We took to the streets of Horsforth and Pudsey recently (see the centre pages) to check on your progress with New Year’s resolutions and it seems most, if not all of you, have stuck to your guns. Well done to those that did and for those that didn’t there’s always next year. If you’re teetering on the edge of breaking your resolution take a look at our “New Year New You” feature – it may give you that additional inspiration you need. Not so long ago the standard British fayre was fried breakfasts, bangers & mash and jam roly-poly – nothing wrong with that – it still has a place, especially as we look for comfort food in the winter months. We’re now thinking about, and consuming, a wider range of food with inspirations taken from all corners of the Earth but that doesn’t mean we have to look far beyond our own postcodes to find the very best cuisine. This month’s Food & Drink feature hails local producer Pudsey Pickles and their fine range of preserves, pickles & chutneys – all made and sold locally. Give their recipe a go - you won’t be disappointed. We’ll bring you more independent, local producers in future editions. Communities are important and Covered has long been a supporter of many local groups, clubs and societies and we’ll continue to bring you news of the many volunteer-led and non profit organisations active in the area. If you’re involved in the community then let us know what you’d like us to feature – we’re always happy to help spread the word. Pudsey Pickles is a local producer of jams and chutneys and was started in 2006 by husband and wife team, Daryl and Lee Naylor. They recognised a demand for good quality, local preserves after their first product, a home made piccalilli, sold out at a market during the Pudsey Christmas lights switch on. Now operating from a purpose-made outbuilding at the bottom of their garden in Pudsey, they recently won a ‘Guild of Fine Food Great Taste Award’, received praise from local MP Stuart Andrew and were booked to trade at Galtres Music Festival in York.

Pudsey Pickles The couple are no strangers to a kitchen environment, having met through a large catering company where Lee was the Kitchen Manager. Daryl also has an extensive catering career and previously worked as Head Chef on board the renowned cruise ship QE2. Whilst raising a family, Lee began growing her own vegetables, which found their way into the initial jars of home made piccalilli. After their instant success at the Christmas market, Lee and Daryl went on to extend their range and became regular visitors to Leeds Farmers Markets before

taking the plunge and investing money in 2010 to launch the Pudsey Pickles we see today. They pride themselves in producing tasty, GM free preserves from fresh, locally sourced produce. All products are vegetarian, free from dairy and additives and many are also gluten free. Expect comforting, time honoured family recipes, such as Orange Marmalade, alongside adventurous contemporary flavours like Blackcurrant and Sambuca, or the new Midnight Bell Chutney, featuring a healthy splash of the finest Midnight Bell beer, made by Leeds Brewery. These preserves may taste fantastic with a good pasty, or on a ploughman’s lunch, but are really versatile and can be used to spice up many recipes.

“All products are vegetarian, free from dairy and additives and many are also gluten free.” This may still be a family business, with the children helping out occasionally on the stall, but things are expanding nicely with lots of plans for 2013. Daryl and Lee remain community minded though and Pudsey Pickles became involved with Bradford based charity Little Heroes when Daryl took part in one of the charity’s ‘fire walks’ to raise money to support children suffering with cancer. The charity was featured on a recent Channel 4 programme ‘The Secret Millionaire’ and Lee and Daryl wanted to help more in some way. They created their Fire Dip, a blend of 4 different types of chillies, and 50p from the sale of each jar goes directly to the ‘Little Heroes’ charity. ‘Fire walk’ participants also receive a complimentary jar in recognition of their charitable efforts. Pudsey Pickles are stocked at a range of local outlets, notably Cheese and Chutney in Saltaire, Yorkshire Crust in Horsforth, Keelham Farm Shop in Thornton and Park Fruits in Pudsey and are still regulars at the many farmers markets in and around the area. Ingredients

Covered Starter

Pack of chilled filo pastry Goat’s cheese Fresh chives Olive Oil Spiced Plum Chutney

