Blasts From The Past Just a few of my favorite outtakes from past Entertaining issues.

I do not come from a family that cooks or entertains much, so I’ll never be completely clear about why I have such a passion for food and company, for memorable meals shared with friends. But there were some early signs. When I was young, my grand-aunt Carmen (undeniably the best cook among us) would often have everyone over for Sunday supper, where she served homemade Parker House rolls slathered with farm-fresh butter. I devoured them and can still smell them today. And in my nascent school years, my teachers Mrs. Bailey (kindergarten) and Miss Baker (first grade) spoiled me after class with buttered saltine crackers served on a little plate. I felt very privileged and fancy—and completely oblivious to the carbs-and-butter theme that was taking form. ■ Today, I am by no means fearless in the kitchen, but I’ve attempted everything from budín Azteca and Venetian shellfish stew to Julia Child’s meringue and buttercream dacquoise and, last December, a birthday dinner for 20 celebrating my partner’s mother’s 90th birthday. I no longer fret over what Ina Garten might mean by “good” olive oil, bemoan the fact that my piecrust never, ever turns out the same, or question why the urbane, metrosexual television host and actor Stanley Tucci seemingly can’t find Italy. (We’ve all been there, Stanley!) I’m braver now. I can’t wait to try out new recipes, set the table in a different way, serve a fresh take on an old standard. I think about the Parker House rolls and the crackers, the love that was expressed by them, and that’s all that matters.

21 Again The opening night gala of the 21st Hampton Designer Showhouse presented by HC&G reminds me of my 21st birthday party during college in Glasgow, Scotland. It was a swell evening, filled with lots of students (perhaps too many!) chowing down on rapidly disappearing platters of cheese and nuts and the rhythmic clanking of beer kegs. Then the doorbell rang. I answered to find an older high school friend, long decamped to London and now an architect, standing on the step. He and his chic girlfriend were almost hidden by the largest bunch of flowers I had ever seen. The noise behind me faded as I accepted the exquisite bouquet, bound with ropes of silk and raffia. Its extraordinary simplicity stays with me still. ■ That night my love for interiors, gardens, antiques, entertaining, and over-the-top table decor was born. Not surprisingly, HC&G’s annual entertaining issue is one of my favorites, and it’s out just a few days before the great reveal of the newly decorated rooms at the Hampton Designer Showhouse on August 13. ristina Felix grew up in a MexicanAmerican enclave of Aurora, Illinois, but her “kernel to masa” journey didn’t begin in her family’s kitchen. After earning an MFA in studio art and transmedia, she received a grant to work with textile artists in Peru, where she connected with families by foraging for food and sharing meals in their homes. “I realized that the art I was making didn’t communicate as directly as the food we were sharing,” Felix says. “I began to ask questions about my foodways and what was lost from my Mexican heritage.” Having shifted her career focus to cooking and growing delicious food, Felix now works as an assistant to East Hampton–based cookbook author and Barefoot Contessa host Ina Garten, who “indirectly inspired my tortilla venture after I made her a breakfast taco, something she had never tried and loved so much that she included it in her cookbook Modern Comfort Food.” The experience jump-started a conversation about store-bought tortillas, “which just aren’t that great and should be better, considering that they are the basis of most Mexican cuisine.” Her curiosity piqued, Felix did some research and came across a company called Masienda, a supplier of organic corn that “imports incredible varieties from Mexico. I began to order 55-pound bags.” From there, she started experimenting with nixtamalization, a Mesoamerican process of cooking and steeping corn kernels in an alkaline solution of water and lime, which are later drained and hulled and then ground between volcanic basalt discs to form masa dough. “This is indigenous, ancient wisdom,” says Felix. “It keeps me interested in the connection to my heritage.” Working out of her East Hampton studio and kitchen several days a week, Felix makes masa tortillas with a host of colorful corn types and sells them both to private clients and at the Springs Farmers Market on weekends under the label House Masa. Cooking the corn in the calcium hydroxide solution begins the nixtamalization process. After

letting the corn sit overnight, Felix drains and “washes away as much of the skin as possible, which makes for a more pliable, pillowy dough.” She then puts the corn into the hopper of a Molinito tabletop mill (a revolutionary design, also sourced from Masienda), where the kernels are ground by removable basalt grinders. “Something happens with water, nixtamal, and basalt,” Felix says. “You know you’ve got it just right when the masa comes out warm and comes together really easily.” The masa dough is then kneaded with the help of some water and a stand mixer, rolled into golfball-sized spheres, and then flattened in a tortilla press. “I cook the tortillas on a hot comal or cast-iron pan for a minute per side, depending on thickness.” Her artistic background comes into play with the wide range of colors and textures of corn that she uses to make her tortillas, including ocotillo amarillo (yellow corn from Oaxaca), mushito azul (blue corn from Michoacán), and xocoyul rosado (pink corn from Tlaxcala). “The pink corn from Tlaxcala is a bit heartier, with different terroir notes typical of corn varieties grown near volcanic soils,” says Felix, who has also been experimenting with local grains grown by Amber Waves Farm in Amagansett. “Every time I make nixtamal, I learn something new. I’m still trying to crack the code.” —Doug Young

Caviar Dreams Caviar and potato chips offered the perfect salty foil to Seybert’s grower Champagne tasting, which she held in advance of a farmto-table luncheon. “Champagne is always festive,” Seybert says, “and I am fascinated by grower Champagnes, which are made and bottled by the same people who grow the grapes, rather than one of the big Champagne houses.” The napkins are Seybert designs; the potato chip bowl is by Michael Aram. BLUEBERRY CORN BUCKLE ½c . (1 stick) unsalted butter, cut into pieces ¾ c. granulated sugar 1¼ c. all-purpose flour 1 tsp. baking powder ½ tsp. kosher salt ½ tsp. ground cinnamon 2 large eggs ½ c. sour cream or full-fat yogurt 1 tsp. vanilla extract 1 ear fresh corn, shucked 1 pt. blueberries, washed, blotted dry, and picked over for stems 1 T turbinado (raw) sugar

What’s In A Name? A buckle, essentially a coffee cake that “buckles” with lots of fruit, is similar to cobblers, crisps, crumbles, grunts, slumps, sonkers, betties, and pandowdies—all of them made with fresh fruit and basic pantry ingredients.
Preheat oven to 375°F. On the stovetop, place a 9- or 10-inch cast-iron skillet over medium heat and add the butter. Swirl the pan frequently until the butter turns nut-brown and smells toasty, about 2 to 5 minutes. Immediately transfer butter to a medium bowl and set aside to cool slightly. Keep the skillet (now buttered) standing by. In a large bowl, combine sugar, flour, baking powder, salt, and cinnamon and whisk to combine thoroughly. Set aside. Add eggs, sour cream or yogurt, and vanilla to the bowl with the butter and whisk to combine thoroughly. Using a box grater, grate the ear of corn over a plate and whisk the corn into the wet mixture. Using a rubber spatula, fold the wet mixture into the dry until thoroughly combined. Transfer to the buttered skillet, top with the blueberries, and sprinkle raw sugar across the top. Bake for 40 to 50 minutes until a toothpick inserted in the center comes out clean and the cake is deep golden brown on the edges. Let cool 10 minutes. Serve with crème fraîche or ice cream, if desired. Serves 6 to 8.
