HONEY MUSTARD CHICKEN

SERVES 4 Ingredients 4 (350g each) marinated baby chickens 160g green beans 100g red onions, sliced to make rings 160g cherry tomatoes

2 tsp garlic, minced 4 fried potato cakes, to serve (optional) 120ml store-bought honey mustard sauce Method 1 Sear chicken in a frying pan for 5 mins, and ¿nish in the oven until cooked.

2 Sauté green beans, onions, cherry tomatoes and garlic. Season. 3 Place the sautéed vegetables on a plate with the fried potato cake, if using. Add the chicken on top and pour honey mustard sauce all over.

VEAL TORTELLINI SERVES 4 Ingredients ‡ 100g semolina flour ‡ 25g egg yolk ‡ 15g whole egg ‡ Salt, to taste ‡ Parmesan shavings, for garnish FOR THE VEAL STUFFING ‡ 200g veal shank ‡ 30g onions ‡ 30g celery ‡ 30g carrots ‡ 50ml vegetable stock ‡ 1 bouquet garni of rosemary and sage ‡ 100ml vegetable stock ‡ 50g porcini mushrooms ‡ 60g parmesan ‡ Salt and nutmeg, to taste FOR THE BURRATA ‡ 50g burrata cheese ‡ 50ml milk Method 1 Place the Àour in a food processor and pulse it. Add the whole egg and egg yolk and whiz until the mixture resembles ¿ne breadcrumbs – it shouldn’t be dusty or a big sticky dough ball. 2 Cut the dough into 2 pcs. Flatten each with a rolling pin to about 5mm thickness. Fold over the dough and pass through

a pasta machine at its widest setting, refolding and roll 7 times (not changing the setting) until you have a rectangular shape of 7.5x1 cm. It is important to work the dough until it is nice and shiny. Cut the dough with a round, large cookie cutter. (<ou could also use store-bought sheets if you don’t have a pasta machine.) 3 In a large pot, heat olive oil and add the veal shanks. Brown for 3 mins per side and set aside. 4 In the same pot, add the onions, carrots and celery. Season with salt and sautÊ until soft and translucent, about mins. Return the browned shanks to the pan, add the stock and reduce liquid by half, about 5 mins. Add the bouquet garni and 2 cups of the stock and bring to a

boil. Reduce heat to low, cover pan and simmer for about 1½ hrs or until the meat is falling off the bone. Remove the meat, shred in a mixing bowl and add sautÊed mushrooms, parmesan cheese and nutmeg. Season and set aside. 5 Bring the burrata and milk to boil and gently mix to combine. 6 Add a small amount of the veal ¿lling to a dough sheet and dab water on the other half of the sheet. Fold in half to seal tightly. Pull the sides together to form a classic tortellini shape (see image) and pinch the ends together. Cook the pasta in boiling water for 3 mins. 7 Serve the veal tortellini on top of the burrata cheese mix and garnish with parmesan shavings.

WHIPPED GOAT’S CHEESE WITH PISTACHIO AND CANDIED HEIRLOOM BEETROOT SERVES 4 Ingredients 400g heirloom beetroot A pinch of Maldon sea salt Few sprigs of fresh thyme 250g goat’s cheese 50g pistachios 100ml cream 100ml crqme fravche 20g raw <emeni honey A bunch of mizuna leaves FOR THE DRESSING 100ml raspberry vinegar 100g fresh raspberry purée 30g Dijon mustard 400ml grape seed oil 20g icing sugar Method 1 Season the beetroot with sea salt and a few sprigs of fresh thyme. 2 Wrap in foil and bake at 200C for 45mins. Remove the foil and allow to cool. Remove the skin and cut into bite size pieces. 3 Crumble the goat’s cheese and add to the cream, crqme fraiche and honey. Season with black pepper and roll into small balls. 4 Toast the pistachio nuts in a dry pan, once nicely toasted, crush the nuts. 5 Roll the cheese in the nuts to form a crunchy coating.

