S

o…are you ready? I’ll just say right now, right up front…not me. But here we are, looking straight at the holidays coming at us and once again, it’s time. Somehow, we all manage to get through it, get things done, and wind up with another set of nice memories that carry us on through the upcoming new year. I started thinking about how to make things a little easier on those of us who happen to have holiday guests to expect, and it hit me. Why not find some easy ways to start and finish your holiday gatherings? It will always behoove the host of a big meal production to have some tasty tidbits on hand to hold your guests’ appetites at bay while you tend to all those last minute details that pop up. With this in mind, I looked for some appetizers and finger foods that can be easily made before hand and not totally destroy those appetites. Then, came the afterwards thing. Generally speaking, holidays seem to bring out huge desserts en masse, things that are on a little on the tedious side and take a good bit of time. Basically being a bumbler at baking, I kept the easy factor well in mind here as well. And remembering how full everyone gets on the main meal, why not offer a selection of little desserts that deliver just the right amount of substance without a lot of bulk? I loved the idea of “dessert shots,” and there’s where I ended up this month. You can just about alter any of your favorite sweet treats into a “miniature sized” dessert and for those who like to sample a little of each, you’ve already prepared them to serve that way. I hope these ideas find their place to your table…and of all those I tried, let me brag a little on my favorite-the Apple Cranberry dish. Make it one baking dish, then divvy it up into aperitif glasses or other serving pieces like a parfait with ice cream, whipped cream, fruit and nuts and they’re just perfect for a great finish. You’ll also meet new homeowners Brad and Lora Cook who created their dream of a lake home in Lincoln, and took plenty of time in the planning process to get it all just right. Brad took care of the logistics, as he puts it, and for Lora, it was focusing on the design elements. Between the two of them and an architect, everything turned out just the way they wanted their Logan Martin home to turn out as. Patrick and Suzannah Gibson of Pell City are off on 4

another new adventure in the restaurant world, we’ve told Lakeside readers how their ice cream shop, The Special Place, came to be, and now, just around the corner, is their full fare restaurant, Café 34. They keep special favorites on their menu, but are always keeping an eye open for seasonal and different ideas. Café 34 also has a great meeting place for groups, with a separate dining area for just that. Lots of you out there know Deanna Capps of Pell City, but you know about her latest venture? She’s become a prolific and outstanding artist in her own right over the past year, and it just sort of happened. Already, her Pell City home is brimming with her landscapes and tributes on canvas, and lots of them have personal stories to go along with the reason Capps created them. She’s working in oils, and has already had students turn to her for guidance with their artistic pursuits. And though we’re into fall on the lake, our mild climate still leaves time for enjoying water fun out on Logan Martin Lake, as our paddler discovered during his October outing. You can still catch some nice days out on the water for fishing, rowing around or for some, this relatively new craze called paddle boarding. Here’s to all for the start of memorable holiday gatherings, getting it all done and enjoying the change of seasons along the Logan Martin shoreline.

Traveling the Coosa

The leaves were starting to turn on my last trip on Logan Martin Lake, which is part of the Alabama Scenic River Trail.

t was a perfect day to be out of the water, but I thought I wouldn’t see many people out since it was Saturday, and also a college football day, but boy was I wrong. “I got up at 4:30 (a.m.), ate at Jack’s and got here at 6 (a.m.),” said Frank Mercurio of Leeds, who was pulling back into Woods Surfside Marina with his wife, Melissa.

I met Frank and Melissa right as I was leaving Woods Surfside Marine for a short paddle up Rabbit Branch Creek The couple was quite familiar with Lakeside Magazine and have regularly read my paddling column each month. “We are river rats,” Frank said. “We come here about every weekend when I’m not working.”

Frank and Melissa Mercurio of Leeds are all smiles with their great big dog after a morning ride on Logan Martin Lake.

