’ ve finally found myself grilling more again and I couldn’t be happier. There is something very calming and grounding in preparing food on the grill. As many of you have shared, it was a tough time getting through

the many feet of snow to the grill, and like me, you refused to attempt it. Happy almost summer! To welcome this warm season, I hope our readers find Chef Ludo’s grilling tips to be of inspiration. Many might know him from ABC’s, The Taste. Whether you’re a seasoned griller or brand new at it, Ludo shares some recipes and tricks that everyone can find helpful (spoiler: vegetables get the same treatment as meat!). For outdoor entertaining and design, I’m extremely delighted to share articles with you on creating seamless transitions between indoor and outdoor rooms. As consumer interest for outdoor living design continues to stay red hot, many products and services have popped up to meet the developing needs and wants of todays’ homeowners. Organic landscaping is one of the hottest trends in the landscaping world. What was once considered to be on the fringe in regards to landscape design is now in high demand. People are placing more importance on living in healthier environments—plain and simple. The idea of working with nature instead of trying to get nature to

adapt to personal tastes, has been gaining understanding. But what exactly is organic landscaping? Well, it’s more than just creating healthy environments. The essence of organic landscaping is working within the natural limitations of a property to create a thoughtful, beautiful, and inspired landscape plan that enhances your lifestyle as well as the enjoyment of the property. Often times, a landscape design rooted in a naturalistic approach begins with an analysis of what is naturally present in the landscape. Then, digging deeper by identifying ways to incorporate these natural elements in an ecological and sustainable way.

Of course, organic landscaping doesn’t trump function or beauty, but rather incorporates it and embraces it. Choosing plants that are going to be happy in their new home will allow homeowner’s to enjoy the experience of caring for a landscape that much more. Organic landscaping isn’t always easy. Knowing which plants are native—and choosing the proper native species based on the site—is very important. Sometimes, native plants can vary not just be state, but also by county or regions within a county. It’s always a great idea to consult with local professionals to ensure the success of your home’s naturalistic landscape design. He recently released the 10-year anniversary edition of his acclaimed cookbook, “Crave, A Feast of the Five Senses” which delivers his inspiring recipes to the home chef, while encouraging a deeper love and understanding for the process. Shares Lefebvre, “I want people to cook with love. I want them to be aware of what they’re doing. The act of cooking can be as much of a pleasure as eating, and if you really cook with your senses, you begin to find that cooking isn’t work -- it’s play.” When at home, Chef Ludo relies on DCS—the pioneers of professional outdoor grilling—to get sumptuously seared steak; rotisserie roasted chicken; and flavorful vegetables that are grilled to perfection. Built on a heritage of commercial-quality appliances since the 1980s, DCS is engineered to deliver the functionality and power demanded by professional chefs; while withstanding the extremes of mother nature. With warmer weather in full swing, Chef Ludo has embarked upon grilling season with a new obsession du jour: vegetables. 24

With the current movement of so many vegetarians and vegans, and a greater interest in health and well-being in general, it’s no wonder that vegetables are having their grilling moment. Lefevre shares , “People are more interested in their health and learning about where their vegetables come from. The increased access to farmers markets around the country and better quality of vegetables have motivated people to cook more of them, as well...and it’s no fun to cook a vegetable that has no flavor.” Chef Ludo’s secret for grilling the perfect vegetables? “When grilling vegetables, they should be treated like meat/protein: brine, baste, grill,” he explains. “People seem to associate vegetables with salads or stews--sort of the extreme of cooking. To me, vegetables are a main course and should be treated with the same respect.” To bring the most flavor out of vegetables on the grill, Chef Ludo recommends: “Go back to treating vegetables like a protein and brine them the day before in water and salt. You will be shocked at the results.” It’s also important to oil the vegetables, not the grill. Before laying your vegetables on the grill, rub them all over with a light coating of oil,” shares Chef Ludo. While the DCS Grill’s ceramic rods minimize flare-ups by shielding the food from direct flames, you still want to avoid having your vegetables dripping with oil--a thin film is all you need. Chef Ludo’s famed BBQ Carrots, Orange Curry, Yogurt and Avocado is a much-coveted dish at Trois Mec, where the carrots are seasoned with oil and salt and charred until tender. The orange curry, yogurt, and avocado perfectly complement the carrots, imparting rich flavor and meaty depth. Recipe follows.

