We took to the streets of Horsforth and Pudsey recently (see the centre pages) to check on your progress with New Year’s resolutions and it seems most, if not all of you, have stuck to your guns. Well done to those that did and for those that didn’t there’s always next year. If you’re teetering on the edge of breaking your resolution take a look at our “New Year New You” feature – it may give you that additional inspiration you need. Not so long ago the standard British fayre was fried breakfasts, bangers & mash and jam roly-poly – nothing wrong with that – it still has a place, especially as we look for comfort food in the winter months. We’re now thinking about, and consuming, a wider range of food with inspirations taken from all corners of the Earth but that doesn’t mean we have to look far beyond our own postcodes to find the very best cuisine. This month’s Food & Drink feature hails local producer Pudsey Pickles and their fine range of preserves, pickles & chutneys – all made and sold locally. Give their recipe a go - you won’t be disappointed. We’ll bring you more independent, local producers in future editions. Communities are important and Covered has long been a supporter of many local groups, clubs and societies and we’ll continue to bring you news of the many volunteer-led and non profit organisations active in the area. Pudsey Pickles is a local producer of jams and chutneys and was started in 2006 by husband and wife team, Daryl and Lee Naylor. They recognised a demand for good quality, local preserves after their first product, a home made piccalilli, sold out at a market during the Pudsey Christmas lights switch on. Now operating from a purpose-made outbuilding at the bottom of their garden in Pudsey, they recently won a ‘Guild of Fine Food Great Taste Award’, received praise from local MP Stuart Andrew and were booked to trade at Galtres Music Festival in York.
Pudsey Pickles The couple are no strangers to a kitchen environment, having met through a large catering company where Lee was the Kitchen Manager. Daryl also has an extensive catering career and previously worked as Head Chef on board the renowned cruise ship QE2. Whilst raising a family, Lee began growing her own vegetables, which found their way into the initial jars of home made piccalilli. After their instant success at the Christmas market, Lee and Daryl went on to extend their range and became regular visitors to Leeds Farmers Markets before
taking the plunge and investing money in 2010 to launch the Pudsey Pickles we see today. They pride themselves in producing tasty, GM free preserves from fresh, locally sourced produce. All products are vegetarian, free from dairy and additives and many are also gluten free. Expect comforting, time honoured family recipes, such as Orange Marmalade, alongside adventurous contemporary flavours like Blackcurrant and Sambuca, or the new Midnight Bell Chutney, featuring a healthy splash of the finest Midnight Bell beer, made by Leeds Brewery. These preserves may taste fantastic with a good pasty, or on a ploughman’s lunch, but are really versatile and can be used to spice up many recipes.

Ingredients
Covered Starter
Pack of chilled filo pastry Goat’s cheese Fresh chives Olive Oil Spiced Plum Chutney
Goat’s Cheese & Spiced Plum Samosas
Cut a pack of ready-made filo pastry into 3-inch strips before placing vertically in front of you. Put 1 tablespoon of the goat’s cheese in the bottom left-hand corner of the strip, about quarter of an inch from the short edge, sprinkle with the fresh chives before placing a teaspoon of Spiced Plum Chutney on top. Gently lift the corner of the pastry over the filling to form a triangle so that the bottom edge now runs along the right-hand side. Fold the triangle upwards, then to the left so that the open edges are across the top and the filling is enclosed. Continue folding the triangle until you reach the top of the strip. Dab the top of the pastry strip with water to seal. Repeat until you have 2-3 samosas per person. Place the samosas, sealed side down, on an oiled baking tray and brush with olive oil. Bake in a preheated oven 180 degrees Celsius for around 10 minutes, until golden brown. Serve with mixed leaves and additional Spiced Plum Chutney.