6 Whisk the vinegar, purée and mustard until combined. Add the oil, sieve the icing sugar into this and whisk again.

7 Dress the beetroot with the vinaigrette, season and top with goat’s cheese and mizuna leaves.

EAT DRINK AND GET FIZZY


RECIPE

FIZZ FACTORY ROYALE PIZZA SERVES 4 Ingredients 500ml warm water 7g dry yeast 1kg all-purpose flour 20ml olive oil 15g salt 10g sugar FOR THE TOPPINGS 200ml tomato sauce 250g mozzarella cheese, shredded 400g mushrooms, thinly sliced and sautéed 200g bell peppers, thinly sliced 50g fresh basil, chopped 200g pepperoni, thinly sliced 100g onions, thinly sliced 20ml extra virgin olive oil Method 1 In a large bowl, mix the warm water and yeast. Set aside for 5 mins to dissolve the yeast. Stir if needed at the end. 2 Mix the yeast water with the olive oil, flour, salt and sugar on low speed for about a minute. .nead with your hands or mix with the dough attachment in a food processor, until the dough is smooth and elastic, about 10 mins. If the dough seems a little too wet, sprinkle on a bit more flour. 3 Place the ball of dough in a bowl that has been coated lightly with olive oil. Cover

with plastic wrap. Set aside in a warm place until it doubles in size – takes 1 hr. 4 Remove the plastic cover from the dough and knock the dough back to release air. Divide the dough ball into four portions. Flatten on a slightly floured work surface, starting at the center and working outwards, use your fingertips to press the dough to ½ inch thick base. Rest for 5 mins and continue to stretch until it reaches the desired diameter – 10 to 12

inches. 8se your palm to flatten the edge of the dough where it is thicker. Brush the top of the dough with olive oil (to prevent it from getting soggy from the toppings). 8se your finger tips to press down and make dents along the surface of the dough to prevent bubbling. Set aside for 5 mins. 5 Spoon 50ml tomato sauce and 100g cheese on each. Add the toppings and bake at 200C for 10-15 mins, until the crust is brown and cheese is golden.

STUFFED BEEF FILLET WITH PARMESAN CHEESE AND TRUFFLE, SWEET AND SOUR RED CABBAGE AND BALSAMIC VINEGAR SERVES 4 Ingredients 120g red cabbage, sliced 50ml white vinegar 20g sugar 400g beef tenderloin 200g portobello mushrooms 2 garlic cloves 3g fresh thyme 4 leek strip (15cm long), peeled to make strips 200g baguette 4 tsp trufÀe oil 300ml milk 150g parmesan cheese Salt and black pepper Balsamic vinegar reduction Micro greens, for garnish Method 1 Sauté the red cabbage in oil and garlic for a few mins. Add the white vinegar and sugar and then a bit of water and continue to cook. Put half of the red cabbage into another pot. Blend the remaining half and add the cabbage sauce to the cooked, sliced red cabbage. 2 Cut the beef tenderloin to 3cm thickness and hit with a mallet to make it 5mm thick. 3 Sauté the mushrooms in olive oil, garlic and thyme until cooked.

4 Remove the crust of the bread, and chop roughly into small pieces. Mix the bread with the milk, trufÀe oil, mushrooms, parmesan cheese, salt and pepper. 5 Spoon the stuf¿ng into the beef and tie with the leek strip to make a small parcel.Cook

in a hot pan for 10-12 mins, or until the meat is cooked. 6 Add the sauce and red cabbage to the plate with the balsamic reduction. Place the stuffed beef tenderloin on top and garnish with micro herbs.

SERVES 4 Ingredients 50g scallops 100g prawns 250g calamari 250g octopus 100g mussels 100g clams 60ml extra virgin olive oil

15ml lemon juice 10g parsley 10g garlic, optional Salt Pepper Method 1 Steam the scallops, prawns and calamari separately, until cooked. Boil the octopus in another saucepan for 30 mins.

