It’s a little too early to turn our attention to winter just yet, but the fashion stage is certainly set for a change of season. I’m holding out hope for more splendid sunshine and balmy September evenings, but we can’t ignore the approach of autumn and as the children prepare to return to school, maybe it’s time for us to consider the contents of our new season wardrobe? With this in mind, we head to Gloucester Quays (page 68) to discover the new season fashion available right here on our doorstep. As the rugby season kicks off, we showcase some of the autumn/winter 2013 collection from Raging Bull, starting on page 60. Going from strength to strength, the locally established clothing brand is launching its latest collection with inspiration from its British heritage; incorporating modern tweed and a rich colour palette. The new collection will soon be available in store at House of Fraser and online at Debenhams. Speaking of rugby, we hear all about their recent signing with JS Security on page 121. Group Managing Director of JS Security, John Search, explains a little more about what the contract to provide match day security services to the club means for his company. We find out all about Fripping™ in our Real Life story this month (see page 16) and meet Isla D’Aubigny, Style Director of clothesagency.com. The fundraising trend has already been used by celebrities, including Cotswolds residents Liz Hurley and Kate Winslet, to turn their high-end fashion into funds and it’s easy for you to become involved too. Do you Frip? Fripping™ – or ‘fundraising made hip’ – has already been used by celebrities, including Cotswold residents Liz Hurley and Kate Winslet, to turn their high-end fashion into funds. We asked Style Director, Isla D’Aubigny, to explain a little more... “The clothesagency.com is an exclusively online fashion site that sells second-hand designer and vintage clothes and accessories. We were the world’s first dedicated online independent site for the reselling of new and second-hand luxury clothes, shoes and accessories. We are also the first pre-loved fashion site to offer our customers a brand new service called Fripping™. We’ve had a huge number of A-list celebrities use the clothesagency.com over the years to ‘frip’ their clothes and raise money for their favourite charities. They include: Madonna, Kate Winslet, Jemima Khan, Sir George Martin, Claudia Schiffer and Goldie Hawn. One of our most successful fundraising appeals (in March 2005) helped raise money for the charity: www.rebuildingsrilanka.org.uk appeal which was set up to support families Armani dress

after the devastating Tsunami. More recently, we’ve been helping Gillian Anderson ‘frip’ her clothes to raise money for her charity SA-YES (South African Youth Education for Sustainability), which offers support and guidance to marginalised young people leaving residential care in South Africa. And so far have helped her to raise over £6,000! We’re also in the process of Fripping Elizabeth Hurley’s clothes for the charity ‘Hop, Skip and Jump’ which provides immediate respite day care for children with any special needs, and has a centre based in Cheltenham. Fripping allows women to turn their high end clothes into cash for charity, effortlessly. I set up the service because, like me, so many women are just too busy to take their clothes to the local charity shop. Plus, they want choice as to the charity they want to benefit where that money goes to. With Fripping, we collect a customer’s clothes, for free, list their items and then send all profits to their chosen cause. At any time, customers can see how much they’ve raised. They can also see how their donations are being used. Fripping has excited a lot of people so far, customers and celebrities alike! Already we’ve had a number of high profile and local charities join us and add our service to their website – giving their donors a quick and easy way to help raise funds. We’ve also had a lot of charities express an interest in being partnered with us in the future. Naturally, like anything, it’s early days and we’ve only just launched Fripping – but we’re certain that as people find out about it, they’ll want to ‘frip’ their items to benefit their chosen cause. I’m happiest when I’m in the countryside, so I guess being based here in the Cotswolds has enormous benefits for my business! I grew up surrounded by the beauty of this area and remember the freedom I had as a child to explore and enjoy it. It’s a great source of relaxation after a busy day to be able to go for a quick stressrelieving walk. I then review the priority items of the day and get cracking with whatever they may be (from responding personally to emails requesting to use our service to contacting charities and establish new partnerships). I always try to ensure that during my day I mix some of my ‘have to do’ items with some of my ‘aspire to do’ items – because it’s the latter that, in my view, will help the Clothes Agency expand and improve the most. when I was hunting down my perfect wedding dress. I wanted my dress to be vintage, but had limited places to shop for ‘the one’. Rather fortuitously, I stumbled across the Clothes Agency online one day – and ‘voilà’, found the perfect dress. It was about this time last year that I made mention of the undoubted plight in which our butterflies and bees had found themselves. The persistent wet conditions had hampered breeding and foraging and the overall outlook was bleak. The long-term outlook is admittedly far from good. Loss of habitat and changes in agricultural practice have wrought havoc throughout the countryside for many varieties of wildlife. However, this year has been very good for butterflies and we have had a lot of bumblebees in the gardens. They have been working very hard on some white lavender and also the thistles, which grow within the boundary of the gardens. There are 24 different types of bumblebee in the UK and 250 varieties worldwide. It is important to stress the difference between bumblebees and honeybees. I feel that in recent years a certain degree of confusion has arisen in this matter, and that many people believe that by keeping honeybees they are helping bumbles: this is not the case. If you keep honeybees you are only helping honeybees. Bumbles will not receive a magical boost because you have a store cupboard full of honey. As with so many other forms of wildlife, bumbles need the correct sort of habitat: if you can create it, the bumbles will come. The key point to bear in mind is that if we manage land in a way that is beneficial for insects, it usually tends to be beneficial for all forms of wildlife. So I walked out of my front door just the other day and realised, with the faintest feelings of sadness, that the blackberries are already ripening. Admittedly they are on a very sunny and protected wall, but none may hide from SEPTEMBER 2013

