(Montblanc M) RED Sketchbook

Inspired and empowered —— The new (Montblanc M) RED collection has been designed to assist in the fight against AIDS

For more than 110 years, Montblanc has been creating f ine writing instruments that have a special meaning for their owners. This longstanding tradition continues with the new (Montblanc M) RED collection, which was not only been created by one of the most influential designers in the world, but also supports an incredibly worthy cause. Partnering with the non-profit organisation (RED), which fights for a world without AIDS, a portion of the proceeds from the purchase of any (Montblanc M) RED product goes directly to the Global Fund, which was specially created to see an end to the world’s AIDS, tuberculosis and malaria epidemics. Tasked with crafting this unique collection was designer Marc Newson, known for continuously pushing boundaries with unexpected cuttingedge designs and high-performing products.

The result is the (Montblanc M) RED writing instrument, which pairs the visionary designer’s trademark biomorphic style, defined by fluid and pure organic forms, with Montblanc’s iconic design cues. Available as a fountain pen, rollerball or ballpoint, the collection is accompanied by several red accessories, including a leather sketchbook, bracelet and a pair of cuff links. Newson has not only made a statement with his bold colour choice, but his unique design features a f lat section (a plateau) on the barrel, which is an immediate departure from the typical round design of a pen. There is also the ingenious use of a magnet that allows the perfect alignment of the clip and plateau when affixing the cap to the barrel, while an additional snap closure ensures the cap remains firmly in place. For an optimal writing experience, the platinum-coated metal forepart balances the weight of the writing instrument, while the 14-karat gold nib of the pen boasts a ruthenium-coated inlay. Montblanc has also introduced a sketchbook in red Italian calfskin with red cut edges and a bracelet in woven red leather that features a stainless steel closing decorated with a polished and brushed matte motif of Montblanc’s iconic three rings. There is also a pair of round stainless steel cuff links with a red lacquered inlay. All of the products in the (Montblanc M) RED collection will help (RED)’s fight against AIDS, with the contribution from every purchase providing more than 25 days of life-saving HIV medication.

Grand designs ——

Home to some of the world’s most advanced architecture, the UAE’s towering skyscrapers and iconic cultural attractions are a feat of ingenuity and engineering

The transformation of the UAE from a desert oasis to a thriving metropolitan hub has impressed the world, not only due to the sheer speed it took place at but also thanks to the innovation required. Nowhere is this more evident than in the emirate’s architecture. The transition began in 1979 with the opening of Sheikh Rashid Tower. The 39-storey structure was the country’s first skyscraper, towering above the low-rise buildings that peppered the landscape. Designed by British architect John Harris, its modern concrete-clad design helped attract multinational companies and it quickly became an iconic structure to those living in the emirates. Such was its importance that an image of the building was added to the 100-dirham banknote, which it still adorns today. However, it would take a further 20 years before another piece of architecture would make such an impact. In late 1999, work on Burj Al Arab Jumeirah would be completed and the exclusive hotel would open its doors. Designed to resemble the sail of a ship and standing at 210 metres, it helped put Dubai on the map and to this day remains one of the most recognisable buildings in the world. Resting on an artificial island that took three years to construct, the striking hotel contains more than 9,000 tons of steel, boasting 28 double-storey floors and housing a 180-metre-tall atrium that perfectly showcases the unique design of the building. An instant attraction, not only did it garner worldwide attention but it also sparked decades of intense developmemt as the country looked to push the boundaries. Completed in December 2007, following 11 years of construction, Sheikh Zayed Grand Mosque showed that the UAE could also impress when tackling Indo-Islamic architecture. Designed by Yousef Abdelky, the Syrian architect was inspired by the Abu al-Abbas al-Mursi Mosque in Egypt and the Badshahi Mosque in Pakistan, creating an exquisite structure with striking domes, wide archways and towering minarets. Now one of the most popular tourist attractions in Abu Dhabi, the interiors of the mosque are equally as striking as the exterior. The 96 columns located inside the main prayer hall are clad in marble and inlaid with mother of pearl, one of the few places in the world where this craftsmanship is on display. The courtyard is also remarkable, with its floral design stretching across 17,000 square metres, it’s considered to be the largest example of marble mosaic in the world.

