Sticking with Cowley Manor, Georgina Phair went along to the hotel to meet our Real Life interviewee this month, Lucy Choi. Lucy is a successful fashion designer in her own right, but the fact that her uncle is Jimmy Choo makes it apparent where her passion for design has come from. Lucy came to the Cotswolds for the launch of her Autumn/Winter collection, which is stocked at the venue’s Village Shop. The Luxe Factor Georgina Phair heads to Cowley Manor to meet fashion designer Lucy Choi, the niece of Jimmy Choo...

I arrived at Cowley Manor feeling excited about meeting Lucy Choi for an informal lunch alongside the launch of her Autumn/Winter collection, which is stocked in the venue’s Village Shop. As Jimmy Choo’s niece she may come from a famous family but with her own successful ‘Lucy Choi of London’ collection, she has emerged as a successful and intriguing fashion designer in her own right. It is easy to see how her brand stands out in a way that perfectly combines luxury and exquisite designs with affordable high street prices.

Q. Can you tell me a little about your collection here at Cowley?

A. This season we have combined lots of materials like snakeskin, lace and satin together – dark brown, burgundy and navy are the colours we are using. The ethos behind the brand is affordable luxury for every occasion. If you look at the collection, you can see snakeskin slippers in velvet with a metal toecap, which is very luxurious but different to what is on the high street and one of a kind. We have mid heels for people that don’t want high heels but still give a bit of height and we mix leopard skin with the black laced toecap and add a bit of red; it’s called the Louise style. We also have ankle boots and they are a comfortable heel, which you can wear with jeans or in the evening. You can dress them up or down.

Q. It seems you have some really practical shoes. As well as the glitzy and glam to wear at a party, there seems to be a lot on offer for practical living too?

A. Yes, exactly.

It is about mixing the occasions together; the casual and the glam. We

without compromising the design, so all of these points I have applied to my brand. Obviously with Jimmy it has opened a lot of doors but he always taught me that you have to be honest and true to yourself – whatever you promise you must deliver.

Q. What inspired you to choose Cowley as a destination to showcase your range?

A. I think the clientele here is very appropriate. We have flat boots for this part of the world and the customer also enjoys a little bit of luxe factor and we are providing that with our brand.

Q. Your pricing seems very reasonable compared to a lot of brands out there.

A. I worked for a high-end boutique where I was the managing director and I felt there was definitely a gap in terms of affordable luxury. I wanted to create a brand where you are gaining affordable price, comfort, craftsmanship and you’re getting the design.

Q. How much has your uncle inspired you?

A. I learned so much from my uncle from a very early age.

I’ve seen him working so hard to deadlines before a fashion show and rushing around trying to get all of his shoes made. The craftsmanship is so important as well as the comfort

Q. Who has been your biggest inspiration?

A. I would have to say my uncle. I watched him working hard for many years and it has inspired me to be like him and to be very humble. I don’t think things come easy, I really do think people need to work hard to get to where they want to be.

Q. For those young people out there considering a career in fashion, what is your advice to them?

A. Just keep working at it and believe what you do – it will come through! Put your head down and it will happen.

Listen as well. Listen to what people have to say too because that’s free. People are giving you feedback or ideas so I think that’s important.

Q. What do you have planned going forwards?

A. We would like to do some more events here and we are focusing on getting into the US market. In the UK we are lucky to have stores like Harvey Nichols and Harrods who will be stocking our shoes but we are going overseas now. We are already in the Middle East, Canada, Belgium and Singapore so we would like to get into the next big step, being the US. We are talking to lots of suppliers there at the moment. Here, I definitely think we should do some more events.

Like many of us, myself included, you may not have given farming much thought and possibly presumed that everything happens naturally, including the birth of the gorgeous lambs you see frolicking about when spring comes around.

Here at the Farm Park, our stockmen commit a lot of time to working out a strategy months in advance so that our farm is organised at lambing time and we can provide our visitors with seasonal demonstrations. For example our current activity is “Tupping”, this is when we put the rams in with the ewes. This ensures that we have lambs being born for the public to view in our lambing demonstrations, which next year will be taking place from 15th February to 6th April.

As well as all of our rare breeds, we have a total of 450 commercial ewes to put with our nine rams. All of our rams are kept together in a separate field for most of the year and hang out like a group of young men. Mike Caunter, our Livestock manager, and I went to give them their MOT to check they’re up to scratch before we reunite them with their wives.

We check their teeth, feet and their "Crown Jewels" as they will need to be eating more, covering a lot of ground and serving a lot of ewes, so they need to be in peak fitness for the task ahead.

