Combining three restaurants at the Fairmont Bab Al Bahr, there are more than 200 variety of dishes to keep discerning brunch goers interested in the Friday Fairmont Brunch. Featuring succulent steaks from Marco Pierre White Steakhouse & Grill, Italian favourites at Frankie’s and lavish international selections at CuiScene, there is something for everyone to feast on. As you descend from the grand lobby staircase, these three venues are all lined up along one corridor, making your brunch journey an easy one to navigate. Start with a rich selection of salads, artisan cheeses, freshlybaked breads, hot mezze and soups. Cold shrimp appetizers and oysters are also available. There are live cooking stations such as Italian corner where pastas are made from batter to thin sheets right in front of you before being tossed through a sauce of your choice. The artistic Japanese counter features sushi of different varieties, sashimi and nigiri being the usual favourites. Lamb chops, grilled tiger prawns, kebab and Peking ducks are available from Pitmaster’s Grill. MPW’s carvery station is a musttry featuring signature roast beef and tasty, tender chicken. Oven-braised beef short ribs with “secret” Asian-inspired BBQ sauce

Ribs & Brews’ signature dish INGREDIENTS MARINADE 2.5 lbs beef short ribs 1 tbsp onion powder 1 tbsp garlic powder 1 tsp chili powder 1 tsp smoked paprika ½ tsp salt 1 tbsp oil
HOMEMADE BBQ SAUCE 1 bottle ketchup 1 cup Chinese plum sauce ½ cup light soy sauce ½ cup apple cider vinegar ½ cup apple juice ½ orange juice ½ cup honey 1 tbsp olive oil
MARINADE METHOD • Mix all the spices with oil to form a paste, then rub beef ribs, place in a plastic zip bag and refrigerate overnight • Preheat the oven to 250F • Wrap the ribs in aluminum foil to create a sealed pouch and place on a baking sheet • Bake for 3-4 hours (depending on meat size or quality) • After 4 hours, open the foil, brush the ribs with butter or homemade sauce (recipe below) • Increase temperature to 350F and broil for 5-10 minutes, until ribs turn nice and brown • Serve with homemade BBQ sauce on the side
1 tsp sesame oil ½ cup chopped sweet onion 4 garlic cloves, minced 2 tbsp grated fresh ginger 1 jalapeño pepper, seeded and minced 1 spring onion thinly sliced 1½ tsp toasted sesame seeds Brown sugar, kosher salt & black pepper to taste
BBQ SAUCE METHOD • Sauté onion, ginger, minced garlic, and jalapeño pepper in hot olive oil in a large saucepan over medium heat for 4-5 minutes • Stir in ketchup, plum sauce, soy sauce, vinegar, apple juice, orange juice and honey • Bring to a boil and simmer for 15 minutes, stirring occasionally • Adjust the taste with brown sugar, kosher salt and black pepper • Remove the sauce from the heat, and add sesame oil, chopped spring onions and sesame seeds • Use it immediately as a dip for the hot ribs or cool down and keep refrigerated in a glass jar
Chef Profile: Executive Chef Tomasz Borucki Having recently joined Hilton Al Habtoor City from Conrad Guangzhou in China, chef Tomasz Borucki attributes a large proportion of his success to his extensive international experience, gained from travelling the world for the past 20 years. He worked in Poland, Indonesia, China and the Maldives before arriving here in the UAE, and has overseen three hotel openings and one cruise ship opening in his career to date. He is a certified Chef de Cuisine from American’s Culinary Federation in Florida, and has practiced under the watchful eyes of 3* Michelin chef, Thomas Keller. Tomasz has cooked for a number of well-known names during his tenure as a chef, including Queen Elizabeth II and US popstar, Ariana Grande.

SERVES 4 PREP TIME 10 minutes COOK TIME 20 minutes
INGREDIENTS FOR THE CHICKEN 4 150g chicken breast 1 tsp chopped rosemary 1 garlic cloves peeled and chopped 20ml olive oil
4ml Worcestershire sauce 10g anchovies 10g capers 10g grated parmesan 15g capers 64ml lemon juice 2ml tabasco 300ml mayonnaise
FOR THE DRESSING 25g Dijon mustard 1 garlic clove
FOR THE CROUTONS 100g ciabatta bread 1 garlic clove peeled and chopped
• Pre-heat oven to 190 ºC. • Marinate the chicken breasts with the chopped rosemary and garlic. Heat a frying pan with the olive oil and pan fry the chicken breasts for 2 minutes each side until golden brown. • Transfer the chicken to a tray and place in the oven for 15 minutes. • Start to prepare your croutons by cutting the bread into 1cm cubes and mixing with the olive oil, chopped garlic and rosemary. Cook in the oven until golden brown and crispy. • For the Caesar dressing, place all of the ingredients into a blender and blend until smooth. • Taste for seasoning.

PLATING • Place the gem lettuce, croutons, parmesan and croutons in a large bowl and add the Caesar dressing. Mix well, season and arrange into the serving bowls. • Slice the chicken and place on top along with the cherry tomatoes and grissini breadsticks.
Chef Profile: Chef Daniel Ferreira Daniel grew up in Johannesburg and discovered his love for cooking at a young age. When he was just eighteen, Daniel began his first culinary appointment under the tutelage of esteemed restaurateur, Wolfgang Wollauz at The Courier Restaurant in Parkview, Johannesburg. Voted one of South Africa’s top restaurants, it was here that he learnt the foundations of the hospitality industry and found his passion for fine cuisine. In 2005, Daniel made the pivotal move to London where he immersed himself in the world of British fine dining. He began his culinary journey as Chef De Partie at Delfina Restaurant
in London Bridge, before moving to the trendy Whitechapel Dining Room, where he was Sous Chef for two years. Dubai pulled Daniel to start a new chapter in 2013 when he joined J&G Steakhouse, one of the signature specialty restaurants at The St. Regis Dubai. As Chef de Cuisine he enjoyed two years with J&G Steakhouse ensuring success as part of the preopening team. Daniel has since joined Nikki Beach Dubai as Assistant Director of Culinary Creations, bringing with him diverse and varied expertise ensuring nothing short of excellence in his creations.
