Hello from Mackenzie If you know me, you likely know that I’m a big beer drinker. If you don’t know me, well, it wouldn’t take long to figure it out. But, it wasn’t always that way. I hated beer for a while. I think I tried it for the first time in high school – a Busch Light at my friend Ali’s house – and I remember thinking it was just about the worst thing I ever tasted. I spent the next, I don’t know, say, three years of my life, talking about how crappy beer was and I didn’t understand how people drank it. I drank Mike’s Hard Lemonades. Strawberry Daiquiris when I went to the islands with my parents. Now, the mere thought of those drinks make me cringe. I came around eventually. I’m not sure how or when. Now, I find joy in the simplicity of an ice cold craft beer. But, like any good East Carolina student, I spent many days and nights coating my liver with $1 Bud Lights or a $15.99 case of Busch Light for a tailgate. Gosh, and now the thought of that makes me cringe. Needless to say, I am glad my taste buds have matured. (Well, sort of matured – anyone who knows me will likely find me drinking Miller Lite, a college habit I couldn’t seem to break). But I also can be found enjoying a well-crafted beer from any of the impressive breweries featured in this magazine. So, if you see me out and about, come say hi. Let’s have a beer. Cheers!

Paul Philippon isn’t trying to do something new. In fact, the brewmaster of Duck-Rabbit Craft Brewery in Farmville, said it’s actually quite the opposite. “We’re trying to make our version of something old,” Philippon said. For 14 years, he and his company have worked hard to capture their own interpretation of a dark, English style beer. And with milk stouts, porters and black ales on draft and a wall full of awards for many of them, the company has certainly seemed to earn their title as “The Dark Beer Specialist” that’s marked on all their labels. The brewery first opened it’s doors in August of 2004, marking 14 years of crafting beer for the people of eastern North Carolina. “We’re starting a dark beer only brewery in rural eastern North Carolina; there’s a little bit of an uphill battle there,” Philippon said. Luckily, they won the battle, he said. They were able to convince people to not only buy full-flavored beer, but their full-flavored beer. And they did that by what Philippon describes as working diligently between the interface of art and science. “The creative, culinary aspect is enormously important. But, having the foundation of science understanding that were not just making dinner for our family tonight — we’re making something that needs to travel a long distance and still taste right,” he said. And much like Philippon himself, his brewery’s marketing strategy and beer itself plays on their motto: “whimsy with dignity.” “It’s gotta be playful. It’s gotta be fun. But for Duck-Rabbit, there’s a serious purpose. We don’t do anything that we wouldn’t be happy

to share with our mothers,” he said, laughing. “As much as anything I think that’s a reflection of who I am. I take enjoyment of the things I eat and drink seriously, but that doesn’t preclude playfulness.” Duck-Rabbit prides itself on 14 years of making their best version of craft beer, but the brewery and it’s people do more than that. They create brewers. The breweries in Greenville are now full of Duck-Rabbit alumni; Cam Medina at Pitt Street Brewing Company, Grayson Williams at Trollingwood Taproom and Brewery and Benjamin Self at Uptown Brewing Company all have roots as dark beer

specialists. And Philippon said that’s just the beginning; there’s Duck-Rabbit alumni all over the state and beyond. “I think that’s kind of neat, and that’s just Greenville. The johnny appleseed affect of Duck-Rabbit grows past that. ” he said. “It makes me proud. I like the fact that people can move from here to sort of do something on their own.” “It has never been our goal to be the biggest. It has never been our goal to be something for everyone. That’s what they do over at Mother Earth Brewery in Kinston, where they pride themselves on promoting a passion for beer and a passion for mother Earth. “Our main motto is peace, love, beer,” Jeremiah Mullins, taproom manager said. “Just sharing the love

of beer and the love of peace.” In 2013, the brewery became the first ever brewery in the United States to obtain a LEED, Leadership in Energy and Environmental Design, Gold Certification. The certification is a “voluntary, consensus-based, market-driven program September | October 2018

sponsored by the US Green Building Council (USGBC) that provides third-party verification of green buildings,” according to Mother Earth’s webiste. The brewery uses solar panels, recyclable carpets and eco-friendly tiles. The walls of the building and insulated with recycled denim, and they use a rain collecter to collect about 25,000 gallons of water that’s dispersed throughout the brewery for many uses. It’s all a part of Mother Earth’s vision of staying green and leaving as little of a footprint as possible. “Mother Earth...we like to take care of it,” Mullins said. And while they’re centered around Mother Earth, the folks at the brewery are even more centered around