He said Melissa just retired from the Birmingham Museum of Art after 33 years of service. Frank said they were ready to take their pontoon boat out for an adventure at 6 a.m., but things didn’t go as planned. “We got fogged in,” he said. “It was a foggy morning, so we didn’t get out until about 8:30.” Frank, who is originally from Miami, said three or four months out of the year, they store their boat for winter, but are right back on the water when spring arrives. “My thing is trolling for bass,” he said. Frank said he and Melissa really enjoy the lake during the late fall. “Fall is absolutely gorgeous out here,” said Frank, who has been coming out to the lake for the past five years. And it was certainly a beautiful morning that particular Saturday. Just around the bend I ran into the Dana family, John, Erica and 5-year-old Alex of Vestavia. 8

The family was getting gas for their boat at Surfside, trying to get in one more trip before the winter set in. John said they have a lake home, and buy their gas at Woods Surfside Marina. “They have great service,” John said. Alex added that the marina also has great popsicles! I told them I hoped that they enjoyed themselves on the lake, and continued my paddle up Rabbit Branch. That’s when I spotted a young fellow on a SUP – a stand up paddle board. Seventeen-year-old Graham Hack of Oak Mountain said he and his friends even take the paddle board out on their boat and do a little “wave surfing” with the SUP. “I surf a lot at the beach,” he said. He said Logan Martin Lake provides a paddling, or should we say surfing opportunity, that is much closer. Graham was with a group of boys who attend Oak Mountain High School. Several on them, including he and Joseph McCormick, play for the high school baseball

Joseph likes to kayak. He also fishes from his recreational kayak at different lakes. “It’s real easy,” he said. “Just put it (the kayak) in back of the truck.” He said the fishing at Logan Martin Lake is much better than the lake closer to his home, and Logan Martin Lake is not a very long drive for him. “It’s close, 20 to 30 minutes and I’m here,” Joseph said. “I have a friend who has a place at Lake Martin but that’s an hour and a half drive.” It actually was getting hot on the lake, so I decided I wanted to try and roll my kayak to cool off. Well, I got cooled off. I missed my roll and had to pull my kayak to shore to empty the water. I think it scared the boys some, but I showed them – once I got all the water out of my kayak, I could in fact roll my kayak – even though it took me two tries. That’s why you have to practice rolling a kayak. The longer it’s been since you have completed a roll, the harder it is to roll. I said my good-byes and headed off to a small island that is positioned between Woods Surfside and Rivers Edge Marina. There I met Ramsey and Connie Reich of Birmingham. I always say you never know who you are going to meet on the lake, and Ramsey and Connie knew some folks I grew up with in Birmingham

who I haven’t seen in probably 40 years. That was neat and it was good to hear that one of my old friends was doing well. Ramsey said they enjoy just anchoring out by the island and enjoying the day, and taking in a little swimming in the shallow water there. He said if the weather is warm, they still come out on the lake in November. “The football season does cut into our time here,” Ramsey said. I asked them if they knew what the name of the island was, and Ramsey said he really didn’t, but the couple named it after their chocolate Labrador, Sarg – Sarg Island. “I don’t think the locals would like us naming the island after our dog,” he said. The island probably has numerous names, depending on who you talk to. I guess I’m going to give it a name when I come back for an overnight campout on the island, so until then have a safe and wonderful time on the lake. 12

A

few months ago, readers of this space read all about the special bond between ice cream and the summer months, and how Suzannah and Patrick Gibson had just what you needed on that score. Well now, as the temperatures finally start to dip a little bit and you look for warmer, heartier fare, it turns out the Gibsons can hook you up just as well. Two doors down from their Special Place Ice Cream Emporium, Café 34 is now open for business. 14

According to Patrick, Café 34 officially opened Sept. 4, with an inspiration he cited as “just crazy people. Lunch (the establishment previously in this space) said that they were going to be closing and offered to sell it to us, along with all the stuff inside. The price was right, and we were able to work something out.” Suzannah said their culinary neighbors started talking to them about taking over as soon as they moved in. “But we wanted to focus (on the Special Place) and get settled,” she said. “As the time got closer, we got

nervous. We thought about it for months. The fact that they were closing was not public knowledge to their patrons. Patrick had been a kitchen manager 10 years ago, then had been a golf pro. I can cook in my kitchen all day long, but I don’t know anything about running a restaurant. So he quit his old job, and this is his job now.” By the way, The Special Place is not going anywhere, due to all the work put into renovating it beforehand. The next step was developing a menu, a 16

process which involved sitting around the house for a couple of weeks brain-storming and watching the Food Network. “We cooked three or four different things per night until we had a menu,” Patrick said. “We did things we had been eating all our lives, things that we knew were good or sounded good to us, and things we just wanted to try. A Reuben sandwich has always been one of my favorites, so I knew we had to have that, and there’s not really much you can do with that one.” They took some liberties with other classic dishes, however, such as their take on the classic grilled cheese. “We roll cream cheese and cheddar cheese into a big 18

ball, add spinach and bacon and grill it on chiabatta bread. That’s one of our favorites,” he said. Another emerging favorite, and a contender for oddest menu item, is the peachy pepperoni pizza. “It uses peach jelly instead of marinara sauce,” Patrick explained. “Then we put pepperoni and cheese on top of that, and banana peppers on top of that, to balance it out. And like all our pizzas, we use a tortilla shell for the crust, so there’s that, for that kinda healthy vibe.” He said the inspiration for this may well have been his wife’s “pregnant brain,” and she did not disagree. The couple is expecting a baby girl in December. “That may be so,” she said.

