F
all in the Hudson Valley is more than just a season. It’s the unique feeling you get when that first burst of ever-so-slightly cooler air brushes your face. It’s the child-like energy you get when you pull out your favorite sweater that you packed away a few months before and you realize that it still fits great.
But perhaps most of all, fall in the Hudson Valley is a time of increased connection. Connection to the locally grown food that fills our stomachs full, connection to Mother Nature as she shows us how truly beautiful she can be, and connection to the people that mean the most to us—our families. Yes, the F in fall stands for family. There’s a picture that hangs on the wall in my family’s home that seems to encapsulate all things great about the fall season. In this photo, my wife, my stepdaughter, and I are biting into a few of the freshest apples found on earth—grown right here in the Hudson Valley. In this issue’s Grow department, we shine some light on the local NY apple market and explain how you can bring a little bit of the orchard to your own backyard. Then in OutdoorChef, we take some of those same apples—along with some other fruit—and throw them on a redhot grill for an awesome approach to outdoor desserts. Our commitment to consistently bringing the finest local outdoor living projects to the pages of Outdoor Home Magazine continues in this issue with a trip to Garrison, NY for a graceful, yet challenging, transformation that is truly a work of landscape art. This fall is a very special one for me. By the time you are reading
—our beautiful 2 ½ month old baby girl—what the fall season in the Hudson Valley is all about. And while that effort will most definitely include a trip to the apple orchard and a few fall festivals, most of our time will be spent in our own outdoor home, enjoying the fall weather on our back deck.

The fall festival season is finally here! It’s time to celebrate the bounty and beauty of New York State by featuring locally made crafts, artisan food, craft beer, and wine. The beauty and history provided by the Bethel Woods site makes the festival experience truly unique. This year, the Bethel Woods Harvest
Festival will enter its 16th season. Beginning August 31st, and running every Sunday through September, the annual Harvest Festival celebrates the bounty, talent, and beauty of Sullivan County and surrounding areas. Each Harvest Festival will focus around a different theme, offering great variety throughout the fall season.
Sept. 28: Rustic Craft Event A showcase of quality handmade furniture, pottery, and other accessories for the home. Oct. 4: Annual Wine Festival Featuring tastings from wineries in the Hudson Valley and Finger lakes regions, all of which will be available for sale. Attendees will enjoy a sampling of wine, as well as specialty foods and goods crafted by local aristans. The afternoon also features live music and a stunning backdrop. Oct. 11: Annual Craft Beer Festival and Chili Cook-Off Craft beers from over 20 breweries will be available for sampling, alongside local food vendors and live music, with performances by Emish and Marah Mountain Minstrelsy.

FRESH FRUIT is truly one of the most versatile ingredients in the cook’s fridge. And while most of us foodies are familiar with the idea of a thinly sliced apple joining a few mixed greens for some much needed crunch, many folks don’t dare throw fresh fruit to the fire. Very easily, however, doing so can transform apples, pears, and other fruits into desserts with depth and healthy sweetness. The best part? You don’t have to leave the outdoor party to get it going.

1. Heat the grill to medium-high. 2. In a small bowl, whisk vinegar, ½ cup honey, and vanilla. Set aside.

HOT BANANA Leave the bananas in the skins to prevent them from sticking to the grill while cooking.