Burj Khalifa

Cayan Tower

While the mosque was being constructed, there was a project in Dubai also taking inspiration from Islamic architecture. However, the final structure would be far more futuristic in its appearance. Designed by Skidmore, Owings and Merrill, Burj Khalifa would resemble the spiral minaret at the Great Mosque of Samarra in Iraq, with the tower starting from a wide base and decreasing in size as it stretched upward. Constructed in just six years, the towering skyscraper features a bundled tube design that was invented by Fazlur Rahman Khan, whose contributions to the design of tall buildings has had a profound impact on architecture and engineering. Soaring to a total height of 829.8 metres, and still holding the record as the tallest building in the world, this modern-day wonder showed why Dubai was rightly earning a reputation as a city where anything was possible. After Burj Khalifa was completed, a wave of high-rise building and superstructures began to appear throughout the emirates. However, there was always the propensity to step outside the box and create a truly memorable piece of architecture. In Dubai, perhaps the best example is Cayan Tower, a 75-storey build with a twist of 90 degrees. Designed by the same team behind Burj Khalifa, the twisting design was achieved by rotating each floor 1.2 degrees around a cylindrical elevator and service core. A remarkable feat of engineering, the residential tower was completed in 2013 and remains one of the most remarkable structures in a city teeming with skyscrapers. The capital also boasts several distinctive towers, including the notable Capital Gate building featuring an incline of 18 degrees. Known as the Leaning Tower of Abu Dhabi, it was able to achieve this gradient through a process known as pre-cambering, which allows floor plates to be stacked vertically up to the 12th storey and staggered one over another. Opened in 2011, it remains one of the most unique buildings in the emirate.

Dubai Frame

A R C H I T E C T U R E / C A N VA S

In more recent years the focus has moved away from skyscrapers, with some of the most significant pieces of architecture acting as cultural attractions. One of the most original concepts is the Dubai Frame, which opened on New Year’s Day in 2018. Located in Zabeel Park, it was positioned in such a way that the landmarks of modern Dubai would be framed from one side, while from the other, the older parts of the city would come into view. Standing 150 metres high and covered in 15,000 square metres of gold cladding, it is not just a dazzling architectural landmark, but also offers spectacular panoramic views across the city from within its 93-metre long bridge and showcases a vision of what the emirate will look like in the near future. Louvre Abu Dhabi is another cultural landmark that perfectly demonstrates the UAE’s willingness to embrace bold design. Conceived by acclaimed architect Jean Nouvel, the vast dome features star-shaped latticework that allows rays of sunlight to cast shadows across the white concrete building. Within the museum, the interiors are equally striking, thanks to the materials used, ranging from dark bronze to silvery marble. Since opening in 2017, the museum has earned a reputation as one of the most beautiful pieces of architecture in the region and proved that not all superstructures need to dominate the skyline. And while there are grand plans in place for more skyscrapers that are certain to astound, perhaps one of the most interesting projects under development in the UAE is the Museum of the Future in Dubai. Shaping up to be one of the world’s most complex structures, the lowlevel building, set to open next year, has been designed to look like an eye hollowed out in the middle. Featuring Arabic calligraphy inscribed on the building’s façade, the smooth exterior will be covered in 890 joint-free stainless steel and fibreglass panels, with the only horizontal surfaces in the building being the floors. A hugely ambitious project, it perfectly encapsulates how architecture in the emirates continues to evolve and inspire.

Culture club ——

Following more than a decade of restoration, Abu Dhabi’s beloved Qasr Al Hosn has reopened its doors. We speak to director Salama Al Shamsi to find out what’s now on offer at this historic landmark

What has the reopening of this cultural monument meant to you? “I have grown up alongside this historic fort and I am still in awe of this treasured symbol of Emirati cultural heritage. Qasr Al Hosn has been a major constant in a rapidly changing landscape, reflecting the many phases of Abu Dhabi’s growth, from the home of the ruling family to a seat of governance then a national archive. Now, after major conservation and renovation work to the structure, and the contribution of a number of teams from the Department of Culture and Tourism – Abu Dhabi (DCT Abu Dhabi), including architects, historians and archeologists, it stands as a living memorial of the nation and a narrator of the city’s history.”

