Today, in the early twenty-first century, the Girona region is one of the world's major wine and food destinations. The Costa Brava is arguably at the forefront of culinary innovation as the world's greatest creative hub.

El Bulli has recently decided to reinvent itself with elBullifoundation, which will be launched in 2018 with the aim of vaulting the legacy of Ferran Adrià into a new endeavour. The evolution of the Roca brothers’ creative lab La Masia has helped to keep the region at the cutting edge of culinary technological innovation.

Introduction Catalan and Girona cuisine are both heir to all Mediterranean cuisines and a fusion of contemporary cuisines from around the globe. Girona cuisine did not come about by chance. It is not a new development created as the result of the success, ingenuity and innovativeness of contemporary chefs, but rather a cuisine with a long and extremely rich past. It incorporates an ancient legacy that started with the Iberians, Phoenicians, Greeks, Romans, Arabs and Jews... evolving over the years to include modern Asian, African and American influences. Today, in the early twenty-first century, the Girona region is one of the world’s major wine and food destinations. The Costa Brava is arguably at the forefront of culinary innovation as the world’s greatest creative hub, just as it was once the epicentre of surrealism as the home of genius Salvador Dalí. The innovative power and brilliance of the cooking at El Bulli pioneered a new era in gastronomic innovation, first influencing Catalan chefs and later spreading throughout Spain and Europe, eventually taking over the entire world.

Any great cuisine hinges on the quality of its local raw ingredients. And the Girona region is set against a backdrop favoured by nature, a place where the sea, the plains and the mountains meet, home to outstanding products including L’Escala anchovies; Palamós, Roses and Blanes prawns; Pyrenees beef; Girona apples; DO Empordà wines; Santa Pau beans, as well as an entire range of cold meats and sausages, cheese, oils... Many of these products carry the Girona Excel·lent label.

Girona has always been home to excellent cuisine, which has been matched by equally fine wines for quite some time now. While the region boasts a centuries-old winemaking tradition, Girona’s wineries have experienced thrilling growth over the past few decades, turning a wine tourism tour along the Costa Brava and the Empordà DO Wine Route into a journey to discover the world of Empordà wine and the surrounding region. Covering an area of 2,000 hectares, the Empordà wine region includes 330 growers and 50 wineries, 26 of which can be visited for the opportunity to experience the province’s wine, terroir, north wind and winemakers first-hand. Few places on earth are home to grape varieties with such authentic and distinguishing tastes as the Empordà, a region that produces wines that are best discovered and tasted through wine tourism activities.

Girona is also home to a network of public markets where product quality is the prime concern, a priority reflected when dealing with farmers. Up to 10 restaurants associations across the region are dedicated to promoting local cuisine by working with a combination of territory and product.

Girona’s wineries have experienced thrilling growth over the past few decades, turning a wine tourism tour along the Costa Brava and the Empordà DO Wine Route into a journey to discover the world of Empordà wine and the surrounding region.

But the region’s equally important cuisine would have been impossible without a centuries-old tradition, without first-rate products, without its own unique dishes and without cooperation between restaurants. The Girona region boasts over 2,000 restaurants that offer guests more than simply food, combining outstanding cuisine with a pleasant and memorable dining experience;

This is a land of UN Ambassadors and Michelin stars. The UN appointed the Roca brothers Goodwill Ambassadors to advocate for the fight against poverty and hunger, choosing the owners of the world’s best restaurant –according to Britain’s prestigious Restaurant Magazine– because they support local food sourcing, use food in a sustainable and environmentally-friendly way, and promote a healthy diet. The Roca brothers’ three-Michelin-star El Celler de Can Roca in Girona, which twice picked up Restaurant Magazine’s World’s Best Restaurant title (2013 and 2015), is not the only critically-acclaimed restaurant in Girona: 16 of the region’s restaurants boast a total of 20 Michelin stars, including Llançà Miramar restaurant, where Paco Pérez holds rank as the chef with the most stars in the region (six), and the two-star Les Cols in Olot, where chef Fina Puigdevall serves the highest expression of La Garrotxa’s volcanic cuisine.

