings pitched (29.1) and strikeouts (16) with an ERA of 3.82. But Yarson doesn’t pay much attention to those numbers. “It’s a team sport, you can’t really look too hard at it individually,” he said. “One person doesn’t make a team. After more than a year of virtual learning due to COVID-19, Ewing High School seniors will finally get to experience a normal rite-of-passage. Commencement exercises for the EHS Class of 2021 are set to take place on Tuesday, June 22, at the Cure Insurance Arena in Trenton at 7 p.m.

The district plans to continue to monitor public health guidelines for changes, and is currently planning to allocate five tickets each for guests to attend the ceremony. Guests should wear masks and all attendees will be required to complete a COVID-19 screening prior to admission, and adhere to social distancing protocols while in the arena.

The district is also hoping to livestream the graduation to people who are unable to attend the ceremony. Meanwhile, the Observer is running its annual feature spotlighting the top 10 academic seniors. Ewing Township is implementing new procedures for leaf and brush collection starting next month. Under an ordinance amendment approved earlier this year by council and Mayor Bert Steinmann, collections will no longer be scheduled periodically and instead will take place year round. Under the new regulations, residents will be prohibited from raking leaves or debris into the street for pickup, as had been allowed in the past. “We always had an ordinance, but we needed to tweak it a little bit,” Steinmann said. Under the old procedures, “you could put any type of branches out on the street, whether they were 4-feet, 6-feet, 10-feet or 20 feet-long. One guy even put a whole tree out there. You can’t do that anymore.” Now brush must be cut into lengths of no more than 4 feet and placed at the curb. It can be loose or placed in a container. Large batches of brush can be bound together using rope, twine or other similar recyclable materials. See COLLECTION, Page 5

COLLECTION cont. from Page 1 Trees, tree trunks and branches larger than 6 feet in diameter are not allowed and must be broken down further. “A tree trunk doesn’t work,” the mayor said. “If that’s the case, then you either you or your contractor need to make arrangements to have that removed.” Leaves and grass, meanwhile, must be put in a container or in a biodegradable bag (a paper bag for example) at the curb. Plastic bags are not allowed. A change in environmental regulations at the state level restricting the placement of loose leaves in the street necessitated the change. Steinmann said another reason was issues caused by allowing debris to be raked into the streets. “We were having a lot of issues with our storm drains,” he said. “Basically, they were getting filled—the stuff was getting stuck in them, and public works would have to go out and clean out the basins. “After a while some of the leaves and everything else washed down the pipe and then completely stopped them up, and it wound up creating flooding.” He said that in one case, the town even had to rip out the storm drain and pipe and replace them. “It was blocked so solid that nothing could get through,” Steinmann said. “It was a lot of expense, so we needed to stop that. I mean, storm drains will

still get clogged with other stuff, but it’s not going to happen as often.” Once the new rules go into effect next month, there will be grace period before full enforcement begins. The mayor said the township has embarked on an information campaign to attempt to let as many residents as possible know about the new rules. This includes a full page ad in this issue of the Ewing Observer (see Page 3.) “We want to try to make sure that everybody clearly understands,” he said. For a first-time violation, the township will issue a warning. After that, people found to be in noncompliance will be notified and required to dispose of the debris properly. One advantage of the new rules is that people will be able to put out yard debris whenever they need to, rather than having to adhere to a schedule, as has been the case in the past. “They can leave it out anytime,” the mayor said. “Whether it’s grass clippings, or leaves, or garden growth or any of that stuff. Just containerize it and put it on the street.” Residents who don’t want to leave yard debris at the curb can still dispose of it at the township’s brush dropoff site on Jack Stephan Way. I felt like I wasn’t getting the normal “senior feeling” that most people get to experience. But as the end of the year is quickly approaching and all of our important activities are coming up, I am ecstatic that we are able to have modified versions of our normal ceremonies. Favorite high school memory: Winning first place at the CVC Cheer Competition. Cheer was full of many hardships, so winning the trophy was the moment when I felt that all of the blood, sweat, and tears had finally paid off! Being able to celebrate with my coaches and teammates was one of the best feelings, and something I will never forget!

I’m definitely a little bummed to have missed out on having a “senior year” and getting to experience prom/etc. Though being entirely virtual has been much more relaxing and not as stressful as being in person typically is. Favorite high school memory: My Senior Night for field hockey. It was such a fun night and great way to have wrapped up my season. In the mists of the whole pandemic, it was nice to have had a sense of normalcy with a traditional/annual Senior Night.

I would have liked to have had a normal senior year, but I wouldn’t have had certain memories this year if it wasn’t for the virtual learning experience. Favorite high school memory: Soccer games under the lights. I really came to appreciate every minute of them this year, when it wasn’t a guarantee we would be allowed to have them.