the fact that the year is beginning to turn. I am writing this in early August, but already we have had one or two mornings that felt as though we had borrowed them from late September. By the time you are reading this, we will no doubt have begun to gather the first falling leaves, which will be tumbling from the trees – a task that will keep us very busy for about three months. I can well understand why a lot of arable farmers dislike trees, but I wouldn't care to imagine a countryside without them. Was it Johnson who said, 'For a man who does not care for the shade of a tree is not worthy of the shade it bears.' ? He was of course, quite correct. The term “tree hugger” is a

largely derogatory one, but were it not for people who cared for trees and made their words into action, then the world would be a great deal worse off than it is. If only for the sake of our bumbles, do what you can. From a solitary pot of cornflowers, to a sizeable wildflower meadow, we can all help. Think about it. AUTUMN GOLD

Cheltenham horticulturalist Camilla BassettSmith trained at Pershore College and has worked on many BBC gardening programmes. She has just finished filming another green fingered series for 2014. This month we look at a golden bloom that inspired an art nouveau great…

And so we welcome September, a month which is torn in two with the end of our most precious summer blooms and the birth and promise of life to come as we put trowel to soil and bury our favourite spring flowering bulbs. As a complete devotee to the daffodil, I am tempted to use this space to again highlight the wonders of these bulbs of golden perfection, but instead I’ll turn my thoughts to another precious garden gem which is in bloom as we speak. Rudbeckia is a golden star explosion in a darkened sky of an autumn perennial border, it is the twinkling mass of yellow stars ahead of our light adorned Christmas trees, it jumps from the border and shouts “The year is not over yet, I’m still here, I’m alive and life is good”! These herbaceous members of the Asteracea family are related to the Michaelmas daisies that also fill our autumn borders with colour. They are ideal for the back of a border where they can provide years of majestic height and structure in bright yellow or orange. Turn our history books back to the 17th & 18th Century and we meet Olof Rudbeck the younger, and the inspiration for the naming of these giant daisies. Olof was a botanist as his father had been and taught the well know Carolus Linnaeus who came up with our system of plant nomenclature. Olof obviously taught the young Linnaeus SEPTEMBER 2013

well as he named ‘Rudbeckia’ after his teacher. Sweden’s first botanical garden had been established by Olof the Elder and known as ‘Rudbeck’s Garden’ and to further entwine these great names of botany, the gardens were re-named in honour of Linnaeus years later! If these blooms were to run for horticultural parliament, they would be sure to mention the heritage of their namesake and I hasten a mention would

Rudbeckias are remarkably wildlife friendly and can be seen at Prinknash Butterfly Garden where fluttering visitors admire the brilliance of the blossoms. Leave the seed heads on long after flowering and your garden birds will thank you for it as they feast on the seeds for their very own personal harvest supper. The common name for Rudbeckia is often ‘Black Eyed Susan’, a lady who was put to paper in an old English poem

