ELORA AND FERGUS: A CLASSIC COUPLE Music—from the classics to classic rock—is prominent everywhere. You can hear both international and great home-grown talents at local venues and pubs, and enjoy almost four weeks of musical programming at the Elora Festival. There are country, Celtic and straightahead rock performances throughout the summer as well. Both the Fergus Truck Show and the Fergus Scottish Festival & Highland Games—the largest events of their kind in North America—feature an impressive musical component, as well as traditional competitions that draw entries and spectators from far and wide. The artistic community flourishes here, and is on display year-round at the widely respected Elora Centre for the Arts. There are other creative experiences too—from the Wellington County Museum and Archives, to historic guided or self-guided walking tours, 4

A favourite weekend tradition from midMay through end-October is the outdoor Elora Farmers’ Market, arguably the prettiest farmers’ market in Ontario. This is a truly local food experience. Held along the savourelorafergus.ca

riverbank in the heart of the village at Bissell Park, this small market offers a fabulous variety of farm fresh foods, from organic fruits and vegetables to meats, cheeses, jams and breads, baked goods and specialty teas. Every week there’s something new to enjoy, changing with the seasons. The market continues indoors over winter, at nearby Grand River Raceway. Sip your morning coffee while you explore the sights, sounds and tastes. Get to know the growers and learn some fabulous recipes that use the produce of the season. From fresh herbs to blackberries to blue potatoes, there’s something for everyone, so get there early. You never know who you’ll meet or what you’ll see. This is where people gather and it is always a treat. From the downtown cores to sprawling farm fields, our connection to the land influences every aspect of our quality of life, and we like to live well. THE STORY OF OUR COVER This past September, a partnership forged by local food lovers took place at Deerfields Farm in Hillsburgh, here in Wellington County. Early morning thunderstorms fled and left behind a beautiful sun-kissed afternoon. White linens, china, crisp wines 8

and fresh flowers were served up with the finest in tastes by local food caterers and chefs. Nothing could touch the warm hospitality, friendly faces and the finest of flavours served up, Wellington County style. Memories of that afternoon, which are pictured on our cover, were also captured on canvas in the compelling, on-the-spot work of painter Laurie Wonfor Nolan: a glimpse of Taste Real Guelph Wellington—a fundraising initiative to kick-start our Countywide local food program. Laurie’s work, represented at right, is a feast for the eyes, just as that day was a feast for the senses; a recipe to experience, for all who came. Now... allow us to introduce you to a few of the folks who have inspired us to look beyond food trends, to consider health, wellness, and a sustainable future for the next generations of farmers. The profiles that follow feature but a few of our local chefs, growers and culinary purveyors, whose passion and purpose is a shared view on the future of agriculture and community. hef Matthew Foote’s passion to use locally grown ingredients in his menu creations is a perfect fit to the principles of freshness and sustainability that is the Breadalbane Street Bistro, and the driving force behind its cuisine. His is a background that makes him one of Canada’s rising stars. He attributes his success to his training, beginning as a student at George Brown College in Toronto. His subsequent apprenticeship at the Westin Harbour Castle propelled him to other Executive Chef Matthew Foote: making the connection with a sustainable food future, every day.

As Executive Chef, he draws upon the expertise of local artisanal farmers and suppliers to marry fresh local tastes with explosive flavour for a dining experience bar none. He is strongly supported in this by Innkeeper Peter Egger, whose approach is to connect people with the very food they eat by showcasing global delicacies made from food grown right here at home, literally at a grassroots level. And it’s mirrored in Chef Matthew. As talented as he is, he has a down to earth outlook when it comes to food preparation. “It is my sincere desire to cook with my parents’ spirit of hospitality; skill that makes my wife swoon and the logic of my brother,’ he says. “Most importantly, I am never too serious to cook for my children.” Twelve luxurious overnight suites. hopping for fresh produce, meats and cheeses is meant to be a daily occurrence here. Styled after the European way of buying daily to eat fresh every day, Fraberts Fresh Food is all about getting the farm to the table, as fast as possible. Owners Jackie Fraser and Derek Roberts, the “Fra” and “berts” in the name itself, Chef Derek’s enjoy-at-home meals use the same local ingredients visitors can buy in Fraser’s farm-fresh market.

