A NOTE FROM THE GUEST EDITOR | JANUARY 2022
Bullish on Being an Islander I am excited and honored to write to you this month as the Guest Editor of Crown City Magazine. I moved to Crown City in 1983 and was enrolled in the 2nd Grade at Crown Elementary School. I was lucky enough to attend Coronado schools the rest of the way, graduating from Coronado High School in 1994. As a kid, I was always interested in U.S. History. In the 5th Grade, Mrs. Bardtman spent a great deal of time covering the Revolutionary War and life in Colonial America. Her class left such an impact on me that I ended up getting my parents to augment their plans on a summer family trip to include visiting Morristown, New Jersey, because it had been mentioned in our 5th Grade textbook. By the time that I had graduated from Coronado High School, I had been the beneficiary of many other wonderful History teachers and I had decided to try to join their ranks. In 1999, I succeeded in being hired to teach AP U.S. History at Coronado High School and this year marks my 23rd year teaching History classes at CHS. Teaching History at CHS has given me the opportunity to work with thousands of students and families, and this has given me the chance to serve as their representative on the Coronado City Council and even as the City’s Mayor. During those years, the overwhelming majority of our citizenry was upbeat about the possibilities for the future, but these recent pandemic months have forced us to recalibrate and to refocus. Our challenges now include pulling ourselves back together and making sure that our families, neighbors, and loved ones are rebounding. As January marks an opportunity to reflect upon new beginnings, I hope you will look to this issue for stories to inspire you about the new year to come. This edition is a chance to look to the Crown City for comfort and hope as we enter a new year together as Islanders. Casey Tanaka, Coronado High School History Teacher Coronado City Councilmember and Former Coronado Mayor

Dynamos Leanne Anderson’s Jazzercize program is all about fun, friends and fitness By Samantha Bey
O
n Mother’s Day in 2006, Leanne Anderson had a wakeup call when she caught a glimpse of herself in a picture. “I thought, ‘Oh my gosh — I’m not doing this anymore,’” she remembers. At the age of 25, she had had her first child eight months prior and had put on a lot of weight. “At the time, there were not a lot of fitness programs in central Kentucky where I lived. My family wasn’t into fitness, and we didn’t live an active lifestyle, but I wanted a change,” Anderson explained. The only group fitness she could find in her area was the local Jazzercise, which held classes in a nearby church gym. She decided to check it out and was immediately hooked after her first class. “I was initially just so into the music,” she said. “It didn’t even feel like I was working out — it felt like I was just dancing with my friends, and the hour went by so fast.” And what really sealed the deal is how quickly she saw her health improve after attending regularly. “I just felt so much better,” she said, “and I ended up losing about 50 pounds!” Anderson, who attended a performing arts school through high school and studied musical theater and opera in college, was hooked on the program. She became an instructor and continued teaching classes after her family moved to Pensacola, FL, and then when she landed here in Coronado eight years ago.

Seven years ago, one year after she had started instructing here, Anderson bought Coronado’s Jazzercise franchise from Lois Hughes. Hughes later passed away, but Anderson and her Jazzercise dancers remember Hughes fondly. “Lois was amazing,” she said. “We channel her in so much [of what] we do and she’s always with us when we’re dancing.” When Leanne took over the program, which had been running in Coronado for more than 30 years, each class had around 50 people in it. That trend continued until the pandemic, but she and the four other instructors are now seeing numbers slowly build back up as patrons get back to doing what they love. “The group dynamic of working out with other people is so motivational when it comes to fitness, so that was really tough during COVID-19,” Anderson explained. But the program is back to about 50 percent attendance and growing. And they still offer all their classes on Zoom for those who prefer it. And for those of us who may have two left feet? Fear not — Anderson explains that the program is designed with simplified, repetitive moves so anyone can get grooving. Jazzercise was started in Carlsbad by professional dancer Judi Sheppard Missett in 1968, who had originally started classes to teach jazz dance. However, after noticing high dropout rates and asking for honest

