I hope you’re all enjoying the Summer so far. We’ve certainly had very nice weather. As I write this letter I’m looking at a forlorn and parched patch of garden. Hopefully by the time you get this we will have had some rain and our gardens will all be recovering! This issue has all the usual regular features including recipes, book reviews, gardening and puzzles. What’s On features many local events including amongst other things, flower festivals, fetes, village shows, coach outings and boot sales. There a few events featured that might interest the children too during the school holidays. In the Notice Board section you will see a call out for volunteers to help in the Halstead branch of the East Anglian Children’s Hospice shop. If you think this might be just for you, why not give them a call. On page 28 there’s an article about diversification on farms. We had a chat with the younger generation of farmers who are looking to diversify to keep their farms viable and to secure their future.

By Katherine Sorrell Tiles come in a great variety of colours and patterns, and can be sleek and machine-made or rustic and hand-made, shiny and glazed or matt and unglazed, smooth or textured, or digitally printed with your own designs. They are ideal for bathrooms, showers and behind kitchen worktops, but are also great for hallways, conservatories, laundry rooms, utility rooms and possibly even as part of a living area, too.

A plain white wall can show off a colourful collection or provide a counterpoint to patterned upholstery, while vibrant wallpaper can inject colour and create interest in a room. It’s all about context, and is as important as selecting colours, fabrics and furnishings. Transform a room with a fresh coat of paint on walls and woodwork, but buy sample pots and trial them on card first, to assess the colour’s appearance and finish in different areas and at different times of day. Alternatively, consider wallpaper, where choices include conventional machine-printed designs, natural woven fibres, light-reflecting metallic papers and waterproof vinyls. For something different, think about hand-finished papers featuring cut-work, stitching or appliqué, interactive papers that you can colour in or add stickers to, hand-blocked papers, threedimensional designs incorporating crystals, beading, sequins or tiny LED lights, digitally printed papers to your own design or magnetic wallpapers that work as a noticeboard. Rather than hang vertically all around a room, create a feature by papering just one wall, choose different colourways of the same pattern to use in different areas, hang wallpaper horizontally, or mix up the designs.

With imagination and ingenuity, almost any flat surface can provide an interesting decorative effect. Timber panelling insulates and can hide wonky walls and is a great insulator. A sheet of mirror reflects light around to make the room seem bigger, while sheets of plastic laminate or solid composite have potential and, being waterproof, are suitable for bathrooms. Paperbacked fabric is great for insulating against cold and noise – as is leather, which is luxurious and fire-retardant. Cork is warm, soft to the touch, ecofriendly, insulating and soundproofing, and comes in a range of colours, patterns and textures. Polished plaster or sheet metal are other options.
IDEAS FOR FEATURE WALLS • Transform your wall with peel-off stickers, with designs from simple shapes to complex illustrations. • Wallpaper with an oversized pattern and vivid colours makes a great focal point on just one wall. • Consider modern, graphic paint effects such as bold horizontal stripes or an ombré/dip dye look. • Large maps (old or new) are attractive and educational. Simply paste straight on to the wall. Try sheet music and wrapping paper, too. • Take any digital image and have it enlarged to cover an entire wall. Eye-poppingly gorgeous. • Use a variety of vintage wallpaper samples as a colourful collage. Combine with paint,

Sweet Recipe Berry & Chocolate Pavlovas These divine individual pavlovas are ideal for a summer dessert. You can make the meringues in advance then layer with fruit and cream a couple of hours before serving.
Ingredients: • 4 large egg whites • 225g caster sugar • 1 tsp cornflour • 1tsp white wine vinegar • 1 tsp vanilla extract • 500g fresh strawberries • 200g fresh raspberries • 25g icing sugar, sifted, plus extra to serve • 2 tsp lemon juice • 300ml double cream, softly whipped • 200g Greek yoghurt • Chocolate curls, to decorate
Makes 4 Ready in 2 hours
TIP
The unfilled meringues will keep in a an airtight container for 3-4 days.

1. Preheat the oven to 150°C, fan 130C, Gas Mark 1.
Line 2 large baking sheets with baking paper. Draw six 9 cm circles on each sheet of baking paper. Turn the paper over.
2. Using an electric food mixer whisk the egg whites in a clean grease-free bowl until stiff. Gradually whisk in the sugar, one tablespoon at a time, whisking well after each addition to make a firm and glossy meringue.
3. Blend the cornflour, vinegar and vanilla extract
together in a small bowl and fold into the meringue. Divide the meringue between the marked circles.
4. Bake for 45 minutes - 1 hour until the meringues are crisp and dry on the outside. Turn the oven off and leave them to cool completely in the oven with the door slightly open.
5. Hull and chop most of the strawberries (reserving
about 8 for decoration). Place in a food processor or blender with half the raspberries and pulse to make a thick puree. Transfer to a bowl and stir in the icing sugar and lemon juice. Fold the yogurt into the cream.
6. Carefully remove the meringues from the baking
paper. Sandwich the meringues together in stacks of three with cream and the fruit puree. Top with the reserved strawberries and remaining raspberries and decorate with chocolate curls. Dust with icing sugar just before serving.

