Space Before you kick-off, think about where this cracker of a bar is going to call home, or if you don’t have the space, what is it going to call home? Boasting affordability and practicality, a drinks trolley is a solid starting point for your hottest new attraction. Have a look on eBay or Gumtree for some good deals on second hand units. If you’re feeling particularly handy, you can attempt an upcycle with a piece of furniture that’s been gathering dust! There are heaps of how-to on the internet with advice on how to give new life to anything from a TV cabinet, dressing table, desk, or even a long-forgotten piano! If you’re really short of space, group all your liquor bottles on a tray and place it on a side table, or claim a couple of shelves in a bookshelf to fill with spirits.

Liquor This is the fun part. Aside from your favourite tipple, make sure you stock up on the staple ingredients for all the popular drinks and cocktails including vodka, rum, tequila, and gin.

Now, for the cherry on top... (for some of your drinks at least)! Spicing up the end product with a garnish will definitely give your drinks that professional bar feeling! Whether your preference in cocktails is sweet or savoury, cover all bases with cherries, olives, limes, and lemons.

Mixers It will depend on the recipe and what type of drinks you’re trying to conjure, but you can’t go wrong with some of the common mixers including: soda, tonic water, cola, lemonade, and orange juice.

Glassware When it comes to bars, every drink is searching for its long lost glass-mate. You don’t have to go overboard with your home bar, but invest in the basics including: shot glasses, wine glasses, martini glasses, champagne flutes, tall glasses (high ball), and tumbler glasses (old-fashioned).

Tools of the Trade You’re almost there! But before you break the seal of your first bottle, or puncture your first can, there are a few final tools to pick-up that will increase your bar functionality ten-fold. As the finishing touch, make sure you grab a cocktail strainer, cocktail shaker, jigger measure, bottle opener, cocktail stirrer, and muddler – thankfully, all this usually comes in a set together!

Channel your inner bartender with these great tips: Clear as ice Chill out If you’re out of cool beers, don’t sweat it. By wrapping a layer or two of paper towels around your beer, dousing it in water, and placing it in the freezer - your drink will be perfectly chilled within 10 minutes! Just don’t forget to take it out. For both beer and wine, put the bottle in a large bucket of ice and add salt. The salt helps to cool the ice faster.

The best bars serve up drinks with ice cubes as clear as diamonds. The secret? Boil your water before freezing it to get rid of the dissolved gas that causes cloudiness.

DIY Esky Need somewhere to cool the case of beer you just bought? Empty the case, line it with a garbage bag, refill the beers, and add ice. Voila!

FRESH AND DELICIOUS, THIS ELEGANT PASTA DISH IS PERFECT FOR A WEEKNIGHT DINNER OR A CELEBRATORY DINNER WITH FRIEND. SERVE WITH A FEW ICE COLD STELLA ARTOIS AND GOOD COMPANY. INGREDIENTS - 1 kg fresh mussels, washed and debearded - extra virgin olive oil - 2 cloves of garlic, sliced - 1 pinch of crumbled dried chilli flakes (add more to garnish if heat is wanted) - 1 anchovy fillet

METHOD

1. Bring a pan of salted water to the boil. Add a big drizzle of extra virgin olive oil to a separate smaller pan on a medium heat. 2. Saute garlic, anchovy fillet and pinch of dried chilli flakes. Once the garlic is fried slightly toss in the cherry tomatoes and wait for them to soften. 3. Add the linguine to the pan of boiling water and cook per the instructions for an al dente finish. 4. Add mussels to the tomato sauce, stir the pan then cover with lid until all the mussels open. Throw away any mussels that don’t open.

- 12 halved ripe cherry tomatoes - Small bunch of freshly chopped parsley - 250g fresh linguine - Sea salt & freshly ground black pepper

5. Drain the pasta, saving a little bit of cooking water, then put it into a big pot and pour the mussel sauce over the top. 6. Mix together and put the pot back on a low heat for about 2 minute. To finish, season to taste and drizzle over some olive oil, chilli flakes and parsley.

RUM QUEST If you’re a rum enthusiast serious about getting an insight into how your favourite elixir is made – you’re in luck. Some of the best rum distilleries around the world have opened their doors to allow for behind-thescenes tours and tastings. So pack your bags and discover the ultimate rum experience with our top picks:

Barbados

Puerto Rico

The St Nicholas Abbey plantation house in St Peter will transport you back to when it was built in 1658. Surrounded by beautiful mahogany forests and sugarcane fields, the old estate features a rum distillery that upholds the tradition of Barbados’ 350 plus years of rum production.

