CHICKPEA PUREE 80 gm Chickpeas Salt/Pepper to taste PROCEDURE: • Cook the chickpeas in salted water. Drain and remove the skin. • Season the chickpeas with salt and pepper. Ruffle crust the chickpeas. BOURRIDE WITH LEMON AÏOLI BOURRIDE BROTH 1kg Roma tomatoes 500ml Fish stock 100gr Fresh fennel 80gr Onion 100gr Carrots
40gr Slice garlic 15gr Fennel seeds 50gr Olive oi 20gr Salt 60ml White wine 1gr Saffron
PROCEDURE: • Heat oil in large pot over medium heat, sauté the garlic until golden color • Add diced onion, fennel, carrot and sauté till it get tender. Add fennel seeds, white wine and sauté for 2 more minutes, then add diced tomatoes, fish stock and saffron cook until tomato is full mash. Blend the mixture and pass true a fine strainer.
FOR THE AÏOLI 2 tsp. fresh lemon juice 1 clove garlic, minced 1 egg yolk at room temperature 1 cup olive oil Salt to taste PROCEDURE: • Whisk lemon juice, garlic, egg yolk, and salt in a heatproof bowl, set over a saucepan of simmering water until thick (2–3 minutes). Put the mixture to a blender, with the motor running, drizzle with oil until sauce is emulsified. Transfer Aïoli to a bowl and set aside.

SUNDRIED TOMATO AND SUMAC CRUMB 200gr Sun dried tomatoes 50gr Sumac 25gr Bread crumbs 15gr Thyme 15gr Parmesan cheese 2gr Salt & Pepper PROCEDURE: • In a cutting board chopped finely the sundried tomatoes, bread crumbs, sumac and thyme. Add the parmesan cheese and season with salt and pepper. OVEN BAKED SEABASS FILLET
PARSLEY FOAM 210gr Parsley 50m Olive oil 30ml Water 15gr Fresh coriander
2gr Jalapeno 3gr Salt 5gr Sucro 8gr Lemon juice
PROCEDURE: • Blend parsley in food processor until finely minced, mix with cooled cooking water. Pass the mixture through a fine sieve. Add sucro, mix well until it turned into a foam.
PROCEDURE: • Marinate the fish with seafood marinade and make into a roll. Roast the fish roll at 205c for 8 minutes. Crust the fish with sumac crumb, put in the oven for just 1minute at very high heat giving light roasted color. Reheat the chickpeas puree and arrange in a round plate. Pour the broth around the chickpeas puree. Place the cook fish on top of molded chickpeas. Top the fish parsley foam and garnish with afila crust finish the plate with drizzle of argan oil.

I use herbs, spices and sauces to enhance fresh vegetables, meats and fish, not to mask flavours. I study food trends and develop restaurant concepts that meet the specific dining needs of each market. Nowadays, it’s not just about the food, but also the entire
atmosphere. I am passionate about developing restaurants. I’ve had great success in this area and am redesigning the face of dining in The Cove Rotana. I also have experience in many countries across the Middle East. I’ve worked in customer-oriented roles for 24 years in the hotel industry and helped launch dozens of
new restaurant concepts. I love being in the kitchen, developing new recipes and training staff, but I particularly enjoy interacting with guests and taking their feedback into consideration. My cooking philosophy has always been: Food should be simple and nice enough to be understood, yet unique enough to be compelling.