“It stands as a living memorial of the nation and a narrator of the city’s history”

1/27/19 2:14 PM

Q A S R A L H O S N/ C A N VA S

During this extensive renovation process, what were some of the essential components and values from the original Qasr Al Hosn site that were carried forward? “Today, Qasr Al Hosn holds a new role – that of a museum, with exhibits and precious artefacts that tell the story of who we are and where we came from. The conservation management plan for Qasr al Hosn had prescribed that any repairs to its historic fabric use traditional materials and techniques. The conservation teams at DCT Abu Dhabi worked extensively over the past decade to maintain the originality of Qasr Al Hosn using materials such as palm trunks, palm fronds, coral, stone and mangrove poles to demonstrate traditional building techniques. In terms of historic values of the site, our aim is that Qasr Al Hosn remains a multipurpose and ever-changing space, watching over the city to both listen and retell its stories. After all, it was there that major debates occurred, leading to the union of the emirates in 1971.”

Salama Al Shamsi

Can you tell us more about the site and the permanent exhibition housed in the fort? “Qasr Al Hosn comprises two major buildings: the Inner Fort (originally constructed in 1795) and the Outer Palace (1939-45). Over the centuries, it has been home to the ruling family, the seat of government, a consultative council and a national archive. It’s part of a larger site – Al Hosn – that also includes the National Consultative Council building, the Cultural Foundation and the House of Artisans. The permanent displays and immersive experiences at the Inner Fort trace the history of Abu Dhabi through five major stops: the early settlement on Abu Dhabi Island, the move of the Bani Yas tribe from Liwa Oasis, Qasr Al Hosn as a home of dialogue and cultural expression, a new era of confidence with Sheikh Shakhbut bin Sultan Al Nahyan, and how Qasr Al Hosn became a symbol of the emirate with Sheikh Zayed bin Sultan Al Nahyan, the founding father of the United Arab Emirates. Visitors to the Outer Palace, will be able to go on a journey into the life of the men, women and children who lived and worked in the palace. From the time of Sheikh Shakhbut bin Sultan Al Nahyan, Qasr Al Hosn was both a working palace and a family home, its courtyards, corridors and rooms full of the sights and sounds of daily life. The exhibits invite visitors to step back in time to explore what life was like for the people of the palace.” Can you share more details of Qasr Al Hosn’s varied annual calendar of public events and workshops? “The Al Hosn site is a year-round destination for cultural discovery and extensive historical, archaeological and architectural research. From daily activations and demonstrations to traditional performances, visitors will have a chance to learn about traditional Emirati crafts such as Al Sadu (weaving), Tali (traditional embroidery) and Khoos (palm leaves weaving), while enjoying a slew of performances such as Al Ayyala (traditional musical performance) and Al Taghrooda (poetry). Additionally, we will be announcing a series of specialised tours highlighting major themes including: architecture, archaeology, history, anthropology and genealogy.” How would you suggest visitors plan out their day at Qasr Al Hosn? “Personally, I would start by spending the morning at Qasr Al Hosn fort, wandering through the palace and the historic watchtower. Then stroll through the landscape, marvelling at the water feature and the oasis inspired by the polygonal-patterned shapes of dried salt flats. Visitors can also check out the daily events such as falconry demonstrations. In the afternoon, head to the Cultural Foundation and take in the current exhibition, walk through the artists’ studios and enjoy the architecture. Finally, take part in one of the afternoon workshops, such as acrylic painting with a local artist, followed by an evening talk from a leading industry expert.”  qasralhosn.ae

And the beat goes on… ——— The hotly anticipated Emirates Airline Dubai Jazz Festival returns for its 17th edition with one of it’s most exciting line-ups yet

Snow Patrol

The Emirates Airline Dubai Jazz Festival has been making noise on the region’s music scene since its arrival back in 2003. But this year’s 17th edition is set to make the biggest impact yet. Taking place at Dubai Media City Amphitheatre from Wednesday, February 20, to Friday, February 22, the acts headlining the three-day event are Snow Patrol, punk band Jamiroquai and American singer-songwriter Alicia Keys. Originally an indie-pop group, Grammy-nominated Irish band Snow Patrol burst onto the music scene in the early 2000s, delighting fans with their major-label debut album, Final Straw, in 2002, which sold more than three million copies worldwide. But it was their next studio album, Eyes Open, released in 2006, and its hit single, Chasing Cars, that propelled the band to international fame. Topping the UK Albums Chart, it was the bestselling album of the year, selling more than six million copies worldwide.