Nearly sixty years since Allied forces liberated the Nazi concentration camps, the now elderly survivors of the Holocaust are turning to a new generation to preserve their testimony about their wartime experiences for future generations. Holocaust survivors are steadily dwindling in number. Many have made it their mission to educate the world that anti-Semitism and racism easily lead to murder, and to speak about the horrors they and their families suffered. With the passing of time, it has become urgent to find a new generation to continue TJ Quigley the survivors’ mission and tell their stories after the survivors can no longer do so. The Ewing Public Schools EHS Student-Athletes Make College Commitments It was a scholastic sports year unlike any other, with the COVID-19 pandemic upending high school athletics for over a year, but many Ewing High School student-athletes had the opportunity to put on the blue and white and represent the Blue Devils. Once again this year, a number of EHS student-athletes from the Class of 2021 have declared their plans to continue their athletic career at the collegiate level and announced their college commitments.

Baseball Sweet-swinging outfielder Tucker Elder will become an Osprey and join the Stockton University Baseball program.

Swimming County finalist Emily Czelusniak will follow in her sister Olivia’s footsteps and look to make a splash in the pool for the Skidmore College T-breds.

Track and Field With a Winter Track Sectional Championship earned during their time at EHS, two talented distance runners from the Blue Devils Track and Field program will continue their efforts on the track at the next level. Lucas Vasquez will run for the Connecticut College Camels and Dylan Navarro will join the Lions of Georgian Court.

Girls Basketball After being a major contributor to an undefeated season for Ewing High School Girls Basketball, strong inside presence Geneece Boone will take the court for the Kean University Cougars.

Football Coming off a high-scoring and always-entertaining season, two members of the EHS Football team will continue their exploits on the college gridiron. Rugged lineman, TJ Quigley, who paved the way for a prolific running game, will join the Montclair State University Red Hawks. Defensive End/Linebacker Aaron Forde, who was named AllArea and Defensive Player of the Year by the Times of Trenton, will join the Wagner University Seahawks.

FMS Celebrates Culture & Diversity Week Fisher Middle School students celebrated the rich diversity and culture of Ewing the week of April 19th with Culture and Diversity Week. Throughout the week, students were exposed to information about different cultural celebrations around the world, words and phrases in other languages, and facts about the many cultures around Ewing and Mercer County. Student Council members put together a Virtual Cookbook, which featured recipes from Mr. Milecki, Mrs. Suseendran, Mrs. Canavan, Mr. Soto, the Abtouche family, the Lima-Flores family, and the Owusu-Mensah family. The Student Council also provided teachers with a full week's worth of "Do Nows" which quizzed students on celebrations such as Ramadan, the Japanese Cherry Blossom Festival, Carnival, and more. A few students also contributed language instruction videos for the whole school to enjoy: Sofia Latushka and her friend Lada - who tuned in virtually all the way from St. Petersburg - led a video in Russian; Amine Abtouche provided a video in Arabic; and Stephania Camblard taught a variety of phrases in Haitian Creole.

Boys Soccer Two senior leaders of the vastly improved Ewing Boys Soccer program will take the pitch at the collegiate level. Cadel Bolden will play for the Aggies of Delaware Valley State and Jordy Santiago-Caraballo will join the Centenary University Cyclones.

Softball Kayla Rivera will join the Gyrenes Women’s Softball team at Ave Maria University in beautiful southwest Florida. The Ewing Public Schools Senior Spotlight: Meet Kayla Hawkins The school year is winding down, do you have any ‘words of wisdom’ to share with your classmates as we are still navigating the COVID-19 health crisis? I think the best thing to do is look towards the future. Things are still messy and we may be unsure right now, but things will eventually turn out and we need to remember that. What do you want people to know about Ewing High School that they might not know? There are so many different kinds of people at Ewing, and they all have their own unique talents. There are so many cultures in Ewing that you can learn about through the students. In which activities do you participate in school? I am on the Girl’s Tennis Team and a member of the Key Club. I also participate in the Pit Orchestra during the school musicals. What activities do you participate outside of school? Outside of school, I participate in numerous volunteer activities with my church. What accomplishments are you most proud of? One of my biggest accomplishments is when I completed Mission Serve. It was so cool to be able to help so many people, and I was really proud of myself and my group for all that we did.

What is your favorite memory of high school to date? One of my favorite memories is when I won my first tennis match in freshman year. I was so proud of myself and my partner, and all the practice we did to make it happen. Who is your favorite teacher and/or coach and why? My favorite coach is Coach Mosty (Christina Mosteller). When I joined the tennis team my freshman year, I did not know anything about tennis. She was an incredible teacher, and she helped me to improve very quickly into my first tennis season. She truly cared for everyone on the team and was always so kind and sweet. Who or what has impacted your life in a positive way? My parents have always been my number one supporters of anything I put my mind to. They have always inspired me to do my absolute best, and I am so grateful for them. How do you define success? My definition of success is when I’m proud of what I have accomplished. What are your plans after you graduate from Ewing High School? I plan to go to Mercer Community College and study Music, then transfer to another college to finish out my degree. Afterward, I would like to pursue a career in Music Therapy. What is your favorite quote or book? "Try not to become a person of success, but rather try to become a person of value." - Albert Einstein Now the important question, during this time of social-distancing what have you been doing in your free time? One of the main things I took up during quarantine was learning Japanese. I had so much time on my hands, and I’ve always wanted to learn multiple languages. I am also starting to learn how to play the piano.

