Chairman, Count Basie Theatre Board of Directors & Trustees Dear Patrons and Friends, Welcome to the Count Basie Theatre. You are joining us at an incredibly exciting time. The Basie has become a pillar of New Jersey’s performing arts landscape and a key driver of economic activity in Red Bank and the surrounding area. Notably, • The Basie delivers over $17 million of direct economic activity to the region annually. • Our outreach programs and classes held at partner schools reach more than 500 students annually. • Our Performing Arts Academy offers 100 classes a year to more than 1000 students. • Our Bus-In program bussed in over 4,000 children from Title 1 and Abbott school districts in Monmouth County to three diverse cultural performances on the stage. • Approximately 200 performances at the Basie, across many genres, will attract 200,000 people in to the theatre this year. While we have lots to do, we believe that the Basie is well positioned as it continues to pursue its mission as a regional center for arts and education, providing high quality entertainment and education (our education programs remain the soul of the Basie) in a world class venue. In furtherance of this mission in May, the Basie’s Boards of Directors and Trustees took a number of important steps: (1) We approved an extension of our contract with CEO Adam Philipson, who has energized the Basie since his arrival a little over 18 months ago; (2) We approved a new, comprehensive three-year strategic plan (thank you Michael Parent, Peter Seligman and the rest of the Strategic Planning Committee), designed to -- under Adam’s direction -- move us towards becoming a true regional center for arts and education, with expanding space and services to allow us the privilege of serving more people than ever; and (3), we approved a 2015 fiscal year budget which we will continue to invest in the building (better bathrooms and air conditioning are coming!), terrific programming, and our education programs. The Basie, a recognized 501(c)(3) nonprofit organization, relies on the support of many people and organizations, including our 1,600 members, corporate sponsors and others throughout the community. We will need all of your support and more as we embark on our strategic plan. I am very much looking forward to our annual summer gala this month, starring Ringo Starr and His All-Starr Band onstage, and honoring great Basie friends and supporters Tracy and Nick Brown. I hope to see many of you there, and I hope the event raises lots of money for our building and community programs. Thank you again for your continued support, and enjoy the show.