As we have so many ewes and therefore the possibility of up to 1500 lambs, we want to make sure that they’re not all giving birth at the same time. So we put a harness on each ram, with a chalk marker on their chest plate, so we know if the ram has served the ewe. If he has it will leave a coloured mark on her rear. We change the colour of the NOVEMBER 2013

This allows us to know which ewes are lambing in which week and to organise our lambing shed in five months’ time when they are due to give birth. Also if a ewe’s rump gets covered with every colour we know that she has not conceived and there may be a problem with her or the ram.

I truly find this all so fascinating and interesting. Nothing feels more exciting and natural whilst being out in the beautiful Cotswolds, nipping about on the Polaris and inspecting all our

beautiful animals. My favourite rare breed of sheep is the Herdwick, so we decided to have a photo shoot with the ram Hendrix and his ladies before they’re set out into their romantic paddock... SANTA BREAKFAST AT THE WILSON CAFÉ

Santa Claus is coming to town at The Wilson Café in December. Families can enjoy a fun filled festive feast fit for the Three Kings, take part in Christmas Crafts, listen to a Christmas tale in the Elves Story Corner and finally a visit with Santa himself.

A winter warmer

By Jon Hodder, Sudeley Castle’s Senior Gardener Light the evening fire, smell the change in the air. The days of crepuscular rising are upon us, and many of us will fumble for our early morning socks in a greying gloom.

The early autumn was a proper joy: mild weather and light rains; enough moisture to allow lawns to recover from the furnace blast of what we will in time recall as a golden summer. The shift from summer was the gentlest of changes, and perhaps it may be said that late summer and early autumn are indeed the finest point of the year.

August is often the hottest and most languid of months, when it seems as though the entire world has gone on holiday. The dog days of summer, but September.... in truth, was there ever a fairer month? The temperatures are almost perfect, and the foliage showing but the smallest change. Birds are recovered from the rigours of nesting, and some will sing again. Hips and haws are beginning to show in the hedgerows and early apples are ready for eating. Is there anything more redolent of Eden, anything that gives a greater sense of our hunter gathering past, than NOVEMBER 2013

plucking an apple from the tree and crunching away?

There are often days in September when the world can seem unspoilt and near perfect even though we may well know the truth to be different. Those small moments should be celebrated, for perhaps we are allowed to glimpse the

As we move through October and into November the change can no longer be missed. Apples are fully ripened, and leaves begin to change colour and fall. Gently, and with grace, winter’s tracery is revealed and the sweet scent of leafy bonfires will swirl and drift, mingling with the delicate aroma of dampening soil and decaying foliage.

If you are not a regular visitor to woodland, then I encourage you to take a walk in one at this time of year. The full palette of the season is laid before you in subtle shades of rusty browns, golden yellows and still-vivid greens.

The sun will play upon the ridged bark of oak and ash, the berries of the rowan and the holly will stand out as clear as lanterns, with the holly’s foliage seeming all the clearer for its background of fiery dun. V is for Victory The Victory Club was founded in 1947, purchased by public subscription to a welcome home fund for service men and women. The original home to the club was Nelson House in Vittoria Walk but due to excessive maintenance costs the present building, Burlington House in Lypiatt Road, was acquired and opened in 2002. (This lovely building had previously been used as a military hospital in World War 1 amongst other things). The club is also hired out to many organisations both

Don’t forget your hats! Whether it’s a faux fur trimmed hat or a fabulous felt number, keeping your head warm in the cold weather often gets forgotten. And given that you lose about 20-30% of your body heat through your head make sure you keep warm and get yourself hatted!

Fashion is fabulous, whatever the weather, so make sure you’re looking your best so that style doesn’t go up in smoke this bonfire night. Here are a few tips to make sure you look your sparkling best. Let’s spark things off by chatting fashion and fireworks.

With the nights drawing in and temperatures dropping why not go with bright, lively colours for when you wrap up around the bonfire and watch the fireworks displays. It’s a great excuse to go and buy some nice new coats and jumpers to burst with winter style, feel great and, most importantly, stay warm!

Hats this month have been all about bright tweeds, cobalt blues and marabou with pheasant. A stylish winter day hat really changes the feel of any winter outfit and keeps you both toasty warm and looking absolutely fabulous. Whenever I have been invited to the evening of a wedding, I have always just worn a small enhancement in my hair, one of my more subtle creations such as a felt fascinator or small hat. I tend to think of the evening celebration as more of a party atmosphere than the formality of the main wedding reception so I dress in a more relaxed way whilst retaining a level of class and elegance. Go with classic colours (a gold with blue is lovely) and always try and find out what the colour scheme is prior to the event as you don’t want to colour clash with the MOB, groom or bridesmaids – recipe for disaster and embarrassment – hope this helps.