around the time of Olof the younger’s lifetime. When talking about the language of flowers, Rudbeckia is said to represent justice: let’s hope there was plenty of this for Susan and her black eyes! Another name that is often used for this flower is coneflower due to their cone shaped centres from where the petals fall away like raindrops from an umbrella. One of the most popular forms is Rudbeckia Goldsturm (meaning gold storm in German), bright yellow perennial blooms of substantial height fire themselves from the stems at often up to 20 blossoms per plant. It is seen in many an award winning garden and the one to have on the top of your list. In America it is one of the most widely planted flowering plants and it’s not hard to understand why. RHS Wisley uses Rudbeckia in its long grass border, in this case Rudbeckia maxima sitting alongside Crocosmia Lucifer amongst others – another horticultural great seen in all the best gardens, you are nobody in the gardening world if Lucifer is not resident in your patch! A long lasting blossom and excellent cut flower, Rudbeckia provided inspiration to the great Louis Comfort Tiffany who used the flower in his designs. So if you can’t quite afford that Tiffany lamp for your home, why not settle for a few plants to light up your border this September? CS

whispering skills. The students used various techniques to gently relax and tame the foals. After six weeks, this incredible college literally transformed them. We couldn’t even get close enough to put a head collar on them before they left us! It was a real success, so we hope to be repeating the experience again this year. Once the foals had returned to us after their ‘life changing stay’, the Farm Park was winding down for the winter months and all of the animals on the display paddocks were moved off. Mike, our Livestock Manager, had already been to each field and opened the gates. The Exmoor ponies are placed four fields away, just off the Farm Park’s Wildlife Walk. As Mike let them out for the last time of the season, May the Matriarch knew just where to take her herd. And next year it will also be May’s foal following in her footsteps. I’ve been bursting to tell you all about our Exmoor ponies, but I thought it would be better to wait until we had some ‘baby news’. As a child, I was fortunate enough to have three of my own horses and they’re still firmly placed at the number one spot of my favourite animals ever. At the Farm Park, we currently have one stallion, Valerian, and four mares: Rainbow, Misty, Holly and May. May is the matriarch of the herd, she’s 24 years old and still going strong, but she’s the last one to “foal” this year. I was hoping to tell you all about it, but she’s still holding on! She’s due any day now. Every evening on the farm, we whizz around in the Polaris (which is a bit like a golf buggy), carrying the various feeds for the animals and moving the animals off the display paddocks (where our visitors can see them), on to the lay back paddocks, where they rest for the night. It gives the fields they’ve been grazing on all day a break as well. The Exmoor ponies are usually in the corner of the field, furthest away from us. When we reach them and it’s their

turn to move out of the paddock, we shout “Come on” and May will always be well ahead! You hear a thunder of galloping hooves and they all love to almost jump through the gate, all the way down to the bottom of the next field. It always gives me such a buzz when I hear horses gallop in a herd. Adam Henson (the boss!) has a soft spot for the Exmoor too. 35 years ago, Adam’s father Joe, who founded the Farm Park, asked him to choose a rare breed to introduce… two mares were brought to the farm directly from Exmoor and so the Cotswold Farm Park Exmoor herd began. Through successful breeding, they now have an excellent bloodline and have often been champions at the Horse of the Year Show. Last year, Adam made the decision to do something very different with our wild and frisky foals. He decided to send the four of them off to Reaseheath Equestrian Centre, which is like a horse equivalent to our finishing schools. After the foals had been weaned at the start of November, they were loaded into a trailer and delivered to the college in Cheshire, where they used our foals for students to practise their horse

Why I prefer nurture to nature every time and why milkshakes don’t have happy memories for me…

I’ve never really been very comfortable with the ‘c’ word; some people throw it into the conversation at any opportunity, but for me, the mere mentionof it makes me shudder. I am, of course, talking about camping. I just don’t get it. I’ve heard all the pros and I’ve lost count of the times the enthusiasts (or zealots as I call them) try to persuade me that camping is like no other experience. Well hallelujah for that. Have these people never visited a Mr & Mrs Smith hotel? I’ve got no problem being close to nature – just so long as it comes with a side order of fluffy towels and a chilled martini. Maybe I’m missing something, but lying on rock hard ground, freezing or boiling (there is no perfect temperature when camping) waiting for sciatica to kick in doesn’t feel much like fun to me. I blame my hatred of camping on my parents (obviously). I never liked roughing it, even at 10, and perked up at the prospect of a real treat – a visit to a café. (Remember I’m northern – it was a big deal for us); My frothy milk with strawberry cordial (or a milkshake as they called it back then, in the days before Frappuccinos and McFlurrys) came in a melamine cow cup, and my sister and I happily forced our straws down its plastic nostrils and guzzled our drinks. Anyway, said milkshake duly drained, we headed back to Kansas, sorry canvas. Ignoring my grumbling stomach I fell asleep, only to be awoken later (it was probably about 7pm – we went to bed

