Can breeding bring industry tangible taste benefits?

Eating quality is a key issue for the UK pork supply chain. This lean, efficiently-produced versatile red meat certainly satisfies market demands for high welfare, low environmental footprint and value, but the eating experience is unpredictable – a factor many believe is negatively affecting consumer confidence.

Pigmeat consumption continues to decline year-on-year. Statistics from market analyst Kantar show retail demand for pork fell 2.2% (August 2023 to August 2024). AHDB Pork also estimated

an overall 2% drop in demand for 2024. Overall demand has fallen 4% since 2019 and this continued trend is a clear indication that although competitively priced, and ethically produced, pork is not capturing much consumer interest.

Production economics, poor retail prices, together with continued market volatility, has forced producers to focus on optimising lean growth and feed efficiency – objectives that have raised productivity (days to slaughter) and, when prices allow, improved farm gate returns. However, critics say this continual push for faster

growth and leaner carcases is having a negative impact on eating quality.

The decades-old method of classifying UK slaughter pigs must also be considered. The grading system used to define carcase quality still relies on a P2 back fat probe measurement, and apart from the addition of meat percentage analysis during the mid-1990s (Autofom etc.), it has not changed in more than 30 years. Prices paid to the producer (£/kg deadweight) are still determined by the ‘absence of fat’ rather than the presence of beneficial eating quality traits, such

as intramuscular fat (IMF), texture and tenderness. Critics say that although the P2-based system has certainly helped to deliver ‘standardised’ leanness across the whole production base, it is now outdated and compromising pork product development in areas that could benefit ‘cookability’ and the overall eating experience. An increasing number of producers, both independent and corporate, are now exploring how eating quality can be improved at a more fundamental level. Breeding programmes using genotypes known to have higher IMF are being

reviewed and the launch of Marks & Spencer’s Heritage Gold brand during Autumn 2024 was a game change for the UK pig industry. Flavour is the focus of this brand with a clear pledge that this pork will deliver an exceptional eating experience because the pigs producing it are specifically bred to do so.

Heritage Gold builds on M&S’s renowned high-welfare, quality-assured credentials, which are referenced on-packs and throughout its cross-media campaign – endorsed by TV

chef Tom Kerridge. However, the principal HG message is about eating quality and how modern pig production can deliver better tasting pork if it uses the right pigs. The TV/social media advertising features Chef Kerridge visiting a picture-perfect outdoor herd. The high-welfare aesthetics are attractive, but the conversation is about traceability and taste. There’s a strong emphasis on the ‘bred for better flavour’ breeding strategy and how it can deliver good pig performance and juicy, flavoursome pork.

Enticing innovation

On the shelf, Heritage Gold products are well presented. The words tender, succulent and 100% traceable are boldly emblazoned on the label. The outdoor-bred reference is more faintly stylised. The product looks appetising and the trimmed loin steaks are marbled, with a rich colour, firm texture with no fat/lean separation. When grilled they hold their shape, have minimal drip and remain juicy.

Food product developers have said this brand is an innovative breakthrough that offers the pig sector new areas it can explore to entice consumers back to pork. Comments include:

• A great addition to the meat aisle. Could the same ethos be applied to other red meats?

• ‘So good to see new product development in the meat category, particularly with pork.

• ‘It’s great to see companies like M&S working with suppliers and pushing innovation with traditional lines.

• ‘It’s wonderful M&S are focusing on breeds that can deliver better tasting pork, the marbling’s yummy!!

The processor supplying M&S has been studying genotypes that have higher IMF levels for some time. The genetics used to supply the HG chain are understood to be of US Duroc origin, with a proven heritability for IMF and other superior eating quality traits. Growth rates and performance are comparable to the commercial genotypes currently being used by its contracted farms and the production economics are said to be similar.

Many niche market pig producers prioritise IMF within their own bespoke breeding programmes, but until now very few mainstream multiple retail contracts have been confident enough to alter their specifications. M&S’s decision to breed for taste is significant and other retailers are exploring opportunities to do the same.