feedback, she learned that her students were really there for fitness and not to learn the technicalities of jazz. She pivoted, recreating classes focused on simpler movements set to upbeat music and designed to target cardiovascular fitness. That was a far more popular model, and the program took off. Many of her students were from military families, so she found she could open studios all over the country by training instructors via VHS tapes, and she soon franchised the business. The iconic program now has more than 8,300 franchises in 32 countries. Anderson explains that each class is a series of choreography to Top 40 hits, and that each song has only four moves to it. “It’s not complicated,” she explained. “If you have a dance background it’s fun to play with the choreography, but you certainly don’t need any foundation in dance to do it.” Her all-time favorite song? Bruno Mars’ “Uptown Funk.” “It’s a killer song and the moves are on point. I just love it every time.” Anderson currently offers three types of classes: Dance Mix, which is 35 minutes of dance cardio work and 25 minutes of strength exercises and stretching; Strength 60, which is a 60-minute combination of weights and bodyweight strength training; and Fusion, a dynamic 60-minute mix of 20

dance and strength. There are six classes offered per week: Monday, Wednesday and Friday at 8:00 a.m. at the Coronado Community Center, Tuesday and Thursday night at 5:45 p.m. and Saturday morning at 8:30 a.m. at Coronado Middle School’s Granzer Hall. Memberships are $59 per month for unlimited classes which, Anderson said, “is the most affordable fitness on the island.” And since fitness is always better with friends, the Jazzercise bunch gets together the third Sunday of the month for brunch, which they call, “Sip, Sip Hooray!” The brunch is held at a different member’s home each time. “These are our people,” said Anderson. “It’s like a big buddy system. When you go to class, your friends are there. And knowing your friends are expecting you on the dance floor is so motivating.” “Some of the people in our classes have been doing this for more than 20 years, which really speaks to the fact that this is a fitness program you can maintain your whole life,” she explained. “It makes lifelong fitness fun.”
For more information, or to sign up for classes, call (850) 206-7708 or email jazzercisecoronado@gmail.com. • Samantha Bey is a freelance writer who lives in Coronado with her husband and four children. CROWNCITYMAGAZINE.COM

alling all tide-poolers and ocean explorers! The best time to visit tide pools in Coronado and San Diego is upon us in January when the King Tides roll in and out of our beautiful rocky shorelines. The King Tides will bring high waves crashing into the cliffs and rocky pools, filling them to the top with ocean water and animals. Then the tides will drain the water far out to the sea, trapping the water and forming miniature aquariums filled with amazing sea creatures. The extreme fluctuations are ideal for capturing creatures such as the Two Spot Octopus, Decorator Crabs, Keyhole Limpets, California Sea Hares, live Sand Dollars, Sculpin, Spanish Shawl Nudibranchs, Abalone, Hermit Crabs, and so much more!

What is a tide chart? Start your adventure by reviewing the tide chart. A tide chart details the daily tides for a local area, showing the high and low tides of each day as well as the sunrise and sunset times. Newspapers publish the tide charts in the weather section and you can also visit some of these websites: • Tidesandcurrents.noaa.gov • Usharbors.com • Tide-forecast.com How to read a tide chart? Almost every day there are two low tides and two high tides. Tide charts make it very easy to identify the right time to get to the shore for optimal exploration. Find the date you are interested in going tide pooling. On some charts, scroll across to the low tide column and look for the negative tides. On other tables, look for the lowest spikes in the day. (examples: Saturday, January 1st, 2:35pm low tide is -1.9)!
When the low tide mark is negative, or below the 0’ line, this means that the tides which had been very high hours earlier have pulled way back out to sea. This is the ideal time find dry(ish) rocks to walk out on, and to search for all the amazing sea life now trapped in the tide pools. Find the time for the lowest tide and try to arrive at your favorite spot about 1-2 hours before that. This will give you the time to walk out as the tide retreats, and be among the pools at their lowest point.

