CHICKEN TOPKAPI WITH FREEKEH, CHICKEN LIVER & NUTS Serves 2

INGREDIENTS Half chicken, boneless with skin

10g salt 5g crushed pepper

For the chicken marinade

For the freekeh

1 cup onion juice 1 cup tomato juice ½ cup lemon juice ½ cup olive oil

500g freekeh 2 cups chicken stock 1 cup red onion 1 clove garlic, chopped

1 Clean the chicken by rubbing salt and lemon over it, then wash with cold running water. Pat it dry with a paper towel. 2 Marinate the chicken with the marinade and keep it aside for half an hour. 3 Wash the freekeh with cold water and soak it for half an hour. 4 In a pot, sauté the cinnamon stick, cardamom, star anise and bay leaf. Then add onion and garlic and sauté until it becomes transparent. 5 Add the freekeh and continue to sauté for 5 minutes. Then add salt, pepper and nutmeg powder along with chicken stock. 6 Boil it for 5 minutes, then cover and simmer for 20-30 minutes until cooked.

7 Mix the cooked freekeh with nuts, tomato chopped and coriander. 8 In a skillet, sauté the chicken liver cubes until cooked, then season with lemon juice, salt and pepper. 9 Mix the cooked chicken livers with freekeh for the stuffing of the chicken. 10 Stuffed the chicken with mixed freekeh and then roll it. 11 Cook the rolled chicken in a preheated oven at 180 degree-celsius for 20 minutes.

PRESENTATION: Make a bed of freekeh on a plate and placed the cooked chicken on top of it and served with fresh yoghurt. Garnish it with fresh cilantro and mixed toasted nuts.

MUGHRABIA CHICKEN INGREDIENTS 150 Mughrabia seeds 50g shallots ½ tsp saffron 200ml chicken stock ½ tsp cardamon powder 1 tsp cinnamon powder 1 tsp cumin powder 2ml oil olive extra virgin 1 tsp salt

50g chickpeas 20g caraway seeds 400g whole chicken 60g butter 1 bay leaf 1 carrot 1 large onion 3 tbsp corn-starch

1 Clean the chicken, season it with some allspice, salt and pepper. 2 Brown it in a couple of tablespoons of oil in a large oven and add the large onion. Pour 6 cups of water over the chicken and add a cinnamon stick, bay leaf and carrot, and let it simmer gently for at least one hour, skimming the froth at the surface. (This step can be done the day before). 3 Peel and brown the shallots in some oil (or better yet, clarified butter) until the onions are evenly browned on all sides. 4 Strain the chicken, keeping the bouillon simmering gently in a large pot or saucepan. 5 Add the chickpeas, shallots and half the spices to the chicken bouillon. 6 Take apart the chicken, dumping the bones and skin; cut the chicken meat into large pieces and set them aside on a plate. 7 Cook the Mughrabia in a large pot filled with salted water for 10 minutes. 8 Drain and rinse under cold water, before heating a couple of

Add the rest of the spices and fry for five minutes. 9 Gradually add several ladles of chicken bouillon (about 2 1/2 cups) to the Mughrabia, and keep over a low heat, simmering gently and stirring from time to time until the grains feel soft and thoroughly cooked (should take approx. 20 minutes.) 10 Add one cup of the chickpeas and one cup of shallots to the Mughrabia, leaving the rest for the sauce. 11 Boil down the remainder of the broth until you have 3 cups left; add the corn-starch (diluted in a little water) to the steaming broth and stir to thicken it. 12 Keep a few chickpeas and shallots in the sauce and serve in a separate saucer with the Mughrabia. Serve the Mughrabia with the chicken pieces, chickpeas and onions, and have the warm sauce available in a separate saucer.

During the early part of his career, he worked in various hotels in Spain, Italy, Egypt, Saudi Arabia, Qatar and the UAE. He has strong expertise in molecular gastronomy cuisine, and gained his inspiration to pursue a career in cooking from his father – who was a pastry chef. STUFFED VINE LEAVES WITH MEAT AND LAMB CHOPS A popular Mediterranean dish commonly served as an appetizer. Serves 2

INGREDIENTS 500g lamb chops Yoghurt to serve Salt, sweet pepper, dash of cinnamon to taste

300g fresh vine leaves 200g minced meat 1 cup short rice grains 1 tbsp vegetable oil

1 Blanch the vine leaves in boiling water for 2 minutes to soften, then set aside to drain. (For preserved vine leaves, just wash in cold water) 2 For the stuffing, fry the minced meat with the vegetable oil until brown, then mix with the washed rice grains and season with 1 teaspoon of salt, 1/2 teaspoon sweet pepper and cinnamon 3 Place one vine leaf on a working board, face down, and put a teaspoon of the stuffing in the centre, before folding the sides and rolling it. Repeat until you reach your desired quantity.

4 Rub the lamb chops with salt and pepper and place them at the bottom of a large pot 5 Tightly place the rolls over the lamb chops, then place an upsidedown plate on top to prevent the rolls from opening while cooking. 6 Add water until it reaches half an inch above the rolls. Season with salt and cook on a medium heat for 15 minutes. When the water starts to boil, lower the heat and cook for 20 minutes more or until the rice is soft. 7 Serve with yoghurt on the side.

1 Wash and boil the beetroot half way through, keep aside for cooling, once cooled grate it. In another pot boil the potato and grate it. 2 Heat ghee in a thick bottom pan add grated beetroot sautÊ until its cooked ensure it doesn’t lose color add pinch of turmeric powder, garam masala, chopped green chili, ginger. Add grated potato for binding. Lastly, add chop coriander.

3 Check the seasoning and keep the mixture aside to cool. 4 Make small patties of mixture and flat with the palm give shape as seen & insert in skewers, coat with black and white sesame. Grill on the pan for a min on each side, serve with sour cream foam. 5 For the sour cream foam, take sour cream in bowl and whisk it, season with salt and make foam with the help of gas canister, serve sour cream foam in nice miniature, sprinkle orange zest. If no canister just take the foamy part of cream.

Chef profile: Chef Aatir Aatir completed his education in Physics, chemistry and Biology. Having interest in Arts, he completed his graduation B.Sc. in Culinary arts from London. Aatir has 10 year of experience in various kitchens. Signature by Sanjeev Kapoor since 2014 where he engineered many recipes

including iconic desserts like lentil Ice cream and Lychee Marble Soup. He gained high experiences in London under Michelin star Chef Dani Garcia in Melia White House London. Chef Russell for of Marylebone Hotel and worked in different restaurants around UK. He also participated in great venues

like the British Royal wedding in 2012. He has learned gastronomy from Professor David Foskett, a world-famous author and writer of culinary books and brings all his experiences on plate. He hosted web series fuels for Spartan race in Dubai and has cooked for UAE Royal family and Prime minister of India.