PROCESSOR VIEW

The fundamentals of flavour and pigmeat eating quality are rooted in the genetics surrounding IMF and the UK pig industry must learn to exploit these highly heritable, economically valuable traits. Consumers want healthy, sustainable, ethically-produced pork, but they expect it to taste nice, too.

Fat – a fundamental quality worthy of investment

Fowler Brothers, an independent multispecies abattoir, meat wholesale and butchery business based in Essex, has been processing US Duroc-based slaughter progeny for more than a year. The pigs are sourced from farms in East Anglia and are reared in straw-based and slatted production systems. They are 100% traceable from farm to fork, and the quality standard is consistently high from all suppliers.

Darren Taylor, Director at Fowlers, manages pig procurement. He says this genotype has impressive carcase traits and the pigs he is buying are of a uniform quality with a high meat percentage across all weight ranges. Carcases – which are mostly sired by Jersey Red boars – have an even fat covering with P2 measurements below 12mm and all cuts display exceptional marbling. Most of these carcases achieve A grades and they cut

down well with minimal waste and no drip loss. Darren says the pork is firm, with a good texture and easy to work with.

“The kill out percentage of this breed is fairly standard across a 65kg to 90kg deadweight range. These pigs consistently deliver pork with an exceptional eating quality because of the marbling. It’s a great product to work with, the quality’s consistently superb, which is exactly what we want – meaty, premium pigs we can rely on,” he adds.

Most of the Jersey Red carcases processed at Fowlers do attract premium prices and are earmarked for high-end retail and food service outlets in London and surrounding counties, the South East and East Anglia. Feedback from customers is outstanding, who say the pork has superior flavour and tenderness and that it cooks beautifully.

The BPA has always recognised the individual identity of the breeds within the association. Uniform gains from genetic deviation

US-origin genotypes deliver production consistency and higher carcase value

Improving meat quality was not a key objective of Parham Pigs decision to invest in new genetics. However, switching its herd to a new breeding programme that features US-Duroc lines, has delivered significant benefits on the farm and on the hook. Carcase quality is noticeably better, but it is the uniformity of all pigs throughout the production process, that’s now driving business efficiency forward and improving profit potential.

The 320-sow breed-to-finish enterprise is part of an arable-pig business that Robin and James Brice manage in partnership with the Kindred family. The Suffolk-based business ranks alongside the top 10% of UK herds and records show it is currently weaning more than 30 pigs/sow/year, with rearing herd mortality (birth to 110kg) around

12%. Productivity has always been good here, but in recent years variability in the finishing herd increased and was proving difficult to counter.

“We’ve achieved good breeding performance for several years. Our sows were delivering good sized litters, which is largely due to our dedicated and skilled staff, but piglet quality was becoming unpredictable. Some litters were strong, with uniform pigs, while others lacked vigour and were uneven, and this made management challenging, particularly post-weaning,” says Robin.

The Parham herd runs a 3-weekly batch system weaning pigs at four weeks of age. Biosecurity is paramount and routine vaccinations for PRRS, EP and PCV2, maintains a stable health status.

A critical examination of the entire production process established that nutrition, housing and herd health were functioning well. Investment was also made in new farrowing accommodation along

with some dietary alterations to post-weaning and finishing rations. However, performance improvements were marginal and variability persisted.

The decision to try Jersey Red sire line genetics, supplied via AI from Glenmarshal Sires (UK) Ltd, produced some impressive results, with visible differences seen in piglet vigour, uniformity and survival rates. James manages the farrowing and lactating sows and says the Jersey Red litters were stronger and more evenly sized from the outset, with slightly better birthweights.

“These piglets thrived from birth. They were keen to feed and even the smaller ones fought to get on and suckle. This genotype is robust, with a good appetite and will eagerly take creep at 10 days old. The mortality in that first batch of progeny was also significantly lower, compared with the litters sired by our previous terminal sire,” he explains.

Big decision

Deciding to change the breeding programme took considerable confidence. Parham had been committed to its previous genetics supplier for 30-years and the relationship had delivered exceptional reproductive performance. However, Robin says the inconsistency in the rearing herd was proving relentless, and it was compromising herd efficiency and business economics.

