’m constantly amazed at how brunch in Dubai carries on evolving with new options, packages and dishes as resourceIul hotels ¿nd ever seeming tempting ways to get us to spend Friday or Saturday afternoons eating and drinking to our hearts’ content. Although it’s not much of an arm twist I must admit and even for someone who is coming up to her ¿fth year in Dubai, brunch is as much of an institution now as it was when I ¿rst arrived, perhaps the only change is I’ve picked up some rather re¿ned tastes thanks to the ¿ve star food seemingly on tap at many of the brunches here. This time of year, when the weather’s hot but not scorching and

we can enjoy the many wonderful views from the varied terraces all over the city, brunch is too good an opportunity to miss. In our ¿rst of two brunch guides this year, we’ve rounded up your all time favourites and ranked them according to the (soft drinks) price, from cash saving great value ones to something a little more luxury. UNAGI SUSHI ROLL Ingredients 4 cups cooked sushi rice 1 packet of sheet nori 454g crab sticks, sliced into 1/2 inch thick strips 454g unagi (eel), sliced into 1 inch strips 1 ripe avocado, peeled, pitted and sliced wasabi soy sauce gari (pickled ginger) Method 1 On a sheet of plastic wrap, set down one sheet of nori. 2 With wet hands, grab a handful of sushi rice and evenly spread across the top 3/5 of the nori sheet, pressing the rice down to ensure it sticks to the seaweed. 3 Flip the nori over so the rice faces down onto the plastic wrap. 4 At the non-rice end of the nori, lay out crab sticks and avocado, leaving a little room on either end. 5 Take care not to over¿ll the roll. Roll the ¿llings up from the non-rice end of the nori (like a carpet) and continue to roll tightly, but not too tightly until the rice encompasses the entire outer part of the roll. Heat the eel in an oven until very warm. Place a single layer of the eel and avocado on top of the roll and then cover with a plastic wrap and bamboo

mat to press the eel to the roll. 6 Remove the bamboo mat. Slice through the plastic wrap with a very sharp knife

dipped in water, to get 8 even pieces. 7 Serve with wasabi, gari (pickled ginger) and soy sauce.

VITELLO TONNATO SERVES 4 Ingredients 800g veal eye of round 1 carrot, chopped 1/2 onion, ¿nely chopped 1 celery stick 1 clove garlic 2 bay leaves salt For the capers and tuna mayonnaise 2 eggs yolk 4 tbsp olive oil 2 tbsp capers, chopped 1 tsp parsley, chopped juice from 1 lemon 125g canned tuna salt Method 1 Clean the veal and discard excess fat. Place the veal in a large pot, cover with water and add all the ingredients. Simmer for 20 mins then remove from the heat and set aside. This allows the veal to absorb the juices. 2 To make the sauce, blend the egg yolks with the salt and lemon juice. Mix at low speed, add the oil and add the rest of ingredients to gain a smooth texture.

3 To serve, slice the veal and lay the slices down on the plate. Add the tuna

mayonnaise on top; drizle olive oil and garish with capers and rocket leaves.

THE PERFECT ROAST DINNER Serves 8 Ingredients 3kg Irish rib of beef on the bone 1 tbsp mustard powder 30g duck fat or olive oil fresh thyme 2kg chopped mixed veg (onion, carrot, leeks, garlic) black pepper For the roast potatoes 8 medium-sized Idaho potatoes 5 garlic cloves 4 tbsp duck fat or olive oil fresh thyme Maldon salt, to taste For the carrot and parsnip mash 300g carrots, peeled and chopped 300g parsnips, peeled and chopped 50g butter 20ml double cream salt and freshly ground black pepper For the gravy roasting juices from the pan 350ml Merlot or beef stock 4 tsp plain Àour 1 For the beef, preheat the oven to 190C. Mix the mustard powder with a little water

and rub this paste into the beef. Heat the duck fat till smoking hot, then sear the beef on all sides. In a large roasting tin, place the chopped vegetables and thyme and set the beef on top. Roast for 65 minutes for rare, 80 for medium rare or 95 for well done. Remove from oven, cover with foil on the carving board and let rest for 30 minutes. 2 For the roast potatoes, peel them, cut into pieces and parboil then drain. Shake a little to rough up the outsides. Add duck fat into a small roasting tin and heat at 220oc for ¿ve minutes, then add the potatoes, garlic, thyme and salt, making sure potatoes are well coated. Roast for