Snow Patrol has played in the emirates before, back in 2012, when they headlined the Sandance music festival on Palm Jumeirah. Fans can expect performances of classic hit singles Run, Crack the Shutters and Chasing Cars, along with music from their seventh album, Wildness. On day two, British jazz-punk band Jamiroquai headline. Best known for their 1996 hit single Virtual Insanity, the group has sold more than 26 million albums worldwide and hold two Guinness World Records including bestselling funk album in history, thanks to its 1996 offering, Travelling Without Moving. On the festival’s last day, 15-time Grammy Awardwinning singer, songwriter, musician, producer, actress and New York Times bestselling author Alicia Keys headlines. Selling an incredible 30 million-plus albums to date, including Songs in A Minor, Keys is returning to the UAE for the first time since her sold-out show here in the emirates back in 2013.

Dubai Creek

On the move —— Get ready for an urban adventure as you bike, walk and glide your way through some of the most popular districts in Dubai Words by: Vineetha Menon

The city of Dubai dazzles by day and sparkles by night, with skyscrapers towering for attention and golden sand beaches beckoning. There’s so much to explore and while taxis are cheap and plentiful, many of the city’s best attractions can be discovered from alternative perspectives. Ditch the car and hop on the Dubai Metro, charter new waters by boat, tour the city on board the tram or cycle alongside spectacular desertscapes.

Dubai Marina

/ Making waves Visitors can embark on several water-based adventures while in Dubai. From the atmospheric AED1 journey aboard a traditional wooden abra as it crisscrosses its way along the waters of the Dubai Creek, to luxury yacht cruises that pull out all the stops with gourmet feasts and fine entertainment – it’s time to follow the wave. Interestingly, your journey doesn’t need to be confined to specific districts either, thanks to the Dubai Ferry. This unique form of public transport lets you cruise along from one seaside location to the next. Simply purchase your ticket at a nearby ferry station or use your Nol card. There are five main routes to choose from, with terminals at Al Ghubaiba, Dubai Canal and Dubai Marina Mall. Most people like to start at Dubai Marina Mall, enjoying water views of the dynamic district before making their way to Palm Jumeirah and alighting at Atlantis, The Palm. Another alternative route that’s a bit longer (over 30 kilometres) lets visitors begin their journey at the Al Ghubaiba station by Dubai Creek, before taking in sights of Dubai Canal and Dubai Marina. Stop at Downtown Dubai, which boasts a number of record-breaking attractions, including the world’s tallest tower, Burj Khalifa

/ Track star The Dubai Metro – an automated, driverless metro system – is easily one of the most affordable ways to get around the city. You’ll need to purchase a one-way ticket at the station or opt for a Nol card, which can be used across the emirate’s public transport network. We recommend booking Gold Class for the best seats. There are two main lines – the Red Line, which runs from Rashidiyah in the south to Jebel Ali in the north, and the Green Line that services the districts in Old Dubai, running from Al Qusais to the historic Dubai Creek. Heading north, start your journey at Emirates Towers and take in prime views of the city from the comfort of the metro’s cabins. You’ll want to stop at Downtown Dubai, which boasts a number of record-breaking attractions, including the world’s tallest tower, Burj Khalifa, and the world’s biggest shopping complex, The Dubai Mall. Business Bay station is another popular stop, thanks to the striking new Dubai Canal. This 3.2km long waterway winds its way from the creek all the way through Business Bay to the Arabian Gulf. It’s regarded as one of the city’s greatest urban transformations with the precinct boasting world-class hotels and strikingly designed pedestrian bridges that present unforgettable views. If you’ve got the time, stay on the Red Line as it presents even more postcard-worthy views. RE C OM M E N D E D S T OP S : Burj Khalifa/The Dubai Mall Station + Business Bay