Goat’s Cheese & Spiced Plum Samosas

Cut a pack of ready-made filo pastry into 3-inch strips before placing vertically in front of you. Put 1 tablespoon of the goat’s cheese in the bottom left-hand corner of the strip, about quarter of an inch from the short edge, sprinkle with the fresh chives before placing a teaspoon of Spiced Plum Chutney on top. Gently lift the corner of the pastry over the filling to form a triangle so that the bottom edge now runs along the right-hand side. Fold the triangle upwards, then to the left so that the open edges are across the top and the filling is enclosed. Continue folding the triangle until you reach the top of the strip. Dab the top of the pastry strip with water to seal. Repeat until you have 2-3 samosas per person. Place the samosas, sealed side down, on an oiled baking tray and brush with olive oil. Bake in a preheated oven 180 degrees Celsius for around 10 minutes, until golden brown. Serve with mixed leaves and additional Spiced Plum Chutney.

Large chicken breast Small leek 4-5 strips of pancetta Red Cabbage Midnight Bell Chutney Red Onion, Cranberry and Port Chutney Fresh vegetables to serve

Midnight Bell Chicken

Slice open a large chicken breast. Blanch the leek in a little water. Drain and chill before placing into the centre of the chicken breast, along with a tablespoon of Midnight Bell Chutney. Wrap the chicken breast in pancetta before wrapping in clingfilm to form a cylindrical shape. Poach for approximately 10 minutes in boiling water, then remove the clingfilm and bake in a pre-heated oven 200 degrees Celsius for around 10 minutes, until golden. Meanwhile, thinly slice red cabbage and mix with a generous helping of Red Onion, Cranberry and Port Chutney. Braise in just enough water to cover, until the moisture has been absorbed. To make the sauce, mix 2 tablespoons of Midnight Bell Chutney with the juice from the chicken. Season to taste and reduce down. Once cooked, serve the chicken on a bed of braised red cabbage with fresh, steamed vegetables, and drizzled with the sauce.

2oz butter 2oz caster sugar 2oz self-raising flour 1 egg Pineapple and Malibu Jam Strawberry and Pink Champagne Jam, to drizzle

Pineapple & Malibu Steamed Sponge Pudding

Beat together 2oz softened butter and 2oz caster sugar until a smooth paste is formed. Gradually add 2oz self-raising flour along with a beaten egg. Add a little milk if the mixture is too stiff. Place plenty of Pineapple & Malibu Jam into a well-buttered ramekin, before topping with the sponge mix. Cover with greaseproof paper and then foil, seal and steam in a pan of water for around 40 minutes. Serve with vanilla ice cream or custard and a drizzle of Strawberry & Pink Champagne Jam, heated gently.

Gabby Logan announced as Leeds Trinity University’s First Chancellor Having recently been granted University status, Leeds Trinity University has even more good news! Unless you’ve had your head firmly in the sand over the last few weeks, you’ll be aware that Gabby Logan will become its first Chancellor. Gabby is a major public figure and through her achievements and endeavours, embodies much of what the University represents. She will be a role model for people in the University and in the City. Born in Leeds, Gabby is an inspirational figure in the worlds of sport and journalism, with a string of achievements that include becoming the first female presenter of a live football match and the first woman to host Match of the Day. Gabby’s career is continuing to flourish, having been one of a select few presenters given the honour of covering the London 2012 Olympic Games for the BBC. Gabby will also present a new BBC Saturday Night show in 2013. Gabby is a keen advocate for higher education, holding a law degree from Durham University and an honorary degree from Leeds Metropolitan University. Gabby also has a strong commitment to several charitable causes, and is currently Patron of The Disabilities Trust, The Prince’s Trust and Great Ormond Street Hospital, as well as vice president of Sparks.

Finance Matters Editor Chris Barnham investigates financial issues that might affect the residents of this area. The times, they are a-changin’ – with the coming of 2013 there will be a major shake-up in financial advice offered by accredited professionals. The changes will affect anyone who either has investments, or who is thinking of investing in the future.

