A FIELD GUIDE TO THE RACES Spring has arrived and the warmth is awakening race day inhabitants from their winter slumber. The season of flutters and tipples is bound to delight, but before you venture into the spring racing environment, be sure to familiarise yourself with those around you:

Guaranteed to be wearing either a designer fascinator that they picked out weeks in advance, or a pocket square to match their socks and handkerchief, these race day dwellers pride themselves on the ability to dress and impress. Even though they’d much rather catch hypothermia than wear a jacket, a tell-tale sign of ‘The Show Pony’ is the faint trace of fake tan running into the creases of their attire. You will most likely find them on the prowl searching for a suitable member of the opposite sex. One place you’ll never find them? Even remotely close to a port-a-loo!

Although you may not recognise them in person without a Snapchat dog filter, this race day attendee is bound to have their phone glued to the palm of their hand (or attached to an invaluable selfie stick). After all, if you haven’t posted it on social media… did it even happen? For them, being at the races is a public announcement and another chance at bragging rights. A ‘check-in’ on arrival and an average of one social media post every five minutes is a necessity! Bad weather, a photo bomber, or your best bud simply just ruined the photo? Not to worry, there’s nothing a simple crop and filter won’t fix. Even though they were never going to watch the race, the day was a success as they got over 200 likes and 10 new followers! #BestRaceDayEver

For 364 days a year, they'll scour their bank accounts for phantom discrepancies while saving their money to the cent. But on race day, their 'knowledge' far surpasses any punter at the track and their wallets are laced with confidence. "Lads. Race 7. Barrier 5. Trust me, I’ve been waiting on this one all day", one of the many 'hot tips' that will be thrown your way as they confidently put pen to paper and draw a circle around a horse from two races ago. Although they haven’t won a race all day, you can guarantee they've said they have.

It's midday somewhere, right? While you're lacing up your final shoe or clipping your last heel, they'll have already commenced the pre-game sesh in your living room; mainly in the hope of saving a few dollars while they’re out. "For $30 I can buy a bottle or I can buy 3 drinks at the track, what do you think I'm gonna do?" being a popular party cry from this race day goer. Throughout the day you may find yourself meeting an abundance of new people as ‘The Dark Horse’ has taken it upon themselves to have a deep and meaningful conversation with anyone who is prepared to listen. And once the races are off? They may not have eyes on the track, but they'll be well aware of whose round it is… as long as it's not theirs.

The odds are stacked against them, they’re the bona fide long shot of the race, and to put it simply, ‘The Roughie’ is in for a rather long day. If anyone’s waking up with the imminent threat of a dreaded pimple, it’s them. If anyone’s stepping in a puddle, or falling victim to a bypassing bird’s droppings, it’s them. To their credit, they take everything in their stride and are an integral member of the pack; after all, if they haven’t been roped into being ‘deso’ for the day, they’ll be the heavy favourites to pay for the Uber… and the first round.

For a peek behind the iron curtain, or large metal garage door of our brewery, come down to the Truck Bar. Built from a 1960 Dodge pickup and piloted by Sir Porks Alot, the resident taxidermy pig, this big red hot squeals machine features 19 taps of the freshest beer on offer.

Our brew pub in Manly is where 4 Pines was born. With the original microbrewery still onsite, very much alive and kicking, step up to the brewing enclosure and catch a glimpse of brewers’ jumping from vessel to vessel, working on the origins of their small batch Keller Door beers. It’s open 7 days a week from 11am till late, with brewery tours running midweek. In 2016, the brewpub was extended downstairs to showcase all our Keller Door small batch brews. This is a communal eating and drinking experience at its best, built around vibrant and diverse, small, large and feast size plates. Pale in colour with a fine and persistent bead before a lifted and vibrant nose with classical lemon citrus and floral notes. The palate is very fresh and lively with crisp tropical and citrus flavours. The pure fruit flavours and delicate acidity contribute to a soft mouth-feel which makes the wine so approachable. An excellent aperitif style that is rewarding from the first glass.