/ Ride along While the historic neighbourhoods of old Dubai continue to thrive, there’s no denying the pull of ‘new Dubai’. Whether you’d like to spend the day walking alongside Dubai Marina’s skyscrapers or simply lounging in the sunshine at Jumeirah Beach Residences ( JBR), the Dubai Tram will take you there. Pick up a Nol card from the tram station, as this is the only way you’ll be able to pay for travel – children five and under can ride for free. The tram travels in a loop in one direction, around the JBR district and Dubai Marina, before heading to the Palm Jumeirah station and Al Sufouh area. If you’re short on time, hop off at JBR and make your way to The Beach. Aptly-named, this waterfront destination has it all with al fresco shopping and dining, cool water sports and play areas for both the young and young at heart. A short walk from here is the new Bluewaters Island development – home to yet more sun, sea and sand, as well as the soon-to-be-operational Ain Dubai, lauded as the world’s biggest Ferris wheel.

Get back on the tram and admire the glistening buildings of Jumeirah Lake Towers and Dubai Marina If you’d like to keep exploring, get back on the tram and admire the glistening buildings of Jumeirah Lake Towers and Dubai Marina, before alighting at Palm Jumeirah station. Here, you can catch the monorail for incredible views of this manmade island– shaped like a date palm, it stretches five kilometres into the Arabian Gulf and boasts some of the city’s finest luxury hotels. And, if you’d like to refuel, there are plenty of pit-stops in the area, including a variety of hotels, beachside cafés and restaurants. Man of the moment ——

There’s a new dawn at dunhill and we catch up with creative director Mark Weston to find out more about the British brand’s revolution in relevance

dunhill Spring/Summer 2019

dunhill Reflections campaign

Traditionally, the world of menswear has always been driven by a sense of timelessness and authenticity, often forgoing passing trends in favour of longevity. And it’s well known that dunhill London has always been one of those brands that wholly embraces this style philosophy. Today though, while this faithfulness to its overarching heritage remains, the legendary British brand is eager to infuse a more contemporary approach. It’s a change in direction that is being deftly driven by current creative director Mark Weston. Formerly senior vice president of menswear at Burberry, Weston is no stranger to the balancing act between traditional and fashionforward. Taking the helm in 2017, he presented his first collection in June of that year. Billed by the brand as “a new vision for dunhill”, the line-up offered a fresh outlook for Spring/Summer 2018. When touching on the various transitions dunhill has made since its establishment – recalling its early days as a purveyor of car accessories back in 1893 before becoming a tobacco titan and now a leading authority on luxury menswear – Weston expresses great enthusiasm for these many evolutions. “The thing is, with dunhill, it’s all there. The classicism of London, the environment of the stores, the automotive link, the leather, the tailoring – these are the foundation stones, the codes of what dunhill means. It’s exciting to look at how to manifest these things in accessories and clothing in a different way. “I am always thinking about what can be revisited and evolved, what we can build to be something bigger. It’s about continuity, an evolution where one element adds to another. In turn, one collection will essentially grow from another.” There have been some big changes at the brand of late, including the decision to move its runway shows to Paris – a bold choice considering the brand’s venerable British reputation. Although Weston is quick to assure label lovers that dunhill’s roots remain firmly linked to its London stomping grounds.

dunhill Spring/Summer 2019

“I am always thinking about what can be revisited and evolved” “The classicism of London is at the core of the brand. It is important that we show an idea of Britishness as it is something crucial to dunhill and the way we approach style here.” Diversity seems to be another big buzzword over at dunhill, with Weston revealing: “For me, it’s not about one guy, it’s more of an attitude. It’s about a quiet confidence, a maturity of mindset, a man who can appreciate quality and beautiful things. “For the brand, it’s important to create a visual vocabulary that corresponds to these different men and the different aspects of their lives. The dunhill man is multiple, not singular and likewise there is not a single way of being British, there are many. There is classicism and tradition, as well as an idea of the contemporary.” The idea of dunhill appealing to today’s ‘real’ man is something the creative director is keen to build on as he offers a more f luid exchange between classic and contemporary. “The notion of executive style is really important, alongside a sense of ease. Things should feel quite natural and real.” This multifaceted perspective was clearly illustrated in dunhill’s recent Autumn/Winter 2018 campaign, entitled Reflections. Championing a relaxed, sportier feel, the brand’s new shift in attitude shines through in the attention to detail – from fabrication to scale and proportion. With a distinctive nod towards styles of the late 70s