opened their doors with a commitment to offer the freshest foods they could. And that meant finding local producers where foods didn’t have to be trucked for miles, and adjusting both products and meals as the growing season changes. Chef Roberts is highly adept at adjusting. A graduate of the Culinary Arts Institute of Ontario, he’s honed his skills with large batch cooking for banquets at Kingsbridge Centre in King City, and refined them further as a sous-chef at the Breadalbane Inn in Fergus. With those skills, his passion for fresh and the support of local growers, he creates made-from-scratch meals to take home that are as nutritious as they are tasty. Even his deli meats are marinated and cooked here, then hand sliced as needed. Fraberts is also a fresh market, where you can buy and cook with the same ingredients Derek uses every day. From stews to soups, Chef Roberts begins and ends with fresh. The result—if not just like Mom makes—is very close to it. But then Mom probably didn’t add locally brewed Hockley Valley dark ale to her beef stew. Event catering and monthly cooking classes available. C

hef Jerry Kelland is a perfect fit, the “real McCoy.” A born and raised Newfie, he’s been at this kitchen’s helm since it opened seven years ago. A wordof-mouth find by owner Rebecca O’Brien and her business partner, Joanne Bach, his meals are inspired by his mom. “They’re her secret recipes,” he confides. But there’s more than just inspiration at work here. A graduate of Advanced Culinary at Cornell University, he’s launched many a restaurant, and has experienced all manner of food Below, Joanne and Rebecca: “If you can’t have fun here, you can’t have fun anywhere.”

He knows his stuff, which is never more evident than amidst the sometimes-chaos he controls in the kitchen, as his sous-chef and cooks produce meals on a big scale. There’s a family reunion of 50 people going on as we speak, and everyone is hungry. It’s been a busy day; Rebecca jokes that her father-in-law is in the back doing dishes. Thing is, he really is back there. He’s visiting from Newfoundland. It’s not unusual that family gets called into action. Very much hands-on and close knit, both Rebecca and Joanne work with Chef to insert seasonal offerings in their standard menu of fun and good food. Jerry explains that Rebecca’s father-in-law procures the lobsters for their annual lobsterfest, cooking them “the way they should be,” in salt water, then loading them on a plane for same-day delivery to the restaurant straight from the pier. “They’re on the plate that afternoon, and you can’t get fresher than that, B’y,” he winks. “Unless you’re really in Newfoundland.” Casual dining. T

he name says it all. For 17 successful years, chocolatiers Gerry and Krista Byers and their team have been hand-crafting decadent delights in Belgian chocolate at this Fergus location. Their shop is stuffed with chocolate truffles—plus more than 12 flavours of fresh fudge, peanut brittle, Chocolatier Gerry Byers: sometimes love leads to chocolate.

almond buttercrunch, homemade marshmallow dipped in Belgian chocolate, mint smoothies, almond and cranberry bark, gourmet flavoured swirl barks, chocolate covered pretzels... whew! You get the picture. And they’re all lovingly created on site. What started out as a small retail operation, born from a shared desire to work together, has become a year-round destination. “We often hear our customers say it’s the best chocolate they’ve ever tasted,” Krista says with pride. “Some come a long way to take home their favourites.” Their success is due in part to the high quality imported Belgian chocolate they start with, and to their pure creativity in finding new ways of looking at chocolate. But the biggest factor is the love that goes into the attention to detail that makes every chocolate a first-time, delectable experience. There’s no doubt these chocolatiers have lots of love. Over several years, Krista and Gerry have adopted five Haitian children, and established various in-store programs for sending support to the orphanage where they once resided. They’ve taught a family in Port au Prince how to sew, providing them with a skill for a sustainable income. And their sister store, I Love That Gift! showcasing gifts and home décor, features the aprons this family in Haiti has made. No wonder that “love” figures so prominently in everything they do—from family and staff, to creating some of the finest chocolates and sweets anywhere. Open year round, Mon to Sat, 10 am to 6 pm. MEET THE FLOUR CHILD | FRAN WEIMA