Season everything on the dish with the Piment 9 tablespoons sugar YOGURT FOAM d’Espelette and then garnish with the 3-5 pieces of watercress Place all ingredients in a medium saucepot. Over medium heat, simmer and cook to slowly reduce by ½. 1 3⁄4 cups yogurt per plate. Relocating from warm, sunny California to the—well—not-always-so-warm-and-sunny Northeast, can certainly be a challenging transition. That transition becomes even harder when spending time at home in your outdoor living spaces is something that you truly value and enjoy. That’s exactly the situation that one family found themselves in when they packed up and headed east, purchasing a beautiful home just west of Hartford, CT. Seeking to bring a little bit of California to their new home, the homeowners reached out to outdoor living designer Michael Gotowala, owner of The Outdoor Kitchen Design Store by Preferred Properties in Cheshire, CT. We caught up with Michael to check out the finished project and understand a bit about his artistic vision he calls “living outdoors fabulously.” “As a designer, I work to understand each family member’s lifestyle preferences indoors and then portray part of that lifestyle outdoors,” explains Gotowala. “ This results in an elevated quality of life.” And with a family of four in tow, Michael’s new clients were looking to do just that. Michael set out to design a series of connected, yet individual outdoor spaces to accommodate large outdoor gatherings and parties, as well as the small, impromptu family dinners on the back deck.

The final outdoor space includes multiple levels with vignettes that are somehow seamless in transition. The upper level, a sprawling deck located right outside the backdoor sliders of the home, features a complete outdoor kitchen perfect for casual, everyday use. Complete with a DCS drop-in grill and Alfresco side burner, the “L” shaped island offers high-top bar seating, a wine cooler, and a beautiful view of the lower pool area. Blue granite countertops that sit atop the granite stone veneer, offer a stark contrast to the clean-lined Brown Jordan Outdoor Kitchens cabinetry. The same finishes are found on an adjacent island that houses an outdoor refrigerator and sink. On the lower level—located underneath the waterproofed deck above—the outdoor great room offers all-season luxury. The lounge style space includes a fully stacked bar area, Wood Stone pizza oven, heated marble floors, and—located just beyond the pass through window—a bubbling spa

with views of the TV for movies. A private outdoor shower is located next to the spa with a granite bench framed by two remote controlled fire features that dance in front of the beautiful stone backdrop. Just beyond the line of perfectly aligned sun lounges sits the clean-lined fiberglass ‘Elegance’ pool manufactured by Leisure Pools. A raised sun deck creates a wall on the deep end of the pool from which two waterfalls spill—a feature designer Gotowala refers to so vividly as “Whale Tale Waterfalls.” Perhaps even more stunning after dark, the pool comes alive with color changing LED lights that make that late night swim even more relaxing. “The more dramatic the outdoor fireplace, the more dramatic the outdoor living space becomes,” confesses Gotowala. And dramatic this outdoor fireplace is indeed. Balanced beautifully by the stone arched woodbins on either side, the

fire feature seems to somehow ‘anchor’ the outdoor spaces together perfectly. Relax by the crackling warmth of the fire on the geometric arrangement of couches or get even warmer on the seat benches in front of the woodbins. Just behind the couches are the breakfast nook and cooking island that houses a unique, Hibachi style grill by EVO. Despite all of the luxurious outdoor living features this project includes, perhaps it’s the masterful design of the spaces that is most impressive. Outdoor spaces are no different than those located on the interior of the home in that they need to be functional—yet beautiful—and designed specifically for the way the client lives. The success of this luxury backyard retreat is a result of the understanding between client and designer—an understanding that clearly paid off for this CT family that can enjoy little ‘staycations’ any day of the week.

