Heat the duck fat till smoking hot, then sear the
beef on all sides. ,n a large roasting tin, place the chopped vegetables and thyme and set the beef on top. 5oast for mins for rare, for medium rare or for well done. 5emove from oven, cover with foil on the carving board and let it rest for approximately mins. 2 3eel the potatoes, cut into pieces and parboil then drain. 6hake a little to rough up the outsides. Add duck fat into a small roasting tin and heat at C for mins, then add the potatoes, garlic, thyme and salt, making sure potatoes are well coated. 5oast for around - mins until they turn golden.
3 For the carrot and parsnip mash, boil the vegetables until tender and drain. 0ash till combined but still textured, then add the butter and cream and combine, then season. 4 For the gravy, discard the vegetables from the roasting pan and put pan over a medium heat. 'egla]e with Ă&#x20AC;our and wine or stock, then let it simmer to thicken for mins. 6eason. 5 To serve, carve the beef into slices and place on plates with the <orkshire puddings, roast potatoes and the vegetable sides. 3our the gravy over the top.

RISOTTO ALL ARMENESE (RISOTTO WITH PORCINI MUSHROOMS AND TRUFFLE OIL)
SERVES 4 Ingredients 840g carnaroli rice 240g porcini mushrooms 240g onions 80ml olive oil 200g butter 8g thyme 800ml chicken stock
720g grana padano cheese 80g toma cheese 8g parsley 4 tsp trufÀe oil Method 1 Cook the mushrooms with the chopped onion, thyme, olive oil and butter in a deep saucepan. Add the carnaroli rice and toss it
in a pan for a 1 min.. 2 Add the chicken stock and let it simmer for 15 mins until the rice is al dente, stirring at all times. 3 Add the two cheeses, parsley and the trufÀe oil. Stir till the risotto is smooth and creamy. 4 Spoon the risotto into a pasta bowl and serve immediately.

SMOKED SALMON AND CREAM CHEESE CROQUETTES SERVES 4 Ingredients 50g smoked salmon 300g cream cheese 5g chives 1g green chilli 2 eggs, whipped 150g bread crumbs Method 1 Dice the smoked salmon and set aside. 2 Finely slice chives and chillies. 3 Combine cream cheese, chives, chilies and smoked salmon. 4 Make small 20g balls of the cheese and salmon mixture, dip into the whipped eggs mixture and then into the bowl of bread crumbs. Deep fry at 180C until golden brown and serve.

BOEUF BOURGUIGNON SERVES 4 Ingredients 1kg beef shoulder (stewing beef) 100g beef bacon 2 carrots, peeled and sliced 1 onion, chopped 200g mushrooms, sliced 1 stalks celery, chopped 1 bottle red burgundy wine 473ml beef stock 28g Àour 4 tbsp olive oil 28g butter 1 small bunch parsley 1 sprig thyme 1 garlic clove, mashed 18 small white onions Salt and black pepper Method 1 Cut the bacon into small strips. Simmer for 10 mins in water and set aside to dry. When dry, cook bacon in a large heavy-bottomed saucepan with the olive oil at moderate heat for 2-3 mins. 2 Cut the beef into 2-inch cubes. Using the same saucepan, cook the beef in the bacon’s fat until browned. Remove the beef. Then place the onions, carrots, celery and
cook for 2-3 mins in the same pan. Remove the saucepan from the heat and take out all the fat. 3 Mix the butter and Àour to make a paste. 4 Put the beef and bacon with the vegetables back into the pan and then add salt and pepper. Cover with the butter and Àour mixture. Cook for 3-4 mins, uncovered, and turn the beef cubes. 5 Pour in the wine and enough stock so that it
covers the ingredients. Add the white onions, garlic and herbs. Bring to a boil. 6 Cover the pan and simmer for 3 hrs on low heat (the meat is done when the fork slides out easily from a beef cube). PENNETTE PASTA WITH GORGONZOLA
SERVES 1 Ingredients 240g penne pasta 100ml extra virgin olive oil 300g asparagus, julienne 100g cherry tomatoes, halved 100ml vegetable stock
100g sweet gorgonzola 30g butter 80g Parmesan cheese 20g fresh basil Method 1 Heat the oil and fry the asparagus and the cherry tomatoes. Add the vegetable stock.
2 Slowly add in the gorgonzola and the butter. Take off the heat and let the gorgonzola and the butter melt. 3 Cook the penne pasta in boiling salted water until al dente. Remove the pasta from the water and add it to the sauce. Add Parmesan cheese and let it heat up for a minute. Finish with fresh chopped basil.

