Blackberry Grapefruit Margaritas 5 ounces blanco tequila 5 ounces freshly squeezed grapefruit juice 3 ounces lime juice 2 teaspoons agave nectar splash of sparkling water 5-10 blackberries, muddled Sprinkles or sugar or salt to coat the rim Run a wedge of lime across the top of 2 cocktail glasses. Once damp, coat the rim in sprinkles or sugar or salt. Add all the ingredients except the sparkling water into a cocktail shaker with a few cubes of ice. Shake for 30 seconds until chilled and then strain the margaritas into serving glasses with new ice. Top with a splash of sparkling water in each glass and serve immediately.

Sex in the Driveway 1 ounce peach schnapps 1 ounce blue curaçao 2 ounces vodka (or white rum) Sprite Put crushed ice in a highball glass and pour in the ingredients, in order, ending by topping it off with Sprite. Stir and serve with a straw. Garnish with a lemon wheel.

Alabama Slammer 1 ounce Southern Comfort 1 ounce amaretto 1 ounce sloe gin 2 ounces orange juice

Fill a cocktail shaker halfway with ice cubes. Pour in all the ingredients and shake well. Fill a highball glass with ice and strain the mixture into it. Garnish with a cherry and an orange wheel.

Did you know that July is Blueberry Month? This super sweet little fruit is a great healthy summer staple. There are so many delicious recipes that you can make with this small blue berry, but here are a few of my favorites.

Blueberry Crumble Muffins For crumb topping: ⁄2 cup all-purpose flour • 1⁄2 cup sugar 1 ⁄2 tsp ground cinnamon • 1⁄4 cup butter melted 1

For the muffins: 1 1⁄2 cups all-purpose flour • 3⁄4 cup granulated sugar • 2 tsp baking powder • 1⁄4 tsp kosher salt zest of 2 lemons • 2⁄3 cup buttermilk 1 ⁄3 cup unsalted butter melted • 1 large egg • 2⁄3 cup buttermilk 2 cups blueberries Preheat the oven to 375 degrees F and line a muffin tin with paper liners. In a small bowl, whisk to combine the flour, sugar, and cinnamon. Pour in the melted butter and mix with a fork until crumbs form. Chill in the refrigerator and wait until the muffins are done to top. For the muffin batter, in a large bowl, whisk to combine the flour, sugar, baking powder, salt, and zest. In a separate bowl, whisk to combine the melted butter, egg, and buttermilk. Combine the wet ingredients with the dry, and stir just enough to bring the batter together. Dump in the blueberries, and fold them in gently. Scoop slightly overfilled portions evenly into the 12 lined muffin wells. Sprinkle the crumb topping onto each of the muffin batter scoops. Bake for 28-30 minutes. Enjoy! .

Lemon Blueberry Pound Cake 1 stick butter • 2 cups flour • 1 1⁄2 cups sugar 1 Tablespoon lemon zest • 2 eggs 1 ⁄2 cup plus 2 Tablespoons fresh lemon juice 3/4 cup heavy cream 1 teaspoon vanilla 1 ⁄4 teaspoon baking powder 1 ⁄4 teaspoon baking soda • 1⁄4 teaspoon salt 1 1⁄4 cups blueberries Your Favorite Glaze To begin, simmer 1⁄2 cup sugar and 1 ⁄2 cup lemon juice over medium heat. Let it simmer for a few minutes until the sugar dissolves and thickens slightly. Set aside. In a separate bowl, combine heavy cream, 2 Tablespoons lemon juice, and vanilla. In another bowl, whisk together flour, baking powder, baking soda, and salt. Cream together the butter and 1 cup sugar. Add eggs one at a time. Beat into the flour the 3 additions. Alternate with cream mixture. Fold in the fresh blueberries. Add batter to an oil-coated baking pan. Bake in a preheated 350-degree oven for 30 minutes Brush the top of the cake with lemon syrup. Let stand for 15 minutes, then turn the tea cake out. Brush the remaining syrup all over the cake. Top with a sugar glaze. Cool completely. 21

The summer nights can quickly become chaotic when they are filled with day trips and pool days. Cooking quick and delicious meals are incredibly important for busy families. You don’t want to eat unhealthy fast food all summer, but you also don’t want to waste hours in the kitchen. That is why these recipes are the perfect happy medium. Be sure to give them a try.

Easy Chicken Nachos 1 can black beans • 1 can sliced black olives 3 cups sharp cheddar • 1 small roma tomato 8 medium scallions • 1 small jalapeño 1 pound rotisserie chicken meat • 1⁄2 cup salsa tortilla chips • sour cream, Heat the oven to 425°F. and line a baking sheet with aluminum foil. Drain and rinse the black beans and black olives. Chop 1 roma tomato. Thinly slice 8 scallions and 1 small jalapeño. Shred 1 pound cooked chicken into a medium bowl. Add 1⁄2 cup salsa and toss to combine. Arrange about half of the bag of tortilla chips on the baking sheet in an even layer. Top with half of the chicken and a cup of shredded cheese. Layer the remaining chips on top, followed by the remaining chicken and cheese. Sprinkle with the black beans. Bake the nachos until the cheese is melted. When done, garnish with the black olives, jalapeño, tomato, sour cream, and scallions.

Baked Turkey Meatballs 1 pound ground turkey • 1 cup Italian breadcrumbs 1 small onion diced • 2 large eggs • 1⁄4 cup milk 3 cloves garlic minced • 1⁄2 teaspoon salt 1 ⁄4 teaspoon pepper Preheat oven to 400°F. In a medium size bowl combine turkey, breadcrumbs, onion, eggs, milk, garlic, and salt and pepper. Mix well until incorporated. Roll into 2 inch balls and place onto a greased baking dish. Bake for 15-20 minutes or until cooked throughout. These can be eaten on a bed of lettuce or placed on your favorite spaghetti recipes. 23
