Welcome to your magical Christmas issue! We are delighted to deliver some enchanting content to you this month and leading the way is the sparkling Cinderella shoe glistening on our cover. Exclusively designed for Cheltenham Fashion Week, taking place from 2nd-7th December, artist Jane Baker tells us the story behind the creation of the masterpiece on page14. Sam Bawden, Director of Cheltenham Fashion Week explains, “Following the success of last year’s giant shoe that toured the Cotswolds, we really wanted to create a bespoke piece of shoe art this year and Jane was the perfect artist to do this. We are so excited and proud of her creation and it will grace all our events so do come and see it!” It’s one not to be missed. You may feel the pressure of time constraints and your stress levels rising as we approach the big day on 25th, but we aim to take some of the running around away from you with our gift guide on page 42. We also have ideas for festive fashion on page 48 and some luxury lingerie to unwrap on page 50. interiors 1. What type of customer do you find approaches you the most? Our clientele base is very diverse in age category, so we have a very large portfolio of products that caters for all tastes. Most of our customers tend to look for a complete design supply and installation package which we offer with professional knowledge having many years of experience in these fields.

2. Are there any trends that you have seen become increasingly popular lately? There seems to be a very large swing to open plan living spaces, where kitchens are combined with space for dining, cooking and socializing. Pure, handless furniture is a perfect flow from a kitchen area to living space, with clean linear lines. This type of furniture is a current trend in bathroom and bedroom furniture also.

3. Have you found more people updating their homes in the past few years, as opposed to moving? Recently we have seen an increase in the number of clients that are building brand new properties, ‘bespoke’ to there requirements. However, the last few years has been a very changing market.

4. For those with a love of regency style, what type of designs would you recommend for the home? There are typical designs for ‘Regency’ properties; the very popular ‘Shaker’ door style is perfectly in keeping, although older properties of this nature can be mixed successfully with contemporary designs. Old and new textures do work put together with the correct balance.

5. When adding value to a home, yet retain home comforts, which designs would you recommend and avoid? There are a number of things I could recommend to add value to a client’s home; one top priority is to be more energy efficient. Simply changing lighting to low energy LED, updating the house hold heating system and insulation would be a worthwhile investment. Always select products, designs and workmanship from a reliable recommendation. It’s always worth investing in quality products that have DECEMBER 2013

A GNARLED BEAUTY As ‘The Nutcracker’ leaves its enchanting imprint on The Everyman Theatre and my Prestbury squirrels attack our lawn as if it were an archaeological dig, my mind turns towards the subject of nut trees and in particular the walnut. Beloved by my Mother and Grandfather but not so by my Father and I, walnuts were imported by the Romans and have been popular, especially at this time of year, ever since. High in nutritional value, they lower cholesterol, are present in Bach Flower Remedies and in the case of black walnuts have even been discussed as a possible cancer cure. With a gnarled beauty in both nut and aged tree, now is the time to think about welcoming one to your Gloucestershire garden. The English walnut is Juglans regia. This elegant edible is however in no hurry to fruit and so expect to wait at least 5 years before you get a decent crop from a new tree. Once established, you (or your squirrel) will be picking and pickling to your heart’s delight. (Not that I've ever seen a pickling squirrel...guess he'll just stick to the harvesting)! If you are lucky enough to live alongside a veteran tree, you will know that they can reach up to 80 feet in height. For this reason, always allow plenty of room when planting or alternatively go for a smaller cultivar such as ‘Rita’. Walnuts (particularly black walnuts) do give off chemicals which can inhibit the growth of many plants including tomatoes and potatoes, so maybe plant some distance from your vegetable plot! A sheltered fertile spot is ideal. One particularly important county tree has been celebrated by Gloucestershire Orchard Group: It was in 1929 that Mr DECEMBER 2013

Cheltenham horticulturalist Camilla BassettSmith is never far from the plant world. This month Camilla takes inspiration from her scavenging squirrels...

“There are also those who believe that walnuts were one of the gifts presented to Jesus by the three wise men” Plowman and his daughter Elsie Davies from Taynton entered a competition to find the best walnut in Britain. It was held by Dr Taylor at East Malling Research Station and out of hundreds of entries, the Taynton tree was proclaimed the winner. The original tree and its grafts which had been named ‘Excelsior of Taynton’ were feared lost for many years until Nick Dunn of Frank P. Matthews in Tenbury Wells mentioned that he had been sent a planting plan of an old orchard elsewhere revealing this cultivar on site. When Mr Dunn visited the orchard he was able to identify this old variety and propagate it. The story has a perfect ending as one of these young trees has since been planted back in the original farm in Taynton. From one special local tree to an army of shell bearing soldiers, why not head to Upton Wold in Moreton in Marsh where you can see a national collection