What are the best techniques? • Take an online tide pooling lesson before you go. Go to https://www.seacoastsciencecenter.org/for-educators/virtual-tide-pool/ to find a Tide Pooling lesson that explores the Rocky Shore • Aim to arrive at the tide pools 1-2 hours before the lowest tide. • Wear water shoes or tennis shoes that will protect your feet from sharp rocks and shells, and also provide traction on slippery rocks • Use the 2-finger touch! 1 finger is a poke, 3 fingers is too much • Only observe, don’t take Remember to leave the coastal sea creatures and shells right where you found them. Many of our tide pools are protected by law. Consider making a positive impact and bring a reusable bag to pick up any trash you find along your beach walk.

Yes, there have been some of our local owners who, due to either illness or age, have chosen to retire. Others were forced out due to increases in rents. ice cream shops to fine dining. Today, however, it is far more likely to see the corporate food chains opening in Coronado. In spite of this, there is still one man I know who grew up in Coronado with a dream of opening his own restaurant. This is the story of Brant Sarber, who now owns two sites in Coronado. He comes from a Navy family; his father a former seal, his mother a school teacher who later turned to real estate. As he tells it, Brant and his brother worked their way through high

school with a variety of odd jobs. Not the usual mowing lawns or walking dogs — no, Brant was doing touch up painting at the Shores as owners moved in. At seventeen he was a front desk clerk at the Glorietta Bay Inn. After graduating Coronado High School, class of 1977, he then worked his way through San Diego State. Coming back to Coronado to work was natural. Many of you would remember him from running the upstairs bar at the Chart House — now the Bluewater Boathouse Seafood Grill — for over 10 years. After several years he was able to convince the owners to serve food upstairs. That proved to be an excellent choice. I know many people like myself who rejoiced when we learned we could enjoy food at the upstairs bar thanks to Brant. Then, things changed. The owners of Oriental Arts on Orange Avenue chose to retire and their space on the 1200 block of orange became available. Seeing this as his chance at his dream, Brant went on to open Island Pasta in 1990. He wanted something simple and affordable that would perhaps cater to young people like SEALs in town and locals alike. His idea of pasta offerings and affordable wine took hold and is still in operation today. His sister-inlaw has been its manager, and

he still has the same chef after all these years. He has also had the same landlord since day one who has always been willing to work with his tenants. Once again, in 1999, another opportunity came his way. He was able to open Costa Azul on Orange Avenue, the site of the old Mulvaney’s. He offered both a good bar and a large dining room, with a variety of Mexican dishes both large and small. Outdoor seating in good weather was definitely a plus. How many families celebrated one event or another at Costa? Too many to count.

Costa Azul is now located at the Coronado Ferry Landing with a gorgeous waterfront view of the San Diego Bay and Downtown skyline.
Brant was always there to try to accommodate large parties, usually for local businesses or families. Many a CHS sporting event was followed by dinner at Costa Azul. Then came the blow, when after 20 years of operation he was forced to close and that block was both sold and remodeled. Not being one to give up easily, he was finally able to procure a site at the Ferry Landing with an outstanding view of the bay from both the dining room and the upper deck as well. Happy to be up and running once again, with the same chef now with him for 20 years, Costa Azul opened its doors bayside. Unfortunately, two months later he was forced to close due to COVID-19. He remained closed for over a year, reopening this past year. This year has been the year of recovery, starting with a limited menu of Mexican entrees. He was happy to share with me that as of November Costa has a new expanded menu, offering some of the
old Coronado customer favorites. He was able to upgrade the seating area behind the bar with all new booths and tables. It is both attractive and perhaps a little more private. I was somewhat surprised that he had found that some locals did not seem to want to go as far as the Ferry Landing to dine. I have found that this really is a great location with an outstanding view, ample parking, and an opportunity to stroll the boardwalk or get a window table at Costa Azul and people-watch. Happy New Year to all of you. Hope you can enjoy a night out to dine in Coronado this new year.