From great salad plates and sandwiches to specials on the menu, Patrick and Suzannah Gibson have found lots of tasty items for their new restaurant.

“I think I was thinking about a Georgia salad, and that made me think of Georgia peaches, and I remembered we had some peach preserves, although I don’t remember why we had them,” she said. “But anyway, I had peaches on the mind. It was delicious.” During their first two weeks in business, Patrick said, they only had one person order it., but she came back five times. Other noted items include the taco soup, which crosses over to the taco salad and taco pizza, Patrick explained. Aside from the items on the menu, there are also nightly dinner specials, including meat loaf, Smoky Mountain chicken, pork tenderloin, seafood jambalaya, beef stew and many more, with veggies and salad. “We’re working on a pumpkin soup,” Suzanah said. “Just whatever’s good and goes with the weather.” The restaurant also boasts a sizeable meeting room, which clubs such as Rotary, Civitans, Lions, Bunco and a local bridge club have all taken advantage of. 20

A breakfast menu is available on Saturday mornings, but so far there have been few takers. Beer and wine are coming soon. To go orders are available now, and although they have not been approached, they Gibsons are open to catering orders as well. As for the name, Suzannah says that resulted from another brain-storming session while swimming at the cliffs on Logan Martin Lake. “We wanted to name it a after a local landmark, and it’s right on 34,” she said. “Although that’s not as good a story as naming The Special Place was.” Café 34 is located in the Cropwell Commons Shopping Center. They are open Monday through Friday from 10:30 a.m. to 2 p.m., Thursday and Friday from 4:30 p.m. to 9 p.m., Saturday from 7 a.m. to 9 p.m. and Sunday, from 11 a.m. to 2 p.m.

any people of faith believe when God removes a blessing from their lives, he supplements the loss elsewhere in their lives through a new opportunity or a newly discovered talent. For Pell City artist Deanna Capps, her blessing manifested itself through the tip of a paintbrush when she started painting in April, three months before her

husband, Curtis Capps, passed away. “I’ve done more than 40-something paintings since I started,” Capps said. “Curtis was ill, and the Lord blessed me and gave me something to fill the hole because he knew he (Curtis) was dying. I’ve been keeping busy with it and it makes a difference because when you know where it comes from, it’s even more precious.” At the urging of her children, Capps moved her

I

n their quiet Alpine neighborhood, colorful leaves are collecting on the roadside and the excitement of summer on the lake is giving way to a peaceful fall. And peace is just what Brad and Lora Cook need before their world changes in a few short months. “It’s exciting and nerve-wracking,” Brad said of the idea of their impending parenthood. The couple is expecting their first child – a girl – due in

February. It’s perfect timing for the pair, married eight years now, who completed their 2,500 square foot lakefront home last December in hopes of starting a family. “We sat on the property for five years and slowly began clearing the land,” Brad said. “When we got ready to build, we went to an architect to get what Lora wanted – an open design, a spacious kitchen, with the intent of raising kids here.”


Brad and Lora Cook are happy in their new home in the Alpine area of Logan Martin Lake.

The two-story house has three bedrooms and two and a half bathrooms with a bonus room and basement. All that space means plenty of room for their little girl to grow and play. When it came time to start building their home last March, the pair separated their duties equally. Lora handled the design, while Brad focused on logistics and making it as energy efficient as possible. “A lot of research went into it,” he said. “I started asking other people who own lots, like my boss at work, and he told me about the flood lines you need to check into, and that really helped. A lot of the layout of the house design was determined by that. We went more up rather than wider with it to get within the 100-year flood lines so we didn’t have to pay extra insurance for that.” On the efficiency side, the house is outfitted with LED lights, a hybrid water heater that pulls heat from the basement, heavily insulated walls, and a programmable