MARINADE 2 no’s Thai Bird Chili (Minced without seeds) 1 tbsp. Duck fat 4 cloves Garlic, minced 30ml Oyster sauce 25ml Hoisin sauce 35gm Korean chili paste 35ml Soy sauce light 15ml Soya sauce dark
FOR TOSSING IN THE WOK 30gm Garlic, minced 50gm Onion, chopped 30gm Ginger, chopped 35gm Lemon grass 5 no’s Kaffir lime leaf 30gm Thai basil 150ml Tomato ketchup
40ml Oyster sauce 50ml Siracha chili sauce 40ml Black vinegar 30gm Coriander chopped 40gm Spring onion, chopped GARNISH 2 no’s Taro root 60ml Honey 25gm Sesame seed (black & white)
• Preheat oven to 180-degree Celsius. • Marinate the duck breast with all the spices, sear the duck breast with skin side down, and pour off and reserve the rendered fat. Place the breast in the oven, cook 10-15 minutes until it reaches medium rare, and then dice the duck. • Meanwhile sauté all the vegetables in the wok, add all the sauce. Finish by adding the roasted duck, set aside to keep warm • Blanch taro root in water, cook until medium, sauté in a large pan with some reserved duck fat until golden brown. Pour off the grease, add honey and roasted sesame seed. • Serve the duck garnished with honey-glazed taro.
Chef Profile: Chef Nitin Mehrotra Lapita’s Executive Chef, Nitin Mehrotra - an Indian national - began his culinary career aged 20 with his first internship at The Oberoi, New Delhi. This experience struck the match that fueled his deeprooted passion for food and the culinary arts. Nitin’s expertise lies in contemporary European/ International cuisine, fine dining and banqueting, gained through 18 years of
experience in leading fivestar hotels in India and the United Arab Emirates. After studying hotel management at the Institute of Hotel Management & Catering Technology in India, Nitin’s prolific career began at The Leela Kempinski in Mumbai, where he worked together with renowned chefs Willi Wilson and Frank Muller. Nitin’s career then lead him on to gain experience from
many other hotels including The Taj Palace in New Delhi, Leela Palace Bangalore and the iconic Burj Al Arab in Dubai, working alongside celebrity chefs John Wood, Maxime Luvara and Jean Paul Naquin. Nitin has been an integral part of the preopening and post-opening teams of The Leela Palace Kempinski, Sofitel Dubai Downtown and Lapita, Dubai Parks and Resorts.

INGREDIENTS 10 quail eggs 100g beetroot glaze 20g sugar 10 canape sized English muffins 10g veal bacon 100g white asparagus
20 strawberries 50ml vinaigrette 5g micro chives 50ml Hollandaise sauce Salt and pepper, to taste
TO PREPARE THE EGGS BENEDICT • Poach the quail eggs in water with very little vinegar, to keep them soft from the inside • Toast the English muffins • Pan fry the bacon and place on the muffin • Place the egg on top and cover gently with the hollandaise sauce TO PREPARE THE BEETROOT GLAZE • Peel and cut the beetroot in rough pieces • Boil with water until soft • Remove the beetroot and reduce the juice while adding the sugar. A syrup consistency is required
TO PREPARE THE ASPARAGUS SALAD • Peel the white asparagus • Thinly slice the asparagus • Cut thin stripes of the strawberries • Toss the raw asparagus slices in the vinaigrette to season • Drizzle the strawberries on top, together with the micro chives TO PLATE • Arrange the plate according to the picture Chef’s Tip: • Use a conventional brush for the beetroot swipe • Sautéed brown and soft cooked onions could be added with the egg
Chef Profile: Executive Chef Ansgar Werneke Newly appointed Executive Chef Ansgar Werneke was born in Germany and like many professional chefs he started working from the young age of 13. He started off in a small bakery in his home town Essen, Germany. Here he was introduced to the culinary world from a far, in the beginning he started off cleaning trays, cutting the grass and cleaning cars! He then started to work in the kitchen making fresh bread and cakes. His passion for the
kitchen didn’t stop there as he decided to further develop his interest to become a chef straight after school. Chef Ansgar always enjoyed making people happy through his culinary creations and started to gain experience across several Michelin starred restaurants in Europe and went on to be part of the Culinary German Junior National Team. He is specialized in contemporary fine dining and believes that anyone who cooks with love,
will produce happiness. With 25 years’ experience under his chef’s apron, he has spent 13 of those years building his career in Dubai working for some of the worlds most recognized brands and has even designed and written his own cook book. He has continued to climb the culinary ladder and is now the Executive Chef at the Mövenpick Hotel Ibn Battuta Gate Dubai where he strives to further enhance his artistry across their 5 Signature restaurants.