so early there was nothing else to do) violently vomiting into the hood of my sleeping bag. Using her trusty nail scissors to remove the offending article, my mum carefully carried it outside before hurling it into the night (and hopefully some smug camper’s tent). Reader, can you blame me for being such an avowed anti-camper? There is however one thing I hate more than camping – and that is glamping. Never have I objected more to a pairing of words than “glamour” and “camping”. It is an oxymoron, a concept employed by clever spin doctors and marketeers to fleece the middle classes, who think a stint under a tepee will transform their tech-savvy offspring into a cross between Bear Grylls and one of the Famous Five. Throw in a sheepskin rug, a rustic boule and a dozen organic

eggs and the Boden loving classes up and down the land fall over themselves to sweat or shiver under canvas. The local shop owners must rub their hands in glee when they see them coming: reusable hemp bags in hand, running into the stores to stock up on overpriced Sauvignon and “locally made” cupcakes (translation: from the Tesco basic range with the icing roughed up and artfully packaged in brown paper). Let me tell you something; the midges don’t care that you paid more for this gaff than a week’s all inclusive holiday in Greece; however expensive your barbeque, undercooked chicken will give you food poisoning and communal showers, well, there simply are no words to describe the hell. Look at it like this, camping is just nature’s way of promoting the hotel business... CS

BUT, IS IT ART?

This painting sold in June this year at Christie’s, London for £18.8 million. Ten years earlier it fetched $1.6m in New York, thus proving that art can be a very good investment. But is it art? Or perhaps the question should be, is it GREAT art? How can we distinguish between these “Graffitilike scrawls in the artist’s oeuvre” (Christie’s blurb for Basquiat) and the energetic scribbles of a hyper-active child. In my view, never before has a painting cast so much fuel on the perennial fire of modern art debate. I have nothing against graffiti, I like a lot of Banksy’s work and there are others who display his originality, painting skills, keen observation and wit. Is it art? Of course, and Banksy well deserves his celebrity. In a different vein, I like a public celebrity so often won lot of the work of David these days through extremity. Having only ever experienced some cheap, dodgy massages in South East Asia, I was very excited to meet Angelika and have all my stress relieved. Angelika warmly welcomed me; her salon is a very calming, relaxing place on the Promenade in Cheltenham. Having heard Angelika talk me through the treatment, from originally being fairly apprehensive, I was willing to try it out. So the massage began and the compact heated compress started its magic. It was pressed all over my back, with particular interest taken on my ‘knotty’ bits. I found the whole concept of this treatment slightly strange but I really began to relax and enjoy it with both the fragrance and heat of the compress having a really calming effect. Angelika took real care in applying the right amount of pressure to ensure that I would not be in any discomfort later. As well as this, she also offers facials, hands and foot massages and eyebrow and lash tint, offering a variety of different methods for different desired out comes. Legacy investments: TIME TO REVIEW? Brunsdon CEO Brian Morman explains why you should take a fresh look at your old investments Have you recently found something valuable that you’d forgotten about in a drawer? Or maybe you’ve come across a tenner in the pocket of a jacket you rarely wear? Whatever emotions are invoked, one thing’s for certain – the items will be exactly the same as when they were put away. Except of course that the tenner will be worth less now. A lot less, probably! And perhaps when you were rooting around in that drawer you rediscovered some old investment documents that had slipped your mind. Bonds, annuities – that sort of thing. Or you may receive annual statements for a venerable policy of which you have misgivings. Some of these you may have put to the back of your mind, or chosen to ignore, hoping that one day they would materialise as a fat cheque dropping through your letterbox. Now that’s what I call wishful thinking! Fifteen or twenty years ago, the world was a different place. Especially the investment world. We had the likes of Commercial Union, Yorkshire General, Norwich Union, Provident Mutual, Scottish Equitable, Allied Dunbar, Hambro Life, and so on. All gone now. Defunct, or swallowed up by the current major conglomerates such as AEGON, ZURICH and AVIVA. So the world’s moved on, but if you took out a With Profits or Managed Fund investment with any of these oldtime companies, they will almost certainly not have done so – at least not in some of the areas that should matter to you now, principally the actual investment of the funds and the charging structure. If you had one or more of these ‘legacy’ investments set up many years – even decades – ago, picture your lifestyle, goals and aspirations back then. Very different to what they are today, I’ll bet. Your old SEPTEMBER 2013

