Blended The interiors I love the most have a wonderful mix of materials. For example, this apartment belonging to Jackie Kai Ellis. The timber chairs and gilt mirror just seem to glow against the glass table, chevron floorboards and stone kitchen. See more on p36.

PERSONAL STYLE IS so important, but it can be hard to discover. I think the key is to go with what makes you happy, regardless of what other people think is on trend, and follow through with confidence. I was buying flowers recently, and I wanted a mix of bright roses with some beautiful blue delphiniums and fragrant white freesias. A wild, country garden vibe. Let me tell you, the florist was a bit freaked out. He’s more of a matchy-matchy, everything-the-same-length kind of guy and was quite forceful with what he thought I should pick. Sure, he is trained in floristry, but I know what I want, so I politely said thank you and added in some lavender for good measure. It’s the same with decorating. The experts can guide us on proportion, symmetry and colour – and nine times out of 10 they’re right – but personal style is what makes a house a home, so trust what you like the look of. Speaking of decorating, this issue we’ve handpicked some gorgeous new lights, rugs and accessories for you to shop and style with. Wallpapers, too (yes, wallpaper is back)! There are so many options. Tableau vivant The decorative vignettes and furniture arrangements throughout this townhouse are styled by homeowner and architect Elise Ovanessoff. In the corner of the living room a Tom Dixon side table creates a platform for flowers in glass and ceramic vessels. Grey area This living room features an Eu/canistro sofa, a Stua ‘Solapa’ coffee table and Eames ‘LCW’ chairs (opposite). The ceramics on the coffee table are by Elise’s mother. There are several light sources, which means the brightness can be adjusted to suit the time of day, mood or occasion. The lamp shades are handmade by Elise from muslin. There are no curtains because Elise didn’t want to hide the windows or block out any natural light. However, Elise says “I fell in love with this quilted cotton fabric and have hung it either side of the fireplace.” The fabric makes a great backdrop for hanging string pendants and “a big difference to the acoustics”. A


layer your lighting It’s no surprise Elise Ovanessoff’s home sings with visual poetry and personality. She and her husband Stephen Quinn are co-directors of London-based design practice Works Architecture and for Elise, creating an atmospheric home starts by mixing light sources of different types and heights. “It’s easy to alter the feel of a room by adjusting the lighting.” The original Georgian windows are the main source of natural light and given their architectural beauty, Elise is “reluctant to obscure them or the light they bring by introducing curtains”. Decorative light shades and pendants made by Elise add to the unique ambience, as do all the candles, but she doesn’t like anything flashy. “On a trip to Copenhagen a few years ago, I came down to breakfast to find candles lit on the table despite the lovely sunny day outside. It’s something I would love to do at home,” she tells. A

In the shade “We occasionally use the intimate dining area for small dinners with friends – but mostly for homework!” laughs Elise, who lives in this house with her husband and their three teenage children. The rug is from Habitat, the mirror is from French Connection and the ceiling pendant is by Elise. During the day natural light from the window illuminates the room. At night, the original shutters are closed for privacy. Art collective A creative installation in the hallway (opposite) is both a practical and decorative use of a transitional space. The wall shelf was designed by Stephen and made by Joiners Brothers and the ceramics displayed on top are by Brickett Davda and Elise. Light and easy “The house is a Georgian terraced house built in 1810. It has high ceilings and lovely big windows,” Elise says of her home’s big and bright proportions. In the kitchen, soft grey wall paint brings warmth to the restrained scheme. This space was designed by Stephen with joinery made by Joiners Brothers. The stools are by BD Barcelona, the ceramic tableware is by Brickett Davda and the clock is from London Timepiece. Set the scene The main dining area is perfect for entertaining (opposite). The table is made out of floorboards and trestles and the chairs are an old Ikea design. Plaster and muslin lamps spread pools of light across the table while Caravane candlesticks set a more intimate mood. A real living

