Happy New Year! I hope that your Christmas was a fantastic affair and a warm welcome to you to our very first issue of 2013. Our sights here in the office are firmly set on healthy eating and starting the year as we mean to go on, with an abundance of resolutions. To help us along the way, we will be reading the tips from Personal Trainer, Jodie Hart, on page 121. If you fancy toning up then follow her four week fitness programme to jump start your fitness resolutions throughout January... and relish the smug feeling of easing back into your skinny jeans! Speaking of fashion, I am very pleased to introduce a new photographer to our already fabulous team this month. Based here in the Cotswolds, Matt Darlington has produced our fashion pages this month, from page 64 onwards, along with his creative team and lots of hard work from Blushes hairdressing to achieve some incredible hairstyles, depicting antlers and horns. Matt decided to make his passion for creative photography his career some time ago and has built a striking portfolio of memorable and stand-out work. Having worked with high profile celebrities including models, musicians and MPs, and built an impressive client list including Dior (working with Gary Wright of light graffiti), Oxford University Press, Serge Denimes, Broughton (Aston Martin and Bentley) and Jack Russell Clothing, he has been able to carry his unusual and unique take on the everyday and the extraordinary to a wider audience. www.montpellierwinebar.com FESTIVAL TRIALS DAY Saturday 26th January Probably the best one day Jump racing meeting anywhere, with seven races of huge quality that also provide some final clues to the destination of the big prizes at The Festival. This meeting includes The Argento Chase, a valuable trial for the Betfred Cheltenham Gold Cup, the biggest race of the season. Many of the horses that run on Festival Trials Day are having their final start before The Festival and it is rare that this meeting doesn’t feature at least one subsequent Festival winner. Big Buck’s kept up that record in 2012, winning the Cleeve Hurdle at this fixture before a record-breaking fourth consecutive Ladbrokes World Hurdle victory in March. This is a great opportunity to see some of Jump racing’s superstars without the huge crowds of The Festival (and without taking a day off work!). Gates open at 11am with the first race at 12.55pm. Beaudesert Park School CHILDREN CHOOSE FROM 30 EXTRA ACTIVITIES At Beaudesert, when they say “an all-round education”, they mean it! Feeling the January come-down yet? Stomach straining in your jeans, shellac manicure starting to chip, eyes puffy from one too many drinks parties. Depressing isn’t it? Christmas over, credit card maxed out, house looking bare – but not in a trendy New York Loft way, in a tatty, pine needles and stains in the carpet way. It’s time to pack away your sparkly jumpers, no more going out for you. No, it’s the dark days now; so pull on those unflattering tracksuit bottoms, since after all that overindulgence, an elasticated waist is about all you can manage. Why not add to the misery and punish, sorry, improve yourself, with some New Year’s Resolutions? “Lose weight, get a 6 pack, (not of lager), learn Cantonese” etc. I mean, really? Wouldn’t it just be easier to put on the horsehair shirt and self-flagellate? (See “50 Shades of Grey”, chapter 7). Instead I have an alternative suggestion for you – a way to feel good fast and stop the self-loathing volunteer to help a charity. This is not a very politically correct statement, but you really do get loads of bang for your buck when you get involved with a voluntary organisation. Most are so grateful of any help and/or cash that they are really nice to you (certainly more than that personal trainer you booked). Life is busy, and it’s not always possible to give your time, but as John F Kennedy said: ‘We choose to do these things, not because they are easy, but because they are hard.’ And the more you think about something/someone other than JANUARY 2013

Tokyo Tattoo opening party, Cheltenham The official opening of TOKYO TATTOO on 8th Decemeber was a huge success. Clients were being tattooed on the day, with opportunities to speak to the artists Shaun Maden and Roni Tail, where they have taken bookings going into the new year. Deano and Paul Scarrott were very pleased with the turnout on the official lunch day at TOKYO TATTOO, they had over 250 people attend during the course of the day, from 4pm - 11pm. Gloucestershire Horticulturalist Camilla Bassett-Smith has a wealth of experience on high profile gardening TV output and holds a Chelsea Gold Medal. Cheltenham born and bred, and trained at Pershore College, Camilla starts the year with something small and perfectly formed... As we embrace the final delights of the seemingly never-ending stilton round, it is time to turn our thoughts to a treat of the horticultural kind. Most people associate the New Year with the emergence of the classic snowdrop, but this popular bulb has a very good friend to introduce to you – meet Cyclamen coum. This member of the primrose family is a hardy tuberous perennial in mostly pink and purple, the snow and ice providing a striking backdrop for the blossoms, where the white snowdrops don their invisibility cloaks. Happiest under deciduous trees, in a well drained soil, the attractive reflexed petals of Cyclamen coum partner perfectly with not only snowdrops, but also hellebores and aconites. The seed stems of cyclamen could rival any piece of modern art, the long coils reminiscent of a miniature 1980s slinky toy. The purpose however, of ensuring species survival, puts the popular stair descending spring of my youth to shame! The name cyclamen is in fact taken from the Greek kyklaminos or kyklos meaning circle, possibly a nod to the spiralling nature of these seed stems. There are of course many other cyclamen from the large blossomed brash house plants to the autumn flowering hederifolium, but none other I believe to be as welcome a sight as the dainty coum. (I do however have to pause here and raise a glass of port to coum’s relative: Cyclamen purpurascens. The scent is intoxicating and utterly fabulous, a lover of damp, leaf littered areas. However I will have to wait for summer until the air around my JANUARY 2013

