Happy New Year! I hope you all had a truly magical Christmas and welcomed 2014 in style. I’m particularly excited about our January issue, not only due to the fantasic features but it’s also my very first issue as Editor with Cotswold Style!

January is all about new starts and with Christmas now firmly behind us, we’re all looking to revamp not only ourselves but our homes, too. Our first issue of 2014 is filled with lust-worthy fashion (pages 90-93)and indulgent interiors (page 54) that will leave you wanting to invest in a new wardrobe and update your living room.

The presence of women in the boardroom and in the workplace is an issue I care deeply about. As a result, I am proud to see our January issue marking the return of our annual Cotswold Style’s Women in Business (page 35). Our intern, Rosie Webber, together with Eric Barton researched and compiled our 16 page supplement that is filled with powerful and inspirational women.They each share the stories of their success and in turn offer invaluable advice to us all. Do take a look, you may notice some familiar faces. Who knows, you could be so inspired by these women that it will be you on our list next year!

Another feature that I have been looking forward to sharing with you is our Golden Winter Weddings photo-shoot (page 82). THE MICE WHO ATE CHRISTMAS Friday 3rd January Another performance put on by the Badapple Theatre Company portrays the story of two mice who are misled by a newspaper headline that describes Switzerland as the ‘Land of Cheese’.

Naturally, the two mice set a course for Switzerland after envisaging streets paved with cheese, rivers flowing with chocolate and even ‘Toblerone Mountains’. The pair take shelter in a church on Christmas Eve, and mistakenly eat through the bellows of the church organ, leaving the Priest devoid of festive music for Midnight Mass. The mice, Edna and Wilbur, then hurry to make amends by writing their own Christmas carol and shape a charmingly cheery Christmas story in the process to be enjoyed by both children and adults from eight and above. “It’s all about self-nourishment” Natalie Letch speaks to life coach, Sara Lewis January. Yes, you know, that month that’s gloomy, overcast and cold. The month many of us dread arriving. After all of the excitement and over-indulgence of Christmas parties and New Year celebrations, we can be left nursing our bank balances and declaring that this year, we will adhere to our endless list of New Year resolutions...

So, you’ve decided you to need to make changes to your life. Perhaps you know what direction you want to go in but are not quite so sure of how to get there. Maybe there is something niggling at you and you cannot see the wood for the trees? Well, this is where meeting someone like Sara Lewis could be the answer to your problems. Life coaching is becoming increasingly popular and can provide many of us the opportunity to tweak things in our everyday, so that our lives are enriched.

Based in Cheltenham, Sara, of Lewis Life Coaching finds that the majority of her clients have similar qualities; “They are warm, thoughtful, kinesthetic type of people who are compassionate and consider others, but they can worry deeply about what others think of them.

Interestingly, that’s something I can see in myself ”. Sara says, ‘being of that nature means you’re in tune with life, more grateful for the everyday and selfless”. Generally, her clients fall into two categories: those with a sense of dissatisfaction but don’t know what the problem is and those that would like a change but don’t know where to start.

“Through exercises and discussions, we hopefully come to a point where we identify the problem. It could be that their perception is just slightly distorted, which stems a realisation that there is no problem at all”.

Self-nourishment is something that Sara deems a necessity, “I stress that clients need to take time out for themselves, we don’t do enough of it.

I take a very realistic approach to coaching; life gets in the way and we have to do the daily chores, go to work and look after the children but there is always time. It’s about the simple things, like taking yourself to the coffee shop for half an hour or reading a magazine”.

Sara adds, “By doing so, you allow yourself space to think allowing new ideas to increase. It can be small, inexpensive experiences. We need to nourish ourselves”.

Modern day life can be somewhat overwhelming. Increases in technology mean we are available 24/7. The constant need to check our phones and updates to social media leaves many of us struggling to sleep and filled with anxiety. Sara comments, “We have to do so much in life now, everything is speeded up. I’m a big fan of being mindful. It’s about acknowledging that you have got yourself into town, looked up at the sky, noticed the rooftops you’ve not seen before and can hear the birds singing. It’s not easy to do but taking that time rather than letting your mind race. Try practicing mindfulness and enjoy the moment you are in. You will become far more appreciative of what you have. In turn this will build confidence and mean you’re not always on the go”.

Sara says, “The crunch word is progress. It fills us with a sense of purpose and without this we can feel stagnant. We all need fulfillment to some degree and whether this is discovering simple everyday gratitude to fill us with contentment, or a full blow

action plan, progress in our own lives must exist. If you are unsure of how to begin, consider the question - what would I be doing differently next month to demonstrate to myself and others I have made progress?”

We asked Sara how can life coaching help people, “I offer devoted time to the client, time of which we do not make enough of. I act as an impartial sounding board, enabling me to distinguish key words and vital information in order discuss thoughts and feelings, options and decision making. Ultimately, empowering the client to take action and find a resolution to their problems”.

The constant pressures of money and job security has meant that many of us are facing longer working hours, often into the evenings and weekends. Sara advises,“If there’s work to be done, schedule in specific working time and do not let this bleed into other free time you have. Create a pattern in your life so that you are able to leave work behind before the evening arrives.

Turn the phone onto silent or turn it off from a certain time of the evening”.

Sara says, “Some of my clients have made remarkable progress through simple exercises and conversation over a number of sessions”, with many changing their lives for the better. Their lives are enriched and they and their families reap the rewards.

On my walk home from Sara, I took in my surroundings. I noticed a building I hadn’t seen before. I breathed in the fresh air and did not ‘check my emails’.

I returned to work feeling that bit more refreshed and that was only with ten minutes worth of ‘me’ time. CS JANUARY 2014

What’s in a star? Exposé on Grade II* listed buildings Many of the houses which we sell in the Cotswolds during the course of the year are listed. Most of those are listed Grade II but a handful are Grade II* or Grade I. Most people know the connotations and responsibilities of owning either a Grade I or a Grade II listed building, but we are often asked what it means for a property which is classified in between these two categories as Grade II*.

A simple Grade II building is one which is nationally important and of special interest. 92% of listed buildings fall into this category. Grade II* buildings are particularly important buildings of more than special interest. 5.5% of the portfolio of listed buildings achieve the star rating. The crème de la crème of buildings are, of course, Grade I listed (2.5% of the register) which are of exceptional or international interest.

To put these percentage figures into some kind of context, in England and Wales there are around 20,000 properties which are listed Grade II* equating to about 1 in a 1000 of our total housing stock.

So what does the star rating mean? There are two important differences between this category and the standard Grade II category. Firstly, in applications for consent to works, the local conservation officer will refer the application to English Heritage for their input. Secondly, the works might qualify for a grant. Whereas the first point might add a bit more red tape to an application, the second is rarely sought in the private property domain to avoid the obligation to open the property on occasions to the public.

Whatever the issues are concerning the ownership of a Grade II* listed property, the joy to the owner is to be able to live in a building whose architectural or historic qualities are 1 in a 1000. The buyer will gladly assume the responsibilities JANUARY 2014

because he will have the daily pleasure of experiencing, enjoying and owning a sublime and extraordinary building.

Savills is currently offering a number of Grade II* listed buildings for sale. The jewel of these is the newly renovated Brandon House in Cheltenham which can easily claim to be the best example of a Regency villa in the town. Its proportions are ambassadorial and the light throughout the house is incredible for such a large building. Women contribute a huge amount to the UK economy. The list of women featured in in this supplement is a testimony to their skills; tenacity and dynamism and a tribute to their ability to sustain and grow successful businesses.

Women in the UK account for 17% of business owners in the UK compared to some 30% of all US businesses which are majority female owned. So this means that women in the USA are twice as likely to be entrepreneurially active as women in the UK. The entrepreneurial rates for men are roughly the same in the UK as the US, any significant increase in business formation will only come from encouraging more women into business.

