COMWELL CARE - FOR PEOPLE AND THE ENVIRONMENT At Comwell, we care about people and the environment. For that reason, we are dedicated to making sustainability a focal point in our business. We work with sustainability at all of our hotels and in all our processes. We do so, because we want to become a better version of who we are. Our sustainable transition has begun, but the journey is long and we have just started. The vision is to be our guests, employees and business partner’s preferred sustainable hotel chain.
RESPONSIBILITY, FOCUS AND KNOWLEDGE Our approach to sustainability is based on three important parameters: 1. We take responsibility for our consumption of resources, and we minimize and reuse as much as possible 2. We focus on creating balance and taking people and the environment into consideration every day 3. We gain new knowledge and competencies to achieve a sustainable transition without compromising the good experience. In this folder, you can read about how we work with sustainability in Comwell and which goals, we strive to achieve within the next few years.
FOOD & BEVERAGE POLICY Our policy regarding food and beverage is crucial for our sustainable transition. For that reason, we prioritise: • Organic Danish ingredients in season • Fish and shellfish caught in Danish waters • Organic beverages In addition, we focus on: • Animal welfare and avoiding endangered fish species that are endangered • Setting new standards and working closer with our suppliers • Partnership with our supplier of organic pigs and free-range cattle from the Danish countryside.
KITCHEN In the kitchen, we have implemented a number of initiatives and set up goals for our future work: • All our hotels now have the Danish organic label in bronze • We have the REFOOD label, where we are committed to following three self-chosen initiatives that fight food waste • Ambassadors from each kitchen have completed an education as Food Coordinator at Copenhagen Hospitality College to learn how to make better utilize ingredients • We will increase the amount of greens and use less, but better meat • We will bake, preserve and prepare more ingredients ourselves.
THE DANISH ORGANIC LABEL The Danish organic label is owned by the state and made for eateries. The label comes in three different variations; gold, silver and bronze depending on the organic percentage. All of our hotels have the Danish organic label in bronze. This means that 30-60% of all purchased ingredients and beverages are organic. We believe that the Danish organic label will improve both the quality and taste in our restaurants.

THE REFOOD LABEL The REFFOD label is based on trust. It’s for companies and organisations in the food and service industry, who actively fight against waste of food and for recycling. In order to be a member, you have to recycle and commit to three initiatives that reduce the waste of food. In Comwell we believe it sends a powerful signal that all of our hotels commit to follow the REFOOD label. By doing so, we support the vision of a sustainable food and service industry with less waste of resources and more recycling.
RESTAURANT AND BAR When setting the table for dinners and parties, we specifically focus on the following: • Offer organic beverages • Reduce the use of disposable tableware • Minimise the use of tablecloths • Ensure eco-friendly wash of tablecloths, linen napkins, uniforms and so on • Our suppliers of porcelain, tableware, candles and napkins have an eco-friendly profile • Tell about our sustainable transition and how it impacts the menus and buffet. Furthermore, ambassadors from each restaurant have completed an education in sustainability at Copenhagen Hospitality College.
SPA Our four spa hotels* pay great attention to the products they use for treatments. We use sustainable products without parabens, with natural essential oils and up to 70% organics. We are of course considerate about allergies. Furthermore, we will be focusing on our use of robes and towels, and we will be using soy candles with The Nordic Eco-label instead of scented candles and fragrance sticks. * Comwell Kellers Park, Comwell Borupgaard, Comwell Korsør and Varbergs Kusthotell (SE)
HOUSEKEEPING When it comes to housekeeping, we also pay attention to our guests, employees and the environment. We strive to use fragrance-free products to wash linen, duvets, pillows and towels, and we work towards offering toiletries with The Nordic Eco-label. Over the next 3 years, we will ensure that the products we use for cleaning also have The Nordic Eco-label. In order to get there, we place new demands on the suppliers that we work with now and in the future.
WASTE DISPOSAL AND REDUCTION The potential for sorting and minimising waste is high. We want to increase our recycling efforts to place less strain on the environment. For that reason, all of our hotels have a Daka ReFood solution, where organic waste and frying oil are being gathered and reused to biogas and other second generation biodiesel products. Sorting bottles and garbage is also an area of focus at our hotels.
ELECTRICITY, WATER AND HEAT The last 5 years, our hotels have reduced electricity, water and heat consumption with more than 20% in total. In the future, the goal is to reduce with an additional 2% every year. In order to do so, we will focus on the following: • Indoor environment, energy use and resource consumption • Improve collaboration regarding energy consulting with EWII (former TREFOR) • Switch to low-energy light sources • Optimise heat control • Better isolation • Regulate and reduce our water consumption • Choose the right material for new constructions and renovations.
ALL THE REST Comwell’s focus on sustainability also includes our reception and conference departments. Here we will: • Purchase eco-friendly office supplies, when possible • Phase out standard paper and use recyclable and biode- gradable paper types instead • Reduce the volume of printed material and use digital solutions to a greater extent • Select recyclable and biodegradable paper and print types for our few printed materials • Focus on an eco-friendly profile in all interior design and choice of furniture and fixtures.
THE GREEN KEY LABEL All of our hotels have the Green Key label. Green Key is the international eco-label for tourism. It is given to companies in the hospitality industry, who are doing something extra to protect the environment. The label shows that Comwell meets a number of relevant environmental requirements across the entire hotel operation. The requirements include everything from energy, water and housekeeping to organic ingredients, which we are required to document and are regularly audited.
SOCIAL RESPONSIBILITY Comwell’s focus on sustainability is part of our Corporate Social Responsibility (CSR) strategy. CSR is a big part of our everyday life in Comwell. We prioritise: • Educating, developing and taking good care of each other • Shared responsibility for those in society, who are outside the labour market, have disabilities and refugees • Create a transparent value chain by telling what we do and who we collaborate with • Ensure a proper and sustainable working environment – mentally and physically • Educate all groups of employees to create a sustainable transition throughout the organisation • Prevent occupational injuries and nearby accidents • Offer good, nutritious food and beverages • Maintain and develop common policies and procedures for a sustainable working environment in all of our hotels • Ensure diversity in senior management, so the under represented gender represents a minimum of 33%.