and early 80s, Weston reveals he paid tribute to this retro era as he considers it to be a time when “guys really cherished wearing clothes”. A similar multifaceted approach can be found in the brand’s current Spring/Summer 2019 collection, which, as Weston puts it, offers a present-day “focus on necessity”. “The collection is about embracing both precision and subversion, utility and elegance, while also building on quintessentially masculine codes”, he explains. Delving further into the details, he adds: “There’s a sense of formality, but shown in a contemporary way that will really resonate with the customer. The relaxed, wrapped tailoring infuses a new, sinuous elegance to notions of power dressing, while split hem trousers nod to an eighties casual code. Moiré silk, most often used in formal eveningwear, is used throughout the collection in both jackets and trousers and supplants technical fabrics.” Focusing on the future, Weston reveals he hopes to build on the dunhill family. “Creating a world that includes musicians, creatives and like-minded people is personally very important. To me, it’s about maintaining the heritage and sense of where the brand has come from, without restricting where we are going.” Discover more at the dunhill boutique in The Dubai Mall

Rado True Thinline Studs Limited Edition

Eye on the prize ——

Well known for its stylish good looks, Swiss watchmaker Rado is a market leader when it comes to design, drawing critical acclaim for its innovative timepieces the world over. And now it’s teaming up with young designers, offering them a platform to showcase their talent on an international stage. Explaining the collaboration process and approach, Matthias Breschan, CEO of Rado, says: “Whenever we work on a collaboration, we prefer that the designer is not from the watch industry and, preferably, has never worked in the watch industry before.” It was Rado’s search for designers that boast a unique quality in their work that led the watchmaker to Bethan Gray, an interior designer that works with furniture. This latest collaboration saw Gray’s signature work combining leather and studs incorporated into a timepiece. “If she makes a table, the side of it will be covered with leather and pinned by nails,” Breschan explains. “If you look at the watch [we made with Gray] you will see her signature design on the leather strap. And for the first time in the watch industry, we also did a marquetry on a stainless-steel dial.”

“This is the type of collaboration we love to do with designers”, he adds. Looking to emulate this success in the UAE, Rado has brought its Rado Star Prize to the emirates. Targeting up-and-coming designers, the competition calls for participants to submit their designs by May 15 to be able to get a chance of presenting them during Dubai Design Week in November, 2019. “The five competition finalists will present their projects at Dubai Design Week. For us it’s important to find good talent that’s coming up with fresh ideas,” Breschan explains. The overall winner will receive AED20,000 in prize money and a Rado watch. An additional public winner will be chosen by exhibition visitors and will receive a Rado watch. “Our presence in the UAE is already quite strong,” Breschan adds. “Working with the young and creative minds here will only help us improve and increase our authenticity and credibility in the region.”

Material possessions

In a bid to attract a younger clientele, Rado has introduced new technologies to its watchmaking. Its monobloc construction allows Rado to create watches made entirely out of ceramic in a single mould, resulting in ultra-light timepieces with thin proportions. It’s also increasingly adding more pigments to its basic ceramic powder to produce a diverse-looking collection that appeals to a wide-ranging customer base. And, thanks to the strong nature of ceramic, the watches are long-lasting too. “Ceramic retains its beauty, even after 10, 20 or 30 years, with the watch looking the same as the very first day it was purchased,” Matthias Breschan, CEO of Rado, explains. “It is incredible how far the watch industry has come. Who would have believed 40 years ago that we would be making watches out of ceramic or that it is possible to produce touch-controlled watches made from ceramic? “Rado will continue to push the boundaries of design and challenge what is currently possible in the world of watchmaking.” Breschan adds: “We believe these are the things that make the brand unique and interesting.”

