I
f Paul Philippon has company over, you can probably find him cooking a simple ribeye over wood or charcoal, and he’ll pair it with a Duck-Rabbit porter. The traditional porter, or the seasonal Baltic Porter released every December, both contain dark, hoppy and roasty characteristics that will show off the ribeye. “It’s simple, there are no big flourishes there. But I think the flavors kind of shine and compliment each other,” Phillippon, brewmaster at The Duck-Rabbit Craft Brewery, said. That is one of Philippon’s ideal pairings because it follows his triedand-true beer pairing formula: the flavors don’t overpower each other. “The flavors can stand up to each other,” he said.
But, much like the popular practice of wine pairing, he knows there is no one size fits all method when it comes to beer. You can match the flavors to compliment the food, or contrast them completely. As long as the strength of flavors matches. “Not everybody agrees and that’s part of the fun,” he said. “It’s still evolving and there is experimentation.” And while Philippon isn’t that picky when it comes to beer pairing, there are few things Philippon takes into consideration when he thinks about what beer to choose with a meal. “It’s about the strength of flavor, that’s part of it. And I think the sweetness of the beer — you want to think about how that’s going to go with the food,” he said. “You want to think about how spicy the food is; it’s not just about intensity of the flavor but what kind of intensity of the flavor. And then some of it, honestly, is just what you like.”

Duck-Rabbit, otherwise known as the dark beer specialist, prides itself on carving out a niche in eastern North Carolina for dark, craft beer. With an inventory full of milk stouts, porters, brown ales and amber lagers, they are making their own mark on dark, English style beers. Their most popular beer, the milk stout, is a full-bodied beer brewed with lactose to give it sweetness, but also grains to give it some roasty flavor to back it up. Typically, due to the sweetness of the beer, it can easily be served with popular dessert dishes. But, Philippon sometimes likes to think outside the box and pairs it with more savory meals. “It does well cutting through fat,” he said. “Like bacon.” “Or, you can do the milk stout with an appetizer that’s got some sweetness.” He also said it’s easy to pair grilled fish with a lighter, more delicate beer like a pilsner or a lager, or a salad with assorted fruits with an amber lager. Philippon recognized that different people will pair beer with different foods than he would, but there is one thing about serving beer that is unforgiving. “There is no room in this world for a frosty glass.”

When Joe Namath and the Miami Dolphins beat the Baltimore Colts. January 12, 1969 - I was 12 years old. I just remember all the hype, all the iconic images of Joe Namath all over the place. He was some flashy playboy-type predicting he was going to defeat Johnny Unitas, a football legend - it was unheard of! It is still regarded as one of the greatest upsets of all time.

The first one - Super Bowl I. I was 7 or 8 years old, and I was able to watch it with my father and my grandfather. I remember sitting there in front of the black and white television (with only 2 channels). Back then it was the NFL and the AFL and my dad hated the AFL. So we were cheering for the Green Bay Packers even though the Kansas City Chiefs were just a few miles away. I have seen the kickoff and the start of every single Super Bowl game. Makes me realize just how old I am.

I’d have to say 1972. I was 7 years old and had just decided The Washington Redskins were going to be “my team”. One of the things that made the game so memorable was that they were going up against the undefeated Miami Dolphins. That, and the fact that I made my first bet, I think it was five dollars! Miami’s kicker botched a field goal and tried to throw a pass, The Redskins intercepted and ran it back for a touchdown. My team won, and I won my first bet. It was pretty awesome.

Just last year - when the Patriots came back to beat Atlanta in over overtime. It was a wild ride. I mean it was 28 - 3 halfway through the third quarter and Tom Brady doing what Tom Brady does, scored 25 points to tie the game and send it into overtime. Definitely one of the most exciting games to watch, a lot of records broken that day.

BY NOVEMBER OF EACH YEAR, thousands of wild swans, geese, and ducks arrive in Hyde County to spend the winter on Lake Mattamuskeet, North Carolina’s largest natural lake. Located in the middle of the Atlantic Flyway, Mattamuskeet is the winter home of one of the largest and most diverse populations of migratory waterfowl in the United States. From the late 1800s, hunting guides on Lake Mattamuskeet used live wild geese as decoys to lure the birds flying over within range of the hunters’ guns. The guides attached a cord to each live decoy’s leg––without injuring the bird––to anchor it near the blind. Guides also used artificial decoys, but they preferred live decoys because the tethered birds would “call in” the prey.

The federal government banned the use of live decoys across the nation in 1935. The craft of carving artificial decoys expanded, producing renowned Hyde County carvers like Percy Carawan, who also guided hunters on the lake for at least fifteen years. Live or artificial decoys positioned in front of a blind signaled the birds flying over that it was a good place to feed, so they would swoop in to join the decoy birds, only to meet a barrage of shotgun pellets. Lake Mattamuskeet was privately owned from 1911 through 1934. The owners were land developers who drained the lake three times––in 1916, 1920, and 1926––to reclaim its rich bed for agricultural and residential use.

In addition to farming the lakebed, the owners operated the lake property as a private hunting preserve. Hunters came from as far away as Canada and Louisiana to shoot wild geese and ducks in the bed of the lake. During the fall of 1929, the guides working for the private owners of the lake reported that their hunting parties killed 1,867 Canada Geese and 615 ducks within the bed of Lake Mattamuskeet. At the end of 1934, the U.S. government bought the lake property and declared the lands and waters of Lake Mattamuskeet to be a waterfowl refuge. In January of 1935, the federal government began setting up the refuge, and the chief game warden in Hyde County predicted that even more hunting permits would be issued that fall than when the lake was privately owned.