If you are just slightly dehydrated your body cannot function properly; signals cannot be sent, your hormones will be imbalanced, there will be an increase in blood acidity, blood temperature rises, and it is much harder for you to get rid of toxins and illnesses etc.

I find that increasing your water intake is one of the biggest changes my members can make and it has a huge impact on their results in terms of body shape and how great they feel. When you are dehydrated your mind plays tricks with you and tells you that you are hungry. It’s not fair is it?

INSTRUCTIONS 1. Preheat the oven at 180°c.

2. In a bowl mix the ground almonds and herbs. In another bowl whisk the eggs.

3. Dip the chicken in the egg and ensure it’s fully coated, then cover with the almond mix. You can go for two coatings of each if you want. The key is to make sure it is fully coated. The more coatings the better so you may need to make more dried mixture.

4. Place the chicken on a baking tray lined with greaseproof paper.

5. Place in the oven and bake for around 40mins. Turning occasionally.

6. On a separate baking tray, melt some coconut oil and add the chips ensuring they are coated. Add some chilli flakes if you wish.

7. Serve the chicken with the chips and coleslaw. Yummy. Plus some spinach if you want.

“I wouldn’t want to be anywhere else” We meet Dr Ellie Ledger of Arnica Dental Care Nineteen years ago Dr Ellie Ledger arrived in Cheltenham for her first day as a maxillofacial surgeon at Cheltenham General Hospital driving a van full of windsurfing kit. Her new job involved both routine oral surgery and repairs of oral and facial injuries after traumas, some as serious as road accidents. A tough job for anyone... even Ellie, who had been brought up on a dairy farm in Cornwall and was driving tractors and delivering calves by the age of 10. ‘’Working at Cheltenham General was an amazing experience and I was fortunate to work with some supremely talented surgeons although the ‘life and death’ situations were often very tough’’.

After four years of working in casualty, Ellie decided to remain in Cheltenham and set up a private dental practice which she called Arnica Dental Care. PAY LESS. SAVE MORE. Brunsdon CEO Brian Morman explains how we can make the most of tax breaks on our savings and investments Like me, I’m sure you consider you pay more than enough tax. We pay it on our income and on pretty much everything we buy. There’s no legitimate way to avoid it, is there? Well… yes, actually there is – and it’s Government-approved!

Knowing how to invest wisely can cut down (or even eliminate) tax liability on your savings. And this of course helps improve returns. There are a number of investment vehicles that you could consider.

Individual Savings Accounts (ISAs) are probably the most popular and accessible tax-efficient savings available today. They are easy to understand, offer a range of options and are subject to a quite generous annual personal limit (£11,520 in the current 2013 /14 tax year). There isn’t a ‘lifetime’ limit as such, so you can save as much as you like into an ISA (subject to the annual allowance), for as long as you like. Imagine all that money building up – tax-free! It could serve to provide a useful nest egg for later life.

A pension is also a great tax-efficient way to build up an income for retirement. Quite simply, when you make a payment into your pension, you’ll receive tax relief. The effect of this on pension payments over time can be considerable – the more you contribute, the more tax relief you can get. For example, for every £80 you pay into your individual pension, the tax man could add basic tax relief of £20! Again, these payments are subject to an annual allowance. You could get tax relief on every penny you contribute, up to the basic amount of £3,600 or 100% of your annual relevant UK earnings, with an upper limit of £50,000 in the 2013 / 14 tax year. (This is set to drop to £40,000 in 2014 / 15.) In certain circumstances you may be able to carry over unused allowance from up to three earlier years.

However there is a Lifetime Allowance NOVEMBER 2013

on pension contributions of £1.5 million in the 2013 / 14 tax year. (This is set to drop to £1.25 million in 2014 / 15.)

Clearly, the sooner you start paying into a pension, the more potential there will be for growth. So, your pension fund will grow largely tax-free and when you come to take your benefits you can usually have up to 25% as a tax-free lump sum. The remainder however will be paid as a taxable income. Similar tax breaks apply to company pensions, depending on the type of scheme.

Investment bonds can also offer opportunities for tax savings. An investment bond is usually a single premium life assurance policy, but the life assurance element is small so it is an investment rather than insurance in the general sense. There are onshore and offshore variations. Regular withdrawals of up to 5% per annum can be taken with no immediate tax liability. The ‘gross rollup’ element means that the investment gains are not subject to tax until a ‘chargeable event’ occurs, such as the surrender of the policy or 100% of the original investment has been withdrawn.