Altogether, Girona is the region with the most Michelin stars per capita in the world.

A cuisine that has substance and identity, not merely a style of eating and drinking but a way of life that has grown in popularity among visitors to become one of the region’s main tourist products.

Numerous books, cookbooks, and documents serve as the culinary corpus of Catalan cuisine, including the Llibre de Sent Soví, a book of medieval recipes written in Catalan and considered one of the oldest of its kind in Europe. Personalities and figures like writer Josep Pla, journalist Manuel Vázquez Montalbán and a host of food critics have helped raise Girona cuisine to the echelons of literature. Seasonal products are promoted throughout the year through gastronomic campaigns and events that showcase the rockfish, the garoinada, the suquet, the Norway lobster, rice, game and mushrooms, etc., as well as festivals that celebrate the cherry, ratafia liqueur... The region expresses its pride in the efforts of its farmers and wine makers through these festivals, honouring its regional products by sharing them with both local fans and guests. The combination of sea and mountain is the flagship of Girona cuisine, the fusion of the region’s culinary techniques and character.

There are endless gourmet options year-round in the Costa Brava and Girona Pyrenees, from routes with a range of themes, paces and lengths to individual, customised tours organised by companies specialised in bringing together the region’s cuisine, nature and culture to offer oncein-a-lifetime food and wine experiences. Catalan cuisine tells the story of a country, a region and an idiosyncrasy, which is why an application has been submitted to have UNESCO recognise it as Intangible Cultural Heritage.



Girona Excel·lent is the food quality label that indicates the region’s top products. All labelled products are produced entirely in the Girona region and have been selected through blind tastings by top chefs, winemakers and food critics.

La Cuina de l’Empordanet is a culinary association made up of 19 restaurants, bringing together a large group of chefs and restaurant professionals that have been working together for many years now to promote the Baix Empordà’s cuisine.

Cuina Pirinenca de Cerdanya was born after a group of restaurant owners who belong to Cerdanya’s Association of Bars and Restaurants and the Association of Hotels and Campsites came together to promote a new organisation to embrace restaurants that make a firm commitment to quality, local food products and culinary tourism in the Cerdanya region, home to a rich culinary, agriculture and tourism tradition.

The association attends fairs and specific events outside the region, many times together with the Cerdanya County Council and other provincial and national organisations. It is a non-profit organisation that aims to promote the region of Cerdanya, its cuisine and its products. Cuina del Vent focusses on the values of quality, sustainability, top local produce and solidarity as the basis for its project.

The Cuina Volcànica collective was created in 1994 when a group of restaurants that believe in the need to represent, defend and promote the Garrotxa region through cuisine came together to prepare dishes with local and native products. The Cuines de la Vall de Camprodon collective comprises ten restaurants from the valley whose common goal is to promote gastronomy, local food products, culture and the tradition of mountain cuisine.

It focuses its work in three areas: culinary seasons (the time of slaughter and Lent, before and after Carnival; the colt in May and the potato in September); training (specialised courses at the Fòrum Cuines) and collaborations (the Fòrum Gastronòmic, for example).

La Cuina a Sils is a group that was founded in the early nineties with the purpose of recovering and preserving the rich culinary heritage of Sils, a municipality characterised by a long culinary tradition that remains in the memories of the oldest generation. The group consists mainly of women, who have their origins in the traditional “iaies” (grandmothers) of Sils (eighteen originally and over a hundred today); with their knowledge, passed down through oral tradition from generation to generation,

they provide an extensive and diverse range of popular wisdom. This entire set of experiences and know-how, this repository of the art of traditional cuisine (which serves as a way for everyone to express themselves and find their identity), is projected as a positive and inclusive community value and offered in a spirit of sharing, kindness and good will to help others make use of this knowledge.

Joan’s reflective and original cuisine, Jordi’s audaciously imaginative desserts and Josep’s superb wine pairings form the perfect triad, which in 2013, and again in 2015, catapulted the Roca brothers’ restaurant project to the top of the list of The World’s 50 Best Restaurants.