30-35 minutes until golden. 3 To make the carrot and parsnip mash, boil the vegetables until they are tender and drain. Mash till combined but still textured, then add the butter and cream and combine, then season. 4 For the gravy, discard the vegetables from the roasting pan and put pan over a medium heat. Deglaze with Àour and wine or stock, then let it simmer to thicken for ten minutes. Season to taste. 5 To serve, carve the beef into slices and place on plates with the <orkshire puddings, roast potatoes and the vegetable sides. Serve the gravy over the top.

PECAN PIE Ingredients 3 cups pecans, ¿nely chopped, toasted and divided 1/2 cup butter or margarine, softened 1/2 cup shortening 2 cups sugar 5 large eggs, separated 1 tbsp vanilla extract 2 cups all-purpose Àour 1 tsp baking soda 1 cup buttermilk ¾ cup dark corn syrup 1 store bought pecan pie ¿lling Method 1 Sprinkle 2 cups of pecans evenly into 3 generously buttered round cake pans (9-inch) and shake to coat bottoms and sides of pans. 2 Beat 1/2 cup of butter and shortening at medium speed with an electric mixer until fluffy and gradually add sugar, while beating well. Add in the egg yolks (one at a time), then beat it until blended after each addition. Stir in the vanilla extract. 3 Add flour and baking soda to butter mixture alternatively with buttermilk, beginning and ending with flour. Beat at low speed until blended after each addition. Stir in remaining 1 cup of

finely chopped pecans. 4 Beat the egg whites at medium speed until stiff peaks form and fold one third of egg whites into batter. Fold in the remaining whites. Do not over mix. Pour batter into prepared pans. 5 Bake at 350C for 25 mins or until done. Cool in pans on wire racks for 10 mins. Invert layers onto wax paper-lined wire

racks. Brush tops and sides of layers with corn syrup and cool completely. 6 Spread half of pecan pie ¿lling on 1 layer, pecan side up. Place second layer, pecan side up, on ¿lling and spread with remaining ¿lling. Top with remaining layer, pecan side up. 7 Arrange pastry garnish on and around the whole pie, if desired.

THE IVY SHRIMP COCKTAIL SERVES 4 Ingredients 16 fresh prawns peeled 175g iceberg lettuce, shredded 150g cucumber, peeled and julienne 25g spring onion, thinly sliced 1/2 tsp of dill, chopped For the Marie Rose dressing 200g mayonnaise 125g tomato ketchup 2ml hot sauce 3ml worcestershire sauce 1/2 lemon, juice only cayenne pepper Method 1 Refrigerate the prawns. 2 Prepare the sauce by whisking all the ingredients together and adjusting the seasoning to your taste, and add the chopped dill. 3 To serve, place a spoon full of the sauce at the bottom of a chilled wine glass, add some of the shredded salad then add 2 prawns per serving. ASIAN BRAISED BEEF SHORT RIBS SERVES 4 Ingredients 5 lbs beef short ribs, cut into 4oz portions 1 cup soy sauce 1/4 cup rice wine vinegar 3 cloves garlic, peeled and smashed 1 (5-inch) stalk lemongrass, halved and smashed 1 tbsp ginger, peeled and minced 1/2 cup light brown sugar 947ml water 1/2 cup sliced spring onions, white part only 3/4 tsp red pepper, crushed 1/4 cup fresh orange juice 1/4 cup hoi sin sauce 2 tbsp fresh lemon juice jasmine rice, for serving 2 tsp orange rind, ¿nely grated, for serving sliced green onion tops, for garnish 1 Preheat the oven to 175C. In a wide stockpot or Dutch oven, combine the short ribs, soy sauce, vinegar, garlic, lemongrass, ginger, brown sugar, water, spring onions, crushed red pepper, and 2 tbsp of the orange juice. Make sure that the stockpot is deep enough so that the short ribs are fully submerged in the liquid mix.

