A TASTE OF SPRING Rebecca Stevens, Alpine Larder Manager, shares one of her favourite spring recipes, using local mountain produce. Having skied in the Snowy Mountains regularly since the age of four, the mountains were in Bec Steven’s blood. After working as a chef in Canada, Falls Creek, Thredbo and then Adelaide, the Mountains drew her back again, where she and her family now live. Bec and her team are passionate about delivering a menu inspired by seasonal produce such as one of her favourite spring recipes: pumpkin and pear salad.

PUMPKIN & PEAR SALAD Serves 4 Pumpkin: • 600 g peeled pumpkin, cut into 3cm cubes • 1 1/2 tbsp olive oil • Salt and pepper Dressing: • 2.5 tbsp extra virgin olive oil • 1 tbsp Dijon & seeded mustards • 1 tbsp honey • Salt and pepper Salad: • 2 pears thinly sliced • Sprinkle of black and white sesame seeds • Sprig of fresh dill • 150g baby spinach leaves • 60g feta, crumbled • 1 Spanish onion, thinly sliced
Preheat oven to 220C (standard) or 200C (fan/convection). Toss pumpkin with olive oil, salt and pepper. Spread on baking tray, bake for 20 minutes. Remove from oven, flip, then bake for a further 7-10 minutes until golden. Leave to cool. Combine all ingredients for dressing in a jar and shake to combine. Place spinach in a bowl. Drizzle with a bit of dressing then toss. Add pumpkin, pear, dill, just a bit of feta and sesame seeds, then toss just to disperse the feta. Transfer to serving bowl. Sprinkle over remaining feta and sesame seeds. Just before serving, drizzle with remaining dressing.