2 Open the clams and mussels in a pan with 20ml extra virgin olive oil, salt and pepper. 3 Prepare a dressing with the remaining oil, lemon juice, salt and pepper. 4 Reduce the water from the mussels and clams to half – this will take approximately 15 mins. 5 Dress the seafood with the dressing and 2 tbsp of the reduced water. Add the parsley and garlic. Mix, season and serve.

BOEUF BOURGUIGNON SERVES 4 Ingredients 1kg beef shoulder (stewing beef) 100g beef bacon 2 carrots, peeled and sliced 1 onion, chopped 200g mushrooms, sliced 1 stalks celery, chopped 1 bottle red burgundy wine 473ml beef stock 28g Àour 4 tbsp olive oil 28g butter 1 small bunch parsley 1 sprig thyme 1 garlic clove, mashed 18 small white onions Salt and black pepper Method 1 Cut the bacon into small strips. Simmer for 10 mins in water and set aside to dry. When dry, cook bacon in a large heavybottomed saucepan with the olive oil at moderate heat for 2-3 mins. 2 Cut the beef into 2-inch cubes. Using the same saucepan, cook the beef in the bacon’s fat until browned. Remove the beef. Then place the onions, carrots, celery

and cook for 2-3 mins in the same pan. Remove the saucepan from the heat and take out all the fat. 3 Mix the butter and Àour to make a paste. 4 Put the beef and bacon with the vegetables back into the pan and then add salt and pepper. Cover with the butter and Àour mixture. Cook for 3-4 mins, uncovered, and turn the beef cubes. 5 Pour in the wine and enough stock so that

it covers the ingredients. Add the white onions, garlic and herbs. Bring to a boil. 6 Cover the pan and simmer for 3 hrs on low heat (the meat is done when the fork slides out easily from a beef cube). Remove from the heat. 7 Sauté mushrooms in butter. Add mushrooms to the beef and garnish with parsley. Serve with boiled potatoes if you like.

TIRAMISU SERVES 4 Ingredients 1 packet of ladyfinger biscuits 1 cup espresso or strong coffee 5 egg yolks 150g sugar 250g mascarpone cheese 5 egg whites Cocoa powder, for garnish Handful of berries, for garnish Method 1 Soak the ladyfinger biscuits in espresso or strong coffee. 2 Mix the egg yolks and sugar to make a thick cream. Add the mascarpone cream to the mixture. 3 Beat the egg whites until stiff and fold into the cream mixture. 4 Carefully place the soaked biscuits in a large dish and add the cream mixture on top. ORGANIC BEEF FILLET CARPACCIO SERVES 4 Ingredients 600g organic beef tenderloin Pinch of rock salt 8g savora mustard 20g carrots, julienne 20g yellow zucchinis, julienne 20g green zucchinis, julienne 8g grain mustard 2 tbsp olive oil 80g Parmesan cheese 4g black lava salt 12g parsley and rosemary, chopped Method 1 Cut the tenderloin and shape into small rectangles. Beat the meat with a mallet to get wafer thin pieces. On a plate, add 3 small dots of savora mustard, spread it, and add the pieces of beef on top. Sprinkle some rock salt on the beef for taste. 2 Blanch the vegetables and then chill in ice water. Drain and mix some grain mustard and olive oil. Season and arrange on alternate beef slices. 3 With a peeler, peel strips of parmesan and arrange it on the beef. 4 Garnish with black lava salt and chopped herbs. Finish off with a sprinkle of olive oil.

SERVES 4 Ingredients 50ml oil 400g Thai rice stick 03 mm, soaked 500g white prawns 80g bean sprout 40g bean curd 5 eggs 40g sweet turnips, chopped 40g shallots, thinly sliced 20g chives, cut 1 ½ cm long bits 40g pound dried shrimps 2pc lime

2g chili powder (optional) 4tbsp roasted ground peanuts FOR THE SAUCE 100g palm sugar 80 ml tamarind juice 20ml ¿sh sauce 20ml sriracha sauce Method 1 Mix palm sugar, ¿sh sauce, tamarind juice and sriracha sauce together and simmer until it reaches a sauce consistency. 2 Heat 30ml of the oil, fry the prawns. When they are cooked, add the bean curd,

shallots and chopped sweet turnips. Keep frying until it becomes fragrant, then set aside. 3 Heat another 10ml oil, add 4 beaten eggs and fry. Add the rice noodle and keep frying until well mixed, add the dried shrimp and chilli, if using, and season with the sauce. Add the bean sprouts, ground peanuts and chives, keep frying until mixed well. 4 Beat the remaining egg. Heat a pan until very hot, add the remaining oil and pour the egg in a net shape to make the garnish. 5 Place fried noodle on plate cover with egg net, and serve with garnish of your choice.