“Prolificacy has never been an issue here and we’ve worked hard with our gilt breeding programme to push sow productivity to give us decent numbers born and weaned. I just felt we were lacking something, and that this variability problem was linked to the genetics,” Robin explains.

Many of the genotypes used by UK breeding herds comprise a diverse blend of genetics and Robin thinks that these hybridised, synthetic lines might, in some way, be responsible for the variability often seen in rearing herds.

“Before we changed our breeding programme I spent two years researching what the genetics companies had to offer. We also examined every aspect of our management and invested in new accommodation. But changing our genetics answered a lot of questions and I do wonder if the synthetic breeds we’ve come to rely on is creating variation in our slaughter generation. Variability didn’t seem to be much of an issue when commercial herds used F1 females bred from purer parent lines. That’s why we’ve moved back to these principles,” he explains.

The Genesus breeding philosophy is more aligned to pure line breeding. Its dam lines are selected from high-prolificacy Large White and Landrace lines, while its terminal sires are selected for high performance, high percentage meat yield and superior eating quality traits.

Parham’s breeding herd was completely closed 3 years ago and has been following a Genesus replacement breeding programme for just over 2 years. A small pool of pure landrace sows (8% of the herd) is maintained to produce LW x LR parent (F1) gilts. Between 12 to 16 potential F1s are produced in each batch farrowing. They are reared on a specific gilt programme and fed a bespoke gilt diet, formulated by independent nutritionist Alan Ford, that prioritises slow, steady growth to build body reserves and promote fat deposition. Robin expects all selected F1s to have 14 to 16 teats, good leg strength, a deep frame and sound feet.

His target is for them to be 150kgs liveweight at 260 days of age before they are served. He says the additional costs of labour, feed and accommodation associated with rearing a more mature gilt are outweighed by the advantages gained to long term productivity.

“I’ve been rearing gilts this way for 20 years and it’s never let me down. Our sow retention rate is good across 6 parities, we rarely cull young females and our gilts have excellent conception rates. Livebirths are between 13 and 15 pigs a litter and they will comfortably rear 13.5 to 14 piglets to 28 days,” he adds

Prevailing consistency

All Parham’s finishing pigs are now sired by Jersey Red terminal lines and the quality and uniformity of rearing herd is outstanding. The slaughter progeny is robust, grows fast, and there’s no aggression.

“This genotype is easy to manage. Batches are consistent, performance is on track and total herd mortality is coming down. We’re currently at 12% from birth-to-sale and confident we’ll reach our 10% target. Overall, our production is much more

uniform now, and consistent in every age group. It’s the best we’ve had in years,” says Robin.

The foundation of this herd’s prevailing pig quality is evident from the start. In the farrowing house the litters are evenly sized. Birthweights are good, with very few unthrifty piglets, which James says makes management much easier.

“Fostering and sizing up is not too difficult as all the piglets are healthy and strong. Even those we call our ‘going behinds’ – the tiny ones that get pushed out and lose order – are feisty. This genotype certainly has an appetite for life,” he adds, wryly.

Records for the most recent 8 batches show sows achieved an 87.12% farrowing rate and produced 14.86 piglets a litter. They averaged 14.18 pigs born alive and weaned 13.19 at 28 days. Preweaning mortality for the whole herd is between 6 and 7%.

change in performance. We’ve had a few scours in recent months, but we’re managing it,” says Robin. All piglets are sexed and sized into groups of small, medium and large at weaning. The nurseries and rearing/finishing accommodation are slatted and environment-controlled with fan ventilation. The buildings are well maintained with good air quality and all pens have ad lib feeders and enrichment.

