The Port and 75 years of memories Nick Seebruch nicholas.seebruch@tc.tc
CORNWALL, Ontario – One of Cornwall’s oldest institutions celebrated its 75 year legacy on Monday, Dec.26. It was on Boxing Day 1941 that the Port Theatre, then known as the Roxy Theatre first opened its doors. The Abbot and Costello classic Buck Privates was the first movie to be shown on the Port’s big screen, airing at 8 p.m. that night and patrons were lined up around the block to pay their 25 cents to see the comedy show in Cornwall’s new theatre. Roxy, was a franchise theatre chain and nine other Roxy theatres were built in 1941, but Cornwall’s Port Theatre is the only one that is left standing. The theatre is currently owned by Larry Sylvain and his wife. “I’m a keeper of The Port,” Sylvain said on the night of the big celebration. “It sort of mirrors being a lighthouse keeper. We own it on paper, but we are the keepers of it for the community.” At the celebrations on Dec. 26, Cornwall’s
Little Historian Sara Lauzon MC’d the evening’s proceedings and shared some of the history and her own favourite memories of The Port. In 1966, The Port, (then Roxy) briefly closed and opened under new management under its current name. Sara fondly remembered Glenn MacGillivary, the projectionist at The Port for 40 years and her first boss when she started working there. Also on the menu that night was a screening of Buck Privates and like in 1941, when the movie was the first to be screened at the new theatre, admission was 25 cents. Sylvain has endeavoured to make The Port more than a movie theatre and bring new entertainment to Cornwall. This has included bands and musicians such as Paul Deslauriers, a Queen tribute band which is coming on St. Patrick’s Day 2017 and Ring of Fire, a Johnny Cash tribute band featuring Cash’s original drummer. Sylvain has also brought comedy acts to Cornwall, earlier in 2016, he brought famed Canadian comedian Mike MacDonald to The Port on an event card that featured acts from both Yuk Yuk’s and Just for Laughs.
Larry Sylvain and his son Nick stand on stage at the 75th anniversary of The Port theatre on Monday, December 26 (Nick Seebruch/ Seaway News).

Canada 150 opens in Cornwall Marc Benoit, Special to TC Media CORNWALL, Ontario - Cornwall kicked off Canada’s 150th celebration year in style on Sunday, January 1, with fun filled winter festivities in Lamoureux Park. Crowds congregated around the splash pad for a variety of fun, entertainment, and refreshments in the afternoon. Snowshoeing, snow painting, tobogganing, and other family friendly activities were available for kids of all ages to take part in, including a horse drawn sleigh ride. “I haven’t seen this many people in the park in the winter time since I’ve been in Canada,” said Mayor Leslie O’Shaughnessy. “I hope that this is something that continues every winter from now on.” City organizers are hoping to keep the good times rolling throughout the rest of winter, with smaller activities planned for nearly every weekend, along with other celebrations throughout the year to mark Canada’s big birthday celebration.
City councillor and Canada 150 committee member Elaine MacDonald cuts the birthday cake, before handing off the sweet treat to the kids in the crowd at Cornwall’s New Years Day celebration (Marc Benoit/ Seaway News).

CORNWALL, Ontario - The annual MS Italian Night is coming up on Jan. 13. This annual event is hosted by the Cornwall Legion Branch 297 and is always a sellout success. For over 15 years, the MS Society of Canada Cornwall and District Chapter has held the MS Italian Night as a thank you to the community for its support. Volunteer office manager Karen TorrieRacine said that the January 13 event is usually sold out. “Its a fun gathering,” said Chapter Chair Claude Clement. “Its a way to thank people for supporting the MS Society. Everyone can get together and get rid of the winter blues.” One major attraction of the event is the Kealy-Greer All Star Band which have made the MS Italian Night their only performance

The Cornwall Legion Branch 297 is a strong supporter of the event and attendees usually fill every room of the Legion that night. The Legion also provides food catered to alltastes, including gluten free, vegetarian and regular Italian. In addition, the Legion has been a longtime corporate sponsor to the MS Society, which they strongly appreciate. Any Italian meal, gluten free or not, would not be complete without the sauce, which is being provided by Casa Paolo. Additional corporate sponsors of the event are Roy Perkins and Perkins Rona, the Cornwall City Press, Casa Paolo, and Scotiabank. Some Scotiabank employees also serve the meals on MS Italian Night. There are 300 tickets available for the event at $25 a piece and will be going fast. Tickets can be purchased at the Cornwall Legion, the MS Society and at Rona.