Its cuisine is a harmonious blend of traditional flavours and the most innovative techniques, the result of this fraternal triangle’s creative work, which constantly nurtures its team’s knowledge and creativity through the most daring and innovative initiatives imaginable in a restaurant.

The three brothers’ passion was forged at Can Roca, their parents bar-restaurant in Taialà, a popular neighbourhood on the outskirts of Girona. They grew up there: the bar was their living room, the place where they played and did their homework, with the delicious smells of their mother’s generous, simple, honest home cooking wafting out of the kitchen.

Fina has run Les Cols restaurant in Olot –housed in the farmhouse where she was born and which she now owns– since 1990. Her cooking speaks volumes with few elements. In December 2007, 28-year-old Albert Sastregener and 25-year-old Cristina Torrent opened the doors of Bo·TiC restaurant in Corçà. The restaurant earned its first Michelin star in November 2009.

Ca l’Enric was opened in 1882 as an inn for travellers and a small shop for supplying farmers in the area.

Today, Desideri and Dolors’s children continue to evolve the restaurant’s traditional cuisine, working with the essence of the region’s flavours.

The platillos (small dishes) appeared in 1965 with the arrival of Desideri’s wife Dolors, followed shortly afterwards by the casseroles and the weekend grill. The old inn was by this time a fully-fledged restaurant, which is where the story of Ca l’Enric begins.

They offer an interpretation of traditional Catalan cuisine, with seasonal produce and ingredients from the immediate surroundings, the forests of La Vall de Bianya, selecting the best products and recreating the flavours of traditional cuisine with a touch of the avant-garde.

an early-20TH-century summer home into a small hotel with five rooms. Margarita Grassot and Josep Maria Casellas (Quim’s parents) took over the family business in 1974; their children, Quim and Maria, joined the business in 2000 to help manage and give new direction to the hotel (then 20 rooms) and the restaurant. It’s been over 10 years since the new restaurant opened; it always has and will always make quality a top priority. “We believe that there are no shortcuts when it comes to quality, and our customers appreciate that”.

A landmark for lovers of Catalan cuisine. Opened in May 1978, Els Tinars is currently run by the third generation of the Gascons family: Marc is the head chef and his sister Elena runs the front of the house.

Salvador Vidal and Cinta Carreras opened the doors of Empòrium hotel and restaurant on 6 June 1965. The restaurant has gone through different stages with each generation that has managed it over the past 51 years; today, the third and fourth generation focus on traditional yet updated Empordà cuisine prepared with local products. The restaurant and its wine selection –designed in collaboration with American artist Ralph Bernabei– has been recognised by the world’s most prestigious critics and food guides.

Based on a surf and turf concept, the menu is a reinterpretation of traditional Alt Empordà recipes and ideas. Thus, warm dishes like mackerel are served with vegetables and grape escabeche, pickles and green apple; acorn-fed duck and fatty liver with anchovies, pear and trout roe; pig’s trotters with white beans, sea cucumber and endive, and hake with beef stew, tomato juice and artichokes.

La Fonda Xesc is part of a historic home built in 1730 in Gombrèn, a small village in the Catalan pre-Pyrenees surrounded by a unique landscape. The Empordà’s two-hundred-year-old stone oil mill, El Trull Alenyà, is in Corçà and the current manager, Jordi Oliver, is the fifth generation of his family to run the business. The mill produces top quality coldpressed extra virgin olive oil made with a stone mill and the traditional woven disc filters, just like in the old days. All year round the mill organises guided visits to demonstrate the oil-making process, followed by a chance to taste the oil and tapenades.

The story of Mas Marcè can be traced back for six generations, when the Marcè family made a living as shepherds. Mas Marcè has three main objectives: recover the Ripollesa sheep, Empordà cottage cheese and cardoon vegetable rennet (thistle) in order to make its products.

Mas la Coromina is a farmhouse and a cow farm in Joanetes, in La Vall d’en Bas, where you can try your hand at being a farmer for a day. Gelamà is no ordinary winery. Its history, the warm family atmosphere and the smell of wines pervade every corner of their facilities, with a country guesthouse to let for short stays nestling amid the vineyards. In 1892, Raimon de Falgàs began his career in the company, which over the years was to become one of the most important wineries in Alt Empordà, specialising in the production of cava. In fact, it was the first winery in the Empordà region to make cava, called “champagne” in those days.