Crab Parcels Makes 20
Ready in 40 minutes
These crisp filo pastry parcels with a crab and ginger filling make a tasty seafood starter for a special dinner or can be served as nibbles with refreshing drinks on a hot summer’s evening.
• 1 x 230g can crab meat, drained and flaked • 1 tsp grated fresh root ginger • 2 tbsp freshly chopped coriander • 2 spring onions, finely chopped
Cut the sheets of filo pastry into twenty 15cm squares. Take one square and brush lightly with water then top with a second pastry square. Place a spoonful of the crab mixture in the centre of the square. Brush the edges lightly with water and gather them together to enclose the filling and form a moneybag-shaped parcel.
• 8-10 sheets of filo pastry (see Tip)
Repeat with the rest of the pastry squares and filling to make 10 parcels in total. Half fill a large deep pan with vegetable oil and heat until a small piece of filo pastry dropped in the hot fat sizzles and browns in 20 seconds. Deep fry the parcels, in 2-3 batches, for 2-3 minutes until crisp and golden. Remove with a slotted spoon and drain on kitchen paper.

Serve warm with sweet chilli sauce for dipping and garnished with shredded spring onion.
• 1 tbsp lime juice • Freshly-ground black pepper
• 4 tbsp sweet chilli sauce • Shredded spring onion, to garnish

Mix the crab meat, ginger, coriander, chopped spring onions and lime juice in a bowl. Season lightly with freshly-ground black pepper.
TIP Filo pastry sheets can vary in size so you may
need a few more if they are small. Keep the squares covered with a clean damp cloth or kitchen paper when filling, to prevent the pastry drying and tearing.

There’s an app for everything these days, so of course there are plenty for improving your fitness, health and wellbeing. Here are nine popular apps to help you discover a healthier, happier you. FITnESS APPS PAID Daily Workouts This app’s 39 area-targeted 5-10minute workouts include stretch, Pilates and kettlebell exercises, which can be combined to create longer, whole-body workouts. There’s a timer and on-screen instructions, but you’ll need the internet to watch video demonstrations. There’s also a popular free version with just 10 workouts. FREE Couch to 5K Designed to get you off the couch and running 5 kilometres in 9 weeks, this NHS app builds you up gradually with a mix of running and walking. Celebrity trainers tell you when to run and when to walk, while a countdown timer shows how long you’ve got left on each run. HEALTH AnD WELLbEIng

Chill Panda This family-friendly NHS app can measure your heart rate and helps you develop an awareness of the relationship between your emotions, activities and body state, helping you learn what makes you feel better. Cute Chill Panda suggests activities suitable for your emotional and physical state. DIET AnD nUTRITIOn PAID Carbs and Cals This app contains over 3,500 photos of UK food and drink items along with their nutritional values. It includes a meal calculator, calendar, recipe
builder, exercise tracker, custom meal input facility and a special diabetes section to record blood glucose levels and carbohydrate intake. FREE Foodvisor The Foodvisor app claims to recognise your food from a photo of your plate, estimating serving sizes and providing a detailed nutrition report that’s added to your food diary. It can also track physical activities and calories burned, highlighting weak areas that need attention. My Fitness Pal This hugely popular app is a calorie counter, diet tracker and exercise tracker all in one. It can scan the barcodes of over 4 million foods and give you detailed nutrition information about them. It also suggests exercises, links to other exercise apps, logs your exercise and tracks your steps. With goalsetting, a recipe importer, a restaurant meal logger and the ability to add photos and share progress, this app really has everything. Using an app to improve your health and fitness may seem counter-intuitive, with the media issuing dire warnings about the effects of too much screen time. But used correctly, technology can motivate and educate us to eat more healthily and exercise, encouraging us to socialise through sharing our efforts with others. So why not give one of these apps a try?

Country Mutters Boxing Clever By Lady Muck This year, the ancient window box bolted onto the outside of my equally ancient shed, finally disintegrated completely. So I did some research online, found just the thing to replace it. A mere snip at £70 + postage. Ridiculous. So I decided to build one – how difficult can it be? I trot down to the DIY warehouse for some wood. A bit more expensive than I thought, but this will be a unique piece, after all. Now to cut the stuff to length. Where is the saw? As it turned out, the saw is right at the back of the shed guarded by unfeasibly large spiders that have to be screamed at and have things thrown at them. Then I discover it’s quite easy to cut wood but not necessarily to cut it square. I suspect this may cause issues further down the line. Now where is the electric screwdriver? We don’t have one. After a long discussion of what constitutes a man if he doesn’t even own an electric screwdriver, Husband says ‘My father never had one and he was an engineer.’ I point out Husband’s father had hands as hard as granite setts. ‘Rubbish’, scoffs Husband, ‘you’ll be fine. Did you get any screws because I haven’t got any’. We have further discussion of what constitutes a man if he doesn’t even own any screws. I trot back to the DIY warehouse. Husband hands over the screwdriver set I once put in his Christmas stocking. Good job one of us is practical, I think. That evening my