THE IVY SHRIMP COCKTAIL SERVES 4 Ingredients 16 fresh prawns, peeled and refrigerated 175g iceberg lettuce, shredded 150g cucumber, peeled and julienne 25g spring onion, thinly sliced 1/2 tsp of dill, chopped For the Marie Rose sauce 200g mayonnaise 125g tomato ketchup 2ml hot sauce 3ml worcestershire sauce 1/2 lemon, juice only Cayenne pepper Method 1 Prepare the Marie Rose sauce by whisking all the ingredients together. Adjust the seasoning to your taste, and add the chopped dill. 2 To serve, place a spoonful of the sauce at the bottom of a chilled wine glass, add some of the shredded salad vegetables, then add 2 prawns. Spoon over more sauce and then repeat the process, adding more shredded lettuce, followed by the remaining 2 prawns. Top with sauce and sprinkle on the cayenne pepper. Repeate with the other 3 servings, serve immediately.

IRISH LAMB STEW SERVES 4 Ingredients 2.7kgs boneless lamb shoulder (cut into 3-4cm thick pieces) 1 tsp salt Corn oil, for browning meat 700g onions, thinly sliced 50g freshly ground black pepper 150g white Àour 50g garlic, peeled and ¿nely chopped 100g large yellow onions, peeled and ¿nely chopped 100ml white wine vinegar 200ml beef stock 200g beef bacon pieces, sliced 14g sugar 250g large carrots, cut into 1 inch pieces 250g large yellow onions peeled and sliced, cut round 250g potatoes, peeled and quartered 30g dried thyme, whole 10g bay leaf Salt and pepper to taste Chopped parsley, as garnish Method 1 Put the lamb in a large mixing bowl, and toss with salt, pepper and Àour to coat meat evenly. 2 Brown the meat in a frying pan with corn
oil for about 20 mins. 3 Put meat in a stove top casserole and leave 1/4 cup of fat in frying pan. Add the garlic and yellow onions and sauté until the onions begin to colour. Deglaze frying pan with 1/2 cup water and add the garlic and onion mixture to casserole
with bacon pieces, beef stock and sugar. Cover and simmer for 1 1/2 hrs or till tender. Add remaining ingredients to pot and simmer covered for 20 mins until vegetables are tender. Check seasoning and sprinkle the parsley over before serving. Serve with mashed potatoes.

BRAISED VEAL CHEEKS SERVES 8 Ingredients 2kg veal cheeks, trimmed 50ml olive oil 50g Àour 1 carrot, peeled and chopped 2 stalks celery, chopped 1 onion, chopped 2 garlic cloves, chopped 250ml red wine 250ml veal stock 5g whole pepper corns 3 bay leaves 2 sprigs of thyme Salt and pepper Baby vegetables of your choice, to serve Method 1 Season the meat well with salt and pepper. Preheat the oven to 140C. Dust in seasoned Àour, then remove any excess Àour. 2 In a frying pan, add olive oil and when at a medium heat, add the veal cheeks (this will need to be done in 2-3 batches). Slightly brown the meat. Remove and place in an ovenware dish. 3 Add vegetables to the frying pan and sauté until they reach a golden brown colour. Add to the veal cheeks. Deglaze with the wine, add the veal stock and bring to the boil. Add
the herbs. Top up with water so the meat is just covered with the liquid.Cover the dish with foil and transfer to the oven and braise for 3 to 4 hrs until the meat is really tender. 4 Cool it down after taking out the meat
from the liquid. Strain the liquid and reduce to a sauce consistency and check for seasoning. 5 To serve, warm up veal cheeks and add the sauce, and baby vegetables on the side.

