You can hear our great home-grown talents at local venues and pubs, and enjoy almost four weeks of musical programming at the Elora Festival, this year including a performance by the dazzling soprano, Dame Kiri Te Kanawa. There are country, Celtic and straight-ahead rock performances throughout the summer as well. Both the Fergus Truck Show and the Fergus Scottish Festival and Highland Games—the largest events of their kind in North America—feature an impressive musical component, as well as traditional competitions that draw entries and spectators from far and wide.

Here you can test your kayaking skills, or make arrangements to learn. For a more relaxed water adventure, enjoy a leisurely float through the Gorge in an inner tube and see centuries of nature’s work from the bottom-up. You can also walk or bike on the Elora Cataract Trailway—a 47-kilometre trail that connects Elora to the Forks of the Credit, and points beyond. The artistic community flourishes here, and can be found on display year-round at the widely respected Elora Centre for the Arts. You can experience the spooky, larger-than-life creations of monstermaker Tim Murton during October’s Monster Month. Artists and artisans invite visitors into their studios on two special weekends in late-September during the Elora Fergus Studio Tour. There are other creative experiences too—from the Wellington County Museum and Archives, to historic guided or self-guided walking tours that highlight the area’s heritage. Fly fishers from Europe to California and all points in between come to Fergus and Elora to match wits with the brown trout. Part of the allure is that the River has many faces—from the flat, easywading limestone section between Belwood and Fergus, to the escarpment between Fergus and Elora where cliffs tower 60 feet above you, to the downstream sections, where the river weaves through meadows and cedar bush. There’s no need to hurry: the fish aren’t going anywhere, since this section is strictly catch-and-release. 3

A variety of events are planned to celebrate Fergus’ 175th birthday in 2008. June 3 will see the RCMP Musical Ride in Fergus, and there’s a homecoming celebration brimming with events leading up to Canada Day. Doors Open Fergus takes place on June 28, along with the Summer Sensations Artwalk. Victoria Park features music for all ages on Sunday, with a spectacular fireworks Grand Finale on July 1. SENSATIONAL ELORA

Elora is sensational all the time, but this fall, we’re featuring a special 11-day “Festival of the Senses”. This event-filled celebration offers something for every taste, touch, smell, sound and sight, including the renowned music, art, drama, film, food, fun, breathtaking scenery and heritage architecture of Elora. In 2008, its inaugural year, Sensational Elora will run from October 2 to 13.

Drew House was constructed between 1848 and 1854 by George Drew, a prominent village attorney. It is notable for its fine architectural features, from its wrap-around porch and hand-carved bric-a-brac trim to its distinctive cathedral windows. With ample off-street parking, Drew House is within walking distance of Elora’s shops, restaurants, cinema, and scenic attractions. Guest quarters are completely separate from the residence, with a private entrance through our Guest Kitchen. Here you’ll find a fridge, microwave, coffeemaker and other conveniences. the elora mill inn

W

e all have to eat, but Chef Matthew Foote loves to dine. It influences the food he creates—his inspiration: some of the country’s greatest chefs. He apprenticed under Chef Rudolph Blattler at the Westin Harbour Castle, after attending George Brown College. It was Louise Duhamel, then Executive Chef at Langdon Hall, who instilled an appreciation of simplicity in preparation and presentation. He continued under Keith Frogett at Scaramouche but it is Chef Duhamel’s words to “Taste, Taste, Taste” that Foote especially heeded. On a world tour, he sampled frogs-leg porridge in Singapore, kumara (a form of sweet potato) in New Zealand, and the ever-famous Schwaben

maultaschen. He excelled Executive chef Matthew in cooking classes with Foote: inspired culinary housewives in Indonesia, excellence India and Thailand. Fortunately for us, he came back and joined Lynn Crawford’s team at The Four Seasons Toronto, swiftly moving to Banquet Chef. Matthew then returned to Langdon Hall as Executive Sous Chef, under Jonathan Gushue. His menus reflect an honesty and excitement based on local product and the historic charm of the Elora Mill. As he works toward accreditation with the International Sommelier Guild, his approach is simple: “I desire to cook with my parents’ spirit of hospitality, with skill that makes my wife swoon, and the logic of my brother. Importantly, I am never too serious to cook for my children.” Proud recipient of the CAA 4-Diamond Award and the Wine Spectator Award 2007. ohammad Haque wears many hats. He and his partner, Golam Mohiuddin, are owners of the Fergus Tandoori Grill, specializing in fine Indian cuisine. He is also the Executive Chef of this highly-rated restaurant and on occasion, has been known to double as the pleasant host and server. Executive Chef Mohammad Haque and Golam Mohiuddin: flavours worth the drive to Fergus

Mohammad and Golam chose to open in this historic Scottish enclave because they saw an opportunity to bring their traditional meals and methods of cooking them, to our shores. While Golam is the business end, Mohammad explains, “We are like the branch and its leaves.” They have never looked back. There is no other restaurant in the immediate vicinity that offers these taste experiences. From melt-in-the-mouth butter chicken with just the right amount of heat, to succulent shrimp Korma and garlic Naan—perfect for soaking up the last bit of sauce—Chef Mohammad presides over a kitchen whose mission is to prepare authentic Indian foods, many of which are cooked the unique Tandoor way. Meats are left in a marinade for up to 24 hours, then skewered and cooked in a clay pot at intense heat over charcoal to seal the flavour. The result is paradise. Tender, spicy or mild depending on taste buds, and delivered to table in copper bowls to keep it hot, the food is a delicious sharing of the Chef’s own.

A

bistro-style restaurant with international flavours, 13 Mill Street is serenely set back from the main street of Elora, its openair patio overlooking the Grand River where, in the lazy days of summer, swans drift by. It is here that Chef Matthew Cressey transforms basic meals into tempting taste experiences with a twist. Trained at the renowned Stratford Chef School, Matthew’s exacting standards and impeccable timing are what gives him the Chef Matthew Cressey: tempting taste experiences with a twist

edge. He focusses on simplicity, in preparation and delivery, with just the right touch of flavour. Organization is a strong part of this chef’s make up, as is creativity in lunch and dinner menus that change frequently to take advantage of local, fresh foods. It’s not unusual to see Chef Cressey at the Saturday market, selecting justpicked items to incorporate in meals that day, including the daily specials of pasta and fish. Nor is it unusual to see owners Rebecca Cremasco and Johanna Scott assisting in that endeavour. Honoured as Youth Entrepreneurs of the Year at Centre Wellington’s 2007 Awards of Excellence for their success at the Dragonfly Café next door, both locations are dedicated to ensuring an extraordinary experience for every diner. To help do that, 13 Mill Street has defined two menu constants—a build-your-own gourmet burger, and 30-day, dry-aged steak that’s so tender it can almost be cut with a fork.
