Lawrence High School social studies teacher Jametta Clark was one of four recipients of the Princeton Prize for Distinguished Secondary School Teaching. She was honored at Princeton’s 2021 Commencement on May 16. Teachers were selected for the award based on nominations from public and private schools around the state. They each will receive $5,000, as well as $3,000 for their school libraries. Other teachers honored were Mina Armani of José Martí STEM Academy, Christine Lim of Pennsauken High School and Andrew Teheran of East Side High School. “The prizewinners are exceptional teachers because they transform and impact their students’ lives and their school communities,” said Todd Kent, director of Princeton’s Program in Teacher Preparation in a release by the Princeton Office of Communications. “Though they have unique styles and teach in different subject areas, they all share a complete dedication to the growth, learning and wellbeing of the students in their care,” Kent said. According to the release, Clarke, “is known and celebrated for her ability to connect with others — and to get others connected. Afforable housing approved Planning board okays downsized version of Texas Avenue project By Bill Sanservino

The Lawrence Township Zoning Board on April 28 approved a 54-unit affordable housing rental complex on Texas Avenue. The project, which is being developed by RPM Development Group, will be constructed on a 4.3-acre parcel in back of the Lawrence Shop-

ping Center. The lot will be purchased from the owner of the center and subdivided from shopping center property. The approval included a use variance and preliminary site plan approval. RPM must appear before the board again to obtain final site plan approval before construction can start. “It is our hope that allowing the board to review final site plan approval at a later date, along with the revisions to the plan recently discussed and to be presented on the 28th, will provide the board with the comfort that their concerns

concerning the site playout can be adequately addressed,” said Ryan Kennedy, the attorney for the applicant. The board first began hearing the application in mid-2020 and held a total of eight meetings on the plan, which faced opposition from members of the community, who felt the project was too big for the site. That included a meeting in February, which had to be adjourned because the virtual meeting platform the township was using was limited to 100 people, and couldn’t accommodate all the members of the See AFFORDABLE, Page 6 June Hours Mon.-Sat. 9-5 Sunday 10-4

After a year of virtual learning and hybrid classes, the Lawrence High School Class of 2021 will finally get a chance to experience traditional a right of passage. The class will graduate together at an in-person ceremony to be held in Wednesday, June 16 at 3 p.m. at Arm and Hammer Park in Trenton. (A rain date has been set at the same time the following day.) Each graduate will be allowed two tickets for guests to attend the ceremony. “We are so proud of the ways in which you have adapted to a senior year filled with changes, adjustments, and its fair share of uncertainty. Through it all you have stayed strong, flexible, and patient,” said a notice sent from the school district to the seniors. “Soon it will be time to celebrate a milestone commemorating all that you have accomplished during your years here at Lawrence High School,” the notice said. Meanwhile, the Lawrence Gazette’s annual feature spotlighting the high school’s top academic seniors starts on Page 4. This year’s nine seniors (one student chose not to participate) talked about their plans, shared a favorite high school memory and were asked to express their feeling about this year.

Janssen donates funds for Next Gen Garden The Lawrence Township Education Foundation recently announced the reciept of a $3,000 from Janssen Pharmaceuticals for Eldridge Park School’s Next Generation Garden Project. The grant provides funding to EPS to construct and grow plants and vegetables in raised gardens around the school. As a result of this project, each student at EPS will experience a particular cycle of the garden during each grade level and will become experts in four cycles of plant growth after four years at school. Two years ago, Janssen also funded small, portable greenhouses for every elementary school in Lawrence Township public schools through the LTEF. This original grant motivated educators and students at EPS to expand the project and to create the Next Generation Garden. “The LTEF and Lawrence Township Public Schools are very fortunate to have community partners like Janssen who are dedicated to supporting the growth and development of our students,” said Karen Faiman, executive director of the LTEF. LTEF is a nonprofit organization that fosters educational excellence, creativity, and achievement in the Lawrence Township Public Schools. Thurber announces retirement from TESU Lawrence Township resident John Thurber, vice president for Public Affairs and executive vice president for the Thomas Edison State University Foundation, has announced his intention to retire this fall. He has served in both roles since January 1996. Prior to his appointment as vice president for Public Affairs, Thurber became the founding executive director of The John S. Watson Institute for Public Policy and its predecessor, the Trenton Office of Policy Studies at the institution in 1991. “Under John’s 30-year stewardship, the university has made significant strides in the areas of public affairs and institutional advancement,” said Dr. Merodie Hancock, president. “The university’s community profile and impact in the region has also grown substantially,” she said, referring to his leadership roles for organizations like the Princeton Mercer Regional Chamber of Commerce, the Mercer County Improvement Authority, the Wells Fargo Regional Foundation and the Trenton Downtown Association. Thurber was also instrumental in the growth of philanthropic support for the university through the TESU Foundation, including his collaboration on securing Wells Fargo’s donation of a historic mural by N.C. Wyeth valued at $4 million, as well as his work with former university president George Pruitt to secure a $2 million endowment from Gary and Diane Heavin. During his tenure, the total assets of the TESU Foundation grew from $600,000 to more than $12 million to support the university’s strategic priorities. In his previous role at the Watson Institute, Thurber was responsible for the growth of the university’s public service and partnership roles in providing policy research and analysis for the N.J. Urban Mayors Association, the city of Trenton and a variety of other partners.