The Bacardi Visitor Centre is home to the largest high-class rum distillery in the world. Take a free tour of the Bacardi Distillery for an entertaining history lesson explaining how to make the world’s best-selling rum, or sign up for one of their world-famous mixology classes.

Cuba

See how rum was really made at the River Antoine Rum Distillery, whose processes have not changed since the 1800’s. Using a waterwheel to crush sugarcane, it’s the oldest functioning water-propelled distillery in the Caribbean. The tour costs around $2US per person and ends with a tasting of their two rums – some of the strongest in the world at 150 proof. Although they also have a watered down version if you prefer.

Cuban history is richly intertwined with rum, and Havana Club remains the island’s staple. Access to the distillery for tourists can prove daunting, but is well worth the effort. Failing that, the Havana Club Museum replicates aspects of the distillery while also serving classic criolla cuisine, rummed-up dishes, a tasting bar, rum and cigar pairings and a live salsa band.

Jamaica The Appleton Estate located in Siloah in Nassau Valley, gives special insight into the aspect of the rich history of Jamaica and its complex culture. Located on the property is the distillery that has been making rum since 1749, making it the second oldest rum brand known in the world.

Grenada

Australia Recently crowned the ‘World’s Best Rum’ at the global World Rum Awards in London, Bundaberg rum has put Australia on the rum-making map. And you can discover for yourself why the world is taking notice. The distillery experience is heralded, in true Queensland style, with a big bottle of rum at the entrance. From there the tour takes you through the rich history that started back in 1888, culminating in the opportunity to sample a selection of the best rums on offer, including the now famous Bundaberg Blenders Edition 2015.

JAMESON CASK MATES Two heads are said to be better than one, and this whiskey adds serious weight to that argument. Jameson Caskmates is a result of what can happen if you let curiosity and collaboration get the best of you! When the Jameson Master Distiller met the Master Brewer from Franciscan Wells for a drink, a plan was hatched to send a few Jameson casks to their brewery down the road for them to age their craft Irish stout. The time came for the casks to return home and our Master Distiller saw an opportunity which piqued his curiosity. He re-filled the stout-seasoned barrels with Jameson Whiskey, and Jameson Caskmates emerged; a whiskey that retains all the triple distilled smoothness of Jameson Original, albeit singing a different tune.

The subtle notes of cocoa, butterscotch and the gentle hints of hops to this whiskey are indicators that it has bumped shoulders with the craft beer in the barrels; however, Caskmates is undeniably a member of the Jameson family. Best served neat or on the rocks alongside a wheat beer of your choice in what is known as a boilermaker serve!

The wine displays fresh and vibrant aromas of nectarine and white peach complemented by cashew nut oak from barrel fermentation and maturation.

The fruitiest and most flavoursome blood oranges in Corsica were added to the original Cointreau orange liqueur. The unique combination of the mild Mediterranean climate and the rugged Corsican soil gives the blood orange its vitality, intense aromas and exquisite taste. The Corsican fruit has brought a whole new dimension to Cointreau, through the distinctive vibrant notes unique to blood oranges.

On the palate rich, ripe melon and stone fruit characters are prominent. These flavours are accompanied by creamy nutty oak characters balanced with refreshing acidity. The finish is long with lingering fruit flavours.

What is brandy? Basically, anything that will ferment can be distilled and turned into a brandy. Grapes, apples, blackberries, sugar cane, honey, milk, rice, wheat, corn, potatoes, and rye are all commonly used. But whilst you could travel the world sampling a variety of brandies, we’ve narrowed down the most popular types.

Armagnac The other popular variety is Armagnac, also named after the region in France that produces it. It’s fruitier than Cognac with notes of caramel and toffee. Popular brands include Chabot, Courvoisier, and Delord. 0

What’s in a label? The most common brandy age ratings are: - 3 star or VS: (Very Special) a brandy aged for at least two years. - VSOP: (Very Special Old Pale) a brandy aged for at least four years - XO: (Extra Old) a brandy aged six and a half years or more. - Hors d’age or Vintage: a brandy usually ten years or older.

How to drink brandy Enjoy older brandies neat in a sifter at room temperature and younger brandies in cocktails such as a Hot Toddy, Brandy Alexander, Old Fashioned or a Pisco Sour.

Fun facts: - The name brandy comes from the Dutch word brandewijn, meaning “burnt wine.” - As well as being a traditional solution for the common cold or flu, brandy has been claimed to help slow the signs of ageing, treat certain types of cancer, boost heart health, improve sleep patterns, control weight issues, reduce respiratory issues, and strengthen the immune system. - Some of the earliest thermometers used in the 1600’s contained brandy instead of mercury. - It takes about 35 litres of wine to make 4 litres of brandy.