2 Bake the short ribs, covered, for about 3 hours, or until the meat is tender and falling off the bones. 3 Remove the short ribs from the braising liquid and cover to keep warm. Increase the oven temperature to 220C. 4 Drain the fat off of the cooking liquid and discard. Place the remaining braising juices in a medium saucepan with the hoi sin sauce and bring to a boil over medium-high heat. 5 Reduce the liquid until only about 1 1/4

cups remain. Strain through a ¿nemeshed strainer, discarding the solids. Stir in the remaining 2 tbsp of orange juice and the lemon juice. 6 Return the short ribs and the reduced sauce to the stockpot or Dutch oven, coating the short ribs well with the sauce. 7 Bake for 10 mins, until the short ribs are heated through and slightly glazed. Serve hot over jasmine rice. Season each portion with the orange zest and garnish with the green onions if desired.

AUSTRALIAN BEEF MEDALLIONS WITH GLAZED PAK CHOY SERVES 2 Ingredients 4 (90g) Australian beef medallions 50ml olive oil for pan frying salt and pepper 100ml natural jus, for the sauce For the forest mushrooms 100g fresh wild mushrooms 30g butter salt and pepper 20g onions, chopped 4 sprigs of fresh thyme For the pak choy 4 small bunches of baby pak choy, blanched 30g butter, melted salt, pepper and sugar For semi dried cherry tomatoes 6 cherry tomatoes 2g garlic, chopped 3 strands of rosemary 10ml olive oil Àeur de sel and pepper, to taste 1 small bunch of assorted micro herbs Method 1 Season the cherry tomatoes with all the ingredients and leave in a preheated oven at

70C for about 5 hours, heat before serving. 2 Season the beef and sear in a hot pan with olive oil. Finish in the oven to your liking. 3 Clean the wild mushrooms, making sure to get rid of all grit and soil. 4 Sautp the mushrooms in butter and season with salt and pepper. SALMON WITH CITRUS FRUITS SERVES 10-12 Ingredients 1 (1.3kg) Norwegian fresh salmon ¿llet with skin (frozen ¿llet can also be used) 800g sea salt or table salt 600g white sugar 1/2 tsp white or black peppercorns 1/2 tsp whole coriander 1 piece grape fruit 2 lemons 1 lime 2 oranges Method 1 Remove small bones from the salmon with a pair of tweezers. Rinse under cold water and pat dry. Set aside in a tray. 2 Using a mortar and pestle, crush the pepper and coriander and mix with the salt and sugar. Zest the lemons, lime and oranges and add to the mixture. 3 Rub the mixture on the Àesh side of the ¿llet, cover and refrigerate for 48 hours turning the ¿llet every 12 hours. 4 Once taken out of the refrigerator, scrape out any extra mixture and discard the liquid. The salmon is ready to be served and can be consumed within a week. 5.Slice the salmon with a sharp knife, into thin slices, and serve.

SERVES 4 Ingredients 600g buffalo mozzarella 100g fresh plum tomato 100g fresh zucchini 100g fresh eggplant 10g fresh basil leaves

BRAISED VEAL CHEEKS SERVES 8 Ingredients 2kg veal cheeks, trimmed 50ml olive oil 50g Àour 1 carrot, peeled and chopped 2 stalks celery, chopped 1 onion, chopped 2 garlic cloves, chopped 250ml red wine 250ml veal stock 5g whole pepper corns 3 bay leaves 2 sprigs of thyme salt and pepper baby vegetables of your choice Method 1 Season the meat well with salt and pepper. Preheat the oven to 140C. 2 Dust in seasoned Àour, then remove any excess Àour. 3 In a frying pan add olive oil and when at a medium heat add the veal cheeks (this will need to be done in 2-3 batches. Slightly brown the meat. 4 Remove meat and place in an ovenware dish. 5 Add vegetables and sautp the vegetables until they reach a golden brown colour Add them to the veal cheeks.