Lawrenceville School to develop stewardship plan The Lawrenceville School will soon be expanding student outdoor learning opportunities through a new land stewardship plan that is in development in partnership with the Friends of Hopewell Valley Open Space. According to the Lawrenceville School’s website, FoHVOS’s program director, ecologist Mike Van Clef, and land stewards Dana Christensen and Cory Snyder, will be leading the effort to conduct an initial survey of the school’s 640 acres and develop a comprehensive 10-year stewardship plan for this land. Their survey will focus on both the core campus in locations such as the Bowl Woods forested stream corridor and in more distant locations that include forests, wetlands, and meadows near Princeton Pike. The project involves development of prioritized recommendations and specific goals aimed at maintaining and enhancing the conservation value of natural and semi-natural areas on campus. It will be implemented alongside a campus water monitoring program

begun in the spring of 2020. As part of the plan, students will participate in ongoing ecological field work pioneered by Lawrenceville alumnus and renowned ecologist Aldo Leopold (Class of 1905), including forest health enhancement, tree plantings, and wildflower meadow restorations. This work will benefit area plant and animal populations at a time when habitat loss and climate change are threatening wildlife at all scales from local to global. School undeveloped land forms a key area wildlife corridor that connects nearby locations such as Mercer Meadows County Park and Delaware and Raritan Canal State Park. Through coursework, summer internships, and other opportunities, students will participate in mapping native and invasive species for use in developing the stewardship plan. Plant surveys will help identify any state rare or endangered species that inhabit the property and foster an appreciation for the variety of species and habitats on School-owned land. Students will also learn how their work in applied environmental science and biology relates to careers in field ecology, ecological restoration, and sustainability.

My little sister, because she gives me a reason to work hard but also reminds me to have fun and not take everything so seriously. What are your feelings about the way the pandemic affected your senior year? 30 Million Americans suffer from back pain everyday. This affects everything that they do, from work to play and ultimately their quality of life. 7 out of 10 people experience lower back pain at some point in their lives and it is one of the most common reason for patient visits to primary care physicians. There is no doubt that low back pain exists in epidemic proportions today. There are many causes of back pain. Some people develop it over time, others are injured in sports, work or accidents. Most people complain of pain and numbness in their legs, usually the result of spinal conditions such as sciatica, stenosis and herniated discs. Regardless of the cause, people cope with pain in several different ways. Many people try to wait back pain out only to find that it keeps getting worse. They buy new mattresses, try different stretching exercises, learn new techniques for sitting and standing, yet their conditions do not improve. Some make repeated unsuccessful trips back and forth between their doctor, chiropractors, and/or physical therapists. Others opt for surgery, and while it is true that surgery may be the answer for certain types of back injured, it is highly invasive and not without serious risks.

AFFORDABLE cont. from Page 1 public who wanted to attend. The plan was first proposed as 70 rental apartments in three multi-story buildings and six two-story duplex buildings. The plan was ultimately amended and reduced by 16 units, after members of the board and community expressed concerns that the site was being too densely developed. Under the amended plan, one of the apartment buildings was eliminated and four apartments were removed from the third floor of one of the other buildings. Site amenities including a patio, benches and a bike rack will be included in the area where the third building was eliminated. The project was also amended to increase the number of parking spaces from 102 to 109. A use variance was required because the zone in which the project is located does not permit duplex and multi-family dwellings. One of the primary criteria for a use variance is a finding that a project is inherently beneficial to the community. State law defines a beneficial project as “a use which is universally considered of value to the community because it fundamentally serves the public good and promotes the general welfare.” The project was found to be beneficial because it is 100 percent affordable housing and helps the township meet its mandatory requirement to provide for affordable housing. According to a report by zoning

board planning consultant Elizabeth McManus, “the board should consider the property as a suitable site for the construction of affordable housing. The Board, nevertheless, must be satisfied that the site plan, as revised, appropriately works so that with conditions that the board may attach to any approval, the result will be that there will be a development of a residential community that is appropriate for the township and for the residents who will be given an opportunity to live in the township.” RPM, based in Montclair, is the developer of a number of affordable developments within the state. “Founded in 1986, RPM is one of the leading developers of affordable housing in New Jersey,” states the company’s website. “Our company has developed residential communities that are home to thousands of New Jerseyans and represent hundreds of millions of dollars in community investment across the state. MUELLER continued from Page 7 evolved from this as far as the future of education. I think that’s better for somebody in instruction to answer. LG: A big part of your job is to be the community outreach person for the district, working with the media and members of the public. I have been told that it’s not legal for a school district to actually have a position set aside just for PR purposes. I’m confused. LM: That’s a great question. Yeah, it’s very confusing and the 2009 regulations that New Jersey put out said that communications and PR and that sort of thing is not supposed to be more than 50% of somebody’s job. So most districts kind of avoid having a director of communications. Maybe that person will also do grants or wear a variety of hats. The N.J. School Public Relations Association puts on its website that you can have a communications person, because a lot of districts think that they can’t have somebody doing that. LG: As a member of the media, I think that having somebody to reach out to the community is a vital role. What are your feelings about that, and what are some of the challenges? LM: I agree with you. I think it’s critical to have somebody in that position. One of the challenges is that with my responsibilities of supporting the superintendent, I don’t get into the schools as often as I would like. That would help me to get more information to put out. But over the years I have people in the schools— almost like internal ambassadors— sending me information. With the position of assisting the superintendent, there’s a lot of day-today requirements that are necessary. A lot of people will contact me rather than contacting the superintendent directly. And my job’s been described as doing triage, connecting the dots to