A WEALTH OF EXPERTISE ON YOUR DOORSTEP

There are two main changes. The first is to raise the general knowledge and qualifications of professional advisors, and the second is to reduce “commissionbias”, to stop bad apples from acting primarily in their own interests by recommending whomever or whatever pays them the most. Whilst many advisors aren’t happy with these changes (partly as they involve being forced to sit numerous new exams) there is a feeling that this is needed to improve the general reputation of the industry. Many of those nearing retirement are bowing out, though most younger professionals with long careers in front of them are welcoming the raising of the standards. Coffee, Art and a Calendar in Horsforth Museum A large portrait of the Queen is now on proud display in the museum. It was done by over a hundred members of Howard Carlisle’s painting classes, each member contributing one or more small squares of colour which together make up the whole picture. Maureen Brook, an artist and also a museum volunteer stands in front of the royal portrait. Local artist Val Jennings has some of her pictures on display in the coffee room and these are available for sale.

Covered Magazine recently featured an excellent local amateur theatre group called Carpetbaggers. As they are totally non-profit, they do what they do - singing, dancing fun - for the simple, honest love of performing. Tickets are great value and you get a fun night out (or day if you go to a matinee) for all the family in a real community atmosphere.

We like them because Carpetbaggers are theatre of the people, by the people and for the people. Shadowing Stuart’s Surgery Have you ever dropped into a surgery held by your local representatives? You should - Councilors and MP’s regularly hold open surgeries for residents. Covered’s student reporter Liz Burton spent some time shadowing Stuart Andrew MP at his surgery in Pudsey: Stuart Andrew’s monthly surgeries invite the public to address any issues they have, ranging from complaints as small as wheelie bins and gritting roads, to larger issues such as pension problems and trading policies. Many individuals are regulars, while others newcomers – Stuart eagerly engages with both, asking: “How can I help?” After observing the surgery, it’s apparent that Stuart makes a great effort to resolve any grievances the public has with their area; for example, the 611 bus which runs between Pudsey, from Bradford Interchange to St. James’ Hospital, no longer serves certain stops – something which was addressed twice this surgery. He promptly noted this issue and intends to tackle it. The public is generally pleased with Stuart’s performance; at times they approached him not to present a complaint, but to simply wish him good health, good luck and most importantly thank him for all his efforts. But unfortunately, not all problems can be resolved and all people appeased. Naturally, his influence only extends so far – many of the more complex issues, such as pension problems or one’s work situation, are often out of his power, regardless of his fervent efforts. However, from shadowing Stuart I was assured that he performs with 110% and has the people’s best interests at heart. “I need to be where the people are. I want to be here.” Stuart Andrew stated at the surgery, “Let people have a say.” His willingness to listen to those who approach him, regardless of the severity of their issue, is not only admirable but encouraging, as often we the public find ourselves without a voice and someone to simply listen. Whether it is concerning disagreements with funding foreign countries or traffic noise and speed in residential areas, Stuart Andrew is eager to listen; although he may not necessarily be able to make an immediate difference, we can ultimately ask for no more than lending his ears.

Stuart andrew mp With the Christmas festivities behind us, MPs returned to Parliament this week and, looking at my own over flowing postbag, there is clearly much work to be done. In Leeds this year we will see the new arena opening. Having recently visited the site myself I can honestly say that this is an impressive new building and a magnificent and welcome addition to our city. Leeds has been without an arena for far too long, with residents travelling to either Sheffield or Manchester for entertainment or sporting events which the city has not previously be able to hold. This project will bring visitors to Leeds, benefitting the local economy, and will create many job opportunities. A highlight on the Leeds calendar for 2013 has to be the Tour de France. The Tour will head through Yorkshire on 5th and 6thJuly and I have no doubt that this will draw crowds from across the county. It is a huge privilege for Leeds to mark the start of the Tour and I know that a great effort was put into the bid so it is wonderful to see the team behind it succeeding. Finally, I would like to take this opportunity to wish all of my constituents a happy new year and the very best for 2013.