6 Deglaze with the wine, add the veal stock and bring to the boil. Add to the veal cheeks and include the herbs. 7 Top up with water so the meat is just covered with the liquid. 8 Cover the dish with foil and transfer to the oven and braise for 3 to 4 hours until the

meat is really tender. 9 Cool it down after taking out the meat from the liquid. 10 Strain the liquid and reduce to a sauce consistency and check for seasoning. 11 Warm up veal cheeks and add the sauce. Serve with baby vegetables.

PEKING DUCK SERVES 4 Ingredients 1 whole duck 8 cups water 1 slice ginger 50g leeks 200ml hoisin sauce 3 tbsp white sugar 1 tbsp white vinegar 1 tbsp Chinese ¿ve spices powder 100g cucumber 24 duck pancake sheet Method 1 Clean duck, wipe dry and tie string around neck. Hang in a cool, windy place for 4 hours. Meanwhile, ¿ll large wok with water and bring to boil. 2 Add the ginger, leek, sugar, vinegar, and Chinese powder spices and bring to the boil, stirring constantly. 3 Place duck in a large strainer above larger bowl. Scoop boiling mixture all over duck for about 10 mins. Once done, hang duck again in a cool, windy place for 6 hours until thoroughly dry. 4 Fill a pan with 2 inches of water and place in the bottom of oven (this is for drippings), Place duck, breast side up on a greased rack in the oven preheated to

350C for 30 mins. 5 Turn duck and roast 30 mins more. Turn breast side up and roast for 10 mins. 6 Use sharp knife to cut off crispy skin and

CREAMED SNAILS AND MUSHROOMS SERVES 4 Ingredients 2/3 cup crème fraîche 5 button mushrooms, trimmed 1 1/2 tbsp shallot, minced 1 tsp garlic, minced 1 can (18 to 24 snails) imported medium escargots, rinsed and drained 1 tbsp parsley or chervil, ¿nely chopped 1 tbsp chives, ¿nely chopped 1 tsp tarragon, ¿nely chopped 1 tbsp unsalted butter Method 1 Simmer the crème fraîche with the mushrooms, shallot, garlic, and 1/4 tsp each of salt and pepper in a heavy medium saucepan, uncovered, stirring occasionally, until the mushrooms are tender and sauce is thickened. This will take approximately 10 mins. 2 Reduce the heat to low and then add the snails, herbs, and butter and stir for 1-2 mins, until the snails are heated through and the butter is incorporated. STICKY DATE PUDDING Ingredients 450ml water 250g dates (dry) 17g baking soda 80g butter 250g sugar 250g Àour 11g baking powder 3g ground ginger 3 eggs, at room temperature For the toffee sauce 336g butter 588g brown sugar 450ml heavy cream 10ml vanilla 1 Bring the dates and water to the boil and simmer for 5 mins, remove from heat and add baking soda. The mix will foam. Allow it to stand and ferment for 30 mins. 2 Cream the butter and sugar together, and add eggs one by one. 3 Sift remaining dry ingredients together and fold into the egg mixture. 4 Fold in the date mixture and mix until well blended (the mix will be quite runny). 5 Line a 9”x 9” cake pan with parchment paper, spray the paper slightly with a cooking spray and ¿ll with the mixture. Wrap tightly with plastic wrap and bake in

a water bath for about 1 hour or until the middle of the pudding is set, at 175C. 6 To make the toffee sauce, place the butter and brown sugar in a saucepan. Heat over a low heat until the butter melts and