Zaya Nurai Island's culinary director Marc Abed talks epicurean passions, island life and how he stays ahead of the game in the UAE’s bustling capital

Situated off the coast of Abu Dhabi’s Saadiyat Island, Zaya Nurai Island has more to offer than its slice-of-paradise vibe. Tucked away in different corners of the property are six dining venues, offering everything from Mexican cuisine to Levantine seafood, alongside splendid panoramas of the Arabian Gulf. Ensuring the scene is set for a memorable meal, talented chef Marc Abed takes to the kitchens to experiment with diverse flavours, crafting the perfect meal in the process. How did you discover your passion for cooking? “My grandfather was a renowned restaurateur in the 1960s and he passed down his legacy to his son. With a chef for a father, cooking was always a big part of my life. I loved spending time at the family restaurant, where I also enjoyed the privilege of witnessing all of the chefs in action. Dining together as a family was also a daily ritual that instilled in me a curiosity for the culinary arts.” How did your passion bring you to Zaya Nurai Island? “My travels around the world, as well as my work in Brazil, inspired me to create my own brand of food and the island presented just the opportunity for me to make a difference. Zaya Nurai Island’s culinary philosophy also appeals to me. It’s all about a zest for life, as well as absolute harmony.”

How does working on one of the world’s most exotic islands influence your craft? “The island fills me with positive vibes and provides a sense of relaxation. The serenity and natural beauty of this place serve as a constant source of inspiration. It feels like a mix of being on vacation and at work. I spent my first two years at the hotel living on the island, which was great as it allowed me to establish a well-structured department from scratch. After that, I decided to relocate to the city in order to keep a closer eye on food trends dominating the capital’s dining scene. But the plus side to living in the city definitely has to be that I get to ride a speedboat to work every day.” Can you walk us through a typical day on the island? “As culinary director, I start my day visiting all the outlets and ensuring that the kitchens are functional. This includes making sure that the products are properly purchased as per my requirements. I believe that the key to success is the happiness and comfort of my team. That is why I spend a considerable amount of time communicating with them. I also like to use my spare time to research and create new recipes, as well as experimenting with new ideas, to keep up with the UAE’s highly competitive market.”

Which restaurant is your favourite on the island? “It’s Frangipani. The venue is an international restaurant where I have the chance to serve a sample dish from every culture I have experienced. In fact, I recently took a trip to Japan and earned a Professional Edo Sushi Certificate, which helped me apply time-tested techniques and introduce sushi to Frangipani. And among all the dishes available here, I have a special fondness for ‘gunkan’, a type of sushi featuring an explosion of flavours that balance Japanese and French hints. I always recommend the dish to every guest.” Seafood barbecue

What do you love the most about working in the UAE and cooking for a multicultural audience? “For me, food is the best ambassador of cultures. And the UAE is a melting pot that contains a colourful diversity of people. I truly enjoy introducing my guests to different cultures with my palate of international flavours.” Are there any culinary techniques you swear by? “Profound product knowledge and a respect for classic culinary techniques is always the way to go.” Any go-to dish at the end of every work day? “Nothing beats the comforting taste of a buttery toasted sandwich with cheese and goose ham.” For reservations

Feast for the senses —— With its striking décor and array of flavoursome dishes, Mekong delivers on its promise to take diners on a culinary journey through southeast Asia

Mekong

Karma Kafé

Throughout the UAE there is no shortage of restaurants that focus on the various cuisines found within Asia. The vast continent is home to a staggering amount of ingredients, while the many cultures each have their own unique take on gastronomy. With so many flavours and styles to choose from, there can often be a sense of culinary confusion. Fortunately, this is far from the case at Mekong, the signature venue at Anantara the Palm Dubai Resort. Located on the east crescent of the iconic Palm Jumeirah, the restaurant sits in its own building at the very front of the spacious resort. And from the moment you arrive, every element has been designed to make you feel as though you’ve been transported to the Far East. The roof is unmistakably Thai, with its colourful enamel tiles, while the red elephants that adorn the facades and tuk-tuk that sits outside the entrance instantly remind us of our backpacking adventures through southeast Asia. Within the restaurant the interiors are equally as striking. There are intricate prints on the walls, colourful umbrellas, folding screens and lanterns, and even rickshaw-style seats on the terrace. Clearly a lot of effort has gone into the look and feel of the restaurant and it immediately pays dividends.

