Cook the marinated chicken thighs on an oven tray until the center of the chicken has achieved a temperature of 75C or above.
1. Cook the sweet potato chips as per packet instructions. 2. Thinly slice the red onion, tomatoes and lettuce. 3. For the Tzatziki, combine yoghurt, grated cucumbers and mint sauce.

To serve, assemble each wrap with tzatziki, a handful of wedges, 1-2 chicken thighs and salad.