War-Torn
Noodles The journey of phở By Clyde Van Arsdall IV

JANUARY 2022
The smell of a steaming bowl of phở, pronounced fuh, is unmistakable and intoxicating. The fresh herbs that accompany this dish are eye-catching and fragrant. They signal something good is about to be served. The excitement, for me, is palpable. I can only imagine that phở is like a warm hug. A welcome home, for those that remember it from childhood. For me, this beef noodle soup is simply comforting. I have no memories tied to it. I do however feel welcomed by the people that love and serve it. I am neither Vietnamese nor an expert on this ethereal dish. But, I don’t have to be either of these things to enjoy it and sing its praises. There are few things that are more satisfying than discovering new foods, and taking a deep dive into their origins. Let the noodle journey begin. The history of this dish is a good place to start: what phở is, where it came from, and how this dish reached such a large audience. There are a couple of things you need to know before your introductory bowl of phở. First impressions are important; you want your initial taste to be transformative. I will share tips on ordering and eating this dish. The bone broth alone takes up to 24 hours to cook. The best phở is made by those who have mastered this art. I will share with you some of my favorite places to experience these memorable noodles. The story of phở is one filled with conflict. The wars that ravished Vietnam gave birth to, shaped and eventually elevated phở to what it is today. A noodle dish born of war. Napoleon invaded Vietnam in 1857. Colonization brought French culture, architecture and cuisine. The French

introduced the Vietnamese to beef and their beloved stew, potau-feu. Eating beef was a luxury to the Vietnamese and was well received. Soon, it found its way into a variety of traditional dishes. The most famous example was xáo trâu, a humble bowl of ox broth and vermicelli noodles. It didn’t take long for this bland soup to start morphing into something a little more like pot-aufeu. Parts of the cow that were less desirable to the French found their way into the pot and replaced ox altogether. Beef bones rich in marrow, as well as onions and ginger charred over an open flame, elevated the broth. Tough cuts of beef simmered in the pot became tender and added additional flavor to the dish. Rice noodles called bánh phở, introduced by Chinese immigrants, found their way into the bowl. The new concoction became known as phở, taking its name from the noodles, and a star was born. It would take nearly 100 years and another war for this elevated soup to change again. When France lost Vietnam, the country became divided between north and south — a clear border was drawn. Many Vietnamese fled south to escape communism, and with them, they took their beloved phở. South Vietnam was full of abundance due to trade and climate. It didn’t take long for people to start adding things to their favorite dish. Cooks added spices such as cloves, fennel, star anise

and cinnamon, which added layers of flavor. Fish sauce and rock sugar provided saltiness and a touch of sweetness. The accompaniments changed as well. New items were added to the thinly sliced chilis and wedges of lime that were served in the north. Generous amounts of fresh herbs — basil, sawgrass leaf, bean sprouts, and scallions — soon became standard. Condiments like chili sauce (sriracha), hoisin (plum sauce) and sa tế (chili oil with lemongrass) became staples. War had led to the creation of a new southern style of phở. The northern version remains the same to this day. The war raged on, the United States soon joined the fight against the North Vietnamese. Fighting communists was a hungry business in which thousands of U.S. soldiers would discover phở for the first time. The fall of Saigon in 1975 marked the end of the Vietnam war. Phở would once again become mobile, this time leaving Vietnam in order to comfort those who had fled the country. This dish provided a taste of home for those refugees living in the diaspora. Phở restaurants started popping up in Vietnamese communities across the globe. A popular song of the era asked the question that was on everyone’s mind: “War, what is it good for?” The resounding answer given was, “Absolutely nothing.” Absolutes, however, are tricky, and war is nuanced and messy. When studying food history, you often find that there are some delicious dishes that result from wars. Cultures meld, refugees flee, new dishes emerge and old ones find new homes, gaining a wider audience. Lucky for us, good food has never recognized borders. It didn’t take long for news to spread about this exotic comfort food. Phở soon found devotees outside of the Vietnamese community. Enough history. Let’s get to the fun part: ordering and eating this magical bowl of noodles.
Han Dam (thinly sliced onions, along with a dish of hoisin and sriracha.