SEAFOOD PAELLA Ingredients 500g medium grain rice 1000l chicken broth 4g Spanish saffron 100g fresh tomatoes, diced 100g green peas 100g bell peppers 50g tomato paste 250g shrimps with head on 250g fresh calamari 100ml virgin olive oil 20g garlic, chopped 100g white onions, diced 50g fennel, diced 5g thyme, diced 30g salt 20g pepper 3 pcs lemon wedges 100g fresh cilantro 1 Wash and rinse the rice and set aside. 2. Saute the garlic, onions, bell peppers, green peas, thyme and tomatoes. Add the tomato paste, shrimps, calamari and mussels. 3 Slowly add in rice and gently mix all together. TRADITIONAL ROASTED LAMB Serves 4 Ingredients 250g lamb rack 1 whole artichoke 80g mashed potato 10g demiglace powder 40g breadcrumbs 5g of mint, rosemary, thyme, each salt and pepper olive oil Method 1 Take a cleaned rack of lamb and cut in half. Heat some olive oil in a pan (on a relatively high heat) and sear the lamb on all sides until it has a nice and roasted colour. Leave it few minutes cool down in a baking tray. 2 Take a food processor or mixer and add mint , thyme and rosemary leafs with the breadcrumbs, until everything is nicely integrated. Roll the cooled lamb in this mixture until fully covered and put in the oven at 200C until cooked (time will vary depending on how you like your meat). Cook at 65C for a medium lamb – with a touch of pink. 3 While the lamb is cooking, boil the recommended amount of water in a small pot and add 10g of demiglace

powder, leave it to boil until it has a thick consistency and set aside. 4 Clean 1 artichoke, cut in half and boil for 15 mins in salted water. Drain and sauté in a pan with olive oil, set aside.

5 To plate, warm the mashed potato and place them in the centre of a large plate, add the cooked lamb, place the sautéed artichokes around the potatoes and lamb rack.

SALMON TARTARE Ingredients 200g Tasmanian salmon 50g avocado 5g black wild rice 10ml lemon juice 10ml olive oil pinch of pink salt 40g crème fraiche coriander, to taste 200ml vegetable oil Method 1 To make the avocado puree, remove the skin from avocado and place into a food processor and blend with half the olive oil until smooth. Season with salt and set aside. 2 To make the puffed rice, heat vegetable oil in pan to 190C. As oil begins to smoke, gently pour dried rice into oil. Once puffed strain and place onto paper towel and set aside. 3 Dice salmon into 5mm pieces and place into a stainless steel bowl. 4 Toss salmon with remaining olive oil and lemon juice, chopped coriander and salt and stir until evenly mixed. 5 Place the above ingredients into a small bowl. Garnish with the avocado puree, crème fraiche and finish with a sprig of coriander and sprinkle on the puffed rice for texture.

RAFFLES FAMOUS YORKSHIRE PUDDINGS “YORKIES” Serves 10 Ingredients 150g plain Àour 150g whole eggs, beaten 160ml whole milk 150ml canola oil or sunÀower oil salt and pepper 100ml canola oil or sunÀower oil, for baking. Method 1 Make sure to prepare the mix in advance. This recipe can be used without resting, but allowing it to rest for 2-3 hours will give better results. 2 Using a hand or stick blender, mix together the Àour, eggs, salt, pepper and milk until smooth. Add the oil and continue mixing. The mixture should be a coating consistency once the oil has been added. (Note: Make sure the batter is not too thick as it will stop the pudding from rising). 3 Approximately 2 hours before serving, preheat the oven at 220C. Add a few drops of oil to the pudding moulds (a non-stick 10cm mould with straight sides is suggested) and heat for around 15-20 mins. Make sure the tray is deep enough to catch any oil that may spill from the tins during baking. 4 Remove the moulds when the oil is smoking hot and pour in the mixture

CLASSIC AMERICAN CHEESECAKE SERVES 5 Ingredients For the crust 50g butter, salted and melted 300g digestive crackers, ¿nely crushed For the cheesecake crust process 300g digestive crackers melted butter, as needed For the cheesecake batter 850g cream cheese, at room temperature 200g sugar, granulated ò tbsp vanilla extract 8 whole eggs, remove from the shell For the topping 100g sour cream 1/3 tsp vanilla extract 20g sugar Method 1 To make the crust, melt butter in a microwave and set aside. Add digestive crackers to the mixing bowl and mix well to incorporate butter. Crumbs should then clump together. 2 Place mini spring form pans on a lined sheet tray and smear each pan with melted butter. Measure out 75g crumb mix and place into each pan.