The Eastern Ontario Training Board (EOTB) is looking to promote job creation by educating youth with real-world skills and guiding them towards fulfilling careers. The EOTB is offering a new job training and placement program to help it meet its goal. The new program is open to high school graduates between 18 and 29 or those with disabilities. Recruitment for the new training program opens on Jan. 3. Some of the training programs on offer include construction, manufacturing, food and beverage services and office support services. Each successful participant will get a certificate at the end of the program, which is something that will always remain in that person’s portfolio and on their résumé regardless of whether they wind up working in that field or not. The length of the in-class portion of the program varies from course to course, and different courses will be offered throughout the coming months, starting with Manufacturing Techniques. There is a six week in class portion of the program followed by a four week paid placement. EOTB pays for the in-class training and offers employers wage subsidies during the job placement. The EOTB has a 70 percent success rate in placing students with their new jobs. “Ultimately, our goal is that the placement becomes permanent,” said Martha Woods of EOTB. The EOTB also offers personalized coaching to help new employees overcome obstacles to employment, such as time management, or difficulties in getting to work, or conflicting responsibilities. There are 70 total spots available across the different training programs.

OPINION
What did we lose in 2016? Nick Seebruch nicholas.seebruch@tc.tc
With everyone focused on the New Year, I want to take one last look back at 2016 and see what lessons it can teach us for the future. More than the political upheaval, civil wars and mass migrations, the thing that the vast majority in the Western Hemisphere will think about when they think about the year gone-by are all of the celebrity deaths. The way the media reacted to these deaths and the fact that they wound up at the forefront of attentions says a lot about what celebrity characters mean in our culture. With so many familiar faces gone from our celebrity pantheon, how will Western Civilization continue? I’m of course being tongue in cheek, but the year saw the loss of celebrities from all ages, and all mediums. No celebrity was safe, whether they were as old as Debbie Reynolds, or as young as Anton Yelchin. The sports world lost legends such as Muhammad Ali and Gordie Howe, music lost David Bowie and Prince, and the silver screen lost Carrie Fisher and Alan
Rickman. After the passing of each, their lives and accomplishments were relived, re-evaluated and revered for the full 24 hours after their deaths. I am sure that the families of each and every person, celebrity or not, who passed away in 2016 felt their loss deeply, but in the case of celebrity deaths, far more than their immediate families mourned for them. On social media, one would get the sense that hundreds, if not thousands of people felt the loss of Carrie Fisher as if they knew her personally. Not just Fisher, but most of the celebrities who passed away in 2016 had their lives lionized in the media. To be sure, they were, for the most part, accomplished individuals and at the very least, great at their sport or art, but did they match the picture painted of them after their deaths? What I am trying to get at if I were to put it bluntly is, are dead celebrities as great as we think they are? All of these celebrities were ultimately just people just like everyone else, but their lives were instead held up as exemplars and that society was now at a loss without them. My
point to all of this is that whether or not Carrie Fisher, Muhammad Ali or Gene Wilder were as great in reality as everyone thinks they were is irrelevant. Rather than seeing the world as worse off without these celebrities, think instead of what they would do if they were still here and try to
be that person ourselves. Be who you think David Bowie was. After she passed one would think that Carrie Fisher could move mountains. Her cause was creating awareness for mental illness. Her legacy only ends if instead of taking up the cause, we mourn it as being lost with her.
New Year brings more secure future for elephants elephants now roaming the continent according to the Great Elephant Census (GEC) The $7-million project was launched in 2014 by philanthropist and Microsoft co-founder Paul Allen and Vulcan Philanthropy. It spanned 18 countries, with more than 90 scientists working together. Progressive countries like Kenya in East Africa have taken drastic steps to fight poachers and put an end to ivory trade. Kenya’s President Uhuru Kenyatta set fire to the world’s biggest ivory bonfire a few days ago after demanding a total ban on the trade in tusks to end illegal ivory trade. “The height of the pile of ivory before us marks the strength of our resolve,” Kenyatta declared before setting fire to the ivory. “No one, and I repeat no one, has any business in trading in ivory, for this trade means death of our elephants and death of our natural heritage.” Conservationists are warning the world these majestic elephants cannot survive Asia’s