For such a small plant, you get good value for money with Cyclamen coum, with flowers until spring and an ability to thrive with little care. They are also very long lived, paying you a regular visit for years to come. Plant ‘in the green’ as with snowdrops, they do far better when placed as established plants than as dry tubers. Don’t be tempted to plant with Cyclamen hederifolium for a long display, as C. hederifolium will out compete C. coum, better to plant in different areas of the garden. In times gone by, cyclamen was said to be used in the treatment of snake bites

For such a small plant, you get good value for money with Cyclamen coum, with flowers until spring and an ability to thrive with little care. It has also been heavily featured in folklore, influencing affairs of the heart and believed to bring danger to any pregnant woman who stepped over the plant. In contrast, it was said that cyclamen could ease childbirth and that a root worn around an expectant woman’s neck would aid speedy delivery. (One wonders if maternity wards in Gloucestershire could ensure a quicker turnaround with a display of cyclamen houseplants?!) Cyclamen essence is also rumoured to bring good luck, and so what better plant with which to start the New Year? The Cyclamen Society is as old as me, starting in 1977, and is an excellent place to find out more about not only Cyclamen coum, but the wide variety of cyclamen that bloom throughout the year. Painswick Rococo Garden also offers an impressive local glimpse of C. coum en masse which was a delight to share last year. According to the language of flowers, cyclamen is a gracious way to say goodbye and with that, here ends my first article of 2013. CS

“We can all make a difference” This month, Head Gardener at Sudeley Castle, Jon Hodder, encourages us to consider conservation... January marks the beginning of the year. Twelve months previously, who could have foreseen the events that we’ve been through? The Olympics were a certainty, as were the Jubilee celebrations…but everything else? I wondered what sort of year we were getting into when we had the miniature summer in early spring. Few of us could have imagined the rainfall yet to come, or even the flooding. The area where I walk my dog is usually dry for most of the summer, even though it lies right next to the Severn. This year it has held wet ground for a full twelve months. Old farmers that I know, people whose families have been here for generations, have told me that they have never known it so wet. The overall impact for wildlife will have been disastrous. Even if unaffected by flooding, the wet conditions will have made life very hard for nestlings and small birds. Overall, the breeding bird population in the UK has declined by more than 44 million since the late sixties: less than fifty years. The problem is that the countryside still looks comely from your window, or as you walk, ride or drive through it. It still appears ‘green and pleasant’. The actuality is that species are declining and we should help wherever we can to reverse the situation. Butterfly populations, already struggling as a result of the cold summer of 2011 will be pushed further towards extinction. Butterfly Conservation (www.butterfly-conservation.org) is a national organisation, which works to survey, understand and arrest the decline of our native butterfly species. There is a local branch, based near to Cheltenham. I am certain that they would welcome new members. Conservation is something that we actively work towards in Sudeley Castle’s JANUARY 2013

gardens and something we can all be involved with: from simply providing a bird feeder and some nectar rich plants in your garden, to re-flooding old coastal saltings. If we make habitats, the wildlife will turn up. You may not find an eagle in your nest box, but you could well be harbouring some newts in your pond.

Consider for a minute the amount of ground in this country that is garden, and then consider what a rich and diverse habitat that ground can provide. Few of us have extensive gardens and fields like at Sudeley, yet with a few subtle changes we can all make a difference, and a difference that will bring positive change. Allow yourselves to have a compost heap somewhere at the back of the garden. It is not even necessary to use it. Just put all the soft green waste and leaves from the garden on it and make sure that you keep it free of woody waste. It will provide a useful source of microorganisms, which will attract insects and then larger life forms. It may even provide somewhere for a hedgehog to hibernate, or a grass snake to lay her eggs. Simple changes such as these will enrich your locality and help increase your local biodiversity. We can all make a difference. Happy New Year to you all.