Don’t forget that gains from

investments such as unit trusts and shares, made outside of ‘tax wrapper’ vehicles (e.g. ISAs) are liable for Capital Gains Tax. But individuals are allowed an exempt amount of £10,900 per annum currently. Over and above that, excess gains are taxed at 18% (28% for higher rate tax payers).

It goes without saying that tax relief depends on individual circumstances, and at Brunsdon our advice will be based wholly on our clients’ personal needs, lifestyle preferences and aspirations. I also have to point out that this information is based on our understanding of current tax law and HM Revenue and Customs practice, both of which may change without notice.

It’s not often that the Government actively encourages us to pay little or no tax. So it has to make sense to use all the legitimate tax saving opportunities open to us.

The value of an investment and the income from it could go down as well as up. The return at the end of the investment period is not guaranteed and you may get back less than you originally invested. There’s a motto at my gym which sums up my feelings towards Cheltenham racing: “Motivation’s what gets you started – habit’s what keeps you going.”

I’m pretty much certain they’re referring to exercise, but I’ve used it as my own personal mantra for any event for the past 20 years. Much like a circuit class without the champagne (enthusiastic start, moving quickly to sheer exhaustion then elation at the finish), whether you’re for it or against, there isn’t a person in Cheltenham who isn’t affected by celebrations. Get yourself along to the Open this month (15th – 17th) and see if you can recognise yourself in any of these Tribes:

The County Birds: Your tweed suit is more Daks than D&G – but it’s so classic it’s now bang on trend. You’re personal friends with several members of the racing fraternity and you’d never dream of placing a bet at the tote – you always go down to the rails. Whilst you enjoy the odd glass of champagne, you’re generally too busy using your binoculars (a family heirloom) over at the paddock to check fetlocks and forelocks to go heavy on the booze.

The Vegas Wannabes*: Your mantra is “what happens at the Races, stays at the Races”. Unfortunately this is easier said than done when you bump into half of Cheltenham’s residents on your nights out. Where you’d normally have a fridge stuffed with healthy multi-coloured fruit and vegetables from Able & Cole, if you’re off racing, your concession to a varied diet is buying pizzas with different toppings. Your Waitrose shop consists of bacon, white bread and champagne, with a few packets of ibuprofen thrown

in for good measure. You love Cheltenham’s buzzy vibe, and resolve every time to have fun – but not be led into temptation. Sadly, as another year passes and you lose your handbag (again) in HdV, you realise that those who live by the (champagne) flute, die by the (champagne) flute. You can take the girl out of Cheltenham, but you can’t take Cheltenham out of the girl…

(As another fun sport, I’d like to give you a top gambling tip: when the young (usually Essex) Girls arrive in their fascinators and flimsy shift dresses (without a scrap of tweed or fur between them), ladies, take bets amongst yourselves which one will be the first to get their 4” stilettos stuck in the mud and begin the initial stages of hypothermia – now that’s what I call a sure thing.... A Wild Warmth with Food Writer Shelle Duffin As an avid lover of all things seasonal, during the autumn and winter months, we’re treated to some of the finest produce on offer, and the majority of it can be sourced from woods and fields across the Cotswolds.

Game is a delicious, seasonal alternative to the meats accessible to us all year round, not to mention being good for

the waistline. Whether it’s roasted, potted, or slow cooked, it brings us nourishing warmth during the colder months.

This is one of my favourite recipes for using game. If you haven’t cooked with game before, this is the ideal dish for beginners. This hearty casserole is easy to assemble whereby you don’t have to worry about jointing a whole pheasant or fiddling around extracting meat from the bone during the meal itself, a factor which sometimes puts people off eating game.

Serves 6 generously INGREDIENTS 6 pheasant breasts 200g smoked bacon lardons 1 large red onion, finely chopped 3 garlic cloves, crushed 100g wild mushrooms, fresh or dried 18 small shallots, peeled 200g cooked vacuum packed chestnuts 200g button mushrooms A bunch of thyme, stalks removed 1tbsp juniper berries, crushed 3 bay leaves 1tbsp Dijon mustard ½ pint of good chicken stock 250ml sherry (to personal taste) 250ml double cream 100g butter Olive oil Plain flour Salt and pepper

METHOD • Preheat the oven to 160°C; or turn

the slow cooker onto the low heat setting.

• If the wild mushrooms are dried, put them into a saucepan of warm water and leave to soak for 10 minutes until they soften.

• Season the flour with salt and pepper and coat the pheasant breasts until they are covered all over.

• Melt half of the butter and olive oil in an ovenproof casserole dish and brown off the pheasant breasts on each side.