Piglets are fed Primary Diets Initiate 4 creep feed in the farrowing pens from 10 to 21 days of age, before Progress 2 is introduced gradually a few days before weaning. They stay on this diet for up to 7 days post-weaning, before being moved on to Progress 5. For added reassurance, the smallest pigs are reared separately and given Adicare during the post-weaning period to support gut health and development, which is top-dressed on their feed. The team had concerns about removing zinc from first stage diets, particularly with more vulnerable pigs, but using this plant-based, high-fibre, high-energy supplement seems to help stabilise the gut and control any potential scouring.

Cost savings and A-grades

Parham’s home-produced feeds are introduced before the pigs move into the finishing house. Made from home-grown cereals and top quality bought-in crops and concentrates, the rations are prepared using a Caravaggi mobile mill and mixer.

Purchased last year, this investment was more cost-effective than upgrading the farm’s somewhat vintage feed mill.

The team has worked closely with Alan Ford during its genetic transition as nutritional adjustments have been required to some diet specifications.

The finishers are now being fed a lower energy spec diet during the final stage, which is optimising growth and reducing feed costs. Slaughter progeny is achieving 580g ADG from weaning to 40kg, and 890g through to sale weight which now averages 91kg deadweight.

All finished pigs are sold to independent abattoirs in East Anglia, including Fowler Brothers. Supplied weekly, more than 95% of carcases achieve A grades with P2 measurements between 10mm and 12mm and exceptional marbling throughout every cut. They supply high-end retail and fine dining food service outlets and secure toprate, premium prices.

Parham Pigs is a reproductively efficient herd that’s striving to deliver quality pig production from start to finish. It understands why consistency must be a core objective and how sustained, uniform performance will improve economic outcomes. Exceptional management will take this business forward, but the pivotal role genetics has in improving throughput, pig quality and raising carcase values, cannot be overlooked.

The National Pig Association’s chief executive discusses the challenges faced within the pig industry and the supportive role the association plays.

Given that African Swine Fever has been in Europe for 18 years and has now reached Belgium, what is NPA doing to help ensure it doesn’t cross The Channel?

At the start of the year, we requested a meeting with Defra and APHA, as well as various supply chain stakeholders, to really try to nail the growing concerns around what will happen if ASF does arrive in the UK with regard to new legislation around restriction zones and our export markets now we’ve left the EU.

Although we didn’t get many of the answers we wanted, it helped develop a closer relationship with the relevant civil servants and triggered a renewed effort for both NPA and AHDB. And so, we began the task of exploring what we can be doing as a sector to ensure on-farm contingency planning is being completed and on wider industry preparedness, if the worst should happen. Through a series of workshops and updated resources for members, along with AHDB we are trying to get all aspects of the industry as prepared as possible for an ASF outbreak.

We’ve persistently highlighted the risk of ASF entering the UK via contaminated pigmeat, particularly through tourist routes such as the short straits and Dover Port. We have lobbied the government again and again to close loopholes in the illegal personal import rules, which they did agree to a few weeks ago, although not to the extent we really wanted, and, more importantly, provide the funding desperately required to implement and enforce the existing measures.

We’ve also continued to push for proper implementation of the Border Target Operating Model (BTOM) covering commercial imports, as it is becoming increasingly clear this vulnerability is being exploited by criminals as legal commercial loads are mixed with illegally imported pigmeat and pigmeat bearing the health mark which prohibits it from being sold outside its country of origin.

In addition to our continued lobbying of ministers and government, we are working with parliamentary stakeholders to raise the profile of national biosecurity in Westminster. We are hopeful that this is a matter the EFRA Committee are keen to pick up next year.

The UK pig industry cannot afford fair weather friends. What degree of influence does NPA have on the contractual price review with processors and supermarkets?

NPA facilitated both the initial formal consultation with industry that provided the mandate for ministers to agree that there was a need for contractual practice legislation, as well as numerous informal consultation opportunities with the sector as a whole and individual groups of important stakeholders. We have engaged with the Defra team responsible throughout the development of the statutory instrument and provided guidance on a regular basis to ensure the outcome is both fit for purpose and delivers something tangible i.e. a fairer supply chain for all where risk and reward is proportionately distributed.

What is the NPA doing to ensure that the UK pig industry is increasingly regarded as a sustainable operation?

