The talented team behind the Duke of Cornwall’s rosette-award winning food From teenage apprentice to head chef at the Duke of Cornwall Hotel’s award-winning restaurant – meet Kevin Scargill, the local boy who’s risen to the top. The former Stoke Damerel Community College student was a 17-year-old learning the trade when he started at the Duke of Cornwall 16 years ago. He now heads up a team of seven whose skills, together with the front-of-house service, have secured the hotel a coveted AA rosette for its fine dining experience. With weddings, banquets, functions, the ‘Tea at the Top’ afternoon tea experience, and the restaurant which is also open every day to non-residents, Kevin and the team are kept busy all year round. And he wouldn’t have it any other way. “I love what I do,” said Kevin. “Food is my passion and you’ve got to have a passion for it because it’s not a normal 9-5 job. It’s definitely true when people say you have to be slightly mad to be a chef.” Kevin wanted to broaden his experience so a few years ago he left the Duke for a while to work for the US military in Afghanistan, where he was in charge of a kitchen with up to 150 chefs from around the world. He also worked at a UN base in Cyprus and spent some time in Dubai before heading home – and back to the Duke of Cornwall: “I was away for about three years and when I got back they were looking for a new head chef. So that was perfect timing.” Kevin oversees all of the menus and gets to introduce innovative dishes alongside the Duke’s favourites: “Most of our food is pretty classic,” he said, “but we also like to have something a little bit different as well. My own favourite at the moment is the beer-battered mackerel which we have as a starter. It’s an example of how you can create a lovely dish by trying things out. I don’t like working strictly to a recipe. I like to experiment and build the flavours up.” Kevin encourages the rest of the team to bring their own ideas to the table, too – including two who are learning the trade under Kevin’s guidance; the training cycle has gone full circle. “We have a very talented team,” said Kevin. “Our

sous chef, Nicholas Reed, is brilliant at coming up with new dishes and we bounce off each other all the time. Everyone offers up ideas which we’ll try out and introduce as long as they fit in with what our clientele would enjoy.” There are some new mains on the menu this summer that make the most of what’s in season now. Favourites include Westcountry beef fillet, ribeye steak, corn-fed chicken supreme, pork belly, duck breast, local fish, and a range of vegetarian options. There is also a set menu for pre-theatre or pre-concert events, where booking is essential. A feature of all the food is great West Country produce: “Supporting local businesses is a big thing of ours,” said Kevin. “We work very closely with local fish, meat, and fruit and veg suppliers.” The restaurant’s award-winning quality and service applies equally to the hotel’s weddings, banquets and privately-booked dinner parties and functions. Subsidised menus are available for charitable organisations. The team will create a tailor-made menu to suit your tastes and budget and could be an afternoon tea, a finger buffet or a sit down meal. You even get a choice of rooms for your event, from the large ballroom and spacious restaurant, to smaller function rooms. Operations manager Pete Adams said: “We can cater for parties of all sizes, from 10 people up to 280. What really sets us apart is the rosette food we offer and our decades of experience of service.” A sample restaurant menu is on the website. Supha’s Street Food Emporium grows from strength to strength. After hitting their first year in February this fresh little eatery is gearing up for a fantastic year ahead. This truly unique independent has gained a reputation as one of the leaders in South East Asian street food in the South West - if not the country. They have just launched their eagerly anticipated new menu with an even bigger seafood offer and although a few old favourites have gone, they have been replaced by some fantastic new dishes. Still the only eatery in Plymouth Local scallops with a fresh fish counter stocked from the local Sutton Harbour Fish Market just two minutes away, it also boasts the best gluten free offering in the city and caters wonderfully for vegetarians and vegans as well as a selection of locally sourced meats. They produce all their sauces and pastes in-house: there is no bog standard off the shelf here and every dish is lovingly prepared in the open kitchen. And with the summer not far away this must be one of the best places to sit and watch the sun go down in the city, whilst sipping on a cold drink and feasting on the freshest food in town. Langage Farm has become well known for its mouthwatering choice of over 30 flavours of Ice Cream and Frozen Yoghurt within the local Plymouth community and nationally. Started in the 1950’s by Mr and Mrs Harvey, the cream for their much loved products, including their delicious Langage Farm clotted cream, still comes from their local herd of Jersey cows. The herd of over 280 cows graze in fields just a couple of miles up the road from the Langage shop located on the Ridgeway in Plympton. The shop was opened in 2007 by Tracie Germain and her manageress Jane Parkinson and it’s the only place where you’ll find all the product range and flavours under one roof. Coming from their home in the world-renowned Barbican Theatre in the ancient corner of Plymouth’s Barbican, the B-Bar offers an authentic Thai menu in a relaxed setting with quality live music, comedy and spoken word performances throughout the week. The future is bright for the Orangery garden café With a complete top-to-toe refurbishment and a seachange in its food ethos, the historic Orangery garden café at Mount Edgcumbe has been transformed into a beautiful venue for all seasons. The Orangery now offers fresh home-made food that’s jam-packed with local produce and, with its contemporary but still friendly atmosphere, it’s fast becoming a favourite for couples looking to hold their wedding reception in a unique setting and for people celebrating special occasions. The transformation has been carried out by Michelle Neale, whose Camellia Catering business took over the running of The Orangery three years ago. Michelle had already been working at the venue for four years as a team member for the previous management so she knew what she was taking on.

The Orangery has a new kitchen and bar and a menu that finally does the venue justice. Gone are the pre-packed sandwiches, replaced by tasty meals and cakes made using ingredients sourced largely from Devon and Cornwall. The menu includes the all day Orangery breakfast including a vegetarian option, all day brunch, gourmet burger, sandwiches and a children’s menu. The bar and cocktail menus also celebrate local ales, ciders, rum and gin. Among the cocktails is the ‘Poldark and Stormy’ featuring Cornish-produced Dead Man’s Fingers Spiced Rum with Fever Tree ginger beer, fresh lime and bitters served over ice. Cornish Bramble, meanwhile, has Tarquin’s Cornish gin as its main star. The Sunday roast offers a choice of local meats or a nut roast with seasonal vegetables for £11. Word has got out about these so it’s best to book in advance. The Orangery is a short, level walk from the Cremyll Ferry landing pier and usual opening times are 10.30am to 4pm, seven days a week, with later openings in fine weather.