This represents a great opportunity as if we could encourage the same levels of female entrepreneurship as the US, Britain would gain three quarters of a million more businesses.

On the other hand we have come a long way and in Britain today there are currently more women running a business than ever before, although they are still far outnumbered by men. There does seem to be a belief that women are not as capable as men of running a business, this is completely untrue. They may do it differently but most women are well

suited to running a business, at least as well suited as any man. Research shows that “strong market growth among European companies is most likely to occur where there is a higher proportion of women in senior management teams.”

Firms with more women on their boards “outperform their rivals with a 42% higher return on sales, 66% higher return on invested capital and 53% higher return on equity.”

Qualities such as tenacity, communication skills, empathy, perspective and maturity make women great leaders. Generally, gender stereotyping is not a good idea, as that has clearly been one of the problems! It is also true that these qualities are not uniquely female and there are bad women bosses and women who are ruthless and destructive, while plenty of men are compassionate and inspiring. But I also firmly believe that if we had more female leaders the world would be a better place.

Ditch the filofax, set Eric Barton meets Charles Russell Partners, Julia Cox and Sarah Jane Turcan Trends are great. I loved my Filofax, Duran Duran and avoiding lunch because it was for wimps. But time stands still for no man. Staying ahead of the curve and setting trends is insightful, inspiring and usually culture forming.

The legal firm Charles Russell in Cheltenham have at their very beating core the ability to both understand their client’s needs and the desires of their staff. Like a gavel hammering on teak, this is a thumping good principle that permeates throughout the business enabling organic growth to thrive.

The portals at the Charles Russell Cheltenham office are impressive. No dusty, dimly lit entrance harbouring an ancient dragon – like receptionist spitting indifference. The welcome at Charles Russell is bright, professional and charming. Lovely.

I’m intrigued to find out how two of the female Partners at this Cheltenham legal practice have managed to mould and organise their busy lives to enable their heavy-duty careers to flourish. It’s a very hackneyed term ‘women in business’ because there are women in business everywhere, but sadly only a small percentage who are real high flyers.

And that seems to be still relevant for just about every profession. Not so at Charles Russell.

Partner Julia Cox started off her major academia with a degree in history before deciding that the legal World offered more potential by way of variety. Julia comments, ‘I thought being a lawyer would offer more opportunities to work across a larger breadth of businesses’.

That certainly seems to be the case as the practice currently represents and manages a plethora of clients across a wide- ranging spectrum. Julia goes on to comment, ‘we have an enormous degree of diversity with our client base’. That certainly rings true as Charles Russell represent and manage clients as far

ranging as rugby players, landed estates, captains of industry, celebrity chefs and a number of high profile businesses.

Although the clients are very diverse the approach seems to be the same.

Partner Sarah Jane Turcan (who after doing languages at university) also decided that being a lawyer would be more fulfilling initially says.’ no two days here are the same. It’s a case of juggling priorities every day and ensuring that the client’s needs are always met’. is what we’re aiming at’. Sitting round the table in the ground floor meeting room at Charles Russell I’m really unaware (as the photographer snaps away) that these two ladies are both working mums. It’s not obvious at all that they themselves also have to juggle everything from doing the school run to after school activities with both of their young children. This is a balancing act that would happily grace cirque du soleil.

Julia Cox further goes onto comment,’ being able to meet the high demands of what we do here day to day is attributable to the support both Sarah Jane and I receive from our teams.

We both have extremely hardworking, dedicated teams who make sure that the clients requirements are always met to a standard that we all set’.

In a sense the word culture springs to mind here. There’s certainly a culture of excellence and professionalism, but also of something more human and touchable. Sarah Jane says,’ we both worried about taking time off for maternity leave, but the internal culture here enabled that to happen and to

happen easily’. She further comments,’ if you are good at what you do, work very hard you will get there’. That’s a fair point. It’s also fair to say that Charles Russell as an overall law practice is substantial in every way. The total operation has nearly seven hundred staff with Cheltenham chiming in with over ninety staff, of which a staggering forty six are actual lawyers. In fact the Cheltenham office alone in the last three years has seen a12% growth. These types of hefty figures place the business in the Top 50 full service law firms in the UK. No mean feat. This isn’t just relevant as a statistic to show weight in numbers, but more of an indication of available expertise. Sarah Jane further says,’ we do operate as one firm in conjunction with the London office and can call on them

at any time. This is a massive resource that we can call to bear if needed’. Ask anybody and they’ll probably tell you that you’re only as good as your last job.

It’s certainly the case in my profession, but hugely refreshing to hear a topnotch lawyer say it. Julia comments,’ we constantly strive to deliver every time to our clients in terms of results and speed.

Adding value is one of our basic mantras here. We always try to make sure that there is always a benefit to the client in using Charles Russell’. There is a nonnonsense policy at this firm that the Partners see the managed project all the way through to its conclusion. This is all very encouraging stuff, as who wants to be passed down the line like some tired old rugby ball? Time off for both these Partners is the weekend with the children

(of course) and a mixture of horse riding and yoga.

Both Partners finally comment that it’s about ‘hard work and providing a Rolls Royce service to the client’. Mix this up with school runs, riding horses, yoga and bringing up young children and you have the makings of both super -mums and dazzling examples of ‘women in business’.

It all began in Los Angeles over two decades ago and now the company functions from studios situated in a 400-year-old regency building in Cheltenham. Her entrepreneurial spirit was instilled from a young age as both of her grandfathers had successful businesses. But running a business like Meri Meri is not always an easy ride.

She admits that like most mothers she is short of sleep, and her advice to aspiring businesswomen is to start small and take responsibility. “You will make an awful lot of mistakes in the beginning. Take full responsibility for all the mistakes.”

Gloucester based Raging Bull is a lifestyle brand founded by rugby legend Phil Vickery. MD of the company Shannon

Mercer has been pivotal in building the brand, which has seen huge growth over the last five years especially within House of Fraser, where it is stocked in 26 stores nationwide. The brand is also stocked in Debenhams in Gloucester and a number of local independents. Shannon’s incredibly strong work ethic comes from having a drive for success and she says that working with Phil Vickery is inspiring because of his passion and enthusiasm. She also doesn’t let anything hold her back. “When I began building the Raging Bull brand it was through continuing to believe in the product and being able to absorb set backs that led to our current success.”

As Head of the entire Commercial Property Team and equity partner at BPE Solicitors, Antonia Shield is responsible for advising both regional and national clients in the development and retail sector. Having joined Total in 2002, Lorrin White is responsible for administrative, service and back office functions of the award-winning business-to-business service provider. She brings 20 years of experience in administration and project control within small to medium-sized companies to her role as operations director. Lorrin isn’t shy of hard work. Enlist as much help as possible if you have a young family in terms of childcare, cleaner etc so that you can focus your attention on the most important areas of your family life and your career. Despite running a vintage-style circus alongside her husband, Toti, since 2000, Nell Gifford says that becoming a businesswoman was something that happened to her without realising. Her business acumen has grown with the business. Preparing for the majority of the year, the sche¬dule between May and September is intense, with one to two shows a day and up to six at the weekend. With such a busy schedule, Nell juggles work and family life with organisation and by accepting that some aspects of life have to fall by the wayside. She advises aspiring businesswomen to “find the best people in the relevant field to work with, research around the subject and learn a language.” She also believes that anything is possible if you have the determination.

Linsey says that in business you need broad shoulders and thick skin. “It’s not easy, and there will be plenty of set backs and criticisms along the way, but each hurdle is an experience that should be used as a learning curve.” While she admits that having two young children and holding down a career is a challenge, she has an understanding Board of Directors that allow her to work formal hours to fit the needs of her family. Her advice to other businesswomen is to “have confidence in your abilities and act with conviction.”

