Orange and honey glazed duck with roast vegetables and plum sauce SERVES 4 Ingredients • 4 (200g) duck breasts • 4 tbsp honey • 30ml orange juice • 10ml white wine vinegar • 5g orange zest • Salt and black pepper, to taste FOR THE VEGETABLES • 100g parsnip • 100g butternut squash • 1-2 tsp thyme • 10ml olive oil • 100g butter, melted • Salt and white pepper to taste FOR THE SAUCE • 2 red plums, medium size • ½ tsp ready-made Arabic spice mix • 200ml orange juice • 1 large orange, skinless and seedless • 1 tsp brown sugar • 3 tbsp honey • 2 slices red radish, for garnish • A pinch of chives, for garnish Method 1 Make thin slits into the skin of the duck fillets. Marinate for 24 hrs with the honey or orange juice, white wine vinegar, brown sugar, orange zest, sea salt and black pepper. 2 Heat a non-stick frying pan to low heat, and place the duck breasts on the pan, skin side down. Slowly cook the breast fillets until they begin to brown. Place in the oven for 15 mins at 180C. 3 Peel and cut parsnips and butternut squash – about the size of your index finger – and marinate with olive oil, salt, pepper and thyme. Roast the vegetables in the oven at 200C for 10 mins. Drizzle melted butter on top. Add plum, seven spice, orange juice, brown sugar, honey, and orange in a sauce pan and cook until the plum is soft. Blend the mix into a purée. 4 Place the duck and vegetables on the plate with the plum sauce, making sure the duck fat side is facing up. Garnish with chives and sliced red radishes.

Recipe
Spaghetti with shrimps in a spicy tomato sauce SERVES 4
• 8 cloves of garlic, minced, or more to taste • 4 dried chili pepper, crumbled • 100ml extra virgin olive oil • 240g spaghetti • 60g yellow zucchini, brunoise to small cubes • 60g carrot, brunoise • 60g tomatoes, chopped • Grated parmesan cheese FOR THE TOMATO SAUCE • 8 tbsp olive oil • 60g large shrimp, peeled and divined • 120g onions, chopped • 8 cloves minced garlic • 2 tsp crushed red pepper • 8 tbsp tomato paste • 240g tomatoes, diced • 240g tomatoes, peeled • 8 tbsp fresh parsley and basil, chopped Method 1 Bring 750ml of lightly salted water to a boil and add the spaghetti. Meanwhile, mince the garlic, crumble the red pepper, and sauté them in the oil with the vegetables until the garlic begins to brown. Turn off the heat. 2 Drain spaghetti, transfer them to a bowl, and stir the sauce into it. Heat 4 tbsp oil in a large nonstick skillet over medium-high heat, Sprinkle shrimp with salt; add shrimp to pan and cook for 8 mins on each side or until the shrimp is done. Transfer shrimp to a bowl. 3 Heat remaining 4 tablespoon oil in pan add onion, minced garlic, basil, and crushed red pepper to pan; sauté for 4 mins, add tomato paste and peeled tomato; bring to a boil. Cook 12 mins or just until sauce begins to thicken, and add the chopped tomatoes. Return shrimp to pan; cook 4 mins or until thoroughly heated, and tip in the parsley, stirring well to combine. Serve over pasta with grated parmesan cheese on the side.