Remove them from the pan and place to one side.

• In the same pan, melt the remainder

of the butter and add the garlic, onions, juniper berries, shallots and bacon lardons and cook for 10 minutes until they soften and begin to go golden.

• Add a tablespoon of the seasoned flour and stir for 1 minute.

• Pour in the stock, Dijon mustard, and the sherry; and bring to the boil, stirring until it begins to thicken, before lowering the heat to medium.

• Return the pheasant to the dish along with both types of mushrooms, chestnuts, bay leaves and thyme. Add the sherry, cream and season with salt and pepper. Gently simmer for a further 10 minutes.

• Cook in the oven on 160°C for 1-1½ hours until the pheasant breasts are tender. Alternatively, cook on a low heat in a slow cooker for 6 hours, stirring occasionally. Pheasant can become very dry quite quickly during the cooking process and tastes as good as a school rubber if it’s overcooked. Therefore, if you have a slow cooker, long, slow cooking on a low heat suits it best and helps to keep the meat tender.

• Serve with a big chunk of bread or creamy mashed potato and seasonal vegetables.

This luxurious comfort food is suitable for any occasion; from a dinner party for friends to a cosy night in on the sofa, it always goes down a treat. Restaurant Review THE BOATHOUSE, TEWKESBURY

Tewkesbury is home to one of this country’s most treasured historical landmarks, Tewkesbury Abbey.

Although this historical monument has put the town on the tourism map, it will soon be known as a culinary location also. And it’s newly opened restaurants like The Boathouse that will set the benchmark. Having undergone an intense lick of paint and acquired a brand spanking new carpet, it opened its doors to the public in March under new owner Johnny James. With charming views, The Boathouse sits in an idyllic location to enjoy a meal or a glass of wine.

We dined that evening in the intimate flicker of candlelight in the best seats in the house overlooking the glistening river. Relaxed, with one of The Boathouse’s refreshing raspberry mojitos in hand, we reviewed the menu for the evening with the waiter by our side to assist with any queries. Starters began with authentic sharing platters of Italian meats and antipasti; and baked camembert served with an apple and grape chutney, both of which were indulging classics and a great way to begin a meal. Other dishes included both retro and decadent classics of handmade scotch eggs with homemade salad cream to smear them in; and pan-seared pearl scallops served with crispy chorizo, cauliflower puree and tempura florettes.

Main courses presented a variety of pub classics alongside dishes which swayed more towards restaurant-style

food. For those seeking wholesome comfort food, there’s homemade fishcakes, a choice of burgers and steaks; and slow-cooked Gloucester beef bolognaise on offer to warm the cockles.

Whereas for others looking for more of a rich indulgence there’s pan-fried duck breast with goats cheese stuffed fig wrapped in parma ham, sweet potato puree, parsnip crisp and a raspberry and red wine jus; or braised belly pork with an apple and black pudding mash, Chantenay carrots and a rosemary merlot jus, both equally alluring in their own right. The meat on the menu is locally sourced from David Dudley Butchers, who provide both quality produce and service with a ‘field to folk’ traceability. An ethos which runs adjacent to that of The Boathouse, where the quality, with added cooking

technique, is evident in presentation and satisfied in both flavour and texture.

This can be said about the food served here overall; the scallops were sweet and silky, and worked beautifully with the smooth consistency contributed by the cauliflower puree. The pork belly was a triumph; having been sufficiently cooked, the skin was crunchy on top with the succulent meat underneath embodying a melt-in-your-mouth texture. The apple and black pudding mash contributed sweet and earthy flavours to complement the pork, which overall, created a dish of pure satisfaction.

At this point of the meal, despite feeling on the brink of fulfilment, the dessert menu couldn't go amiss. Was it to be the homemade sticky toffee pudding, or the Bailey’s cheesecake? We opted for both together and were delighted to discover these were the crème de la crème of comforting puds.

Although it goes without saying that the selection of The Boathouse’s homemade cupcakes and macaroons shouldn’t be brushed aside, there’s always the option of a doggy bag if needs must.

The food is reasonably priced against the quality and presentation of each dish served. Starters range from £4.95 to £9.95 (including sharing platters), £9.95 to £19.95 for mains and £2.50 to £7.95 for an indulging dessert. There’s nothing like a trendy haunt clandestinely tucked away on one of the town’s back streets.

Many know about it, but very few are letting on of its existence and keeping it a closely guarded secret.

The Chelsea Brasserie is a sleek, stylish English bistro embodying a slight cosmopolitan twang.