Close to heart Some of Elise’s favourite pieces were made by friends and family. In this cosy living room, a landscape painting by her sister-in-law Tracey Quinn takes pride of place above the piano. On the opposite wall is a hanging by her friend Bruce Alcock, a Canadian creative director and film maker. On the Portobello Road rug from Libeco is a Stua ‘Solapa’ coffee table. Temporary position Another of Elise's clusters (opposite) has been arranged in the same living room. explore a spectrum of shades Rather than sticking to one colour, using variations of it can achieve the sort of esoteric ambience that makes this home so enchanting. Take the way shades of blue and grey are layered with lighter neutrals in the dining and living rooms. This tonal palette creates depth and as the light changes so too does the feel of each space, which means there’s always something new to be discovered and admired. “I do like blues and greens, but mostly I love grey,” Elise says of the palette, which reflects her style. Rather than painting the kitchen and family spaces classic white, they chose Farrow & Ball’s Cornforth White, a light grey that softens what could have been a cold space. “The light walls are balanced by darker, warmer shades of grey elsewhere,” she says. “Within that, extreme light and dark shades make things more interesting than a flat grey palette.” A

show-off your creative side A dimensional colour palette and multitude of ambient light sources make this home feel expressive, but it’s Elise’s handmade pieces and meaningful curios that add personality, and it’s the way she displays them that makes this house inimitably hers. “Our furniture is quite pared-back and simple. I think coloured ceramics, flowers, glass and candlelight bring life to these spaces,” Elise says of the decorative “clusters” she arranges on tabletops and in unused corners. “I like making clusters, they’re usually a combination of a light fitting or candles, a shelf or table, sometimes a mirror, perhaps a stool or a bench. There’s always an opportunity to make a nice cluster, and then it becomes my favourite spot.” R

Take it easy “Our bedroom and dressing room are very simple and quiet in decor,” Elise says. Here, a spectrum of warm greys has been chosen, from the Ikea bed linens to the painted walls. Stephen designed the bedside table. Wrapped around the wall hook above is a knitted Matt light from llot llov. Fashion statement Elise’s penchant for displaying beautiful and functional pieces extends to her wardrobe (opposite). “I love dresses and like to hang some of my favourites on the walls so I can see them every day rather than have them hidden away to be enjoyed only once a year,” she explains. real living

1954 IF THE TOGO HAD A SPIRIT ANIMAL, it would be a wrinkly Shar Pei puppy. That may not seem very flattering, but the designer himself, Michel Ducaroy, once said it looked like “a tube of toothpaste folded back on itself... and closed at both ends”. Name-calling aside, the rolly-polly creases and curves of this modular seating collection certainly do give you the same warm, fuzzy feelings as a puppy. If you want to feel fabulous curled up in front of the TV with a glass of wine wearing sweatpants, the Togo is the seat for you. Michel was predestined to create iconic furniture. Born in 1925, he came from a family of furniture makers and trained at the National School of Fine Arts in Lyon before joining the family business. In 1952 Michel branched out with his own studio and two years later began working with Ligne Roset. Originally a manufacturer of wooden umbrellas, chair frames and walking sticks, the French company was on the verge of great change – the founder’s grandson, Jean Roset, was shifting the focus towards furniture and with his vision and Michel’s ingenuity, Ligne Roset became a hub of creativity. As the company’s head of design, Michel promoted the use of new materials, technologies and techniques, which can be observed in his best-selling seating collections including the pillowy, low-to-the-ground Adria, the boxier, cushioned Kashima and the slouchy C-shaped Safi. It’s a phenomenal body of work, but almost 50 years later, it’s his Togo range that’s become the sofa equivalent of an Instagram celebrity. Ligne Roset launched the Togo in 1973 at the Salon des arts ménagers in Paris, an annual French design exhibition where its crumpled, low-profile shape was critically praised. All Ligne Roset furniture is developed in Briord, France, the company’s headquarters since 1973. A Togo is made using foam filling in multiple densities and upholstered in quilted fabric or leather. The process takes artisans several hours, but the result is a series of super relaxed sofas, chairs and ottomans. If there’s one thing we can learn from this design icon, it’s to chill-out – and embrace those wrinkles. R