MOROCCAN LAMB TAGINE WITH DRIED FRUITS SERVES 4 Ingredients 1kg lamb shank 200g onions, chopped 2 garlic cloves, chopped 50g ghee 100ml olive oil 10g white pepper powder 10g black pepper powder 10g ginger powder 2g saffron 1l water 10g salt For garnish 100g dried prunes 100g dried apricots 1pc cinnamon stick 100g dried ¿gs 10g roasted sesame seeds 100g butter 100g white sugar 5g cinnamon powder 100g almond, fried peeled For the seven spice mix 20g ground black pepper 20g paprika powder 20g ground cumin 10g ground coriander 10g ground cloves 10g ground nutmeg 10g ground cinnamon 10g ground cardamom
Method 1 Mix all the spices for the seven spice mix and place in an airtight container. Store in a cool dry place. 2 In a heavy pot, on high heat, place the lamb shanks and add chopped onions, minced garlic, olive oil, ghee and all the spices, including 10g of the seven spice mix.
3 Add water and cover, cook on low heat for 3 hrs or until the meat is tender. Keep aside. 4 In medium pan, place the sugar, butter, water, cinnamon stick, cinnamon powder and dried fruits. Cover and cooked for 10 mins. 5 Place the lamb shank in a tagine bowl; add the dried fruits and the sauce from the lamb shank, and serve.

CREAMED SNAILS AND MUSHROOMS
SERVES 4 Ingredients 2/3 cup crème fraîche 5 button mushrooms, trimmed 1 1/2 tbsp shallot, minced 1 tsp garlic, minced 1 can (18 to 24 snails) imported medium escargots, rinsed and drained
1 tbsp parsley or chervil, ¿nely chopped 1 tbsp chives, ¿nely chopped 1 tsp tarragon, ¿nely chopped 1 tbsp unsalted butter Method 1 Simmer the crème fraîche with the mushrooms, shallot, garlic, and 1/4 tsp each of salt and pepper in a heavy
medium saucepan, uncovered, stirring occasionally, until the mushrooms are tender and sauce is thickened. This will take approximately 10 mins. 2 Reduce the heat to low and then add the snails, herbs, and butter and stir for 1-2 mins, until the snails are heated through and the butter is incorporated. Season with salt and pepper.

STICKY DATE PUDDING Ingredients 450ml water 250g dates (dry) 17g baking soda 80g butter 250g sugar 250g Àour 11g baking powder 3g ground ginger 3 eggs, at room temperature Vanilla ice cream, to serve For the toffee sauce 336g butter 588g brown sugar 450ml heavy cream 10ml vanilla 1 Bring the dates and water to the boil and simmer for 5 mins, remove from heat and add baking soda. The mix will foam. Allow it to stand and ferment for 30 mins. 2 Cream the butter and sugar together, and add eggs one by one. Sift remaining dry ingredients together and fold into the egg mixture. Fold in the date mixture and mix until blended (the mix will be quite runny). 3 Line a 9”x 9” cake pan with parchment paper, spray the paper slightly with a cooking spray and ¿ll with the mixture. Wrap tightly with plastic wrap and bake in a water bath for about 1 hr or until the
middle of the pudding is set, at 175C. 4 To make the toffee sauce, place the butter and brown sugar in a saucepan. Heat over a low heat until the butter melts and the sugar dissolves. Add in the cream and

TRADITIONAL ROASTED LAMB Serves 4 Ingredients 250g lamb rack 1 whole artichoke 80g mashed potato 10g demiglace powder 40g breadcrumbs 5g of mint, rosemary, thyme each Salt and pepper Olive oil Method 1 Take a cleaned rack of lamb and cut in half. Heat some olive oil in a pan (on a relatively high heat) and sear the lamb on all sides until it has a nice roasted colour. Leave for a few mins to cool down in a baking tray. 2 Take a food processor or mixer and add mint, thyme and rosemary with the breadcrumbs, until everything is nicely integrated. Roll the cooled lamb in this mixture until fully covered and put in the oven at 200C until cooked (time will vary depending on how you like your meat). Cook at 65C for a medium lamb – with a touch of pink. 3 While the lamb is cooking, heat water in a small pot and add 10g of demiglace powder, and boil until it has a thick
consistency. Set aside. 4 Clean 1 artichoke, cut in half and boil for 15 mins in salted water. Drain and sauté in a pan with olive oil, set aside. 5 To plate, warm the mashed potato and
place them in the centre of a large plate, add the cooked lamb, place the sautéed artichokes around the potatoes and lamb rack.

