WINTER ADVENTURES Skiing, Snowboarding, and Skating within a day’s trip by Lisa Taylor & Leila Tsybulina THERE IS NOTHING QUITE LIKE THE FEEL OF THE WIND whipping across you as you coast down powder covered slopes. You may think there are no places close to Fort Campbell to go skiing or boarding, however, mere hours away are ski resorts filled with winter fun. To make it easy for you we have compiled a list of the closest getaways that are sure to peak your adventurous side. Paoli Peak, located in South Paoli Indiana, is only three and a half hours away. Paoli is a small ski resort but it packs a big punch providing a natural hill hosting a 300 foot vertical drop with an average grade of 10% to 15% for the more difficult trails. With over 110 stationary towers and machines, Paoli Peak produces about 12 inches of machine made snow over the entire ski area a day. Featuring two
advance/expert parks, four intermediate/advance parks and seven beginner/intermediate parks, Paoli has something to offer all skill levels. Once you make it to the bottom, use one of four chairlifts to get you back to the top. Prefer snow tubing? Paoli Peak’s Arctic Blast Snow Tubing has 9 lanes of snow covered, 700 foot long slopes. Use their specially designed inner-tubes to slide down the hill and their 400 foot Wonder-Carpet to get you back up. Paoli Peak’s ski lodge is furnished with everything you need while visiting their slopes. Inside the ski lodge you will find a cafeteria-style restaurant and pizzeria, ski and snowboard rental shop, pro shop and much more. Military discounts include $10 off of Ski/Snow Board passes Monday through Friday and $5 off on
www.fortcampbellmwr.com Saturday, Sunday and holidays. Paoli Peaks is a day lodge only, however, if you want to make it a weekend, several lodging facilities are available within a half hour drive from Paoli. To learn more about Paoli Peak visit www.paolipeaks.com. Cloudmont Ski and Golf Resort is located in Mentone Alabama, approximately 4 hours from Fort Campbell. Located near Lookout Mountain, Cloudmont offers two excellent slopes for skiing and boarding. For over 40 years residents of the Deep South have journeyed to Cloudmont in the winter for its two 1,000-foot slopes. Runs are beginner to intermediate levels and perfect to learn or for a fun run. Skiers and boarders are transported back to the top using two “pony” lifts. Rentals are also available with boots ranging in size from a child's 10 to an adult size 13. Cloudmont offers affordable ski packages and discounts on area lodging at the ski chalets, cabins and cottages. Chalets are available around the golf course, ski area, and Little River and many are equipped with efficiency kitchens. In addition to ski cottages and chalets, many hotels and motels are nearby in Fort Payne. Visit www.cloudmont.com to learn more about Cloudmont Ski and Golf Resort. Five hours away in Gatlinburg Tennessee is Ober Gatlinburg Ski Resort and Amusement Park which features nine whitewashed trails with terrain for all abilities, from a beginner to a seasoned expert. Ober’s snowmaking system produces enough snow to cover all trails providing guests the finest slope conditions. Ober offers nine trails serviced by two quads, one double and one surface lift, ensuring you spend more time on the slopes than in line for the lifts. You have your choice of ski school, tubing, one beginners trail, five intermediate trails and two advanced trails to keep you moving from one adventure to the next. Also available is a freestyle terrain park where you can spin, flip, and show off your skills. Plans are in the works to doubling the number of rails and boxes, as well as varying snow features such as table tops and spines in the freestyle terrain park. If you need to rent equipment, Ober has over 1,800 pairs of shaped skis and 300 snowboards, ski pants, jackets, and helmets available for rent. Military discounts include 50% off ski lift tickets, 50% off ski equipment rental (does not include snowboard equipment), and 50% off the Tram ride from downtown Gatlinburg to Ober Gatlinburg resort. Ober does not offer lodging accommodations at their resort however, they have partnered with over 60 vendors to help you find the best lodging rates around. For more information visit www.obergatlinburg.com. For those of you who enjoy being on the ice, there are some venues that offer ice skating, figure skating and hockey. Fon-Dos Melt in Your Mouth Morsels by Tara Goodson WHETHER YOU ARE PLANNING A ROMANTIC DINNER FOR two for Valentine’s Day or just hanging out with a group of friends, fondue is a great choice. It’s easy to prepare, a breeze to clean up and your guests get to choose what they want to eat. The hardest part is the prep work which is just cutting the ingredients. There are several electric fondue pots available (you can even use a small crock pot) or you can use a metal or ceramic bowl that is held up over a flame created by a sterno can. You will also need skewers to spear the food you want to dip in the fondue. Meats, breads, vegetables are typical for your main course and you can’t go wrong with a chocolate fondue for dessert! All these goodies are guaranteed to melt in your mouth and have your guest swooning and begging for more. If you are serving meat to be cooked in oil you will want to cube it into bite size portions. Bread should be cut or torn to a similar size and make sure the vegetables are bite size as well. Bread works best if it’s day old and slightly stale. You must use a copper fondue set, stainless steel pot or cast iron fondue pot for hot oil fondue. The other types of fondue pots are not designed to be used with hot fondue oil and could present a safety hazard and crack under the high heat. Two fats are recommended (so use both oil
and butter) and heat slowly so you don’t scorch it, peanut and canola oil are good picks. After heating, carefully pour the oil into the fondue pot. Be sure to light your sterno or turn on your electric fondue pot so the oil will continue to stay hot and cook your food at an even rate. Traditional cheese fondue uses a variety of cheese and wine. Feel free to experiment with seasonings, but always use the best quality ingredients your budget allows. Dipping sauces are recommended for the meat. Try a variety of honey mustard, spicy chili or garlic lemon to tempt your palette. Fondue 101: • Keep any meat or vegetable dry, water increases splatter. • Always let your meat and veggies cool before eating. • Don’t crowd the pot! One fork per guest is ideal. • Avoid salting your food prior to cooking. Salt will cloud the oil. • Do not overfill the pot, 1/2 to 2/3 full is plenty. • No double dipping! • Do not eat straight off your fondue fork, transfer to another plate. • To avoid losing your food in the fondue, stir in a figure 8 pattern • Keep raw and cooked meats and seafood separate.