Free spirit “I feel most creative when working on personal projects, whether it be experiments for a new body of work or deeply invested in an exhibition,” says Hannah Nowlan, whose oil paintings are inspired by the natural landscape, mythology and family. FOR SOME, CREATIVITY IS A MUSCLE that is trained and strengthened over time. But for artists like Hannah Nowlan, creativity is oxygen, it’s there from the moment you take your first breath. “I believe it’s part of me... my parents are both super creative so maybe it’s in my blood,” Hannah suggests. Family plays a pivotal role in Hannah’s practice, in fact her home studio is located in the coastal Victorian town of Black Rock, where she grew up with her six siblings. “My partner Tim and I live with our Blue Heeler, Jasper, in a one-bedroom unit in my parents’ backyard!” she says. “I’ve lived here all my life and have been lucky to be able to work from home since graduating in 2015.” Her childhood was spent “painting and creating” and after specialising in drawing and printmaking at the Victorian College of the Arts and completing an Artist in Residence program at the University of Lisbon, Portugal in 2016, Hannah knew she wanted to turn her passion into her career. “While I loved the techniques and skill of printmaking, it was impossible to continue from a home studio without all the equipment. So I began painting instead,” Hannah says. The local landscape informs her practice and she cites the nearby Cerberus shipwreck as a point of reference. But this connection to the environment isn’t just aesthetic – this year Hannah changed the way she packages and transports her art to reduce single-use plastics. “The landscape is of such significant importance, not only to the way I work, but why I work, so it’s critical that I take care of the land.” Hannah’s art is evolving, too, and while she’s proud of her past three collections, her Lacuna exhibition holds a special place in her heart. “Only a few months earlier, I lost my eldest brother to cancer,” she tells. “I process all that life throws my way through my work. I process all the granular states of life and paint my way through as a method of healing.” A real living

So too is face moisturiser to feel refreshed and a coffee to awaken the mind.” 2. What did you want to be when you were growing up? “An artist or a ballerina.” 3. Who’s inspiring you? “I’m loving the work of Odilon Redon, a French symbolist painter.” 4. What are you reading? “I’ve been reading up on centaurs, manticores and other mythological creatures to inform my upcoming body of work.” 5. Do you have any studio essentials? “A pencil and a to-do list. I love to write down everything. I feel my brain would explode otherwise.” 6. What materials do you love working with? “Linen and cotton rag paper are my favourite materials; oils are my favourite medium. I love the textures and natural fragility of linen and paper while oils have such a beautiful transparency that the underneath grounds still shine through.” 7. How do you relax? “A walk to the beach with my dog Jasper or a swim in the ocean.” 8. Where would you love to travel? “I’d love to hit the road and explore all that Australia has to offer with my partner and Jasper by my side.” 9. Your greatest indulgence? “Camping trips by the sea. Spending days by the beach, swimming, fishing and stand-up paddle boarding.” 10. Best advice you’ve received? “My dad says ‘Just take one thing at a time’. I tend to squeeze a lot onto my plate, particularly when it comes to work. Nothing better than slowing down and focusing on the present. THE WRITER ERNEST HEMINGWAY ONCE SAID that if you were lucky enough to have lived in Paris the experience would always stay with you, for Paris “is a moveable feast”. And for Jackie Kai Ellis, the owner of this sublime Haussmann-style apartment, that seems to have been true. Jackie was a creative director at her own design firm when she left to pursue her dreams and study pastry in Paris. “I blossomed there, I found my place in the world,” Jackie says. “From then on I’ve had a stubborn loyalty to this city.” She returned home to Vancouver, opened a pastry shop, and while travelling and looking for a pied-à-terre, she found this apartment. “Everything just fell into place, so I allowed it to.” LA VIE EN ROSE The catch? “The elderly lady who had owned it for many decades was a hoarder and, judging by the wallpaper, hadn’t renovated since the forties,” Jackie says. It didn’t function as a modern home – the bathroom was “literally a hallway” and there was no way she could use the kitchen. “It would have scared many inexperienced homebuyers,” she admits, but having grown up “flipping homes” with her parents, and given her design experience, she could see its potential. The entire space was redesigned in five months, “except for the architectural details that I originally fell in love with,” she says of the chevron hardwood floors, rose-shaped mouldings and marble mantles. PARIS JE T’AIME Furnishing her two-bedroom home took more time. “I wasn’t in a rush, which is why I had many dinner parties on the floor,” Jackie says. “I wasn’t so concerned with adhering to a certain style or era, I just wanted to surround myself with things that gave me joy to look at.” Jackie loves visiting flea markets and vintage forums to find items with history and describes her style as a balance of old and new; classic with cheeky twists. “It’s true to the way I live,” she says. “It’s honest and always evolving. That’s how I’d like to think of myself.” R

Wander land The apartment is located in an “up-and-coming” neighbourhood by the Canal Saint-Martin. “It’s young and hip with lots of great new restaurants,” says Jackie, who divides her time between Paris and Vancouver. Haute cuisine Jackie’s kitchen features French brands including Margot tapware and a Lacanche oven. She invested in Mauviel cookware and collected the crystal glasses at Paris flea markets. The cabinets are prefabricated.