Antheil Interdisciplinary Roller Coaster Design Challenge Antheil Elementary School fourth and fifth grade students in Ms. Joy’s Library class read “Engineering Marvels: Kingda Ka Roller Coaster” and discussed why it is important for engineers to understand how roller coasters work. In Ms. Papadopoulos' and Ms. Springsteens’ Technology Class, students reviewed physics terms (gravity, friction, kinetic & potential energy), for how their model roller coaster works. Students recorded a FlipGrid showcasing their roller coaster designs and explained what they liked about the STEM challenge and what they would do to improve their designs.

Parkway: A year in review... PANTHER-demic Style! This year has been hard, challenging and filled with unexpected changes. Regardless, at Parkway School, we still have been able to come together, as a community of learners and civic-minded citizens, to regularly show our Panther Pride. This year we endeavored to continue our Parkway traditions in spite of pandemic dictated boundaries. We put our creative minds to work and remodeled both the Ice Cream Social and the Pancake Breakfast to be “drive through” and were able to successfully facilitate both events. Our annual Pajama Reading Night became Pajama Reading Day and everyone loves any reason to wear pajamas to school. With help from the PTA, we were able to fundraise for the Thanksgiving baskets for the Parkway community and for toiletry items to donate to the Trenton Area Soup Kitchen (TASK). Our Title 1 program offerings were just as numerous as in years past with virtual Parent/Child Book clubs, Social Skills groups, Skill Building groups, Every Panther-One Book, Family BINGO night, STEM clubs, Performance Choir and Instrumental/Percussion Group. A fifth grade assembly during Black History Month, Junior Achievement in a Day for fourth and fifth grade students and many social and emotional learning webinars sponsored by PEI kids were all able to be conducted virtually. Let us not forget our end of year celebrations for Kindergarten and 5th grade students that will look a bit different this year but will involve both virtual and in-person students. As this school year comes to an end we want to express our gratitude to all of the parents, teachers, other district staff members and outside resource people for giving us a helping “paw” anytime we asked. You are all PANTHER-rific in our book!

The New Jersey Thespian All State Show qualified for Nationals! Ewing High School students Nia Whaley and Fatoumata N'Diaye were both part of this experience. This is the first time that a New Jersey show has ever been selected as a Main Stage at Nationals! The International Thespian Festival will take place virtually June 22nd–25th, 2021.

What a year! As we close an incredibly unique and challenging educational year, the Ewing Public Education Foundation (EPEF) wishes to share all the wonderful things that occurred during this time. EPEF continues to celebrate our Ewing teachers, educators, administrators, support staff and the parents. We wish to thank our special partners that always stood by us. EPEF is so proud of all they have done to support the families and children attending Ewing Public Schools. None of this would have come to fruition without the variety of support from everyone previously mentioned. EPEF had to adjust also. We developed altered plans that enabled delivery of programs and services approved for the 202021 school year. EPEF worked closely with our teachers and administrators in exceptional ways to adjust and extend grants for implementation. We maintained constant communications with our close partners who have supported us greatly and that of the Ewing Schools community. Yes, it was indeed a challenging year. But we did it. We all did it! EPEF believes it is especially important that our community knows that through all the challenges, we NEVER lost focus on our determination to help cultivate a wonderful educational year for the children, as we maintain adherence to our mission: “To champion education in our Ewing Schools by providing grants to teachers and scholarships to graduating seniors. amenities. They finished the village square area and put lawn furniture and some other things in it. It’s more a community park than just being a park for the development. So the whole community can go there. I know that they’re planning on holding events on that green. I’m very enthused about it, and very excited as to where it’s going. EO: What about the nonresidential components? BS: They were going to wait on the commercial space, but now they are actively building that commercial space. So you’re going to see buildings on Parkway Avenue starting. The people that I talked with from Atlantic are very excited. They are thrilled with the cooperation that the town has with them. So far, It’s been very. very positive. EO: In addition to the residential is the commercial/retail portion of the property, which is essentially what makes it a town center. Can you talk a little more about what they’re doing with that? BS: They moved some phases around. They’re actually starting on the live-work space (units with retail on the ground floor and housing for the business owner above it). That would be the next product that comes online, and after that would be commercial, but with apartments above. That was going to be built more towards the end of the project, but now they moved it more towards the front of the project. I can’t be 100% sure of the timing, but if the market stays as strong as the market is now, they are way ahead of schedule of finishing that whole project. I think they were originally looking at a 10- or 15-year build out. I think

They don’t call us the Garden State for nothing. Groups all across the region are planning outdoor garden tours to mark the transition from spring to summer. Here’s your guide to flowers, flora and greenery, throughout Burlington and Mercer counties.