Art Couture Painswick On 30 November, Art Couture Painswick topped off the annual Painswick Goodwill Evening with the offer of cocktails and a chance to see some of the astonishing costumes entered into the annual competition at the Art Couture Festival Candy entry. Todd Lynn, designer to rock stars and Patron of Art Couture Painswick, arranged this unique keepsake. The evening was also used to launch a new way for people to support Art Couture Painswick. Supporters are invited to become Members and contribute an annual donation, with a twist that they can choose how half of their money should be used: to subsidise entries from students, to contribute towards a prize, or to help in the work that Art Couture Painswick does with schools and colleges throughout the year. The organisation is not-for-profit and entirely run by volunteers, so this kind of involvement is invaluable. There was also a tempting preview of the book that will be produced in the New Year, featuring glowing images of entries from three years of the Festival, with the stories from the artists and information about how they were made, so that it will not only be a gorgeous memento of the event, but also a

valuable source-book for other artists, and an incentive for people to get creative themselves. Anyone inspired to enter for the 2013 competition at the Art Couture Painswick Festival will find an entry form on the website at www.acpfestival.co.uk, together with information about how to enter and tips on making something truly special. The Festival takes place on Sunday 14 July 2013 in the village of Painswick. It was a freezing cold but beautiful evening and visitors spilled out from the stalls and tempting food and drink around Painswick to enjoy special cocktails, including Bombillo’s custom-made Couture Cup featuring watermelon liqueur. Several of the designers were on-hand to describe exactly how they found their inspiration for the creations and the innovative techniques they had used, and the costumes were displayed on some lovely young local models as well as on magically lit mannequins. Visitors were intrigued by the stories behind these artworks: shimmering fish made by ironing 400 crisp packets, hundreds of tiny hand-made snowdrops trailing from a train, old silk ties cleverly stitched into an oriental outfit. A special highlight of the evening was the presentation to Octavia Elwes of a photograph featuring her winning entry signed by her hero, Christian Louboutin who was the inspiration for her Head

A design for life Business partners, Paul Scarrott and Deano Jouni, explain a little more about their brand new tattoo business bringing art to life in Montpellier... Q. How did you both meet? A. Paul: I’ve been tattooing for more than fourteen years and I started at Mantra Tattoo in Cheltenham. That’s where I learned to tattoo and that’s where I stayed until I started tattooing Deano and we became friends.

Q. How did the business develop? A. Deano: It really came about as I fancied myself as a bit of an entrepreneur. I have had several businesses over the years and I have been involved in nutrition for the last ten years. Paul and I had many conversations, however the initial plan was to open a boutique shop stocking a new clothing line and Paul was going to tattoo once a fortnight, in line with the brand. Our ideas developed and we found larger premises and before we knew it, we decided to launch a tattoo studio that went above and beyond. We wanted to establish something prestigious and it evolved naturally from there.

introduction of TV shows such as Miami Ink and LA Ink have made the process more accessible, as well as the number of celebrities who now have tattoos. We leave the design decisions very much up to our clients. It’s difficult as in this position you can be influential without realising it and so I try to steer clear of that. Deano: Paul is incredibly humble, but the reason I wanted to go into business with him is because he is so good at what he does and he is massively respected in the industry.

Q. In terms of the customers that you are looking to attract are you quite universal in your approach? A. Paul: Very much so. We are certainly not looking to alienate anyone. Deano: But also we are looking to attract people who would like a tattoo, but have always been too scared to come into a tattoo studio. The design of the interior has been carefully considered to make it very sterile and bright and airy, but also an inviting environment, with the added finishing touches. Paul: Vintage industrial we like to call it! There is still a stigma attached to tattooing and the way that it works and so we’re looking to break down any preconceived ideas. It has really changed over the last ten years or so. Q. Why do you think that is, what’s changed? A. Paul: I think that maybe the

It’s not for everybody and we are not here to push it on everybody, but at the same time we are not trying to hide away. Every business needs them. The one hundred and ten percenters. Those people who live for their work, who put in as many hours as it takes, whose diaries are always full with appointments and who love nothing better than meeting clients. Invariably these people are real characters, popular with clients, terrific ambassadors for a company and can be relied upon to deliver outstanding results time and again. If you have ever met Dean Baldwin, you’ll know exactly what I’m talking about. When I first met Dean, I immediately recognised a kindred spirit. Forest of Dean born and bred like myself, he was instantly likeable, enthusiastic, obviously tenacious and down to earth. Financial Services can be dry and mind-boggling at the best of times. Dean has the ability to take this complicated subject, break it down to its component parts and explain it in easy-to-understand terms, which are usually amusing, anecdotal and analogous. His ability to communicate extends to being able to adapt and relate to clients on all levels. But make no mistake. His technical ability and knowledge is absolutely spoton. The Retail Distribution Review (RDR) has demanded that all Financial Advisers wishing to continue in business from now on gain strict, formal qualifications. Dean would be the first to admit that he dreaded ‘going back to school’ to take exams after having successfully operated in the business for over 30 years. “RDR has been a total game-changer in the industry and my biggest challenge to date,” he says. “I knew that if I didn’t pass the exam (equivalent to a first year degree), I would be out of a job. End of story. So I just had to buckle down and grasp the nettle. Thankfully I passed and I feel on top of the world. I can carry on doing the job I love.”

