In Germany it’s traditional to drink hot spiced wine during the Christmas holidays, but the Germans aren’t the only ones to enjoy this winter warmer. It goes by different names: mulled wine in England, gløgg in Scandinavia and vin chaud in France.
and belonged to one Count John IV of Katzenelnbogen (try saying that after a few steaming tankards). Count John was the first documented grower of Riesling grapes, it seems he ordered them to be planted around one of his many castles.
Historians have traced the tradition as far back as ancient Egypt (around 3150BC). Their recipe including pine resin, figs and a variety of herbs might not be the go for modern palates. The Romans were also big on spiced and honeyed wine and it’s one ancient tradition that never seems to have gone out of fashion.
The name Glühwein literally means “glow wine” and comes from the red-hot iron that used to be plunged into the wine to heat it. If you’re brave you could try Feuerzangenbowle (Fire-tongs Punch), which is when you set a rum-soaked sugar cube on fire and let it drip into the hot wine. Otherwise, just have a go at the easy recipe below, guaranteed to make you feel that all your Christmases have come at once.

Ingredients
Method
1 bottle of dry red wine
Peel large sections of skin from orange, lemon and lime. Over medium heat in a medium sized saucepan, pour in sugar and water, then add the peels and juice of the orange. Add the vanilla bean, cloves, star anise, cinnamon stick, and nutmeg gratings. Bring to a boil, then simmer for about an hour. The liquid will reduce, so after around 30 minutes, add in about a half cup of wine. This allows the flavours to infuse and will create a syrup.
1/2 cup of brandy 1 cup water 1 large orange, peeled then juiced 1 lemon, peeled 1 lime, peeled (optional) 1/2 cup sugar 5-6 whole cloves 1 nutmeg, about 10 gratings 1 cinnamon stick 1 vanilla bean, halved 2 star anise
When your syrup is ready turn the heat down to low and pour in the bottle of wine and brandy. Bring back to a gentle simmer and heat for about 5 minutes or depending on how much alcohol you want to burn off you can simmer a bit longer. Ladle it into glasses and serve warm.

SAY BAROSSA VALLEY TO A WINE-DRINKER AND WHAT IMMEDIATELY COMES TO MIND IS SHIRAZ. While there’s now considerable diversity in the region’s wines, it’s for the distinctive reds that the Valley is most famous. It wasn’t always so. When the early settlers arrived in the Barossa in the 1840s, they first produced rather undistinguished white wines. These were Germanspeaking Silesian settlers, fleeing religious persecution in their homeland. Even today, the German heritage remains in the Barossa, with church steeple and an appetite for sausage, pickles and the hand-made noodles called Spätzle. By the 1890s, many of the names you’ll see today – Gramps, Seppelt, Yalumba, Henschke – were already in the wine-making business. For many years, most of their output was in fortified wines like Tawny (Port), Sherry and Muscat. Then, in 1947, Gramps produced the Barossa’s first dry red table wines since the 1860s.
It was the start of something big. The Barossa still had many old vines, having avoided the phylloxera plague that wiped out vines in Victoria, New South Wales and Queensland in the late 19th century. Today, you’ll still find productive vines here that are more than 125 years old, possibly the oldest in the world. Called “Ancestor Vines” these hardy veterans are usually dry-grown, lowyielding vines producing wines of great flavour and intensity. There are more than 13,000 hectares of vineyards in the Barossa. The old vines tend to be found on the cooler hillsides, while those on the warm valley floors are irrigated. And it’s not all Shiraz. Other varieties grown here include Grenache, Mourvedre (otherwise known as Mataro), Cabernet Sauvignon, Riesling, Chardonnay and Semillon.

Seppeltsfield. This historic complex is a must-see. You can even sample a vintage Tawny (Port) from the year of your birth.

The unfortunately named “Fukko Wine” (recovery wine) – is a mix of sparkling wine and a cider and is made entirely from fruit grown across Fukushima Prefecture.