Homemade Veal Tortellini SERVES 4 Ingredients FOR HOMEMADE PASTA • 100g semolina flour • 25g egg yolk • 15g whole egg • Salt, to taste • Parmesan shavings, for garnish FOR THE VEAL STUFFING • 200g veal shank • 30g onions • 30g celery • 30g carrots • 50ml vegetable stock • 1 bouquet garni of rosemary and sage • 100ml vegetable stock • 50g porcini mushrooms • 60g parmesan • Salt and nutmeg, to taste FOR THE BURRATA • 50g burrata cheese • 50ml milk Method 1 Place the flour in a food processor and pulse it. Add the whole egg and egg yolk and whiz until the mixture resembles fine breadcrumbs – it shouldn’t be dusty or turn into a big sticky dough ball. 2 Cut the dough into 2 pcs. Flatten each with a rolling pin to about 5mm thickness. Fold over the dough and pass through a pasta machine at its widest setting, refolding and rolling 7 times (not changing the setting) until you have a rectangular shape of 7.5x18cm. It is important to work the dough until it is nice and shiny. Cut the dough with a round, large cookie cutter. (You could also use store-bought lasagna sheets if you don’t have a pasta machine.) 3 In a large pot, heat olive oil and add the veal shanks. Brown for 3 mins per side, then remove and set aside. 4 In the same pot, add the onions, carrots and celery. Season with salt and sauté until soft and translucent, about 8 mins. Return the browned shanks to the pan, add the stock and reduce liquid by half, about 5 mins. Add the bouquet garni and 2 cups of the stock and bring to a boil. Reduce heat to low, cover pan and simmer for about 1½ hrs or until the meat is falling off the bone. Remove the meat, shred in a mixing bowl and add sautéed mushrooms, parmesan cheese and nutmeg. Season and set aside. 5 Bring the burrata and milk to boil and gently mix to combine. 6 Add a small amount of the veal filling to a dough sheet and dab water on the other half of the sheet. Fold in half to seal tightly. Pull the sides together to form a classic tortellini shape (see image) and pinch the ends together. Cook the pasta in boiling water for 3 mins. 7 Serve the veal tortellini on top of the burrata cheese mix and garnish with parmesan shavings.

King crab and apple salad MAKES 10 canapés Ingredients • 2 king crab legs • 2 small shallots • Tarragon, chopped • ½ lemon • 2 tbsp crème fraiche • 1 Granny smith apple
1 Blanch the crab legs in boiling salted water 8 mins. Remove and chill in iced water. 2 Split the legs in half and scoop all of the crab meat into separate bowls. Reserve the legs. 3 Finely dice the apple and shallots and mix with the chopped tarragon, lemon juice and crème fraiche. Add in the crab meat and mix together well, season with the salt and pepper. 4 Cut the crab shell into approx 2 inch long pieces, and clean thoroughly to serve the crab salad. Spoon the crab mixture into the shell and garnish with a fine slice of apple.

SERVES 4 Ingredients • 50g scallops • 100g prawns • 250g calamari • 250g octopus • 100g mussels • 100g clams • 60ml extra virgin olive oil • 15ml lemon juice • 10g parsley • 10g garlic, optional • Salt • Pepper
Method 1 Steam the scallops, prawns and calamari separately, until cooked. Boil the octopus in another saucepan for 30 mins. 2 Open the clams and mussels in a pan with 20ml extra virgin olive oil, salt and pepper. 3 Prepare a dressing with the remaining oil, lemon juice, salt and pepper. 4 Reduce the water from the mussels and clams to half – this will take approximately 15 mins. 5 Dress the seafood with the dressing and 2 tbsp of the reduced water. Add the parsley and garlic. Mix, season and serve.

Kachche gosht ki biryani SERVES 4 Ingredients • 750g lamb (gosht), cut into 2 inch pieces • 2 tbsp raw papaya paste • Oil for deep frying • 4 large onions, sliced • 120ml yoghurt • 1 green chilli, chopped • Salt, to taste • ½ tsp turmeric powder • 1½ tsp red chilli powder • 1½ tbsp ginger paste • 1 tbsp garlic paste • 2 tbsp rose petals • 30g fresh mint leaves • 30g fresh coriander, chopped • 1 tsp garam masala powder • 250g basmati rice, soaked • 3 green cardamoms • 1 cinnamon stick (around 1 inch) • 3 cloves • 1 black cardamom • 7-8 black peppercorns • ½ tsp screw pine water • ½ tsp rose water • 3 tbsp pure ghee • ½ tsp caraway seeds • A few saffron strands • 2 tbsp milk • 1 inch ginger piece, cut into thin strips • Store-bought dough pastry (to seal) Method 1 Place the mutton pieces in a deep bowl, add the papaya paste and mix well so that all the mutton pieces are covered with the paste. Cover the bowl with cling film and refrigerate for around 8-10 hrs so the mutton gets tenderised. 2 Heat sufficient oil in a frying pan and add the onions – deep-fry until well browned. Drain on absorbent paper. 3 Take the mutton out and add yoghurt, green chillis, salt, turmeric powder, red chili powder, ginger paste, garlic paste, half the fried onions, 1 tbsp rose petals, ½ the fresh mint, ½ the fresh coriander and garam masala powder and mix well. Cover the bowl with cling film and refrigerate for at least 30 mins. 4 Bring five cups of water to boil on high heat. Add drained rice and cook the rice with salt till half done. Drain well. Sprinkle green cardamoms, cinnamon, cloves, black cardamom, peppercorns, ½ the kewra water, rose water, 2 tbsp ghee and caraway seeds over the rice and mix well. 5 Dissolve saffron in warm milk. 6 Take a deep non-stick pan and spread the marinated mutton and top with the rice. Sprinkle the remaining fried onions, remaining kewra water, mint, coriander, saffron milk, milk, remaining ghee and rose petals and ginger strips. Cover the pan and seal with the dough. Place a disc-shaped flat pan (tawa) under the rice pan and cook on low heat for 45-60 mins or till both the mutton and rice are completely cooked. Set aside for 15 mins before opening the seal. Serve hot.