MOROCCAN LAMB TAGINE WITH DRIED FRUITS SERVES 4 Ingredients 1kg lamb shank 200g onions, chopped 2 garlic cloves, chopped 50g ghee 100ml olive oil 10g white pepper powder 10g black pepper powder 10g ginger powder 2g saffron 1l water 10g salt FOR THE SEVEN SPICE MIX 20g ground black pepper 20g paprika powder 20g ground cumin 10g ground coriander 10g ground cloves 10g ground nutmeg 10g ground cinnamon 10g ground cardamom FOR THE GARNISH 100g dried prunes 100g dried apricots 1pc cinnamon stick 100g dried ¿gs 10g roasted sesame seeds 100g butter 100g white sugar 5g cinnamon powder 100g almond, fried and peeled

Method 1 Mix all the spices for the seven spice mix and place in an airtight container. Store in a cool dry place. 2 In a heavy pot, on high heat, place the lamb shanks and add chopped onions, minced garlic, olive oil, ghee and all the spices, including 10g of the seven spice mix.

3 Add water and cover, cook on low heat for 3 hrs or until the meat is tender. Keep aside. 4 In medium pan, place the sugar, butter, water, cinnamon stick, cinnamon powder and dried fruits. Cover and cooked for 10 mins. 5 Place the lamb shank in a tagine bowl; add the dried fruits and the sauce from the lamb shank, and serve.

JAPANESE PIZZA (OKONOMIYAKI) SERVES 4-5 Ingredients 150g tempura Àour 1 whole egg 3g hondashi 150ml dashi water (Bonito stock) 150g white cabbage 50g spring onions 15g pickled ginger 30g fried crispy Àour 20g shrimps, peeled 20g cuttle ¿sh 10ml olive oil FOR THE TOPPING 40g tonkatsu sauce 40g Japanese mayonnaise 25g spring onions, chopped 2g nori sheets (seaweed), shredded 10g katsud (bonito Àakes) 15g pickled ginger Note: All specialty ingredients are available at Asian stores. Method 1 Mix together the tempura Àour, egg and hondashi. Add the dashi water and mix. 2 Chop the white cabbage, spring onions and pickled ginger and add to the batter. Add fried crispy Àour and mix again. 3 In a pan, heat olive oil to medium heat and

pour a small amount of the batter (similar to a pancake). 4 Add the shrimp and cuttle ¿sh on top of the pancake and cook for 2 mins until the bottom becomes golden brown in colour.

Flip carefully and cook until crispy – about 2 mins more. Turn over once more – seafood side up – and cook for 1 min. 5 Add the tonkatsu sauce, Japanese mayonnaise and other toppings. Serve hot.

SALMON TARTARE Ingredients 200g Tasmanian salmon 50g avocado 5g black wild rice 10ml lemon juice 10ml olive oil Pinch of pink salt 40g crème fraiche Coriander, to taste 200ml vegetable oil Method 1 To make the avocado purée, remove the skin from the avocado and place in a food processor and blend with half the olive oil until smooth. Season with salt and set aside. 2 To make the puffed rice, heat vegetable oil in pan to 190C. As the oil begins to smoke, gently pour dried rice into oil. Once puffed, strain and place onto paper towel and set aside. 3 Dice salmon into 5mm pieces and place into a stainless steel bowl. 4 Toss salmon with remaining olive oil and lemon juice, chopped coriander and salt and stir until evenly mixed. 5 Place the above ingredients into a small bowl. Garnish with the avocado purée, crème fraiche and finish with a sprig of coriander and a sprinkle of the puffed rice for texture.