thermostat. Like any good southern home, theirs was designed around the kitchen. Lora took advantage of her chance to design a sizeable room with all the storage one could need. The kitchen, with dark cabinets that complement hardwood floors of the same tone, has double ovens, an extra-wide standup refrigerator and freezer, an impressive walk-in pantry (which Lora says is her favorite feature), and an aqua-accented tile backsplash. “We were coming from an 850 square foot trailer, and it worked well, but it was cramped,” Lora said. “When we moved here, it felt really, really big for a long time. He told me I would never fill this kitchen up, but it didn’t take long.” The area is completed by an island with bar seating and an X-patterned dining room table. A bold, yet simple light fixture in the dining area creates a charming focal point. November 2013 - Lakeside Living & Logan Martin Homes

The adjoining living room continues the clean look – which the couple jokes is simplicity out of necessity – with white couches that contrasts nicely against the dark flooring and a distinctly open feel created by an 18-foot tall ceiling that leads to a loft space upstairs. “We did a lot of the work ourselves,” Brad said. “All the painting, electrical and tile work. There are 16 different colors throughout the house. The light over the kitchen table was my favorite, but these walls (in the living room) were fun too.” A covered porch outside the room holds the grill and is an area the couple, who both work as nurses in Talladega, would like to expand. The master bedroom is decorated in soft grays and yellows with a large window allowing that complete view of the water that makes a lake home 28

worth having. “We wanted a simple, but modern look,” Brad said. “Nothing fancy.” “I was going for clean lines,” Lora added. “It took us a while to find the things we liked, like the doors, for example. That basic, square-cut door we liked, for some reason. We just had to find a style that we both liked.” They did go a bit outside the box for a half bathroom in the foyer. You have to have something funky somewhere in your home, after all, Lora said. The small room is painted with a curvy stenciled, gray wall design and accented with a vessel sink and black toilet, which, believe it or not, Lora views as a token of her husband’s love. “Any colored fixture is three times more expensive than white,” Brad explained. “So we had decided to

just get a white toilet, but I knew she really wanted the black one, so I called and switched it at the last minute.” “I told him it was the most romantic thing he’d ever done,” Lora said with a laugh. Upstairs is a bonus TV room, bathroom and two extra bedrooms. One room shows the beginnings of a nursery with a pink and green color scheme. Having spent every summer growing up on Logan Martin with her family, Lora said she had always envisioned living on the water, though Brad would’ve been just as happy on a lot in the middle of nowhere. Instead of waiting until retirement like many couples on the lake, Lora and Brad planned to make it happen while they are young, or perhaps

before Brad had time to change his mind. “She wanted it,” he said. “It was a goal. It’s what she wanted, and I said all right. It just took time to make it happen.” The high school sweethearts, both Lincoln High School and Jacksonville State University graduates, searched for the best location for about a year before landing on their lot, which actually includes three separate lots totaling one acre, and then took their time to build. “We’ve lived in Talladega County our whole lives, and our parents are in this area,” Brad said. “This location was great because it’s close to work and easy to get to,” Lora said. “And there’s deep, year round water. We figure the location in and of itself is built-in entertainment for kids. I hope they like water or they’re out of luck.” While the lake is still growing on Brad, the lot across 30

the street from their house was the selling point for him. A car fanatic, he plans to build a three-car garage there some day to work on restoring cars that he shows with his dad. “If I couldn’t have a place to play with cars, we were going to sell this lot, but I called the lady that owned that lot, and she said she had been thinking about selling and praying about it, so it worked out,” he said. Happy to have made their lake home a reality, Lora says there is still a lot they would like to accomplish, like adding a fire pit and other backyard amenities, buying a boat, possibly finishing out the basement, and of course, building Brad’s “man cave’ garage,” but for now, they’re focused on baby, and Brad joked he can’t wait to have “another lady bossing me around.” “She’ll probably come out just like him,” Lora said. “Perfect.”

