O

h, I just have to say it! After we’ve all waited so long, survived two late little snows and held our breath, I think we can safely consider it spring! And with that, a whole slew of great things await us in and around Logan Martin Lake. There are boats to prepare for launching, pools to reopen for fair-weather fun and everything else that goes with the advent of another summer season in our own favorite getaway. I’m far past excited and for every little bud and bloom I spot along the lakeshore, I whisper a silent “Thank you!” to Mother Nature. Our April issue is packed with great folks to meet, great places to go and lots of ideas for food and entertainment. You’ll meet a side of one Julie Funderburg you may not know about, as this well-known lady of the theatre and lakeside resident has yet another artistic side to share with us. If you haven’t seen her paintings already, get ready for a real treat. Julie picked up her paintbrushes in recent years, and she’s really going at it with the paint and canvases. I’ve got to say I love her style, it’s all her own, it’s bright, and big and seems to perfectly reflect her enthusiastic and engaging personality. You’ll see some of her work in Lakeside Living this month, and there’s plenty more to see at The Council of the Arts ArtScape Gallery in downtown Pell City. We have more adventures from our paddler, whose outing this month was made much more pleasant with our changing weather situation. While the winter months do have a beauty all their own, and the waterways turn peaceful, it’s always nice to welcome the warmer days back on the water. Be watching for little waterfowl hatchlings out there. It won’t be long, you know, and they’re so much fun to watch as they grow. I have gone “salad” this month, but not with ones that didn’t light up my interest on the salad radar. There’s an extra interesting layered make-it-with-cornbread in-a-Mason-jar offering, a pasta dish that is great for getting your veggies en masse, and I really like the “Fancy Chicken Salad!” It’s so fancy it looks like a cheesecake! And speaking of good things to eat, your Huggy’s Diner pal Keith “Huggy” Hughes and partner, Blythe Walls, are ready for 6

you to come to their new eatery venture, one they’ve dubbed Docks in the middle of the Cropwell area. The menu accommodates everyone form eating on the lighter side to those great home cooked favorites, and the partners are adding more menu selections as they go. Lakeside homeowners Daniel and Courtney Cook invite us inside their lake home in the Mays Bend area of Pell City, where, since buying it in 2009, the Cooks had done all kinds of things to personalize it just the way they like it. These folks have a way with creativity and taking things they love and giving them new life in their home. Just wait until you hear about how they turned an old piano into a real working bar area. The Cooks are full of great ideas they don’t mind sharing, and we know you’ll enjoy the visit to their favorite place on the water. So, welcome to Lakeside Living’s first official 2014 “springtime” issue, welcome to another season of lake loving and new adventures and please remember, we welcome your tips on those lakeside stories that come along your way, too! I have had a special interest in painting and actually most all creative arts. From my early years, I chose to paint with vivid colors with an imaginative flair. This interest developed into more of a passion as I became exposed to more and more creative arts.” Though Funderburg prefers to paint

in an acrylic medium, she prides herself on her on-the-fly flexibility. “I never hesitate to experiment with any medium, even glitter.” Funderburg said. “Since my paintings are so large, my focus is on bright vivid colors used in abstract manner. I paint at my house in my leisure time. Did I just say that?

I always say you find time for things you love. I love and appreciate the arts. My philosophy, regardless of what I am painting, is to depict the subject in a manner ‘out of the box’ with an array of colors similar to what one can imagine in ‘Joseph’s Coat of Many Colors.’” A 1981 graduate of Pell City High School, Funderburg attended Samford University where she took an interest in both painting and theatre while she worked on her degree. She graduated from Samford in 1985. She married Erskine R. Funderburg in 1987 and moved back to Pell City in 1988. After a sabbatical from her hobby, Funderburg returned to painting after the birth of her daughter in 2000. “My revived interest began when I created ‘birthday party’ themes for my daughter,” Funderburg said. “I took those to the extreme by painting lifesize 6 feet or more, or larger paintings of various animals, cartoon characters, princesses and such. Everyone was impressed and my paintings grew from there. Having taught kindergarten, my colorful, creative desire just kicked into gear. I enjoyed it so much I began to paint various abstracts in large colorful depictions like horses, guitars, cats, dogs and other subjects in the last 13 years.”

