METHOD Step 1

Step 5

Set up your barbecue for indirect cooking. Please refer to your handbook for further instructions. Preheat your barbecue for roasting.

Once the barbecue has preheated, make adjustments to the burner control(s) for the roasting setting. Place the lamb racks on and cook for 20 to 30 minutes or until cooked to your liking.

Step 2 Using a sharp knife trim most of the fat from the lamb rack, leaving behind a thin layer.

Step 3 In a food processor, process the macadamias, garlic, rosemary, lemon myrtle, salt, pepper and olive oil into a chunky paste.

Step 4 Spread the Dijon mustard over flesh of the lamb racks, press the macadamia crumb onto the outside of the racks of lamb. If desired, wrap the bones in alfoil.

Step 6 Leave to rest for 5 to 10 minutes before carving into individual portions.

IN FACT

ABSINTHE, ANSWERED. No spirit sparks more curiosity then the emerald elixir. Pull out a bottle and you’ll be met with a handful of questions – mostly about whether it’s illegal, if it will really make you hallucinate, and whether or not you’ve seen the movie Euro Trip. Regardless of the inquisition, here are our facts to help clear up absinthe’s murky past.

Where did it come from?

Same Same or Different?

Absinthe was invented at the end of the eighteenth century by Pierre Ordinaire, a French doctor living in Switzerland. By distilling wormwood and several other herbs in an alcoholic base his original intention was to create medicine.

The absinthe you buy and drink today has not changed since it was banned. It is still made the same way that it always has been – ingredients, method and all!

Psychedelic or nah? No, not even a little. The hallucinogenic myth stems from the high alcohol content of the drink. Absinthe’s alcohol content will generally range between 50-70% which is substantially stronger than other spirits (including whiskey’s at 40%).

After pouring absinthe within your glass, a sugar cube is placed upon an absinthe spoon (a spoon with holes in it) and rests atop the glass. To release the spirits full flavour and aromatic character, water is added by means of a drip and dilutes the sugar cube in the process. Traditionally, the drink is served with four-parts water and one-part absinthe.

Although being absinthe’s most popular nickname, the drink won’t make you see a green fairy. With huge popularity amongst high profile artists in the late 19th century, it is said that the green fairy brings the gift of artistic inspiration. It therefore coined another moniker – the green muse.

Given its popularity among artistic personalities throughout history, the spirit has always been associated with creativity. Famous painters and writers such as Picasso, Van Gogh, Oscar Wilde, and Ernest Hemingway are all known to have been absinthe enthusiasts. In more recent times, musician Marilyn Manson has developed his own brand of absinthe Mansinthe.

Is it illegal? Not anymore! Having been accused of turning children into criminals, encouraging loose morals and inspiring murders, the spirit was illegal around the world for almost a century. The ban was lifted in 2007 however, after it was concluded that the level of thujone (the questionable chemical in wormwood) in the spirit was safe for human consumption.