Artist from page 24 painting operation from the second floor of her home. “My children got upset with me because I’m 74 years old and will be 75 in January, but I’m prone to falls,” Capps said. “They were so afraid I was going to fall down the stairs, but the skylights up there were fabulous.” With two rooms in her home devoted to her art now, Capps works with multiple styles, using acrylics and oils to create both standard and raised artwork. “It really depends on the image I want to depict on the canvas,” Capps said. “When I sit down and paint, I’m totally focused in what I am doing. I don’t see anything but the very thing I’m painting. I have to get up and step away to see what the total picture is. When I do, sometimes I’m kind of surprised. I didn’t know I could paint like this. I never knew whether it was good or even close to good, but I’m happy with it.” Her collection of paintings ranges from angels to crosses, along with landscapes and wildlife, all of which sprung onto the canvas by her hand with little to no real formal training. “I’ve looked at some books and turned the pages,” Capps said. “I went to one art class maybe 20 years ago and I’ve been to one class here.” 32

Before she began painting, Capps spent much of her time making flower arrangements for altars. When the strenuous twisting and weaving of stems and flowers began taking a toll on her hands, Capps said her daughter, Rebecca Capps, pitched an alternative to her. “My daughter told me I needed to take up painting,” Capps said. “She said I needed to fill the hole that doing the altars was going to leave. So I went out and got the paint and the canvases.” A typical painting usually takes Capps a day to complete, depending on how much detail and how many styles she chooses to incorporate into the piece. She recently donated some art to be auctioned for the Pell City Center’s October fundraiser, and has made a habit of giving away most of the work she creates. “I’ve given a lot of art away,” Capps said. “I’ve painted for friends. I painted for the caregivers that I had (for Curtis) because they were so good to him and I would ask them what they wanted. I would stay out there and paint for them. I paint for pleasure and to give to people. (These paintings) were a gifting from God, so I wanted to give back.”

I

kind of figure most everyone has the kinks worked out for the usual Thanksgiving fare we all like to prepare, and really, as far as the “have tos” go, I think we’re all pretty well versed in those. Far be it from me to try and sell anyone on a Thanksgiving dinner without the turkey, dressing, macaroni and cheese, green bean casserole and all that other stuff everyone expects on the table. We all have our own special expectations, for those of us who have “dinner duty” for this holiday, and wouldn’t dare deviate from one single favorite that’s expected to be on the table. So, with all of this in mind, I started thinking about what we could get away with doing a little bit differently, and it took me a while, but I got an idea. What about taking a look at the “before and afters?” You know, the things we put out for folks to munch on while we tend to last minute preparations-or disasters, like I’ve had-and the things we offer after the big huge meal… maybe they don’t have to be all that huge. So I started looking for some inspiration and what I came up with was a platter of time tested favorites along with something that was new to me as far as dips go, and then, as far as the after part, some miniature desserts that pack a lot of taste into just a bite or two. Let’s face it, after all the fanfare of the feast, who has room or that much interest in more than just a little something on the sweet side? Just pass me more dressing, please. Anyway, my pre-dinner platter to appease guests included everything from the simple to, well, not so simple, but well worth the time. I put it all together, your crowd will determine the size and portions, of course, and offer mini-crab tarts, spicy boiled shrimp, caramelized onion dip and dippers, along with rich red grapes and those nice Anjou pears that come into season in the fall. Something for everyone, I hope, from the diabetic to the vegetarian to the “I don’t worry about what I eat” among us. Let’s start with that onion dip…

Caramelized Onion Dip What you need: Twp tablespoons unsalted butter Three medium onions, halved and thinly sliced One and a half cups sour cream, room temperature One half pound cream cheese, softened One tablespoon finely chopped flat leaf parsley One half teaspoon onion powder One half teaspoon Worcestershire sauce Kosher salt and freshly ground black pepper Crackers or breads of choice for serving

What you do: Melt butter in a large skillet, add onions and cook over moderate heat, stirring occasionally until golden-about 25 minutes. Add two tablespoons water and cook until the water evaporates, about three minutes, stirring continuously. Let onions cool about 15 minutes. Transfer onions to a cutting board and chop into coarse pieces. In a large bowl, mix sour cream with the cream cheese, parsley, onion powder and Worcestershire sauce until smooth. Stir in the onions and season to taste with salt and pepper. (The directions say to serve at room temperature, but something told me it would hold together better if chilled a bit-it did). Crab tarts What you need: Pastry dough for two crust pie Three large eggs, beaten One and a half cups skim milk Three-fourths cup grated Swiss cheese Two tablespoons cream cheese, softened One tablespoon minced onion One-half cup shredded carrots One pound crab meat One-half teaspoon nutmeg One-fourth teaspoon white pepper A pinch of salt

What you do: Roll out the dough thinly and cut out two inch diameter circles with a cookie cutter. Lightly press the dough circles onto oiled tart shells. Prick the dough with a fork and bake for five to seven minutes at 450 degrees. Remove from oven and set aside. Mix together the remaining ingredients and spoon the mixture into the tart shells, filling them one half inch over the tops of the shells. Bake for 25 minutes at 375 degrees or until a toothpick inserted comes out clean. Serve hot. *Note: When I made these, I deleted the shells just to see what would happen besides losing the carbs…they cooked fine in mini-muffin tins sprayed with 40

cooking spray. (This yields 60 tarts).