communication both within the district and then outside. If the job was structured a little bit differently, then maybe somebody would have time to attend more community meetings. That would be one way to be able to connect with people more. As far as reaching the community. That’s really a challenge. It’s been said that only 25% of a community has children in a district. The rest don’t get as much information about what’s going on in the schools. Our main way of reaching people, as far as our district, is through the Gazette, because most residents get it. So we rely on that a lot. LG: Do you have any interesting stories from over the years that kind of stick out in your mind? We did an open house for realtors one night. This is when Crystal Edwards was the superintendent, and it was just for an hour. She spoke with them for the first 30 minutes and then the peer leaders from the high school broke into groups and took different realtors around the school. The kids were so eloquent. I didn’t know any of them at all, but I was just so proud of them because. Iw was great almost every time that I had any exchange with the kids. They’re really special. LG: What are you going to miss most about the job? LM: The people. Just the relationships, both in the district and outside. I cried when I told Ross I was retiring. LG: I can imagine it’s tough. But it’s also exciting. LM: Yes, my husband and I always said that whenever we retire we wanted to have something exciting to go to, and we do feel like that with what we’re doing. We’re really looking forward to it. Contact BILL SANSERVINO: bsanservino@ communitynews.org, (609) 396-1511, ext. 104, facebook.com/BillSanservino.

what’s happening What makes your garden grow? Summer garden tours in full bloom By Sam Sciarrotta

They don’t call us the Garden State for nothing. Groups all across the region are planning outdoor garden tours to mark the transition from spring to summer. Here’s your guide to flowers, flora and greenery, throughout Burlington and Mercer counties.

Roebling

The Roebling Museum’s annual Garden Tour is back. The town, famous for building some of the country’s most iconic bridges, will celebrate warm weather and bright blooms June 5 from 10 a.m. to 3 p.m. “When the Roebling steel plant was open and homes in the company town were owned by the company, many of the workers and their families grew gardens with flowers as well as food,” says Lynne Calamia, Roebling Museum executive director. The Roebling Company itself often sponsored competitions to encourage

residents to tend their gardens and keep their properties looking put-together. “Continuing this tradition with our Garden Tour builds pride in our community and gives residents a chance to show off their green thumbs,” Calamia said. The Roebling Museum tells the story of the origins and growth of Roebling, a company town built in 1905 by the Roebling Company. The village of Roebling, including 700 homes, is a historic district listed on the National Register of Historic Places, and every one of its buildings has a story to tell. Exhibits, tours, and programs document the majority immigrant workforce that built the iconic suspension bridges of the American industrial age. The tour will start at the Roebling Museum, located at 100 Second Ave. After checking in, participants will receive a map of locations included on the route, plus some added historic highlights. The tour is appropriate for walking, driving or biking, and a guided tour is also set for 1 p.m. Tickets cost $15. Proceeds support the museum. Register at roeblingmuseum.org, in person on the day of the tour or by calling (609) 499-7200.

Trenton The Old Mill Hill Society, in collaboration with residents of the historic neighborhood, will host its 30th annual Garden Tour June 12 from noon to 5 p.m., rain or shine. The neighborhood, composed primarily of 19th century row houses, will welcome guests in-person to the self-guided walking tour through 15 gardens— attendees will see the intersection of nature and city living, coupled with residents’ personal style. Settled in 1679, Mill Hill is one of the oldest neighborhoods in Trenton

and the site of both battles of Trenton in 1776, where George Washington defeated the British Army and turned the tides of the Revolutionary War. Annual re-enactments take place in Mill Hill Park. The neighborhood of Mill Hill was added to the National Register of Historic Places in 1977. “Following last year’s virtual house tour, the Mill Hill neighborhood looks forward to once again welcoming new and returning guests,” said event cochair Amanda Chevalier. “We can’t wait to reconnect with visitors, share our welcoming and diverse community, and See GARDEN, Page 4

Platelet-Rich Plasma to treat conditions from sports injuries and wounds to hair loss from chemotherapy. These are just a few of the cutting-edge therapies used by Dr. Ronak Patel, the founder and medical director of Regenerative Spine and Pain Institute in Plainsboro. “Many of these treatments may come as a surprise to patients suffering from chronic pain, especially those who think that their pain — and poor quality of life — is something they have to endure,” Dr. Patel notes. A double board-certified anesthesiologist and pain management specialist, Dr. Patel focuses on treating pain in the back, neck, face, and joints as well as pain related to cancer and chemotherapy. With so many different pain-causing illnesses, injuries, and conditions, treatments must be carefully customized to fit the needs of each individual patient. Dr. Patel partners with orthopedists, physical and occupational therapists, and chiropractors to provide a variety of approaches and treatments. With

Regenerative Medicine/ Stem Cell Therapy. Regenerative medicine is a fastgrowing, highly developed treatment that helps the body heal or rebuild itself. Dr. Patel uses stem cell therapy to treat ailments, particularly low back or neck pain, caused by degenerative vertebral discs or joint pain in the shoulders, hips, or knees caused by osteoarthritis. The patient’s stem cells are removed, purified, concentrated, and injected into the injured or weakened tissue. Stem cell therapy can also speed recovery and help avoid surgery. Platelet-Rich Plasma (PRP). A favorite treatment for sports injuries, PRP uses the patient’s blood to produce a platelet-rich plasma that targets a host of chronic and acute pain conditions, including muscle strain, arthritis, tendinosis, cartilage injuries, joint inflammation, and wound care. The treatment is also used in orthopedic and plastic surgery. By synthesizing platelets and releasing proteins, PRP can aid in generating new tissue. And it has helped chemotherapy patients grow back hair faster and thicker.