SERVES 4 Ingredients • 100g butter • 350g chocolate • 3 tbsp cocoa • 250g caster sugar • 5 large eggs • 5 tbsp walnuts, ground • 100g walnut chunks • 1 tbsp cocoa • 1 tbsp icing sugar • Berries (garnish)
Method 1 Preheat the oven to 180C. Grease a 20cm baking tin and set aside. 2 Melt together the butter and chocolate over a bain marie (pot of water) and stir in the cocoa. 3 Cream together the sugar and eggs until thick and pale. Gently mix in the ground walnuts and chunks. Fold together the melted chocolate mix and egg mixture until completely combined. Pour into your prepared tin and bake for 40 mins (or until the top is dry). Set aside to cool. 4 Before serving, sift cocoa and icing sugar all over. Garnish with fresh berries.

Organic beef fillet carpaccio SERVES 4 Ingredients • 600g organic beef tenderloin • Pinch of rock salt • 8g savora mustard • 20g carrots, julienne • 20g yellow zucchinis, julienne • 20g green zucchinis, julienne • 8g grain mustard • 2 tbsp olive oil • 80g Parmesan cheese • 4g black lava salt • 12g parsley and rosemary, chopped Method 1 Cut the tenderloin and shape into small rectangles. Beat the meat with a mallet to get wafer thin pieces. On a plate, add 3 small dots of savora mustard, spread it, and place the pieces of beef on top. Sprinkle some rock salt on the beef. 2 Blanch the vegetables and then chill in ice water. Drain and mix some grain mustard and olive oil. Season and arrange on alternate beef slices. 3 With a peeler, peel strips of parmesan and arrange it on the beef. 4 Garnish with black lava salt and chopped herbs. Finish off with a sprinkle of olive oil.

SERVES 4 INGREDIENTS • 800g lobster (whole piece) • 250ml vegetable oil • 100g all-purpose flour • 10g ginger, julienne • 60g string beans, cut 1 inch long • 30g Thai eggplants • 20g straw mushrooms • 3 pcs red chillies • 10g sweet basil leaves • 40g small garlic, chopped • 40g small chilli, chopped • 1 tbsp fish sauce • 1 tbsp oyster sauce • 20g sugar • 1 tomato, for garnish • 1 carved pumpkin flower (optional) • 1 carved zucchini leaf (optional)
METHOD 1 Remove the meat from the lobster and cut into cubes. Steam the lobster head and set aside. 2 Heat oil and deep-fry the lobster head. Set aside for decoration. 3 Coat the lobster meat with flour. Deep fry and set aside. 4 Heat the oil, and sauté the garlic and chilli until fragrant. Add the lobster meat, eggplant, string beans, mushrooms and ginger, and stir fry until cooked. Add the chilli and sweet basil, and season with oyster sauce, fish sauce and sugar. 5 Decorate a bowl or plate with sliced tomatoes, pumpkin flower carving, the zucchini leaf carving and lobster head. Put the lobster meat and vegetables in the middle and garnish with basil.