investment(s) would have reflected your life objectives as they would have been then (if indeed that aspect was even considered in those days). Fast forward to today and I almost guarantee your circumstances will have changed, but unless you have taken professional financial advice lately, your old investment(s) will still reflect your original wishes and investment choices. Whatever position those investments held in the rankings at the time are now likely to be totally meaningless. Even within a few short years, top-performing funds can drop out of sight! So if you are assuming that your money is still being invested wisely, think again. And that’s not all. The old-style charging structure will still apply. That means you’re not only missing out on modern fund selection and lifestyle profiling, but you may be actually paying more than you should for the privilege of having out-of-date investment(s). Isn’t it time you made them work harder? Isn’t it time you made sure they fit in with your current thinking and your plans for the future? Country Glamour

The Cotswolds has always given off an air of rustic glamour – and it’s this sense of glamour that attracts visitors from far and wide to our lovely corner of the world. Nowhere is that style more evident than near Broadway at Dormy House Hotel When we were invited to ‘unlock the Dormy’ we wondered what we’d find behind the doors of a building that’s been standing since the 17th century. Our nerves were unnecessary. A favourite Cotswold retreat for 35 years, Dormy House reopened last month following a £10 million investment. This former country farmhouse has been transformed into one of the most welcoming and beautiful hotels in the Cotswolds. With partners like Todhunter Earle Interiors, TV presenter and gardendesigner Chris Beardshaw, and renowned consultant chef John Wood all working on the project, the finished hotel was always going to make an impression. The exciting new look will be fully complete in early 2014 with the arrival of a brand new Spa, but the Dormy is definitely worth a visit before then. “When we talked about the plans for Dormy House, we wanted to create a place where people could say: this is like home but better!”, said General Manager David Field. “Whether they’re staying with us for a Cotswold weekend, visiting for a romantic dinner or simply popping in for a drink, all our guests should leave us with the desire to keep coming back.” The extensive renovations retain much of the hotel’s original charm – oak panelled beams, flagstone flooring, exposed Cotswold stone, roaring fires,

earthy tones and traditional local materials – whilst creating a glamorous new look for the next chapter in its history. Emily Todhunter, designer to the A-list and the Manoir aux Quat’Saisons, is behind the Dormy’s new look. Highlights include one-off pieces and bespoke fabric designed and made exclusively for the hotel. “I fell in love with Dormy House the first time I went there,” said Emily. “I don’t know if it was the way it is nestled into the hill overseeing that extraordinary landscape or because the staff were so friendly; perhaps it was the building itself, its warm Cotswold stone and roaring fires. It is a good, solid English farmhouse with no airs and pretensions to being anything else. Personally, I can’t wait to stay there!” Guests are spoilt for choice when it

comes to somewhere to relax. Three sumptuous lounges, The Red, The Blue and The Yellow, welcome them into their new ‘home from home’ and feature wood burning stoves, rustic benches and soft furnishings. When it comes to dinner, a large oak bar is the feature of The Potting Shed, the more relaxed of hotel’s two dining options, offering traditional British fare with a Dormy twist. The larger main restaurant, The Garden Room, can seat up to 80 and opens out onto its own garden terrace. “It may look like we’ve gone through some big changes but at heart we’re still the same Dormy,” said David. “We’re thrilled to be able to welcome old guests back to the hotel and invite new ones to experience the new Dormy with us.” So if you fancy a little farmhouse chic, this is what Dormy House is all about. Lakefest 2013 Returning for its second year, Lakefest was bigger and better than before PHOTOGRAPHY BY ROB WHEATMAN Celebrating a third annual music and water sports festival, Lakefest did not disappoint. With its array of fun and games for children, top quality acts and headliners, Lakefest boasted its biggest and most successful year yet. Over 3,500 people joined in the weekend’s activities at Croft Farm Waterpark near Tewkesbury, with the majority of Lakefesters camping or glamping. Highlights from the festival included the performance by 90’s Britpop band Ocean Colour Scene who closed Friday night and had the crowd joining in with their classic hit The Day We Caught The Train, the Levellers smashing an hour and half set on the Saturday night, and Chas & Dave performing an unbelievable finale as the closing act on Sunday night, followed by the fireworks to mark

an end to an incredible weekend. Lakefest also granted three wishes from the Wishing Line in aid of the charity Winston’s Wish during the festival; the first to Tanya Nash for her son and 3 friends to do water zorbing on the lake, the second to James and Ethan Broad who met the Levellers back stage as a birthday treat for James and finally the third to Janet and Simon who had a special meet and greet with Chas & Dave. With the autumnal months approaching, we yearn for the warming home comforts which keep the forthcoming frosts at bay. Soon enough, it will be time to dig out the slow cookers to produce

nourishing casseroles that comfort our cockles throughout the winter. But until then, let’s take the time to enjoy and appreciate a few other simple suppers in the lead up to the impending cold snap.