3 Press the crumbs into the bottom of the pan and all the way up the sides. The crust should be about 1/2 cm thick all over the pan. Refrigerate for 30 mins. 4 Using a paddle attachment, beat cream cheese, until smooth, for 5 mins. Stop mixer at 2.5 mins and scrape down sides. 5 Change to wire whip attachment. Add sugar and mix well with cheese on second speed for 4 mins. Scrape down sides, add vanilla and mix on second speed until blended for 2 mins. 6 With the mixer running on second speed,

add eggs until incorporated, mix for two minutes. (Note: batter must sit for 12 hours before use) 7 Place chilled crust on a lined sheet tray. Fill each with a scoop of cheesecake batter and level with the back of a spoon. Place in a preheated oven 135C and bake for 20 mins. (The cake should jiggle a bit in the centre when done). Remove and set aside for 1 hour. 8 For the topping, whip all ingredients until well blended. Cover one baked cheese cake with topping and garnish with fruits.

SCALLOPS WITH SALAD AND TRUFFLE VINAIGRETTE Serves 1 Ingredients 3 scallops 1 beetroot 1 radish salt and ground black pepper 1 ¿g pinch of brown sugar 2 sprigs thyme 566g butter, unsalted 45g olive oil 6g micro cress greens For the dressing 1 mango 10g shallots 4 tbsp vinegar juice of ½ lemon 110g olive oil 4 tbsp trufÀe oil salt and pepper to taste Method 1 Peel mango and shallots and chop into cubes. Blend the mango, shallots, lemon juice and vinegar. Add the olive oil and trufÀe oil, and then the salt and pepper. Once smooth, pass through a ¿ne sieve. Check seasoning and pour into a squeeze bottle. 2 Boil the beetroot in a large pot ¿lled with

water. Once boiled, set aside to cool. Scoop with a melon ball spoon or teaspoon. 3 Slice the radish and set aside in cold water. Cut ¿gs into quarters and cover with the brown sugar. Keep to gratin – for a few minutes – in the oven with only the top burner on. Remove and set aside. Chop the micro cress and place on a plate. 4 Season the scallops, and sear in a hot, non-stick pan for a minute each side. Add

the butter and glaze for a minute before removing from the pan. Place on a paper to remove additional fat. 5 To serve, use a rectangular-shaped plate, place three scallops across the plate. Place the beetroot between the scallops, then place the radish between the scallops and beetroot. Place a drop of the mango vinaigrette on four corners on the plate, and add the ¿g on top. Season and serve.

FOIE GRAS POT AU FEU EN PAPILLOTTE

SERVES 4 Ingredients 800ml clear duck stock 4 pieces duck foie gras slice (50g) each 1cl sherry 30g spring onion, ¿nely sliced 40g fresh baby radish (navet) sliced 50g carrot cut in small diamonds

40g celery cut in small diamonds to taste Àeur de sel, pepper 1 Cartafa visible paper 1 Peel the vegetables and cut into small dice. Blanch and keep on the side. 2 Season the duck stock with salt and sherry to taste. Slice and season the foie gras and pan fry shortly to colour the

outside, it has to remain rare inside. 3 Cut a square out of the visible paper and place in a bowl. Place the cooked vegetables inside, add the foie gras on top and ¿nish with the fresh sliced radish. 4 Season with Àeur de sel. Fill up with duck stock and close the paper with a string to form a small papillote. 5 Reheat everything for 5 min on slow heat.