high dollar demand for ivory tusks. There has been a huge increase in poaching activities and it is often reported that some wildlife agents, customs officials and government leaders are being paid off by what is being viewed as a well organized crime group. This group, it is claimed, is moving ivory from Africa to Asia in huge quantities. The elephant population in Africa in the 1950s numbered five million. Elephants in Africa were pushed to extinction because of the thriving ivory trade. If poaching continues, it will severely threaten tourism, the continent’s biggest foreign exchange earner. Poaching is on the increase because of the demand for ivory in China. The price of raw elephant tusks in China has more than tripled in the past couple of years. If the ban in ivory trade in China goes through, this country will be remembered for saving Africa’s elephant population.

There is brighter hope for Africa’s dwindling elephant population. Many wildlife experts believe the elephants, which have roamed the wilds of Africa for many generations could be extinct by 2025. In some countries of Africa, including Sierra Leone Senegal, elephants have already been driven to extinction. The year 2017 has ushered good news for elephant lovers. China has officially announced it will ban all domestic ivory trade and processing by the end of this year. This is indeed good news for wildlife experts. African ivory is highly sought after in China where it is seen as a status symbol, and prices can reach as high as $1,100 a kg. “China will gradually stop the processing and sales of ivories for commercial purpose by
the end of 2017,” the official of Xinhua news agency explained, citing a government statement. This is indeed great news that will shut down the world’s largest market for elephant ivory. China has finally decided to show leadership to ensure elephants have a fighting chance to beat extinction. This is definitely a game changer for Africa’s elephants. The ban comes on the heels of a new census which shows the decline in the population of African elephants is “staggering.” Experts around the world fear elephants could disappear if no action is taken immediately. Now China has decided to ban ivory following mounting pressure on the Asian economic power. The African population has decreased a staggering 30 per cent in the past seven years. That meant there are 144,000 fewer

OPINION HERE AND THERE Slap on the wrist from one of the old football sweats, George Atkinson. In recent column we referred to the former “Atchison’s Feed Store” on First Street East. It was Atkinson’s where flour was sold by the 25-pound bag. ... True story. When city’s information officer Kevin Lajoie worked in the Standard-Freeholder newsroom he was once lectured by his boss over his use of “white stuff” in snowstorm stories. The knucklehead explanation: Readers might confuse it with cocaine, which carried the street name “white stuff”. Hey, you can’t make this up. ... This was about the same time that a memo informed reporters that they were spending too much time researching stories and too little time writing them. AROUND AND ABOUT When in opposition, the Trudeau Liberals railed and wailed over this sort of mindless spending of taxpayers’ money. (Remember the furor over the $16 glass of orange juice?) The Canadian Press has uncovered documents that show Status of Women minister Patty Hajdu, a rookie MP, milked $1.1 million from the tax purse for “unnecessary” office renovations. ... One of the great myths is that all folks - from the wealthy who can afford the best legal brains available to those at the bottom of the food chain - are treated equally in our justice system. What’s that line, something about everybody is equal, just that some are more equal than others. ... Jim Day, claimed by a heart attack last month, was arguably one of the best pressmen to come through the doors of the Standard-Freeholder. When I worked the newsroom night shift, J. Day, the pressroom foreman, had one request - get the paper out before last call. ... I’m looking forward to Donald