Funderburg’s detail of a horse is done in brilliant colors of turquoise and blue, using her signature bold brush strokes.

The revival of her childhood passion expanded into a new realm when she joined the theatre group, The Pell City Players, in 2007. “Community theatre is a strong passion that I enjoy,” Funderburg said. “I consider myself as a visual artist.” Her on-and-off love affair with art has taken her on some adventures, but none more prevalent than a story she told about a return flight home where she met Jim Peterik, most notably of the band “Survivor.” “I sat next to a guy with a purple streak in his hair,” Funderburg said. “I learned he was a rock singer and music writer. During the flight, I showed him a picture of one of my 48 inch by 48

inch guitars named ‘String of Dreams,’ and he loved it. “He lives in Chicago and is placing my painting in his jam lab. I was very flattered that a 1970s and 80s rock star was that impressed with one of my paintings. I could not believe I was sitting beside the writer of ‘The Eye of the Tiger’ that was played in every football stadium around years ago.” For now, Funderburg divides her time between both her theatre interests and her painting. What’s next? Only she can tell. 14

O

h, I know…truly, I do. There are lots of salad recipes out there, and everyone has their favorites for their own special reasons. And yes, here comes the “but.” But I don’t think any of us can ever have too many, and I don’t think any of us ever tire of finding new ways to stuff everyone full of some of the things we all know are good for us and are things that we “should” be eating. Well, most of them fall into the safe category, anyway. Let’s just say the majority of them do, and the few frills can be deleted if you prefer. Another good reason for going salad crazy right now is we’re getting ready to enter our prime produce season, the time of year it’s easier to find our vital veggies at their freshest and in such a variety that it just makes sense to seize the moment. Whether you shop with your favorite grocer, find your local “stand,” or combine the two as I find myself doing, these are ingredients you will find with ease and also ones that lend themselves to substitutions. I can’t wait for you to dip into the salad I like to call

“Berry full of Berries,” or the simply divine flavors you’ll find in a potato salad like you’ve never experienced before, not made solely with potatoes and the usual other elements, but full of things like shrimp and feta cheese and Kalamata olives. My twist on what I call a “Kitchen Sink Pasta Salad” is just that, so take this one and run with it for sure! There are so many ways to get creative with it, I may have gone a little overboard, but that’s just me. Oh, I almost forgot! There’s a really cool salad for you in this kitchen adventure with a true southern twist! Hint: It involves Mason jars! Is there really such a thing as overkill? Well, perhaps, but not here this month. Before I forget, I have to reel you in with a mention of the twist on chicken salad I like to call “That Fancy Chicken Salad,” and I do so simply because it is. You’ll have folks ogling over it before anyone dares to disturb its perfect presentation. So, off we go to salad land this month, and always remember…these salad dishes can be prepared in their complete quantities on a grand scale in a large serving

These cornbread-based salads give an idea of how you can layer your ingredients and transport them easily using the lids as covers. Mason jars are available in an assortment of styles and colors.

Two-thirds cup orange flavored or plain dried cranberries One cup roasted salted almonds For garnish, fresh herbs, berries, sliced peaches…(Of course, I used them all!)

What you’ll need: One 8-ounce package cream cheese One cup mayonnaise Two teaspoons curry powder One teaspoon salt Six cups chopped cooked chicken One 8-ounce can crushed pineapple

What you do: Whisk together softened cream cheese and the next three ingredients in a large bowl and then stir in chicken, pineapple (somewhat drained) and cranberries just until they’re well blended. Spoon mixture into a plastic wrapped 8-inch round cake pan, cover and chill for at least eight hours or up to 24 hours. Invert chicken salad onto a cake

stand or other serving piece and gently remove plastic wrap. Gently press almonds into the sides of the salad, then garnish with your favorite choices.

What you do: Cook pasta, drain and set aside. Stir in all other ingredients, chill and serve with an assortment of breads and crackers. Garnish with fresh parsley.