1. Heat the grill to low.

2. Slice bananas in half lengthwise. Set aside.
3. Mix the brown sugar and cinnamon and sprinkle on cut sides of bananas. Let bananas sit for 3 minutes. 4. Grill bananas cut-side down until nicely marked. Turn over and cook 5 more minutes. 5. Remove skins from banana halves and place 2 banana halves in each serving bowl. Sprinkle with chopped walnuts and serve along side a scoop of vanilla ice cream.
4 Granny Smith or Honey Crisp apples Canola oil to lightly coat apples 4 Tbsp. butter, softened ½ tsp. ground cinnamon 2 Tbsp. light brown sugar 8 oz. mascarpone cheese 2 Tbsp. pure maple syrup ⅓ C. chopped pecans 1. Heat the grill to medium. 2. Cut apples in half vertically and remove the core, seeds, and stem. In a medium bowl, toss apples with the oil until lightly coated. Place the apples on the grill, cut-side down and grill until evenly browned. Flip the apples over and continue to grill until nicely browned on skin side. Remove from the grill and allow to cool slightly. 3. Once cool enough to handle, cut the apples into wedges. Place the apple wedges into a bowl and toss with butter, ground cinnamon, and light brown sugar. 4. In another bowl, mix the mascarpone until softened. Fold in maple syrup. 5. Divide the apple wedges among four small bowls. Top with maple-mascarpone and chopped pecans.

As the storms of yesterday continue to morph into the super storms of today, many homeowners are turning to back-up generator systems. However beautiful that might be for you, it is probably nowhere near enough to keep your kids entertained! Planning and creating outdoor living spaces for the family means incorporating plenty of kid-friendly design elements. It also means thinking about safety, gathering areas, costs and maintenance, season-specific items, aesthetics, and a whole lot more as you dream up a space that will entertain a range of age groups. Speaking of age groups, as we all know and hear too often, kids do indeed grow fast, so designing spaces

for them means thinking about what they will enjoy now and next year, and the year after. A pergola, pavilion, retractable awning, or gazebo is a great place to start, as these pieces create a shelter that allows for outdoor enjoyment during a rainy day, an especially sunny afternoon, or a first snowfall. As you decorate this new space, blend style with comfort with outdoor sofas that are stocked with cozy, fluffy cushions, and pillows. You may want to consider installing a television under this covered area - a great addition for the adult sports fan, and a fun area for the youngsters to hang while they watch a movie outside. Just as much as you will need adult specific design elements (such as a wine cooler), it’s a good idea to integrate child-specific design elements. A classic backyard playground could be your best choice. Wooden swing sets give any backyard a richer look (Best in Backyards is the premier supplier in lower New York and all of Connecticut). One great option is a swing set with a built-in tree house. This accomplishes two things: It gives the children a place to play and be active while also offering a sort of hideaway in the form of a fully-enclosed tree house. similar benefits to tree houses, and just like swing sets, they can add to the aesthetics of a property. Homeowners can also opt for a playhouse that looks similar to the house, with styles that mimic cottages, log cabins, or Victorian hearths. Other possibilities for an outdoor living space include trampolines and basketball systems, which will get the kids moving while they enjoy some fresh air. For a more inclusive gathering spot that will accommodate adults and youngsters alike, consider a fire pit. A controlled flame, either natural gas or wood-burning, in a beautiful granite, stone or stucco structure will attract family and friends for evenings of marshmallow roasting all summer long, and during parts of the fall and spring. A garden is a great place for a fire pit to live, with a pathway, and maybe some rocks for seats to keep the natural feel of this outdoor space. Gardens are a natural segue for another type of design element, too: a nature trail that stretches across and winds through your backyard- and perhaps into parts of your front yard. This walkway could lead to endless exploration and education for the youngsters, as they identify plants, taste berries, and grow and pick flowers. Mom and dad could also set up a bird-watching post, complete with a bird feeder and birdbath that will grab the attention of many different birds. A stand with nets for catching butterflies and fireflies will introduce the kids to some of nature’s most precious and tiny insects. If the children become wildlife and nature-lovers, the trail may give them a chance nurture their creativity and learn new skills in their teen years by extending the trail into more wooded areas of the property. No matter the type of outdoor space you are creating, it is important to take safety precautions with children around. With swing sets, 26