Glow in the dark “Bathrooms are small spaces that can be luxurious,” Jackie says. “They are the perfect place to indulge a renovation budget.” Painted in Farrow & Ball’s Studio Green, the colour of the room changes with the light. She wanted a claw foot tub to relax in and found this one on Le Bon Coin. The custom floor tiles are inspired by a design she saw in Spain. YOU KNOW SUMMER HAS ARRIVED when all the doors and windows are wide open and the smell of pine needles and sea salt fills this abode with a fresh, woody aroma. Located on the southwest coast of France, the newly built retreat belongs to Marc Simoncini, a French entrepreneur. Comprised of two timber cabins connected by a dining room, his handsome holiday house overlooks a canopy of pine trees, a vast sand dune and the sparkling water of Arcachon Bay – a triptych of natural wonders that offer breathtaking views from every room. TREE HOUSE Marc collaborated closely with architect Antoine Guttierez and interior design duo Hugo Sauzay and Charlotte de Tonnac of Festen to ensure every step of the process aligned with his vision. Together, they developed a relaxing getaway that feels at one with the surrounding landscape and showcases timber. Every beam and board was selected for its natural beauty and ability to connect the interior and outdoor spaces. “The red cedar terraces extend inside the house so as not to mark a break with the exterior, since the house is always open in summer,” Hugo explains. The rough cut pine cladding throughout creates visible texture “without trying to hide the natural defects”. AGE NATURALLY The generous use of timber extends to the robust furnishings. “Most of the furniture is made of oak. It provides warmth and quality to the space, while bringing contrast to the architectural discourse in pine,” Hugo says. The decor rarely deviates from an earthy palette of brown, khaki and black, but leather-bound armchairs and soft linen sofas break up the cabin’s rugged wood scheme. The overall style is masculine, down to the copper lighting and kitchen joinery. Charlotte says they chose untreated copper that will gradually darken, in keeping with Marc’s request for materials that patinate. “It shows the evolution of time,” she says. “It merges with nature to the maximum.” R

Clean untreated timber furniture with a cloth dipped in mild soapy water, then immediately wipe down with a smooth dry cloth.

Sitting pretty “Being organised is essential in a small space,” says homeowner Olivia Clergue. “I try not to own too many small things in my home, and keep boxes under my bed for storage.” A

FRENCH DESIGNER OLIVIA CLERGUE has been surrounded by art and design since she was a child. As the daughter of world-renowned photographer Lucien Clergue, and the goddaughter of Pablo Picasso, it comes as no surprise that Olivia’s home is a tasteful curation of all her treasures, antiques and art. HISTORY LESSON Her apartment is in the fifth arrondissement of Paris, on the third floor of a heritage building that dates back to 1893, and once held a historic post office on the ground floor. Previously owned and used as an art studio by French artist Bernard Munch, the apartment required some minor renovations to make it more of a home than a functional work space, and to increase the amount of sunlight coming in. GLOW UP Olivia created an open floor plan by removing some of the walls and incorporated the hallway into the kitchen to make a larger, country-style space reminiscent of her childhood home in Arles, southern France. “Sunlight is extremely important,” says Olivia. “The white walls add a sense of brightness to the rooms, and the many windows mean light now flows freely through the newly-opened architecture of the home.” The green frames of her Picasso prints inspired her use of green throughout the home, particularly in the kitchen, and her style is a sentimental mashup of childhood memories and modern-day design. “My home is heavily influenced by the furniture from my childhood home, such as the large mirror and bamboo pitch pine armchair, which I’ve complemented with antique pieces I’ve found right here in Paris,” says Olivia. “The marble and oak coffee table was handmade by my friend and local designer, Marco Marino. I wanted a small table and after searching for a while, decided it was easier to design one myself and have it made.” COMFORT ZONE While Olivia may have once used her home as a creative base to design prototypes for her leather handbag label, the apartment is now a work-free zone for relaxation and intimate dinners with friends. “I love being in my apartment, it radiates warmth and comfort. I enjoy sitting on the velvet sofa and velvet cushions to read or to listen to music,” says Olivia. “I can even enjoy the outside view from here.” R Good neighbours Olivia procured the dining table from her neighbour via a neat little furniture swap. “I liked the rustic country style and the rectangular form of this one, while my neighbour preferred the round shape of mine, so we swapped,” says Olivia. The chairs were made in the French village of Vallabrègues and the white sheer linen curtains are from La Redoute in Paris. A