Crispy Pork Belly with an Apple and Cider Sauce Braised Savoy Cabbage with Smoky Bacon Crispy Pork Belly with an Apple and Cider Sauce

Makes 4 INGREDIENTS 1kg free-range boneless pork belly 2 onions, peeled and sliced lengthways 2 garlic cloves, chopped in half A bunch of fresh sage

500ml apple juice 1x 500ml local cider 1tsp Dijon mustard 1tbsp corn flour 1 chicken stock cube Olive oil Salt & pepper METHOD • Preheat the oven to 160°C • Lay the onions on the base of a medium-sized baking tin and scatter the garlic and sage leaves on top.

• Cut the pork into 4-square shaped portions and score the skin every 2cm and rub with olive oil and season with salt and pepper. • Position the pork skin side up in the roasting tin on top of the onions, garlic and sage. • Pour the apple juice and half of the cider into the roasting tin, cover with foil and place in the oven for 2½ hours. Check on the pork half way through cooking and add a little more apple juice if needed. • Remove the pork from the oven and

out of the roasting tin and place under the grill on a high heat until the skin crackles and turns a nice golden colour. • Meanwhile, position the roasting tin over a hob and turn the heat to medium. Mix the corn flour with a little cold water in a bowl until it reaches a smooth consistency. • Add this to the juices in the roasting tin, along with the stock cube and the Dijon mustard. • Stir in the remaining apple juice and cider and continue to stir until the sauce begins to thicken. Check the seasoning and add salt and pepper to taste. Braised Savoy Cabbage with Smoky Bacon

Makes 4 INGREDIENTS 1 small savoy cabbage, outer leaves removed 200g smoked bacon lardons 2 leeks, peeled and ends removed 2tbsp crème fraiche 1 handful of fresh parsley, roughly chopped 50g butter 50ml dry white wine Salt & pepper

as a bed for the belly pork with the apple and cider sauce drizzled around the outside.

INGREDIENTS

• Shred the savoy cabbage into 1cm strips and cut the leeks thinly and wash thoroughly. • Melt the butter in a large pan and fry off the bacon lardons for 5 minutes until golden brown. • Add the cabbage and leeks and mix all together. • Pour in the wine and season with salt and pepper. • Cook gently for 10 minutes until the cabbage is tender. • Stir in the crème fraiche and serve

4 apples 80g dark muscovado sugar 60g hazelnuts, crushed 80g raisons 2tbsp brandy 1tsp ground cinnamon Juice of ½ an orange For toffee sauce: 55 g butter 170 g muscovado sugar 150 ml golden syrup 150 ml double cream

METHOD • Preheat oven to 180°C • Remove cores from apples, scoring around the diameter with a knife. • Mix the sugar, raisons, cinnamon, brandy, hazelnuts and juice together in a bowl. • Place apples on baking tray and stuff the centre of each one with the mixture. • Cook for 20-25 minutes until the apples soften. • For the sauce, heat the butter, sugar and syrup in saucepan until the sugar melts. • Add the cream and simmer gently for 3-4 minutes. • Pour the toffee sauce over the apples and serve with a dollop of vanilla ice cream. Bordeaux-Undiscovered

Hi my name is Nick Stephens and through my love affair with Bordeaux Wines I established BordeauxUndiscovered. Bordeaux-Undiscovered is a Gloucestershire based online specialist wine merchants helping people to discover a range of handpicked wines at unbelievable prices without sacrificing quality. My selection of wines includes excellent examples from Alsace, Champagne, Gascony, and the Languedoc Roussillon but my heart is in Bordeaux. My focus is bringing food friendly Bordeaux Wines to the table and I have access to fascinating Bordelaise wines that are often made in quantities too small to be of any interest to the big chains of retailers. These wines have local cult followings and normally don't make it across the Channel due to the huge number of French enthusiasts who snap them up directly from the vineyards. Bordeaux’s smaller producers have been undergoing a quiet renaissance over the past few years and I pick out superb examples from choice chateaux that only insider knowledge can direct you to. These wines are well crafted and made to traditional methods handed down from generation to generation; often from organic vineyards and often by award winning wine makers. The one thing they all have in common is their versatility with food. Most people are astonished how the right selection of Bordeaux Wine when paired with the right food can make such a difference. I believe that food in the UK is going from strength to strength and that it's SEPTEMBER 2013