that means a proper surfacing. Rubber mulch is a great option, as it is recycled and it can be used in other parts of the property too, without ever having to be replaced. For those who love healthy eating, grilling and outdoor kitchens, be sure to equip your cooking gear with locks, so that items like the propane tank are out of reach for little ones. The same goes with storage sheds, where heavy machinery and sharp objects are housed. And some trampolines come with zippers nets that are protected by a lock so youngsters cannot gain access unless mom and dad allow it. If a pool is part of your outdoor landscape, it is a good idea to purchase a sensor that will act as an alarm system for any disturbances in the water. Remember, designing family friendly outdoor spaces does
not have to be difficult, it just takes time and thought. Consider your child’s likes and dislikes; no one knows your kids as well as you do! Think about how you and your family currently enjoy or might enjoy spending time together. Seek a professional to help you with options. Ever wondered how much apple-y kind of foods you eat a year? Over 44 pounds is the 2013 average! That’s 132 medium sized apples. This includes processed apples, such as cider and sauce, as well as good ol’ fresh apples. That huge amount of apple consumption might be because apples are simply the easiest fruit to cook with (apples on your French toast, on pork or a salad, and then in your dessert). It also might be because they are definitely healthy. Research proves benefits help with

cholesterol, weight management, diabetes, and potentially even kill cancer cells! Or maybe it’s because apples store really well since many apple varieties (particularly thick skinned) can preserve well in the fridge for three or more months! Conveniently, NY is the place to be when it comes to apples, especially the Hudson Valley. The fall foliage, river views, and hills make for the perfect landscape to enjoy the classic apple picking experiences, since it is and always have been quite

the social activity. There are over 50 apple-picking farms across our region. From small one-two variety specific farms to extravagant U-pick hot spots with several apple varieties to choose from, hay rides, bounce houses, and corn mazes. While you might see organic apples in the grocery stores – they are generally not from the HV area due to limitations from our climate. This means organic apples you purchase have traveled from afar. Pick your own apples provide a great compromise – they aren’t completely organic, but your participation promotes apple production, helps local small businesses, and offers you fresh as can be apples. This of course doesn’t mean that you can’t pick and demand semi organic apples from the pickyour-owns! Many orchards use sustainable farming practices that enable quality eco systems. Two particular orchards have been certified for using such practices by Red Tomato: Fishkill Farms in Fishkill, NY and Stone Ridge Orchard in Stone Ridge, NY. What does this mean to you? Red Tomato states, “Eco Fruit orchards are certified annually by the

GROW: THE BIG APPLE IPM Institute of North America and the production protocols are rigorously reviewed by scientists and fruit growers annually.” If you want something more natural and closer, dare to live on the edge and plant your own apple tree. Starting off with quantity, two apple trees are far better than one. Regardless of the variety, apple trees like to cross-pollinate. They will either require or do better with a different apple variety tree right next to it. This means you will need approximately a 4 feet diameter around each tree. Based on your garden design and your selected space, take time to ensure your apple trees integrate well with the space – you certainly don’t want the trees to stick out “in bad way”! Definitely place these trees far from kid play areas and any commonly used areas since apples trees can be messy and attract bees (in this case, bees are good and necessary!). Apples trees also need at least six hours of sunny time, so a sunny spot is a must. Stay away from frost pockets, which are often found in the bottom of hills or slopes. The hardest part is picking the apple varieties! Consider what you will use the apples for (eating, baking) as well as how big you want your trees to grow. If organic apples are a must for you,
choose apple tree that naturally resist disease. Two examples include Crimson Crisp and Golden Rush. Regardless of the size and type that you pick, you can purchase a dwarf apple tree from a nursery. Purchasing a dwarf tree helps to get your return on your investment pretty quick – usually within a year. This reduces the usual apple growing time from three, five, or even seven years! Dwarf trees aren’t always going to stay small; many of them grown more than several feet tall. Apple tree maintenance will depend heavily on your apple varieties, your space, whether or not you purchased your apple tree dwarf –so be sure to get specific suggestions from a landscape designer or nursery professional. In addition to tree maintenance, you can safely grow organic apples by only using plant based pesticide treatments and sprays. Also, you will want insect traps, such as sticky hanging red balls to attract apple maggots. The secret is to start hanging these up in the spring, well before the apples are ready! Organic apple trees will require hand removal of insects, so dig in! While apple trees take quite a bit of your time, they certainly can