Note: Since almonds are large if not slivered, and a little difficult on those of us with “teeth issues,” I chose to use walnut pieces. Pecan halves would taste great and look nice, too!

Potato salad with a Punch What you need: Dressing: One-and-a-half tablespoons chopped fresh basil One tablespoon fresh lemon juice Two teaspoons extra virgin olive oil Three-fourths teaspoon sugar One-fourth teaspoon freshly ground black pepper One-fourth teaspoon Dijon mustard Simply whisk together all ingredients and set aside. Salad: Five cups small red potatoes, quartered One-half teaspoon salt One-fourth teaspoon freshly ground black pepper One pound medium shrimp, cooked and peeled Three cups thinly sliced romaine lettuce One cup red bell pepper, cut into one-fourth inch strips One cup yellow bell pepper, cut into one-fourth inch strips One cup thinly sliced red onions One-half cup crumbled feta cheese Two tablespoons chopped pitted Kalamata olives

Kitchen Sink Pasta Salad What you need: Two cups halved heirloom or grape tomatoes. Two small zucchini, thinly sliced into half moons One small red bell pepper, cut into thin strips One cup fresh corn kernels One cup diced firm peaches (about two medium) One-half cup thinly sliced green onions Parmesan vinaigrette (just enough to coat the ingredients) Using ranch dressing also works well. I left out the peaches and added chopped walnuts. One 8-ounce package penne pasta Two cups shredded smoked chicken One–third cup torn fresh basil One-third cup torn fresh cilantro

What you do: Arrange potato slices in a single layer on a microwave safe dish, sprinkle with one-half teaspoon salt and onefourth teaspoon pepper. Microwave on high for 15 minutes or until potatoes are tender and place potatoes in a large bowl. Add shrimp and one tablespoon of the dressing and toss gently to combine. Add remaining dressing, bell peppers, onion and cheese and toss to coat. Top each serving with one-and-a-half teaspoons of the olives. Salad with a Southern Slant What you need: One 6-ounce package buttermilk cornbread mix One 12-ounce bottle Parmesan-peppercorn salad dressing One-half cup mayonnaise One-fourth cup buttermilk One 9-ounce package romaine lettuce, shredded Two-and-a-half cups chopped smoked turkey Two large yellow bell peppers, chopped Two large tomatoes, seeded and chopped One red onion, chopped One cup diced celery Two cups (8-ounces) shredded Swiss cheese 10 bacon slices, cooked and crumbled Two green onions, sliced

What you do: Prepare cornbread according to package directions, let cool and crumble, then set aside. (If you’re like me and can’t make decent cornbread, con a neighbor to do it… or use prepared corn muffins if you’re in a hurry or your neighbor’s not like mine!) Stir together dressing, mayonnaise, and buttermilk until blended. Layer the crumbled cornbread, shredded lettuce, and next seven ingredients evenly into six (3- to 4-cup sized) glass containers. Spoon half of the dressing mixture evenly over the tops. Cover and chill for at least three hours or up to 24 hours. Then sprinkle with the green onions just before serving. Serve salads with remaining half of dressing mixture on the side. (These directions are given for using three-cup marquisshaped canning jars with the lid and screw ring. If you prefer to make one large salad, layer half each of the crumbled cornbread, shredded lettuce, and the next seven ingredients in a large glass bowl. Then spoon half of the dressing mixture evenly over the top. Repeat layers, ending with the dressing mixture. Cover and chill at least eight hours or for up to 24 hours. Sprinkle the top with green onions just before serving.

M

y plan was to leave Rivers Edge Marina and head south toward Coosa Island, but there were too many things to see and too many people to talk to for that. When I first arrived at the marina I saw the owner and operator of the Rivers Edge Marina, Paul Emerick. Paul was cleaning a gas stove for the new restaurant he is opening at the marina on Good Friday, April 18. Boy, he had a crew out there working on the building, which will house his office and the new restaurant. The restaurant will offer a variety of food that people can enjoy while sitting out on a wooden covered porch next to the lake. “We are going to be open every Saturday and Sunday, for breakfast and lunch,” Paul said.