As we stepped out of the rain on a dismal autumnal evening, the waiter opened the door delivering us with a warm welcome to The Chelsea Brasserie. The atmosphere was vibrant and relaxing with uplifting jazz music playing in the background. The décor was trendy and charismatic, with an impressive display of fine wines lining the shelves incorporated as a key part of the restaurant’s contemporary décor.

The menu boasts both sophistication and modernism, presenting a selection of British themed classics with European influences together in recipes and methods. Ingredients coincide with what’s seasonably available, and where possible are sourced locally. My only criticism is that I would have liked to have seen some of these producers specifically named on the menu.

Starters begin at £4.95 for ‘soup du jour’; and range up to £7.95 for caramelised scallops with cauliflower puree and black pudding – a decadent classic consisting of pure luxury. Other dishes mark elegance and sophistication in both rustic comforts with a beetroot and goats cheese tart with red onion marmalade; and contemporary creations such as crab Arancini balls with a sweet chilli cream sauce. Main courses start at £10.95 for a simple roasted vegetable salad with houmous and almonds; and range up to £14.95 for sea trout with poached leeks, saffron potatoes, a whole grain mustard beurre blanc and tomato concasse; or roasted duck breast, dauphinoise potatoes, French beans and blackberry jus. The ‘classics’ section comprises of the much-loved British favourite, beer battered fish and chips; and the French culinary treasure beef bourguignon.

haddock fishcakes and pork belly and black pudding stack, with root mash, apple disc and cider sauce, offering diners a warming indulgence in the familiarities they know and love. No decent menu can go amiss without a nice bit of juicy steak straight off the grill. The Chelsea Brasserie offer what

they believe to be the more favoured cuts with an 8oz fillet and a 10oz ribeye both served with a choice of either Diane or peppercorn sauce and handcut chips.

The food was good in both presentation and flavour bringing satisfaction all-round. The starter of caramelised scallops with pork belly, cauliflower puree, black pudding, served with a pea puree was a well put together dish. The flavours of the sweet pea puree and succulent scallops worked decadently with the smoky pork and nutty black pudding aromas, complimenting each other’s presence on

the plate. Nicely presented on a warm slate, the dish was stylish and inviting.

However good food does not fall short of small improvements, despite its appeal, the cauliflower puree accompanying the scallops was served cold, which was rather distasteful against the other warming components on the plate. The duck was a representation of restaurant as a whole; trendy in presentation and packed full of vibrant flavours. The deserts we concluded with of chocolate fondant with pistachio ice cream and a selection of homemade ice creams were decadent and indulging, which sums up The Chelsea Brasserie as a whole and were a perfect end to the evening. Curry with Cremant d’Alsace With Nick Stephens from Bordeaux Undiscovered Curry is now our national dish, and has overtaken our beloved Roast Beef and Yorkshire Puddings as Britain’s favourite meal for some years now. Chicken Tikka Masala is the nation’s most popular dish.

Following National Curry Week (7th 13th October) I have put together a straightfoward recipe you may like to try.

In this recipe I have used chicken but feel free to substitute this with your favourite meat or fish. If you are vegetarian I would suggest using butter beans which make a very pleasant change.

Should you have time, in order to get the best out of your curry, make it the day before, leave it in the fridge overnight and reheat it the following day.

By doing so the flavours infuse over the 24 hours giving you a much better dish.

Chicken and Spinach Curry Serves 4

Ingredients: 6 tbsps sunflower oil 6 chicken breasts cut into 1-inch cubes 2 large onions, finely chopped 2 inch piece of fresh root ginger, peeled and chopped 4 cloves garlic, crushed 6 Cloves 10 Cardamom pods 2 Bay leaves 1 tbsp ground Coriander 2 tbsps ground Cumin 2 tbsps mild Paprika 2 tbsps Turmeric 400ml water 1 Cinnamon stick 1 good handful freshly chopped Coriander 200ml Coconut milk 3 good handfuls of fresh Spinach 2 tbsps Garam Masala Salt and freshly ground Black Pepper NOVEMBER 2013

Method: Heat half of the oil in a large frying pan and brown the chicken for a few minutes. Add the onions, ginger and garlic with the remaining oil and cook until the onions are soft. Now add the cloves, cardamom pods and bay leaves, ground coriander, cumin, paprika and turmeric and cook on a medium heat for 2 – 3 minutes, stirring occasionally. Pour in the water, add the cinnamon stick and fresh coriander and bring to the boil. Cover and simmer gently for 30 minutes.

Stir in the coconut milk and add the spinach. Replace the lid and leave to simmer for a further 5 minutes.

Remove from the heat, sprinkle on the garam masala and replace the lid again.

