Hello Spring is here and it’s time to come out of hibernation and get moving again! We have an abundance of activities and events in the What’s On pages to make the most of this lovely time of year. Once again, the Jane’s Walk weekend event, is literally taking centre stage and offering up a great variety of guided walks in and around Colchester. Nine of their walks connect directly with the Colchester Orbital, a recently created 15 mile walk and cycle route around town. As part of the event, there will also be a street photography exhibition at 37 Queen St and films showing at Firstsite and the Minories. All details can be found in our centre pages. On the subject of walking, there’s also the St Helena’s Midnight Walk taking place on the 11th May, I’m sure your support would be greatly appreciated.

Aldham-based broadband specialist announces £46million investment Following a £46m investment from Aviva Investors, County Broadband - based in Aldham - is commencing the roll out of its ultrafast full fibre broadband network across villages in the East of England, providing a major boost to under-served rural communities and businesses. Many rural communities still suffer from so-called ‘broadband black spots’ due to old copper-wire infrastructures dating back to Victorian times. Research* also shows two thirds of customers who have existing so called ‘fibre services’ are not full fibre at all, but arrive to their home through standard copper telephone lines – significantly affecting speeds, reliability and the ability to upgrade to meet future requirements. In contrast, County Broadband’s high-tech ‘Fibre-ToThe-Premises’ (FTTP) network delivers ultrafast internet speeds of up to 1,000 megabits per second (Mbps) directly into some of the most difficult-to-reach homes and businesses – at more than 20 times faster than the UK average. The construction of this entirely new network is supported by a commitment from Aviva Investors which means the company’s expansion is not dependent upon public funds or from any financial contributions from home or business owners. Lloyd Felton, CEO at County Broadband, said the investment will help support economic growth throughout East Anglia and improve residents’ quality of life. “Since securing the investment, we have been identifying target areas,” he said. “Many premises might have access to broadband, but the ultrafast speeds that we will all soon need are only available to around 6% of the UK. Household usage and data consumption is already predicted to increase 10-fold every six years and only ultrafast solutions will match this requirement.” Based in Aldham, Essex, County Broadband is an established internet service provider in East Anglia. The company is doubling its workforce over the next few months and is in the process of securing work for many local contractors. The company has already deployed a successful all-fibre Gigabit network in Broughton, Cambridgeshire, and already supports over 3,000 homes and businesses with its wireless-based broadband services in the region. “Our goal is to provide a world-class, future proof infrastructure which will deliver ultrafast broadband speeds of 1,000Mbps now and even faster speeds in

future as well as providing additional services such as telephony, home security and access to the vital services that the local authorities and health services plan for online access in the coming years.” Mr Felton said. “Aviva Investors recognise the vital need for future proof fibre infrastructure and their funding supports our strategy to service more than 30,000 homes and businesses in the region.” As part of the roll-out programme, County Broadband is hosting a series of village meetings. These events provide an opportunity to meet the County Broadband team and find out more about the new network. Amid growing numbers of services being delivered online, industry experts are highlighting the need for ultrafast broadband speeds to allow for quicker downloads and uninterrupted streaming and eliminating problems when family members simultaneously use the internet. Ultrafast broadband speeds are also necessary for seamless access to services such as online radio, video on-demand and catch-up TV at the same time, while fibre’s faster upload speeds are more convenient when sharing photos online or making video calls. Many businesses will also need the ultrafast broadband fibre provides to benefit from evolving business applications. County Broadband are offering residents and businesses a free connection** by pre-ordering their ultrafast broadband. With over 16 years’ experience, County Broadband was originally established as a Wireless Internet Service Provider (WISP), specialising in the provision of wireless broadband networks and services to difficult-to-reach places, especially in rural areas. ** Free connection worth £225, monthly subscription charges apply.

colour changes. Alternatively use patterned wallpaper, all over or just on a feature wall. Or opt for a wall-sized mural of, for example, a wooded glade, tropical palms, a cityscape, oversized flowers or a starry night sky.

The Modern Bedroom

Does your bedroom look a little dated, or is it brimming with contemporary style? We outline some quick and easy ways in which to give it a brand new look. Your bedroom is your own personal space, and the ideal room in which to express your personality, so why not consider a top-to-toe makeover? A pop of colour Bold colours are on trend this spring, often quite dark and moody, and where better than a bedroom to go for this dark décor? Use fuchsia, turquoise, emerald, orange, mustard or deep

blue in arresting combinations or perhaps just cover one wall with a strong shade. Even the addition of a bright headboard, rug, throw or group of cushions can make a difference. If that’s beyond your budget, consider sanding back your floorboards and either varnishing or painting them, then adding a rug or two in a bold, modern style. Lights fantastic Lighting should be subtle and flattering. Make it adaptable with table or floor lamps in corners and fitting a dimmer switch to the central pendant. Choose warm white, energysaving LED bulbs that are not overly bright. For bedside reading, a pair of swing-arm, wall-mounted lights frees up bedside table space, or hang a bare filament bulb from a coloured cotton flex suspended from the ceiling or a wallmounted bracket. Apricot & Orange Cheesecakes Finish o a meal with these creamy individual fruity cheesecakes. You can make them a day in advance.