Risotto Arancini MAKES 12pcs Ingredients • 1l salt-reduced chicken stock. • 1 tbsp olive oil • 40g butter • 1 brown onion, finely chopped • 2 garlic cloves, crushed • 100g button mushrooms, finely chopped • 100g Swiss brown mushrooms, finely chopped • 330g Arborio risotto rice • 125ml dry white wine • 40g parmesan, shredded FOR THE ARANCINI • 115g dried (packaged) breadcrumbs • 75g plain flour • 2 eggs • 100g gorgonzola, cut into 2cm pieces • Vegetable oil, to deep fry Method 1 Bring the stock and saffron to the boil over high heat. Reduce heat and hold at a gentle simmer. 2 Heat oil and half the butter in a saucepan over medium heat. Cook the onions and garlic, stirring for 5 mins, or until soft and translucent. Add mushrooms and stir for 3-5 mins or until soft. Add the rice and stir for 2-3 mins or until the grains appear slightly glassy. Toasting the grains ensures the rice cooks evenly. Follow this with the wine and stir until the liquid is absorbed. Add 125ml of stock and stir until the liquid is absorbed. Continue, adding 1 ladleful at a time, until the rice is tender yet firm – about 20 mins. Remove from heat, and stir in parmesan and remaining butter. Season. 3 Spread the risotto onto a lined tray and set aside to cool a little. Cover with cling wrap and refrigerate overnight. 4 Whisk the eggs and set aside. 5 Wet hands a little to shape 1/3 cup of the risotto into rice balls, and then press down the centre with your thumb, to make an indent. Add a piece of gorgonzola in this indent and mould the risotto around it to close. 6 Place the risotto ball on a chopping board and roll with both hands, moulding it into a conical shape. Roll into flour, shake off the excess, and then dip it into the egg and breadcrumbs, pressing to coat. Place on a tray for 30 mins to chill. Heat oil to 170C and cook over medium-high heat for 6-8 mins, or until golden. Drain on paper towels and serve.

SERVES 4 Ingredients • 800g Australian beef tenderloin • 40g garlic • 20g sugar • 20g black pepper • 50ml vegetable oil FOR THE SAUCE • 120ml white rice wine vinegar • 120mk light soy sauce • 120ml dark soy sauce • 40ml fish sauce FOR GARNISH • 80g red onions • 200g scallions • 400g chicken breast • 16-20 pcs shrimp • 120g ginger • 120ml Shaoxing wine • 120ml red wine vinegar

METHOD 1 Marinate the beef with black pepper, sugar, vegetable oil, and garlic. Refrigerate for 1 day. 2 Combine all the sauce ingredients and mix well. Chill for 3 days. 3 Heat a wok over medium high heat, and add the oil. When it smokes, add the meat and sear well. Tip in the shrimps, toss for 1-2 mins, and remove from heat and keep warm. 4 Sauté the garlic and onion, mix in with the meat and shrimps and add the sauce on top. Add in the springs onions, toss and serve. 5 Place the meat on a plate and add the hot ingredients on top. Serve with rice and salad on the side.

Beef Tartar
SERVES 4 Ingredients • 200g of trimmed center-cut beef tenderloin (optional Wagyu beef grade 6) • 3 tbsp extra-virgin olive oil, plus more to taste • 1 egg yolk • 3 tbsp salt-packed capers, soaked in water, rinsed, and drained • 2 tbsp flat-leaf parsley, chopped • 1 small red onion, minced • Fleur de sel and freshly ground black pepper, to taste • Sherry vinegar, to taste • Dijon mustard, for serving
Method 1 Chill beef in the freezer for 45 mins. Transfer it to a cutting board and use a very sharp knife to cut the beef lengthwise into inch thick slices. Julienne each strip crosswise to finely mince the beef. Place in a bowl and refrigerate. 2 Drizzle oil into a medium bowl and stir in the egg yolk. Add capers, parsley, onions, and season with salt and pepper. 3 Fold in the minced beef, and season to taste with more salt, pepper, and oil, along with a few drops of vinegar (optional). Place the tartar on two chilled serving plates and serve with Dijon mustard.

Roasted duck curry
SERVES 4-5 INGREDIENTS • 2.5kg roasted duck • 15g white pepper • 100ml vinegar • 100g small eggplant • 50g cherry tomatoes • 150g red curry paste • 100g palm sugar • 500ml coconut milk • 150ml fish sauce • 150g pineapple, for garnish • 50g kaffir lime leaves, for garnish • 50g sweet basil, for garnish • 50g red chillies, for garnish
Method 1 Lay the clean duck into a pan and pour the vinegar over the skin. Marinate it with white pepper and light soy sauce, and place in the oven at 160C for 1 hr. 2 Heat the oil in a saucepan and sauté the curry paste until fragrant. Add coconut milk and seasoning, followed by the sliced roasted duck and rest of the ingredients, and cook for 20 mins. Pour into a bowl, garnish with pineapple, kaffir lime leaves, sweet basil, and red chillies, before serving.