POACHED SALMON AND ORANGE SALAD

INGREDIENTS 4 oranges 6 sprigs fresh thyme 1/2 teaspoon black peppercorns 4 (200g each) salmon fillets, skin on 1 tablespoon extra virgin olive oil 80g baby rocket 1 Lebanese cucumber, halved lengthways, sliced 1 avocado, cut into 2cm pieces

METHOD Step 1 Juice 2 oranges (you'll need 1 cup juice). Place orange juice, thyme, peppercorns and 3 cups cold water in a large, deep frying pan over medium heat. Bring to a simmer. Reduce heat to low. Add salmon. Cook, covered, for 10 minutes or until cooked to your liking. Using a spatula, remove salmon from liquid. Flake into large pieces. Step 2 Finely grate rind from 1 orange. Peel oranges and segment. Squeeze membrane over a bowl to catch juice (you will need 2 tablespoons juice). Discard membrane. Place oil and orange juice in a screwtop jar. Season with salt and pepper. Secure lid. Shake to combine. Step 3 Combine rocket, orange segments, cucumber and avocado in a bowl. Arrange salmon on salad. Drizzle with dressing. Serve.

Yarra Social by Yarra Burn is all about celebrating the everyday. A fresh, approachable and easydrinking sparkling wine, it’s the perfect accompaniment to sunny afternoons or as a sundowner with friends.

Inspired by the first visit of a reigning monarch to Australia in 1954, this wine is the embodiment of the synergy achieved by combining the noble grape varietal Semillon and the Hunter Valley.

Pale to medium straw in colour with a bright fresh hue, this wine displays lifted strawberry and citrus fruit aromas. The palate is soft and round, with great length, exhibiting classic sparkling wine flavours, with a crisp and natural finish.

Classic citrus characters of lime & lemongrass predominate with wonderful intensity and purity. An elegant yet intense palate of pure Semillon fruit providing great line & length. Will drink well now or cellar over the next 15 years.

Pewsey Vale Riesling 2016 is a classic example of dry Eden Valley Riesling, showing the flavours, we consistently see each year from this amazing single vineyard. The wine shows intense aromas reminiscent of fine dried herbs, white flowers, lemon and lime fruit. There is great length and depth with limes, fresh rosemary, white pepper and a hint of tropical fruits. The wine finishes with fresh natural acidity which balances the flavour intensity and a minerality that will reward medium to long term cellaring.

Dutch Courage, Mother’s Ruin, Ladies’ Delight! Whatever you like to call it, gin is undergoing a massive global renaissance, with bigger brands reinventing themselves and a host of craft brands emerging with increasingly inventive styles and botanicals. So, it’s no surprise that with this resurgence, gin tours and experiences are becoming more and more popular. Here’s our pick of some of the best ones:

Penderyn Distillery, Wales The scenery alone makes a trip to this distillery worthwhile. Located in the heart of the Brecon Beacons National Park, it’s an area of outstanding natural beauty boasting clear rivers and tumultuous waterfalls – the same water used to distil their gin. You can sample a range of their award winning Brecon gin along with other spirits at the end of a tour, which costs just £8.50pp and is available 7 days a week.

Bombay Sapphire Distillery, Hampshire UK Arguably one of the most stunning distilleries in the world, Bombay Sapphire has transformed a 300-year-old paper mill into a spectacular conservation area to showcase the ten exotic botanicals that go into every drop of their world-renowned gin. For £15pp you can take a self-guided tour through the factory and into the magnificent glass atrium that houses all the different botanicals. Here you are given the opportunity to smell each botanical’s different aroma and select your favourites, which are then blended into a tailor-made gin cocktail that you can enjoy at the end of the tour in the Mill Bar.

Edinburgh Gin Distillery, Scotland This hidden gem in the heart of Edinburgh allows you to choose from three unique gin experiences. The Gin Discovery tour (£10pp) gives you the story behind Edinburgh Gin, an insight into some distillation techniques, and a complimentary miniature bottle to take home with you. The Gin Connoisseur tour (£25pp) includes an additional fun tutored tasting, as well as a take home

miniature bottle. The Gin Making Experience (£75pp) takes it even further by teaching you their distillation techniques so that you can create your very own gin, complete with personalised label.

New Harbour Gin Distillery, South Africa This funky craft distillery in Woodstock, Cape Town has three super fun gin experiences. The first is a simple gin lab and distillery tour followed by a distiller Q&A and a comparative vodka and gin tasting. In Spirits Lab Mixology, you’ll learn the art and science of infusing a neutral spirit base – like gin – with complementary herbs, fruits and spices. Whilst in the Make Your Own Gin workshop you’ll be taught how to make gin from scratch and infuse it with your favourite botanicals.