Nuoc beo (scallion oil) is a side you have to ask for.
Condiments are a big part of the phở experience.
How to order phở. Ordering Phở is easy if you know what you are looking at on the menu. It is really just about what meats you would like with your noodles. Everything else comes standard. There are some gateway meat choices that most first-time eaters will find easy to like. Rare and well-done steak is a no-brainer. Well-done steak needs no explanation, but rare steak is a bit more nuanced. Order it on the side so you can put it in the broth yourself. If not, it will be cooked before you receive it. Flank and brisket are also easy to like, as they are flavorful and tender. Tendon, fatty brisket, crunchy flank, meatball balls and tripe take some time to warm up to. I do not want to dissuade you from trying these, but they tend to take a more advanced palate, one that is more easygoing when it comes to texture. If you want to go all-in and try a little bit of everything, look no further than the top of the menu. There, you will often find a bowl titled Đặc Biệt which means special or combo. This will include a little bit of everything. Get ready, you are in for a culinary adventure. Your steaming bowl of goodness is sitting right in front of you. What do you do first? The simple answer is to smell it. I mean, get close to the bowl with your nose and take it all in. There is nothing that smells quite like phở. Now that you have awakened your senses, it’s time to eat. How to eat phở. There is no one way to eat phở; everyone has a different take on it. However, I do feel, as a chef, the first thing you should do is taste the broth. The broth takes a long time to make and tasting it before you alter it in any way is a sign of respect. Next step for me is pepper. I love to observe what others do and I see people pepper their broth more often than not. How much you add is up to you — add, taste and adjust. Rice noodles can sometimes clump together. This is a good time to gently separate them to make them easier to eat. This can be easily accomplished using your chopsticks and spoon. Once the noodles have spread out, then it is the time to doctor up your bowl. The side plate of fresh Thai basil, possibly sawtooth herb, bean sprouts, lime and chilis are all there for you to add to your bowl of phở any way you see fit. It is best to tear up the herbs rather than add them whole. All are good; the winning combination is the one you choose. Just know they don’t have to be added all at once. I CROWNCITYMAGAZINE.COM

like adding things in stages, as the taste of the phở will change as you add to it. There are two other popular sides that don’t come standard and have to be ordered: Hanh Dam and Nuoc Beo. Hanh Dam is a side dish of thinly sliced white onions in vinegar with a touch of sugar, they are tart with a hint of sweetness. I love these and pile them right into my bowl. Nuoc bBo is scallion oil made with fat that has been skimmed off the broth while cooking. The white ends of the onions are added to this oil. The oil can be spooned into your phở for additional flavor. The scallions are seldom fully cooked so they can be a bit astringent if eaten straight from the oil. If you put them in your broth or dip them in one of the many sauces, it will take the edge off. They are delicious and crunchy. The next things to consider are condiments. Most of these — like hoisin, sriracha and garlic chili sauce — can be found on the table, but one of my favorites, sa tê, you will have to ask for. Sa tê is chili oil with garlic and lemongrass. How to use these condiments with your phở is where many people differ. I am of the notion that it is best to keep these separate from the broth. Most good phở establishments provide small dishes for condiments. Hoisin and sriracha are often mixed much like soy sauce and wasabi are mixed for sushi. Hoisin is first added to the dish, then sriracha. The two of them are then combined. The amount of sriracha you add will affect the heat. Small amounts of this mixture can be added to bites of noodles and meat using your spoon. Another method is simply dipping small amounts of meat on the side using the small sauce dish as a dipping bowl. The same is true of chili sauce, sa tȇ and garlic chili sauce. If you simply add these to the broth, the whole bowl will taste like 38