W

hen a young couple with 3 children purchased a new home in Westchester County, they knew they wanted an outdoor space for entertaining. As a nice head start, the home did come with a beautiful in ground swimming pool, although it felt quite disconnected from the main residence. But the pool wasn’t the only section of the space that needed to be united. Between the pool and the house, sat a basic wooden deck that was higher than the pool elevation, requiring guests to walk down steps and through the lawn to take a swim. Located yet a bit further away on the rear of the property, was a nice patch of lawn where the children would play. Seeking ideas for bringing these separate outdoor spaces together, the new homeowners looked to William Einhorn—a landscape architect licensed in NY, CT, and NJ, and the owner of LDAW Landscape Architecture and Aqua-Scape Pools in Carmel, NY. So long as they were already engaging in the design and construction process, Einhorn’s new clients were also hoping to increase the amount of overall living space and extend their useable outdoor living season. And so, a few new items were added to the wish list. An outdoor fireplace, a built in BBQ/outdoor kitchen, and a large spa they could use all year long were all to be incorporated into the new design plans. With the features decided, it was time to start bringing

this outdoor entertaining paradise to life. Following his usual design method, William set out to draw about 5 different sketches conceptualizing different arrangements for the proposed program elements. After shooting some property elevations, it was determined that there was only about a 4” difference from the existing wooden deck to the pool area. “My goal was to have the new terrace, fireplace, BBQ area, and spa all on the same level and with similar materials visually tying all the areas together,” explained William. “After reviewing the concepts with the client, we combined aspects of several of the ideas into one final plan.” 3D design models created by the firm helped the homeowners better understand what the space would actually look like—a truly indispensible service for homeowners embarking on any major construction project. The new outdoor fireplace was to be the star of the show and so both the homeowners and William wanted it to be visible from the indoor kitchen and living room area adjacent to the rear sliding doors. “Because the space was long and narrow due to the (existing) slope, I wanted to elongate the 38

fireplace area to include built in seating areas and firewood holders,” explained William. “I chose a 48” modular fireplace unit as the skeleton for the area.” The fireplace elements were finished with beautiful Connecticut Field Stone, complemented perfectly by the rock-faced, Pennsylvania bluestone coping. The BBQ/outdoor kitchen area—complete with it’s own refrigerator—was located on this same patio level, adjacent to the indoor kitchen for the easy transitioning between cooking spaces. “The fiberglass spa we installed was an impressive 10’ in diameter,” remembers William. “A few of the concepts for the spa had it as part of the pool deck with expanded seating. We ultimately decided to have the spa as a more secluded, intimate space at the far end of the pool that could be enjoyed year round by installing equipment separate from the pool which would be shut down for the winter. We decided to have it raised to promote seating on the coping.” Complete with a fully automated computer system for the pool and spa, the homeowners now use their tablets to control the settings and LED color changing technology. In fact, they


can even program the spa to be on and heated for their arrival home right from their iPhones. The existing landscape style around the pool was very natural with many boulders, Bamboo and ornamental grasses. William chose to extend the boulder theme to wrap around the spa area and planted it with Bamboo including a Rhizome barrier. “To keep the naturalistic theme, bill explains, “the new steps leading up from the pool area to the rear lawn were stepping stone slabs approximately 6” thick.” Additional plantings added to complete the new areas of the expanded outdoor space include Butterfly Bush, Hydrangea, Stewartia, Agastachae, Knockout Roses, Coreopsis, and several varieties of ornamental grasses. Creeping succulents planted within the step areas achieve a natural look, making the space feel older than it’s years. The nice variety of plants chosen by the LDAW team provides wonderful color and seasonal interest. In the end, the project proved to be a great success. “This was a wonderful and rewarding project to work on,” remembers William. And it sure seems the happy homeowners would certainly agree. They love the new fireplace area and were even having fires while the construction of other areas of the property was finishing up. The spa has proved to be a big hit with the teenagers and of course with the adults after the kids have gone to sleep. “As a Landscape Architect here in New York, I definitely have seen a trend toward extending the amount of time clients’ can enjoy their properties,” says Einhorn. “Spas, fire pits, outdoor fireplaces, and outdoor kitchens are a few great features that can help achieve that goal.” RESOURCES LDAW Landscape Architecture William Einhorn www.LDAW.net