I could argue that everything we do is geared around ensuring the UK pig industry remains sustainable, lobbying on behalf of producer members at Westminster; protecting pig sector businesses from undue legislative burden, and throughout the supply chain, mitigating risk where possible. We are the authoritative voice of the UK pig sector covering a wide variety of areas including environmental sustainability and health and welfare policy, and we promote the value of British pork to consumers, all of which whilst trying to ensure these priorities are balanced with business demand and our ability to deliver a profitable, responsible and dynamic British pig sector able to invest in and embrace innovative, sustainable pig production.

In the future top producers will have to be more I.T. and pig science savvy. What is the NPA doing to attract young bright minds into the industry?

NPA were pivotal in launching the Pig Industry Scholarship Partnership, a programme that was developed by both NPA and AHDB, in conjunction with Harper Adams University, and now in its 10th year. Each year, it allows participating industry businesses to gain first access to those students >>

looking for a one-year industry placement – many of whom go on to become valued, long-term, employees at the companies they work with. We also continue to highlight to government just how challenging it is to recruit and retain domestic labour both on farm and throughout the supply chain. Our Young NPA group, established to engage the younger members of the sector and provide an element of succession, is now a paid membership category which allows the chairs to hold excellent events to support and encourage young people to interact with all aspects of the industry, and to promote the pig sector as a career to students and new entrants.

Consumers demand enhanced welfare in all meat production systems. What is the NPA’s approach to flexible farrowing systems?

We have been focussed on this particular policy area for some time now, in anticipation of potential legislative reform. This includes producing our own Commercial Review of Adaptive Farrowing

Systems (researched and compiled by retired pig vet John Mackinnon), as well as working with other industry stakeholders to collate as much evidence on flexible farrowing systems and partial confinement of sows as possible, to be able to not only better inform our producer members looking to invest in new farrowing systems, but also because we know this legislative battle is looming. Our review was hotly anticipated by many, both in government and throughout the supply chain, and has helped us develop a pig sector position on farrowing systems and a potential transition away from conventional crates which advocates an industry led voluntary approach, rather than legislation. We now hope we’re in the best possible position to begin any negotiations with government.

Outdoor pig production is the UK’s unique selling point. Are opportunities being missed for product differentiation within Europe?

The most obvious disadvantage we’d been suffering since the onset of Covid was not being able to regain the export health certificates to China that we voluntarily surrendered, that however has very recently been resolved as the final two plants were happily granted access once again. We must however be cognisant that we don’t fall behind with regard to animal welfare standards and farrowing systems specifically. Europe is moving towards temporary confinement at speed with some member states already implementing legislation, and for those retailer customers wanting to start on their differentiation journey on farrowing systems too, if they can’t source pork from the UK, they will look to the EU where they can source it, and at a lower cost.

and the subsequent aftermath with the media, assurance bodies and the supply chain, as well as providing guidance such as the NPA Security Pack to try to mitigate the risk for individual businesses as much as possible as well as reminding members of the need to maintain high standards at all times.

Pig farmers complain about too many inspection visits, yet RSPCA Assured units have been receiving some appalling publicity. What’s going on?

RSPCA Assured now appears to be the new target for animal rights organisations, which isn’t a great surprise. If you want to undermine the animal welfare credentials of an entire sector, then start at the top. Quite often, if there is evidence of animal cruelty, abuse or mishandling, the staff responsible will never behave like that in front of an assurance auditor or a vet, therefore it is very difficult to identify. Even when staff are fully aware of how they are required to care for the animals, have been provided adequate training and have access to the necessary equipment, they still chose to behave inappropriately. Which is extremely difficult for a business owner or manager who is entrusting

the care of their pigs to individuals. And I’m not sure how any assurance scheme, whether it’s RSPCA Assured or Red Tractor can manage that either. It is, however, important that the assurance bodies provide the pastoral care that producers require during these damaging exposes and are cognisant of their duty of care to the animals if the farm’s certificate is suspended for a prolonged period of time. It is also vital that they engage with all parts of the supply chain, including the producer, to ensure that everyone is kept well informed.