Large chicken breast Small leek 4-5 strips of pancetta Red Cabbage Midnight Bell Chutney Red Onion, Cranberry and Port Chutney Fresh vegetables to serve
Midnight Bell Chicken
Slice open a large chicken breast. Blanch the leek in a little water. Drain and chill before placing into the centre of the chicken breast, along with a tablespoon of Midnight Bell Chutney. Wrap the chicken breast in pancetta before wrapping in clingfilm to form a cylindrical shape. Poach for approximately 10 minutes in boiling water, then remove the clingfilm and bake in a pre-heated oven 200 degrees Celsius for around 10 minutes, until golden. Meanwhile, thinly slice red cabbage and mix with a generous helping of Red Onion, Cranberry and Port Chutney. Braise in just enough water to cover, until the moisture has been absorbed. To make the sauce, mix 2 tablespoons of Midnight Bell Chutney with the juice from the chicken. Season to taste and reduce down. Once cooked, serve the chicken on a bed of braised red cabbage with fresh, steamed vegetables, and drizzled with the sauce.

2oz butter 2oz caster sugar 2oz self-raising flour 1 egg Pineapple and Malibu Jam Strawberry and Pink Champagne Jam, to drizzle
Pineapple & Malibu Steamed Sponge Pudding
Beat together 2oz softened butter and 2oz caster sugar until a smooth paste is formed. Gradually add 2oz self-raising flour along with a beaten egg. Add a little milk if the mixture is too stiff. Place plenty of Pineapple & Malibu Jam into a well-buttered ramekin, before topping with the sponge mix. Cover with greaseproof paper and then foil, seal and steam in a pan of water for around 40 minutes. Serve with vanilla ice cream or custard and a drizzle of Strawberry & Pink Champagne Jam, heated gently.

Lovers of forced rhubarb should cover it now to ensure pink juicy stems
A Happy New Year to everyone, this is the time to cherish the old and look forward to the new. Everything from now forward depends on the soil, if it is wet and frozen – keep off. If it is dry and workable, try to keep on top of the weeds and finish the winter digging. This is also the time to finish pruning your apple and pear trees, cutting out any crossing branches and reducing long spurs to encourage fruit buds. Cut down to ground level all the autumn fruiting raspberries, which fruit on new wood, although leave summer fruiting canes which have not flowered – as these bear fruit on second year canes. Gooseberries, blackcurrants and blackberries may also be trimmed, although do not touch your plum trees as these must only be pruned in summer. If you have a liking for forced rhubarb, find a clump with the buds just showing pink and cover with a large plant pot or dustbin to exclude the light. This will make the plant grow inside the container, providing you with the lovely pink juicy stems. Shallots are normally planted on the shortest day, and harvested on the longest. So if the ground is too heavy, plant them in modules for transplanting later
in the year. This also applies to the many different types of garlic, which may be harvested for the kitchen and also for an insect repent spray. Seed potatoes will be coming into the shops now, so look out for your favourites, although also try one or two of the new varieties which are blight resistant. Sterilise your plant pots and seed trays, ready for seed sowing in February. – then clean your green house or cold frame to allow maximum light. Santa’s Little Helpers at Asda Owlcotes Well, maybe not Santa, but certainly helping the shoppers at Asda’s store in Owlcotes Centre on the Sunday before Christmas. And not all of them that little. On the day, some 25 cadets from 2387 Squadron Air Training Corps (Pudsey) were helping Christmas shoppers pack and take to their cars some of their last-minute shopping for the festive season. Donations were received on behalf of the Squadron itself, Help for Heroes and other charities dedicated to the relief of post-traumatic stress syndrome incurred by service personnel in their service for the country. They raised in excess of £1000 on the day. Pudsey ATC has 82 members aged between 13 and 19. They meet on Mondays and Thursdays, with additional longer commitments during the summer.