Roebling

The Roebling Museum’s annual Garden Tour is back. The town, famous for building some of the country’s most iconic bridges, will celebrate warm weather and bright blooms June 5 from 10 a.m. to 3 p.m. “When the Roebling steel plant was open and homes in the company town were owned by the company, many of the workers and their families grew gardens with flowers as well as food,” says Lynne Calamia, Roebling Museum executive director. The Roebling Company itself often sponsored competitions to encourage

residents to tend their gardens and keep their properties looking put-together. “Continuing this tradition with our Garden Tour builds pride in our community and gives residents a chance to show off their green thumbs,” Calamia said. The Roebling Museum tells the story of the origins and growth of Roebling, a company town built in 1905 by the Roebling Company. The village of Roebling, including 700 homes, is a historic district listed on the National Register of Historic Places, and every one of its buildings has a story to tell. Exhibits, tours, and programs document the majority immigrant workforce that built the iconic suspension bridges of the American industrial age. The tour will start at the Roebling Museum, located at 100 Second Ave. After checking in, participants will receive a map of locations included on the route, plus some added historic highlights. The tour is appropriate for walking, driving or biking, and a guided tour is also set for 1 p.m. Tickets cost $15. Proceeds support the museum. Trenton The Old Mill Hill Society, in collaboration with residents of the historic neighborhood, will host its 30th annual Garden Tour June 12 from noon to 5 p.m., rain or shine. The neighborhood, composed primarily of 19th century row houses, will welcome guests in-person to the self-guided walking tour through 15 gardens— attendees will see the intersection of nature and city living, coupled with residents’ personal style. Settled in 1679, Mill Hill is one of the oldest neighborhoods in Trenton

and the site of both battles of Trenton in 1776, where George Washington defeated the British Army and turned the tides of the Revolutionary War. Annual re-enactments take place in Mill Hill Park. Bordentown

The Bordentown Historical Society will host its annual History in Bloom Garden Tour June 26 from noon to 5 p.m. Guests will take themselves on self-guided tours of Bordentown City’s gardens, parks and historical sites. The society says this year will be its biggest ever—20 gardens will be open to visitors. In addition to the tour, plein air artists will be painting landscapes at some of the locations. A landscape architect— with expertise in trees and plants native to New Jersey—will also be stationed at the 4 E. Chestnut St. garden from 2 p.m. to 4 p.m. to answer gardening questions. A children’s art event will be held all day at Hilltop Park, and refreshments will be available at a number of locations. CDC guidelines regarding masks and social

distancing will be followed. Tickets are $20 for nonmembers, $18 for members and $10 for children 8 to 16 and can be purchased online at bordentownhistory.org. Tickets will also be available at the Bordentown City Green Fair, Bordentown City Farmers Market, Shoppe 202 and on the day of the tour starting at 10 a.m. at the Friends Meetinghouse, 302 Farnsworth Ave. Shuttle service will be available from the Carslake Community Center parking lot and at a number of stops throughout the city.

Hopewell

The Hopewell Public Library will host its Hidden Gardens of Hopewell tour June 26 from 10 a.m. to 3 p.m., rain or shine. Tour highlights include an 11-acre farm, a one-acre garden made up exclusively of native plants and residential gardens—guests will be able to visit five gardens and three rain gardens in all. The tour is self-guided and can begin at any of the following locations: Kraaihof at 105 West Prospect St., featuring exotic trees, a moss garden, perennials, bulbs and native plants; 115 West Broad St., where perennials, veggies and fruits crop up; 1 Eaton Ct., which draws influence from the English gardens of Hidcote and Sissinghurst, where “outdoor rooms” are prominent; Flutter By Meadows on 9 Ringoes Mill Dr., Skinny Trees Farm at 41 Aunt Molly Rd.; and the three rain gardens at 65, 84 and 86 E. The next generation of filmmaking Toby Ilogu talks creating in 2021 By Sam Sciarrotta

Toby Ilogu is always up to something. The 19-year-old Montgomery resident loves to dive headfirst into a project, whether it’s studying cryptocurrency or making short films. Now, he’s channeling his energy into TikTok, where he’s amassed over 100,000 followers, starting with first-person videos and evolving into the Everyday Show series, where he dons a suit, sets up camp in Princeton and conducts man-on-the-street-style interviews with anybody who wants to participate. Ilogu, a graduate of the Lawrenceville School and now a film student at USC, asks whimsical questions like “Are you stupid?” and “Name that Black celebrity.” The videos usually take their own form from there. “I’m very much into that raw, semiawkward humor,” he said. We sat down with Ilogu and talked quarantine creativity, Gen Z filmmaking and more. An edited version of the interview follows. *** Six09: What was it like to start your first year of college in the middle of all of this? Ilogu: I was able to do my fall semester. Film school was my dream. Early on in high school, I knew that I wanted to pursue video or film school in some capacity. USC was, like, the college on the hill. It was my dream school. When I got in, it was a dream come true. I was living the dream for a few months until COVID came around and really just shook everything up. My dream school turned into a nightmare. I did this fall semester online, and right before the spring semester, I thought, “I can’t do this. I hate this experience.” It was supposed to be the best thing in the world. I talked to my parents and very heavily petitioned to take the spring semester off. That’s what I ended up doing. Six09: Are you going back in the fall? Ilogu: That’s the plan. Mid-August, actually. Six09: You said that you’ve been interested in filmmaking forever. What sparked that interest for you? Were there any filmmakers that you admired as a kid? What made you dive into that? Ilogu: A lot of people might say, “I grew up watching these films. My parents put me onto Scorsese and Speilberg.” Quite honestly, that wasn’t me. I grew up on YouTube. I was on YouTube