Three Cheese Fondue
Non-Alcoholic Cheese Fondue
1 cup white wine 1 tablespoon butter 1 tablespoon all-purpose flour 7 ounces Gruyere cheese, cubed 7 ounces sharp Cheddar cheese, cubed 7 ounces Emmentaler cheese, cubed
1 1/4 cup apple cider, reserve 1/4 to mix with cornstarch and mustard 2 teaspoons lemon juice 1 tablespoon finely chopped onion 3 cups shredded cheddar cheese 1 tablespoon cornstarch 2/3 teaspoon mustard powder White pepper, to taste
Bring the wine to a slow boil in a small saucepan. While that is heating up, melt butter in a medium size saucepan. Whisk flour into the butter until smooth. Add the wine then slowly add cheeses, whisking constantly. Cook for five minutes and then transfer to the fondue pot.
Chocolate Fondue
In a medium sized saucepan, sauté cider, lemon juice and onions on medium heat. Slowly add cheese while stirring. Mix cornstarch and mustard in reserved apple cider. Add mixture to cheese and season with white pepper to taste. If you find the fondue too sweet, add more lemon juice.
1 cup dark chocolate, roughly chopped 1/3 cup heavy cream In the bottom of the fondue pot combine both ingredients and heat over low /medium until the chocolate starts to melt. Stir until combined well, the mixture should be smooth and glossy. Strawberries, marshmallows and banana are typical goodies to dip, but why don’t you try something a little different? Pretzel rods, nuts or figs are great alternatives.

Valentine’s Day Not Just for Couples by Mignon Deason VALENTINE’S DAY IS QUICKLY APPROACHING. WHAT ARE your plans? For those who have a sweetheart, a romantic dinner and gift is usually the norm but how about those who are single or away from their loved one? Of course, there are many things couples can do to celebrate but the ideas we are offering are great for couples, singles and groups of friends. Whether your taste in music is country or rock and roll, with Music City just one hour away, Nashville offers many great concert options. If comedy is your thing, check out what’s going on at Zanies Comedy club or the Mike Epps & Friends performance at the Municipal Auditorium in Nashville on February 13. If you’re more of a sports person the Nashville Predators Hockey team will have games at the Bridgestone Arena on February 12 and 15. Check with MWR Leisure Travel Services for more information on purchasing tickets. How about traveling? A short weekend getaway to the Smoky Mountains can be just the ticket, and not just for couples. Gatlinburg and Pigeon Forge offer so many attractions and activities, that even a singles group getaway can be planned. Cabins are usually the accommodations of choice for this mountain destination. You can rent cabins that have one to seven or more bedrooms with all the bells and whistles such as hot tubs, pool tables, video games and let’s not forget the spectacular view of the Smoky Mountains. Military discounts are available at many of the attractions from Ripleys to the Ober Gatlinburg Ski area. A Soldier can save some big bucks while having a great time. For getaways a bit farther from home, why not look into a short cruise? Cruises are a lot of fun for couples, singles and groups. Short cruises can be 3-5 days long and ports of departure can be as close as Alabama, Louisiana or northern Florida. Sail away for the weekend to the sunny Bahamas or see the Mayan ruins in Mexico. Cruises are an excellent way to truly relax and be pampered.
From your own personal room steward to the fabulous wait staff in the dining rooms, you will feel special from the beginning to the end of your cruise. For those of you still searching for that perfect gift, cruises make great gifts. Who doesn’t love a vacation! If a fun trip is what you seek, why not head down to Orlando for some outrageous fun at Universal Orlando. You can see the ever popular Harry Potter Park that has recently opened in the Islands of Adventure Park at Universal Orlando. There is a replica of Hogwarts Castle and numerous shops and rides sure to bring you back into the movies and books of Harry Potter. The Saver Pledge
with a BOSS Soldier by Keri McPeek The Dating Game is a 1960’s television game show whose concept was to have a bachelorette ask three bachelors a series of questions to find a compatible match. After questioning, the bachelorette would choose one bachelor to go with on a date, paid for by the show. Occasionally, the roles would be reversed with a bachelor questioning three bachelorettes. Fort Campbell’s Better Opportunity for Single Soldiers (BOSS) program is bringing this fun game back to encourage single Soldiers to get out, meet other singles and who knows, maybe find love (or at least a date). All single guys and gals, get ready for some dating fun on March 12 at 4 p.m. Single Soldiers will have the opportunity to participate in the Dating Game tradition as a contestant, an interrogator, or the Master of Ceremony. Contestants can ask all the usual
questions or come up with their own, but remember this is all in fun so questions should remain in good taste. At the end of the game winning couples will go on a group date, courtesy of BOSS. The more singles that participate the more fun to be had by all! Get down to Dale Wayrynen Recreation Center no later than February 28 and sign up. For more information about the BOSS Dating Game call the D.W. Recreation Center at (270) 798-7446.