Cannabis Therapy. The legalization of medical marijuana has brought new treatment options. “We are very excited by the potential of cannabis-based treatments and we comply fully with New Jersey’s evolving regulations,” says Dr. Patel. He uses a local dispensary to provide treatments, which include edibles such as gummy bears and cannabis-based rubbing and vaping oils. Minimally Invasive Therapy. Dr. Patel offers a wide variety of minimally invasive therapies. These include epidural steroid injections, facet joint injections, radiofrequency ablation, and spinal cord stimulation for patients suffering from chronic neck and back pain stemming from herniated discs, degenerative disc disease, or spinal stenosis. His goal is to help his patients avoid surgery and at the same time regain functionality. Thanks to these and other game-changing treatments, pain levels can be greatly reduced or eliminated and quality of life enhanced. Says Dr. Patel, “Stop your pain. Start your life.”

The next generation of filmmaking Toby Ilogu talks creating in 2021 By Sam Sciarrotta

Toby Ilogu is always up to something. The 19-year-old Montgomery resident loves to dive headfirst into a project, whether it’s studying cryptocurrency or making short films. Now, he’s channeling his energy into TikTok, where he’s amassed over 100,000 followers, starting with first-person videos and evolving into the Everyday Show series, where he dons a suit, sets up camp in Princeton and conducts man-on-the-street-style interviews with anybody who wants to participate. Ilogu, a graduate of the Lawrenceville School and now a film student at USC, asks whimsical questions like “Are you stupid?” and “Name that Black celebrity.” The videos usually take their own form from there. “I’m very much into that raw, semiawkward humor,” he said. We sat down with Ilogu and talked quarantine creativity, Gen Z filmmaking and more. An edited version of the interview follows. *** Six09: What was it like to start your first year of college in the middle of all of this? Ilogu: I was able to do my fall semester. Film school was my dream. Early on in high school, I knew that I wanted to pursue video or film school in some capacity. USC was, like, the college on the hill. It was my dream school. When I got in, it was a dream come true. I was living the dream for a few months until COVID came around and really just shook everything up. My dream school turned into a nightmare. I did this fall semester online, and right before the spring semester, I thought, “I can’t do this. I hate this experience.” It was supposed to be the best thing in the world. I talked to my parents and very heavily petitioned to take the spring semester off. That’s what I ended up doing. Six09: Are you going back in the fall? Ilogu: That’s the plan. Mid-August, actually. Six09: You said that you’ve been interested in filmmaking forever. What sparked that interest for you? Were there any filmmakers that you admired as a kid? What made you dive into that? Ilogu: A lot of people might say, “I grew up watching these films. My parents put me onto Scorsese and Speilberg.” Quite honestly, that wasn’t me. I grew up on YouTube. I was on YouTube

earlier than I should’ve been. When I was growing up, my parents told my two older siblings and I, “No watching TV during the week.” Most of elementary school, I was reading a lot. I was always checking stuff out from the library. Then, we got a laptop, and that’s when I started perusing the internet. YouTube was there, and I was like, “Well, it’s not TV.” Six09: That’s the loophole. Ilogu: Exactly. I looked up to YouTube stars early on, more than any film director. Six09: I feel like that’s kind of the path that a lot of creators in your generation are following. Do you see that, too? Ilogu: Yeah. At film school, there are a lot of purists. People will say, “The YouTube stuff, that’s not real filmmaking. TikTok is a bastardized version of visual media.” But this is the stuff that I like. By all means, people can pursue what they want to pursue. I’ve heard that you go to a classroom of third graders, and half of them will say they want to be YouTubers when they grow up. Those are the people they’re engaging with. And it’s such a versatile medium. Anybody with just about any passion could make content around that passion. I think it’s just a matter of what people are being exposed to at a young age. Six09: Is that how you got into TikTok? Ilogu: From the start, I always took a very strategic approach to TikTok. I didn’t just stumble onto the app. I knew of TikTok when it was musical.ly. I would watch these YouTube compilations of cringey kids lipsyncing to songs. I was like, “I don’t think this stuff is for me.” But then I thought, “Wait a second, there’s so much potential.” The app can be anything that you make it. You can’t pigeonhole a whole platform just by the content that a handful of people are making. My first venture into TikTok was when I got to college, toward the end of 2019. I started with a joint account. The plan was that a few of us on the floor I was living on were going to make cinematic TikToks. Eventually, most of the group lost interest. That was it for some time. I kept the app for a little bit, then deleted it. It was on and off until quarantine, where I said, “Yeah, let me start making TikToks.” I feel like there’s a lot of potential to just grow an audience. I’m not exactly sure what it is I want to do in the future, but whatever it is, if it’s creative, it’s going to need an audience. Six09: Did it kind of help you pass the time during quarantine after starting at your dream school and