earlier than I should’ve been. When I was growing up, my parents told my two older siblings and I, “No watching TV during the week.” Most of elementary school, I was reading a lot. I was always checking stuff out from the library. Then, we got a laptop, and that’s when I started perusing the internet. YouTube was there, and I was like, “Well, it’s not TV.” Six09: That’s the loophole. Ilogu: Exactly. I looked up to YouTube stars early on, more than any film director. Six09: I feel like that’s kind of the path that a lot of creators in your generation are following. Do you see that, too? Ilogu: Yeah. At film school, there are a lot of purists. People will say, “The YouTube stuff, that’s not real filmmaking. TikTok is a bastardized version of visual media.” But this is the stuff that I like. By all means, people can pursue what they want to pursue. I’ve heard that you go to a classroom of third graders, and half of them will say they want to be YouTubers when they grow up. Those are the people they’re engaging with. And it’s such a versatile medium. Anybody with just about any passion could make content around that passion. I think it’s just a matter of what people are being exposed to at a young age. Six09: Is that how you got into TikTok? Ilogu: From the start, I always took a very strategic approach to TikTok. I didn’t just stumble onto the app. I knew of TikTok when it was musical.ly. I would watch these YouTube compilations of cringey kids lipsyncing to songs. I was like, “I don’t think this stuff is for me.” But then I thought, “Wait a second, there’s so much potential.” The app can be anything that you make it. You can’t pigeonhole a whole platform just by the content that a handful of people are making. My first venture into TikTok was when I got to college, toward the end of 2019. I started with a joint account. The plan was that a few of us on the floor I was living on were going to make cinematic TikToks. Eventually, most of the group lost interest. That was it for some time. I kept the app for a little bit, then deleted it. It was on and off until quarantine, where I said, “Yeah, let me start making TikToks.” I feel like there’s a lot of potential to just grow an audience. I’m not exactly sure what it is I want to do in the future, but whatever it is, if it’s creative, it’s going to need an audience. Six09: Did it kind of help you pass the time during quarantine after starting at your dream school and

successful. What I find is that the most viral videos are always interacting with other people. There’s a certain element that you can’t get from a bedroom. I believe as a creator, you need to break the bedroom wall at some point, or else you’ll always be confined to those four walls. I know that the public interview is a viral format. It just works. I said to myself, “How can I do this in a way that is true to me?” I definitely got inspiration from Jimmy Kimmel’s Pedestrian Questions. And I knew that I wanted to carry the suit somehow. It was working before. I came up with the idea, and I just sort of did it. Six09: You seem so well-suited to that man-on-the-street kind of interview. Does that come naturally to you, or do you have to psych yourself up before you go outside and start asking people these questions? Ilogu: I do have experience with video journalism. Lawrenceville has a newscast, and from 2015 to 2019, that was my thing. That’s where I learned how to edit videos. Everything I know about videography, framing, the on-camera presence, everything I know came from that video news club. It really is one of the best high school news shows in the world. I’m not just saying that. What they’re doing is very special, and it gave me everything I needed to know to keep doing this creative stuff. I have experience on both sides of the camera. But there are awkward moments. I’m not a natural at all. And I put it into the video. If it’s awkward, it’s because I’m awkward in that moment. Sometimes I’m in character, kind of a game show host, and other times, Toby just sort of seeps out, and Toby doesn’t always say the right thing at the right time. Toby isn’t always the most conversational in the traditional sense. I think that just adds to the show. One of the Are You Stupid videos, the person said “Yes.” I said, “What’s the last dumb thing that you did?” “This interview.” I was like, “Wow, she really said that.” I had to walk it off a little bit. I was shook. Six09: Has it been easier to approach people now that people are getting vaccinated and things are starting to open up a little more? Ilogu: Oh, definitely. A lot of people are a lot more comfortable being approached and being around other people. Honestly, I think my show kind of celebrates that. It celebrates getting back to some type of normalcy, even if that’s just everyday interactions that you have on the street. I guess that’s building a little bit of a narrative around the name. I was thinking, like, Late Night, The Tonight Show. How about The Everyday Show? I wanted to post on TikTok just about every day, so I thought it could work. Beyond that, I’m approaching everyday people on the street. One way of growing on social media is a name drop. But the main draw isn’t toward the creator or the content. It’s likely toward that other person. I feel like that’s not very conducive to a long-term relationship, especially if you’re a new creator. With everyday people, I’m not chatting with celebrities. It’s not an aspirational thing I’m going for with my content. It’s more like conversations. Yeah, they’re awkward, but that’s like. Life is awkward. We gotta lean into that more.