of walnuts, featuring over 200 varieties. By appointment only, this is one not to be missed. Squirrel Nutkin would be in his element. Another sight not to miss is the welcome invasion of walnuts in shops as we prepare for Christmas, sadly few will be from this country, more likely from California who supply a high percentage of the world's crop. However walnuts have often been far away from us, having been rumoured to exist in the Hanging Gardens of Babylon, details of the walnut groves there inscribed in clay tablets. There are also those who believe that walnuts were one of the gifts presented to Jesus by the three wise men. I think I would have preferred the gold! Like many things (including my own Christian name) we have the Romans to thank for the botanical naming of this particular edible seed. Coming from a culmination of 'juglans' meaning acorn of Jupiter and 'regia' meaning royal - a real seal of approval from the highest ranks. Sadly the name Camilla was not so lucky in the pleasant naming stakes; Sacrificial Attendant was not exactly what I had in mind. So as I lay my weary arms across my walnut veneered writing desk, quill pen and ink exhausted, I can’t help but re-live a performance of mine at Cheltenham’s Playhouse Theatre and that well-loved chant from ‘Charley’s Aunt’: “where the nuts come from” (Oh hold on, weren’t they brazils)? So yet another summer has passed and we are now making a few changes at the farm to weather-proof it for the general public. We know that there are very few places in the winter months to wrap the kids up nice and warm and still have some fun in the fresh air, rather than being cooped up indoors. So our main focus now is to provide all of our annual pass holders and visitors with entertaining and educational activities indoors, in the Demonstration Barn and Touch Barn, alongside all we have to offer outside. It’s very important to us at the farm park to make sure that there is still plenty of fun to be had all year round – the animals are always there for a pet and cuddle, in any weather. We will still be having our usual daily bottle feeding with some new lambs, not to mention being able to hold a tiny chick or friendly rabbit. We also have a couple of new shows lined up on the daily schedule. The highly entertaining ‘Goat Agility’ features Pip, our Bagot goat kid. Pip belongs to one of the rarest breed of goat herds in the farm – and in the world – as there are only 200 Bagots left in total. She is an absolute sweetheart, we all love her to bits. We’ll be introducing the basics of working with – and training – small livestock, whilst endeavouring to train Pip to perform on stage. This includes jumping through hoops and running up and down on a see-saw (which Pip is becoming quite adept at!), so as you can imagine this is a lot of fun and the goats are highly entertaining, if only by showing us all up on the Display team. We also have ‘A Pig’s Tale’, where we bring out a selection of our pigs; we have DECEMBER 2013

Iron Age, Tamworth, Gloucestershire Old Spot and our modern day commercial pig, the Hermitage Maxgro. It’s a fun and lively demonstration, walking the audience through the history of the breeds. I can’t think of anywhere else you can visit and have such fantastic and informative memories to take home with you. As always it’s not just for children, it’s for all generations. Last year we opened right up until Christmas and we are doing it again this year until December 22nd. Our Christmas Nativity will be starting on the 1st, featuring live animals on stage including a donkey foal, which we’ve been busy handling and training. We’re hoping Clover will be ready for her Nativity debut but she is a mischievous little lady and I think at times she thinks she’s human. When I put her in her stable the other day we had a game of tag and she chased me all about the place,

she is super-friendly and has the softest muzzle I’ve ever felt, just like velvet. She loves nibbling you and nudging you so that you will stroke her some more. She was very entertaining during this month’s photo shoot as we had a little show of bucking bronco, all part of the fun of working with animals. I don’t really consider myself to have a ‘real’ job, as it’s an absolute pleasure to be involved with such a unique, local and wonderful place where we can truly champion our rare breeds. So the countdown has commenced! With less than a month to go to the big day and the panic buying has already started, it definitely seems like Christmas is nearly here! Christmas is a time to celebrate with friends and family and most of all to embrace the joy and spirit that comes just once a year. So, before you over indulge in the roast dinners and mince pies why not take the chance to get glam, frocked up and go out and enjoy yourself. There are so many chances to party this Christmas time, whether it’s work festivities or just a fun night out celebrating with friends, Christmas is a great chance to get out that sparkly number you’ve had in the wardrobe all year, or better still, treat yourself, and get a new one! One shop I simply adore is Feva, a boutique filled with an amazing party wear section upstairs and an array of beautiful designs, these pieces are perfect for this month’s celebrations and you will definitely wow the crowds with these pieces. A good way to add some sparkle to your favourite outfit is to add some crystal bangles or dress it up with a fabulous party headpiece. Grace&Glamour ’Tis the season to be jolly, spirited and just fabulous; with the party season underway, it’s time to get glamorous and inspired with what we wear Words by Grace Parry, fashion and lifestyle writer I know you must be bored of the same old looks season upon season, when it hits mid-November, stores fill with beautiful blacks, deep reds, ice whites and gold, lots and lots of gold. What could be more thrilling then choosing from the same old colour pallet again and again? Well surely, my friends, it’s got to be the glamour. Glamour, at this time of year, couldn’t be more fitting. Yes, we may see similar styles year upon year, but the winter season is really the only time of year we can go all out with glamour and get away with it. Think about it; turning up to the beach in a full length gown complete with jewels, faux fur stole and Audrey style chignon really isn’t apt. Nor would it be enjoyable. But for Christmas cocktails and New Year’s Eve events, it couldn’t be more perfect. That being said, being faced with racks and rows of similar looking styles in slightly different shades couldn’t be more uninspiring. December needs a new sense of inspiration, and motivation, to see this year off with a bang. After all, there’s got to be something we can do with sequins and lace that hasn’t already been done before. It seems French Connection got the memo. I’ve become obsessed with this beautiful one piece (pictured left), complete with sequins, a little peplum and wrapped up with a huge bow right in time for Christmas. If you’ve become quite taken too, we may need to take turns at doing that rounds this party season. DECEMBER 2013