Faucet Replacement/Repair Maybe my sense of humor is a little Sink Repair weird, a little out there. I’m very much Caulking (Tubs, Sinks, etc.) into that raw, semi-awkward humor— Sacha Baron Cohen. I think going under Gutter Cleaning cover and getting those natural reactions  Electrical Repairs (Minor) makes for great content, but it has the Fixture Replacement potential to expose certain things socially By: and culturally that can really be profound.  Flooring Prior to that, Tyler, the Creator had a Garage, Playroom, Basements show on Adult Swim called Loiter Squad, A Division of Prior & Nami Business Systems By: which was really just him and his friends screwing around. successful. What I find is that the most viral videos are always interacting with other people. There’s a certain element that you can’t get from a bedroom. I believe as a creator, you need to break the bedroom wall at some point, or else you’ll always be confined to those four walls. I know that the public interview is a viral format. It just works. I said to myself, “How can I do this in a way that is true to me?” I definitely got inspiration from Jimmy Kimmel’s Pedestrian Questions. And I knew that I wanted to carry the suit somehow. It was working before. I came up with the idea, and I just sort of did it. Six09: You seem so well-suited to that man-on-the-street kind of interview. Does that come naturally to you, or do you have to psych yourself up before you go outside and start asking people these questions? Ilogu: I do have experience with video journalism. Lawrenceville has a newscast, and from 2015 to 2019, that was my thing. That’s where I learned how to edit videos. Everything I know about videography, framing, the on-camera presence, everything I know came from that video news club. It really is one of the best high school news shows in the world. I’m not just saying that. What they’re doing is very special, and it gave me everything I needed to know to keep doing this creative stuff. I have experience on both sides of the camera. But there are awkward moments. I’m not a natural at all. And I put it into the video. If it’s awkward, it’s because I’m awkward in that moment. Sometimes I’m in character, kind of a game show host, and other times, Toby just sort of seeps out, and Toby doesn’t always say the right thing at the right time. Toby isn’t always the most conversational in the traditional sense. I think that just adds to the show. One of the Are You Stupid videos, the person said “Yes.” I said, “What’s the last dumb thing that you did?” “This interview.” I was like, “Wow, she really said that.” I had to walk it off a little bit. I was shook. Six09: Has it been easier to approach people now that people are getting vaccinated and things are starting to open up a little more? Ilogu: Oh, definitely. A lot of people are a lot more comfortable being approached and being around other people. Honestly, I think my show kind of celebrates that. It celebrates getting back to some type of normalcy, even if that’s just everyday interactions that you have on the street. I guess that’s building a little bit of a narrative around the name. I was thinking, like, Late Night, The Tonight Show. How about The Everyday Show? I wanted to post on TikTok just about every day, so I thought it could work. Beyond that, I’m approaching everyday people on the street. One way of growing on social media is a name drop. But the main draw isn’t toward the creator or the content. It’s likely toward that other person. I feel like that’s not very conducive to a long-term relationship, especially if you’re a new creator. With everyday people, I’m not chatting with celebrities. It’s not an aspirational thing I’m going for with my content. It’s more like conversations. Yeah, they’re awkward, but that’s like. Life is awkward. We gotta lean into that more.

Restaurants still getting winged by pandemic Occupancy limits are lifted, but rising costs and staffing issues are testing the entire food industry By Joe Emanski

New Jersey restaurateurs waited a long time for the day to come when they could once again fill their establishments to capacity. So when Gov. Phil Murphy made the announcement in early May relaxing capacity restrictions and seat customers at the bar, it was expected to be an occasion for celebration. But few restaurant owners have been in the mood to celebrate lately. It turns out that coming out of a pandemic isn’t any easier than heading into one. While 2020 felt like one long harrowing crisis, this year has brought on many new crises of its own. Like the dishwasher shortage. The foam container shortage. The lobster shortage. And, of course, the Great Chicken Wing Shortage of 2021. “We are having more problems now, honestly, than during COVID,” says

Giovanni “John” Balsamo, who coowns Villaggio Iccara in Yardville with his wife, Phyllis. “Yes, the drop in the amount of business was not good, but also we cut down on huge expenses so we survived, and we had a beautiful take out business. But now I’m having more trouble figuring it out. Between food cost and labor … it’s not sustainable.” Restaurants know that things will happen from time to time to disrupt the supply chain: a temporary milk shortage can cause cheese prices to rise, mudslides in California can send produce prices through the roof for a few weeks, until supply returns to normal. “You cope with that,” Balsamo says. “What we cannot cope with is when a case of wings goes from $68 to $139.” A specialty of the house at Iccara is an appetizer of chicken wings that are roasted in the restaurant’s wood-fired brick oven. But in May, Balsamo took the wings off the menu, rather than raise the price of the dish to reflect the rise in his cost. “People love our wings. so they say, ‘Why don’t you charge $3 more?’ Because I love my customers,” he says. “They’ve supported us for 30 years. I don’t want to do that to them.” Balsamo says scallops that recently cost