SERVES 4 Ingredients 800g beef tenderloin 1 shallot 250g mushroom 20g fresh parsley 20g fresh chervil Salt and pepper 800g puff pastry

200g foie gras 1 egg yolk Cherry tomatoes, lemon and peppers (optional) Method 1 Chop the shallots, mushrooms and fresh herbs finely. 2 Sweat the shallots in a pan, then add the mushrooms, salt and pepper. Cook until the

mixture becomes dry and then add the herbs. 3 Sauté the whole tenderloin until cooked on each side. Set aside to cool. 4 Roll out the puff pastry and glaze with the egg yolk. Place the tenderloin in the pastry with the mushroom mixture on top. Finish with a few slices of foie gras. 5 Fold the roll and glaze with the yolk again. Bake in a preheat oven at 185C for 40 mins. Serve with the vegetables.

PRAWN COCKTAIL SERVES 4 Ingredients 30-40 (300g) deep sea prawns, peeled and de-veined 20g tomatoes, chopped and seeds removed 20g romaine lettuce, shredded 5g chives 20g cherry tomatoes, halved FOR THE STOCK 300ml water 30g leeks, diced 30g celery, diced 30g fennel bulbs, diced 1 bay leaf 20g lemon wedges 10ml white wine vinegar 2g whole black peppercorns FOR THE COCKTAIL DRESSING 30g mayonnaise 15g tomato ketchup Few drops of hot sauce 3g salt 2g crushed black pepper Method 1 Make a stock with the water, leeks, celery, fennel, bay leaf, lemon wedges, white wine vinegar and black peppercorn. Bring the stock to a simmer and gently poach the prawns for 5-6 mins in this liquid. 2 Remove the prawns from the stock and

cool in the freezer. 3 Make the cocktail dressing by mixing all the ingredients together. 4 Mix the prawns with the dressing and set aside to use later.

DUCK CIVET SERVES 4 Ingredients 4 pieces duck breast and legs A pinch of white pepper 8 shallots or cipollini onions, peeled, trimmed and thinly sliced 4 garlic cloves, peeled 2 medium carrots, peeled, trimmed and thinly sliced 2 celery stalks, peeled, trimmed and cut into 1-inch-thick slices 8 whole black peppercorns, crushed 4 sprigs thyme 1 bay leaf 3 juniper berries 1 strip of orange zest or slices of orange, 1 inch wide (pith removed) Juice of ½ an orange 1 tbsp unsalted butter 1 tbsp vegetable oil 1 tbsp all-purpose Àour 1 tbsp tomato paste 285g thick-sliced beef bacon, cut into ó inchwide strips Bunch of chives, chopped Method 1 Centre a rack in the oven and preheat oven to 175C. 2 Pull off and discard as much of the duck fat as you can. Season the meat and the bones all over with salt and pepper and toss into a deep pot or pan. Scatter the vegetables, herbs and zest over the duck and pour over the orange juice. Cover the pan and marinate overnight in the refrigerator. If you can, turn the duck and bones in the marinade once or twice after

every few hours. 3 Lift the duck meat and bones out of the pot and dry the pieces between layers of paper towels. 4 Bring the marinade, along with its vegetables and spices, to a simmer, and keep cooking over low heat. 5 Warm the butter and oil over medium heat in a large ovenproof sauté pan with a lid. Slip the meat and bones into the pan and brown well on all sides. If your pan isn’t large enough to accommodate everything in one uncrowded layer, work in batches or use two pans (adding more oil and butter as needed). When the pieces are browned, add the Àour and cook, stirring, to brown the Àour. Stir in the tomato paste, pour in the warm marinade, including the vegetables and spices, and give

everything a good stir. Bring to the boil and season. 6 Cut a parchment paper circle to ¿t inside the pan, press it gently against the ingredients, and then cover the pan with its lid. Slide the pan into the oven and braise for 2 hrs, skimming the fat that rises to the surface and giving the pot a gentle stir every 30 mins. When the duck is ready, pull the pan from the oven, taste the sauce and add more salt and pepper if needed. (This can be made a day ahead, cooled, covered, and refrigerated. An hour before serving, reheat in a 150C oven.) 7 Toss the bacon into a small sauté pan or skillet set over medium heat. Cook, stirring till the bacon reduces its fat and browns lightly, about 8-10 mins. Drain on paper towels and place on top of the duck.