Paradoxically, whilst RDR has been a huge challenge for every Financial Services firm in the country, for those companies that remain, the opportunities are vast. And Dean can’t wait to grasp them! “The Adviser sector will shrink. Many of the smaller firms have been unable to cope with the demands of RDR. Even the banks are getting out of the financial advice business and shedding their advisers. This means that the Financial Advisers who remain, like those at Brunsdon, will be by definition, highly qualified and committed. Couple this with the Auto-Enrolment workplace pension legislation and I expect to be even busier from now on.” That’s why, at Brunsdon, we have made the decision to expand, not contract. We are bucking the trend and taking on more staff, including qualified Financial Advisers, and opening additional offices in the region. I only wish I could put Dean through the photocopier ten times! Dean’s work ethic leaves little time for other pursuits. He does love rugby and makes as much use as he can of his season ticket at Kingsholm. He is also a keen follower of horse racing, although he is quick to point out that his interest is in the spectacle itself, rather than the betting! Mainly, he is a family man, spending as much quality time as he can with his wife, Machiala (‘Kyla’), whom he recently married in Las Vegas, his son, two grand children and two step-children. Dean’s propensity for work was hardwired from an early age. “My Dad was a real old-school grafter, in the best sense of the word,” he says. “He taught me to work hard and do the very best I could. Recruitment trends: on the up after a few rocky years

The end of 2012 saw a marked improvement in the job market, with a 15 month low for unemployment in Q4 and a steady employment growth month on month since August. At Expectations! we too have mirrored this trend, with business expansion culminating in the opening of our second Gloucestershire branch last year, as well as a noticeable increase in both enquiries for our services and successful permanent and temporary placements.

Temporary workers have provided increased market flexibility, with speculative employers recruiting additional temporary staff to meet demand; many of these placements have since been transferred to permanent roles as market improvements have created greater stability for companies. This workforce flexibility, with people at all levels willing to take on temporary contracts, project work and part time roles, has arguably been responsible for ensuring we haven’t seen the levels of unemployment experienced on the continent. Permanent vacancies have increased by 15% in the last six months and the demand for highly-skilled staff, particularly engineering, sales and IT is

exceeding supply. There is a need to ensure that Gloucestershire is taking ownership for training and retaining these highly skilled personnel, creating a domestic job market for University and College graduates, whilst ensuring that they meet the needs of employers. This skills shortage is projected to be a significant long-term problem for the UK and more specifically the Gloucestershire area, where there is an above average saturation of specialist companies. Workplace pensions have been given a great deal of coverage in recent months, with the Government announcing auto enrolment of staff into this initiative over the next five years. Not only will this directly affect employers, but it will also impact employment businesses like us who provide temporary workers. The Pensions Regulator has set “staging dates” for each company, but by 2017 all employers will be required to

contribute a percentage of each persons’ salary to their pensions.

A New Year,

a new start?

Christmas is a time when most of us will take time off work to spend time with our loved ones and indulge in some festive cheer. However, in the current financial climate, for some families Christmas does not bring the festive cheer it should and the pressures of Christmas can be the breaking point for a relationship. For couples where the relationship has broken down, the New Year often prompts a new start. It is not always possible however for a couple wishing to separate to physically do so. The current economic climate has resulted in lower property prices, pay freezes, reduced bonus payments and strict borrowing criteria being applied by mortgage companies. This means that whilst some couples may make the difficult decision to separate, practically, they are unable to do so. Continuing to live together under the same roof when a relationship has ended can be very stressful however it does not prevent couples from embarking upon the divorce process should they choose to do so. There are however more practical issues which may need to be considered whilst those divorce proceedings take place, or whilst the couple consider their options. The financial arrangements need to be agreed, including who is going to be responsible for meeting which utilities JANUARY 2013

Consideration also needs to be given to any children of the family and how they are likely to cope in a situation where parents are living together but effectively leading separate lives and costs, and whether a level of support should be provided to one party by the other in an attempt for them to lead separate lives whilst living in the same property. There are protective measures that the Police and the Family Courts can put in place to assist parties who are subject to violent behaviour and again, specialist family law advice should be sought. In order for couples to consider the best way of regulating their occupation of the property and hopefully avoid the difficulties referred to above, they may wish to consider alternative ways of discussing the divorce and outstanding issues which are available to them. For example, processes such as mediation, Collaborative Law, or Alternative Resolution Conferences (ARCS). Each of these processes is designed at assisting couples to resolve issues arising upon their separation, whether mental or physical, in the most cost effective and amicable way possible. A different way of doing business