Metro Bus - Consultation or Cancellation? West Yorkshire Metro is currently reviewing the level of bus services provided in the Leeds Area. Charged with the task of making savings of £5M in three years, they have already conducted similar reviews in Bradford, Kirklees and Wakefield. The public consultation roadshow began on 7 January with a display stand at Morrison’s in Morley. Two New Years for Kirkstall Abbey Bidders Auction Market(s) The Bidders Auction Room on Netherfield Road, Guiseley, was celebrating more than the New Year at their first sale in 2013. Apart from looking forward to their first anniversary on 13 February, they were proud to have secured a contract with North Yorkshire Police. Already having the same deal with West Yorkshire, they now act as agents and auctioneers responsible for handling unclaimed and confiscated goods from two forces. Co-director Mark Huckerby told Covered; “Dealing with a second force certainly adds another dimension and helps fill the saleroom – with both goods and bidders. This week, for example, we are selling a large quantity of lost or recovered pushbikes from Scarborough Police Station.” Bidders Auction Room sales are at 5.30pm each Monday, with daytime viewing on the Sunday and Monday. Last year, under one of their community/ business/enterprise initiatives, Leeds City Council awarded £1500 to support the creation of a monthly Saturday deli and food market in the cloisters of the ruins of Kirkstall Abbey. In the summer, organiser Mark Kilvington decided to extend the event to two days, adding a craft and fleamarket element on the Sunday. Both days run from 12-3pm. Visitors, including tourists from far afield, can’t miss the market if they want to see the ruins. Fine local produce, live music, deli standard fast food. It’s a classic chicken-and-egg success; high visitor numbers generate a demand for stalls, quality exhibitors competing for business generate a loyal and growing following. Both days are presently running at capacity – licensed for 50 stalls, with an extension to 80 likely in the New Year. So, not a bad £1500 investment from Leeds CC – they’ve already got that back and more in licence fees.

Covered Community Champion Awards Dave Cook – Fifty Not Out in Farsley Covered reader Cathie Craig was buzzing with enthusiasm when she wrote to us about Dave Cook, owner of Hair Fashion at 168 Town Street, Farsley. She, husband Francis and other regulars were going to make a bit of a fuss on 19 January – the fiftieth anniversary of his being a hairdresser in the area. Might we be interested? Yes indeed! Our first visit was one Saturday lunchtime, en route to a Malaya and Borneo Veteran’s meeting. Closed – though we did arrive unannounced. Then the following Tuesday, when Dave was brimming with both sadness and pride. He had that very morning received a letter from the daughter of a longstanding elderly client who had just passed away. It read “Mum always enjoyed her weekly visit. We cannot thank you enough for the care and attention you always showed, including the lifts home you often gave her”. Customer care indeed. Though Cathie Craig’s description “hairdresser in the area” didn’t tell the full story. Dave Cook, at age 19, was a fully trained, qualified and time-served apprentice living and working in Bradford. One day, his then employer, Mario Deluca, asked him if he’d be interested in buying one of Mario’s other salons - in Farsley. “Where’s Farsley?” A short car drive later and the deal was struck. Fifty years a hairdresser at the same address. Wow. So you’re not open Saturday afternoons? “No, my other passion is rugby – Bradford and Bingley RUFC, where I am a Past President.” Any plans to retire? “No”. First Mile

It has been a busy year for the family – her husband works ‘above the shop’ as an assessor for vehicles that have been involved in accidents and he’s also established a motor repair workshop with his brother in Rodley. “It really is a seven-day week for all of us!” says Louise.

Mill aims to be major employer again The revival of Sunnybank Mills at the bottom of Farsley will be a catalyst for the renaissance of the town. Established in 1829 it grew to cover six acres of weaving sheds and mill buildings on the eleven acre site. It has been in the control of the Gaunt family almost since those early days when John Gaunt became the first trustee of Farsley Club mill – as it was then known. It only passed out of their hands to Edwin Woodhouse between 1882 and 1917. Textile production came to an end in 2008. At its height the mill employed 900 people, and new plans hope to see 400 people employed in a wide variety of enterprises on the site. Besides being a mill, many will know that for 25 years it was here that interiors scenes for Emmerdale were filmed. In the first phase of the re-development, that saw over £3m invested, it has seen media based companies move in alongside two furniture manufacturers, a metal fabricator and a children’s play gym, as well as a building converted into apartments. just been superceded by an exhibition of plans for the mills’ future that local people can comment on. “The site is now owned by cousins William and John Gaunt’ says Michael Whitaker. “They see themselves as guardians and want to bring it back to life and open it up to share with the community”. The plans show the retention of the traditional mill buildings, with the demolition of the single storey weaving sheds that will create ‘air’ around the stone mill buildings and allow for car parking as well as new complementary buildings. “We envisage creating a mix of retail, business, light industry and residential, and make features of the dam and woodland, and also a sense of piazzas around the buildings” says Michael.