Trump’s first State of the Union speech. For all the wrong reasons, it could be a keeper. ... The big challenge for his press secretary will be explaining to Americans what the prez meant to say in his overnight tweet. ... And if you are wondering where to get a copy of the January 2000 edition of men’s magazine GQ, you are out of luck. The mag’s website has a notice that“unprecedented demand”has depleted its stock. This is the edition that featured a sultry looking Melania Trump, wearing nothing but a neck choker, on the front cover. No truth to rumour that Bill Clinton grabbed up the last 10 copies. SPORTS STUFF Jean Leroux posted a perfect 6-0 record in regular play of the Cornwall Curling Center senior men’s Rona draw then chalked up back-to-back wins in the 12-team playoff round to claim the title. But despite the perfect mark, a tiebreaking formula was needed to break a playoff deadlock with Stewart McDonald. Members of Leroux’s rink were Maurice Renaud (third), Joe Lemire (second) and Mel Haugerud (lead). Gilles Viau finished third. Roger Lalonde placed fourth, Pierre Sauve fifth and Alex McDougall sixth. ... Chicago Blackhawks line-up for the NHL Winter Classic alumni game against St. Louis Blues in the Windy City included Cornwall native Steve Poapst. He played several seasons on the Hawks’ blue line. The St. Louis alumni squad had a star-studded roster that included Hall of Famers Wayne Gretzky, Brett Hull, Peter Stastny, Al MacInnis and Chris Pronger. Before making the long leap to the pros, Poapst played two seasons with Smiths Falls Bears before going to Colgate University on a hockey scholarship. He lives in Chicago where he is involved in minor hockey.

Some random thoughts to kick off the new year. Latest polls show that Preem Kathy’s popularity is racing toward single digits. She finished 2016 with a 14% approval rating. In rural Ontario, where Hydro One bills have coined the phrase energy poverty she is even more unpopular. You might recall that Brian Mulroney put up similar numbers in the months before the Conservatives were all but wiped out. But the Queen’s Park opposition might want to hold off on a premature celebration and keep the corks in the champagne bottles until the 2018 votes are counted. The wanna-bees in the opposition benches have been down this road and somehow at the hour of decision managed to yank defeat from the jaws of victory, mostly by shooting themselves in both feet in the campaign’s stretch run. There is good reason to believe that the preem’s approval numbers might continue to sink. Might even get into single digits. The year-end poll came before the shock at the pump on Jan. 1. Actually, the oil companies got a head start on the price increase created by cap and trade. Then there will be the natural gas bills ... and the inevitable price increases in goods and services caused by higher operating costs linked to higher energy bills. While nobody should count out the Liberals extending their reign another four years, thanks to the GTA and southern Ontario, you can bet that in Stormont-Dundas-South Glengarry, where Wynne is less popular than a belch in a prayer meeting, Conservative MPP Jim McDonell will steam roll
the sacrificial lamb served up by the Liberals. TRIVIA ANSWER The huge celebration in Toronto on May 3, 1967 was one that isn’t likely to be repeated for some time. It was the last time the Maple Leafs sipped champagne from the Stanley Cup. TRIVIA This incumbent Stormont MP lost his seat in the 1962 federal election. His opponent’s razor-thin margin of victory - just 65 votes - was the smallest in the riding’s history. THIS AND THAT Thumbs up for the senior men’s division at Cornwall Curling Centre. At the Christmas draw luncheon the hat was passed in support of Hospice Cornwall. Ten minutes later president Gerry Paquette announced $918 has been raised. ... Chicago finished 2016 with 750 murders, most involving guns. That’s more than the murder rate for New York City and Los Angeles combined. The Chicago carnage included 4,300 people wounded by firearms. The city kicked off 2017 with three murders in the first six hours. ... Fred Engert who passed away last week ran a great little Pitt Street deli called Fred’s. It was a Pitt Street fixture for years, originally called Kenny’s which was owned by Nazi death camp survivor Kenny Ertle. ... Notice slapped on the front door of Kelsey’s Restaurant on Brookdale says it is closed but hopes to re-open in the near future. ... How things have changed in the education business. In a June 12, 1964 Standard-Freeholder story school board officials were concerned with overcrowded schools, along with a shortage of high school teachers. Cornwall Collegiate was so overcrowded the basement rifle range was converted to a makeshift class room. Imagine in today’s climate putting kids in a rifle range.