Ready in: 40 minutes, plus chilling | Makes 4

Ingredients 125g digestive biscuits, crushed 40g unsalted butter, melted Zest and juice of a small orange 2 tsp powdered gelatine 250g full-fat soft cheese 25g caster sugar 200ml double cream, softly whipped FOR THE TOPPING 200g dried apricots, chopped 150ml orange juice

Place four 9cm ring moulds on a baking tray lined with baking paper (see tip). Mix together the crushed biscuits and butter and divide between the ring moulds, pressing down firmly with the back of a teaspoon. Chill for 30 minutes. Place the orange juice in a small heatproof bowl and sprinkle over the gelatine. Microwave on the high setting for 30 seconds then stir until the gelatine has dissolved. Cool for 5 minutes. Place the soft cheese in a bowl and beat in the orange zest and caster sugar until smooth. Gently fold in the cooled liquid gelatine followed by the whipped cream. Spoon into the moulds and level the surface. Chill for 3-4 hours. To make the topping, place the apricots and orange juice in a small pan and simmer for 5-10 minutes until the apricots are softened and nearly all the liquid has evaporated. Leave to cool, then process with a stick blender to make a smooth thick puree. Spread the apricot topping gently over the set cheesecakes and return to the fridge for at least 2 hours. To serve, run a knife around the edge of each mould and gently lift away. Serve decorated with sliced apricots, berries and mint sprigs.

Notice Board Stanway Swim Club Shines at County Championships

21 swimmers from Stanway Swim Club (SSC) qualified for the County Championships this year, out of a total of almost 40 competitive swimmers at the club. The Essex County Swimming Championships took place over three weekends in January and February and SSC achieved 22 points, beating several bigger clubs in the process. Swimming sessions take place every weeknight at First Strokes Swimming Schools, Stanway. On alternate Saturdays the club heads to Woolverstone Hall, outside of Ipswich, for a two-hour session. The fitness levels of all the swimmers helps to support many of them in other sporting endeavours as several swimmers also compete in athletics, netball, football, triathlon, equestrian events, and more. SSC is currently conducting trials for new swimmers. Swimming with babies and little ones … For some people the thought of introducing their baby or young toddler to a swimming pool for the first time can be a bit daunting. With the right support and in the right environment, swimming with babies and little ones can be a really rewarding and bonding experience and can provide first steps to helping them become confident in the water. Adult and child swimming lessons can really help. As well as the babies and littles ones developing strength and coordination, social and listening skills, the accompanying adult gains confidence and new skills too. The water-based teachers pass on ageappropriate teaching practices during the lesson. The main emphasis is to have fun and build water confidence through play and fun activities. The lessons also cover basic water safety practices and submersion and prepare the children to move around the pool independently.

Chicken & Rice Burritos Make these quick and easy wrap for on-the-go lunch or supper. Wrap tightly in foil to transport.

Ready in: 30 minutes | Makes 4

Ingredients 1 tbsp olive oil 1 onion, peeled and finely chopped 2 garlic cloves, peeled and crushed 100g easy-cook long grain rice, boiled, drained and cooled (see tip) 2 tsp chilli powder 350g chicken breast fillet, thinly sliced Half a red pepper, deseeded and thinly sliced Half a green pepper, deseeded and thinly sliced 4 large flour tortillas 4 tbsp tomato salsa

Heat the oil in a large non-stick frying pan over a medium heat and fry the onion and garlic for 5 minutes until softened. Add the rice and chilli powder and stir-fry over a medium heat for 2-3 minutes. Meanwhile, heat a cast-iron griddle pan over a high heat. Add the chicken and cook for 3-4 minutes, turning once until the chicken is seared and cook through. Add the peppers to the pan after 2 minutes and cook till soft. Cut the cooked chicken into thin strips and stir into the rice mixture with the peppers. Season to taste with salt and freshly ground black pepper. Warm the tortillas as directed on the packaging. Place a tortilla on a chopping board and spread with 1 tbsp of the salsa. Top with a quarter of the chicken and rice mixture. Fold in the sides towards the centre then roll up tightly to completely enclose the filling. Repeat with the remaining ingredients to make four burritos in total. Serve the burritos halved, with lime wedges.