The Spanish Civil War marked a new chapter in the winery’s history and led to its closure. Four generations later, the Falgàs family decided to revive the family tradition and relaunch the brand that had once been so productive. Gelamà offers various wine tasting options, with lunch, a barbecue or creative set menus.

The Brugarol winery is almost buried on the boundary between the vineyards and woodland. Masia Carreras is a property consisting of small vineyards (less than one hectare on average) on rough terrain due to changes of level in the soil, which are suitably laid out to make the very most of the sun to favour the maximum development of the aromas and the optimal ripening of the grapes. In the year 2000 the Martín Faixó family embarked on a pioneering project: the recovery of the vines in the Cap de Creus Natural Park. The first grape harvest took place four years later with the help of family and friends and was done entirely by hand, in keeping with the family’s generations-long tradition. of previous generations, was carried out by hand. The winery’s first wines, christened as Cadac and Perafita, reached the market in 2007, the DO Empordà label.

The wines of Martín Faixó, produced in Cadaqués, owe their name to the Sa Perafita farmhouse, a 14th century building located between Roses and Port de la Selva. The family purchased the building in 2003 with the aim of converting it into a rural hotel and winery. The wines that emerge from its barrels have real personality gained from a mineral-rich soil bathed by two seas and caressed by the tramuntana wind. These influences are perfectly embodied in the cellar’s top-of-the-range Cadac wine.

Espelt Viticultors is a project led by Anna, the last generation in a long line of Empordà farmers. She and her team use organic winegrowing methods with the conviction that wine is made on the vine. The Santamaria winery is just steps from the historical centre of Capmany. The origins of this family company date back to around 1877, when Gregori Artizà obtained the medal for perfection in the National Wine Exhibition. Two wine-ageing cellars can be visited on the estate, one built in the Romanesque/ Gothic style and dating from the 16th century, and the other dating from the turn of the 20th century.

There is also a museum in which the family’s old utensils are on display, along with all sorts of documents, such as an 1879 decree in which the civil governor of Girona appoints Gregori Artizà to monitor and detect phylloxera in the province. The winery, which has been producing the Gran Recosind wine since 1980, was one of the first to implement oak barrel ageing for DO Empordà wines.

Mas Estela is a thousand-year-old property in the Sant Romà Valley, in the municipality of La Selva de Mar (Alt Empordà). In 1989, the Soto-Dalmau family acquired the farmhouse and the 50 hectares of land around it. After a long and quite difficult restoration job, Mas Estela came back to life and 16 hectares were replanted with red Grenache, Carignan, Monastrell and Muscat of Alexandria grape varieties. surroundings in the best conditions led us to choose organic agriculture right from the start, in 1989, and in 1999, we opted for biodynamics. The careful observation of the vines, working in harmony with the rhythm of the moon and the planet and the exclusion of herbicides, pesticides, fungicides, insecticides and synthesised fertilisers mean that the terroir can be expressed through the living land. Mas Llunes is a family winery which was founded by the Roig family, with a long tradition as wine growers and wine producers in Garriguella.

This family-run museum houses a collection of utensils, objects and documents belonging to the Artizà-Cusí-Santamaria family, devoted to the world of vineyards and wine since 1680. The section devoted to Gregori Artizà (Capmany, 1839-1921), a school teacher by profession and writer of several books, is particularly noteworthy. In 1906, Gregori Artizà took part in the 1st International Congress of the Catalan Language, where he gave a lecture. The museum houses a copy of the congress book, which lists all the lectures given there, along with a first edition

(1918) of Gràmatica catalana by Pompeu Fabra. Gregori Artizà was given the task of detecting and monitoring phylloxera in the province of Girona and the museum displays several official documents, articles and utensils that he used in his study of this insect. As for the other items on display in the museum, it is worth mentioning three pieces of furniture listed as belonging to the 18th century Catalan farmhouse: a headboard in the Olot style, a bridal chest and the front of another bridal chest.