Leave for 5 minutes. Just before serving stir in the garam masala, check the seasoning and remove the cinnamon stick. Serve with boiled Basmati rice with a little saffron added if required.

When eating at your favourite Asian restaurant or enjoying a takeaway at home lager is predominantly the chosen beverage to accompany your curry. The reason that it fits so well rather than beer or ale is because of lager’s gassiness. The bubbles release the flavour of the spices within the curry and they complement it well. The problem as I see it, is the volume – especially when you have side dishes with your curry such as poppadoms, chapatis and naan bread.

The lager can leave you with that bloated feeling and sometimes you may even feel quite uncomfortable after eating your meal.

I feel that we need an alternative which

still has this bubbly quality but is lacking the volume that lager has. The ideal partners for your spicy dishes are Sparkling Wines, (Prosecco, Cava etc) and even Champagne if your budget will allow. These wines enhance the subtleties and flavours of the curry without clashing with it (as does Red Wine).

My perfect pairing however is a Crémant. The word ‘Crémant’ means ‘creaming’ and you can obtain Crémants from a variety of appellations within France including Burgundy, Bordeaux and Limoux. Having tried them all my preference is a Crémant from Alsace recommended to me by a champagne maker.

Crémants are made in exactly the same way as Champagne (Méthode Traditionelle/ Champenoise). The only technical difference between a Crémant and a Champagne is that there is less power (gas) in a Crémant because it is not fermented in the bottle for as long as a Champagne. The advantage is that it is also half the price of its Champagne cousin! Bon Appétit! As we move into the winter months the cold weather and rain become almost ever present but what does this mean for a child’s activity level? I personally hold a football session for youngsters on a Saturday morning and the numbers attending can be estimated by the weather it seems. If the weather looks bleak with rain clouds hovering you can almost guarantee numbers will be lower.

But at what cost does this come to a child’s activity and wellbeing?

I am sure this is a similar story all over the country and not just limited to a Saturday morning sports club.

In schools for example, class teachers in their smart uniform won’t want to get wet or muddy to deliver a football, rugby or hockey lesson. This is a generalisation I know, and I personally know of schools and teachers who will be out there in all conditions to give the children the opportunity to play, and I choose the term ‘play’ as that is what it is. It is getting the heart rate up and bringing fresh air in the lungs whilst socialising with friends.

When the sun comes out, it is a different story. There is nothing better than standing out in the sun watching your son/daughter, brother/sister, niece/nephew play their chosen sport.

Taking your child to a Saturday morning session is no longer a chore.

Recently I have been asking a few questions on this matter to some of the children in schools or on the Saturday morning session to find out what the

reasons were for non attendance. “Were you busy last week buddy?” I asked. “My mum/dad said it was too wet to come” one boy replied. “Did you not fancy the wet weather yourself ” I responded. “I don’t care about the rain, I wanted to play”, was his response. This is just one scenario at one given time but I would be willing to put a large wager on this being a fairly common occurrence.

The child cannot drive himself to a sports club, so has to rely on others. His health and sports participation is almost entirely out of his hands.

The recommended activity level for a child is at least 30 minutes every day, five times a week. Many, it would seem, struggle to do this in the summer, so when the winter arrives, the child has even more limited outdoor play. This can have major health implications later in life.

We are quick in this country to slam computer games and crime rates, but the main reason may be that we as parents/guardians, brothers/sisters, aunties/uncles don’t put ourselves out so that our younger generation can play.

The ones to watch As around 70,000 people stream through the gates of Prestbury Park for the Open Meeting, the fanfare is heralded that the National Hunt season is in full swing It’s the time of year when fans of the winter game are putting together their lists of horses to follow. There is nothing quite like the feeling of seeing a personal favourite or a horse that has caught your eye, run away with a big prize between now and April. If you are busy compiling a ten to follow or a similar competition, take a look at four horses that will feature high on my list:

Morning Assembly (Pat Fahy –Ireland) Last seen winning the Grade One three mile hurdle for novices at the Punchestown Festival and has been quoted at 25/1 in some markets for the 2014 World Hurdle. Morning Assembly has been in my notebook since he finished third in a Punchestown Bumper in 2012 which was won by subsequent Grade Two winning Chaser; Buckers Bridge, back in fourth was 2013 County Hurdler Ted Veale. It is unclear at this stage what the targets for Morning Assembly are but if you have a Nag Me or a similar horse alert service, he’s worthy of a place in that.

Rocky Creek (Paul Nicholls – UK) Two years ago I watched a video of an impressive winner of a three mile maiden point to point at Carrigtwohill in Ireland, I was told that the winner had been sold to then champion trainer Paul Nicholls for £250,000 immediately afterwards, that horse was Rocky Creek.