Restaurants still getting winged by pandemic Occupancy limits are lifted, but rising costs and staffing issues are testing the entire food industry By Joe Emanski

New Jersey restaurateurs waited a long time for the day to come when they could once again fill their establishments to capacity. So when Gov. Phil Murphy made the announcement in early May relaxing capacity restrictions and seat customers at the bar, it was expected to be an occasion for celebration. But few restaurant owners have been in the mood to celebrate lately. It turns out that coming out of a pandemic isn’t any easier than heading into one. While 2020 felt like one long harrowing crisis, this year has brought on many new crises of its own. Like the dishwasher shortage. The foam container shortage. The lobster shortage. And, of course, the Great Chicken Wing Shortage of 2021. “We are having more problems now, honestly, than during COVID,” says

Giovanni “John” Balsamo, who coowns Villaggio Iccara in Yardville with his wife, Phyllis. “Yes, the drop in the amount of business was not good, but also we cut down on huge expenses so we survived, and we had a beautiful take out business. But now I’m having more trouble figuring it out. Between food cost and labor … it’s not sustainable.” Restaurants know that things will happen from time to time to disrupt the supply chain: a temporary milk shortage can cause cheese prices to rise, mudslides in California can send produce prices through the roof for a few weeks, until supply returns to normal. “You cope with that,” Balsamo says. “What we cannot cope with is when a case of wings goes from $68 to $139.” A specialty of the house at Iccara is an appetizer of chicken wings that are roasted in the restaurant’s wood-fired brick oven. But in May, Balsamo took the wings off the menu, rather than raise the price of the dish to reflect the rise in his cost. “People love our wings. so they say, ‘Why don’t you charge $3 more?’ Because I love my customers,” he says. “They’ve supported us for 30 years. I don’t want to do that to them.” Balsamo says scallops that recently cost

The Maine Public Broadcasting Network reported last month that Maine seafood shacks were charging as much $34 for a lobster roll. Balsamo said he probably will have to

increase the prices on many items on his menu by a dollar to a dollar-fifty, which would not cover the price increases, but which would at least help him close the gap. Customers may not always believe it, but restaurateurs are usually reluctant to increase their prices. “There is a line that you don’t want to cross. You don’t want people to think it’s too expensive to go out to eat, let’s find an alternative,” Balsamo says. “The less the price, the more business you do. But if it costs you $1,000 more every week to buy chicken, you’ve got to increase prices at least a dollar.” So why the rise in prices now? Weather is one reason. A huge winter storm swept the Southwestern United States and Mexico in February, leaving huge swaths of Texas without power for days. The poultry and livestock industries are still bouncing back from losses suffered as a result of the storm. A harsh winter has also been cited as a factor in the decreased supply of Maine lobsters. Bad weather has meant fewer boats on the water, and fewer lobsters in it. Kinks in the supply chain also continue to bedevil the industry on a number of fronts. The Department of Agriculture, in its April Labor, Poultry and Livestock


Outlook, cited labor issues (read: a lack of qualified workers) as a factor in the reduced supply of chicken. But the main reason prices are up and supply is strained is simply high demand. Prices actually jumped even higher at the start of the pandemic, when there were breakdowns up and down the supply chains — but that came at a time when demand was very low. Now, restaurants are gearing up for more customers, and some of them want to be fed like they haven’t had a good steak in a year. Those restaurants purged much of their cold-stored food during the lean months of the pandemic, meaning that many are now buying in large quantities to restock their freezers on top of serving fresh products today. Meanwhile, just too darn many people turned to chicken wings for comfort during the pandemic, and too many home cooks got comfortable using their air fryers over the past year. Retail demand remains high even as restaurants reopen, and producers will have to raise more animals to keep up. “As the restaurant sector begins to reopen, in the short term, supplying the growing demand for chicken will be a challenge,” wrote the Department of Agriculture in its May Outlook. *** There is also the question of where all the restaurant workers have gone. Now that restaurants are able to fill most of their seats again, most are anxiously on the lookout for cooks, servers, bartenders and dishwashers. And many are find-