Sticky toffee pudding and custard SERVES 4 Ingredients • 43g butter • 70g sugar • 85g self raising flour • 1 egg • 85g dates • 85ml water • ½ vanilla pod • 1 tsp bicarbonate of soda FOR THE FUDGE SAUCE • 70g sugar • 25g glucose • 4g butter • 140ml cream FOR THE CUSTARD • 285ml milk • 28ml single cream • ½ vanilla pod • 2 eggs, yolks only • 15g caster sugar • 1 tsp corn flour Method 1 Preheat oven to 170C. 2 Brush 4 (225g) pudding moulds with melted butter and dust with flour and set aside. 3 Place dates, vanilla and water in a pan and slowly reduce by half, remove the vanilla pod and stir in bicarbonate of soda. 4 Cream together butter and sugar until light and fluffy. Gradually add the eggs, make sure they are mixed well and then the flour. Fold in the date mix and pour into the moulds – about ¾ full. Bake for 25-30 mins and check with a wooden skewer to see if it is clean. 5 To make the sauce, dissolve the sugar in the water and move the visible sugar crystal down the sides of the pan. Place on a medium heat until the mixture begins to boil. Add the glucose and move down any visible sugar on the sides of the pan. Increase the heat. Once the sugar has reached a dark caramel, gently stir in half the cream and butter, leave to cool of the heat for 20 mins and add the rest of the cream. Pass through a fine sieve, chill and store. Bring the milk, cream and vanilla pod to simmering point, slowly over a low heat. Remove the vanilla pod 6 Whisk the yolks, sugar and corn flour together in a bowl until well blended. Pour the hot milk and cream on to the eggs and sugar, whisking all the time with a balloon whisk. Return to the pan, and over a low heat gently stir with a wooden spatula until thickened. Pour the custard into a container and cover the top with cling film to prevent skin forming. 7 Serve the puddings with the toffee sauce drizzled over, and custard on top.

Lamb Rendang SERVES 4 Ingredients • 10 red shallot onions • 2 stalks lemongrass • 3cm ginger • 3cm galangal • 3 cloves garlic • 2-3 stems of curry leaf • 3 long whole chillies • 2 tbsp oil • 500g lamb, cubed • 2 tbsp curry powder Malay • 500ml coconut milk • 1 tbsp thick soy sauce • 250ml coconut cream • Ground sea salt, to taste • ¼ cup desiccated coconut, dry roasted til golden Method 1 Slice the onions very finely and set aside. Purée remaining fresh ingredients and dried chillies with 1 tbsp of the oil in a blender. 2 Coat lamb with the blended fresh ingredients and curry powder. 3 Heat remaining oil, sauté onions until golden, add lamb on high heat, a few cubes at a time, to seal. Cover and simmer for 10 mins. Add coconut milk and simmer for another 20 mins. Then add thick soy sauce, coconut cream and salt to taste, stirring continuously to reduce gravy. Add dry roasted desiccated coconut and stir through to achieve a dry texture before serving.