The Catalan Coast Culinary Museum is located in a sixteenth-century home nestled in Tossa’s Sa Roqueta fishermen’s quarter. The house, built outside the town walls, was fortified to withstand attacks from pirates and privateers. Once the residence of Tomàs Vidal i Rey, one of the first indianos to return to the town after earning his fortune in Guatemala in the second half of the eighteenth century, the house was later used for a number of different purposes, including a fishermen’s tavern in the early twentieth century.

Today, visitors can see a traditional Catalan kitchen complete with utensils and a hearth where food was cooked over an open fire, along with a cold room that was dug into the rock to preserve food. The museum offers guided and self-guided tours, workshops and culinary experiences that incorporate other points of interest in the seaside town of Tossa de Mar: the fishermen’s quarter, local estates and farmers, iconic food and kitchen accessory stores, bakeries, restaurants that feature traditional and creative cuisine as well as family-owned, gourmet hotels.

In Palamós, fishermen’s work at sea becomes a living spectacle right before visitors’ eyes when the boats return to port in the mid-afternoon. That’s when the unloading of fish offers an unrivalled picture of colour and activity. In Palamós, the world of fishing doesn’t end on the docks, but continues at the Fishing Museum, a museum on the Mediterranean, one-of-akind in its field. This centre presents the past, present and future of fishing through its permanent exhibition

and a series of activities related to the ​​Costa Brava’s maritime and fishing lifestyle: guided tours of the fish auction, outings on professional fishing vessels, sea routes, trips on fishing boats and workshops. Its Espai de Peix (Fishing Space), the museum’s gastronomic classroom, also hosts discovery activities and grading of fish unloaded at the port of Palamós as well as cooking and tasting of seafood dishes.

The Cork Museum is an institution in the heart of Palafrugell dedicated to the interpretation and dissemination of the Catalan cork regions and heritage. The first thing to see in the museum is the building itself, a modernist factory designed by General Guitart that was built between 1900 and 1907 and today contains several of the museum’s exhibition spaces. The current “Cork in Progress” exhibition is temporary and explains how the museum is in full transformation.

The museum begins with the Can Mario audio-visual presentation to tell cork’s exceptional history, followed by an exhibition that traces the cork from the forest to the factory to make caps, disks, paper and chipboard, through a space where visitors can experiment with cork and, finally, a space where visitors can collaborate by evaluating the plans for the future museum and sharing their opinion.

The Castillo Perelada Wine Museum is housed in the basement of the convent of El Carme, a 14th century building restored at the end of the 20th century. The present-day cava cellars were originally located here before being moved to the exterior in the 1960s. The museum displays all kinds of objects related to the culture of wine, spanning a period from the 4th century B.C. to the turn of the 20th century.

The most noteworthy exhibits include the glass collection, with items dating all the way back to the 16th century, and the huge barrels with large wooden hoops that held thousands of litres and had to be built inside the cellars since they were too big to get through the doors. The visit forms part of the general visit of the castle museum.

In recent years, through the eyes of artists, especially the masterly Salvador Dalí, we have discovered a new vision of our cultural and scenic surroundings, portrayed in priceless works of art. Today, the Dalí Triangle, consisting of the Dalí Theatre-Museum in Figueres, the Gala Dalí Castle-Museum in Púbol and the Dalí House-Museum in Portlligat, allows us to go on an almost metaphysical journey through a world of tormented nature and unique, idyllic settings.

The Middle Ages have left us exceptional works of architecture, such as the monasteries of Sant Pere de Rodes and Ripoll, whose stones speak to us of a thousand years of life and culture.

Culture Culture on the Costa Brava and in the Girona Pyrenees stretches all the way back to the dawn of civilisation. Starting our journey in prehistoric times, we find megalithic monuments in the massifs of Albera and Les Gavarres, prehistoric caves in Serinyà and the ancient Iberian settlement of Ullastret, along with Romanesque, Gothic, baroque and modernist buildings scattered throughout the area. Our coast was visited and settled (especially for trading purposes) by the Greeks, Carthaginians and Romans, who not only left their imprint here but built towns such as Empúries, where today we can follow in the footsteps of those ancient visitors.