Mekong chefs in action

Taking a look at the menu, once we’ve settled at our table, it immediately becomes apparent that there is a variety of cuisines on offer. While the focus remains largely on Thai food, there are also recipes from China and Vietnam – these can be easily identified thanks to the countries’ flags appearing next to each dish. With so much to choose from, the menu is separated into several categories, from cold appetisers and homemade dim sum to seafood mains and signature noodles.

While the focus remains largely on Thai food, there are also recipes from China and Vietnam We decide to begin the evening with the Mekong sharing platter, boasting a selection of several starters. The appetizers are mainly from Vietnam and Thailand – think highlights of duck spring rolls, chicken satay, pomelo salad, crispy dried beef and grilled squid. Despite there being two of each item, it is far from heavy as each item proves to be the perfection combination of light and vibrant flavours. When it came to selecting the main courses, we rely on our knowledgeable server who is more than happy to oblige. In the end we choose the Beijing half roasted duck and the beef short ribs, both are served with jasmine rice and Thai black rice, which not only looks striking on the plate but has a mild, earthy flavour. The dishes were all well presented, with the ribs served sitting on top of the bone and the duck perfectly carved to provide a selection of dark meat and crispy skin. The ribs are wonderfully tender and

Mekong mist

The restaurant truly delivers an authentic taste of Asia simply fall apart with the fork, while the Chinese preserves rubbed into the meat provides a mix of spice and citrus flavours. The duck is also expertly cooked and the addition of Chinese buns provide a welcome alternative to the usual egg pancakes. It also makes this a hugely substantial meal that’s perfect for sharing. Despite feeling more than satisfied, we are convinced to try the dessert menu and opt for the signature Mekong mist and the newly added coconut and palm sugar custard. Described on the menu as ‘sweet temptations’, these dishes prove they can satisfy any sweet tooth. The Mekong mist is a refreshing affair, with coconut ice-cream, mini fruits, mango sabayon and toasted coconut all combining to produce a light dessert that packs plenty of punch. However, a personal favourite is the immensely flavoursome combination of coconut and palm sugar that proves incredibly indulgent. Smooth, creamy and with just the right amount of sweetness, it is a memorable end to a high-class meal. Mekong proudly claims that diners can journey through the flavours of Thailand, China and Vietnam when they visit the restaurant, and that is precisely what we discovered. With traditional ingredients and classic cooking techniques, the restaurant truly delivers an authentic taste of Asia.

The award-winning spatial designer tells us what she loves the most about living in Dubai This year, I am celebrating 10 years living and working in Dubai, which is an amazing milestone. Over the past decade, Dubai has come to feel like home and I’m grateful because this city has given me the opportunity to start my own business as a spatial design consultant. In fact, Dubai’s contrasting personality serves as a major source of inspiration for my work. You can wander around Naif, Karama and Deira to soak in the city’s historic charm and at the other end of the emirate, you get to embrace its modern architecture and be in awe of the latest record-breaking attractions. When work doesn’t keep me too busy, I enjoy spending time with friends, exploring different parts of the UAE. We just get into the car and see where the road takes us. Sir Bani Yas Island is an absolute dream to visit, thanks to its rustic setting and the exotic wildlife we encountered. I also love Sharjah. It has so much to offer as the Heart of Sharjah development continues. There’s the newly opened Al Bait Hotel as well as the Sharjah Art Foundation, which hosts interesting exhibitions throughout the year, a real treat for art aficionados. For a dose of history, Mleiha Archaeological Centre offers memorable desert experiences with stargazing and camping among the dunes. There’s also The Rain Room – a real marvel that allows you to walk through a continuous downpour of rain without getting wet. During winter, I love heading to Alserkal Avenue for the amazing events hosted there, like the Quoz Arts Fest. In fact, I always recommend a trip here to friends and family who visit along with Jameel Arts Centre, Port Rashid and Kite Beach. When it comes to dining out, I enjoy visiting Project Chaiwala at Cinema Akil for the vibe and of course, the tea. Pastryology at Port Rashid is also a great place to try for the views over the harbour and the incredible array of sweet treats.  majakozel.com