‘‘

My own business history is no secret and as the former COO of retail brand SuperGroup, the makers of Superdry, I’ve experienced first-hand the challenges of a private business: at set up, during periods of growth and as an established brand. That doesn’t mean that I know it all – every business is unique – but what it does mean is that I’m passionate about empowering businesses in Gloucestershire to overcome these challenges and thrive. With board representation from the private and public sectors, the University of Gloucestershire and Gloucestershire College, the LEP is the vehicle that can – and is - making this happen. LEPs were established by Government back in 2011 and if you’ve been keeping a track of the national news agenda then they’ll be no stranger to you: Lord Heseltine recently recommended that £58bn of Whitehall spending should be devolved out to LEPs to deliver local economic priorities. Take out the politics and this means ensuring our region is successful and profitable with strong job prospects, skilled people, and the right infrastructure in place – from better broadband to faster transport links. In Gloucestershire, we’ve wasted no time in bringing business together to get things done. The LEP has a total of ten sector groups, covering the county’s leading disciplines. These groups are the essence of what the LEP is all about. They aren’t talking shops, locked away somewhere in an ivory tower. Instead, they’re made up of real business people from across the region who are focused on creating and implementing an action plan to address challenges head on. The work of our Retail Sector Group JANUARY 2013

is a case in point and has resulted in Gloucestershire being named by Government as the first retail Pathfinder – in other words, a ‘trailblazer’ for retail. We’ve been awarded money from the Department for Business, Innovation and Skills (BIS) to produce a framework to boost UK high streets and ensure that they become some of the best in the world. There is so much more good work across the other sectors too which I look forward to telling you about as part of this regular update. The business weary amongst you might ask whether the LEP will really make a difference. I might have asked a similar question myself in my days at SuperGroup. The short answer is yes. The LEP is an organisation with teeth and real strategic influence. Why? Because it’s run by business for business. It allows them to take the initiative and it offers a direct

route through to Government to make their voice heard. And rather than duplicating, our focus is on coordinating via our networks which together reach 75 per cent of employment and 80 per cent of the economy in Gloucestershire. You might, like me, already be passionate about promoting the great enterprises our county has to offer. Or you might simply be focused on keeping your own firm up and running and turning a profit – especially if you’re one of the multitude of new or small businesses in our region. After a few years, I came to Willans and I have been here for the last 17 years,” Margaret explains. “The quality of work is fantastic in the city, but strap hanging on the Northern line is not! It’s much nicer to be out in the provinces. We have the same standard of work here as you are able to do in a city environment.” Margaret’s heart is very much at home here in the Cotswolds, “This is a beautiful part of the world, the countryside is fantastic, the arts are fantastic, and we have wonderful theatre, music, opera and all sorts of other cultural events going on. Margaret’s day-to-day life and she has a real passion for the culture that resides here on our doorstep, “Gloucester Cathedral is the finest historic building we have in the county and is very much dependent on voluntary contributions so we try to raise money to maintain and preserve what is a fantastic building. The Art Gallery and Museum extension is now being built following a major fundraising exercise with help from some of the major trusts and we are virtually there now with our fundraising.” In her professional life, Margaret considers herself to have been lucky enough to have never had to deal with discrimination along the way. “You have to look at situations, evaluate them and work out where you want to go. I have been incredibly fortunate and have never experienced discrimination for being female. Sometimes it has been an advantage! When I was starting off, women were a bit of a novelty and I can’t remember there being any female partners, but there was beginning to be the idea that women should have equality of opportunity. Before I went into law, I thought about becoming an engineer but my maths wasn’t up to it!” Margaret is very much involved in the voluntary sector and was a mentor with the Prince’s Youth Business Trust for a number of years. “I have learned a vast amount from my clients over the years as well as from the charities that I have been involved with. It is all twoway learning. As a firm, Willans likes to be involved in the local community. We have a quiz coming up in February for The Cobalt Unit and are sponsoring the High Sheriff of Gloucestershire’s Race day on New Year’s Day in support of the Sheriff ’s charity, so that’s very exciting. We have lots of things coming up and so it’s a great year ahead.” CS

More than just a job Mary has had a riveting and varied career. She began her business life in marketing and sales and later became Chief Executive of BII, the professional body for licensed retailing. From 2003 to 2009, Mary was Director of Qualifications and Skills at the Qualifications & Curriculum Development Agency where she led on qualifications policy and development for the 14-19 year old education and UK vocational qualifications reform programme. Mary then joined UCAS as Chief Executive in January 2010. UCAS is an educational charity and the world’s largest central admissions service for higher education. Each year the company’s 400 staff process more than half a million applications from all over the world for courses at UK universities and colleges. Based in Cheltenham, UCAS has strong links with the Cotswolds. Mary also has an MSc in General Management from the London Business School and she was awarded an OBE in the Queen’s birthday honours 2000 for services to training in hospitality and tourism. “I feel like the luckiest person alive!” Mary says, “ I have the loveliest job in the world and no two days are ever the same. I have a truly incredible team working alongside me. Before I took over here, I knew that this was an organisation with much more potential than it was exhibiting. It isn’t just about carrying out transactions, we are much more customer focused than that.” Mary shares her time between her home in West London with her family and her office here in Cheltenham. “I like to avoid spending time in hotels if I can help it”, Mary says, “I have a flat here in Cheltenham and have settled well into the community. Relaxation is incredibly important when you work in a