If you’d be bored in black, maybe metallics are more for you. Warehouse has the cutest pinkish-nude dress lavished layered in gold and silver sequins and studs (pictured above). Remember when I mentioned pink as the seasons must have back in October, well here it is. Need I say more? Sometimes less is more. Let’s face it, more often than not, less is more. So I highly recommend going all Ice Queen at least once this season, especially if you’re lusting over the Katlun navy and cream number

by Reiss as much as I am. Simple yet fabulous – this dress really does say it all. If you’re more of a classic, dress kind of girl, but still fancy the black sequin style, Mango should be your first stop. This sequined chiffon shift dress (pictured left) is short, sexy and screaming to be worn at least once over the coming months. And in the oh so popular t-shirt style, it couldn’t be more comfortable. But I’ve most definitely saved the best ‘til last. If you’re looking for the full-on, go-all out, I’m here sort of glamour, then you need to know only three words; red, floor-length and embroidery. Phase Eight have got the most luxurious number that’s just perfect for a ball, black tie dinner or even cocktails and canapés with the girls. It’s just a shame that the cigarette holder is not included. However you choose to wear your glamour this party season, make sure it’s with confidence and a smile and you can’t go far wrong.

The party season is here and that means parties, chocolates, alcohol and lots of indulging. Many of us indulge far too much and then feel awful in January and some spend the whole of Christmas panicking they are going to put on loads of weight and then not really enjoy it. I looooove CHRISTMAS, it is my favourite time of the year. I used to have the New Year’s resolution every year that I will be healthier this year; I need to lose weight blah blah blah the same as everyone. Not anymore though. I feel more in control of my eating and also my mind. I allow myself the treats and don’t beat myself up about them and I also make sure that the majority of the time I make great choices. Here are my five top tips to help you through the festive period without piling on the pounds and feeling glum in the New Year... 1) WATER If you are slightly dehydrated your body just cannot function to your best ability. So with all the sugar, alcohol, toxins and rushing round over Christmas your body will be very acidic and dehydrated. Water helps alkalise and wash out those toxins. You want to drink 3-4 litres a day.

2) BREAKFAST When you wake up your body needs nutrients and energy. By eating a sugar filled breakfast this will put your body into a fat storing state, your hormones will be all over the place and you will be craving sugars by 11am. So instead of your usual cereal or toast DECEMBER 2013

CHRISTMAS IS COMING! With Laura Milne, Body & Health Coach opt for a protein and veg option. Try eating more eggs poached, scrambled or in omelets. Add spinach, watercress, tomatoes etc. Salmon is great as well as avocado if you’re a vegetarian.

3) BEATING THE BUFFET This can be full of bad foods however quite often you can actually eat 100% clean here. Here is a list of foods that are good to have: Salads, crudities with homous and guacamole, cold meats, fish, grapes from the cheese board, Goats or feta cheese from the cheese board and nuts and dried fruit. These are all great. Try to steer clear of: white foods – breads, oven baked goods (sausage rolls, pastries), crackers, pork pies, pate, cheeses, crisps, bread sticks and sauces. Offer to make a salad or something to take so you know you have something to eat that’s good and your host will appreciate the help.

4) ALCOHOL Alcohol is a liquid sugar, it kills nutrients, affects the brain and all of our major organs and dehydrates the body. Try to opt for clear spirits and soda water. A mojito is good without the sugar (fresh lime, mint, soda and Bacardi). During the day leading up to a night out take in lots and lots of greens, the nutrients will help your body recover afterwards. Drink lots of water to help

dilute and flush out the toxins. Have a glass of water between each glass of alcohol. The next day is key. LOTS OF GREENS and LOTS OF WATER. Steer clear of the carbs and sugary foods. Your mind is playing tricks with you, it wants nutrients. 5) ENJOY The main one. Chill out, have fun and enjoy every moment. You have worked hard all year and now it’s time to have fun and celebrate with the people you love.

Children, if you’re reading this now and you hope Santa Claus brings you everything you wish for, better look away quickly to let your Mummies and Daddies read Aunty Surtees – because this article isn’t for you… It is a truth universally acknowledged, that parents in possession of a good fortune, must be milked dry by their kids at Christmas. That Yuletide is not complete without the requisite 3-yearold skipping into your bed on Christmas morning, and that their faces, wide-eyed with wonder is payment enough for all the hard work and effort that goes into creating the Christmas illusion. That you must live this phase like it’s your last – since the festivities will never be so enjoyable with a sulky teenager. My friends, as your Angel of the North, I’m here to spread light and laugher and bring you hope. Having older kids is a breeze at Christmas, and the festivities are way more fun. I’m sorry you exhausted, sleep deprived parents, homes filled with crying infants because Santa forgot something. I’m sorry you were still up at 2am screwing the Chad Valley Garage together, and found out at 2.30am it was missing a part; I’m sorry the kids woke you at 5.30am and were crying by 6am because Rudolph forgot to eat all his carrot and your infants are scared he’ll die on the journey back to the Elves. I’m sorry you’ve had to buy a turkey roll because the kids won’t eat the brown meat on a bronze breasted specimen. I’m sorry you can’t watch any classic movies because the Sponge Bob Square Pants Special is showing on Nickelodeon. I’m sorry your kids have refused to wear their new Laura Ashley burgundy velvet coats, but instead insist on wearing their tacky Disney leggings and washed out novelty vests with a coat on top (and you have no energy to force them to change). I’m sorry for you – but I’m delighted for myself, because I’m past that. I love having older kids at Christmas. No more sitting around waiting until they’re fast asleep before you go up to get presents and fill stockings. No more cramp from

