Off to work ... with a baker

Mary Glenn turns her passion into recipe for success

Mary Glenn grew up with a passion for cakes. As a child she experimented with her Easy Bake Oven and also watched as her mother cooked. After graduating high school, Glenn worked at the Winn-Dixie bakery.

“I’ve always had an interest in decorating cakes,” she said. “It was just something I couldn’t quit thinking about.

I just had to get into it.”

Glenn bought property at Lenlock Center and started her own bakery in 1993. She named it Bonnie Ray’s Bake Shoppe after her two children Bonnie and Ray. Glenn is now co-owner of the bakery with her sister, Karen Bates.

“I love to entertain people. It’s gratifying to know that you’re doing something to help someone or to make them feel good,” Glenn said.

The bakery doors open at 6 a.m. to the public, but baking officially begins at 1 a.m. since all goodies are made from scratch and baked fresh daily. Donuts are first on the list since they take the longest to make.

The dough is the same, but each type of donut requires different fillings and decorations.

“It’s a lot of preparation to make them look different and taste different,” Glenn said. For instance, cinnamon has to be chopped for apple fritters.

To ensure that orders are completed on time, the managers and owners maintain a list of everything scheduled for the day, detailing all orders and pick-up times.

“It’s demanding,” Glenn said. “You can’t do anything ahead.” The challenge is keeping everything fresh when Please see work ❙ Page 3

Friday and Saturday are the busiest days since most parties and events are on the weekend. If there’s too much going on for the staff to handle, Glenn calls for help. “That’s when everybody comes in – the whole family.”

Glenn cross-trained all of her relatives who work in the bakery how to do everything from baking donuts and pastries to decorating cakes.

Patience and a steady hand are crucial for

decorating a cake, Glenn said. Sometimes misspellings can be corrected by redoing a small section on the cake. But if someone dug into the cake when writing, the decorator must scrape off all the icing and start over.

Even though she never gets a Saturday off, job satisfaction comes from the customers, Glenn said, especially seeing the kids’ faces.

“A lot of them design their own cakes. I’ve had little ones bring in pictures that they drew and then we take it and transfer it onto the cake. When they come back in and see that on the cake, they are so excited. That just makes my day to know that I could help them do their own thing.”

“It’s just gratifying to know that people enjoy what you do. Even if they cut it up and eat it.”