MARY CURNOCK COOK UCAS

Having left school at 16 to join International Biochemicals as a secretary, and leaving as International Sales and Marketing Director, Mary Curnock Cook has made her way to the top through hard work and determination. “I never had a particular ambition but as soon as I started working I found that I loved it. I just worked hard and slowly made progress to more senior positions.”

Since 2010, Mary has been working as Chief Executive of UCAS, the organisation that manages applications to higher education courses. Host to a phenomenal CV, Mary has headed various organisations, has an MSc in general management and was awarded an OBE in 2000. To aspiring

businesswomen she says, “Find a business sector that you really care about and are passionately interested in; then work hard and go the extra mile.

With two degrees and several years working in London in finance under her belt, Sarah joined foodservice company, Creed, as Finance Director in 2012.

Creed is one of the leading independent foodservice Wholesalers in the UK. Sarah believes there needs to be a good work and home life balance, and with twin boys who are now both at school, she values the time she gets to spend with her family at weekends. She believes versatility to be a key attribute in becoming successful in business. Her advice to aspiring businesswomen is to “read all that you can and take every opportunity that comes your way to learn and progress. Be interested in other people, have a good can do attitude, and be adaptable. Business is constantly changing and you need to be aware of the potential pitfalls!”

CATHY O’DONOGHUE HR Champions

HR Champions has provided Human Resource and Employment Law support and management training for businesses for over ten years. Company founder and

director, Cathy O’Donoghue identified a need for the provision of support in Human Resources and Employment Law matters, and set up the business in 2001.

The company flourished, and her husband joined the business a few years later. “As my husband and I both work in the business, we have the flexibility to manage family life between us when we need to.” Cathy and her team have learnt along the way and have been hugely successful. “Having a good business idea is only half the story. Make sure you learn the nuts and bolts of what running a business entails. You need to understand turnover, profit and balance sheets.” She also thinks that gender won’t make any difference in the business world, “You’ll be seen as credible if you prove through your actions that you are capable and effective.”

REBEKAH HOWARD Adey Heating Solutions

Rebekah is the commercial director at Adey, a professional heating solutions company, and is proud to have supported the growth of the company.

In less than 10 years, Adey has achieved turnover of £18.4m. “I’ve always been very process driven, and I’m relishing the challenge of managing a growing team through change and continuous development.” Rebekah says that her supportive family is her inspiration, as they have always owned their own businesses. She thinks that balance is key and although she loves going on holiday, she is never far from her phone and emails. Her main piece of advice is to enjoy it, because then it doesn’t feel like

KATHRYN RUDD National Star College

Having worked at the National Star College for ten years, Kathryn Rudd took over as Principal in 2010. National Star College gives young people with disabilities the opportunity to realise their potential through personalised learning, transition and lifestyle services.

It was ranked as an ‘outstanding’ specialist education provider by Ofsted last year, with its exceptionally good specialist care and support for students.

The college has grown substantially over the past 10 years offering programmes to over 800 people with disabilities at 44 venues across the UK. Eve Jardine-Young became the 11th Principal of Cheltenham Ladies’ College in September 2011, having taken her own A levels at the school in the late 1980s.

Her previous experience includes time spent as Housemistress and Head of Sixth Form at Epsom College, and as Director of Studies at Blundell’s School in Devon. Eve is at the head of an educational organisation, including sports and performing arts centres, with a turnover of £23m and more than 500 academic and operational staff.

Since its formation 160 years ago, the College has built a worldwide reputation for academic excellence and the latest results are testament to why it is such a highly regarded institution. Rosie Webber speaks to Denys Shortt OBE to find out more about becoming an entrepreneur...

If business is your career path of choice, there’s one man whose advice you wouldn’t want to pass up. Denys Shortt OBE is a serial entrepreneur, and his motto is “what you believe, you create!”- a sentiment he has, undoubtedly, followed through his entire career.

At 18, Denys turned down a place at Loughborough University to join his family’s food delivery business. After spending some time there, he set up his fist company, DCS in 1994. Nearly two decades on and the company employs over 300 people and will this year see sales of £185 million.

Like many successful businessmen, Denys isn’t afraid of taking risks. He created Enable Software in 2000 with a 16-year-old, who he made managing director. And the company now has sales of £2 million. This year he started up yet another business partnership, Deal-Track Ltd. With running multiple flourishing businesses, Denys has acquired of a lot of business know-how, despite not having studied the subject. And when it comes to the age-old question of whether to experience work or to study, Denys’ career is testament to the fact that a formal education in business is not exactly necessary; “I think people should work for a business to figure out what they like or don’t like. I was hopeless at school. All I could do was play sport.” However, all was not lost at school for Denys, as he admits that playing hockey fired up his ambitious side.

When to start a business is something many budding entrepreneurs have trouble grappling with. Yet, with banks keen to lend at the moment, Denys believes the best time to start a new business is now; “Often your business idea is current and as the world is changing there are openings appearing all the time.”

Going about getting financial backing is often the most crucial part of getting an idea into fruition. Denys advises shopping around as different banks have various offers, “There are loads of schemes and you can get advice from your Local Enterprise Partnership or Chamber of Commerce.”

So what makes for the ideal businessperson other than viable ideas?

Denys believes there to be three attributes required for becoming a success in business; passion, energy and planning. The importance of planning in particular certainly

should not be overlooked, “Often people don’t give themselves a chance by not preparing properly.”

“I am a big fan of strategic planning. I learned the Kaplan plan from Harvard when my business was £60 million sales. We have turned it into a £180 million business using the Balanced Scorecard Planning method”. Energy is also needed and putting in the time and effort is essential for making it in the business world. But Denys believes setting up a business in the evenings and weekends is feasible, “I know an electrician who set up an online store in his spare time and now he has become quite big. Online has so many opportunities and many people are running shops from home.”

Denys still sees the business industry as being far too male-dominated. At a recent industry dinner 9 out of 10 people on his table were men. But he believes attitudes towards women in business are changing and is keen to see more women in the workplace, “Women have a completely different way of managing situations and are far more calm. Our head of HR is a woman and she is brilliant at encouraging women to rise up and become leaders within our company. I am a firm believer if the world’s leaders were women we would live in a more settled place with patience and balance”. We couldn’t agree more! CS

To many people this January, ‘Paperwhite’ will be a new Kindle advertised constantly on television, but to me there is only one true paperwhite and that is of the all-white narcissus type.

The sweet, intoxicating scent of a stem exploding with snowflakes of pure white, is an indoor winter sight to behold in the UK! This delicate bulb from the Mediterranean is planted up in its thousands in bowls in the run up to Christmas to provide us with a plethora of fragrant fascination in our homes in the cold dark months.

The name ‘paperwhite’ comes from ‘papyrus’, which is a reed upon which Egyptians used to write, so an early form of paper. Hence a well thought out name for the new Kindle, if not slightly ironic due to its digital nature!

The original paperwhites in cultivation include the likes of N. papyraceus and N. pannizzianus, but many modern cultivars exist such as ‘Ziva’ and ‘Scilly White’, the latter offering the most truly amazing aroma.

There are 13 divisions in the daffodil classification system and paperwhites belong to Divison 8: Tazetta Daffodils.

Those under this division bear several blossoms per stem and come with very sweet scents. All daffodils within the classification system are given a colour code made up of capital letters to represent petal and cup colours. So, for example, the paperwhites would be 8(Tazetta division) W(white petals) – W(white cup). It was in fact a relative of the nearby Coughton Court JANUARY 2014

TIPSY TAZETTAS Camilla Bassett-Smith is a Cheltenham based media horticulturalist. Camilla’s most recent project is as Assistant Producer on a brand new BBC programme presented by Fern Britton, which will be coming to our screens soon.