offspring have to unscrew the cap on the gin bottle, hampered as I am by the patchwork of sticking plasters on my hands. Next morning, after some googling I decide to face my construction with sticks wired together for a rustic look. I trot back to the DIY warehouse and come back with some copper wire. Looks nice, but it turns out that it takes quite a lot of sticks to cover a 2m long window box. I plunder every hedgerow in a 3 mile radius, get scratched and stung and on the way back I step on a rotting mole the feral beast has deliberately placed at the gate like a welcome mat. I spend a day wiring sticks together like someone doing serious therapy. We already have a staple gun, so that’s good but I realise I need some plastic sheet to line the box. I trot back to the DIY warehouse. I arrive home to find no staples in the staple gun. The discussion on what constitutes a man becomes rapidly heated. I cannot face the DIY warehouse man again so I drive to one 10 miles further away. I finally finish. It is dark. I have worked for 4 days, driven 80 miles, cut my hands to ribbons, spent considerably more than £70 + postage and have constructed a window box that looks OK if viewed from the right angle. It is also so over-engineered that it is more suitable for the containment of nuclear waste. Husband points out it’s so heavy that if I attach it to the outside of our shed the whole side wall may well fall off. ‘Rubbish’, I scoff. But I may just wait until Husband is out before I find out for sure.

Gardening Lethal Leatherjackets

Daddy-longlegs or crane-flies are starting to hatch out now as adults, but it is their young – known as leatherjackets – that really cause grief in gardens. If your lawn has yellowing patches on it or you’ve noticed it being ripped up in the last few weeks, chances are leatherjackets are to blame and it is likely that the problem will get a lot worse. Leatherjackets feed on grass roots (and can also cause problems in flowerbeds and vegetable plots) and this may cause the plants they attack to be weakened and even die back; worst of all, these juicy larvae are tasty snacks for animals such as crows, rooks, magpies, badgers or foxes. So if there are leatherjackets in your garden, these animals will search them out, ripping up your lawn or excavating beds and borders in the process. Lawns are usually worst affected and can be

What is the best way to check if you have them? Early in the evening, water a couple of the yellowed patches thoroughly and do the same with a ripped-up patch. Next, cover these areas in black polythene weighed down with a couple of bricks or similar. A double layer of black bin liners or an openedout plastic compost bag will work well. Next morning, lift the polythene and you’ll see the pests on the soil or lawn surface. So how do you know leatherjackets are to blame? Leatherjackets are greyishbrown, tubular, legless, up to about 4.5cm long and so nearly transparent that you can often see inside them, lunch and all. To remove more, repeat this black polythene trick and deposit the pests on the bird table as free and nutritious bird food. For a much quicker, easier and more thorough solution, use the biological control nematode ‘Nemasys
Leatherjacket Killer’. It is quick and easy to apply – I just use a watering can and water it onto the affected area shortly after I’ve seen the first daddy-longlegs and when soil conditions are right – usually late August to late October. As long as you keep the area moist for about three or four weeks, it works a treat – and is even safe if you have a dog, pet rabbit or other pets (or kids!) who use the lawn. So how can you get hold of this? There are two pack sizes available, suitable for standard lawns or those with a very large area to cover but you won’t find them in garden centres as they have a short shelf life. Diversification - the younger generation upping their game in the farming world. We are all aware of the pressures farmers face trying to make ends meet, but increasing numbers have found a solution by developing other income streams. According to recent figures released by Defra, almost two-thirds of farms in England have diversified into a non-agricultural business and the revenue from these is increasing year on year. In a third of these farms, the diversified business generated more than the core farming income itself. New ventures include restaurants, venues for music festivals, arts and crafts courses, children’s petting zoos and wellbeing centres. One Suffolk farmer even has a permanent WW1 trench system on his land for hire as a filming location. Foxes Farm Produce in Aldham is run by husband and wife team Guy and Emily French. Both having grown up on farms, they wanted to stay in the industry but also knew they had to innovate to make it work. Emily says, ‘Having spent our childhood outside playing in the fresh air we wanted to offer this opportunity to everyone so we decided to organise several events for members of the public to get involved, get outside and have fun on the farm’. So as well as growing pumpkins and Christmas trees, during August and September the couple will open the farm to the public to try out The Corn Maze and The Farm Mud Run. Families can get lost in the maze or have fun with traditional games. The Farm Mud Run, a 1.5km course with multiple obstacles to go over and under opens in September and is suitable for adults and children over 4. Nat and Archie Browning arrived back on the family farm in Great Tey after graduating from university and set up a business hiring events equipment. It didn’t take them long to realise that their own land, with its natural beauty and tree-lined lakes was the perfect location for events and camping. They began hosting wild weddings, using festival style giant tipis and accommodation in bell tents for guests. They developed their glamping accommodation to include tents, yurts and a log cabin and converted a shepherds hut and grain silo into attractive, quirky spaces which take camping to another level. As well as offering space for corporate events, people can hire an area for special events for friends or family. Nat Browning says, ‘Our business contributes to the long-term sustainability of the farm and we have lots of plans for the future. We’re applying for a government diversification grant to help build new accommodation, which we’re really excited about.’