JUNE 26 & 27 • 8PM In 1989 Chazz Palminteri wrote a one man show about a killing he saw in the Bronx when he was nine years old. He performed it at a little theatre in Hollywood California. It became a hit and the most sought after property since Rocky. With only two hundred left in the bank and million dollar offers, he refused to sell his play unless he played Sonny and wrote the screenplay. He held out and got his wish with Robert De Niro. H istory On July 29, 1925 the Red Bank Register reported that Joseph Oschwald of Little Silver announced plans to build a Theatre on Monmouth Street for a partnership of Joseph Stern of of Newark, thethe Burns and with Joseph Stern Newark, Burns and Schaffer Amusement Co. and Walter Reade, then New Jersey’s largest theatre owner. The property and the rights of way for Kathy Dorn Severini DBA Dorn’s Classic Images. Used by permission. the land were purchased for $21,000, the projected construction cost was roughly $300,000. Ground was broken on December 9, 1925 and the Theatre opened on Armistice Day, November 11, 1926. Opening night was a grand affair, headlined by a vaudeville performer, the feature film “The Quarterback,” starring Richard Dix, Carlton’s News Events and a ten piece orchestra. That summer and fall, the plan was to use the Theater to try out musical comedies and other shows to be produced in New York. Admission would never be more than 75 cents for movies and vaudeville shows. First known as the State Theatre (the initials “ST” are still inscribed on the peak of the building’s façade). The Theatre’s name was changed twice, first to the Red Bank Theatre and then to the name it operated under for over four decades, the Carlton Theatre. The Red Bank Register reported that the new Carlton Theatre, “…is a marvel of beauty, convenience and comfort. Outside and inside it is an architectural triumph. Color and light are two of the outstanding features of the new building. Thousands of electric lights stud the ceilings and sidewalls. In the center of the building is an enormous dome-like sunburst illuminated with a myriad of concealed lights. A very large glass chandelier is suspended from the center of the dome. The interior of the Theatre is rich with colors harmoniously blended. The furnishing are rich in velours and velvets in contrasting shades.” A grandly painted vaudeville curtain, still in use today, filled the proscenium arch. The Theatre was privately owned and operated for almost 50 years, until 1973, when an anonymous donation made it possible for the Monmouth County Arts Council to acquire the building for just $96,665 and preserve it for cultural uses. It operated as the Monmouth Arts Center until 1984, when it was renamed in honor of jazz pianist, composer, band leader and Red Bank native William “Count” Basie (1904-1984). On June 30, 1999, the Count Basie Theatre, Inc. was established as an independent nonprofit corporation to maintain ownership and manage, program and preserve the Theatre for the benefit of the community. In 2004, the first of a 12-phase, $21.5 million renovation began with the purchase and installation of brand new historically accurate Theatre seats. In 2008, the auditorium, lobbies and Carlton Lounge were renovated and restored. In 2011, the façade and marquee were restored and the Theatre was named to the National Register of Historic Places. Total expenditures on capital improvements have totaled $12 million to date. Although the current schedule is composed of “live” music, dance, theatre and arts education performances, much remains the same about the building. Almost 200,000 people a year attend events at the Count Basie Theatre. In an age when we communicate and entertain ourselves through media that its founders could not have even imagined, their Theatre is still the place where people go when they want to be entertained and enlightened in the company of their neighbors. From celebrity chef to food truck proprietor, Andrew Zimmern has conquered the culi Showtime about his dream dinner, world peace… and pork roll. You’re known as the host of Bizarre Foods, but the foods you encounter may only be bizarre to the American palate. What’s another culture’s “everyday cuisine” that you’ve come to love? We’re constantly eating and constantly exposed to so much good stuff, only a small fraction of which winds up on the screen. Generically speaking, tiny, fried little birds of all kinds are in my top three. Many nations from all around the world - Africa, Asia South America - do it, but we just don’t in the U.S. Whether it’s baby chickens, ducklings, or little sparrows -- the Vietnamese, Cambodians, Thais, and other jungle markets -- the little ones are seasoned, fried and then sauced with lime juice, palm sugar, and fish sauces, and chilies … that’s as good as food gets in my opinion. The same thing with exotic shellfishes. We are obsessed with clams and oysters in terms of bivalves, but there are limpets and abalone (sea snails) that are just as plentiful in our oceans, and they’re equally if not more so delicious. And in many parts of the world, there’s these little larva that come up out of the sand at the water’s edge -- they’re known as sea cicadas. They look like shrimp without their heads, and fried whole they taste like a cross between shrimp and lobster. Last November, the Food Network aired the New Jersey edition of your Bizarre Foods America series, and you extolled the virtues of pork roll. Yet anyone who leaves the area will tell you – you can’t get it anywhere else. How does regional cuisine remain so… regionalized, despite it being so delicious? Because one of the most sorrowful human frailties that we practice is contempt prior to investigation. We have shortened and minimized the number of items that we’ll eat, to the point where we have damaged our food system almost irreparably. Eating only luxury cuts of three or four animals only eating three fish out of the ocean, only eating five-six vegetables -- I mean, it’s just awful. You see the same thing with these regional foods. We pretend to be accepting and tolerant and understanding of other foods, yet we won’t try them. To give you some examples: turtle soup and scrapple in Pennsylvania, livermush in North Carolina, and pork roll or Taylor Ham in New Jersey. It’s why I’m doing the show I’m doing and why I feature those food items in my shows -- to try and break down those walls and get people to accept that those foods are fantastic. This is a true story, and you could probably relate to it in New Jersey with Taylor Ham. In Shelby, NC, I did a story on livermush. It’s like scrapple, but it’s a little softer, and every restaurant in town serves it on the menu. There’s even a livermush festival -- thousands of people show up to eat livermush. It’s like cartons of milk -- it’s literally in every place you intersect with food in that town. We drove about 15 minutes outside of Shelby, crossed the county line and stopped at a gas station to get stuff for the cooler and the crew. I asked if they carried livermush. At first, they didn’t say anything; finally, they just looked at me said “What’s livermush?” As for pork roll, I never heard of it until a Jerseyite exposed it to me. I grew up three miles from where from where pork roll is worshipped as New Jersey’s gold, and yet, I’d never heard of it.

BAZAAR OF THE BIZARRE (CONT.) Food has infiltrated pop culture over the last 25 years, from the Food Network, the Cooking Channel, to various magazines and bestsellers. You’re a big part of this – you’ve conquered television, radio, the written world and the kitchen. How did you get to this point? It’s a couple of things. I grew up in New York City, so I was surrounded by all of these food luminaries from the 1960s and 70s. My mother had gone to college and roomed for four years with (famed restaurateur) “Trader Vic” Bergeron’s daughter, and she learned to cook from Vic himself in San Francisco. My father was in the international advertising business, so I traveled with him around the world. He’s a larger than life character – and he taught me the value of a good story. I already knew I’d be in the food business, and lo and behold, in mid1970s America, there’s a food explosion – a huge boom. The antecedent of what New York City is today was born from those years in the early 1970s, when there was more to great cooking than fancy French food. I spent the next 15 years of my life learning as much as I could, knowing and understanding the need of marrying food with the idea of what it meant to tell a good story. And now, over the last 20 years of my life, I’ve become more and more convinced that we live in a divisive and argumentative world, where we’re constantly defining ourselves by the things that separate us – our sexuality, our religion, politics… skin color. And I think that there is nothing that can start a conversation better than the things we have in common – especially our love of food. Everyone always says that math and science are our great cultural commons, and I think food is our third and most important. You take away someone’s quadratic equation or their boom box, they may punch you in the face – but if you take away their rice or their bread, there’s going to be blood in the streets. America goes through its food PHASES – food trucks are hot now, ballpark cuisine has gone gourmet, Thai food exploded in the ‘90s, sushi in the ‘80s. What’s next for the popular American palate? I actually wish we’d start enjoying the people of other countries more, rather than their food. The pop culture of 2014 America is that we love the foods of many countries. Ecuadorian food – we thinks it’s delicious. But we’re not so sure about Ecuadorian people. We have no greater love affair in this country than we do with Mexican food, but we have a huge Mexican population here in America, and if you’re out and talking to them, they’ll tell you they feel disenfranchised in many areas of their lives. My biggest hope for people is that we use food as a bridge to get to know other cultures, and accept and love their people the same way we readily accept and love their food.