almost better than French cuisine but where we fall down is in our knowledge about wine. Bordeaux Wines are made for food and are therefore are very complex. It takes a while to appreciate that complexity and what it can do. I find that so many other wines on the market are one dimensional and although a glass of wine is enjoyable on its own when it comes to accompanying food the wine invariably masks the flavours and doesn't show either the wine or the food in its best light. Not only do I love good food but I love good wine and should you visit Bordeaux-Undiscovered's website you'll find a lot of information on both. I am trying to heighten people's awareness of food and wine pairing. It's not just a case of 'pair this wine with this food' as I try and explain the whys and wherefores. When I work with Food and Wine Shows up and down the country I

encourage people to buy their lunch and match a wine with their selected meal. The response I get is overwhelming as people are amazed what wine can do with food. Over the forthcoming months I will be writing a monthly article on wine and food which I hope will be enlightening, enjoyable and above all informative. Not just a bar Tershie Hayward reviews the new lunch menu at Soho Bar and Eatery in Cheltenham Being a Cirencester girl I never really ventured to Cheltenham for food, but being a big foodie I jumped at the opportunity to visit Soho Bar in Cheltenham’s Montpellier. I decided to take my mum (currently very stressed with my sister due to get married soon) for a treat to get her away from all the chaos of home and organisation. Just over a year ago Soho Bar opened and is already an established business. With a funky interior, with great modern decor it had a chilled, fresh vibe. The stacked up wine bottles along the walls were a particular favourite and really gave the restaurant/bar a slight edge. On arrival we were warmly welcomed by Stuart (the manager) and seated in the window. Stuart definitely looked after us well, promptly giving us menus and asking for the drinks order. The new lunch menu had just launched, giving a large range of food, from light

bites to proper pub grub to more upmarket food with varying prices. Although the selection is not massive we were very impressed with the variety the menu had to offer. Japanese cuisine is a favourite of mine and I was very excited to see Beef Teriyaki on the menu for a starter, so that was certainly a no brainer for me. Mum decided on the crab cakes. I ordered a Sirloin steak (rare - obviously) and mum ordered Bouillabaisse (which she was very excited to see on the menu as she hadn’t had it for years). When the food arrived it was impeccably presented and looked mouth-watering. We quickly tucked in, my beef teriyaki was exquisitely cooked, and just how I liked it (rare); the beef was of very good quality and melted instantly in my mouth. Mum really enjoyed her crab cakes, said they were just perfect for her starter. We

then moved onto our mains, which were hugely impressive, and once again very well presented; my steak being served on a wooden platter, and mums fancily stacked on her plate. I really enjoyed my steak and all the trimmings (onion rings, salad, and tomatoes). Unfortunately we couldn’t squeeze in any pudding, although the sweets menu did look very appetising there just wasn’t enough room. After having a quick coffee, we were shown the Champagne bar that had opened days before, a very swanky, chic room, with a nice view over Montpellier. With the bar open from Thursday to Sunday it’s sure to be a hit, especially with private functions. It is clear that Soho bar is trying to venture away from being ‘just a bar’ and bringing in a more versatile clientele by introducing a variety of food for both lunch and supper, by both improving the quality and presentation. Although the restaurant was fairly quiet, I think with the new and improved lunch menu it will definitely become the bustling lunch time spot that it should be. We had a quick chat with Stuart about Soho Bar; he said that although they are mainly a bar they are trying to aim to have a slightly fancier menu so that it can also be seen as a restaurant. As well as food Soho Bar also offers lots of delicious cocktails, with greats offers of 2-4-1 from Sunday to Thursday; certainly a deal not to miss out on. In safe hands John Search, Group Managing Director of JS Security, talks about their recent signing as provider of match day security services at Gloucester Rugby Club... Q. How did you win the contract? A.We already sponsor the stand at Gloucester Rugby Club and so it made sense for us to bid for the contract. The club put the contract out to tender and due to our level of experience and being based here in Gloucestershire it really is the perfect partnership. We are very grateful to the club and Managing Director, Stephen Vaughan, for all of their support.