As we welcome a new year, Camilla shares a glass of sherry with a winter daffodil…..

Bulbs for forcing (no this is not some kind of botanical punishment but rather an encouragement to flower earlier than normal!) are planted in the last few months of the year with their tips just below the surface in, ideally, a good bulb fibre. They are then left inside and can flower in 6 weeks. Unlike hyacinths, paperwhites don’t need to be kept in the dark for weeks in order to promote flowering, and so bowls and pots of the bulbs can be placed straight away in a warm light spot. There they are now awakening to greet our new year and remnants of Christmas, which they actually think is spring and the season full of growth! They’ll be the first ones to mistake that bauble for a rosy red radish!

As the sherry and port make their way into the crystal glasses placed elegantly around, why not invite your daffodils to join you? No, I have not been partaking of the liquor already, I base my alcohol loving narcissus on fact! The Flowerbulb Research programme, at Cornell University in America, carried out some research which found that when paperwhites were watered with a mixed solution of 4-6% alcohol and water, their stem size was reduced but flowers were still large, fragrant and long lasting. Finally, a solution to the

sometimes long and leggy toppling flowers, plus the added benefit of a very happy tipsy tazetta!

It’s not only as forced bulbs that the paperwhites make a winter appearance, but cut flowers too; over 25 million stems a year are exported from the Isles of Scilly. The climate in these islands allow the delicate tazetta bulbs to thrive outdoors, and families make their living from the production of these gorgeous cut flowers. I was lucky enough to visit Tresco a few years ago, but am yet to behold the wondrous beauty of fields of white fluffy paperwhite clouds in neighbouring islands.

Although many forms of tazettas can be planted in your Cotswold garden in the autumn, along with other outdoor daffodils, paperwhites are not very hardy. If they do survive outdoors in the UK as a spring flowering display, it will only be in a very sheltered, warm position. Modern cultivars are more likely to perform outside but for guaranteed success with paperwhites, opt for indoors!

A: Algae is harmful to the nutrient balance in a lake and will therefore inhibit life. Using an Algae Rake, you can drag the algae and leaves from the surface and remove them. You can then place bales of Barley Straw in sunny positions around the lake ( one bale / 800m2 surface area). The chemical produced as the straw rots will kill the algae, but keep raking it off. Try and minimize fish life and do not allow fertilizer run off into the lake. If you want to go down the chemical route, then, there are Algaecides on the market that, when applied, will starve the algae of the nutrients it needs to grow and it will consequently die off fairly rapidly. and how do I prune Q When wisteria?

A: Wisteria needs pruning twice a year to keep it flowering prolifically. In July or August, after flowering, prune all the JANUARY 2014

WINTER

By Jon Hodder, Sudeley Castle’s Senior Gardener We begin a new year. In sheltered places some bulbs will be showing through, all signifiers of Spring’s great show. Yet, we should not hasten the next season, but dwell within the one yet to pass.

Winter has already shown a good deal of character; we have been dowsed with persistent rain, struggled with impish and tugging winds and felt the first cold breath of the great northern wastes push its icy fingers down the back of our southern necks. A meteorological playground bully; strong and threatening, just as long as the sun stays low and shrivelled in the darkening sky.

But what of winter’s slippery ermine?

That most feminine of winter’s clothes,

the Snow? Ah, what indeed. She that comes on nights clouded wings; a thousand-fold feather-fall, with none alike. She who brings a silencing beauty to all she touches. Lays, with matchless skill, wonder in the eye of children eager to sully the finest of winter’s linen.

Remember the beauty, and allow yourself to celebrate the Snow Queen’s court.

Beneath the snow, in the resting soil, seeds recall summer’s fecund plenty, and await the burgeoning ache of spring’s call to growth. Beetles lie moribund in a chilled torpor, carapaces still and far from thoughts of flight.

Resting, curled tight in a nest made by command of nature’s urging, the wood mouse breathes slow and steady, the

finite reserves of his honest heart kept better for the rush of vernal clamouring.

Birds may not rest. This is the harshest of times, the winnowing. The smaller ones will spend the short day constantly looking for food, the larger ones looking for smaller birds to eat, all of them looking for anything they can find.

As I have said before, and as we all know well enough, the iron clamp of winter will not endure, but we must endure the iron clamp of winter. The imperceptible gain of light is mean indeed in these cold days, but slowly draws on towards our mid-summer apogee, when at last the cold is forgotten and all is as alive as it could ever be.

Let that thought be a beacon when the dark embrace of winter clings tight, and all about is damp and cold. When shades of grey and dun perplex and clouds hang low in a threatening northerly sky. When the night-flight geese call the haunting tunes of the arctic wastes, as they pass over a huddling, muddling suburbia. Alison Jones of Vets on The Park, answers your pet dilemmas cat has stopped using the Q My litter tray, what does this mean?

Cats can have accidents in the house for lots of reasons, but the most two common are stress or cystitis. If you see blood in the urine or your cat is straining then visit your vet as an emergency. Stress can be caused in many ways such as moving house, having visitors or even thunder, fireworks and other cats. If your routine has changed and your cat starts messing in unusual places then here are a few tips that might help:

1. If you’ve changed your cat litter, go back to the old one 2. Supply 1 litter tray per cat plus one spare and put them in different places.

Try getting bigger trays especially if your cat is large 3. Clean up accidents with biological washing powder or special sprays such as ‘Urine-Off ’ 4. Clean the tray more often

5. Use Feliway sprays or diffusers. These are feline facial pheromone that mimics the smell of happy cats. Don’t worry you won’t smell them yourself but your cat will feel chilled and relaxed.

Most animals are scared of the unknown – it’s a natural protective behaviour.

The single best thing you can do to reduce your pet’s fear of the vet is to find a surgery that welcomes you just dropping by for a free weight check or a quick chat. By allowing your pet lots of happy experiences with your vet then their fear should abate. At Vets on the Park we give dogs liver treats and owners tell us they simply pull them across our car park to get in!

Cats are a different matter. If you have a cat that is extremely fearful of the box, the car and the vet then the whole process can be stressful for everyone concerned. Try finding a vet

that provides free house visits so your cat can stay sleeping on the sofa until the vet arrives! is a puppy party?

Q What Many vets now run puppy parties

and if properly organised they can be great fun. Make sure there are not too many puppies attending - at Vets on the Park we prefer to keep groups to between 3 and 5 puppies. This means each puppy and owner can get the right amount of attention. In large parties, some bold puppies, (and owners!) can take over! Your veterinary team will take you and your puppy through a range of topics such as toilet training, safe play, sleeping, lead walking and basic healthcare. These parties allow you to meet and talk with other puppy owners and gain confidence in handling your puppy and improving socialisation.

We have found many of our puppy party owners form great friendships and start puppy walking together!

All puppies need two sets of vaccinations, given 2-4 weeks apart to protect them. These start at between 6 and 9 weeks depending on the brand of vacine your vet uses.

They are vaccinated against distemper, parvovirus, hepatitis, parainfluenza, leptospirosis and bordatella (also known as kennel cough). They can also be vaccinated against rabies and leishmaniasis if you plan to travel but vets usually advise these are given at a later date. do I need to do to if I Q What want to take my pet abroad?

The rules for taking pets abroad changed last year and it is now a fairly simple process. First your pet must be microchipped and vaccinated against rabies. Your vet then needs to complete an official Pets Passport (there is even a section for a photograph of your pet if you wish!). After you have your passport you are free to travel but you must wait 3 weeks from the date of the rabies vaccination before returning to the UK.