INGREDIENTS • 455g salmon fillet, skin and pin bones removed • 2 tbsp Pernod (optional) • Salt and freshly ground white pepper • 1 stick of unsalted butter, at room temperature, divided • Few tbsp of clarified butter • 1 large shallot, minced • 2 tbsp sour cream, mayonnaise, or crème fraiche • 228g unsliced smoked salmon, chilled, skin and dark layer removed if necessary, cut into ¼ inch dice and brought to room temperature • 2 tbsp lemon juice • 1 tbsp extra-virgin olive oil • 2-3 tbsp chives, minced METHOD 1 Trim and discard any dark flesh from the salmon fillet. Place the fish in a shallow baking dish and sprinkle each side with 1 tbsp of the Pernod, 1½ tsp salt and ¼ tsp pepper. Cover with plastic wrap and refrigerate for 30-60 mins, turning the fish over halfway through the marination. 2 Bring water to a simmer in the bottom of a steamer. Remove the salmon from the baking dish, place it in the steamer and cover. Steam gently for 5-8 mins; if you see steam pouring out the sides of the steamer, lower the heat. Check the salmon by separating the flesh with the tip of a knife and peering at the centre. It should be medium-rare. Remove from the steamer. 3 Meanwhile, melt 1 tbsp of the butter in a medium sauté pan over low heat. Add the shallots and cook, stirring occasionally, for 2 mins. Season with a pinch of salt and continue to cook for 3-4 mins, until the shallots have softened but not browned. Remove from the heat. 4 Put 7 tbsp butter in a small bowl and beat with a rubber spatula until it is smooth, and resembles mayonnaise in consistency. Stir in the sour cream or crème fraiche (whichever you are using). Set aside. 5 Put the cooked salmon in a large bowl and stir to break it into large chunks (Because you will be stirring in the remaining ingredients, you don’t want to break up the pieces too much). Stir in the smoked salmon, shallots, lemon juice, and olive oil. Season with ¼ tsp salt and ½ tsp pepper. Fold in the butter mixture. 6 Transfer the rillettes to 2 ceramic or glass serving bowls, leaving at least ½ inch of space at the top. Smooth the top of the rillettes and wipe the inside rims clean. Refrigerate for about 1 hr, until cold. Pour a ¼ inch-thick layer of clarified butter over the top of the rillettes to create a seal. 7 To serve, slice 5 pieces of French baguette and coat with olive oil, season with salt and pepper and toast in the oven for 15 mins or until golden brown, at 160C. Once ready, place the rillete onto a flat plate, remove the sealed butter which was on top. Place toasted croutons on the side and serve.

MAKES 1 pie (SERVES 10 slices) Ingredients • 250g Oreo biscuits, cream removed • 175g unsalted butter, melted • 180g white marshmallows • 180ml milk • ¼ tsp peppermint essence • 1/8 tsp green food colouring • 700ml cream
Method 1 Preheat the oven to 180C. Grease a 20cm baking tin and set aside. 2 Melt together the butter and chocolate over a bain marie (pot of water) and stir in the cocoa. 3 Cream together the sugar and eggs until thick and pale. Gently mix in the ground walnuts and chunks. Fold together the melted chocolate mix and egg mixture until completely combined. Pour into your prepared tin and bake for 40 mins (or until the top is dry). Set aside to cool. 4 Before serving, sift cocoa and icing sugar all over the pie.

Assorted Iranian kebabs SERVES 4 Ingredients FOR CHICKEN KEBABS • 500g chicken thighs, cubed • 20ml lemon juice • 40ml orange juice • 10ml white vinegar • 500ml plain unsweetened yoghurt • A pinch of dry saffron • 30g dijon mustard • Salt and cracked black pepper, to taste FOR LAMB CUBE KEBABS • 500g lamb shoulder cubes • 20g onion powder • 60g garlic, chopped • 20ml lemon juice • 400ml plain unsweetened yoghurt • 100ml labneh FOR LAMB KOOBIDEH KEBABS • 400g lamb mince • 120g white onion purée • A pinch of saffron • 10g baking soda • 10g sumac powder • 2 whole eggs • Salt and cracked black pepper, to taste Method 1 Mix the lemon juice, orange juice, white vinegar, plain yoghurt, saffron and Dijon mustard in a large mixing bowl. Add the chicken thigh cubes to the marinade and refrigerate for 12 hrs or overnight. 2 To make the lamb cube kebabs, mix the onion powder, chopped garlic, lemon juice, yoghurt and labneh together making a marinade. Marinate the lamb cubes and refrigerate for 12 hrs or overnight. 3 For the lamb koobideh kebab, mix the mince with the white onion purée, saffron, baking soda and sumac for 12 hrs or overnight. Add the eggs and pepper and make small 100g meat balls, before pressing onto a metal skewer – make each 12 inches long and 1 inch thick. Cook for 5-6 mins on a charcoal barbecue or until done on a grill. 4 Season the other two kebabs and skewer. Grill for 8-10 min. 5 Serve all the kebabs with saffron rice, grilled tomatoes, onions and yoghurt on the side.