This seven year old gelding is your classic old fashioned steeplechaser. I am convinced that he is a future Grand National winner but first of all there is the 2013 Hennessy Gold Cup to contend with. Rocky Creek has shown a liking for a stiff galloping track, this will stand him in good stead when he lines up at Newbury on November 30th.

The Liquidator (David Pipe – UK) In April 2012, I was sitting by a roaring fire in County Tipperary on a freezing cold Easter Monday whilst watching the TV coverage of the Fairyhouse Irish Grand National Meeting. The first three horses home in the Sales Bumper really caught my eye. By the start of the 12/13 National Hunt season all three of them had been sold to new connections on

this side of the sea. The Liquidator finished 2nd that day, he again caught my eye when chasing home the ill-fated Anonis at the 2012 Open Meeting. A win in an Exeter Bumper preceded an excellent fourth in the Champion Bumper at the Festival, he then ran away with the Champion Bumper at the Punchestown Festival. The Liquidator is set to go novice hurdling in 13/14 season, he is a force to be reckoned with.

Pure Science (Nigel Twiston-Davies – UK) A nine length winner of a Warwick Bumper at the start of the year, lead to a fourth place in a hot Listed Bumper at Newbury. It was his sixth place in the Champion Bumper at the Festival which was most eye-catching; after being outpaced on the turn home he stayed on up the hill to claim 6th place. The popular Whatley Manor Hotel & Spa sponsored event, held annually at the home of HRH The Princess Royal Gatcombe Park, took place over the weekend of 21st and 22nd of September. The event featured an entry of over 600 including a representative selection of international riders on each day.

“I’m not addicted to caffeine” Ooosh, the last month has been tough. You see, I gave up caffeine.

I had a variety of reactions to the decision – from an incredulous yet simple “Why in God’s name would you do that?”… to a more measured “Probably a good idea.”

On the whole, most people thought it was pointless – and at this juncture, I’ll confess the main reason for doing it was to expose how little harm, having the odd coffee does. I set about trying to prove that I’m not addicted to caffeine.

And all I managed was to prove that I am.

The idea began when a very healthy friend came to stay from California, glowing and billowing into our lives with ‘higher energy and lightness’. She talked about the FIVE NAUGHTIES (adopt stern voice). The ‘naughties’ are: Alcohol, dairy, gluten, sugar and caffeine. And they should be avoided, if not given up altogether. (I know – doesn’t leave much left to actually eat, does it?) The idea of cutting out wine and cheese leaves me in a cold sweat, no sugar means no cake (and very little fruit) and what’s gluten again?? So I thought I’d give caffeine a bash – especially as I only have a couple of cups a day, therefore can’t be addicted to or reliant on it. Wrong.

Am I being super ignorant here? One cup of coffee a day and possibly two of tea, suddenly removed from my diet left me physically ill. I developed a crushing headache that got worse lying down and then spread into an agonising sinus condition complete with runny nose and sore throat. This was by Day 4 – a day that coincidentally, some real productivity was required from me. I moaned and squirmed and suspected I had a cold, then finally gave in and had a cappuccino. Within twenty minutes, the illness and sinus pain had gone, along with the impetuous tiredness – I could barely lift my arms enough to drive the car let alone ride 6 horses or do a day’s work. There was all the proof I needed, to know that there’s something superbly wonderful about coffee!!

Clearly though, if I can’t actually operate on caffeine neutral, there’s a reason for concern… so instead of slipping deliciously back into my ‘milky with two, almost before I’d opened my eyes’ routine every morning, I stuck with the abstinence. Thankfully, the cold turkey lessened considerably and I can now happily go about my day with no tea or coffee boost.

Do I feel any better? Have more energy? Nope, sadly not – although if I’m a bit flat, one espresso sorts me out in a way that I could only dream about before.

Anyway, this situation now leads me irrevocably to consider removing another ‘naughty’ on the list. But which one? Not eating dairy is such a problematic problem… it becomes an annoying constraint when eating anywhere other than home… same goes

for gluten (don’t almost all foods contain gluten?) Sugar might be easier to cut out but I’d have to do some research. The most simple one, though, is alcohol – like caffeine, it is extremely easily identified and eliminated. Well, I say easy…

Contemplating this makes me dread the rest of my life, so on that slightly alarming basis I have decided that billowing and glowing are not required traits and that there’s nothing like a large Sauvignon Blanc with dinner, followed by a Macchiato, to lift my energy and lightness to epic proportions.