You need to visit a vet 1-5 days before your journey home for tapeworm treatment. It’s important to understand that the PETS passport scheme is designed to keep humans safe from disease and does not take into consideration your pet’s welfare. If your cat is found and taken to any vet or animal shelter then you will be reunited quickly. You must, of course, make sure your details stay up to date if you move house or change phone numbers. You can get small GPS tracking devices to fit to your cat’s collar if you are really worried but they are more costly than a simple microchip. With Mandy Hall from Cotswold Farm Park

This month, I had the absolute pleasure of catching up with my farming hero, Mr Joe Henson, Adam’s father and founder of both the Cotswold Farm Park and the Rare Breeds Survival Trust (RBST). In 2011, he was even awarded an MBE for services to conservation.

Being a local man, I think everybody should realise all that he has achieved in his life and how, without his sheer passion and determination, some of the most beautiful rare breeds on show at the Farm Park today would be extinct.

M: How did you get into farming Joe, were you from a farming family?

J: No, I wasn’t actually. I lived with my mother and father in a place called Northwood, which is outside of London. About as far away from London as you can get whilst still being on a tube line! My father (Leslie Henson) was an actor and comedian in the 1920’s to 1950’s. He was pretty much at the top of his game, he went out to entertain the troops during the war and he even performed for the royal family.

M: Oh wow! So how did the rest happen then, what made you want to be a farmer?

J: It was my dream from day dot. I used to buy little lead animal figurines every Saturday to add to my play farm; my pride and joy at the time!

I can remember my mother used to walk me past a little farm every day.

There were cows, pigs and chickens all running around the place. It was all very traditional, they still bottled their own milk and delivered it by horse and cart to the villages every day. I thought it was wonderful. My family moved back to the area after the war and when we did, I was old enough to work there for a while. They didn’t have any paid work available, but it was my first proper experience of farming.

M: When you first opened the Farm Park (in 1971) what was it like? How many animals did you start with?

J: John Neave (Joe’s business partner)

had done all of the fencing, water laying and building ahead of opening, but we had just a small, rather dilapidated barn and a little caravan which my wife Gill used to serve refreshments from. The four children all got stuck in and helped.

We had just four rare breeds on show at the beginning.

M: So, where did all the rest of the animals come from?

J: Early on, a large number came to us from Whipsnade (Zoo). Lord Zuckerman had a collection of rare breeds there which he called his ‘Living

Gene Bank’. The new curator there said that it wasn’t their job to look after farm animals, and so after a long story, the collection finished up here, so we have the original gene pool.

M: What made you take them?

J: To take the Norfolk Horn as an example, Whipsnade had the last existing flock in the world, so they could easily have become extinct.

And people used to say to me, ‘They’re rare! You can’t eat them!’ but the more you eat, the more there’ll be!

“It was my dream from day dot. I used to buy little lead animal figurines every Saturday to add to my play farm. My pride and joy at the time!”

M: Did Adam show an interest in farming early on?

J: Yes he did, in fact he insisted on introducing and being responsible for our Exmoor ponies, descendants of the herd we have today. He had the farming genes very early on.

M: How was the transition of Adam taking over the Farm Park?

J: It was about 12 – 15 years ago now.

He went to Agricultural College in Devon and became very good friends with his business partner, Duncan.

I never put any pressure on him, but when he came home from travelling I said, ‘If you want to work for me, do’…and he did. After a while, I made Adam a partner and then it’s just happened gradually from then on. It’s been a gradual process.

M: How did you feel about Adam’s TV career?

J: Oh, delighted, obviously. I was sometimes quite uncomfortable with that side of things (Joe appeared in a regular farming slot on popular ‘70s TV

programme Animal Magic with Jonnie Norris) but it comes very naturally to Adam. He has it in him, I think.

M: One last question. What animals do you have at home now?

J: Nothing at all. I haven’t even got a goldfish!

I had such a lovely chat with Joe. I don’t feel like I even scratched the surface! I could have listened to him for hours; he’s had such an amazing and inspirational life. Everyone here feels so privileged to be carrying on his work. Cotswold Farm Park was the first of its kind and in my opinion is still the very best. Golden Glamour Wedding planner, Sophie Smith, tells us the story behind our golden New Years wedding shoot…

Glistening frost on the grass, a sprinkling of snow, grand manor houses, cosy fireplaces and getting your closest friends and family together to celebrate not only your wedding but a wonderful time of the year.

I adore winter weddings; and as a wedding planner, I have noticed that the trend for summer weddings – whilst still strong - has declined of late in favour of celebrations in the cooler, pretty autumn and winter months.

So, when I was approached by Cotswold Style to plan and style a winter wedding shoot I didn’t have to think twice about getting involved.

It wasn’t long before I began to get creative with beautiful concepts including a winter woodland wonderland, white winter wedding and a vintage inspired Christmas – whilst finally deciding on the perfect theme, gold winter glamour. Just think; the glamour of Hollywood and elegance of Great Gatsby,

perfect influences for a winter wedding celebration and even better for a New Year celebration.

As my ideas for styling evolved, so did specifics such as the idea of a New Years Eve wedding. New Years Eve has to be one of the best days of the year.

There’s a real sense of joy in the air, and what better way to celebrate than with a wedding. Guests have a perfect excuse to go all out with their outfits with a bit of sparkle and black tie. The chill factor is also an element you can take

This is why I decided upon, Manor by the Lake, being the perfect Cotswold location to base the shoot.

Winter weddings really allow you to play around with food and drink ideas to create a truly scrumptious menu. I decided to add some extra glamour to the shoot by incorporating an Eggnog and Baileys drink and dessert bar with decadent treats. Not only is this seasonal

and a little bit special, their colours fit right in with the gold colour scheme.

I have to say, this was one of the elements I was most excited about planning.

Of course, to bring it all together I had to source some of the Cotswold’s finest wedding suppliers and a model who could pull off this elegant style perfectly. Styling and planning a shoot is very different to styling and planning a wedding. In a real wedding the couple are your customers and so all suppliers >

work and advise to meet customer requirements. With a shoot, suppliers invest a lot of their own time and money to make it work, so it’s incredibly important to each supplier that they get to bring their own personal style to the table and represent their unique style. There would be no point for a supplier to invest so much, if their ‘brand’ didn’t fit. For this shoot, I was lucky enough to work with a great team who shared my vision and were willing to collaborate and work together.

The results of carefully planning JANUARY 2014

and styling an event really pay off. I am incredibly proud of our team for creating this vision. From little details such as confetti filled save the dates to superb Ian Stuart dresses; gold dusted stacked cookies to luxurious fabrics; pretty flowers with a bit of sparkle to elegant glassware and a grand 4 tier cake. The individual details came together perfectly with our fabulously styled model who was a true professional on the day.

I’ll leave you now to indulge in a bit of gold glamour and hope you enjoy it as much as we enjoyed creating it. CS

Love is in the air on St Valentine’s weekend and what better way to celebrate than by planning your big day at Bride: The Wedding Show at Cheltenham Racecourse. Happy New Year everyone! I hope you had a truly fabulous Christmas and have suitably recovered from the New Year festivities.

So, here we are in a brand new year with a fantastic chance to update ourselves and our wardrobes. This month, I’m going to offer you some ideas including lots of amazing things to look forward to and wonderful events where you can show off your new look. Now we are in 2014, let’s look closer at fashion and what lies ahead of us.

Upcoming trends for spring and summer – a style I’m particularly, excited about, is for high contrast words and slogans on clothing, which is going to be huge; think witty, think bold.

Another popular trend will be fringing and cowgirl looks, hot pants and checked shirts with uneven buttoning. The tuxedo will also make an appearance with real style and sparkle; pantone colours fresh with pastel hues.