O

wner Fran Weima is ecstatic. She’s playing in flour, and loves every minute of it. “If I could do only one thing for the rest of my life, it would be baking bread,” she cheerily says. And she’s got her wish. Fran buys grains locally, milling her own flour to ensure it’s absolutely pure. Today, this self-trained baker is up to her arms, slinging 20 pounds of dough that will convert to whatever her imagination and desire dictates. Perhaps it’ll be her Red Fife heritage bread or sun-dried tomato and herb. Whichever way it It’s a slice, and then some... Fran Weima sure can bake.

comes together, one thing is certain. It will be fresh out of the oven. But that’s not all she’s baking. Sinfully delicious desserts are already in the oven—her “Surprise of the Day” is the luscious honeylemon tarts cooling on the racks. The Bistro takes full advantage, using the breads for flavourful deli-style sandwiches, and the desserts to finish a comfort meal. It’s just the spot for coziness. With a perfect view of the Grand River, the 28-seat Bistro serves tasty homemade goodness. French cuisine figures into the menu, “naturellement”, with such items as coq au vin, beef bourguignon and cassoulet. There are other selections, like a Mexican Shepherd’s Pie and white chili with chicken. Importantly, anyone with Celiac disease has options here too. Fran is equally skilled at flourless baking, a result of her daughter who also lives with the condition. Her breakfast basket is a perfect example: bacon and eggs, cheese and onions in a shredded potato basket. (Shhh... you don’t even miss the bread!) Bakery opens daily at 9 am with seating for 12. S

tocking nothing but the finest in olive oils and vinegars, the husband and wife team of David Medeiros and Barbara Anderson are on a mission: to take the mystique away from the use of extra virgin olive oils and vinegars through education and sampling. Man on a mission: David Medeiros is out to educate on the use of fine oils and vinegars.

The idea started with their desire to operate a wine shop. Instead, they opened The Village Olive Grove—not such a big leap. Oils and vinegars are similar to wine in that each pairs uniquely with different foods. David explains that only international award-winning oils with gold, silver or bronze designations are carried in store. Many are not sold anywhere else in Canada, such as the one that hails from musician/singer Sting’s estate in Tuscany. And they’re not just for cooking. They shine at providing that healthy finishing touch on foods. Shelf signs provide informative tasting notes, the origin and Awards on their 50 oils and 30 vinegars, including how to pair with foods. Two tasting bars, one of which overlooks the Grand River, make it easy, scenic and fun for visitors to sample interesting flavours and learn. Which is the reason they also offer dropin workshops to explore the fine art of tasting and using oils and vinegars, including a handcrafted ice wine vinegar and Verjus, produced provincially in the Niagara Region. “Oils and vinegars are where wine was 30 years ago,” says David. e’s worked at some of the most prestigious hotels and restaurants in Canada. Executive Chef Cameron Bryce wields skills honed from 12 years of food preparation and design in such kitchens as the five-star Eden Dining Room in the Rimrock Hotel in Banff, and the fine-dining Auberge du Pommier in Toronto. Today, he and his talented culinary team Executive Chef Cameron Bryce: personalizing the dining experience, large and small.

But Cameron works closely with distributors to source ingredients in keeping with the 100 Mile Diet. Result? Chef’s menu reads like a “who’s-who” of fresh tastes: Ontario steaks, lamb and pork. L

ocal food first: that’s the mantra for “Taste Real From the Ground Up”—a brand that guarantees what you buy or eat is grown right here. A project of Guelph Wellington Local Food, “taste•real” is all about bringing the farmer front and centre, building relationships with you, with restaurants and with our chefs and farmers’ markets, to produce a world-class food experience that’s the real deal when it comes to going local. The hub of all things local: closing the gap between farm and fork.