SIGNATURE BEEF TARTARE SERVES 4 Ingredients 280g US prime beef tenderloin, minced 4 large eggs 400ml olive oil 84g beef tartare marinade 8g black whole pepper 200g sour dough bread, sliced into 8 pcs 80g baby watercress leaves For the marinade 8g tomato ketchup 4g salt 4g black pepper, crushed 20g small red onion 20g Dijon mustard 20g capers in vinegar 20g parsley, chopped 20g hot sauce (Tabasco) 8ml Worcestershire sauce For the Dijon vinnaigrette 2 1/2 ml sunÀower oil 1ml red wine vinegar 80g salt 40g whole black pepper 100g Dijon mustard Method 1 Mix all the marinade ingredients together and add it to the minced meat. Mix well and check seasoning. Place the meat in a circle on a plate. 2 Lower the egg carefully into the oil to
con¿t. Cook on low heat at 60C for 15 mins, the egg white should be the colour of the oil when done. 3 Grill the sliced sour dough bread and set aside. 4 To make the Dijon vinaigrette, slowly whisk all ingredients together, adding the sunÀower oil a little at a time, till the
mixture reaches pouring consistency. Check seasoning. 5 Toss the watercress leaves with 60ml of the Dijon vinnaigrette. 6 Place the egg on top of the beef on a plate, and serve with the grilled bread and watercress salad on the side.

RECIPE
SALMON TARTARE Ingredients 200g Tasmanian salmon 50g avocado 5g black wild rice 10ml lemon juice 10ml olive oil Pinch of pink salt 40g crème fraiche Coriander, to taste 200ml vegetable oil Method 1 To make the avocado purée, remove the skin from the avocado and place in a food processor and blend with half the olive oil until smooth. Season with salt and set aside. 2 To make the puffed rice, heat vegetable oil in pan to 190C. As the oil begins to smoke, gently pour dried rice into oil. Once puffed, strain and place onto paper towel and set aside. 3 Dice salmon into 5mm pieces and place into a stainless steel bowl. 4 Toss salmon with remaining olive oil and lemon juice, chopped coriander and salt and stir until evenly mixed. 5 Place the above ingredients into a small bowl. Garnish with the avocado purée, crème fraiche and finish with a sprig of coriander and sprinkle on the puffed rice for texture.

RAFFLES FAMOUS YORKSHIRE PUDDINGS “YORKIES” Serves 10 Ingredients 150g plain Àour 150g whole eggs, beaten 160ml whole milk 150ml canola oil or sunÀower oil Salt and pepper 100ml canola oil or sunÀower oil, for baking. Method 1 Using a hand or stick blender, mix together the Àour, eggs, salt, pepper and milk until smooth. Add the oil and continue mixing. The mixture should be of a coating consistency once the oil has been added. (the batter should not be too thick as it will stop the pudding from rising). 2 Approximately 2 hrs before serving, preheat the oven at 220C. Add a few drops of oil to non-stick 10cm pudding moulds with straight sides and heat for around 15-20 mins. Make sure the tray is deep enough to catch any oil that may spill from the tins during baking. 3 Remove the moulds when the oil is smoking hot and pour in the mixture leaving quarter space on top. 4 Bake for 10-12 mins at 220C. Once the puddings have reached up to 3 to 4 times the height of the mould and have become
brown on top, turn the oven heat down and bake for another 10 mins at 200C. These can be kept warm or re-heated just before serving with a roast, if you prefer crispier Yorkies.
TIP: Make sure to prepare the Àour mix in advance. This recipe can be used without resting, but allowing it to rest for 2-3 hrs will give better results.