It’s also time to start thinking of getting that special outfit sorted for the Cheltenham Festival in March, as there are only two months until the big day.

Grace&Glamour With Christmas and New Year done and gone, we have no choice but to enter January defeated and uninspired – or so you thought. Forget your usual January slump and celebrate a brand new year just for you.

Words by Grace Parry, fashion and lifestyle writer It’s January and time to face it; we need to put the festive season behind us. There isn’t often anything that appealing about this month. Full of wishful thinking about the year ahead, resolutions that we don’t always like to keep and, if recent years are anything to go by, an awful lot of snow that always appears at the most inappropriate of times; it’s safe to say, January isn’t always welcome.

I think it’s time to shake up that rotten habit of a thought. We have no reason to think of this month as a bad one, only previous traditions mean that we tend to. Why not look forwards to the month ahead, before the rest of the year, by planning your January the glamorous way. Starting with one of the things we all care about at this time of year; your health.

But when I say health, I’m not talking about your five-a-day and a monotonous diet that even the freshest of spring chickens wouldn’t want to stick to. I was thinking more along the lines of a stress-free and indulgent month, to prepare you for the year of course...

It’s January – what can I do to make this new years resolution count?

With Laura Milne, Body & Health Coach Every year I see and hear the same old new years resolutions... ‘I will get fitter...

‘I will become healthy’... ‘I will lose 3 stone’…. You get the picture. When I ask: “What was your resolution last year and the year before that?”, the reponse is always the same. Why is that? Surely they must be fed up of doing the same thing every year?

Most of us approach January 1st with a view of commiting to trying the latest diet fad, drinking shakes or premade foods, the newest fitness DVD and, of course, the new gym membership will commence. People always try so hard at first but more often than not the old routine starts creeping in and they return to square one.

Why does this happen? Well, you’re either too stressed from work to go to the gym, you’ve had no sleep because of the baby and have no energy, there’s no time to make healthy meals, too much to do with working, kids, exercise and looking after myself, I can’t cope...does this sound familiar?

Remember, that being fit, healthy and positive will make all these barriers disappear. Instead, you will have better focus during the working day, your sleep will improve and your husband and children will have a happy partner. As a result, you will be happier, brighter, healthier and feel fabulous.

Looking after yourself is so vitally important for your future. Our body can survive under stress for months, even years with nothing going wrong; but then something can happen, with no warning! Chronic fatigue, serious illness, weight gain, weight loss, depression, the list goes on. What will you do then to make yourself feel better and great? Go to the doctors for medication, or carry on feeling bad?

Try approaching things differently this New Year. Far too often, you can often end up trying to do too much in one go, with many of us attemting to do a variety of things at once, such as: JANUARY 2014

• Starting an exercise routine • Cutting out caffeine • Going to bed earlier • Drinking more water • Eating more vegetables and protein • Trying to relax more • Taking supplements • Not drinking alcohol or smoking

That’s a long and rather daunting list.

You’re changing so much of everything in your life in one go; very, very rarely does this succeed.

You will find that when the going gets tough at work or, you have a night out with the girls and drink too much, you end up eating badly. You can then think, ‘Oh, I will start again on Monday’. Before you know it this happens every week, making you feel worse in the long run.

MAKE THIS YEAR DIFFERENT Make your New Years Resolutions be to achieve your previous years resolutions, but by doing it as follows: • Sensibly • Gradually • One step at a time • Real food, no gimmicks or fads

• Find a support group or person to help you who understand what your needs and wants are.

By doing so, you will create lifetime changes that will have a huge impact on both yourself and your family.

Of course, there will be times that you will drink alcohol and eat chocolate but it’s about learning self-control and not beating yourself up over having those indulgences.

One other thing before I go; be positive! Tell yourself, ‘I CAN’ and ‘I WILL’ rather than ‘I can’t’ or ‘I won’t’. YOU CAN do this and YOU CAN achieve so, so much. FOMO – Is the new black, and why I can make you happy – Vigilante Style Predictably, now Christmas is over, and the nation is sobbing into its collective soup bowl – (surely because the DFS sale has finished), the media becomes obsessed with happiness and why we’re all suffering from the blues.

Do you suffer from FOMO? No, I hadn’t heard of it either, although it is listed in the Oxford English Dictionary (it’s the “fear of missing out” if you’re wondering). From what I can make out, this acronym essentially describes the angst of young adults, as they cruise their social media pages, watching in real time all the fabulous parties they weren’t invited to. As their “friends” upload yet another selfie to Facebook , they miserably post a “like” and wonder where it all went wrong.

What anguish these poor women (men too, but seemingly less often) go through. What gut wrenching inadequacy this behavior produces in our society; exclusion rather than inclusion, and all because the lady loves the black magic screen of social media. Shouldn’t we take a leaf out the book of that Primary School Headmaster, who insisted on a zero exclusion party policy (ie invite every kid in the class to your child’s party – friend or not)

just to stop anyone feeling left out?

In short – No. It’s precisely because of these cottonwool attitudes that the problems start. A kid knows from a young age whether they are liked or not.

That’s what you childhood is for: to test out who you are and how to act, and to develop a tough skin – something that seems to have been forgotten recently.

To appreciate how truly good life is in the West, you need to have faced a bit of adversity. Far be it for me to suggest we go out and threaten everyone (although I do love a good vigilante movie), but if just the faintest whiff of disharmony seems like a disaster, then that is a real problem for our society. That now overused motto from the war, “keep calm and carry on” was intended for a generation that was stuck in air raid shelters, as their loved ones got blown up in the Battle of Britain. It wasn’t aimed at those who claim to be stressed when their printer won’t work.

Don’t feel sad in January. Just because you can’t see blue sky doesn’t mean to say it’s not there – it’s just hidden temporarily by grey clouds. And if that image doesn’t work, maybe I should get the heavies round to put the frighteners on you – it’s for your own good, honest. CS

TOP TIPS FOR HAPPINESS • Write down every day 1 thing that made you smile. Writing and then reading (not typing) is a powerful reminder.

• Be grateful you’re healthy.

Don’t wait until you’re ill to appreciate wellbeing.

• You don’t know what you’ve got till it’s gone: keep that in mind and you’ll live in the moment.

• And if you really can’t get with the positivity, throw a big party, invite everyone who’s ever “liked” you and post selfies of yourself. I give up.

TRIM THE FAT! Brunsdon CEO and Financial Adviser Brian Morman suggests ways to streamline your savings and investments in 2014 The festivities are over. The New Year is here. Time for resolutions, then.

Topping the list of the most popular resolves – made and broken (!) – are losing weight and getting fit, followed by reducing debt and saving money. No surprises there then, but it reinforces my view that most people’s concerns centre on their health and finances. Whether they decide to do anything about either is another matter. I can’t help you with your diet or fitness regime, but I can suggest ways to make the most of your savings and investments.

In terms of pure streamlining, I can’t think of a better way than making use of a ‘wrap’ account, or ‘platform,’ to hold all your investments in one place.

It makes life so much easier. You can view all your holdings listed on one or two pages online, get up to date valuations quickly and easily and in many instances, you’ll be able to access your investments at any time. Wraps can hold shares, bonds, cash, pensions and trusts, for example, plus tax-advantaged savings vehicles such as ISAs. No more rummaging through piles of printed statements and valuations from a multitude of different providers. And you can request changes to your portfolio via a single point of contact – or indeed, online. Whatever you resolve to achieve in life, I think it’s always a good idea to have a plan. This is especially true with financial aspirations. Now that’s a subject dear to my heart and one I’ve covered here in depth on a number of occasions. Clearly the options open to you will depend entirely on your personal circumstances but generally we’re talking about making full use of the annual tax concessions allowed by the Government on your savings, investments and pensions. As always , I’d recommend an ISA as a taxefficient wrapper as there is no tax on any of the income you receive and no tax due on any capital gains.