Use a 250g pouch microwave Mexican style rice instead of cooked long grain rice. Add to the pan with 2 tbsp water and stir-fry until piping hot. Please mention The Connection when responding to adverts


Country Mutters As ye sow, so shall ye reap....

So why is it that all of a sudden everyone has to begin a sentence with the word ‘so’? Like, it was bad enough when every sentence contained at least one like. When you’re forced to listen to someone telling a story along the lines of: ‘He was like, what did you do that for? And I was like, because I wanted to and he was like, I can’t believe you did that and I was like, well I just did,’ it doesn’t take very long before you’re calculating the fastest way to extricate yourself from the conversation before you have to give in to an overwhelming urge to commit an act of violence. But ‘so’ is infinitely worse because it seems to have been adopted by 90% of the population. What kind of insidious verbal osmosis has taken place right under our noses? I was taught that the ‘s’ word comes in the middle of a sentence, as in: I couldn’t find the right word so I consulted a dictionary. My boss used to materialize at my elbow and announce, ‘So I wanted to talk to you about that email you sent.’ Apart from a slight internal panic wondering if I’d accidentally copied her into something scurrilous, all I could think of was how I’d missed the beginning of that sentence. Of course, when I asked a question and the response began, ‘So…’ I realised what was going on. ‘So’ is an opening gambit, a way of easing into a statement gently in case you alarm someone by just going for it. It has become an irritating verbal tic which you hear approximately 2,000 times a day. It’s

also infuriating because it implies there’s a lot more going on in someone’s head which they are (a) too busy, (b) too important or (c) too lazy to explain so they’re only going to give you the punchline. So suck it up. If you really need to preface everything you say, what’s wrong with a good old fashioned ‘er’ or possibly ‘erm’? Both forms are very polite and you can customise the intonation to make it sound like you’re having deep thoughts and considering every angle before responding to a question, as in, ‘Er, I think I’ll have the chocolate biscuit, thank you very much.’ It’s so much less annoying and you can still use it to make sure you don’t startle your colleagues if you have a habit of approaching them from behind. But after due consideration, I think I’m going to bring back ‘I say’ – it’s far more elegant, can be used in front of any sentence and most importantly makes you sound like a character from a PG Wodehouse story, which can never be a bad thing. It announces your presence, makes people sit up and listen and lends authority to any rubbish you’re about to spout. Just imagine the difference it would make to the office environment: ‘I say – what about that email, dash it all, what?’ A vast improvement, and surely no one would get tired of hearing that 2,000 times a day. I say, do join me in making this happen, won’t you?

proper horticultural grit and mix about one-part grit in with three parts compost. Positioning the plants properly within the container is important. The plants will get bigger, so allow them room to grow, but – as you’ll be constantly trimming them throughout the growing season – planting a little closer than the plant label suggests should be fine! If you include a trailing or prostrate form of herb, it helps to position it close to the edge so it can cascade downwards. I also suggest you hide the labels around the edges of the pot, just beneath the soil, for later reference.

Heavenly Herbs I’ve always liked to grow herbs in pots – they look pretty, and ornamental variegated forms are available too. More importantly, they can be kept in any well-lit spot close to the house, ideal if your garden soil is wet and soggy, plus they are in easy reach if you fancy perking up the supper with some fresh, zingy herbs. If your life lacks a garden, then herbs in window boxes are perfect. Making a herb planter is easy and inexpensive, and the results should be long-lasting. You need a good-sized container – terracotta is ideal for these plants, many of which have Mediterranean origins. You also need some goodquality compost, some horticultural grit and (of course) your favourite herbs. A local nursery or garden centre should provide a fantastic array of herbs perfect for your

planter at this time of year. Some of my favourites include: variegated cream and green sage; ‘Tricolor’

If your life lacks a garden, then herbs in window boxes are perfect sage, which also has splashes of purple on its leaves; golden lemon thyme (with a great lemony flavour); prostrate rosemary; chives; and golden oregano. Choose herbs you enjoy eating but opt for pretty varieties where available. Good drainage is essential for a herb pot, so use broken crocks (such a smashed flower pots or kitchen crockery) laid loosely over the drainage hole(s) before you add compost and gravel. Always use

Once all the plants are in position, fill in all the gaps between the root balls and around the edges of the container with the compost and grit mixture, firming it in as you go. Next, top dress the compost with grit, which helps to keep drainage good around the plant crowns, makes the planter look better and helps discourage weeds and pests. Next, water the pot well, top up the grit layer if necessary, and stand your pot in a sheltered spot close to the house door or on your balcony or patio so it is easily accessible. If you find you’re not eating the foliage fast enough, you can freeze chopped herbs in ice cube trays with a little water for use later in the year when growth is slower.