ZERO TO HERO According to interior designer Simone Haag, the key to a successful interior is building your scheme around one showstopping hero piece

Team work Interior designer Simone Haag collaborated with David Neil of Neil Architecture to create this home in Melbourne’s south-east suburbs. “The kitchen island bench is the showpiece of the kitchen,” says David. “The Superwhite Dolomite honed stone top is soft and inviting and looks more like a piece of furniture, with looped legs at each end, and it has seating on both sides to fit the whole family.” A

WHEN IT COMES TO CREATING a style moment in your home, the key to success is picking the perfect pieces to inform your colour palette, anchor the room and create decorative interest. “Every ‘wow’ style moment revolves around a hero piece,” says Simone Haag, director of Simone Haag Interiors. “Once you have that one beautiful piece, then everything else around it will look great.” In this joint project by Simone and Neil Architecture, the informal living room is arranged around a rug in dark plum tones, which anchors the centre of the conversational furniture arrangement. “Materials play a large part in creating atmosphere,” says Simone. “A plush rug is cosy and soft underfoot, and a glowing table lamp sat on a pile of books will always feel like a private moment within a room. A Art attack An artwork by Phoebe Halpin titled Bushfire II 2018, hangs on the wall in the informal living room. “I often use the salon hang,” says Simone. “Hanging smaller artworks around a large centre piece. You can create immediate interest with big impact by doing this.” Supersize me The oversized proportions, bold colour and trendy cord fabric make this Bambola armchair by Mario Bellini a focal point in the foyer, while the vertical lines on the wall, rug and chair ensure visual symmetry. “Try to create moments of symmetry within an asymmetrical furniture arrangement or styling,” says Simone. “It can bring a little order to a room.” Family hub The kitchen (opposite) serves as the hub between the formal dining and informal living rooms, continuing themes of the joinery and paint colour from the adjoining spaces. @reallivingmag

get inspired Sometimes a hero piece isn’t as obvious as you might think. The look for this study – the happy colour palette and soft furnishings – was inspired by the pink Mattiazzi Osso Chairs. “Strong colours should be used in mass, not isolated in small areas,” says Simone. “Isolated areas of strong colour within a muted scheme can look disconnected.”

use colour correctly Colour selection is an opportunity to set different moods, provide personality and create unity within a scheme, but it can also be the hero. “We tend to darken the colors in more intimate settings, such as a sitting room,” says David. “Colour can also make an artwork sing, and link the internal to the external, such as a ceiling that extends into an external soffit, or an entry wall that leads into a house. We’re not afraid to delve deep into the darker colour selections of the fan deck.” R Good vibes This feminine study features more colour and pattern than the rest of the home. “We don’t generally opt for pastel schemes, but when offset with the masculine paint colour in the window reveal, we felt it was a great combination,” says Simone. “We tend to gravitate towards a soft, cohesive palette,” says David. “We want each finish to be a part of the overall interior scheme, rather than standing out as a single, dominating feature.”

who lives here? Annerie Hoogeveen, 33-yearold retail stylist and designer.

ANNERIE HOOGEVEEN has lived in many different places over her lifetime, and some stays were so brief that she barely had time to unpack before having to move again. But this small two-bedroom apartment in Denmark is the first place she has felt at home – and hasn’t had to share her space with someone else – in a long time. Unsurprisingly, she’s seized the rare opportunity to decorate to her taste, and her top tips include mixing old with new, and having plenty of plants. “I love going to Ikea just as much as flea markets. My lamps, some stools and bookcase are from Ikea, but I found my favourite vintage items in the countryside of southern Denmark, where I visit my family,” says Annerie. “I also decorate with indoor plants. You get value for money with plants as they continually grow, and look great.” Annerie also has a knack for making features out of a storage solutions. For example, her 1970s bike is used in summer, but the rest of the year it hangs in her living room as a decorative art piece. A real living