writing “Santa’s” reply to their Christmas List with your left hand to make the letter look authentic. No more trying to get your kids to look like perfect angels from Homes & Gardens (now you’re just happy they remove their ear cuff for Church). No worries that their gifts won’t arrive (they only want cash or some ludicrous electronic piece of kit). No worry about early mornings – in fact, now you can’t get them out of bed. Do I sound cynical – moi? Actually I did love it when my kids were young – but I still love it now; It’s just different, that’s all. Back then (way back) I didn’t care about the lack of sleep, or the shopping, or the wrapping paper or the turkey. Because that one day and the happiness it brings, is etched into your memory bank forever. So excuse the cliché, but it resonates: the past is history. The future’s a mystery. Surviving a separation

T

he New Year is always a busy time for family lawyers. Unfortunately, some families find the Christmas period puts extra strain on them and if things are already hard then this can push people to breaking point. By January, some people are sadly in need of a completely fresh start. Here are our top tips on how to survive a separation, and some cautionary tales of what not to do. 1. Keep calm When the Courts look at your finances, they won’t pay any attention to either party’s behaviour unless it is extremely serious criminal or fraudulent activity. Getting into an argument about the history of the relationship probably won’t get you very far, and will most likely just cost you a lot of time and money. Heather Mills found this out when it was reported that she accused Paul McCartney of abusing her and of having issues with illegal drugs and alcohol during the marriage. The Judge decided that any conduct arguments were irrelevant, and refused to take them into consideration. He also decided that she had given the Court unreliable evidence, and she ended up with £24.3 million of the total pot of assets worth £400 million.

2. Think about your grounds The majority of divorces in this country are based on unreasonable behaviour. The test of what is ‘unreasonable’ is subjective, and it is for the Petitioner to show that they no longer feel able to live with the Respondent. We often ‘tone down’ petitions, because the contents usually won’t make any difference to what happens with the financial settlement, or arrangements for children, and it just serves to make things more acrimonious. For example, Denise Richards reportedly accused Charlie Sheen of adultery, abuse, using prostitutes and being addicted to porn in her divorce papers. His response was, apparently, to send her offensive emails and voicemail messages, and publicly insult her and her mother. While his behaviour wasn’t her fault, she probably riled him up a bit. 3. Keep your children out of it The issues surrounding a break up are adult problems, and should be kept that way. The best

thing for children is to be reassured that both parents still love them, and told that a separation is not their fault. When Alec Baldwin got divorced the papers reported that he left his daughter a voicemail message calling her a ‘rude thoughtless little pig’ and then accused Kim Basinger of parental alienation. He ended up having his time with his daughter restricted, and she had to deal with the emotional trauma of having been caught between her parents for years. 4. Resist the temptation of ‘self help’ ‘Self help’ is the practice of taking documents which belong to your ex, in an attempt to show that they have undisclosed assets. The recent case of Immerman means that this is no longer allowed, and no one can rely on documents obtained illegally. It was reported that Christie Brinkley tried it when she discovered Peter Cook’s affair with an 18 year old; she went through his office and copied his hard drive. He spent the rest of their divorce trying to paint her as mentally unstable.

5. Keep calm. Again. This one is worth repeating. Liza Minnelli and David Guest made all sorts of scandalous allegations against each other during their divorce, and seem to have spent a fortune on their legal battles. In the end, the divorce suit itself apparently ended up being relatively straight forward. You can spend a lot of money in a short space of time by going to Court. A good lawyer will help you work out whether or not you will actually improve your position by doing so. Finally, remember that some famous couples do manage to keep their dignity. For example, Tom Cruise and Katie Holmes managed to come to an agreement about their finances, and arrangements for Suri. By avoiding litigation, they kept matters private and reached a relatively swift resolution which allows them both to continue maintaining a good relationship with their daughter.