Taste Trenton to return after 2020 hiatus

Taste Trenton is coming back full throttle after suspending its 2020 self-guided tour of restaurants due to the coronavirus pandemic. After suspending its 2020 selfguided tour of Trenton restaurants, Taste Trenton has announced that it will curate an appropriately sociallydistanced excursion to the capital city’s restaurants this summer during the weekend of June 11–13. The not-for-profit effort, initially begun in 2016, is designed to introduce Trenton residents and guests from across the region to the vast culinary and eating options available in many corners of the city. What began as a day-long event with just a dozen restaurant in the Chambersburg region, evolved to three days and 40 establishments across the city in June 2019. “We’d been on the fence about offering the tour this summer,” Taste Trenton coordinator Bernard McMullan said in a media release. “But we decided to give our local restaurants a boost by getting people across their thresholds as soon as possible. We applaud their efforts to stay open during the past 15 months.” The format remains the same as in past years. Participants or “food tourists” purchase wristbands ($7 per day; $10 for entire weekend) from Taste Trenton and receive a guide

that’s probably been reduced significantly. In fact, all of the new apartment complexes that have come online throughout the township are full. EO: Apparently there’s a huge demand especially for apartment housing, and maybe even more so because the inventory of for-sale units in the market is down. I would think that might create an even bigger demand for rental housing. BS: Especially for something like this. For example, this particular project has a big club house with a conference room in it. There are pool tables. There’s entertainment in there. There’s a swimming pool. It’s got a big park with amenities and playground equipment. There’s a basketball court—I think it’s only one basket, though. There’s a lot of things that they offer that you don’t get at most complexes. EO: Even though it’s residential, the fact that it’s a rental property actually makes it a commercial ratable. I also understand that it’s projected to have a pretty low impact in terms of the number of school kids that would be added to the school district. BS: Well, they’re under a PILOT program (an limited-time payment in lieu of taxes negotiated with the town, which is allowed in redevelopment zones to encourage development. This limits the amount of property taxes paid for a period of years). As for the impact to our schools, every other year or so, they (Ewing Public Schools) have a demographer that goes through there and looks at the numbers. What they predicted four years ago—as far as the number of schoolage kids going into the system, to today—hasn’t changed. So the number of kids total are down. Now, there may be some reshuffling of school kids to a different schools because one area was built up more than the other, but there’s plenty of room in the school district. There’s no

get them there. EO: How close do you think you are to seeing something happening there? BS: Really close, actually. The people that we’re talking to are very much interested. They’re very engaged. They put designs out. We’ve talked with the county already. This has been ongoing with the county. They’re all on board with it. EO: Does the site back up onto the airport property? BS: Yes, it does. EO: So would the service road run along that area? BS: No. There’s a hardware store right at the bend (on Parkway Avenue) and there is a tract of land that’s owned by the county, and that will become the service road. So it’s not in the back of the property. It’s not really in the front either. The way that the service road is laid out, it wouldn’t impact the houses that are back there.

The pandemic’s impact on small businesses EO: What is the state of retail in the town? What are you seeing, because the pandemic has had a pretty drastic impact on retail and restaurants. BS: To be honest with you, we haven’t been swamped with requests, but we’ve been kind of steady with new businesses coming online and new businesses taking the place of a existing ones. Businesses change, so we haven’t lost a lot of business in a sense that we lost that revenue, because where one business went out of business or just decided they weren’t doing this anymore, somebody’s filled in that particular space. So we’ve been okay with that. I would love to see it much better and a more vigorous economy for the retail businesses, but retail business in general has changed. People are going to Amazon. Look at Walmart and Target and those types

Before COVID hit, the station— where it’s located now, even in the condition that it’s in—was getting at least 200-300 passengers in the morning to ride there to go to Philadelphia. The potential for that is so great, and I think one of the reasons the Town Center is doing really well is because the rail station is so close. I think Atlantic is keeping track of that. When someone fills out an application, they ask for references and the business that they work for, and a number of them are working in Philadelphia. So they’re probably taking the train in. I think the potential is there that it would do really well. EO: Down the road from the town center on Parkway is the old Naval Air Warfare Center, a site where developers have talked about wanting to build a warehouse. It’s relatively close to the interstate, but it could also cause truck traffic that could have an impact on residential areas. What is the town’s thinking about that property? BS: We have been in active talks with a developer on that particular property. We have talked about what we would consider. Basically, we’re looking at one warehouse. It’s approximately 300,000 square feet with three or four smallertype warehouses with a totally different design that don’t look like warehouses, which we plop closer to Parkway Avenue. The people that would be going be in those particular spots would be a brewing company or a smaller distributiontype place. Things like that. We’re looking to put in a service road to accommodate the truck traffic. With tractor-trailer traffic, we’re looking to limit that during off hours only. Basically, the only thing that could run through the town on a normal business day would be like a box truck as opposed to a tractor-trailer. So we’re addressing the traffic, when they can come into town and a service road to

of companies. They’ve been impacted. Instead of going to the store, people are now going online. So even stores like Walmart are changing the way they’re doing business now. They’re doing a lot of mail order. My wife, she does a lot of mail order. I got an Amazon package at the door every freaking day. It’s like, you gotta be kidding me, is it something that you really need? EO: I bet that’s what’s really been happening with people working from home. They take a break and then go on online and start buying stuff. BS: Yeah, exactly. So Amazon is doing really well, but the regular mom and pop stores—have they struggled? I believe they have, but it’s starting to come back. We had one company—I think it was New York Bagel. They just reopened and moved to another location, which was probably a better move for them than where they were. We had some other businesses that have opened up, and then you always have the mainstays. The people that have gone through thick and thin, but they survive and they’re happy to be in business. EO: The type of business that’s been most affected by the pandemic has been restaurants. I guess they still have takeout and pick-up and things like that, but they’ve been limited when it comes to on-site dining. Has the town