WHEN CHRISTIAN PURCHASED this small apartment in Copenhagen it was because he saw the potential for the space to become something special. Describing his style as raw, Nordic and masculine, Christian’s home is an excellent example of how much can be achieved with a micro-budget. “I exposed and painted the brick walls to make them more interesting and painted the floors white to make the space feel bigger,” says Christian. “I kept the old kitchen but painted the bench tops black and purchased new cabinet doors from Ikea.” Christian’s advice is to buy preloved designer furniture by spending time scouring auction websites and watching for sales to pick up high-end pieces at low prices, such as his Gubi ‘Bestlite’ lamp, which he got at a clearance sale. “My best advice is to build things yourself. I built a lot of my furniture and used pipes and old timber planks to make a clothing rack, bed and dining table.” The result is an industrial monochrome space that feels contemporary and edgy. A

THE HOME OF CILLE DAAMSGARD is brightly coloured and filled with precious treasures and preloved items she has collected while on her travels, and salvaged from her parent’s house. “Everything I own I either inherited, is vintage or preloved, or a gift from my mother,” says Cille. “I love colour and my mood is greatly affected by my environment, so warm colours and a cosy setting is important to me.” Cille likes to drape lamps with fabric and light candles to play up the cosy vibe of her apartment; she prefers diffused or natural light to that of bright lamps and light bulbs. “I like to stimulate all the senses, which is why I like burning incense and always make sure I have a good sound speaker,” says Cille. As her apartment is very small with a studio floor plan, Cille had to get creative with storage and almost all her belongings are packed in brightly coloured bags, baskets and boxes. “I like it that way,” says Cille. “It’ll make it easy to pack things up and take them with me when I move.” R

Sun breaker The house is opened, shaded and ventilated through the use of a brise soleil on the western side of the house. Made of grey ironbark posts with ironbark sliding doors, the brise soleil creates its own micro-environment as the sunlight and weather changes throughout the year. A mix of tree fern (Cyatheales), lomandra grass (Lomandra longifolia) and bird’s nest fern (Asplenium nidus) have been planted along the inner walls of the brise soleil. A

style tip Design with material sustainability in mind, using recycled or locally sourced materials where possible

ON THE BANKS OF EDGARS CREEK in Melbourne is a unique property built by Breathe Architecture that overlooks sandstone cliffs and ironbark trees. The house has been designed to fit organically into the site with minimal damage to existing plant life and the natural formations of the land. The end product is a structure that allows the homeowners to be inside and outside at the same time, always connected to nature. A brise soleil acts as the spine of the house, connecting three pavilions, one for sleeping, living and bathing, all positioned around the centre courtyard. Each pavilion is clad in raw ironbark, blending the home into the surrounding trees, and the flooring throughout the home is made from recycled Tasmanian oak. A rammed-earth wall shields the south side of the house and echoes the colours and textures of the sandstone cliffs in Edgars Creek, and the garden cleverly exists both around the house and within it. Outside is a zen garden, an in-ground fire pit in the courtyard and a vegetable garden that creeps around the perimeter of the house. “The client wanted a home that intimately connected to nature and offered an opportunity to live simply as part of a system, instead of presiding over the landscape,” says Madeline. “We didn’t specifically design a garden or landscape, instead we worked within the existing natural environment to connect the house to Edgars Creek. Safe haven A rammed-earth wall on the south side of the home is a reflection of the nearby sandstone cliffs. Going native “The landscape was kept simple to reflect the native environment, using mulch and native plants,” says Madeline. “The owner added a fire pit and plans to slowly develop the area with more native species and grasses.” A

This cheesecake is baked in a water bath, which creates the dense, ultracreamy, silky and crack-less custard-like texture. It is tangy, sometimes too much for those whose palates are sweet-seeking missiles. The first time you make this, I recommend you add the lemon juice to taste – just enough to get a ‘that’s perfect for me’ feeling. Cheesecake caveat: if this is your first time baking a cake in a water bath, I would recommend testing the watertight qualities of your tins and trays first, especially the large roasting tray. And in smaller home ovens, the shelf can tilt precariously when you pull it out, so proceed carefully. Beyond the baking logistics of this recipe, there lies a world of endless cheesecake possibilities at your oven door.