Taco-spiced chicken wings from Wildflowers in Pennington. The wholesale cost of wings has risen to a point where some restaurants are taking them off the menu. (Facebook photo.) him $18 a pound now cost $34, and other shellfish are along similar lines. The Maine Public Broadcasting Network reported last month that Maine seafood shacks were charging as much $34 for a lobster roll. Balsamo said he probably will have to

increase the prices on many items on his menu by a dollar to a dollar-fifty, which would not cover the price increases, but which would at least help him close the gap. Customers may not always believe it, but restaurateurs are usually reluctant to increase their prices. “There is a line that you don’t want to cross. You don’t want people to think it’s too expensive to go out to eat, let’s find an alternative,” Balsamo says. “The less the price, the more business you do. But if it costs you $1,000 more every week to buy chicken, you’ve got to increase prices at least a dollar.” So why the rise in prices now? Weather is one reason. A huge winter storm swept the Southwestern United States and Mexico in February, leaving huge swaths of Texas without power for days. The poultry and livestock industries are still bouncing back from losses suffered as a result of the storm. A harsh winter has also been cited as a factor in the decreased supply of Maine lobsters. Bad weather has meant fewer boats on the water, and fewer lobsters in it. Kinks in the supply chain also continue to bedevil the industry on a number of fronts. The Department of Agriculture, in its April Labor, Poultry and Livestock

Outlook, cited labor issues (read: a lack of qualified workers) as a factor in the reduced supply of chicken. But the main reason prices are up and supply is strained is simply high demand. Prices actually jumped even higher at the start of the pandemic, when there were breakdowns up and down the supply chains — but that came at a time when demand was very low. Now, restaurants are gearing up for more customers, and some of them want to be fed like they haven’t had a good steak in a year. Those restaurants purged much of their cold-stored food during the lean months of the pandemic, meaning that many are now buying in large quantities to restock their freezers on top of serving fresh products today. Meanwhile, just too darn many people turned to chicken wings for comfort during the pandemic, and too many home cooks got comfortable using their air fryers over the past year. Retail demand remains high even as restaurants reopen, and producers will have to raise more animals to keep up. “As the restaurant sector begins to reopen, in the short term, supplying the growing demand for chicken will be a challenge,” wrote the Department of Agriculture in its May Outlook. *** There is also the question of where all the restaurant workers have gone. Now that restaurants are able to fill most of their seats again, most are anxiously on the lookout for cooks, servers, bartenders and dishwashers. And many are find-

Taste Trenton to return after 2020 hiatus

Taste Trenton is coming back full throttle after suspending its 2020 self-guided tour of restaurants due to the coronavirus pandemic. After suspending its 2020 selfguided tour of Trenton restaurants, Taste Trenton has announced that it will curate an appropriately sociallydistanced excursion to the capital city’s restaurants this summer during the weekend of June 11–13. The not-for-profit effort, initially begun in 2016, is designed to introduce Trenton residents and guests from across the region to the vast culinary and eating options available in many corners of the city. What began as a day-long event with just a dozen restaurant in the Chambersburg region, evolved to three days and 40 establishments across the city in June 2019. “We’d been on the fence about offering the tour this summer,” Taste Trenton coordinator Bernard McMullan said in a media release. “But we decided to give our local restaurants a boost by getting people across their thresholds as soon as possible. We applaud their efforts to stay open during the past 15 months.” The format remains the same as in past years. Participants or “food tourists” purchase wristbands ($7 per day; $10 for entire weekend) from Taste Trenton and receive a guide

Serving Our Community For Over 75 Years With No Pressure, Hassle-Free Car Buying

Here’s Some Of Our Team

2020 Top Salesperson

Jeannette Hosri

Frank Collazo

Thomas Belardino

I came to Coleman 4 years ago with no automotive experience. I have continually earned the Top Sales Consultant title. I would attribute my success to my strong drive, product knowledge, motivation and listening skills. My goal is always to hear the wants and needs of customers throughout the sales process to give them a great buying experience. When I’m not working, I love to run.

Having worked at Coleman for 35 years, I feel my strongest attributes are my product knowledge and my friendly sales approach. I always put myself in my customers shoes, treating them as I would want to be treated. Speaking fluent Spanish is also very helpful. When I’m not selling cars, I love golfing and spending time with my two young children on roller coasters and water rides.

I joined the Coleman team 4 months ago but have over 30 years of retail and automotive experience. Customers can expect honesty, loyalty and a high commitment to customer service. I strive to make every customer’s experience at Coleman the best car buying experience they’ve ever had. As for my personal life, I spend most of my time with my family and friends and also enjoy sports.

LETTER OF INTENT SIGNED BY

Capital Health and St. Francis Medical Center and positively impact the health and well-being of local and regional residents.”