revitalizing their lcoal community. Mullins said if he had to pick one thing they are great at – it’s sticking close to their community. “We’re very community driven. Really centered around Kinston,” he said. “I like that we’re the local watering hole for people to come hang out, grab a beer, socialize and digress their day.” Mullins, an IPA drinker himself, says the beer at Mother Earth typically sticks to traditional styles and flavors, and with popular dark lagers, pilsners, traditional IPAs and witwit biers and more, they seem to have found their niche. But they have started reaching outside the box a bit – brewing Belgian witbiers in a sour kettle with pineapple, lime, ororange and coriander and brewing a

kolch with lactose, orange peel and vanilla bean to create a creamsicreamsi cle-like flavor. “We like to do it the right way, the hard way, the craft way,” he said.

Trollingwood Taproom and Brewery doesn’t want to be the typical, runof-the-mill brewery. They have been creating something more niche since they first opened their doors in 2015 as the first privately owned brewery in Greenville. And with locals — and tourists — relaxing on the patio on any given afternoon, the brewery seems to be a local watering hole for new and old friends alike, and those who

want to enjoy a different style of craft beer. “We kind of want to be like a neighborhood pub, a peasant kind of pub,” owner and head brewer Grayson Williams said. Williams has always liked beer — first drinking cheap beers in college, then Samuel Adams and New Belgium’s Fat Tire. He was working at an event at the Greenville Convention Center when a vendor left

behind a home-brewing magazine, and it sparked his interest. “I remember just looking at it and being interested and wondering what everything did,” he said. “That pushed me into trying more beers.” His journey into brewing began soon after that. Williams once went to a brewery in Portland, Maine called Barreled Souls, and remembers the beer’s distinct character. He then decided to implement part of their system into his own beer-making. He uses American oak barrels, ones you’d see now being used for distilling whiskey, to add a vanilla-like flavor to the beer. It’s an old tradition in beer-making that Williams wants to pay tribute to. “We try to reuse our yeast. The yeast gets pushed out of the barrel

during fermentation. We want to keep reusing generations of yeast, and essentially the yeast moving out of the top of the barrel is cream of the crop,” he said. “Reusing yeast that way promotes a healthier beer.” Williams didn’t know that this oak-barrel style of beer was going to be his beer journey. He just wanted to do something special. “We were brewing in plastic…we were getting it done, boot-strapping it,” he said. “But now we’ve got our theme. Now we’re the wood guys.”

You know what they say – laughter is the best medicine. But when I asked Inez Ribustello, one of the owners of Tarboro Brewing Company, why they make beer, she had a bit of a different answer. “For medicine,” she answered, laughing. The brewery, located about 30 minutes from Greenville, has spent the past two years crafting beers that are designed to bring you home – again and again. “They are pure, true to style, and not trying to be something they’re not.” The most important part about their beers? It’s the drinkability, Ribustello said. “This is our motto, and it’s been true. Our beers taste like beer. They have great drinkability, meaning you can drink more than one,” she said. “It’s beer made from malt, hops, barley, water, yeast.” Their most popular beer, The Seed Spitter, is a 4.4 percent Salted Watermelon Goze Ale made with 1,300 pounds of fresh watermelon – perfect for a hot eastern North Carolina day, Ribustello said. “I drink my weight in this beer,” she said with a laugh. Also on their menu are traditional IPAs, Belgian-style pale and dubbel ales and more. “We’re not trying to be the highest of alcohol, the hoppiest or the funkiest,” she said. The building that is now home to Tarboro Brewing Company was an old car dealership that had been

vacant for years. Ribustello, whose family also owns the popular, intimate American bistro On The Square, had a vision of opening a brewery about two years ago. She said they purchased the building, raised almost $200,000, and recruited their headbrew master Franklin from a large brewery in Pennsylvania. She said the new venture has been worth it, but nowhere near easy. “It has been the hardest thing I’ve ever done,” she said. “You’re continually trying to grow and develop.” Ribustello said she hopes the brewery is a place where the community can gather and have a good time together. “The idea is that you can bring your Bojangles chicken biscuit or Taco Bell. You can come in and drink a beer and be together,” she said. “We want to make it a space where everybody is welcome.”