Financial Adviser and Brunsdon CEO Brian Morman explains how we can soften the blow of inheritance tax Talking about what happens to our money and assets after we’ve gone is not something most of us relish. It means we have to face up to the reality of our own mortality. And quite often, children avoid raising the subject with parents for fear of embarrassment or seeming to be grasping or insensitive. But the plain fact of the matter is that unless the issue is addressed – sooner, rather than later – you could end up ‘bequeathing’ a large proportion of your estate to the tax man by default! According to Legal & General (Oct. 2013), the government ‘raised’ over £3 billion from Inheritance Tax (IHT) in the 2012 / 13 tax year alone! It doesn’t seem fair, does it? We pay tax on our income during our working life, often tax on our savings, and then we’re taxed again when we’re gone. But whatever the politics and ethics, ‘death tax’ is a fact of life. After years of rocketing house values, more and more people have fallen into the IHT trap. That’s why estate planning should figure highly on your financial strategy agenda. In simple terms, the Government has set a personal threshold (£325,000 in the current tax year, 2013 / 14), also known as the ‘nil rate band,’ on your estate, over and above which your family or representatives will have to pay IHT at the rate of 40%! However, your assets can pass to a spouse or civil partner (domiciled in the UK), free of tax. In addition, your partner’s own personal allowance can be increased by the amount you didn’t leave to others. So in effect, a couple can leave up to £650,000 tax-free, under current legislation. It’s 40% tax on anything above that though, I’m afraid. The good news is that there are a number of ways to mitigate the impact of IHT. Firstly it’s a very good idea to make a Will. As a Financial Adviser, it never ceases to surprise me how many relatively wealthy individuals and clients have failed to take this vital first step. DECEMBER 2013

Clearly, any measures open to you to lessen the tax will depend wholly on your personal circumstances. You could gift away capital, but the money will usually still be counted as part of your estate if you die within seven years of making the gift. However, annual gifts of up to £3,000 are exempt. You may also give money away from income (such as a pension or earnings) as long as it does not impact on your lifestyle. Charitable gifts are also tax-free. And, surprise, surprise, so are gifts to political parties! Or you could go on a spending spree. Why not enjoy some of your money? It is obviously very important that surviving spouses claim the transferrable nil rate band of their late partner

where applicable. The use of Trusts can also help to considerably reduce IHT liability. And a Whole of Life Protection Plan (also written in Trust) could be taken out to cover the expected IHT liability. So your beneficiaries will receive a cash lump sum to cover the tax if and when it is payable. I have to say that this information is just scratching the surface. IHT planning is complicated, dependant on personal circumstances and aspirations and definitely an area where professional and experienced financial advice will prove invaluable. At the end of the day, it could mean that your family and beneficiaries will keep a much greater proportion of your hard-earned money. Careful estate planning has to be one of the most thoughtful things you can do for your loved ones, but qualified advice is needed to help you plan correctly.

My wife and I decided to put her career first, as before she had our first child she was doing extremely well with a blue-chip company and her short-term career prospects were considerably better than my own.

I thoroughly enjoy caring for the children and I was happy to stay at home and look after them while my wife went out to work to keep us all. However, she has now begun having an affair with a colleague at work and wants to divorce me. She is saying that she wants to become the children's primary carer and will pay for a Nanny while I, she tells me, should just find a job.

I am really devastated by this. I have cared for the children for many years and for the younger girl since she was born and I really do not want to give up my role as primary carer. However, I am frightened that if my wife divorces me I will have no choice. Is this correct?

A

No. The residence of your children will depend on the Court's view of what is best for them. Just because your wife is the children's mother does not enable her to insist that they should live with her and it is probable that, for the sake of continuity and the children's security, you will be considered to be the appropriate parent to continue to care for them and live with them, whilst contact with their mother is arranged.

In your case, there is no reason why you should not apply to the Divorce Courts for maintenance and capital to re-house yourself and the children in the same way as a fulltime mother would apply for this help, had her husband left her. The law is certainly not gender specific or discriminatory and, if your wife is earning a significant income and between you you have acquired capital, there is no reason why you should not have the bulk of the capital and maintenance from your wife while she continues to work. In all probability she can take a significant mortgage which will help to re-house her in a home sufficiently large to enable her to have the children for staying contact. The Greenway Hotel and Spa is a 16th Century luxury Elizabethan Manor House Hotel and Spa. Set in the heart of the Cotswolds, just a ten minute drive outside of Cheltenham. A great destination for visitors from far and wide but also most perfect for those living locally who want to feel far away from it all but without having to travel too far. I am made to feel at home as soon as I step inside. Welcomed by the incredibly hospitable staff with such decadence and demeanour, their attentiveness is what sets them aside from the average. The reception sits beside a lounge area with a roaring fire, a grandfather clock chiming gently in the background. The grounds include an orchard and a rather handsome vegetable patch. Green hills roll far into the distance I make my way to the Spa. I have chosen to try the Egyptian Massage. The Spa is stylish, glamorous and very chic. Everywhere I look I see a touch of luxury and decadence. Again I’m really impressed by the warm staff and I’m seated in the lounge area which overlooks the Hydrotherapy pool and looks out onto a gorgeous courtyard with a roaring fire and hot-tub. There is also a champagne nail bar! I love how the warming oils and deep but gentle muscle manipulation leaves me feeling as if I have just spent a day soaking in the sun on a tropical beach all warm and relaxed. After the treatment I take it easy in the sauna and steam rooms to let all of the oils soak into my skin and after a ‘tropical rain shower’ I sit in the alfresco hot tub and envision the most fantastic girls day out here! is game season so I go with the Loin of Cotswold Venison with Smoked Lentils and Roasted Cep from the Garden. Dessert is Passion fruit Soufflé with Coconut ice cream. Everything was absolutely incredible and nothing is too over complicated or fussy but incredibly detailed, with vibrancy and yet subtle flavours and poignant but not overpowering. I am thinking that a great chef is one which can deliver all of the above and leave you feeling pleasantly content but not overfull. I take my hat off to the chef and am in awe of such creativity and talent. I am lucky enough to chat to the Head Chef and The Gardener who show me there home grown produce in the allotment and explain their ‘From Fork to Fork’ ethos, which is a huge part in the success of the dishes that I tried. I have the best night sleep under a roof which feels like home and I am sad to leave at the end. I very much look forward to my next visit to explore this intriguing and beautiful place a lot more. Christmas Chutney with Food Writer Shelle Duffin The countdown to Christmas is finally upon us, it’s official, with the new festive Coca Cola advert now featuring on our TV screens, this can only mean one thing – ‘the holidays are coming’, and I, like many others, get extremely excited when this moment arrives. Having reluctantly accepted that science and common sense prevent Santa from coming down that chimney, I have since found an outlet for my enthusiasm elsewhere. With several advent calendars dotted around the house, the spiced scent of mulled wine