Capital Health and St. Francis Medical Center, a member of Trinity Health, have signed a non-binding Letter of Intent (LOI). Under this LOI, St. Francis Medical Center will become a part of Capital Health. The non-binding LOI is the first step in evaluating and designing a framework that will enhance health care services and create a new model of care for residents of Trenton and the surrounding area. The goal is to work toward a definitive agreement that will create a more comprehensive and sustainable health care system for our community. “From its founding as the city’s first hospital in 1874 to its important role as an acute care teaching hospital and Mercer County’s only provider of comprehensive cardiac surgery, St. Francis Medical Center has always put the needs of Trenton and surrounding neighborhoods first,” said Al Maghazehe, President and CEO of Capital Health. “This approach aligns very well with Capital Health’s mission, and we are committed to our shared vision of providing the highest level of care for the community.” “The health care industry is always evolving to advance medicine and improve delivery of care to the communities we serve,” said Samuel J. Plumeri, Jr., chairman of Capital Healthcare, Inc. Board of Trustees. “The changes we’re seeing here in Mercer County are a reflection of what’s going on nationally, but our neighbors in Trenton and nearby communities can rest assured that we will continue to keep their interests at the center of all we do.” Both hospitals are known for providing advanced care and for ensuring local access to high-quality, comprehensive and affordable health care services. “Both Capital Health and St. Francis Medical Center are deeply committed to caring for residents of our community,” said Daniel P. Moen, President and Chief Executive Officer, St. Francis Medical Center. “The rapidly changing healthcare landscape presents challenges, but it is through a shared mission that both organizations look to expand services

“As a safety net hospital, ensuring the community has access to care is the heart of our mission,” said Joseph Youngblood, II, J.D., Ph.D., Chairman, Board of Trustees, St. Francis Medical Center. “In response to a broad national transformation of health care, we look to combine our strengths with those of Capital, a healthcare leader, and grow services for our residents. Together, we are steadfast in our commitment to provide area residents, including the underserved with highquality, comprehensive care and to improve the delivery of healthcare for our community. Our partnership with Capital Health will be a fitting legacy to the Sisters of St. Francis of Philadelphia for their decades of service to Trenton and Mercer County.” Capital Health and St. Francis now enter a period of due diligence. The process includes evaluation and discussion to determine how to best combine and enhance their capabilities to more effectively fulfill their missions to the citizens of Trenton and the surrounding area. Approvals will be necessary from State and Federal officials and others before the transaction is able to be completed. Throughout the process, Capital Health and St. Francis remain committed to sustaining and advancing the comprehensive, high quality services they provide to residents of the greater Trenton area. Areas of focus will include exploring opportunities to expand access to care and improved efficiency in health care delivery. The new combined system will be secular (Non-Catholic). Capital Health is the Central New Jersey/Lower Bucks County region’s leader in providing progressive, quality patient care with significant investments in physicians, nurses and staff, as well as advanced technology. Comprised of two hospitals (Capital Health Regional Medical Center in Trenton and Capital Health Medical Center – Hopewell), a Hamilton outpatient facility, and various primary and specialty care practices across the region, Capital Health is a dynamic health care resource accredited by DNV GL - Healthcare. Ciuffreda leads LHS softball By Rich Fisher

From ages 7 to 12, Katie Ciuffreda played baseball in the Lawrence Little League, and thanks to her great speed was the All-Star center fielder for three years. Upon arriving in middle school, she just assumed her baseball career would continue. But. . . “They were like ‘No, you can’t do that,’” Ciuffreda recalled. Thus, she chose the next best thing which, in retrospect, became the best thing. “I started playing softball and it was like, ‘This is where I belong, this is my number one sport,’ the junior shortstop said. “I started with the middle school team and in the fall of my sophomore year I started playing travel softball.” And she has never looked back. As a freshman Ciuffreda scuffled at the plate with a .224 average but was still in the lineup every day thanks to her defense at shortstop and a neverending enthusiasm. She also showed some power as four of her 10 hits were doubles. After last year’s COVID-19 shutdown, Ciuffreda has returned as the Cardinals leader. Through their 7-6 start she led the team in hitting (.348), hits (15), RBIs (10) and home runs (3) out of the leadoff spot. She also had three doubles, and procured the team mascot in the form of a little plastic zebra that sits in the dugout during games. “I just saw it in the store and decided to buy it,” she said. When asked why Ciuffreda does not bat third or fourth with her power, coach Dana Williams said “She gives us confidence. We talk about it all the time. I feel like she keeps getting up in big situations. No matter what happens to her, if the worst case is she strikes out, and she’ll go back to the dugout and tell everyone what she just saw and tell everyone what to do next or what she thinks. She’s leading off because she’s a leader.” Ciuffreda has no problem with that. “For my travel team I normally hit four,” she said. “But I kind of like the look of hitting leadoff. I like getting on early and moving around the bases. I look at it like Mookie Betz. He leads off for the Dodgers and he has so much power and so much speed. He just goes out and gets everything for himself and plays so aggressively, so I really like modeling my game after him. That’s kind of what I feel like when I’m out here.” Ciuffreda has long been an athlete. She played travel soccer from second through eighth grade but once she fell in love with softball, she dropped travel soccer for softball. Ciuffreda also enjoyed playing basketball and her plan was to play it in