DUCK CIVET SERVES 4 Ingredients 4 pieces duck breast and legs A pinch of white pepper 8 shallots or cipollini onions, peeled, trimmed and thinly sliced 4 garlic cloves, peeled 2 medium carrots, peeled, trimmed and thinly sliced 2 celery stalks, peeled, trimmed and cut into 1-inch-thick slices 8 whole black peppercorns, crushed 4 sprigs thyme 1 bay leaf 3 juniper berries 1 strip of orange zest or slices of orange, 1 inch wide (pith removed) Juice of ò an orange 1 tbsp unsalted butter 1 tbsp vegetable oil 1 tbsp all-purpose Àour 1 tbsp tomato paste 285g thick-sliced beef bacon, cut into ó inchwide strips Bunch of chives, chopped Method 1 Centre a rack in the oven and preheat oven to 175C to roast. 2 Pull off and discard as much of the duck fat as you can. Season the meat and the bones all over with salt and pepper and toss into a deep pot or pan. Scatter the vegetables, herbs and zest over the duck and pour over the orange juice. Cover the pan and marinate overnight in the refrigerator. If you can, turn the duck and bones in the marinade once or twice after
every few hours. 3 Lift the duck meat and bones out of the pot and dry the pieces between layers of paper towels. 4 Bring the marinade, along with its vegetables and spices, to a simmer. Keep the marinade over low heat while you brown the duck. 5 Warm the butter and oil over medium heat in a large ovenproof sauté pan with a lid. Slip the meat and bones into the pan and brown well on all sides. If your pan isn’t large enough to accommodate everything in one uncrowded layer, work in batches or use two pans (adding more oil and butter as needed). When the pieces are browned, add the Àour and cook, stirring, to brown the Àour. Stir in the tomato paste, pour in the warm marinade, including the vegetables and spices, and give
everything a good stir. Bring to the boil and season. 6 Cut a parchment paper circle to ¿t inside the pan, press it gently against the ingredients, and then cover the pan with its lid. Slide the pan into the oven and braise for 2 hrs, skimming the fat that rises to the surface and giving the pot a gentle stir every 30 mins. When the duck is ready, pull the pan from the oven, taste the sauce and add more salt and pepper if needed. (This can be made a day ahead, cooled, covered, and refrigerated. An hour before serving, reheat in a 150C oven.) 7 Toss the bacon into a small sauté pan or skillet set over medium heat. Cook, stirring till the bacon reduces its fat and browns lightly, about 8-10 mins. Drain on paper towels and place on top of the duck.

ASIAN BRAISED BEEF SHORT RIBS SERVES 4 Ingredients 2.2kgs beef short ribs, divided into 4 portions 1 cup soy sauce 1/4 cup rice wine vinegar 3 cloves garlic, peeled and smashed 1 (5-inch) stalk lemongrass, halved and smashed 1 tbsp ginger, peeled and minced 1/2 cup light brown sugar 947ml water 1/2 cup sliced spring onions, white part only 3/4 tsp red pepper, crushed 1/4 cup fresh orange juice 1/4 cup hoi sin sauce 2 tbsp fresh lemon juice Jasmine rice, for serving 2 tsp orange rind, ¿nely grated, for serving Sliced green onion tops, for garnish Method 1 Preheat the oven to 175C. In a wide stockpot or Dutch oven, combine the short ribs, soy sauce, vinegar, garlic, lemongrass, ginger, brown sugar, water, spring onions, crushed red pepper, and 2 tbsp of the orange juice. Make sure that the stockpot is deep enough so that the short ribs are fully submerged in the liquid mix.
2 Bake the short ribs, covered, for about 3 hrs, or until the meat is tender and falling off the bones. Remove the short ribs from the braising liquid and cover to keep warm. Increase the oven temperature to 220C. 3 Drain the fat off of the cooking liquid and discard. Place the remaining braising juices in a medium saucepan with the hoi sin sauce and bring to a boil over medium-high heat. Reduce the liquid until only about 1 1/4 cups remain. Strain
through a ¿ne-meshed strainer, discarding the solids. Stir in the remaining 2 tbsp of orange juice and the lemon juice. 4 Return the short ribs and the reduced sauce to the stockpot or Dutch oven, coating the short ribs well with the sauce. Bake for 10 mins, until the short ribs are heated through and slightly glazed. Serve hot over jasmine rice. Season each portion with the orange zest and garnish with the green onions, if you like.

LAMB RENDANG SERVES 4 Ingredients 10 red shallot onions 2 stalks lemongrass 3cm ginger 3cm galangal 3 cloves garlic 2-3 stems of curry leaf 3 long whole chillies 2 tbsp oil 500g lamb, cubed 2 tbsp curry powder Malay 500ml coconut milk 1 tbsp thick soy sauce 250ml coconut cream Ground sea salt, to taste ¼ cup desiccated coconut, dry roasted til golden Method 1 Slice the onions very ¿nely and set aside. Purée remaining fresh ingredients and dried chillies with 1 tbsp of the oil in a blender. 2 Coat lamb with the blended fresh ingredients and curry powder. 3 Heat remaining oil, sauté onions until golden, add lamb on high heat, a few cubes at a time, to seal. Cover and simmer for 10 mins. Add coconut milk and simmer for another 20 mins. Then add thick soy sauce, coconut cream and salt to taste, stirring continuously to reduce gravy. Add dry roasted desiccated coconut and stir through to achieve a dry texture before serving.