Easy honey glazed walnuts What you need: Cooking oil-about a half cup Three cups walnut halves One fourth cup packed brown sugar Three tablespoons honey One fourth teaspoon Chinese five spice Two teaspoons toasted sesame seeds

What you do: Heat oil in a large skillet over medium heat to about 300 degrees. Add walnuts and deep fry, turning frequently (They will over cook quickly!) Cook for approximately three to four minutes, remove and drain on paper towels. Combine brown sugar and butter in a saucepan. Cook, stirring, over low heat until brown sugar melts. Add honey and five spice and mix well. Remove saucepan from heat and add walnuts and sesame seeds and toss gently to coat. Spread mixture into a foil lined baking pan. Let stand until cool. Break into bite sized pieces before serving.

Refrigerate until ready to assemble. Crumble the cooled brownies. In each of 12 shot glasses, or use larger cocktail glasses if you want larger portions, layer crumbled brownies and chocolate mousse. Serve immediately or refrigerate until serving. (It’s obvious if you’re short on time, get some pre-made brownies and already made ready to go pudding. To make this more interesting, I reserved some of the whipped cream for the layers, added chopped nuts and used a dollop of whipped cream and a dot of raspberry preserves and chocolate shavings on top. Not bad! Also good with a drizzle of caramel or chocolate flavored liquor… or think about this…crème de menthe!)

What you do: Heat over to 350 degrees. (325 for a dark or nonstick pan.) Make and bake brownie mix as directed on box and let them cool completely. Meanwhile, in a medium bowl, beat pudding mix and milk with a whisk until soft set. In small bowl, beat whipping cream with electric mixer until soft peaks form. Fold whipped cream into pudding.

into quarter inch cubes) Two thirds cup sweetened dried cranberries One teaspoon ground cinnamon Two tablespoons maple flavored syrup One tablespoon fresh lemon juice Two thirds cup quick cooking oats (I was out of them so I used ground up graham crackers-probably better this way!) One half cup packed brown sugar One half cup Bisquick mix One fourth cup chopped walnuts One fourth cup butter or margarine, softened Vanilla ice cream or whipped cream for topping, if desired. (I used it to layer with and top in the miniatures.)

What you do: Heat oven to 375 degrees. In large bowl, mix apples, cranberries, cinnamon, syrup and lemon juice. Spoon into ungreased eight-inch square baking dish. In medium bowl, mix remaining ingredients except ice cream until crumbly. Sprinkle over fruit mixture. Bake 35 to 40 minutes or until apples are tender, juices are bubbly and topping is golden brown. Cool about 30 minutes and serve warm with topping.

Two tablespoons maple syrup One fourth teaspoon cinnamon One eighth teaspoon ground ginger One eighth teaspoon ground nutmeg A pinch of ground cloves Topping: One cup heavy cream Powdered sugar to taste One half teaspoon vanilla extract One half teaspoon cinnamon

What you do: Preheat oven to 375 degrees, lightly grease the insides of the mini cheesecake pan or you can use cooking spray. In a medium bowl, mix crust ingredients until well combined. Divide mixture evenly between the 12 cups. Press crumbs firmly on bottom and onethird up the sides of each cup using your fingertips or the bottom of a tablespoon and set aside. In a separate medium bowl, blend

filling ingredients together until smooth. Spoon this mixture into each crust lined cup, dividing evenly between all 12. Place cheesecake pan into the preheated oven and bake for 14 minutes. Remove from oven and place on rack to cool for 20 minutes. Carefully remove cheesecakes from pan by pressing up from the bottom of each cup. Let cheesecakes cool completely on wire rack then refrigerate until ready to serve. Just before serving, combine the cream, sugar, vanilla and cinnamon and whip until soft peaks form. Serve the cheesecakes topped with the cinnamon whipped cream. You can add chopped nuts, chopped chocolate or other candy for added appeal. *Note-You can change out the spices in the recipe to suit your own taste. If you have pumpkin pie spice on hand, just use it to replace all of the other spices.