Spiced lamb chops SERVES 4 Ingredients • 1kg lamb chops • 4 garlic cloves • 1 tbsp grated ginger • 1 lemon (skin removed) • 3-6 green chillies • ½ bunch fresh coriander leaves • 2 tsp cardamom seeds • 1 tsp cinnamon powder • 1 ½ tsp ground black pepper • 4 cloves • 2 bay leaves • Few strands of saffron (optional) • 2 tbsp cooking oil • Salt, to taste Method 1 Prick each lamb chop a few times with a fork. 2 Blend the garlic, ginger, lemon, green chillies, coriander leaves, cardamoms, cloves, bay leaves, cinnamon powder, black pepper, saffron, cooking oil and salt to make a smooth paste. 3 Season and mix with the lamb chops. Place in an airtight container and refrigerate for a few hours or overnight. 4 Preheat the oven at 200C and line a baking tray with aluminium foil. Place the lamb chops on the tray and bake on the centre rack until brown and dry – turn each piece half way through. The chops should look crisp with charred pieces. Drain the excess liquid and reserve for serving. 5 Serve the chops hot, garnish with onions, green chillies and the gravy (thickened with 1 tsp corn flour, if required) or a mint sauce or yoghurt on the side.

Spicy mussels SERVES 4 INGREDIENTS 3.2 kg mussels (Jumbo Dutch) 2 tbsp salt 2 tbsp pepper 3 large onions 1 leek stick 500ml beer 900g Belgian fries, to serve 200g Belgian mayonnaise, to serve 50ml frying oil FOR THE SPICY SAUCE 1 onion, chopped 20g garlic, chopped 20g ginger 20g chilly powder 20g coriander powder 10g cumin powder 10g masala powder 10ml olive oil 1l tomato coulis 100g parsley Method 1 Scrub, wash and clean the mussels. Place in a big pot with the onions and leeks. 2 To make the sauce, sautĂŠ the onions with the garlic until tender. Add the rest of the ingredients and cook until it becomes a thick gravy. Remove from the heat, blend thoroughly, and season. 3 Add the sauce to the mussels, along with the beer and vegetables. Toss well, cover, and cook for 7-8 mins. Serve with the fries and mayonnaise on the side.

Poached Salmon Salad SERVES 4 Ingredients • 4 pcs (150g) salmon • 50g dill sprigs • 150g cherry tomatoes • 250g baby potatoes • 150g asparagus • 150g green peas • A pinch of salt • A pinch of pepper • 500g iceberg lettuce • 600g mixed lettuce leaves FOR THE VINAIGRETTE DRESSING • 50ml white wine vinegar •100ml olive oil • 1 tbsp Dijon mustard • A pinch of salt • A pinch of pepper Method 1 Put the dill sprigs in a saucepan, and top with the salmon. Add 2 cups of water; bring to a boil. Simmer over very low heat until the salmon is nearly cooked through – about 5 mins; transfer to a plate and let cool slightly. Break the salmon into large flakes and set aside to cool. 2 To make the dressing, in a mixing bowl, whisk together white wine vinegar, olive oil, Dijon mustard, salt, and pepper. 3 In a large bowl, place the poached salmon, cherry tomatoes, baby potatoes, asparagus and mixed lettuce leaves. Combine with vinaigrette dressing, and serve on a bed of iceberg lettuce.

Prime68 Cheesecake SERVES 4 INGREDIENTS • Butter, at room temperature, to brush the pans with • 350g cream cheese, room temperature • 115g granulated sugar • 1/2 tsp pure vanilla extract • 2 large eggs • 120ml sour cream, room temperature FOR THE GRAHAM CRACKER CRUST • 170g graham cracker crumbs • 85g granulated sugar • 120g melted butter FOR THE BLUEBERRY COMPOTE • 250g blueberries • 25g sugar • 1 star anise • Juice of 1 lemon Method 1 To make the crust, whisk together the butter and sugar and then add in the cracker crumbs. 2 Simmer the blueberries slightly and add the sugar. Continue simmering until it becomes tender and a quarter of them open up. Add the star anise and lemon juice and mix well. Cool to room temperature and chill. 3 Brush insides of 4 individual spring form pans (4.5 inches/ 11.5 cm) with butter. Pack graham cracker crust up the sides and on the bottom of the pans. Refrigerate until ready to use. 4 Preheat an oven to 120C. In a mixer bowl with the paddle attachment, beat cream cheese until smooth, scraping down sides of bowl as needed. Add the sugar and vanilla, and beat until smooth. Add eggs, scraping down sides of bowl after each addition. Beat in the sour cream and pour the mixture through a medium - holed sieve –discarding any clumps. Pour into the pans and bake until just set – around 1 hr 15 mins (the cakes should be slightly puffed but not browned). 5 Carefully run a paring knife around the crust to loosen from the pan. Cool the cheesecakes for 30 mins on a rack, at room temperature. Refrigerate until thoroughly chilled, at least 8 hrs. Serve with the berries and compote on the side.