these sauces and the delicate nature of the beef broth will be lost. I can’t stress this enough, but this is only a suggestion. You do you — adding these straight to the bowl is perfectly acceptable, but for me, I feel it is much better to add these to individual bites. When eating phở, there are no hard and fast rules, but those who eat phở with regularity hold chopsticks in one hand and the spoon in another. Chopsticks can be used to assemble bites in the spoon or simply alternate bites of noodles and meat using chopsticks with spoonfuls of delicious broth. The pros seem to use these two delivery devices in tandem, a technique I am dutifully working on. I hope you will venture forth and discover phở for yourself. This dish is no longer a treat that I indulge in from time to time. Phở is now a regular staple for me, one I cannot live without. The smells, flavors and textures are well worth a trip over the bridge. Here are some places to get a steaming bowl of goodness. • Clyde Van Arsdall is a third-generation Coronado local, chef, and storyteller. Places in San Diego to get good phở. Phở is considered breakfast food in Vietnam. Several of these locations open early for breakfast. If you haven’t had phở for breakfast then you need to do so. Pick an overcast morning and head out early. This is by far my favorite time of day to enjoy this amazing dish. • Phở Hòa located in San Diego’s Little Saigon Cultural and Commercial District on El Cajon Blvd. This is a food hall with long tables specializing in only phở. The plates of fresh herbs are the most generous I have found. They even contain sawtooth herb which is not offered by most places. The sa tê (chili oil) is housemade and worth asking for. This place is one of my favorites. Hours 7 am - 8 pm.
Phở Vân restaurant on El Cajon Blvd.
• Phở Vân located in City Heights on El Cajon Blvd. Nice atmosphere with a menu that offers more than just phở. The sa tê is excellent and made in-house — don’t forget to ask for this. This is one of my favorite breakfast spots, and one of my favorite bowls. Hours 8 am - 9 pm. • OB Noodle House has two locations, both located in Ocean Beach. The original is on Cable Street. The newest location, Bar 1502 is located on Niagara Avenue, down the street from the entrance to the pier. Both have a large phở selection with an expansive menu of other items that can best be described as Asian fusion. Both have a great craft beer lineup, but they differ slightly, as the original on Cable focuses on sake and Bar 1502 specializes in whiskey. Garlic Chicken Wings and Sizzling Fish are a must-try. Hours 12:00 pm - 10:00 pm.
Phở Bò restaurant in Barrio Logan.
• Phở Bò located in Barrio Logan on Newton Avenue. This is the closest bowl of phở to Coronado; they do a great job and have a menu that includes more than just phở. Now more than ever, people all over the globe are working from home. Having an aesthetically pleasing, organized work environment at home has become a priority. I don’t know about you, but my head feels clearer and I am more productive when things around me are organized and clutter-free.
We have had the privilege of creating some pretty amazing workspaces for clients over the years. If you’ve been reading our monthly column in Crown City Magazine for the past few years, you know there is always the same theme to our designs. It is typically a neutral, timeless palette and if you are lucky, a pop of color here and there. We do this purposely, so that when you are in the space it feels like you may have stepped into a spa. We love mixing neutral palettes to make a casual, natural, yet elevated look in an area. We also love mixing in some organiclooking pieces to warm up the place. Take a look at a few of these spaces we have created in the past and we hope they inspire you in the New Year to create an equally aesthetically pleasing space of your own. Cheers! • Karyn Frazier and Jessica Nicolls are the owners of local interior design firm Bungalow 56.

Recognize the connection between health and nature Can you smell it? The beautiful salty sea air, the clean crisp leaves, the aromatic flowers…. this connectedness with nature provides us with a pleasant environment in which we can forget about the deadlines, take in big breaths of fresh air and reconnect with what feeds our soul! Immersing yourself in nature has proven to improve mental and physical health. A Stanford Woods Institute for the Environment study found people who walked for 90 minutes in a natural area decreased activity in the region of the brain that is associated with depression. Being in nature and experiencing the sights, smells and natural scenes restores calmness to our bodies and increases psychological wellbeing. Hiking also provides weight loss, increased muscle tone and energy levels, improved heart health, and a more positive outlook on life according to Andrew Weil, M.D.
Pack the essentials for a successful day on the trails
Don’t be deterred from voyaging out if you don’t think you have specialized hiking gear. Chances are you already have all you need, you just need to take it with you! • Hiking backpack • Sun protection: Sunscreen, hat, and sunglasses. Even overcast weather can still pack a big UV punch • Hiking shoes or tennis shoes with good support. Leave the open-toed sandals behind. • Water!!! Always bring more than you think you may need. Bring a reusable water bottle or camelback • Snacks: healthy portable options include bananas, sandwiches, dried fruit, granola, nuts, and protein bars. Especially important if you are taking kids! • Download the All Trails app. This will give you a detailed map so you know where you are on your hike and any challenges up ahead