Passionately spearheading this local food movement, project coordinator Kate Vsetula explains why. “We want to provide regional food and culinary experiences that are memorable to everyone in our area, and everyone who comes to visit. We have such farming diversity to draw on—elk, ostrich, sheep and goats’ milk cheeses, fruits and vegetables; these are just a few. There’s nothing stopping us from being the hub for all things local.” Echoing that enthusiasm is outreach coordinator Gayl Creutzberg. “We’ve got it all. Beautiful farms producing great products, and processors and chefs who transform them into ‘taste•real’ culinary delights. It’s all about showcasing and celebrating locally grown, wholesome food.” The movement is spreading quickly, and in a variety of ways, through festivals that partner with restaurants serving taste•real food; with the local food map that clearly defines where the farms are; and through the spring and fall Rural Romps, where over 20 regional farms and markets open their doors to show people how our food is grown. ynda Sauvé and Carol Sampson are counting their sheep, while counting their blessings. T

he health and contentment of their rabbits is paramount with Leslie and Jeff Zinger. For these fourth generation farmers, rabbits are a family passion, including a helping hand at feeding time from sevenyear-old Elizabeth. Johnathan, five, prefers to supervise. Leslie Zinger: four generations have made rabbits a family passion.

“Every processed rabbit is government inspected for food safety,” says Leslie, getting straight to one of her top priorities. “The way we ensure that is with our strict regime of cleaning, disinfecting and health assessments.” They’ve built a special barn, where windows wrap the building to let in natural light, and work to maintain a healthy balance with quality feed, which is purchased locally. With over 150 does and 20 bucks, record-keeping for breeding schedules and litters is a must. But there’s also educating customers about how to prepare rabbit meat, and for that, Leslie talks with local chefs to come up with new recipe ideas, which she gladly shares with customers. “They’re basic, so people can experience the flavour without the daunting task of preparing a gourmet meal.” To encourage trial, they offer not just whole rabbit, but sausage, ground and seasoned rabbit, as well as kabobs, which are perfect for the BBQ. Nor does it end there. Naturally hatched, freerange, non-medicated ducks and geese come and go as they please, taking dips in a pool set aside for that purpose. On a seasonal basis, turkeys and chickens run alongside. fergus truck show

I

t’s the definition of “Go big or stay home”: 30 acres, close to 400 trucks, where owners and onlookers of all ages congregate in a celebration of both the beauty, and the beast. Beauty in the chromed to-the-nines, A celebration of chrome, music and food: it’s a weekend family affair.

body-painted art-on-wheels, pristinely cleaned, polished, and dusted for the Show and Shine. And the beast, in the revving of enhanced engines in the modified truck and tractor pull— hauling a dead weight from a standing start until the wheels spin and all forward motion stops. As one volunteer put it, “It’s like drag racing on dirt.” It’s North America’s largest truck show, due in part to the efforts of hundreds of volunteers. Originally intended only as a one-time event to raise funds, the Fergus Truck Show is now in its 26th year with over $500,000 given back to the community. There’s always great entertainment that includes a bit of everything for everyone: country and rock-country, tribute acts and straight-ahead rock with local bands or headliners like Emerson Drive. There’s a Saturday night beef barbecue followed by a light show that has nothing to do with fireworks and everything to do with decked-out, illuminated chrome on wheels. With a pancake and sausage, true trucker-style breakfast on Sunday, it’s three July days of muscle-flexin’, truck-struttin’, food and music-lovin’ fun for kids of every age. wellington county museum & archives