The NPA is the only organisation that represents British pig producers within Government, and with processors, caterers and retailers.

• Lobbying all relevant Government departments to protect and enhance members’ interests

The Agriculture and Horticulture Development Board (AHDB) is a statutory levy board funded by farmers and processors. Alongside Pork, we collect levies from the Beef & Lamb, Cereals & Oilseeds, and Dairy sectors to tackle industry-wide challenges and drive progress.

AHDB’s marketing activity directly supports levy payers by boosting consumer demand for British pork. Our campaigns, developed using consumer insight, highlight pork’s affordability, versatility, and nutritional value, ensuring it remains a top choice for shoppers.

Our 2025 marketing campaign builds on the success of 2024’s ‘Feed the Family for Less,’ which delivered a £10.05 return in retail sales for every £1 invested. By working with retailers, processors, and food influencers, we ensure British pork is promoted effectively across TV, social media, and in-store activations.

To future-proof demand, we also educate younger consumers. Partnering with the British Nutrition Foundation, we promote the benefits of pork to school-aged children, fostering lifelong purchasing habits.

AHDB works with industry and government to open and maintain access to global pork markets, ensuring British pork reaches its highest-value destinations. Over 100 export markets are now available, generating over £500 million annually, supporting farmgate prices, and optimising carcase

• Antibiotic use: The electronic Medicine Book (eMB) has helped deliver a 75% reduction in antibiotic use over eight years, demonstrating responsible farming practices.

• Food authenticity: Tools like Stable Isotope Reference Analysis (SIRA) verify British pork’s origin, ensuring shoppers can trust the provenance of their purchases.

• Sustainability: AHDB provides robust data to policymakers and consumers, highlighting British pork’s environmental progress. Our work on ammonia emissions has helped the sector avoid at least £15 million in compliance costs. The PigProGrAm initiative explores innovations such as harvesting green ammonia from pig waste to produce hydrogen, reinforcing pork’s role in a sustainable future.

Training

AHDB invests in training to equip levy payers with the skills needed to enhance productivity and

animal welfare. The Stockperson Plus programme provides online workshops covering water management, casualty pig handling, and assurance schemes. Meanwhile, the UK Pig Industry Welfare Training platform upholds the sector’s commitment to high welfare standards.

Education

Educating the next generation is crucial for sustaining long-term demand. Levy-funded education programmes teach children about food origins, nutrition, and cooking skills, ensuring they grow up with a strong understanding of British pork. Through our partnership with LEAF Education, we’ve trained 20 farmers to host on-farm experiences, accredited through the Countryside Educational Visits Accreditation Scheme.

Red Tractor: A symbol of trust and reassurance

Red Tractor is a unique food and farms assurance scheme covering animal welfare, food safety and traceability from farms to pack. It was created 25 years ago in the wake of damaging food scares to give shoppers reassurance that their food was British, traceable, safe and farmed with care.

With over 2,300 pig members, it is the largest and most comprehensive UK food assurance scheme. The products from all the sectors we cover contribute more than £17 billion to the UK economy.

Red Tractor’s standards cover requirements around traceability, biosecurity, housing, animal medicines, pig health and welfare. All pork products carrying the logo come from pigs that have been born, reared, and slaughtered in the UK, meeting our standards at every stage of production. The Red Tractor scheme is a celebration of the skill of UK pig producers and a symbol of the quality and high standards of British farming. Research has found that Red Tractor is the most trusted farm assurance scheme in the UK, with seven out of ten main shoppers aware of the logo, seeing it as an independent source they can trust. The UK’s largest retailers, caterers and food brands also insist on their produce meeting Red Tractor’s rigorous standards. And, because the scheme is valued by government, it is recognised by its agencies and local authorities, which results in fewer government inspections on Red Tractor farms.

Red Tractor helps to ensure farmers are meeting the high standards that consumers expect. Every farmer is required to meet those standards on a daily basis. Regular inspections and vet visits mean

that each member receives an important health check for their business.