Charley and JoAnn Parvin, who have a lot of experience in the restaurant business, are the cooks. Charley said people will order through a window and the food is made fresh, like home cooked biscuits for breakfast with eggs, bacon and sausage. In the afternoon, people can order club sandwiches, hamburgers, hotdogs, corndogs and French fries. I’m getting hungry just thinking about all that food. Paul said he doesn’t have a lot of overhead so the prices are going to be reasonable. “People won’t have to go all the way down to Pell City to get a hamburger,” Charley said. I told Paul I was going to head out on the lake, and paddle toward Coosa Island. I gathered up my kayak, paddle and gear, and another

There were a lot of anglers out that day, fishing ahead of a rain front, which was supposed to move in that night. “We’ve caught some good fish,” said Catherine O’Farrell of Cropwell. “We caught some last night, too.” Catherine and her fishing partner, Laurie Scott, were fishing for crappie with jigs and shiners. “We fish all the time,” Catherine said. “We are addicted to it.” The two women fish year-round, and Catherine even

makes notes about her fishing trips. She said the crappie started biting last year on March 17. The anglers enjoy fishing on Rabbit Branch, as well as on the main river channel. “We fished for years out of a canoe, but it just got too heavy,” Catherine said. I also met someone else on the lake who used to canoe, Dick Williams, who moved to the lake in 2004. He is originally from Trussville. He recognized that my kayak was for paddling whitewater, and he used to tackle whitewater in his younger days.

“The last place I paddled was the Chattanooga,” Dick said. Well, that’s a pretty stout whitewater river to hang your hat on. We also talked about paddling the Locust Fork River.

I said my goodbyes to them, and headed across the branch to where Edward “Skippy” Quick was fishing from his pier. He was having a rough time casting his fishing bait, because he fell and broke his arm during the snow storm that hit our area in February. His wife Eleanor was with their dog, Shadow. She was feeding the neighborhood ducks down the beach from where her husband was fishing. Eleanor used to live in Ashville, and Skippy is originally from Trussville. They now live on the lake. “Since retirement, I get to do a little more fishing than I use to,” said Skippy, who was a structural steel designer. Eleanor used to work for Regions Bank.

with her daughter Whitney Smith, 25, who now lives just south of Atlanta. Whitney grew up in Leeds. “I avoid Atlanta as much as I can,” Whitney said. “I would too,” I said. Her 16-year-old brother, Clarke Smith, was also there, trying his luck with a reel and rod. The entire group seemed to enjoy being around the lake, just piddling around and relaxing. The weather was nice, a warm overcast day. Whitney is an auditor for Homeland Security, and her mother is the head of the child nutrition program for the Leeds school system. We talked for a while. They were extremely nice people, and Anita’s children were really great kids. I could tell.

“My uncle built this place,” Skippy said. “He gave me the old house.” And Skippy built a new house on adjoining property. Skippy is an avid hunter and fisherman. He remembers a time when Rabbit Branch had a bunch of game to hunt. “We would bring the dogs out and hunt rabbits,” he said. Skippy pointed out to the lake. “Before this was a lake, there was a cornfield out there,” he said. He said the Roe family owned all the property around Rabbit Branch at one time. It’s been a while since I’ve met so many interesting and nice people on a paddling trip on Logan Martin Lake, part of the Alabama Scenic River Trail. And as the weather continues to improve, people will flock back to the lake and its recreational offerings. Maybe on my next trip I will make it a little closer to Coosa Island, so until then have a safe and wonderful time on the lake.