stressful environment and I love nothing more than to relax with a good book in the evening or watch a film and am also an avid tennis player. “I think that the most important thing that I have learned over the years is that worrying simply doesn’t change a thing. As Chief Executive, I have had to become much broader in my approach and I tend to rely on other people in various departments and their expertise as well.” Obviously a large part of Mary’s job

is to visit universities and colleges around the country. “I get student envy at every university I visit!” Mary admits, “My first priority is to do my job and do it well, but doing a job that you love helps enormously with fulfilling that order. I always aim to be accessible and always reply to emails personally. I think that things like that are important. “My role has its challenges, much like any other role, but I have always given my full commitment and that is what it comes down to. Last year we received 60,000 applications in one day and they were all last-minute applications. We have contingency plans in place to deal with situations like those and always look through the customer lens first.” In a role as demanding as this and with a demeanour that is so calm and controlled it’s nice to know how Mary makes the most of her quiet times. “My guilty pleasure is listening to Radio 4 on my car journeys... you just can’t beat The Archers!” CS

Travels

In this fascinating new series, Tom Rains Head Chef at The Daffodil Cheltenham, writes about the delights and possibilities of an ‘up close and personal’ gastronomic journey across the UK. Tom has wowed diners during his inspired career at L’Escargot, The Berkeley and Claridges working alongside iconic chefs such as Anton Mosimann. He has decided to give us the true story behind the food on our plate; here is what he discovered this month… As part of my job I opt for the best quality ingredients and it’s no surprise that our suppliers at The Daffodil offer exactly that. My passion is paying homage to these, not overcomplicating dishes and bringing out the full flavours. My quest is to get out there and bring the best products back to the plate, right from their original source. On a cold wet day in November I found myself at Standish Park Farm overlooking the Berkeley Vale, ready to meet Jonathan Crump, award winning cheese maker. If it had been a clear day I could have seen Haresfield Beacon, but it wasn’t.

Jonathan produces a Double Gloucester and its sister, the protected Single Gloucester Cheese from his herd of Old Gloucester cows. Jonathan uses only traditional methods; milk is collected from the cows (about 100-150 litres per day) across his herd of twelve. In purpose built cheese rooms, he transfers the milk into a heated water trough before leaving to cool overnight, so the curd can be cut. This curd is put into old fashioned moulds and he has a beautiful old Antique press that weights the cheese. Jonathan bought and restored this amazing piece of machinery from an old farm in

Frampton-on-Severn. A day later, the cheese is lovingly turned out. I tried my hand at cutting some curd and turning over a batch from the day before. A tricky technique, but I was in cheese heaven! Post preparation, I had a great time coring some of the cheeses, pulling out a perfect sample from the centre; smelling the variety of cheeses at different stages of the maturing process was fascinating. Jonathan showed me how they colour the cheese which is done using Annotto bean juice so everything is pure and organic. Listening to Jonathan, I learned that the ‘myth’ of the paler Single Gloucester deriving from skimmed milk is simply JANUARY 2013

not true. It used to be a poor man’s cheese but the best tasting Single and Double Gloucester both contain full cream milk. Jonathan Crump’s is the only Double Gloucester variety that is made from milk from the rare Old Gloucester cow. Personally, I consider it the best as it is made in this historic and unique way and boy does it taste good! Returning to The Daffodil, I set about making my latest batch of piquant, twice baked Cheese soufflé with my Single Gloucester; this soufflé is our most popular starter and I know that this is down to the cheese. “Playing for a local team was great” At the age of 28, Cheltenham born Sean Hopkins is already a seasoned pro in the world of American Football. Playing the sport for the last 10 years, with eight at senior level, Sean speaks to Carley O’Dea about the game, his career and future plans… How did you get into American Football? I got into American Football through my Dad. He played professionally and with my brother also taking it up, it was a natural transition for me to get into it.

Can you give a brief description of American Football? I would describe it as the American version of rugby but with a lot more rules. Watching the game you would assume it is very physical, and whilst this is true, it is also a very tactical sport with a lot of thinking needed. It is a very exciting game.

You play for the London Blitz now but previously played for the Gloucester Centurions. How was it playing for a local team? Playing for a local team was great. I went to Chosen Hill School so I have a lot of friends in the Gloucester area and lots of support. It was a great springboard for me, I’ve also played for the Bristol Aztecs and I got recruited for the London Blitz last year, who are national champions and it has given me the opportunity to play for them in Europe.