and mince pies wafting from the kitchen and bottles of brandy lined up to feed the freshly baked Christmas cakes; this is when my love affair with Christmas cooking truly began. In my opinion, there is no better time to be sharing your culinary skills with your loved ones. After all, Christmas is a time for giving and receiving gifts, and I, like most of you I’m sure, love opening presents on Christmas morning. Whether it be stockings neatly placed at the end of the bed or the blind-folded parade into the living room to be greeted by a dazzling tree in all its glory and glistening parcels. For me however, there is nothing better than being presented with a

a little olive oil, add the onions and cook for a few minutes before adding the apples • Pour in the vinegar and sugar, stirring until all the sugar has dissolved • Add the fruits along with the orange zest and juice, followed by the port and stir for a further few minutes • Add the spices and season with a little salt and pepper – give the whole lot a good stir and bring to the boil, then turn down the heat and let it bubble away cheerfully for an hour, stirring regularly, so it doesn’t catch the bottom • Add the walnuts and cook for a further 30 minutes • Spoon the chutney into the warm, sterilised jars and seal.

We all enjoy relishing in a good cheeseboard over the festive season, on Christmas Day evening when everyone has just about recovered from a delicious festive lunch; it’s time to unleash the stilton. And no cheeseboard would be complete without a good chutney. This is the perfect addition to a Christmas hamper, alongside some nice savoury biscuits, not forgetting the all-important stilton; it makes for the perfect present at Christmas. To make 4 x 500ml Kilner jars

Every year, I put together festive hampers for family and friends, packed with various homemade jams, chutneys, pickles, sloe gin, mulled wine, truffles and baked goodies. It’s incredibly easy, great fun to create, something the children can muck in with and the smile on the lucky receiver’s face makes it all worthwhile. Therefore, I encourage you to take to your kitchens and have a bit of fun pour yourself a glass of mulled wine, (warm spiced apple juice for the children), get those Christmas tunes blaring and the apron on as here I have for you a few of my favourite festive gift ideas – Merry Christmas!

Wine pairings for Christmas Well it’s not long now to the big day and the family is full of anticipation of what is going to be laid before them for their Christmas feast. So whilst the goose is getting fat I have some super suggestions for the perfect wines to grace your Christmas table this year. Starting with sparklers and ending with sumptuous sauternes you’ll find I have a lovely wine to match a whole range of Christmas delicacies. Starters and Sparkers Whatever your favourite starter, or hors d’oeuvres, sparkling wine is the partner that will begin your Christmas festivities with a bang. Sparkling wines, Champagnes and Cremant d’Alsace are brilliant with a whole spread of different foods and are good appetizers. Not only that fizz really starts the celebration off and gets everyone in the mood.

Turkey – probably the favoured choice of most households This year try a Bordeaux Rosé as it is superb with Turkey. I find that red and white wines don’t pair particularly well with Turkey as they can be too dry in the mouth and not enhance the delicate flavour of the meat. However a Rosé is packed full of flavours of ripe red currants and cranberries and is therefore ideal. Should you prefer a white, opt for one that is predominantly made with Sauvignon Blanc and if it’s a red go for one which is solely or predominately Cabernet Sauvignon. I have a tip when it comes to cooking Turkey that helps to avoid over-dry meat and crumbling when you carve. If you rest the bird for 1 ½ hours, wrapped in foil, whilst you prepare and cook the vegetables you will find your meat is moist and succulent. Incidentally the combination of red wine and turkey are often blamed for the post meal “turkey nap” after Christmas dinner. Wine is not the culprit, nor over indulgence! Turkey contains Tryptophan, a natural chemical which makes you sleepy. Roast Goose Roast Goose used to be a popular Christmas dish before Turkey arrived on DECEMBER 2013

With Nick Stephens from Bordeaux Undiscovered the scene. Geese have less meat and more bone then Chicken or Turkey so you ought to allow at least 1 ½ pounds per person when buying a Goose. Smaller birds are preferred – look for ones 8 to 12 pounds for roasting, as larger (older) birds will be tough and should be braised. Farm raised Geese are very fatty – wild Geese are leaner. However the fat is fantastic for cooking, especially for roasting potatoes! The meat from a Goose can be very rich and filling and it is rather gamey therefore you need a wine that will enhance the flavour of this quite rich meat so I would choose a the best red you can afford. My choice would be a Bordeaux Grand Cru such as Chateau Gloria or Sociando Mallet but a Morey St.Denis or similar Burgundy will do.