be rewarding! Plus, contrary to common belief, apples trees are useful year round: during apple off-season, the kids can play with them, since they make really good climbing trees! Whether you get your apples from a pick-your-own orchard or your backyard, it really is a special moment when you take a bite of an apple you handpicked from a tree. That moment is even better when you take a bunch to make your apple tart or delicious cider. This is especially magical when that apple is from the Big Apple (which is the second largest apple producing state, following Washington). W
hen you book a hotel room, do you wonder why the rooms with a garden or water view are more sought after than those overlooking the parking lot? And, if you’ve ever built a new home, you’ve probably noticed that the wooded lot you covet is more expensive than the clear-cut one right next door. It’s no mystery that we humans have an innate desire to look at and experience nature’s gardens and trees. We notice that beautiful flowering tree along the roadside; the meadow in its full glory spreading out to the horizon. Beautiful gardens and natural spaces attract us like bees to pollen. Gardens are beautiful to look at, but did you know that they can also physically heal us? Just the act of walking through a garden has a calming effect on us. In fact, humans have long been aware of the healing benefits of nature. We instinctively want to be amid nature, not only when vacationing, but especially in times of stress. The sounds and fragrances of nature soothe us and, in scientifically-documented cases, truly heal us. Study after study have shown the same results. One now famous study, conducted in the 1980’s by Dr. Roger Ulrich of Texas A & M University, had patients who were undergoing the same surgery placed in two different types of rooms. One room had a view of a group of trees and the other a brick wall. Patients with the nature view had far shorter lengths of stay in the hospital, less need for pain medications, and fewer negative comments to staff. Aside from the obvious reasons for this variance in healing time due to the soothing-and-relaxing sights, sounds and fragrances of nature, there are also the less obvious: the beauty that the garden provides causes stress levels to decline. This results in blood-pressure stabilization and symptom-reduction that would otherwise exacerbate, or even precipitate, illness. And, if you’re content and relaxed, you simply are healthier. While there are numerous different types of healing gardens that can be created for specific groups of users, including hospital waiting rooms, Alzheimer’s care gardens, or a public sensory garden in a county park, even the simplest garden in you outdoor space can become a healing garden. Imagine decreasing your stress levels through soothing sights and sounds in your own space after returning home from a bad

day at work, doing some outdoor exercise (yoga anyone?), or just taking a moment to cut some flowers for the house. Likewise, if someone who has lost a loved one goes out to walk through a grouping of trees, that space can become a healing garden for them. Some healing gardens are not that simple. When designing for specific groups, such as Alzheimer’s patients, Bruce Zaretsky, at Zaretsky and Associates, Inc., says it’s critical to be extremely cognizant of the features, plants, and even the layout of the garden. For instance, Alzheimer’s patients must have some type of finding device, be it a pergola, a sculpture, or even a simple flagpole to orient themselves as they stroll the garden. One of the effects of Alzheimer’s is that the patient can quickly become disoriented, getting lost in as simple a location as a pathway’s dead end. Zeretsky also suggests to consider everyone who might commonly be in the garden, whether it be intentionally visiting or just accidently in that part of your outdoor space. It’s not uncommon for a client of Zaretsky’s
to require non-toxic plantings, as some groups of Alzheimer’s patients or even children may decide to eat that very attractive berry hanging from the branch. Designed properly, healing gardens can be beautiful spaces that cater to all types of people, whether they are recovering hospital patients, returning veterans suffering from injury or PTSD, children, or just the ordinary homeowner with a stressful life. Soothing sounds of running water, the mesmerizing vision of a fire pit’s blaze, and the pleasing scents of a garden’s fragrances all come together to reduce anyone’s stress levels. These coupled with the various birds, butterflies, and other wildlife that gardens attract, can make your backyard a better healer than your HMO. And a lot more pleasant. Shangri-La Style A Contemporary Garrison Retreat Is Transformed Into A Spectacular, Free-Flowing Oasis words by Stephanie Schutz photography by Larry Merz
While Shangri-La is fictitious, we all can relate to the desire of owning an earthly paradise, or a happy place, that isolates us from the outside world. The development of a relaxing and private retreat seemed like a modest vision to the new homeowners of this Garrison, New York residence, but the reality was much more complex when they began a complete landscape overhaul on their property. With five very distinct objectives on their list, the new homeowners sat down with Wilton, Connecticut-based, landscape architecture design-build and maintenance firm, The LaurelRock Company to discuss their ideas. Their objectives included: creating wooded walking paths, making the house invisible from the road, opening up the woods to take advantage of the views from the deck, adding a swimming pool, and creating an attractive and welcoming entry court. The three-phase, five-year, landscape project was inspired by Ken Druse’s book, The Natural Shade Garden, which explains how to design and maintain gardens in all types of shade: wet, dry, dense, or partial. The homeowners wanted to establish a lush foliage effect on their naturally shady property. According to LaurelRock President, Burt DeMarche, “the existing woods presented a dense canopy and fibrous root mat that required selective thinning before any new ground floor