hat they bought was a 1970s ranch-style, split-level house with small rooms. What they have now is a craftsman-style home with an open floor plan and repurposed furniture accents that add tons of character and style. And to top it off, Daniel and Courtney Cook’s fourbedroom, three-bathroom home in the Mays Bend neighborhood of Pell City sits right on Logan Martin, providing the perfect reprieve when the couple is between

home improvement projects. “Besides the obvious perks, living here is relaxing, which is nice after a stressful day at work,” Daniel said. “And we live in a great neighborhood. Things have worked out better than we could have imagined.” Daniel and Courtney purchased their 3,600 square foot home in May of 2009, shortly after they were married. Their abode has come a long way in five years as they have tackled several major renovation projects, starting with

the kitchen. “Before, it was the typical early 70s kitchen with the peninsula, laminate countertops, red cabinets, but there was no flow,” Courtney said. “Kitchens were designed with the sink, refrigerator and stove forming a triangle, and I hated that. I wanted zones so when we’ve got friends over, I can cook on this side, and if people want to get drinks or whatever, they’re not in my way.” The couple installed new wooden cabinets, granite countertops, stainless steel appliances and an island with a cooktop. removed, and the Cooks used the newly opened space to add a coat closet and corner cabinet. “An outdated kitchen is a negative for most people, but we were fine with it, because it gave us the opportunity to create exactly what we wanted,” Courtney said. The new kitchen layout allowed for an open floor plan, joining it to the joint living room and dining room that are painted a cheery turquoise shade called Jamaica Bay. To add visual separation between the kitchen and living area, Daniel secured a hand-hewn railroad beam from a factory in Ohio onto the ceiling and built a column on either side. The kitchen and living areas were completed with v-groove pine ceilings (to cover waterstained drywall) and hand-scraped hardwood floors. The couple’s penchant for repurposing old items is evident throughout the living and dining area. The star of the space is a piano-turned-bar. “We saw something similar on TV, and my husband 32

said, ‘I like that. Get dressed, we’re going to the thrift store.’ We bought this piano for $75, cleaned it, pulled the keys out, and reconfigured shelves out of existing pieces of the piano,” Courtney said. Across the room, an old library table was lowered and serves as a coffee table. Other pieces, like the TV stand, were purchased from thrift stores or friends and given a good cleaning, a fresh coat of paint or stain, and in some cases, a beating with chains to give them a distressed finish. “Our unspoken rule is unless you’re going to sit on it every day, it doesn’t need to be new,” Daniel said. Courtney said they enjoy giving new life to old items and the character old furniture can bring to a space. They both credit their inventiveness to their families. “We both grew up with mothers who always went to estate sales and auctions, so we grew up doing that and appreciating antiques,” she said.



Combining colors, woods and finishes creates a style all their own for the Cooks’ home. The bar shown is actually a piano.

Daniel said his mother is always sewing or knitting, and her creativity inspired him at a young age to see things in a different way. Courtney credits her grandmother, who encouraged her to paint and explore. “I studied art in school. I absolutely love color, and I enjoy hobbies that feed my senses – painting, cooking, soap making, herb gardening, house projects – the list is endless,” she said. “I try to find inspiration in the things around me, especially my grandmother’s paintings, which are displayed throughout the house.” Back to the house, a den off the living area is where the couple and their “children” – a Briard mix named Murphy and two cats – get comfortable, with a fireplace, large TV and a sectional couch. The room is painted the same turquoise tone as the living and dining area, but a few shades darker. Upstairs is the master bedroom and bathroom. While the bathroom remains on the couple’s fix-it list, the 34

bedroom is charming with a white fireplace, tall windows and more antique accents. The headboard on their bed was a mantle that belonged to the first cousin of Jack Daniels. The pair’s other largest renovation project has been the exterior of the home. “We wanted rustic craftsman style, so we did our research and started by poring through photos and collecting what we liked,” Courtney said. “We wanted the stonework, but the biggest thing was we had no front porch, and I wanted something that would blend the second-story portion of the house into the one-story portion.” They worked with an architectural designer, who prepared three designs, and the couple selected an angled, one-and-a-half story porch. A mason did stonework, while Daniel built shutters, cedar columns and other wood accents. Four columns on the cantilever disguise

the 70s look, and new windows, faux copper gutters and industrial lighting (a Craigslist purchase) complete the exterior. Around back, the home has an upper level outside and screened-in porch, and below is a patio outside the basement. Finishing the basement and making it into a game room is on 36