HUNTERS CAME FROM AS FAR AWAY AS CANADA AND LOUISIANA TO SHOOT WILD GEESE AND DUCKS IN THE BED OF THE LAKE.
Mattamuskeet Refuge required waterfowl hunters to hunt from blinds with a guide approved by the game warden. The guides built their own blinds, spaced no less than 500 yards apart. There were 18 to 24 goose blinds on the refuge, depending on the year. Hunters paid a daily fee for the guide, and at the end of the day, each hunter usually tipped his guide handsomely. Hunters stayed on the refuge in Mattamuskeet Lodge, or nearby in motels, hotels, and private homes. Those who stayed with Hyde County families usually paid about $5 per day for their lodging and food. Former State Senator A. B. Swindell guided on the lake for three seasons from 1967 through 1969. He recalls that when he was just a youngster, North Carolina Governor Kerr Scott came to Hyde County to hunt at the lake and stayed at the home of his parents, State Representative and Mrs. Russell A. Swindell.
The host families always enjoyed listening to their guests from places such as New York, Massachusetts, and Maine tell of life where they lived that seemed so far away from rural Hyde County. Since many of the same hunters returned year after year, the children of the host families often grew up thinking those interesting “northerners” were their kinfolk. In most cases, there was no biological connection between the children and anyone in the hunting party. However, they shared a special kinship in loving Hyde County, Lake Mattamuskeet, and the pursuit of wild Canada Goose and ducks. Most of the guides for the refuge met their hunters on the mornings of their hunts at O’Neal’s Store at the intersection of US Highway 264 and Outfall Canal Road or at Mattamuskeet Lodge. Some seasons there were other check-in points around the lake. The hunters drew their blind by lottery, and

the selection method changed from time to time. After the hunters checked in and drew his blind, their guide assigned to that blind would take the hunters to the lake. Not every hunter was a good shot but most took their limit home, even if their guide helped them reach their quota. The limits for each hunter changed each year. From 1935 to 1972, industry leaders, politicians, financial tycoons, and ordinary working class citizens traveled to Mattamuskeet in hopes of bagging a wild Canada Goose. Mattamuskeet Lodge became famous as one of the best hunting lodges in the Atlantic Flyway, and sportswriters described Mattamuskeet as the “Canada Goose hunting capital of the world.” The old timers say that in those days, when the flock lifted off the lake, the sky turned black with geese, and it sounded like thunder. In the 1960s, the migrating patterns of Canada Geese in the Atlantic Flyway changed, leading to a significant decline in the winter migration at Mattamuskeet. In hopes of rebuilding the Canada Goose population at Mattamuskeet, the U.S. Fish and Wildlife Service outlawed shooting wild geese

on the refuge in 1972. It is still unlawful to shoot wild Canada Geese on Mattamuskeet Refuge, but the species has never returned in the numbers previously seen. Some of the Hyde County guides whose names are part of the history of Lake Mattamuskeet are John Harold Swindell Jr., Percy Carawan, Cleron Carawan, Donald Carawan, Edward “Bunk” Carawan, Bennett Emory, Arlan Swindell, and Roger Swindell. Over the years, more than 100 men in Hyde County supplemented their income and the local economy by guiding hunters. Not all of these men guided on the lake; some guided hunts in nearby fields. When the former guides get together, they share the experiences they had with various hunters. The stories often pertain to inexperienced hunters, who could not bring down a bird no matter how many times they fired their gun, or who brought a dog along that had no idea why he or she was there. Getting to the blinds often required the use of a small boat provided by the guide. There are stories of hunters falling overboard in the frigid water, or falling down in the water in front of the blind while trying to retrieve a downed bird.

The hunting guides at Lake Mattamuskeet are part of the rich history of Hyde County and eastern North Carolina. Today, Mattamuskeet Refuge is open to hunting of Tundra Swans, resident Canada Geese, Snow Geese, ducks, coots, and white-tailed deer, in accordance with applicable State and Federal regulations. The North Carolina Wildlife Resources Commission administers the hunts through their Permit Hunting Opportunities Program, in cooperation with the staff of Mattamuskeet Refuge. These hunts do not require the services of a guide.

Nothing says holidays like a bit of the bubbly, but do you know what you’re drinking? Champagne? Sparkling wine? What’s the difference and should you care? While we like the stuff, let’s face it, it can be a bit overwhelming when trying to pick the perfect bottle for your next party or date night. Don’t worry, we will help you through it. Here’s what you need to know:
1. SO WHAT IS THE MOST BASIC THING bros NEED TO KNOW ABOUT PURCHASING BUBBLY? First, are you looking for true Champagne or sparkling wine? True Champagne is only made in the Champagne region of France. Everything else is sparkling wine. 2. WHAT’S THE DIFFERENCE? On the most basic level, it’s really price. Champagne is going to be more expensive. There are a lot of other differences of course, but that’s the first people will notice when shopping. 3. SO WHAT KIND OF PRICE RANGES ARE WE TALKING ABOUT HERE? Our sparkling wines can range from $15 - $65 and we have Champagnes ranging from $38 - $270. 7. WHAT DO YOU RECOMMEND FOR COCKTAILS? I usually recommend a good Prosecco for cocktails, such as this Montelliana. $12.45/bottle.

Well I start out asking what types of wine you like to drink and then I can usually find a good fit, but if someone isn’t a wine drinker, I will typically recommend a Prosecco, which is Italian sparkling wine and tends to be a little fruitier, less dry. 5. WHAT IS A GOOD BOTTLE TO TAKE TO A PARTY? Always take a magnum (the equivalent to two bottles) when going to a party, it’s more festive and allows for everyone to enjoy a toast.