CRUMB BASE 60g wholemeal (whole wheat) plain flour 40g soft brown sugar ¼ tsp fine sea salt ½ tsp freshly ground cinnamon 50g unsalted butter

CHEESECAKE MIX 140g caster sugar ¼ tsp fine sea salt 500g full-fat cream cheese, softened 2 eggs lightly beaten 300g full-fat sour cream ½ tsp vanilla paste 40g lemon juice

TOPPING 250g full-fat sour cream 10g caster sugar ¼ tsp vanilla paste

Preheat the oven to 150°C. Lightly spray a baking tray with cooking oil spray and line with baking paper. Spray a 20cm round, 7.5cm deep cake tin with cooking oil spray and line the base and side with baking paper. If you choose a tin where the base isn’t welded to the side (or a springform tin), you will need to wrap the outside of the tin with a triple layer of extra -wide foil so water won’t breach the tin. If you use a tin made from a single piece of metal, you won’t need to do this. 2 Crumb base Combine the flour, brown sugar, salt and cinnamon in a wide mixing bowl. Heat the butter on the stovetop or microwave until just melted, then pour into the bowl. Mix together with your hands to a sticky crumble. Scatter the mix onto the prepared tray and bake for 25 minutes until evenly brown. When cool, whiz in a food processor to a fine crumb. 3 Fill the base of the prepared cake tin with the crumb. Pack down the crumb lightly – the weight and moisture of the cheesecake mix will do the rest of the work. And you don’t want a base you have to really crunch through when eating. Reduce the oven to 120°C. 1

Cheesecake mix Put the sugar and salt in the bowl of an electric stand mixer and stir to combine. Add the cream cheese, breaking it into chunks as you put it in the bowl. Using the paddle attachment, mix on speed 2 to slowly cream the mix, scraping down the side of the bowl often with a flexible plastic spatula. The goal is silky smooth, so just scrape and scrape so the mix is as lump free as possible. Stay on low speed and add the eggs in two batches, scraping well between each addition, then add the sour cream and vanilla and mix until combined. Remove the bowl from the mixer and give the mix a final hand whisk to ensure there are no lumps. Add a little of the lemon juice, then taste it before adding a little more, until you reach your tang threshold. Pour into the crumb-lined cake tin. 5 For the water bath, place a piece of paper towel in the base of a high sided roasting tin. Sit the cheesecake in the roasting tin (the paper towel will stop it from sliding around) and pour in enough hot water to come one-third up the side of the cheesecake tin. Carefully lift the tin into the oven and bake for about 60 minutes. When it is ready, it should still have a wobble to the centre – not a loose liquid wiggle but a firm undulation like a belly dancer. Less romantically, a thermometer inserted into the centre will read 75°C. To make the topping, mix together the sour cream, sugar and vanilla with a plastic spatula until runny and pourable. Starting from the outside, pour the topping over the cheesecake, smoothing it gently towards the centre with an offset spatula. If you pour the topping straight onto the centre, it can break the skin on the cheesecake and fall inside. The side, being a little more cooked than the middle, will hold the topping best, so start on the side and smooth it towards the centre. If the topping behaves more like a difficult smear than a ‘smoothable’ flow, don’t fight it. That sometimes happens when the sour cream is thick or a little warm. We can cover it with another topping later. Return to the oven and bake for a further 15 minutes. Remove the cheesecake and roasting tin from the oven and allow to cool in the water to room temperature. If you are using foil and you can see some water has breached the foil, lift the cheesecake tin out immediately and remove the foil so the base doesn’t become sodden, then leave to cool to room temperature. Lightly cover with plastic wrap and refrigerate overnight until set. The next day, cover a flat plate or board (the base from a tart tin works well) with plastic wrap and place on top of the cheesecake in its tin. Flip it over confidently and place the plate on the work surface. Lift a side of the tin and gently tease out the baking paper. This will loosen the cheesecake and, with a wiggle and shake and a push on the base, it should release. If the cheesecake is stubborn, warm the tin by either giving it a quick flash with a blowtorch or draping a hot tea towel over the tin base. This softens the butter in the crumb to aid release. Peel off the paper and invert again so it is top side up. Serve the cheesecake chilled. R 4