You’re coming to the Count Basie Theatre this August to headline “Appetite – A Gastronomic Experience™.” What is Andrew Zimmern’s most outrageous gastronomic experience? You have two hours, and everything you could ever wish for. I’m at Lalonamu Beach, on the island of Apia in Samoa. It’s my favorite beach in the world. I think it’s fun to forage my own food, so I’ve got a knife and a net and a Hawaiian sling, so that I can grill reef fish and catch the wild lobster and shrimp that are there. Tropical fruit is hanging from the trees right across from the beach. So that’s all taken care of – it’s like a Robinson Crusoe meal. What I’d have brought to me is a 120-day, dry-aged sirloin from a friend’s farm in Kentucky. And I’d would want a big bucket of cherry stone clams on ice – it’s the one thing they don’t have in the water in Samoa that I would want to make sure that I had. And then, my grandmother would rise from the dead and make me her roast chicken. That’s very sweet. Well, she made the best roast chicken in the world. But since this is my fantasy, the oven would need to magically break 15 minutes earlier than her timer was set for so she wouldn’t overcook it.

Ingredients • • • • • • • • • •

2 cups fresh arugula 1 garlic clove 1/2 cup plus 2 tablespoons olive oil 1/2 cup freshly grated Parmesan 3/4 teaspoon kosher salt 1/4 teaspoon freshly ground black pepper 1 pound jumbo shrimp 1 pound spaghetti Lemon zest, for garnish 10 parsley leaves, chopped, for garnish

Directions Blend the arugula and garlic in a food processor until finely chopped. With the machine running, gradually add 1/2 cup of oil, processing until well blended. Transfer the pesto to a large bowl. Stir in the Parmesan. Season with 1/4 teaspoon salt and pepper, to taste. Prepare the grill (high heat). Using a knife, cut the back of the shrimp. Brush the shrimp with oil. Sprinkle with remaining salt. Grill the shrimp until just cooked through, about 3 minutes per side. Transfer the shrimp to a plate. Meanwhile, cook the pasta in a large pot of boiling salted water until tender but still firm to the bite, stirring occasionally, about 8 minutes. Drain, reserving 1/2 cup of the cooking liquid. Toss the pasta with the pesto in the large bowl to coat, adding the reserved cooking liquid 1 tablespoon at a time to moisten. Top with the grilled shrimp. Garnish with the lemon zest and parsley.

Blues and brews dominate day #3 of APPETITE™ on ‘Jersey suds from the Garden State’s crafties What’s a Jewish guy to do on Christmas Day? Build a site about beer, of course. Mike Kivowitz, president and founder of New Jersey Craft Beer (newjerseycraftbeer. com) , says he was laying on his couch – and possibly inebriated – when he came

up with the idea. Today, it boasts thousands of card-carrying members, each of whom pay $25 a year for access to deals at the state’s top beer stops, breweries and watering holes. For Kivowitz, it’s not just a job – it’s a passion.

“I lived in North Jersey for most of my life, Kivowitz says. “Once I got married, we moved back to where my wife grew up, and I had no idea where to find good beer, or where to drink good beer. I looked over at my wife and said, ‘I’m starting something today,’ and I did. I built the site.” Memberships and participating vendors continue to grow, while thousands of followers on social media get up-to-the-minute scoop on the Garden State’s top stops for hops. “I realized I lived ten minutes away from some of the best beer bars around, but no one really knew about them. So I decided I’d help get the word out – I drink good beer, and I drink good beer in New Jersey. I prefer to stay local and give my hard-earned money back to these local businesses.” New Jersey’s affection for ales and love of lagers has exploded. “Years ago, when I started drinking good beer,” he recalls, “good beer was few and far between. But in the last three years, the number of available breweries and beers – I don’t even think tripled is the right word. More people are going out, buying good beer at the store, and traveling and exploring for good beer.” “And people are asking for more and more variety,” Kivowitz continues. “At this point, you can go out and try a new, different, good beer every day.” You’ll notice he rarely says “beer” without the adjective good – so it begs the question: What makes a good beer? For Kivowitz, it’s all about artistry.