Joint of Ham A good joint of Ham, either boiled or baked, is indispensible at Christmas as it is delicious hot or cold. Clarets, even the lighter ones, I believe are too heavy for Ham and traditional Boxing Day cold cuts, especially after the previous day’s big lunch with all its trimmings. But Bordeaux Clairets are fabulous wines to drink with Ham and with cold meat buffets – they have great aromatic power and the bouquet is of ripe raspberries, blackberries and blackcurrants. Depending on the style of the wine they can also have the zest of pomegranate, cranberry, plum or even spice and pepper. Rib of Beef – my favourite roasted on the bone A Rib of Beef cooked rare or nicely pink in the middle is one of my favourite Christmas dinners. Most people go for Aberdeen Angus or Hereford beef but my choice has to be Red Devon. Beef is the perfect partner for Clarets; they truly come into their own with roast beef and I’d recommend that you pair your favourite Bordeaux red with your chosen

joint. With my beef I would definitely have La Fleur Morange from St.Emilion. A gorgeous succulent red that will enhance any roasted beef joint. However if you like your Burgundies try a good Gevrey-Chambertin or a Cote Rotie.

Baked Salmon Dry Bordeaux Rosés or Clairets are best to pair with a tender and juicy Baked Salmon. These are versatile wines that can accompany a broad spectrum of flavours. Crisp and elegant, these wines have the fruit and body to support meat dishes and the acidity to match seafood. Christmas Pudding It has to be a Sauternes! For me, there is no other wine that can pair so beautifully with your Christmas Pudding. These great sweet wines of Bordeaux have incredible depth of flavour and complement your Christmas Pud down to a tee. Their range includes hints of cinnamon, orange peel, honeysuckle, apricot and crystallised fruits. A good Sauternes is never cloying or sickly sweet, instead they have a zesty acidity that pairs sublimely with sweeter dishes. Should you prefer a lighter sweet wine try a Moelleux from Bordeaux. It has similar qualities but is not so heavy but will enhance the cooked mixed fruit in the pudding.... and of course don’t forget the sixpences or is it a pound coin nowadays? Batteries – we all know Christmas means lots of toys that need batteries. Dogs have been known to play with discarded batteries and even swallow them causing acid burns and even gut obstructions

Ribbons and bows – just like tinsel, all those shiny ribbons and bows decorating your Christmas gifts under the tree can be enticing for cats triggering their inner hunter. If swallowed they act as foreign bodies and may obstruct the gut requiring emergency surgery. Not how you want to spend your Christmas Day!

Lilies are commonly part of Christmas bouquets and their both their pollen and petals are highly toxic to cats causing, often fatal, acute renal failure. If you’ve got cats in the house you be better off binning those lilies, no matter how lovely they look

Antifreeze if often left lying about garages during cold Christmas snaps and can be very attractive to dogs and cats who lap it up because it tastes sweet. This causes renal failure.

House guests – well Christmas wouldn’t be Christmas without friends and family visiting we know but visitors can bring with them a whole array of potential dangers for your pets. New prescription medications they may inadvertently leave lying around which inquisitive pets might find and eat or sugar free chewing gum packets left in their coats which can cause vomiting, bleeding and even liver failure if eaten by your dog. Also if your pet is stressed by strangers then allowing them a safe place to get away can avoid embarrassing and painful bites and scratches to the in-laws.

I am delighted to say that the start of the ‘Shane Duff ’ coaching business is going from strength to strength and the main reason for this is the feedback received on a regular basis. We coach within schools in both Cheltenham and Gloucester during term time and we are developing holiday sports camps all the time….. Keep a look out for courses near you and why not come and give us a try. A little side spin of the coaching business is the more specific football development centre which we run out of All Saints Academy in Cheltenham on a Wednesday evening. I am very passionate about this and get really excited when I can visibly see development in players and they try to do new things on a football field. Mistakes are there to be made and I aim to create an environment where children can feel confident enough to express themselves and make choices. Any child playing football can be drilled into doing set drills, but I always ask myself the question ‘do the children know why they are doing them?’ I see many coaches set out cones give out orders and see the children be attentive students that they are, and do exactly as they are asked. The only problem with this way of doing things is the children

don’t have set instructions on a match day, hence why I believe it is important to constantly challenge their young minds and make them find a way to work things out. I really enjoy setting up a coaching session and ask them what I want the end outcome to be, and watch them try to get there. They seek direction so much as this is what they are used to. They are all frightened to make a mistake that they don’t really do anything. The become statues!! I may have to drop in a clue and tease things out of them and then you can see the ‘light bulb moments’ occur. Some kids realise that they can take charge and start doing things off their own accord. They grow to become innovative and active decision makers and this is the type of player I want on the field on a match day. This mode of development may take a little longer than a more regimented regime but I have every faith that this philosophy is the right one. CS @duffo16