How different is the game in UK compared the US? Massively different. Speed, money and support are all major differences at the moment. It’s a different game; it tends to be a lot slower in UK; more run orientated rather than pass. I would probably say that the game we are playing today in the UK is at the standard of the US 20 years ago. Can you see it becoming a more mainstream sport in the UK? Yes definitely, since I have been playing JANUARY 2013

it has got better and better. There are opportunities to play at college now and if you are at a University level then there is always the possibility of getting spotted to play in the states. Without a doubt it is becoming more and more popular.

Do you have advice for anybody wanting to get into American Football? Don’t be afraid to come along and have a go. Whatever your size, big or small, there is a position for you to play. Start with a local team so as you can understand your bearings and learn the game. As with most things the more you learn the better you will be. Best moment so far and ambitions for 2013? Last year wining the National, it was amazing. I have also played for the British Lions National team and I am currently Britain’s most capped player which I am very proud of. Obviously in 2013 I would like to retain the National Title and go further in Europe. I want to keep myself established as a top player.

Biggest Inspiration? My dad, he got me involved and inspired me to play. When I was 16 I didn’t

particularly want to play football or any sport but he persuaded me to keep at it. Watching him at his career definitely gave me the push to want to emulate it in mine. What is next for local club The Centurions in 2013? They need to establish themselves as a winning team in their division and then start to move up and become a premier team. It would be great to have a premier team in Gloucester and to have a good football system so as people can go and watch. A youth team would be fantastic as well, there isn’t much awareness in schools at the moment so getting more children involved would help move it into the mainstream. Where do you see yourself in 5 years time? Still playing hopefully or, if not, definitely coaching. CS

Are you looking for something to jump start your New Year fitness resolutions? Then look no further. Here are some top tips from Personal Trainer Jodie Hart. Follow her 4 week fitness programme throughout January... YOUR WARM UP Warm up first for 10 minutes to make sure your body is ready for exercise and to help prevent injury. Start by mobilising your joints with a set of dynamic moves including: shoulder rotations, head rotations, back stretches and walking lunges, gradually increasing the range of movement of each move. A light warm up should then be carried out on a cross trainer, treadmill or a bike to increase your heart rate. YOUR CARDIO WORKOUT Cardiovascular (or aerobic) exercise is an essential part of your fitness programme. This will help to strengthen your heart and lungs and improve your fitness and burn calories. Choose either the treadmill, bike, rowing machine or cross trainer in the gym or run, walk or cycle outdoors. Interval training on CV equipment is very effective. Find a speed or intensity which is challenging for you to work out at and continue for one minute, then return to a more comfortable intensity for one minute (you still need to be noticeably working) Repeat this five or six times adding an extra interval each week.

YOUR STRENGTH WORKOUT If you want a lean, toned, strong body then add resistance training to your workout. Building lean muscle helps boost your metabolism and burn calories! Even after you have finished exercising. For a basic strength workout (also called resistance training) you can use your own body weight or for more of a challenge add weights to your workout (e.g. dumbbells ) Classic moves include: squats, lunges, tricep dips, bicep curls. Start by doing 10-12 reps of each exercise and perform two sets of each. PERSONAL TRAINING: I know it can be difficult to find the motivation and come up with effective new ways to boost your workouts and tone your body. That’s what I am here for! “There’s Bethlehem and Cheltenham and Lourdes and Limerick Junction” Christy Moore, The Ballad of Ruby Walsh We are now halfway through the winter game and all eyes are firmly focused on the pinnacle of the National Hunt Calendar – The Cheltenham Festival. Since the Cheltenham Showcase meeting in October, the jumping action has come thick and fast on both sides of the sea, thus providing fans with valuable clues for the Festival, Aintree and Punchestown. Here are four horses that are firmly in my notebook...

CONEYGREE A half-brother to Carruthers, staying chases will be his long term aim, but for now he is my fancy for the 2013 Albert Bartlett Novices Hurdle at the Festival. He won a Grade Two 2m5f event at the Cheltenham Open Meeting in fantastic style, beating two horses that had previously scored at the Showcase JANUARY 2013

CLONDAW KAEMPFER Bought by trainer Donald McCain for £130,000 in April 2012, shortly after winning a good bumper at Fairyhouse. He exploded onto the UK jumping scene with a facile success at Aintree in October. There he showed an excellent turn of foot in soft ground that had his trainer worried beforehand. His next assignment at Haydock showed us how sweetly he can travel and he repelled a decent challenge by Lienosus. Again, the turn of foot was obvious in less than perfect conditions. By the time you get to read this we may well have seen him run on good ground, I expect even more improvement to come from that. Clondaw Kaempfer is firmly on my mind for the Neptune Investments Novices Hurdle at the Cheltenham Festival. In that he could face two of Ireland’s great hopes, in the talented duo of Don Cossack and Champagne Fever, but I’m sticking with Clondaw Kaempfer, he’s a bit special.