middle school, figuring she would only get a small part in the school play, which would allow her to play hoops. But her singing and acting ability ruined that idea as she got the lead of young Simba in the Lion King in seventh grade, and played Annie in “Annie” in eighth grade. “I died my hair and everything for that one,” she said proudly. But when Ciuffreda got to high school her priorities changed. “I did the musical my freshman year and I thought ‘I should just be playing sports year-round,’” she said. Thus, she became a member of the varsity basketball team as a sophomore, but still remains in the honors choir as an alto. Ciuffreda’s greatest passion remains softball, which is easy to see when viewing a Cardinals game. “She’s another coach on the field,” Williams said. “If you watch her either at-bat, in the dugout, around the softball field, she’s coaching when she’s playing and that makes the best player. She’s thinking the game.” Aside from her offensive prowess, Ciuffreda has been solid at shortstop. As a freshman, she was bounced around from second, to third, to short but never complained. This year, she was happy when Williams told her she’s strictly a shortstop. “She’s incredible there,” the coach said. “She makes some fun plays.” Such as the one she made against Nottingham with runners on first and second and no outs. Ciuffreda went out to try and make an over-the-shoulder catch on a blooper and it went off her glove; but she quickly picked it up, turned and fired to third to get a force play. “A lot of kids, if they’d drop the ball they would stop and sulk because they dropped it,” Williams said. “She was already on to the next play and made the out anyway.” It’s that kind of non-stop focus and intensity that makes Ciuffreda special. “She’s hard on herself,” Williams said. “We talk about that too. Sometimes she’s too hard on herself but at the same time it’s what makes her great.” When it comes to her leadership and softball knowledge, Ciuffreda shares it with others beside her Cardinal teammates. This spring she is helping her dad coach in the Lawrence Little League. “She’s a great kid,” Williams said. “She does great in the classroom, she’s friends with everybody. She’s not into cliques. She’s talking to the freshmen, helping to organize senior day. She’s just an all-around great kid. “Now that she’s coaching little league, I’ll have to get out there and maybe learn a little bit. I’m always asking her questions.”

Cannabis is legal in N.J. Now what? KEVIN NERWINSKI FROM THE MANAGER’S DESK

On Feb. 22, Gov. Phil Murphy signed into law P.L. 2021, C 16, known as the “New Jersey Cannabis Regulatory, Enforcement Assistance, and Marketplace Modernization Act” (hereafter, the “Act”). This Act legalized the recreational use of marijuana by adults 21 years of age or older and established a comprehensive regulatory and licensing scheme for commercial recreational cannabis operations, use, and possession. New Jersey now joins 20 other states to legalize the recreational use of cannabis (aka “marijuana”). And the vote was not even close: • Statewide the vote was 2,737,682 yes to 1,343,610 no (67% to 33%). • Mercer County was 119,390 yes to 48,171 no (71% to 29%). • Lawrence Township was 11,993 yes to 4,883 no (71% to 29%). So now that it is legal, what next? Notably, the act provides municipalities with authority to permit, regulate and prohibit one or more of the six classes of licensed businesses to operate within their borders. To exercise the control provided in the act, a municipality must adopt an ordinance before Aug. 22, or lose the right to do so for at

least five years. Therefore, our governing body has determined that it would be in the best interest of our community to adopt an ordinance to regulate where cannabis-related businesses may operate within our community. For the past several years, I can tell you that officials from cannabis-related businesses have expressed great interest in our community because of its ideally situated location within the state and access to main highways. I fully expect that there will be continued interest from all classes of cannabis businesses looking to operate within Lawrence Township now that the governor has signed it into law. As a result, taking no action is not an option. We want to situate these businesses (most notably, cannabis retailers) in zones as far away from residential areas as possible to preserve the quality of life of our residents. To that end, we have determined that a cannabis retailer or cannabis delivery business seeking to operate within Lawrence would be restricted to Route 1 between Franklin Corner and Quakerbridge roads—destination storefronts far removed from residential neighborhoods. For example, the retail sale of cannabis will not be allowed at the Lawrence Shopping Center or any other storefront in areas within easy walking distance to residential neighborhoods.

In addition to the above, the governing body has determined that all other classes of cannabis-related businesses would be required to locate within our “mixed-use (MX),” “Limited Industry (LI),” and the Executive Park Plaza area. These classes of business are low profile operations and would be well situated in these areas. Moreover, cultivating cannabis would be limited to the districts above but would not be permitted in our agricultural district (as a farming activity). Simply put, large cannabis farms are not appropriate for our community. The obvious benefit to our municipality is increased job opportunities and an influx of commercial ratables. It will also provide another opportunity for abandoned buildings to become occupied and productive. In addition to these benefits, the act permits municipalities to impose a local cannabis tax (2% for Class 1, 2, 5, and 1% for Class 3 businesses). This tax would be an added revenue source to our municipal budget that will work to reduce our overall costs to operate as a municipality. I am just being real people—it will help. I know that there will not be 100% approval from our residents passing an ordinance that authorizes cannabisrelated businesses to operate here. Some will passionately advocate to

prohibit it because they are against the use of marijuana. And, of course, it is their right to do so. Though 71% of Lawrence residents voted to legalize the use of recreational marijuana for adults, I understand that the vote does not translate to a vote to authorize cannabis-related operations within our community. However, it does suggest that the majority would support a thoughtfully regulated, permitted use within our community, and that is what we are trying to achieve. There have been no final decisions made. The mayor and council members have cast no votes and will continue to consider it all. The ordinance will be drafted over the next several days and placed on the agenda for introduction at an upcoming meeting. Stay tuned. I will make sure to shine a light on the process so that you are informed. Below is a link to the state League of Municipalities website to better understand the issue and have some of your questions answered. It is a great resource and should be reviewed before opinions are expressed. Facts are critical to a productive community conversation! njlm.org/969/ Cannabis-Legalization.