E

stablished in 1954, the Wellington County Museum and Archives today makes its home in a building with a much earlier and storied history. Originally constructed in 1877 as a selfsufficient industrial farm to house the poor, it was called the “House of Industry and Refuge.� Later, it became a long-term care home. Since 1975, when the Museum located here, an ever-popular year-round program of events and exhibitions draws thousands of visitors annually. Changing museum standards and building codes led to an expansion and renovation project that was completed in 1987. And in 2010, a much-needed expansion of the Archives has tripled storage capacity, and provides a larger and better equipped public reading room to meet the increasing demand by genealogists and researchers. The impressive hilltop site and stately 19th century architecture reflects the importance of the Museum and Archives as an established feature in the cultural and historical mosaic of the community. the 175 th fergus fall fair

J

ust three years after the Scots settled Fergus, the Fair came to town. That was 175 years ago. Now rich in a history of agricultural education that began with a simple Young Master Luke Hannam shows off his prized beef calf.

exhibition for farmers, the Fergus Fall Fair has transitioned into the place where urban meets rural, and they’re getting along just fine. “It teaches kids where food comes from,” explains Board member Deb Veldhuizen. “At last year’s Fair, we had a life-size fiberglass cow that kids could really milk into a pail. Even our Ambassador, Chantel Dirksen, got into the act.” A new ambassador is chosen to represent the Fair each year and, speaking from experience, Rebecca Hannam says it “puts young people into leadership positions. You have an opportunity to spread agricultural awareness by visiting local classrooms, attending community events and showcasing what the Fair is all about.” Operated by the Fergus Agricultural Society, the Fair is the tenth oldest in Ontario, and brings agriculture and community together for three days of family fun and local food. There’s every kind of animal on display at one time or another, and popular events such as lawn tractor pulls (that’s right, lawn tractors) and the Dog and Pony Show races, always draw the laughs. Special plans are underway to celebrate the Fair’s 175th Anniversary, says past ambassador Jeanine Moyer. “We’re arranging for lots of local entertainment, a “Gramma’s Parlour” heritage display, and our first-ever Lumberjack Show.” Cue music. T

here is a cultural vibe that radiates through Elora and Fergus, a creative energy that draws artists, musicians and art lovers together to build an enclave of talent with an appreciative audience. Art is alive here. Culture feeds our souls and we invite you to savour the sights and sounds that inspire our vibrant villages. Some of the most important artists in our nation have been inspired by our landscape. A.J. Casson fell in love with and painted our scenic views. This is the birthplace of the panoramic camera, through John R. Connon’s lens. More artisans followed, wooed by the rustic beauty and historic structures. There was something special here and everyone could feel it. ARTISTIC EXPRESSION IN EVERY FORM Today we are home to an eclectic and celebrated creative community: dancers and choreographers, writers and poets, actors, musicians, painters, singers, sculptors, potters and weavers, photographers, designers and craftspeople—all visionaries of culture. From this innovative group, organizations and collectives have blossomed, each with its own distinct flavour of artistic expression. Village Idiot Productions bring live music and outdoor art to Elora while independent theatre companies such as Elora Community savourelorafergus.ca

Theatre and Grinder Productions grace the stage of the newly refurbished Fergus Grand Theatre. Exhibitions hosted at the Wellington County Museum include the annual juried art show, “Insights.” Through the Elora Arts Council, artists of diverse mediums put together the Elora Fergus Studio Tour, a successful behind-the-scenes tour of the intimate studios of participating artists that has become a southern Ontario “must-see” event over two weekends in fall. A CENTRE FOR THE ARTS Art has a permanent home in a 150 year-old restored heritage school building which has become the Elora Centre for the Arts. It offers studio and performance space, fine art instruction in different mediums and children’s programming. The Minarovich Gallery welcomes the public to exhibitions featuring an impressive combination of nationally renowned artists and locally emerging talents. The gallery is free to the public. When the summer sun warms the rocks of the Gorge, the arts come outdoors with a summer lineup of family-friendly events. July brings the annual Art in the Yard to the grounds of the Elora Centre for the Arts, an art-lovers shopping delight. Whatever the season, the spice of life is art, and we have it here in abundance. It’s eye candy all year long. Enjoy the view. 63