Anchor Distilling Company, San Francisco Anchor Distilling’s Tasting Room is a not-to-be-missed San Francisco experience. The tasting session begins with a quick stroll through Anchor’s own edible roof garden, planted with the botanicals used to make their fine spirits. Then a beverage expert will guide you through their unique production process. The tour culminates in the penthouse bar where you can enjoy the spectacular views and a taste of all six of their house spirits, which also include vodka and whiskey.

Archie Rose Distillery, Rosebery, Sydney Archie Rose has reimagined the art of gin with a modern Australian twist; using native botanicals and purified Sydney water. Within a cool post-industrial setting, you can enjoy a tour that takes you through all four of their core spirits for $10pp or a tour and tasting for $20pp. For $95pp you can take a Blend Your Own Gin class. Whilst sipping a Gin and Tonic, you will be given a brief history of gin and a tour of the distillery. Then you’ll be guided through a gin blending session that allows you to unleash your creative flair by infusing 2 x 200ml samples of base gin with individual botanical distillates that you can take away with you.

Up until the 1970’s, Mount Gambier’s vineyards were previously used to produce cheese and butter as part of the dairy industry. Fast forward 30 years and the region is successfully producing a variety of red and white wines, cementing themselves as one of the Limestone Coast’s premiere producers (the Pinot Noir is a must try!). Mount Gambier’s further appeal lies in the mystery and beauty of the Blue Lake. Located within one of the three craters of an extinct volcano, the Blue Lake’s colour changes between seasons – alternating from a vivid blue in summer to a cloudy grey in winter.

Padthaway www.padthawaywineregion.com Padthaway is a versatile region that supports multiple agricultural enterprises including: vineyards, livestock, grain, seeds and horticulture. This regions strength is within its production of excellent Chardonnay as well as a vibrant full flavoured Shiraz to match. Robe www.robe.com.au Traditionally known as a fishing port, Robe has always been a popular coastal escape. It wasn’t until the mid-1990’s, however, that Robe began to harness its vineyard capabilities and flourish into the region it is today. Although a large quantity of grapes is exported from the region, there are still a number of local wineries and cellar doors to investigate. Cape Dombey’s Obelisk is also a sight to see, and possibly hard to miss, as the 19th century navigational guide can be seen from up to 20 kilometres away! • 125ml De Bortoli Prosecco • 125ml lemon sorbet • 40ml vodka

• 100ml De Bortoli Prosecco • 20ml squeezed pomegranate juice • 20ml crème de cassis • 20ml vodka

Place all the ingredients in a chilled metal bowl. Quickly whisk the ingredients together by hand until a light and frothy mousse forms. Spoon the mixture into pre-chilled champagne flutes or cocktail glasses, garnish with a sprig of fresh mint and serve immediately.

GIN SPRING CRUSH • De Bortoli Prosecco • 20ml gin • 20ml elderflower cordial • 1x sprig of mint • Ice cubes Pour elderflower cordial and gin into glass and top with chilled De Bortoli Prosecco. Add ice cubes and a sprig of fresh mint to finish.

Shake freshly squeezed pomegranate juice, crème de cassis and vodka with ice in a cocktail shaker. Mix ingredients and strain into a tall slender glass. Top with chilled De Bortoli Prosecco.

During the early 1950’s, Sir Hugh Beaver (Managing Director of Guinness Brewery) attended a shooting party in Ireland. It was at this event that an argument involving Beaver ensued. The topic: ‘What is the fastest game bird in Europe?’ On realisation that there was no reference book to resolve the dispute, Beaver created the Guinness Book of World Records to maintain and monitor the world’s facts and figures.

Largest cheers (at a single venue) In 2012, Fenway Park (home of the Boston Red Sox) witnessed the world’s largest cheers at a single venue. Although the record was adjudicated using a nonalcoholic beverage (sparkling grape juice) 32,904 people raised their glass in unison to celebrate their baseball teams 100th anniversary.

German native Oliver Struempfel holds the current world record for ‘most beer Steins carried over 40 metres' after successfully walking with 24 Steins. Each Stein glass contained one litre of beer as Struempfel completed the course without spilling a drop!

Oldest cognac sold at auction In 2014, when Polish company Wealth Solutions won their bid for a bottle of Cognac Gautier 1762 it instantly became the oldest cognac ever to be sold at auction. The novelty, however, stems from the partnership Wealth Solutions made with watch manufacturer Armin Strom to create a line of unique timepieces – all of which contain a single drop of the record-breaking cognac.