RECIPE

LAMB RENDANG SERVES 4 Ingredients 10 red shallot onions 2 stalks lemongrass 3cm ginger 3cm galangal 3 cloves garlic 2-3 stems of curry leaf 3 long whole chillies 2 tbsp oil 500g lamb, cubed 2 tbsp curry powder Malay 500ml coconut milk 1 tbsp thick soy sauce 250ml coconut cream Ground sea salt, to taste ¼ cup desiccated coconut, dry roasted til golden Method 1 Slice the onions very ¿nely and set aside. Purée remaining fresh ingredients and dried chillies with 1 tbsp of the oil in a blender. 2 Coat lamb with the blended fresh ingredients and curry powder. 3 Heat remaining oil, sauté onions until golden, add lamb on high heat, a few cubes at a time, to seal. Cover and simmer for 10 mins. Add coconut milk and simmer for another 20 mins. Then add thick soy sauce, coconut cream and salt to taste, stirring continuously to reduce gravy. Add dry roasted desiccated coconut and stir through to achieve a dry texture before serving.

LOBSTER THERMIDOR SERVES 4 Ingredients 4x lobsters, around 500g each, cut in half 30g butter 25g Àour 250 ml ¿sh stock 100ml cooking double cream 18g Dijon mustard 10g English parsley, chopped 20g shallots, chopped 1g garlic purée 40g white mushrooms, sliced 140g Parmesan, grated Method 1 Cook the lobster in boiling salted water for about 10 mins. Allow to cool down in ice water. When cooled, cut in half and clean the head part and remove the meat from the claws. Remove the meat from the shell and keep the tail part and head of the shell. Cut the meat in 1 cm squares and keep aside. 2 Melt the butter on a skillet, and slow cook the chopped shallots and the mushrooms. Add the Àour and cook a little longer. Before it starts to colour, add the ¿sh stock and cook slowly for 15 more mins, then add the cream. Cook for another 5 mins, ¿nish with the mustard, parsley and Parmesan cheese, keeping 40g of the cheese aside for garnish. 3 Mix the cooked lobster meat to the sauce and ¿ll the shell with the mixture. Top with the remaining cheese and gratinate under grill. Serve hot.

ASSORTED IRANIAN KEBABS SERVES 4 Ingredients FOR CHICKEN KEBABS 500g chicken thighs, cubed 20ml lemon juice 40ml orange juice 10ml white vinegar 500ml plain unsweetened yoghurt A pinch of dry saffron 30g dijon mustard Salt and cracked black pepper, to taste FOR LAMB CUBE KEBABS 500g lamb shoulder cubes 20g onion powder 60g garlic, chopped 20ml lemon juice 400ml plain unsweetened yoghurt 100ml labneh FOR LAMB KOOBIDEH KEBABS 400g lamb mince 120g white onion purée A pinch of saffron 10g baking soda 10g sumac powder 2 whole eggs Salt and cracked black pepper, to taste Method 1 Mix the lemon juice, orange juice, white vinegar, plain yoghurt, saffron and Dijon mustard in a large mixing bowl. Add the

chicken thigh cubes to the marinade and refrigerate for 12 hrs or overnight. 2 To make the lamb cube kebabs, mix the onion powder, chopped garlic, lemon juice, yoghurt and labneh together making a marinade. Marinate the lamb cubes and refrigerate for 12 hrs or overnight. 3 For the lamb koobideh kebab, mix the mince with the white onion purée, saffron, baking soda and sumac for

12 hrs or overnight. Add the eggs and pepper and make small 100g meat balls, before pressing onto a metal skewer – make each 12 inches long and 1 inch thick. Cook for 5-6 mins on a charcoal barbecue or until done on a grill. 4 Season the other two kebabs and skewer. Grill for 8-10 min. 5 Serve all the kebabs with saffron rice, grilled tomatoes, onions and yoghurt on the side.