LOBSTER THERMIDOR SERVES 4 Ingredients 4x lobsters, around 500g each, cut in half 30g butter 25g Àour 250 ml ¿sh stock 100ml cooking double cream 18g Dijon mustard 10g English parsley, chopped 20g shallots, chopped 1g garlic puree 40g white mushrooms, sliced 140g Parmesan, grated Method 1 Cook the lobster in boiling salted water for about 10 mins. Allow to cool down in ice water. When cooled, cut in half and clean the head part and remove the meat from the claws. Remove the meat from the shell and keep the tail part and head of the shell. Cut the meat in 1 cm squares and keep aside. 2 Melt the butter on a skillet, and slow cook the chopped shallots and the mushrooms. Add the Àour and cook a little longer. Before it starts to colour, add the ¿sh stock and cook slowly for 15 more mins, then add the cream. Cook for another 5 mins, ¿nish with the mustard, parsley and Parmesan cheese, keeping 40g of the cheese aside for garnish. 3 Mix the cooked lobster meat to the sauce and ¿ll the shell with the mixture. Top with the remaining cheese and gratinate under grill. Serve hot.

RECIPE
ASIAN BEEF SALAD
SERVES 4 Ingredients 10g galangal 1pc of lemon rind 1 tsp lemon juice 1 tsp Thai curry paste A pinch of salt A pinch of pepper
100g beef, cut into strips 5g carrot, sliced 5g leeks, sliced 5g garlic, chopped 5g onion, sliced 5g red chilli, sliced 5g green chilli, sliced 5g sunÀower oil
Method 1 Blend the galangal, lemon rind, juice, Thai curry paste, salt and pepper together. 2 Apply the marinade to the beef and let it sit for 5 mins. 3 Heat a pan and add the oil. Add the beef and sauté on high heat. When the beef is cooked, add the vegetables and toss together till lightly cooked. Serve in small cups or ramekins.

CLASSIC AMERICAN CHEESECAKE SERVES 5 Ingredients For the crust 50g salted butter, plus some more for smearing the pan 300g digestive crackers, ¿nely crushed For the cheesecake batter 850g cream cheese, at room temperature 200g sugar, granulated ò tbsp vanilla extract 8 whole eggs, remove from the shell For the topping 100g sour cream 1/3 tsp vanilla extract 20g sugar Fruits of your choice, for garnish Method 1 To make the crust, melt butter in a microwave and set aside. Add digestive crackers to the mixing bowl and mix well to incorporate, crumbs should clump together. 2 Place mini spring form pans on a lined sheet tray and smear each pan with melted butter. Measure out 75g crumb mix and place into each pan. Press the crumbs into the bottom of the pan and all the way up the sides. The crust should be about 1/2 cm thick all over the pan. Refrigerate for 30 mins. 3 Using a paddle attachment, beat cream
cheese until smooth, about 5 mins. Stop mixer at 2.5 mins and scrape down sides. Change to wire whip attachment. Add sugar and mix well with cheese on second speed for 4 mins. Scrape down sides, add vanilla and mix on second speed until blended for 2 mins. With the mixer running on second speed, add eggs until incorporated, mix for two minutes. Keep the batter aside to sit for 12 hrs.
4 Place chilled crust on a lined sheet tray. Fill with a scoop of cheesecake batter and level with the back of a spoon. Place in a preheated oven 135C and bake for 20 mins. (The cake should jiggle a bit in the centre when done). Remove and set aside for 1 hr. 5 For the topping, whip all ingredients until well blended. Cover baked cheese cake with topping and garnish with fruits.

SEABASS CEVICHE MARINATED WITH CITRUS, RADISH SHAVINGS AND FINGER LIME SERVES 4 Ingredients 100g seabass ¿llet 10ml white wine vinegar 2 limes 10g sugar 5g ginger 20ml olive oil 1 tbsp salt Àower 10ml mirin 1 grapefruit 1 orange 1 ¿nger lime 1 radish, sliced Few pieces chervil Method 1 Marinate the seabass ¿let with white vinegar, sugar, 10ml olive oil, ginger and 1 lime for 20 mins. 2 Prepare a vinaigrette with rest of olive oil and mirin. Add juice of the other lime and refrigerate. 3 Peel the orange and grapefruit, cut segments and set aside. 4 Slice the ¿sh and place on a plate with orange, grapefruit and radish. Add some vinaigrette on top, and garnish with ¿nger lime and chervil.