Q. Is this the largest contract that you hold? A. This is the largest sporting and event contract we hold to date. It amounts to a six figure sum over the two year period and we will cover match day security (including the hospitality areas), car park security and any additional requirements for special events at Kingsholm. JS Security will be providing in the region of 20 security personnel on each home match day. Q. Will you be looking to recruit further to cater for the contract? A. We employ 80 people in total and would like to recruit further in the future, however, lots of our full time staff have jumped at the chance to work additional hours in order to be a part of this prestigious contract.

Q. Is this a new industry area that the company would like to explore? A. We cover event security anyway and have been very involved with Cheltenham Festivals for the last two years and so this complements that side of the business nicely. The majority of our contracts are based around security guarding and key holding. Q. When did you establish JS Security? A. I set the business up in 2006, SEPTEMBER 2013

We do cover such a wide variety of work, but having our core fixed jobs with security guarding has been very successful and now 600 contracts for key holding. Q What sets your business apart? A. Football season is here. One game in and everyone has already decided who has won the league and who are going to be relegation fodder. Manchester United, Manchester City, Chelsea, Tottenham, Liverpool all recorded opening day wins. By the time this is read more games will have been played so we will see the early progress. Arsenal, on the other hand, has suffered a defeat to Aston Villa and if you tuned into the sport radio stations for two days after, like I have, you would have thought they are the worst team in the land. No credit has gone to Villa for their efforts and it’s a massive overreaction in my eyes. Teams have spent six weeks preparing for the long season but football fans have very short sights, a generalisation I know but fair on the whole. Arsenal fans believe spending a few million pounds will be the answer to their prayers. The old band wagon is in full flow here with the North London supporters venting furiously towards the manager and the board for their lack of transfer activity. History is there to see that so-called 'panic' buys will not always cut the mustard. Clubs tend to be pressurised into paying premium prices for average players and end up being let down. I don't blame them for being a little cautious. I would be interested to hear the opinions of Portsmouth and Coventry City fans, two clubs that have recently been in free fall due to their financial problems. I am sure these fans may be a little bit slower in slating their respective board of directors after their overspending history. Our Shane Duff summer soccer camps have gone far better than expected and I am really looking to move forward and develop soccer camps

and multi-sports camps around the area. Mercedes-Benz of Cheltenham and Gloucester are coming on board to be a partner of ours and we look forward to having a good relationship with a well known local dealership. Keep your eyes peeled for details of our sports camps and school sessions. Feel free to recommend us to your children's school. I spent last weekend up at Lakefest, a festival hosted at Croft farm, Tewkesbury and have to say it far exceeded my expectations. I am

definitely putting in my diary for next year and I recommend you do the same. The whole weekend was jam packed with music and family entertainment. I will be grabbing my friends and neighbours to pack their tents and get up there. @duffo16

What’s your goal? Exercise + counting calories = Perfect recipe for successful weight loss without losing your mojo! I train a range of people who each have different goals and reasons for exercising. A common reason for training is to lose weight and tone up. And one thing is for sure... what you have to remember when you set this as a goal is that you need to make changes to your lifestyle. You can’t just go to the gym and then go home and eat whatever you like. Sadly the changes you dream of just won’t happen this way. Adding exercise into your lifestyle comes with a whole list of benefits, firstly it causes the brain to release feel good hormones, ‘endorphins’... about 15-20 minutes into a workout, peaking after about 45 minutes. So being regularly active is a great way to make you feel fantastic. Then as a result of exercising you will start to notice your clothes fit better than they used to and you catch yourself looking at your arms, legs, bum and tum thinking ‘that is starting to shape up nicely’! Great feeling hey? Sometimes you get to a stage where you feel nothing is improving for a while, you feel like you have plateaued and this can then be demotivating, which can lead to giving up and packing it in, concluding that it’s not worth all the hard work. Here are a few things to remember...

• Mix up your exercise so you don’t do the same thing every time you train. Variety is not only more interesting and will stop you getting bored of your exercise routine but it will also allow you to exercise different parts of your body. Try doing cardio one day and resistance training the next.

• Drink plenty of water. Stay hydrated. Don’t confuse hunger for thirst!

• If you have a smart phone try downloading a fitness app which will help you to think about what you are eating. A good app I like is called ‘My Fitness Pal’ it’s great at making you think about how much you need to eat to lose weight and it takes into account exercise that you do too. • Join a class of like minded people.