THERE’S NO PLACE LIKE HOME

As the last punter walked out of the hallowed gates of Prestbury Park on the evening of Sunday 17th November, the Cheltenham team were looking back on a record breaking three days. A crowd of 71,336 was seen over the three days of the Open meeting, the best ever recorded figure for the November showpiece. As is standard, the atmosphere was electric with a mini roar emanating from the packed grandstands as the tapes went up for the first race on Friday. Time goes slow when you are waiting for an event like this to come around but when you are in the heady orbit of the occasion, the action comes thick and fast. As usual my notebook was out in force, I always have one eye on the main stage in March. The first taste that we got of possible Festival contenders was the almost match race between Taquin De Seuil and Oscar Whisky. The Seven barrows camp of Oscar Whisky were not too happy with the tactics of the race and in reality the race told us nothing at all, except from what we already know about the two exceptional novice chasers. Taquin De Seuil was DECEMBER 2013

giving Oscar Whisky 5lbs which has to impress you slightly but when you factor in the tactics and that the former was race fit, we are still not any further forward that we were on before the event. Onwards to Saturday morning and there were already a few sore heads around the place, courtesy of the excellent Final Flight bar in the tented village. I think that I spotted both the Triumph Hurdle winner and the Fred Winter winner in the opening Juvenile Hurdle. Guitar Pete finished in the runner up spot to Royal Irish Hussar, he’s currently trading at around 25/1 in the market for the Triumph Hurdle and I honestly believe that’s value. Guitar Pete is trained by Dessie Hughes in Ireland who was responsible for the success of Our Conor in the Triumph Hurdle of 2013. In third spot came Azza, keep your eye on him for the Fred Winter. It’s always good when a horse you have had on your mind for a big handicap obliges and that’s exactly what happened when the locally trained Johns Spirit took the main event, the Paddy Power Gold Cup. The pointers were

there, he was running in horrendous ground all last season with extreme credit and had contested the Cheltenham, Aintree and Ayr Festivals so I knew he was as tough as teak. In winning a race at the Cheltenham Showcase meeting Johns Spirit had put himself bang in the picture for the Paddy Power. His revised handicap rating of 139, meant he had snuck into the bottom of the weights. I’m convinced there is more improvement in this horse and it would be no surprise if he were to follow up in the December Gold Cup. Two performances stood out a mile on the Sunday, they were The Liquidator who I highlighted in last month’s column, he is firmly on my mind for the Neptune in March. Red Sherlock absolutely routed a decent bumper field in the concluding race of the meeting. Given his greenness in running, the manner of his victory was highly impressive. I LOVE CHRISTMAS! Right, it’s December – so now I can officially talk about Christmas without eye rolling or huffing and puffing being sent in my direction. Maybe it’s having kids under 10.... maybe it is being able to fit a 12 foot tree in the hall, or perhaps I’m more religious than I thought, but I LOVE CHRISTMAS. It’s a twinkly, indulgent, expensive excuse to dress up and drink up, that some of us diet for and many get in debt for. Love it or hate it – for all the wrong or the right reasons – the atmosphere around Christmas is so utterly different to the norm, there’s just no way to avoid it. Living on a farm in rural Gloucestershire also means winter is a near impossible drag, so a break (however brief) from the daily mud slinging, dung shovelling, ice breaking routine is necessary for our state of mind. The festive season – and birth of Christ – is also nicely nestled between the shortest day and a brand new year, giving us another couple of reasons to celebrate and more time off (although anyone with animals will know there is really no such thing). We try and go to London around Christmas... to look at the lights, do a bit of shopping and generally remember how lucky we are to live in the country. But at this time of year, there is one unique bit of magic in the Big City that cannot be matched, can’t even be imitated and most definitely cannot be missed. Whether you’re 5, or 95.... a party goer or a workaholic, a house wife or Prince Charles, I challenge you not to adore the Olympia Horse Show. It usually runs the last two weeks before Christmas and brings people in from all walks of life – and athletes from all over the world – to the centre of our Capital to celebrate horse sport, Christmas shopping and Santa. I’ve seen groups of families arrive on buses, full to bursting with excitement, having saved up all year to go. I’ve seen Katie Price wandering the shopping aisles in knee high pink socks and stilettos with an entourage of ten.... I’ve seen couples well into claiming their pension, en route,

“Olympia is aimed at kids, adults, horse lovers, sports fans, shopaholics and champagne drinkers, it is a feat incredible to see in the centre of London.” wearing wellies at the tube station... and last year, I saw Olympic medallist William Fox-Pitt standing on the steps at the entrance, handing out leaflets with his wife and brand new baby in tow. Olympia is aimed at kids, adults, horse lovers, sports fans, shopaholics and champagne drinkers, it is a feat incredible to see in the centre of London: Stables, a huge riding arena, loads of horses and people turning up at the Hilton in jodhpurs on a daily basis. My children start talking about it in September- and they honestly can’t decide what the best bit is. The competition is fantastic with the very best in the world converging on our island to take part... then there are the displays in the middle, that are just as impressive: Horses lying down on command, people galloping round with no reins and the occasional Frenchman who exercises 4 horses at once by standing on their backs while going over jumps.

The shopping is fabulous and goes on for miles – and there’s an enormous selection of places to eat and drink, but the highlight of Olympia for us, with all its world class action and fairytale atmosphere is still the moment when Santa himself appears in the arena in the most amazing sleigh (pictured). The horses, the music, the crowd, the feeling is joyously uplifting. We can’t wait and I very much hope to see you there.