Pre-heat oven to 360 ° F (180 ° C). To prepare the orange peel garnish, cut the orange peel into rough strips, about 1/2 inch wide. Avoid including the white pith when you cut the strips, as it has a bitter taste. Square off the edges of each strip using a sharp knife and then slice each strip into very thin julienne. Place the julienne pieces into a shallow pan of cold water, bring to the boil and blanche for two minutes (this will soften any bitter taste remaining in the orange peel). Transfer the orange julienne pieces to a bowl

and add the Cointreau or Grand Mariner on top of the orange peel; allow to soak. Now section the orange pieces: with the remaining orange pulp, slice off the very top and bottom of the orange. Using a sharp paring knife, remove each individual orange section, cutting in-between each membrane. Place the orange slices in a bowl and cover with a bit of orange juice to keep moist while you prepare the rest of the dish. Now prepare the orange sauce: place sugar and red wine vinegar together in a saucepan and whisk over medium high heat for several minutes until the mixture turns a deep reddishbrown color. Add the orange juice and chicken stock and whisk over medium heat until the sauce reduces to about 2/3 of the orginal volume- this will take about 5 -6 minutes. Remove the pan from the heat and set aside. Prepare the duck breasts: trim the fat around the edges of each breast and score the top of each breast (the white fat part) using a sharp knife. Your knife should only slice through the fat and not puncture into the duck meat. Season both sides of each breast with salt and pepper. Cook the meat: Add a small amount of oil to a fry pan and place over a high heat. Sear the scored fat side of each duck breast first for about three minutes until golden brown and crispy. Turn the breast over and cook for about four minutes over medium heat. Remove each breast from the pan and make a small incision on the bottom, about an inch deep- this helps to cook the inside of the breast more easily. Now wrap each breast in foil and place in the oven for 4 – 5 minutes, until the inside is cooked until pink in color. If the inside
is still red, continue cooking for another few minutes. Remove from the oven and let the meat rest covered in foil for 10 – 15 minute. Drain the fat from the fry pan; over medium heat, add some water or stock to the pan and use a spatula to scrape the brown ‘cooked bits’ off the bottom of the pan. Stir and then add this liquid to the Orange Sauce (continued from step # 6). To finish the Orange Sauce, add the Cointreau or Grand Marnier that was used to soak the orange julienne slices. Continue to whisk the sauce over medium heat until it reduces further. Combine the white cornflour and port together to make a paste and then add to the Orange Sauce to help thicken it further. The sauce should be rather thick in consistancy, but not heavy like molasses. To plate the dish, slice the duck breast horizontally into thin slices, pour some sauce over the top of the meat, place a little of the orange julienne slices on top of the meat and arrange a few orange slices around the side.

Kelsey’s closes Nick Seebruch nicholas.seebruch@tc.tc
CORNWALL, Ontario - Kelsey’s restaurant in Cornwall closed on the morning of Monday, Jan.2. Owners Kevin and Wendy Hargreaves cited growing operating costs as the reason for closure. “Hydro, gas and the minimum wage increase really hit us hard,” explained Kevin Hargreaves to Seaway News. “We actually should have closed Dec. 24, but we couldn’t in good conscience do that right before Christmas and New Year’s. We wanted to give our employees one last pay at the beginning of the month of January.” Hargreaves said that Cara Operations Ltd. had taken over the management of the site and
that plans were to re-open Kelsey’s in a few months. “The company has been given the contact information of all of our employees and they will be contacted when the restaurant reopens,” he said. “Until then they will likely be applying for EI.” The Kelsey’s employees were told about the closure at a staff meeting Monday morning. Hargreaves said that he and his wife Wendy will be staying in the community. “We loved serving the community,” he said. “Our staff became like family and our customers became like friends.” Patrons who have Kelsey’s gift cards can still redeem them at other Kelsey’s franchises or other Cara owned brands such as East Side Mario’s.