You can pick from palm hearts, avocado and ceviche, served at the salad bar, before the passadores (meat waiters) arrive at your table with large skewers of over 15 meat cut varieties. Chicken wings, drumsticks, lamb chops, medallions, rib-eye, picanha (rump cap), and sirloin, are just a few of what’s on offer. Douse your meat with condiments like garlic sauce and vinaigrette, and don’t forget to try the absolutely divine caramelised pineapple when it comes around, as well as specialties like coxinha (potato bread stuffed with chicken), fried bananas and freshly baked cheese bread. Escondidinho SERVES 4 Ingredients • 500g dried beef • 60g onions, chopped • 60g garlic • 220g fresh tomatoes • 500g cassava (tapioca) • 200ml fresh cream • 200g cream cheese • 200g cheddar cheese • Salt to taste Method 1 Wash the beef and add it to a pot of water. Cook for 20 mins. 2 Shred the meat and sauté with half of the onions, half of the garlic and tomatoes. Set aside. 3 Boil the cassava, and when it becomes tender (check with a fork) strain the water, and add the rest of the onions, garlic, salt and fresh cream. Mash well. 4 In a bowl, make a layer with half portion of the mashed cassava, and cover with the shredded meat. 5 Make another layer with the rest of the mashed cassava and cover it with the cream cheese. Top with cheddar cheese and gratin in a preheated oven at 200C for 20 mins.

Foie Gras Terrine SERVES 4 INGREDIENTS • 1 (600g) whole raw foie gras (available at specialty stores) • ½ tsp salt • Freshly crushed peppercorn • 60ml white port wine FOR THE PEAR CIDER GASTRIQUE • 100g sugar • 100ml pear juice • 25ml cider vinegar INGREDIENTS 1 Bring the foie gras to room temperature. Make a shallow incision in the center of the foie gras and open gently. Devein it (gently remove the blood vessels) using tweezers or the tip of a knife, place in a dish and season on both sides. Drizzle the port wine, cover with plastic wrap and refrigerate for 12 hrs. 2 Cut a piece of cardboard the same size as the terrine dish and wrap in aluminum foil. 3 Remove the foie gras and set aside for 30 mins at room temperature. 4 Preheat oven to 100C. 5 Place the foie gras in a 15x9cm terrine dish, cover with aluminum foil and place the terrine in a water bath. Add enough hot water to fill the bath halfway up. Bake for 1 hr 20 mins or until a meat thermometer inserted in the center of the dish reads 55C. 6 Remove from the water bath and take out the foil. Tip the dish carefully to drain any excess fat. 7 Place the aluminum foil-covered cardboard on the foie gras dish, and hold in place with two small cans – refrigerate for 24 hrs. 8 Unmould by dipping the base of the dish in boiling water. Turn over and slice. 9 Combine the gastrique ingredients in a saucepan; bring to a boil over medium-high heat and then reduce heat to low and simmer until fruit is tender – about 10 - 20 mins. Remove the seeds and pour mixture into a food processor to blend until smooth. 10 Serve the foie gras sliced, with the pear cider sauce and crackers.

Chocolate Spoonbread SERVES 4 INGREDIENTS • 500ml heavy cream • 225ml milk • 1 vanilla pod, scraped • ½ tbsp salt • 3 whole eggs • 3 egg yolks • 110g sugar • 225g of 70% dark chocolate, chopped • 50ml caramel sauce or syrup • 500g devil’s food cake or brownies Method 1 Place the milk and cream together in a pot and bring to a boil. Add the vanilla and salt. 2 Whisk the whole eggs and egg yolks together with the sugar, and slowly add in the hot cream while whisking it together. Pour the mixture over the chopped chocolate, and mix until it melts. 3 Stir in the caramel sauce or syrup, strain the mixture into a container, and set aside to cool down. 4 Place cubes of the cake or brownie into a mould and pour the mixture over. Refrigerate until cool. 5 Preheat the oven to 170C and bake for 25 mins or until set.