And don’t forget to look at any old legacy investments you may hold. It’s

quite likely these will no longer reflect your current or future objectives, either in terms of investment strategy or charges.

Modern thinking, as practiced at Brunsdon, is based far more on client attitude to risk and lifestyle profiling, strategic asset allocation and, very importantly, regular reviews. Over fifty of the globe’s top learning and development professionals attended Cowley Manor for a learning master class run by Gloucestershire based company, Linac, which was officially opened by Mayor of Cheltenham, Wendy Flynn.

The delegates braved the winter travel conditions to descend on Cowley Manor from across the UK, with some of the world’s most recognisable brands in attendance, including: Vodafone, Marks & Spencer, Topshop, Williams F1, EE and Debenhams.

After absorbing the stunning setting of Cowley Manor and enjoying a multitude of Sophie smoothies and exotic Cook Linac fruit snacks to ensure the Training talks to senses were stimulated, delegates the attendees took part in a fast-paced, interactive masterclass, exploring the latest techniques for developing accelerated training events, aimed at optimising the impact of their people in a fun and engaging way.

With the event falling in the middle of a hectic time for learning professionals, the strong turnout for the event signalled exactly how impressive Linac’s reputation is within the marketplace.

with Food Writer Shelle Duffin Having over-indulged in the festive period with turkey, mince pies and chocolate treats, washed down with copious amounts of delicious mulled wine; I can only imagine that if you’re anything like me, the diets and detox will be in full swing.

I’ve always found January to be quite dull – the come down from Christmas, the strain of keeping those all-important resolutions in action and the cold, dark days that brutally remind us that we are still in winter. However, rather than put you in a total state of doom and gloom, let me instead arouse your taste buds and ensure that 2012 gets off to a mouth-watering start.

Well first of all, Happy NewYear!!!

Cooking in January can be made fun and adventurous for budding cooks at any level of ability. In an attempt to save those last remaining pennies and keep the bank manager at bay, seize the chance to empty out those cupboards and use up leftovers from the Christmas season. This is your opportunity to get gutsy in the kitchen, sampling new flavours and mixing them up to make a delicious dish. There is nothing more thrilling than creating a new recipe of your own combinations; this is how the best chefs learn!

As the cold days linger on, there

remains a demand for satisfying comfort food – warming, stirring, and nurturing ingredients into scrumptious and hearty casseroles and soups. My recipe this month demonstrates a dish you can produce using leftover ingredients from the yuletide season, without interfering too much with your resolutions.

However, don’t axe the calories too drastically – a few here and there are perfectly. justifiable throughout the winter months!

Serves 6 generously (*if there are any leftovers, this dish is suitable for the freezer)

• Add the chicken and cook for 10

• Mix in the flour, stirring until all the

mixture is covered and then add the stock, allowing to simmer for 5 minutes • Once the mixture has thickened,

add the wine, redcurrant jelly and mustard • Season well with salt and pepper • Add the mushrooms and cook for

Welcome in 2014 with Beef Wellington With Christmas now in the past and the New Year upon us all, what better way to warm up a Winter’s day than with Beef Wellington?

A traditional dish adored by many and not that difficult to cook if you have time.

It is not the cheapest of dishes to make, yet it does make a delicious supper for a celebratory occasion and the nice thing about this dish is that you can prepare it the day before and leave it in the fridge over night!

This is how I prepared a Beef Wellington and after reading this recipe I hope you may have a go yourself.

Beef Wellington Serves 4

Ingredients 500g Fillet of Beef ideally the middle section Seasoning – Freshly ground pepper and salt 120g Smooth Pâté.

2 Eggs beaten for glaze and sealing Duxelle (Chopped Mushrooms and Onion) Spinach 25g Butter preferably unsalted 8 medium sized Mushrooms – finely chopped 1 medium sized Onion – finely chopped 2 hands full of spinach- blanched Make two thin Pancakes – these help to prevent the juices soaking into the pastry.

Madeira Sauce Puff Pastry (or for ease buy a roll of Rough Puff) Method • Season the beef fillet with black pepper and salt then place into a frying pan over a high heat. Turn the fillet to ensure even cooking. Remove when browned on each side and leave to rest.

• Prepare the Duxelle by adding the butter to the frying pan you browned the beef in add the finely chopped mushrooms and onions. Cook until soft for approximately 10 mins over a moderate heat tossing occasionally.

• Remove from the heat and leave to rest until needed.

With Nick Stephens from Bordeaux Undiscovered • Cover the bottom of a medium sized pan with water. Add 1 teaspoon full of salt. Bring the water to the boil and add the spinach and cover for approximately 2 minutes.

Drain in colander and leave until needed.

• Make two very thin pancakes and leave to one side. Remove the pastry from the fridge. Roll out the puff pastry until 5mm/¼in thick trying to keep it in a rectangular shape. Take two pancakes and place into the centre of the pastry and spread the pâté over the pancakes with a small pallet knife. Take your Duxelle and spread it evenly over the pâté and top with the spinach leaves over the Duxelle.

• Place the seasoned fillet on top of the spinach leaves • Beat the 2 eggs in a bowl, then brush the egg over areas clear of the pastry beyond the pancakes (outside of the pastry). A tip here is to egg wash the beef, as this will help the pastry stick to the beef, avoiding big gaps when cooked.

• Taking the nearest edge of the pastry, wrap it tightly as possible around the beef, and then roll the beef like a sausage in the pastry until completely wrapped.

Ensure where the pasty ends over lap is at the base. Wrap the ends of the pastry underneath towards the base.

• Place the beef Wellington seam-side down onto a baking tray lined with baking parchment and brush with the beaten egg.

Place in the fridge to cool for at least 30mins or when you are ready to cook it.

Remove the wellington from the fridge brush again with egg wash and using the back of a knife score the sides lightly.

• To cook the Wellington, place it in a preheated oven 220°C/400°F, or gas mark 6. Bake for 25 mins (Rare) 30-35 mins Medium or until the pastry is golden brown. Remove and leave to

What wine to serve with this delicious dish?

Beef Wellington affords itself very nicely with a number of red wines because of the delicate flavours. Keep your big, bold wines in the cellar and go for a good Bordeaux or Burgundy. A Pinot Noir could be a nice choice but serve it slightly chilled to remove some of the acidity and release the fruit.

Depending on your budget there are a couple of wines from our range I would suggest to accompany your delicious Beef Wellington and also add to the eating experience of the dish: Chateau Ballan Larquette 2008 This is a lovely Claret with dark firm blackcurrant flavours and good earthy undertones as well as complex notes of black cherry, crushed black pepper, mint and blueberry.

Chateau La Tour du Pin 2006 Made by the owners of First Growths Chateaux d'Yquem and Cheval Blanc, this wine has notes of cherries, strawberries, blossom and raspberries. The attack is full and smooth, leading into a silky tannic structure, with a fresh edge highlighting the fruity quality of the finish. The bouquet is fresh, complex and intense with a nicely integrated woody touch.

An old Manager of mine used to say to me, “Have your Christmas sat on a beach in May?”.

After years of growing up looking forward to the festive period, it was hard to adapt to the change of lifestyle imposed on us.

Christmas is a period where the majority are off work and, therefore, an opportunity to get people into the football stands and makes football clubs a bit of money.

Christmas can have a schedule of 4 games in 8 days which is crazy, really. This year, Cheltenham will have played 4 games in 10 days from Boxing Day through to the 4th January and any sports medicine professional will advise against this sort of physical overload due to the increased chances of injury.