Sears Home Services and Courtney is a commercial property specialist for Farmers Insurance, so the lake is a much-needed at-home getaway, and with the weather finally warming up, they are ready to crank up the pontoon. “What we most enjoy about living here is Sunday afternoons, packing up a cooler of sandwiches and beer, and going out in the middle of the lake and chilling on the pontoon boat,” Courtney said. “That’s about the best thing you can do before Monday starts back up. It’s just so relaxing.” When they’re not working or on the water, the couple stays involved in the community. Courtney is busily planning an April 12 fundraising gala for the Pell City Library Guild. “When we moved here, we had no intention of getting this involved with the city, but our neighbors got us involved in so much stuff. That’s what helped us to meet people and create friendships,” she said. Daniel and Courtney said they got more than they bargained for moving to Logan Martin Lake. “I always remember the first thing our neighbors ever said to us when we moved in,” Daniel recalled. “They said, ‘I just want to let you know you’ve moved onto the best street in the best neighborhood in the whole lake,’ and that’s held true, I think. The new venture, Docks, is the result of the two men’s brainstorming. “Everything is cooked to order,” Hughes explained. 40

“And there is no smoking allowed inside, although there is a smoking area outside. People really seem to like that. The restaurant seats 95 total. Among the most popular menu items so far are the Huggy Burger, topped with grilled onions and jalapenos, as well as the grilled chicken wrap and signature salads. “We’re also starting to get pretty well known for our Ruebens,” he added. The Docks’ hot dogs and hamburger steaks have become other favorites 46

from the menu. Customers are also taking to the restaurant’s taco salads, and the specialty fish tacos have also been hits, Walls added. There are already plans to expand the menu, with lunch offerings coming in April along with even more appetizers and specialties becoming available down the road. Steaks are planned to become

available in the coming weeks as well. Of the current appetizers, fried dill pickles and fried green beans have proven to be very popular, along with wings and nachos. Sides include fries, onion rings and sweet potato fries. The partners are also working on coming up with a specialty cocktail menu consisting of drinks named especially for lake-associated activities and things. Hughes describes the price range as “very good for a fresh cooked, dining out meal.” Takeout is available, although for the time being, all catering orders are being handled through the diner. The kitchen at Docks is open until 8 or 9 p.m. Monday through Wednesday and until 9 or 10 p.m. Thursday through Saturday. The restaurant is closed on Sunday. The bar area at Docks stays open as long as there are patrons, with happy hour on Monday through Friday held from 3 p.m. to 6 p.m. Docks is located next to Snap Fitness in Cropwell Commons. career in real estate allows Paula Blair to indulge her love of both the indoors and the outdoors. Blair enjoys interior design and gardening, which fit right in with her chosen career. “Those things just go hand-in-hand for me” she said, adding that her interests help her in her career. “I love working with people to understand their vision and make it a reality,” she said. “Working with first-time homebuyers is especially important to me,” she said. “I really work hard to help them make the right choices and not get in over their heads. I would want that for my children. Blair lives on Logan Martin Lake with her husband, Pell City attorney Dwight Blair. She has two daughters, Leslie and Lacey, and a granddaughter, Abbigale. She started selling homes 13 years ago, after retiring from a career with the state of Alabama. “My daughter and I had been involved in buying, renovating and selling some homes in the past,” she said. “We bought our current home 13 years ago and did a big renovation. When we started renovating our house, my daughter started a concrete countertop business, so she made all the countertops in our home. They are one-of-a-kind and incredibly beautiful.” Blair said living on the lake “is like coming home to 50

I can relate that to a potential buyer and let them know what the experience is like.” Watching the sunset from a spot next to a fountain in her yard is one of her favorite things about living on the lake. “One of the reasons we bought this home was because of the beautiful sunset,” she said. A St. Clair County native, Blair loves her hometown. “Pell City is a close-knit community and the residents care about the community,” she said. “There has been a lot of growth here, and the real estate market has remained steady because we do have a proactive community.” Many people who previously had only weekend homes on the lake are now retiring and buying bigger full-time homes on the lake, she said. “Our home inventory is low, so realtors are in pursuit of new home listings. Interest rates have never been lower. I think we are on the uphill swing of the past real estate depression. We urge buyers as well as sellers who have been waiting out the bad market to consider making a move.