Meeting. The race he took at the Open Meeting holds a good record of winners and placed horses going on to win at the Festival. I have no doubt that Coneygree’s form will be franked time and time again, if he were with more fashionable connections, he would be a lot shorter in the ante-post market than he is currently trading. Coneygree was bred by the late Lord Oaksey who passed away in 2012; a Festival success would be an emotional one. TARLA Trainer Willie Mullins has the mighty Mare Quevega, who will no doubt

provide him with an incredible fifth Mares Hurdle at the Festival. Tarla is another lady who hails from team Mullins who could well be heading to Cheltenham with a live chance. Her victory at Clonmel in November was a joy to watch; she jumped for fun and travelled beautifully under Ruby Walsh. At the time of writing her target is yet unknown, but keep her on your radar, she’s going places. ALFIE SHERRIN Everyone loves a staying chaser with a big heart and bags of talent; this horse has both in abundance. To me he is the ideal candidate for the Grand National. He was victorious at the 2012 Festival, and will mix hurdling and chasing in 2013. He holds an entry in the Welsh National which is run after this article goes to press. Alfie Sherrin is trained locally at Jackdaws Castle by Jonjo O’Neill. The stable won the Grand National in 2010 with Don’t Push It and came so close to victory again last year with Sunnyhillboy. Santa swaps Rudolph for a KIA “We like to support organisations in our area and we are glad to be able to help the Cheltenham Round Table with its community fundraising initiatives.”

Santa rested his reindeer in the run up to Christmas (December, 2012) and opted to use a Kia Sportage KX2 diesel to get around Gloucestershire instead. Father Christmas travelled around the county with the Cheltenham Round Table and was transported in a car provided by Wessex Garages to spread festive cheer. Matthew Cripps, General Manager at Wessex Garages on Mercia Road in Gloucester, said: “We were delighted to help Santa and Cheltenham Round Table with their fundraising activities. “David Holmes, Chairman of the social society, contacted us regarding using one of our cars to transport Father Christmas and we were only too happy to help. “The Round Table Group used the Kia Sportage KX2 diesel to tow Santa’s sleigh around the community and to transport Santa to meet children. They collected money for Betteridge School, which is based in Cheltenham and is for children in the county with special needs.” The Round Table is a national social organisation that gives people a chance to get together and help the community. Its vision is to give individuals the skills, ability and

desire to better themselves and the lives of others. At this point in the calendar… do you tend to look forward? Or back? Personally, I love the chance to set up a load of new rules: THIS year, I am going to keep on top of the laundry. THIS year, I am going to eat healthily. THIS year, I will help the kids with their homework every day. THIS year, I will do exercise at least three times a week. THIS year, I will drink less wine. (I have to stop the list now or my enthusiasm for 2013 will begin to fade). The hazard of bringing in these fabulous rules is that until they are implemented, I run the risk of doing the exact opposite. It is like starting a diet TOMORROW – the magnificent indulgence of today is glorious to behold, but perilous to the waistline if ‘tomorrow’ never comes. It brings the danger of ending up in a perpetual state of making the most of ‘today’ before the diet kicks in. This time last year I set myself a goal to be on time. It only happened once and it was so unexpected that no one else was ready. Weather wise, 2012 was appalling and in that regard I am rather glad to see the back of it (as if mother-nature is suddenly going to say to herself “ooo a brand NEW year, let’s improve the climate in the UK for the next twelve months”). Husband’s New Year Resolution is to be more ‘selfsufficient’. He wants to grow vegetables, raise some chickens and “harness the energy from the stream” (it runs right past the house – and I have NO idea what ‘harnessing it’ involves). As a bit of a dry run he was

given a wild duck last week (dead) to eat. It was completely whole; feathers, beak and BRIGHT ORANGE feet still intact. Head flopping about and dangling off the table he set about plucking it – which according to youtube, is hazardous without the use of paraffin wax (WHAT??). Anyway, I have never ever, ever seen SOOOO much unfathomable mess for 350grams of meat. I could have made two quilts with the by-product. However, to give him credit, it tasted fabulous: This endeavour was considerably more successful than the last attempt with a rabbit. (Also dead, but apparently very old). Once again youtube provided a comprehensive guide to getting rabbit from field to plate… there was skinning and slicing and deboning, followed by an incredibly LONG stewing phase. I think Husband suspected the meat would need some moderate tenderising and he was not wrong. But two days on the AGA, was simply not enough and Peter (as we lovingly named him) remained as tough as strips of bark with some old boots as a garnish. His age, or perhaps the lack of pre-cook ‘hanging’ was blamed. The rest of the family have been informed that the DIY efforts will continue… the children are becoming increasingly alarmed that it will be me cutting their hair and making their clothes… and I am slightly concerned I might have to buy some dungarees, but on the whole, we are being supportive. However after hearing the dead duck quack as air rushed through its lungs during its preparation for the pot… I’m not sure I’ll remain a meat eater for long. CS JANUARY 2013