It took a while but Winchester District Memorial Hospital (WDMH) was pleased to welcome its first baby of 2017 on Jan. 1 at 5:57 pm. Henry Daniel Teasdale weighed 9 pounds, 8 ounces. He is a second son for Julie and Daniel Teasdale and a brother for Jack. The Teasdales live in Bainsville. “The experience was great and we were actually very surprised when we got there at noon and the nurses told us we would likely be
the first baby of the year,” says father Daniel. “Henry will be welcomed home by a very excited big brother Jack.” In fact, the Teasdales went home the same night and will be supported by their midwife in the days ahead. Henry was delivered by midwife Sarah Tucker, one of the newest members of Gentle Beginnings Midwifery Clinic. She was assisted by midwife Celine D’Arcy. “I assessed Julie at home and then we came to the hospital. It was super exciting and fun to start off the new year with a new baby,” said Sarah.

To the snowmobiler who is trespassing on private property in the Riverdale area, to inform you that snowmobiles are licensed for trails only, not in residential areas and not on private driveways, yards and lawns. Pet Tip of the Week: Most animals require extra calories during cold weather to maintain a comfortable body temperature. If you’re cold, they’re cold too. Please speak with your veterinarian about adjusting your animal’s diet accordingly. Snow does not provide outdoor animals with adequate water. Extra care must be taken to ensure that drinking water is always available. If you know of an animal who is being neglected or abused, call the OSPCA. Unlike most crime victims, animals can’t seek help for themselves. They depend on you to stop their suffering and if you don’t call, who will? 613-936-0072. Help Birds Get Through the Winter Months ~ Birds can usually fend for themselves and if healthy habitat is available, readily find their own food. When the north wind blows, however, many food sources disappear, temperatures plunge and survival becomes a continuous challenge. You can lend a hand by providing high-energy foods for your feathered friends. Here’s how to turn your backyard into a wildlife oasis in the bleak of winter. Provide a feeding station for birds: Include in your backyard buffet such goodies as peanuts, millet, cracked corn and sunflower seeds. Chickadees, woodpeckers and other insectivores need a source of animal fat to stay warm. Make treats for them by pouring leftover pan drippings or suet into foil trays, adding peanuts and sunflower seeds. Locate feeders close enough to trees and shrubs that birds can escape from predators but far enough that cats can’t creep up on them.
General Manager
Now that the Christmas season is over, you can extend the life of your Christmas tree. Consider finding various ways to get the most of your Christmas tree by putting your tree in your backyard and covering it with peanut butter, seeds and orange slices. Your Christmas tree will be transformed into a giant bird feeder, one that not only feeds the birds but also provides them with needed protection against the cold and winter. Or, if you would prefer, cut your tree into smaller pieces to use as logs for your fireplace.
SCUTTLEBUTT Okay, how many of you have already cheated on your New Year’s resolutions?

These girls have been great helpers at many fundraisers and are a good example of how spending quality time together makes all the difference. Anne and Tiana volunteer for many charities. They also love to go to Creation Workshop where Tiana is an amazing artist. They love spending time with family too and could not be happier.

A buddy of his bought his wife a beautiful diamond ring for Christmas. After hearing about this extravagant gift, a friend of his said, “I thought she wanted one of those sporty four-wheel-drive vehicles.” “She did,” he replied. “But where was I going to find a fake Jeep?” ******************** A lady lost her handbag in the bustle of Christmas shopping. It was found by an honest little boy and returned to her. Looking in her purse, she commented, “Hmmm.... That’s funny. When I lost my bag there was a $20 bill in it. Now there are four $5 bills.” The boy quickly replied, “That’s right, lady. The last time I found a lady’s purse, she didn’t have any change for a reward.” ******************** It was Christmas and the judge was in a merry mood as he asked the prisoner, “What are you charged with?” “Doing my Christmas shopping early”, replied the defendant. “That’s no offense”, said the judge. “How early were you doing this shopping?” “Before the store opened.”