planting could be successful.” The solution included removing dead, dying, and diseased trees to create better growing conditions. Native flora, typical of a northeastern mid-slope oak forest habitat, were introduced and irrigated through the first few years until they became established. In addition, experiments with various hybrid Rhododendron and Dogwood were tried, along with various perennials and grasses such as Hosta, Primrose, Phlox, sedges, ferns, and mosses. The next step of the project was even more intricate: creating a hidden oasis with a driveway angled off the access road at about 60 degrees and a garage that’s only 50 feet from the neighbor’s driveway. Undeterred, the LaurelRock team developed a solution that shifted the entry point of the driveway about 30 feet up the access road so that it intersected the road at a right angle. Today, the realigned driveway is no longer viewable by passersby, and the redesign permits a visitor’s first view of the house to be from this vantage point, framed by beautiful plantings. Visitors are welcomed by flanking beds and a masonry landing to emphasize the entry itself. Additionally, an arbor was added to create a courtyard 40

feeling, define the space, and drawing attention to the front door, versus the view beyond. Nature’s gifts are often the best ways to find relaxation. For the homeowners, the dream of standing on a deck overlooking the Hudson River at sunset or taking in the sunrise with a hot cup of coffee in hand while listening to the birds chirp was at the top of their wish list. To fulfill their vision, The LaurelRock Company began opening up the woods on the slope to the west to take full advantage of the views from the rear deck to the Hudson River Valley. This phase of the project required a careful execution in order to avoid exposing views to the private school situated down slope and to the west. “After careful analysis our team decided to limit the view to the northwest quadrant only, highlighting the dramatic bend in the river at West Point without sacrificing their privacy,” said Allan Broadbent, LaurelRock Lead Designer and Project Manager. Having envisioned a special place for their children and grandchildren to gather for years to come, the homeowners’ design concept included the addition of a pool and spa to

the landscape. Unfortunately, the logical location for a swimming pool was occupied by an existing septic system that the client did not want to disturb. Situating the pool in the only other desirable location necessitated placing it close to the house and on ledge rock and required careful blasting in order to not undermine the foundations. “The solution included drilling a close knit pattern of charge holes for the blasting allowing for a “softer” detonation, and a smoother, more regular edge to the remaining rock. Much of the blasted rock was then used to retain the slope in the spaces between remaining ledge. The rocks were placed with ample space between to allow for planting to add interest and increase soil retention,” added Broadbent. After working through many challenges, the homeowners’ landscaping dreams came to fruition. The view of the Hudson River, woodland garden, pool and spa, expansive deck, and private entrance satisfied their need for a quiet and visual relief and achieved their vision of a personal Shangri-La … a secluded place of rest.