SIGNATURE BEEF TARTARE SERVES 4 Ingredients 280g US prime beef tenderloin, minced 4 large eggs 400ml olive oil 84g beef tartare marinade 8g black whole pepper 200g sour dough bread, sliced into 8 pcs 80g baby watercress leaves FOR THE MARINADE 8g tomato ketchup 4g salt 4g black pepper, crushed 20g small red onion 20g Dijon mustard 20g capers in vinegar 20g parsley, chopped 20g hot sauce (Tabasco) 8ml Worcestershire sauce FOR THE DIJON VINNAIGRETTE 2 1/2 ml sunÀower oil 1ml red wine vinegar 80g salt 40g whole black pepper 100g Dijon mustard Method 1 Mix all the marinade ingredients together and add it to the minced meat. CITRUS GLAZED SALMON, WARM LENTIL AND VEGETABLE MEDLEY SERVES 4 Ingredients 500ml fresh orange juice 50ml fresh lemon juice 50ml honey 5g star anise 300g green lentils 60ml olive oil 10g garlic 100g white onions 100g leeks (white part only) 100g carrots 100g celery 200ml fish stock 10g fresh thyme 600g salmon fillet Salt Pepper Method 1 Combine the orange juice, lemon juice, honey and star anise in a small pot, bring to slow boil until reduced – it should reach a thick consistency. 2 Wash the lentils, strain, and place in a pot with just enough water to cover. Season with salt and simmer for about 30 mins, or until the lentils are tender but not mushy. 3 Chop the garlic and dice the onions, leeks,

carrots and celery. Sauté the garlic in olive oil, add the diced vegetables, season with salt and pepper. 4 Strain the lentils and rinse under warm water. Add to the vegetables, and then add the fish stock and chopped thyme. Check seasoning.

5 Cut the salmon into four fillets, season with salt and pepper. Sear on medium heat with olive oil, skin side down. Cook the salmon until skin is crispy, or to your liking. Place the salmon on a plate and pour the citrus glaze on top. Serve with the warm lentil and vegetables.

RECIPE

LEMON MERINGUE TART SERVES 4 Ingredients 375g flour 50g almond powder 10g corn starch 140g icing sugar 280g butter 4g salt 5 eggs 1 vanilla bean 4 egg yolks FOR THE LEMON CREAM 4 eggs 150g sugar 100g butter 12 pcs lemon zest 220ml lemon juice FOR THE MERINGUE 120ml egg whites 300g sugar Method 1 Blend together the flour, almond powder, corn starch, icing sugar and butter, until the mixture resembles fine breadcrumbs. Add the egg yolks and mix until it becomes a dough. 2 Turn out onto a lightly floured surface and knead until smooth. Shape into a disc and wrap. Refrigerate for 30 mins. 3 Preheat the oven to 200C. Grease a 4cmdeep, 23.5cm (base) round, loose-based

fluted flan tin. 4 Roll out pastry between two sheets of baking paper, until 3mm thick. Line the base and side of the tin with the pastry, trim edges and refrigerate for 15 mins. 5 Line the same baking tin with paper, place the dough over it, and fill with pie weights. 6 Bake for 10 mins, remove the pie weights and baking paper, and bake for another 10 mins until light golden-brown. Remove and set aside to cool.

7 To make the lemon cream, whisk together the eggs, sugar, butter, lemon zest and juice. Set aside for 5 mins and pour into the pastry case. Bake for 25-30 mins and then cool for 15 mins. 8 Beat the egg whites until soft peaks form. Gradually add sugar – 1 tbsp at a time – and beat until thick and glossy. Spoon the meringue over the lemon cream filling and bake for 5 mins to slightly brown the meringue on top.