Nate McLaughlin moved across the country four times before ending up in Greenville, North Carolina. He had never heard of this town. But he decided to make the jump – or flight – to Pirate nation and start making craft beer. “I saw a town that needed beer,” the head brewer of Pitt Street Brewing Company said. McLaughlin is from Pennsylvania originally, but years ago, he packed up a van and moved to California to go to beer school. From there, he was recruited to Dechutes Brewery in Oregon. Only a few years later, he moved back to the east coast to work at Victory Brewing Company in Pennsylvania. He didn’t stay there long either, before making yet another trip across the country to Washington state to work at Kulshman Brewing Company. That was his last move out west before joining Pitt Street Brewing. “I have a hunger,” McLaughlin said. “I gotta keep learning.” So when he saw a post about a need for a brewer in Greenville, he met with the investors of Pitt Street Brewing Company, saw the building, and before long, he was all in. “I really liked the investors. I liked

what they were offering me. They were offering me freedom to practice my art.” And now, McLaughlin’s knowledge for craft beer shines through the various types and styles of beer offered at the brewery. The brewery boasts their award-winning Dapple Dog Dry Stout that took home first prize in the North Carolina Brewers’ Cup in 2017 for best Irish Dry Stout. McLaughlin said they try to offer a variety of styles, but also aim to be creative and innovative – most recently, brewing cervezas with pineapple and habenero or cream ales with avacado. His approach? Minimalistic. “In the shortest explanation possible? Wingin’ it is about how I approach beer,” he said. “I’ve brewed tens of thousands of batches...so I can wing it, and I get close enough. I get to feel the brew a lot more.” “Feeling the brew” is an aspect of the brew process McLaughlin is enjoying more and more. “I do like the science of beer, but more and more I’m liking the art of beer, feeling the beer. I’m just precise enough to make it right,” he said.

Uptown Brewing Company Benjamin Self was supposed to be a doctor. He has an education background deeply rooted in science — chemical engineering to be exact. In 2008, he got a job as an engineer as a freshly-graduated 22-year old. But, when the economy tanked, he lost his job, and absolutely nobody was hiring. Except craft breweries. “The only thing I really gave a crap about was home-brewing,” Self said. So he begged and begged breweries around the southeast to give him an internship until he finally landed one at Good People Brewing in Alabama, his home state. They are the biggest brewery in the state, and at the time, only one of two in the whole state of Alabama. “I was supposed to go the entire other direction. Turns out [becoming a doctor] was a lot of studying,” Self said as he laughed about his unexpected career path. And now, 10 years later, Self is the head brewer at Uptown Brewing Company in Greenville. It was an unlikely endeavor. But, it’s one he treasures. “It all kind of came together really serendipitously,” Self said. Prior to Uptown, he worked at Duck-Rabbit Craft Brewery in Farmville. Billy Dunn, a founder of Uptown Brewing

Company, heard about Self through a mutual friend. Self said after they connected, the duo formed a fourway partnership with Dunn’s brother Donald and their son Brandon, and they decided to make beer in Greenville. They’re coming up on their two-year anniversary of making beers Greenville can call their own. Self’s trick to the trade? Simplicity. “We take a very consistent, quality control approach to everything. We want to do the classic styles and do them better than everyone else. That’s our shtick.” And he does. With West Coast Style IPAs, American light lagers, Apricot Wheats, classic American pale ales and quintessential coffee porters, his beers are familiar. Customers know what they are getting, every time. “I think we make exceptionally clean beer,” Self said. “If there’s one thing about Ben, it’s that he makes really drinkable beers,” co-owner Donald Dunn said as he poured a customer a Coffee Porter. But it’s the Billy Beer, a light lager named after one of the owners, that has become the lifeblood of the company. They recently broke ground on their own Billy Beer facility in Greene County. Self said he’s excited to continue to make beer as loyal and consistent as the community has been to him. “This was supposed to be kind of another job,” Self admits. “Everybody up here was so warm and inviting. I’m a Alabama native, and this is the first place I’ve been since Alabama that’s felt like home,” Self said.