Due to a mixture of games and over indulgence at Christmas; alcohol, food, chocolates, late nights and socialising, has to become a bit of a sacrifice for a professional footballer. Personally, I would never drink during this time.

Instead, I would look forward to that time after New Year when I could go out and enjoy one or two. The only problem with this is that normally all of my friends would have been drinking solidly for ten days and preparing to go back to work. I would sometimes be so desperate for a night out that I would get a couple of friends, who weren’t that keen to go out to meet me at an empty pub, somewhere – an anti-climax, for sure.

New Year’s Eve is an event that I can take or leave. Over the years I have become accustomed to a night on the sofa and actually enjoy the BBC fireworks at midnight. One year, my girlfriend at the time thought she would be kind and stay in with me, a gesture I deemed unnecessary. She was sparked out before midnight and didn’t even make the fireworks.

The following year I was left alone, there was no offer made by her to stay in again with me; she obviously thought “Never again!”

I didn’t have any kids of my own during my time playing, so I luckily didn’t have the upset of that some of my team mates had on Christmas day.

Those who had to travel would have to leave their children opening presents and not get back for a few hours, all for the sake of a short training session. I can see why we were made to it but I really felt for the players who missed out on a chunk of their children’s day.

Commit to achieving whatever it is you want to achieve. It doesn’t have to be your end goal! You can set smaller stepping stone goals to reach your final goal. Smaller goals bring the light at the end of the tunnel a bit nearer, making it more achievable. A great idea is to sign up for a charity walk or run that will encourage you to train. Once you have a set date to work towards, you’ll have a goal in mind while you’re working out.

When you have completed it, you will

have a feeling of accomplishment, which will encourage you to sign up for another or to even just continue being fit.

3. PLAN WHAT YOU WILL DO AND WHEN YOU WILL DO IT. Don’t be too hard on yourself; yes you are busy with work, kids and other commitments so don’t plan to do something every day because you will only be setting yourself up for failure.

Plan times into your diary when you can realistically find time to exercise.

Choose something you will enjoy, get others involved. Don’t make this into work, or an obligation. That’s no fun!

Be positive about what you are doing, make it exciting and enjoy it. After all, this is the new you. This is a lifestyle choice and a lifestyle change. Embrace it. This will become your way of life, a habit! The Road To Cheltenham PART ONE

My late Father always told me: “Make sure you always follow Irish racing, you’ll have the edge when it comes to betting at Cheltenham”. These wise words along with some Celtic heritage made sure that my love affair with the Emerald Isle was cemented at an early age. On December 1st, I arrived in Fairyhouse to take in a card that featured three Grade One races and a fairly hot Grade Three Juvenile Hurdle. If you have never been racing in Ireland, I urge you all to go. With the exception of the Festival, it’s as close to heaven as you can get.

I tend to not look at Juvenile form until the New Year, however, I put this theory aside when Analifet ran away with the Bar One Racing Juvenile 3yo Hurdle.

By the time you read this, you may well have seen her in action at Leopardstown during the Festive period. If she learns to settle, Analifet is the perfect candidate for the Triumph Hurdle. When she lines up in the Juvenile showpiece in March, she will be in receipt of the 7lb fillies allowance; this combined with her obvious talent is a potent combination.

The 2014 Champion Hurdle is shaping up to be one of the races of the season.

face the battalion of young pretenders, namely: Our Conor who tore apart a decent Triumph field last March, The New One who loves Cheltenham and landed the 2013 Neptune Investment Management Novices Hurdle, My Tent Or Yours who started his season off with a win in the Fighting Fifth Hurdle. Plus, by the time this hits the shops, he may have won the Christmas Hurdle at Kempton. Last but not least is Jezki, who took the Hatton’s Grace Hurdle at Fairyhouse. For me, he falls just short of Champion Hurdle class, in what looks an exceptional year. However, you cannot crab his win at what was a previously untried 2 miles 4 furlongs.

Although the Champion Hurdle is run at 2 miles, you ideally need to be able to stay 2 mile 5 furlongs, due to the stamina sapping undulations at Prestbury Park. All things considered, this was a decent effort from Jezki, albeit without the fireworks. For a start, he prefers going left handed so the right handed track at Fairyhouse would have put him at a disadvantage. He also overcame a last flight error to take the race from the 2012 winner, Zaidpour.

The Tullow Tank took the Grade One Royal Bond, which fielded some very smart novices. Having beaten the smart Turn And Go at Naas previously, The Tullow Tank was supplemented to the Royal Bond and he totally vindicated the decision of his connections to do so. Although the form book will tell you that he only beat Renneti by half a length, you needed to be there to see the manner of his victory. He sat on the outer of the field before asserting past the second horse. A big, imposing gelding, The Tullow Tank is well named and looks as if he’ll step up in trip with ease. Will we see him at Cheltenham in March? That’s the million dollar question as we’re talking about a horse that prefers to go right handed. Although to my eye, he didn’t look inconvenienced by the left handed track at Naas.

MOTIVATION! This month I want to talk about Motivation. It seems appropriate as I am a total sucker for the ‘New Year, New Me’ analogy. For me, Motivation is high in January, especially near the beginning. Sadly, it does tend to peter out on a general, gradual downward slope, by about... well, February. Nevertheless, it’s here for now – and I do like to make ‘Being More Motivated’ the basis for my New Year’s Resolutions.

My new Motivation begins with domestic chores; slides through work deadlines; glances off correspondence with friends and flirts a little with exercise and healthy eating. With all these things, I am potentially capable of enormous achievement and total organisation.. I adopt a ‘keeping my head above water’ approach and I occasionally descend into total apathy.

The apathy with one tends to lead to failure at another: Housework will get so on top of me that I put off vital work, related chores, cancel a meet for coffee with a bestie and end up drinking wine and eating chocolate to numb the pressure of too much to do. Which then, of course, leads to the housework not getting done and a nice fresh load of cancellations and postponed deadlines!

However, the opposite is also true: If Motivation hangs around long enough to have no more laundry or vacuuming to do, I can whiz through a stack of worky turkey in my efficiently filed office with the clean window sills and cobweb-less corners, go for a run and prepare a feisty, zesty, fresh vegetable laden meal for all the neighbours.

The end of the day is very important in defining where Motivation will go or how long it will stay. I inevitably finish my day by getting up from the kitchen table, saying goodnight to Husband and letting the dogs out for a last run. What I should then do, is finish the washing up, put away the dinner dishes, wipe the kitchen down, make the children’s sandwiches, clean out the dog’s bowls, fold the clean laundry, go upstairs, check on the children, lay out their school uniform, put away my clothes, neaten up the bathroom, take off my make-up,

clean my teeth, go back downstairs, put the cats out, plump up the sofa, put all the shoes in a row, hang up discarded coats, leave out the empty milk bottles, put the dogs to bed, check the school bags for stray letters and completed homework, go back upstairs, brush my hair, go to sleep.

Interestingly, when Husband retires, he simply stands up, goes upstairs and gets into bed.

Rising in the morning to organised kids and kitchen, maintains Motivation’s energy and whiz. Slung jackets, piles of shoes, dogs on the sofa, ‘at large’uniforms and no clean pants, leads to a chaotic and Motivation draining day. Inevitably this descends into too much wine and chocolate, which further reduces the

likelihood of any laundry folding or school bag checking.

It’s obvious, really – things happen for me in very powerfully charged circles.

Once the bad diet and skimpy bedtime tidying routine have properly taken hold, it’s tricky to reassert the ‘M’ word. But not impossible. A nice fat peg like New Year to hang it on helps enormously. So, my aim for 2014 will be to love and cherish and aim to maintain Motivation for as long as I possibly can and ideally forever.