Local Malaya and Borneo Veterans Meet in Headingley Covered magazine was honoured when Malaya and BAOR veteran George Smith of Ilkley invited us along to the January (monthly) meeting of The Yorkshire Malaya and Borneo Veterans Association at New Headingley Club (previously The Royal British Legion). When were they in the Far East, and why? And why here in Headingley now? Well, the conflicts in Malaya and Borneo were among several less-publicised ones shortly after the end of WWII. Palestine, Kenya, Korea and Egypt (Suez) were others. At the time, the last thing the general public wanted to hear was any suggestion that it wasn’t all over and the politicians of the day certainly weren’t going to tell them. But, between 1948 and 1960, some 1800 British and Commonwealth servicemen and police died fighting communist terrorism in Malaya. Then, late in 1962, nearby, the country of Indonesia decided that it wanted total control of the island of Borneo rather than only the southern part which they already held. But that meant dislodging Malaysian and British interests in the north. Again, British and Commonwealth forces were involved until peace was brokered in 1966. Tens of thousands of Allied servicemen were deployed during the period. With fewer than 100 casualties, that campaign was and is hailed as one of our most effective military deployments ever. The majority of British servicemen involved in either were doing two years’ national service, so few served in both. But the geography, terrain and politics were so close at the time that it is no surprise that they meet as one today. Though why did Yorkshire veterans go it alone, you might be asking. Well, not that long ago, Yorkshire members of the (then) national association queried some procedural matters, only to be told it was none of their concern. Wrong answer... Apart from the camaraderie, the group’s purpose is to help educate today’s society about the extent of British participation in the two conflicts. News and publicity weren’t exactly forthcoming at the time. David Laurie from Horsforth is a regular attendee at YMBVA meetings and events. He served in Malaya between 1954 and 1956, first with The East Yorkshire Regiment before transferring to The West Yorkshire Regiment. As if an extended tour of Borneo hadn’t been enough, David’s unit also served a short while with BAOR in Osnabruck on their way home.

New Year Message from the Chair of Horsforth Town Council The Council is proud to celebrate 2012 as a time of achievement, including the celebration of the Queen’s Diamond Jubilee, the success of our Olympic stars, and the new status of Horsforth’s Leeds Trinity as Leeds Trinity University. The council also welcomes new Vice Chancellor, Professor Margaret House, to her post and looks forward to a fruitful working relationship. The New Years Honours List names Alistair Brownlee, one of our Olympian stars, as an MBE. The council extends a big thank you to our city councillors for their support and initiative in the renaming of the old Library and Youth Centre, as the Brownlee Stone Centre. The now well established

Jubilee Garden compliments the site as a useful future resource. The Council is delighted to say thank you to Covered magazine for their sponsorship towards the Christmas Tree, and also to the Environment and Community Committee for the resplendent display of street lights. The council is much encouraged by these offers of financial help, and hands on assistance, including those for the Diamond Jubilee celebrations. The success of many events will increasingly be one of co-operation between the Council, local businesses and organisations. The council thanks all organisations including the Gala Committee for all their help. The purpose of the Forum is to give a renewed sense of ownership to the Adel Community on land development issues. He added “All the Members have a strong connection with the area and include Members of Community Groups, Residents and Local Businesses. Covered Magazine’s student writer John Gledhill goes colour-blind over local singer’s new album Georgia Jakubiak hails from Cookridge and her group The State of Georgia are releasing new album Synesthesia. The title refers to a condition Georgia has where she visualises colours when writing songs. She explains “I do it with notes on the piano and days of the week too. For example, C is yellow, same as Sunday, A is green, same as Wednesday. It’s such a strong theme running through the album that it made perfect sense as the title”. I was recently asked why Leeds City Council did not offer Council Tax payments to be spread over 12 months. I asked the Chief Finance Officer and received the following positive response: “I confirm that we do allow payment over twelve monthly instalments rather than the statutory ten monthly instalment scheme for Direct Debit payers and have done so for several years. Indeed, we have promoted Direct Debit as our preferred method of payment for many years, and in this time we have ran various initiatives including offering a choice of payment date and allowing payment by twelve monthly instalments.