done anything or given thought to ways to help them? BS: So when businesses were allowed to outdoor dining, we took a proactive stance to say, “Okay, you don’t need to go to zoning (which would have normally been required), you just need to demonstrate it’s a safe place and you can put up a tent. “We’re not charging you for the tent, we have to inspect it, but we’re not charging you for the permits and making you go through all the loops and jumps that you usually need to go through.” So that worked out pretty well, and we kind of kind of eliminated the ordinance where we wouldn’t allow outdoor dining at all. We were allowing outdoor dining where it’s practical. So that has worked out really well. Some companies have done really well—the Revere, Erini, Blooming Grove Inn, Marsilio’s. We’ve made accommodations for them, and there’s other companies now that are thinking that they want to do outdoor dining permanently. Now, I’m not waving the fees permanently, because that’s a drain on all our tax dollars, but if they want to, they have an opportunity to do that. In that sense, I think the restaurants have been very thankful that we cooperated as best as we could. They took a beating but were able to survive. So we’re kind of happy with that. Under this LOI, St. Francis Medical Center will become a part of Capital Health. The non-binding LOI is the first step in evaluating and designing a framework that will enhance health care services and create a new model of care for residents of Trenton and the surrounding area. DON’T LET THE STATE TAKE YOUR ESTATE

So….masks. There are those who don’t wear them. There are those who wear them. There are those who forget them in the car and have to run back and get them. There are those who have to wear them while they work. There are TV and movie superheroes who wear them because their costume requires it. Whatever category you fit into, let’s all be truthful here. NO ONE likes wearing them. Except the TV and movie superheroes. They get paid a lot more than we do. First off, call me a sucker who has been brainwashed by the news, but I believe that mask-wearing is a necessity in order for us to finally kick this freaking pandemic to the curb. There are people who do not believe that mask-wearing is necessary. Whatever. I am not a hater, so you do you, boo-boo. Having said that, I’m going to point out the upside of wearing a mask. There are wonderful and practical things a mask can do for you. 1. If you wear false teeth or a partial plate or your teeth are not your best feature, then wearing a mask gives you the freedom to NOT wear or show your teeth. For me, given that my teeth need work, this is a huge plus. 2. Masks hide those laugh lines around your mouth. Pair that with a pair of large sunglasses and poof! You’re young again. 3. If you are a woman of a certain age, you may get bristly little hairs on your upper lip and/or chin. If you’re like me, obsessed with plucking them out the second they emerge, relax. Slap on your mask and

no one will see those hairs. Unless they’re really long. Then just tuck those suckers in the mask and off you go. 4. If you suffer from cheek and chin breakouts, your mask will effectively hide them and give the impression that your skin is flawless. 5. If you want to stick your tongue out at someone but are too chicken to let them know you’re doing it, voila! Stick your tongue out at will, because with your mask on, no one knows. Except you. Downside: keep doing it and you will end up with a wet spot on your mask eventually. And oh yeah. Masks don’t normally come in flavors, so it’s not gonna taste good unless you actually LIKE the taste of cotton. 6. A bit gross, but if you have a runny nose, no one will know. Same with drooling. 7. You can hide snacks in your mask and graze at will. Word of caution: watch out for crumbs. 8. If you are a fashionista, you have many choices for masks nowadays. There are leopard and other animal print ones. There are ones adorned with lace and sparkles and sequins. There are movie or TV character faces on masks now. There are masks with slogans on them. Like, “Will remove for wine,” or “Insert tacos here,” or “Read my lips.” We went to a kids’ party recently. We wore our masks. Mine was one of those disposable ones. There were chocolate cupcakes with green icing. I think they were supposed to be for the kids. Well, I took one. I pulled my mask down my chin and scarfed down the cupcake. Plus half the cupcake wrapper. Why did I eat the cupcake wrapper? Because I didn’t see it. My bunched-up mask was in the way! I finished the cupcake and threw what was left of the wrapper away. When I came back, my husband and a friend of ours looked at me oddly. This is not unusual behavior. I often inspire those looks. I asked them what their problem was. Turns out that the outside of my mask was covered with chocolate crumbs and bright green icing. Who knew? When I took my mask off, a bunch of chocolate cupcake crumbs poured out onto the ground. George asked if I got to actually TASTE the cupcake. (I did. It was excellent. I would have taken another one but the kids took the rest of them. Doggone kids.) So there you have it. My take on mask-wearing. Stay healthy, my friends! Ilene Black has been a resident of Ewing for most of her life and lives across the street from her childhood home.
